Last month I traveled up North to attend the wedding of my old college friend Janique…and by “old” I mean she is a long-time friend—not that she, herself is old. We are the same age and certainly I’m not old. I knew I wouldn’t get to spend very much time with Janique during the actual reception. Hey, I’ve been a bride—it’s a whirlwind of a few hours where you talk to a zillion people, dance, and if you’re lucky, you get to eat a few hors d’oeuvres. (Special shout-out to my sisters here, who made sure I tasted all the hors d’oeuvres at my own wedding.) So why make the big trip? After all, it was four plane tickets, hotels, rental cars and obviously a new dress and shoes for me. During my twenties, I lived in Manhattan and so did Janique. She grew up in New York and still kept in touch with many of her high school friends—and I had childhood friends living in the city too. Naturally, we all became friends. There were many late nights out, a memorable trip to Club Med, Europe and weekends in the Hamptons—lots and lots of good times. Janique and I even took a last minute trip to Australia— when you’re young, not much seems impractical. (We bought plane tickets on Friday and left on Saturday.) Eventually, we all started the next chapters of our lives. I moved to Florida, got married and started a family. I’ve kept in touch with Janique, but those days (and nights) of partying with the girls are long behind me. But for one night in Connecticut, I was transported back to my days as a single lady in New York. Janique insisted the DJ only play 1970s disco—the soundtrack of our youth. In fact, a woman at my table requested a song which the DJ politely denied because he had strict instructions from the bride to stick to disco. So there I was, me and the girls, out on the dance floor dancing like a bunch of twenty-somethings. It made me realize how lucky I was then and how lucky I am now. I suppose all of our lives have different chapters. I will always be grateful for my Manhattan years. I was surrounded with great friends in the world’s most vibrant city. I was doubly lucky—I had two older sisters who told me to take advantage of my single years (hence, the Australia trip.) I think about those days from time to time. Some silly memory will pop up and make me laugh. And I’m so happy I got to dance like a kid for one more night. To anyone who says otherwise, you can go home again—even if it’s only for one night in Connecticut.

Kids Foundation Yes, we are all trying to get kids to eat their veggies. Whole Foods is doing their part. When you give to Whole Kids Foundation, your generosity helps plant school gardens, install school salad bars and empower teachers to become their healthiest selves.

6 The Ratings Yes, that’s right, they rate the growers they buy from. In order to earn a “Good” rating a farm must take major steps to protect human health and the environment. A “Better” rating indicates advanced performance and a “Best” rating indicates exceptional, industryleading standards.

7 TRANSPARENCY They let you know what’s in your food. If you’re trying to avoid GMOs, (genetically modified organisms) this is the place to shop. Many crops are genetically modified to survive herbicide treatment. Yikes. According the Whole Foods website, 88 percent of corn in the US is a GMO crop.

OK, there’s grocery shopping and there’s grocery shopping. Shopping at Whole Foods is more like being in a food museum—but the whole museum is a gift shop. When you see the worlds most gorgeous yellow beet, your sort of have to buy it.

W

hy are you here? Why am I here? What is our purpose? Our race has wondered after these questions for as long as one can imagine. Discovering the meaning of our life is one of the great mysteries and challenges. Yet, it has always been my belief that over the course of time, in this endless search, there is no one, single answer. Life’s meaning is different for each person. Everyone we know—ourselves included—has her or his own purpose and distinct path, unique and separate from every other man or woman. As we make our journey, we are presented with enumerable lessons, and each one must be met in order to fulfill that purpose. These lessons as offered are specific and unique to each of us; learning these lessons is the key to discovering and fulfilling the meaning and relevance of our life. It is my opinion that once we have learned the basic lessons taught us out of our history, from our bodies, by our parents and mentors, we are ready for more advanced teachers. As we mature, life

presents us with lessons in every circumstance and situation—whether we see them or not. But they are everywhere. When we experience pain, there’s a lesson. When we feel joy, there’s a lesson. Name the experience, and there’s a lesson there. There’s really no way around it. In this journey on which we find ourselves, we encounter some lessons more challenging than others. Some of these lessons require little or no effort or thinking. Others, require years and years of struggle. While there are some lessons that we don’t even need to deal with. For instance, we may never know why we were blessed with a wonderful marriage, while our friends suffer through difficult divorces. We might never understand why we have to struggle financially while others enjoy abundance. All that we can truly count on is that we will be presented with all the lessons that we need to learn; and whether we choose to learn them or not is entirely up to us. So, in this new year, as we set out let us align ourselves with our own unique path by learning whatever lessons there are to be learned. Let us be forewarned however, this is one of the most difficult challenges we will ever face in our lifetime. Sometimes the path will lead us into a life that is radically different from others’. And let us never compare our path to those of the people around us. Also we need to be reminded that life will never present us with lessons that are beyond our abilities to handle, and the lessons we will be handed are specific to us and our growth. If we are able to rise to the challenge, the process of unraveling the mystery of our purpose will begin and we will be able to actually begin to live it. In so doing we cease to be the victim of fate or circumstance—or whatever we choose to call it—and we become empowered, life no longer is what happens to us. When we have found our true purpose in life and begin working toward it we discover all kinds of wonderful gifts within ourselves that we may never have known we had. Is it easy? Of course not, ever. But the rewards are well worth it. Please note, in this lies the beginning of discovering our purpose. But so doing will require openness, fairness and grace.

inter is in full swing and although we don’t endure the frosty winter that most of the country does, there are still some breezy cool Florida days where us Lighthouse Point folks like to curl up beneath blankets and enjoy a comforting bowl of soup. Enter this Cauliflower and Cheddar Cheese Soup. This recipe is really easy to make if you have an immersion blender, but if you don’t—that’s ok. A food processor or a blender will work to puree the cauliflower mixture into a creamy, cheesy, warming soup that is perfect for winter weather. I hope you enjoy.

Cauliflower and Cheddar Cheese Soup INGREDIENTS 5 tablespoons unsalted butter 1 yellow onion, finely diced 1 cup carrots, finely diced 1 cup celery, finely diced 1 head cauliflower, cut into small pieces 6 cups chicken broth 2 cups heavy cream 8 oz. Cabot sharp white cheddar, cut into cubes pinch of cinnamon pinch of nutmeg pinch of cayenne pepper sea salt and ground pepper to taste DIRECTIONS In a large pot, melt butter over medium heat. Add onion, carrots and celery and stir to coat. Season with salt and pepper, cook until softened, about 8 minutes. Add cauliflower and cook until just beginning to brown, occasionally stirring, 10-12 minutes. Add broth and bring to a boil over high. Reduce heat and simmer until cauliflower is very tender, 20 minutes. Using an immersion blender, blend the soup to a fine puree, 3 to 5 minutes. If you do not have an immersion blender you can transfer mixture into a food processor or blender and puree in batches, then return pureed soup to the stove top pot. Once pureed soup is warm throughout, stir in the heavy cream. Next, whisk in cheese, a few cubes at a time, stirring continually as it melts. Continue this process until the cheese is fully melted and incorporated into the soup. Add in a pinch (or two) of cinnamon, nutmeg, and cayenne to taste. Season with additional salt and pepper, to taste. Serve warm. 30

I am in love with this new veggie-filled recipe for zucchini “pasta” with Kale and Butternut Squash, made using a spiralizer. This is a super-simple, healthy recipe. The ingredients are tossed in red pepper flakes, garlic and parmesan cheese and the meal comes together in under 15 minutes. If your New Years goal is to drop a few pounds by eating healthier, this is a great recipe for you to make to get the feel of pasta without the calories. Get ready to become addicted to zucchini noodles, or as some like to call them, zoodles. Happy spiralizing. What is a spiralizer? A simple-to-use machine that produces spiral cuts, shoestrings and vegetable “noodles” for adding new texture to pasta dishes, stir-fries and salads. You can make long ribbons of cucumber, carrots and radishes for salads, or apple spirals for apple slaw. Where can I buy one? Pretty much any store that sells kitchen supplies will carry a spiralizer including William-Sonoma, Bed Bath & Beyond, or Target. You can even order one on Amazon.

Zucchini “Pasta” with Kale and Butternut Squash INGREDIENTS: 1 tablespoon olive oil 1 butternut squash, peeled and cut into cubes Sea salt and pepper, to taste 1 tablespoon red pepper flakes 2 large zucchini, trimmed and run through the fine grates of a spiralizer

DIRECTIONS: Add olive oil into a medium saucepan over mediumhigh heat. Allow the oil to warm, about 30 seconds, then add butternut squash and season with salt and pepper. Sautee squash, stirring occasionally, until lightly browned and tender, about 10 minutes. Add red pepper flakes and toss with the squash. Once cooked, remove from heat and set aside. Add the zucchini, kale and garlic into a large saucepan and season with salt and pepper. Cook, stirring occasionally, until tender, about 2-3 minutes. Toss the noodles and kale with Parmesan. Immediately transfer zucchini noodle mixture to a serving plate. Top with butternut squash. Garnish with additional cheese, red pepper flakes, olive oil drizzle or salt and pepper. Serve immediately.

oal-setting is a fundamental skill that all high level achievers need to take themselves to the next level. As Yogi Berra said, “If you don’t know where you are going, you might wind up someplace else.” Most people never achieve their goals because they haven’t taken the time to be specific about what they want and why they want it. They wander through life taking action with no real purpose or plan. Life Coach, Tony Robbins, says everyone needs to be focused on an outcome or vision for their life. They need to create a vision of what they want their life to look like. Break it down into certain areas. We talk to our students about five key areas: • Martial Arts/Fitness • Business/Career/School • Finances • Relationships • Personal SelfDevelopment

You can create what ever areas fit your life but breaking it down into categories of improvement really helps. Then you must have a strong purpose or reason why you want these goals. When the why is strong enough, you naturally figure out what actions to take on a daily and weekly basis. We all know people that set New Year’s resolutions. The challenge with a resolution is it is a “pie in the sky” thought that is not well thought out. Most people have New Year’s resolutions because everyone else does. Did you know that less than four percent of all New Years resolutions actually come true?

Here are some tips to start you on the right track to goal-setting and goal-getting: 1. Decide exactly what you want. Be specific. Create a vision of you achieving that final outcome. Visualize success and get excited. 2. Write it down. Did you know that less than three percent of all adults have written goals? By writing a goal down it activates your internal hard drive and your subconscious mind will go to work all day and night to help you achieve your goal. 3. List your reasons why. Having a goal is awesome but it is only the first step. Take the time to think why you want it. That will drive you to take consistent and aggressive action. o you like to dance? Dancing is fun with all sorts of fringe benefits. It unleashes creativity; triggers forgotten memories, inspires romance, and makes us happy. In short, dancing is magical. But aside from all this, did you know that dancing offers real health benefits? It’s true. Dancing is good for your mind and body. Regular physical activity in general helps keep your body and your brain healthy. Dancing and exercise both increase the level of brain chemicals that encourage nerve cells to grow. But what makes dancing a wonderful exercise is that it requires us to remember dance steps and sequences – which help us improve memory skills. Studies have even shown that some people with Alzheimer’s can recall forgotten memories just when dancing to music they used to know. Dancing is good for everyone, simply because people can easily vary their level of exertion. For instance, if you’re just getting back into physical activity, start out slowly. As you progress, “step it up a notch” by adding moves like dips and turns. And if you need to participate sitting down; you can also get into the groove by chair dancing. Simply focus on your upper body; and still benefit from the exercises. There are lots of health incentives to dance; like: • strengthen bones and muscles • tone your entire body • increase your stamina and flexibility • reduce stress and tension • build confidence • improve posture and balance • provide opportunities to socialize • improve memory and boost brain power

Ballroom dance, line dance, and other kinds of social dance are most popular among those 65 and older. That’s because you can socialize; exercise, and have fun all at the same time. – And don’t be shy if you don’t have a partner, lots of people go solo and meet someone new. Just remember, be patient with yourself and have fun just learning the steps. With some time and practice you’ll soon be twirling and dipping like a pro. Dancing is also a convenient exercise– if you’re not shy, you can do it anywhere. And if you don’t want to get out, do it in your living room. Put on some of your favorite tunes, dim the lights, and have a designated dance night each week. If you have a significant other, they’ll either love to join you - or appreciate the entertainment. So, why not take up dancing. If you don’t know what kind, just experiment. There’s something for everyone; square dancing, swing, ballroom, jazz, flamenco, even belly dancing. HOW TO NAVIGATE THE TRICKY TRANSITION TO THE REAL WORLD Dear Dr. Corn, My wife and I worry about how to best guide our daughter once she graduates from high school; especially because we are all undecided about her future. We know she’s bright, has many interests, (including socializing), which is part of the problem. We can’t afford to send her off to squander time or take enjoyable courses without knowing what major to declare. Of course, we don’t want to damper her desires, but we have to

be financially practical. We want to avoid the outcome we’ve seen with some of our friends, whose young adults are college graduates, but unemployed and needing to return home to live, as a result of accumulating substantial student loan debt. We can’t seem to sort out what’s the right course to take, as there so many financial implications. Perhaps you can help us maneuver between guiding her on this weighty decision without taking over and sounding too meddling and over-controlling. Dear Concerned Parents, There are distinct yet overlapping concerns facing your family. The first one is philosophical as it pertains to the value of a higher education and whether the expense is justified. The financial implications of a college education are interwoven with parenting, developmental, and psychological issues. her own time with respect to studying, helping out around the house, (if he’s working, budgeting her money) as well as finding time to enjoy being with friends, respecting your household rules (i.e., curfews) and getting enough sleep. This will all evolve through a give and take with many conversations, disagreements, negotiations, and compromises to arrive at a gradual shifting on both sides. In other words, you must relinquish some parental control in order for your teenage daughter to make independent decisions (hoping they turn out right; but if not, there’s time to work on whatever areas fall short). This is one reason why attending college is growth producing but also agonizing and worrisome. It will help if you can accept the fact there are many unknown variables ahead, so it is most important to try and remain open-minded, but also tolerant, and accepting. During these years, you should share your concerns about your daughter’s college future. Do not keep them bottled up inside. Otherwise, this will only cause additional stress. In the coming years, you need to be willing to adjust and adapt to possible changes, such as learning your daughter has decided to pursue a different major, and not view it as a major mistake. If something of that nature occurs, you need to patiently hear all the reasons why as if they may make perfect sense. Sometimes change is necessary. (Depending on what may have precipitated her change of heart, you may want to re-evaluate your particular agreements—which may

require preparing your daughter to take on more financial responsibility.— But, I am getting way ahead of myself here, so I am returning to the present.) What will matter most will be the attitude you display, whether you can show

This can only evolve through your willingness to communicate, to listen non-judgmentally, and to do you best to trust that so far, you’ve done your best as parents guiding your daughter. With pride, take stock of your parental accomplishments; knowing it will soon be time to step aside, while remaining ever present, steadfast and supportive of your daughter as embarks on her promising future.

PROTOCOLS TO MINIMIZE BRUISING AND SWELLING FOLLOWING LASER TREATMENT AND INJECTABLES

A

recent American Society for Aesthetic Plastic Surgery (ASAPS) study on injectables shows that bruising occurs in 19 to 24 percent of all procedures, while other sources report a 68 percent likelihood a patient will bruise. Additionally, laser-and light-based procedures can cause redness and edema that linger anywhere from 24 hours to one week following treatment. In an industry that prides itself on creating both optimal results and an optimal patient experience, finding ways to reduce post-procedure downtime is important.

Pre-treatment protocols Post-injectables bruising is more commonly seen in patients who receive larger volumes of filler delivered in less amounts of time—indicting that both rate of injection and volume injected are significant risk factors. But there are steps a physician can take to decrease the risk of swelling and bruising before the procedure even begins. It is a good idea to cease taking anti-inflammatory medications known to increase bleeding, such as aspirin and ibuprofen and blood thinners one to two weeks prior to treatment. Before any procedure, patients should stop taking most supplements, aside from daily multivitamins. Herbals that can increase bleeding include but are not limited to vitamin E, garlic, ginkgo biloba, ginseng, and kava. Even herbal teas can increase bleeding and it’s a good idea to steer clear of alcohol and caffeine the day prior to a procedure. Enjoy a light dinner, and refrain from any food or drink—water included— after midnight. And of course, do not wear makeup as it can camouflage blood vessels at risk of being punctured. In addition, patients should stop tanning at least two weeks prior to treatment. This decreases the risk of burns, especially when lasers are involved. It’s always a good idea to schedule procedures a week or two before any special events—nobody want to show up for a wedding or awards banquet with bruises. Basically, patients will not look well for at least one week post procedure, and if that is a problem, the patient must consider postponing or avoiding the procedures until after an important event. Using Arnica (a daisy extract) and Bromeline (a pineapple extract) after a procedure can decrease the likelihood of

prolonged post-procedure bruising. Both are considered to be organic, over-the-counter and safe treatments for postprocedure bruising.

Patient communication A key aspect of procedure success involves adequately informing patients, so that when bruising does occur their alarm is tempered. Always discuss with your doctor the risks of bruising and burning as well as any contraindications prior to, during and after the procedures are completed. Also keep in mind that many patients are anxious prior to treatment and may not remember details about their treatment. Always speak to your doctor the day after a cosmetic procedure to review aftercare instructions and discuss any concerns. Dear Readers, One of the problems with writing a column featuring my grumpiness is that when I’m not complaining, people think there’s something wrong with me. Last Saturday, I was enjoying my first cup of morning coffee, and looking forward to a bridge game after a few hours at the pool with my morning cigar. As a perennial night owl, I was in a surprisingly great mood. I reached down to

pet my cat, Murray. He barked. Murray thinks he’s a golden retriever. I decided to call my kids in Chicago, starting with my daughter, Amy. “Hi, dad,” she said. “What’s wrong?” “Nothing’s wrong. Just thought I’d call and see how you’re doing.” “What? Nothing’s wrong? Dad, are you sick?” “No. I just wanted to say hello.” “Are you taking your meds?” “Look. All is well. I’m feeling great. I promise.” “I’m calling Joel,” she said. Joel is my son. He called two minutes later. “Dad, Amy just called. She said something’s wrong.” “Nothing’s wrong. I feel great!” “Dad, you can tell me. Amy doesn’t have to know.” It took five more minutes to convince him all was well. I went to the pool, smoked my cigar, read the paper and headed to the bridge game, still wallowing in mellowness. After we’d played seven or eight hands, my partner Harriet said, “Are you feeling okay?” “Yeah. I’m fine. Why?” “You’ve been so nice to everyone today.” “Hey, I can be nice once in a while.” “Well, I find it scary.” “Okay, okay. Her Obnoxiousness is coming to our table next. If it makes you feel better, I’ll deck her before she sits down.” “Thank you.” I did not deck Her Obnoxiousness. But I didn’t play very well, either. After the game, I went to go shopping before dinner. A glorious Florida day. No air conditioning needed. Opened all the windows, and pulled up to a stop light between an old woman on my left who apparently was not bothered in the least by the young guy to my right: he was blasting some form of music at 20,000 decibels. I consider that a declaration of war. I had on Beethoven. I turned it up to 21,000 decibels. then made her left turn. I headed for Publix. I strolled in, picked up a basket and sauntered over to the deli counter. No one there. Two guys behind the meat counter, serving customers. “Is the deli counter contaminated?” I yelled. “Someone’ll be there in a minute,” one of them yelled back. I waited. I looked over the cheeses in the display case. And waited. I counted four different kinds of salamis. And waited. I’d had enough. I looked around to see if my nemesis, Tiffany, was working. Publix has a policy of using beautiful women to mollify disgruntled male customers. Stunning Tiffany looks like a runway model. They always sic her on me. No Tiffany. “Help!” I yelled. “Need help in the deli department! Cheese is turning rancid as I speak!” A young man ran out from in back and stood behind the deli counter. A very young man. “Can I help you, sir?” he said. “You? You’re the one who’s going to make me a sub?” “Yessir.” “I’m not giving you my order ‘til you get bar mitzvah’d.” “Sir, what is it you want?” I gave him my order, paid and left. After dinner, I went to my computer to check my e-mails. Instead of going to my site, Google fed me pop-ups. Then the pop-ups gave birth to more pop-ups. I slammed my fist on the desk, scaring Murray, who barked at me. I called Google. No customer service on week-ends. I barked at Murray. He ran out of the room, terrified.

It was time to prepare for the ball game I wanted to watch. I went to the kitchen, hauled out a large box of potato chips, a large bag of Cheetos, a large can of pistachio nuts and a pound of cheese. I set them neatly on the table next to my viewing chair and settled in, emotionally prepared to berate and scream at every ballplayer on both sides. Then I heard a crack of thunder. Then it started to rain. Then DirecTV lost its connection to the satellite and my screen went blank. Seething, I called my daughter. “Dad,” she said. “I’m so glad you called! Is everything okay?” “No! Everything is not okay! I had a lousy bridge game; a young guy had his car radio on so loud they were complaining about it in the next area code; the only one who waited on me at Publix is a kid still in eighth grade; I’m getting nothing but pop-ups on my computer, and the storm that’s raging right now shut off my TV in the middle of a football game. So no! Everything is not okay!” “Oh, good,” she said. “I’m so relieved. I’ll call Joel and tell him.” I better keep on kvetching. I’m the opposite of the kid who cried, “Wolf.” The only way someone’s going to come to me in an emergency is if I tell them everything is all right. PRACTICAL TIPS TO AVOID PROBATE

D

uring my forty one years of practice, I have seen many problems that could have been avoided when someone passes away. Many of these problems involve having to go through the probate process when some very simple and inexpensive practical steps could have been taken to avoid probate. The two most common areas which are overlooked involve the deceased person’s car and the personal checking account. In many instances, the family members are forced to do what is known as a “summary administration”, which is for Estates with assets under $75,000.00 where there are no creditors. If the car is titled in the name of the deceased alone, that car may have to be probated in the Summary administration. Likewise, if the deceased had a checking account with only his or her name on it, that account may also need to be probated in the summary administration.

To avoid probate, I always suggest to clients that every bank account have either someone else as a joint account holder or have one or more beneficiaries as “payable on death” (often abbreviated p.o.d.). This is also called “in trust for” (i.t.f.) or “transfer on death” (t.o.d.). However, there are some banks which will allow the “payable on death” for savings accounts and CD’s but not for checking accounts. If that is the case with your bank, it will be very important that you have at least one other person as a joint owner of that checking account. Ideally, this should be a family member whom you trust, who may

also be designated by you in a durable power of attorney. The durable power of attorney allows that person to handle your legal and financial affairs, particularly if you become incapacitated; however, the durable power of attorney ends upon your death. Therefore, if no one else is on the checking account, then that account becomes an asset which must be probated. Regarding automobiles, it used to be fairly common practice “in the old days” that a family member (spouse or child) could bring a death certificate and a copy of the will to the Motor Vehicle Bureau and obtain a new title. However, the bureaucratic, administrative process has become much stricter these days. If you have your car titled only in your name and you pass away, it may need to be probated in the summary administration. Therefore, you should consider putting someone else’s name on the title. If that person is also an occasional driver of the vehicle, you should notify your car insurance company to add that person as an additional insured. If that person never drives your car, you can advise your insurance company of that fact, but still have that person covered under the policy as an owner. When you apply for the new title, you should be sure to use the word “or.” This will allow either you or the other owner to sell the vehicle and will make it much easier if you want to sell the vehicle while you are still alive. It will also make it easier and avoid probate when you pass away. The checking account and the automobile are only two of the most common items that end up having to be probated because people did not take the simple steps suggested. You should review all of your assets (bank accounts, brokerage accounts, life insurance policies, annuities, etc.) to be sure that everything either has a joint owner or beneficiaries designated. Even if you take the above steps, it is still very important to have the proper legal documents to protect you if you are incapacitated: durable power of attorney, Designation of Health Care Surrogate and Written Declaration, also known as living will. It is also very important to own your home in such a way as to avoid probate. The two most common ways to avoid probate are a Life Estate Deed or a Revocable Living Trust. RENEWABLE SOURCES OF ENERGY GAIN MOMENTUM

R

enewable sources of energy will be picking up the pace in the coming year. New technologies are emerging that will lower our dependence on fossil

fuels. Hawaiian Electric Co. is looking to lower customers electric bills by 20 percent by installing more rooftop solar systems over the next several years. Their goal is to triple the amount of distributed solar which will be 65 percent efficient by the year 2030. The islands of Oahu, Maui County and the Island of Hawaii will be the first to install these rooftop systems. They will also be converting most of their existing oil-fired generators to liquefied natural gas, which will burn cleaner. Even with the cost of the new equipment Hawaii Electric promises a 20 savings by 2030. Southern California has a massive energy-storage project coming. Southern California Edison has announced the opening of the largest energy storage project in North America. They plan to use wind-energy to generate up to 4500 megawatts of power which will be stored in utility scale batteries. These lithium-ion batteries along with smart inverters will be tested to provide power during peak demand. The project is budgeted at 50 million dollars and will be housed in a 6300 square foot facility. The system will be composed of 10,872 batteries which will provide 32 megawatthours of storage. Four companies are working together and proposing a massive $8-billion green energy project to power Los Angeles by 2023. The project consist of building a large wind farm in Wyoming. They would also build an energy storage facility in Utah which would be connected to a new 525 mile electric transmission line that would connect the two sites. This project would more than double the amount of power the Hoover Dam is now generating. Across the nation solar developers are excited about new projects in New York. In September it was announced that public and private funding would go into developing 142 sites which is expected to produce 224 megawatts of power. This would represent an increase of 68 percent over their current solar capacity in 2013. In Florida, I would like to see more rooftop systems installed. While the cost and financing has been a challenge in the past we have new opportunities in the future. Both

the cost of solar panels and the development of the new batteries have made these installations more attractive. There is a new financing tool called PACE which will finance solar installations and energy saving programs with no money down and repay the loan through the property tax bill. The credit amount is based on the value of the building and not the owners credit score. The PACE program and others like it will need city approval before it can be used. New Year’s Facts and Traditions

• New Year’s Day is the oldest celebrated holiday. The Babylonians celebrated it on March 23, around 2,000 BC. This was logical as it was the beginning of spring. The Babylonians were sun worshippers. Their ancestors can be seen any day on the beach in Ft. Lauderdale. • In the United States, a kiss at the stroke of midnight on New Year’s Eve signifies purification into the New Year. My goal is to try to purify as many women as I can.

• In England, the first guest to arrive at a home is believed to be the one to bring good fortune. A guest who shows up empty-handed will not be allowed to enter first. At my home, a guest who shows up empty-handed will be shot. You’ve been warned.

• Lasagna is the only pasta served on New Year’s Day in Sicily. It is believed that any other form of macaroni will bring bad luck. Some Sicilians also believe that eating pasta cooked any way other than “al dente” will bring bad luck. This is particularly true for a waiter who serves patrons “mushy” pasta. The bad luck will be in the form of no tip. • The Chinese New Year will be celebrated February 19. No knives will be used for 24 hours, in the belief that a cut will “cut” good luck. My family practices a similar tradition every day. All sharp objects are kept away from me. • It will be the “Year of the Sheep” in 2015 in China. It will be a bad year for sheep in my house, as we have resolved to eat more lamb chops. I am not looking forward to the “Year of the Rat”. • Spain and Peru have a similar tradition. In Spain they eat 12 grapes, one for each month, to bring good luck. Peruvians eat 13 grapes. Peruvians are big on insurance. In my quest to hit the Powerball jackpot, I will be eating 13 watermelons. I, too, am big on insurance. • In Norway, they make rice pudding with one whole almond in it. Whoever gets the almond is guaranteed wealth. It didn’t quite work out that way when I had New Year’s dinner with my Norwegian friends. Unknowingly, I got the almond, bit down hard and broke a tooth. This guaranteed wealth for my dentist. Ironically, my dentist is Norwegian, so I guess the almond thing really works, but only if you’re from Norway. • Men spend 10 times more than women do in pursuit of their New Year’s resolutions. I can vouch for this. My wife and I decided to stop drinking wine. This cost her nothing. My beer budget went up 10-fold. • The people most likely to make New Year’s resolutions are those ages 13 to17. Most likely to break their resolutions are those ages 13 to 17. • Forty-five per cent of Americans make New Year’s resolutions. Only eight per cent are successful. Thirtyeight per cent never make resolutions. Their success rate is 100 per cent. • This year I have decided to make a New Year’s resolution that I can absolutely, positively keep. • During all of 2015 I shall eat no liver.

T

he nicest guy you’ll ever meet.” Charlie Davis has surely heard this about himself many times in his 60-plus years and a least a few times from local residents since 1987 when he and his wife Rita bought Beacon Light Jewelers. (The store has be there since 1958—one of the five oldest businesses in Lighthouse Point including our cover story about the Spieker family and their Lighthouse Point Marina.) Charlie’s story starts in Plainview, Texas; a farming and ranching town of about 20,000 . . . during a good year. If you recall The Last Picture Show which was shot in the “panhandle” section of Texas in 1970, you get an idea of how our Plainview High School 1969 graduate grew up. To think of him in our tropical world of today is a bit jarring compared to the wide open wilderness of his upbringing. After graduation, he headed to Texas Tech. Charlie and college and the early ’70’s combined to be a bit much so he turned to his parents for some guidance (a nice term for parents screaming.) Charlie’s mom had been working at Zayles jewelers for many years and put a word in with a corporate officer who found an opening for him in a store in Atlanta. So he bought a one-way bus ticket and off he went. “I packed up everything which was about one A.M. radio,” recalls Charlie about packing to live in the biggest city he had seen at that point in his life. Charlie can share a few stories about that rural, Texas kid adjusting to life in the big city. Then “the grass looked greener over at Kay Jewelers” according to Charlie so he made another move which turned out to be his next life-changing decision. For if he hadn’t switched to Kay, we wouldn’t have been The Shoppes at Beacon Light

working that day with Rita came in wearing her go-go boots and hot pants—quite fashionable at the time it should be noted. “She bought a signet ring that day” says Charlie about the day he met his future wife of now 41 years. That was 1973 and they married later that year. Charlie and Rita had a daughter Missy, moved to Orlando, then moved to Pompano Beach where they had their second daughter Lona. Charlie took a job as the state of Florida sale representative for Spiedel, the maker known for watch bands. He called on local jewelers and retailers around the state and started to dream of owning his own store. As he called on jewelers he began asking if any wanted to sell. Beacon Light Jewelers became available and the deal was signed. “I got some good advise early on: You’ll have good days and you’ll have bad days in this business. Don’t get excited over either one.” Charlie has worked in the jewelry business all his adult life and seems to have a passion for it still. Whether it is a replacement watch battery or band or an engagement ring for the most important person in the world, Charlie is a guy you can trust to help. “It’s great to see kids that came in when they were six, now come in as adults,” said Charlie with a big smile that comes with having pride in what he has done for so long. 50 years ago the Lighthouse Point Marina helped put a tiny town on the map. It’s been the site of indie film “Life of Crime,” syndicated TV show “Glades,” and more closely to home, marriage proposals, prom invitations, birthday parties and anniversaries. But Lighthouse Point Marina and its restaurant Nauti Dawg weren’t always in the limelight. Their beginning was a bit more low key.

It was little more than a desolate tract of sand with a few houses sprinkled off in the distance when, in the early 1960s, the Lighthouse Point Yacht Basin (now Lighthouse Point Marina) came into being. Located on Lake Placid, an artery of water leading to the Hillsboro Inlet and the expansive Atlantic beyond, the location was ideal for serious and recreational boaters alike to moor their boats. L.C. Van Nest had big plans for the marina complex. At a cost in excess of $400,000, the facility included enough slips to accommodate 120 boats, offices, shower and washroom facilities, guest lounge, pool, cabana club, and snack bar. A repair building, supply store and fuel depot completed the marina. Expanded facilities called for the addition of a small shopping mall along with tennis and shuffleboard courts. While all of Van Nest’s plans didn’t come to fruition, the initial marina did attract a few boating enthusiasts because of its convenience and amenities. Just after completion, Mrs. Moore purchased the property and renamed it Lighthouse Point Marina. By the mid-1960s, however, she decided to call it quits. Enter Don Spieker of Racine, Wisconsin. “My dad was severely asthmatic as a kid and couldn’t participate in typical

sports, so he tinkered with boats and engines. He eventually got into building and racing boats on Lake Michigan,” said Maureen Spieker Canada, president of Lighthouse Point Marina, Inc. Spending so much time with boats and on the water fostered Don’s love of marinas. He worked in his first marina on the Rock River in Beloit, Wisconsin. Later, he became manager and partner in a major sporting goods retailer and marine sales distributor in Beloit. He was subsequently offered a job running a marina in Oshkosh. He turned it down to move to Florida. Owning a marina in South Florida was not priority one when Don moved here in 1963. It was reporting to his new job at a sporting goods store and getting his 23-year-old pregnant wife Mary settled into their new apartment. The couple had met several months earlier while she attended Prospect Hall School of Business in Hollywood, Florida, and Don was on vacation in the Sunshine State. “He came to my mother’s door to ask out her roommate,” said Maureen. “When the roommate wasn’t available, he took out my mother. That’s where they discovered they were both from Michigan.” After a whirlwind romance, Don and Mary returned to Michigan and got married. Since they both loved Florida, they decided to move down after the wedding. Mary’s parents, John and Pauline Kopmeier, owners of Wisconsin Coal and Ice, wanted only the best for their daughter. Supporting Don’s dream of eventually owning his own marina, in 1966 the Kopmeiers agreed to back him in purchasing Lighthouse Point Marina from Mrs. Moore. Don never looked back. Along with running the marina, Don was very active in the

community. Giving back was an essential part of who he was, a trait his wife shared, and one they passed down to their children. Among Don’s biggest contributions was his 34-year perfect attendance and membership in the Pompano Beach Rotary Club where he served as Past president, director and district governor representative. He also served as chairman and member on numerous civic and business boards, and accepted appointments from Florida’s governor. Mary was just as enthusiastic about causes of her own. As a member of the Junior League of Fort Lauderdale, she was very involved with the Childrens’ Home Society, often putting into practice her dedication to the welfare of children. “For many years, we opened our home to a pregnant teen, until they gave birth and gave their child up for adoption. Sometimes the teen stayed on afterwards. Sometimes not. But it was a very moving experience for all of us, especially the kids. We shared our bedrooms with these girls. We learned about teen pregnancy and the selfless gift of giving up your child for adoption. Mom always had us doing something for the Childrens’ Home Society. Don’s engaging personality and determination built the marina into a successful business. He often brought his children (Debbie, Maureen, and Christian) down to the docks to meet the tenants and work at the facility, preparing them for what he assumed would be their business one day. In 1997, after 30 years at the marina and facing a divorce, Don decided to retire. His options were to sell the marina to a stranger or offer it to his children. The children, who grew up at the marina and had many fond memories, had their own agendas at the time, but the thought of the marina falling out of the family just wasn’t an acceptable option.[CONTINUED ON PAGE 68 ] January 2015 | L I G H T H O U S E P O I N T

The Stowaway It was May. Right before hurricane season. The couple had pulled their boat up to the fuel pump at the Lighthouse Point Marina and filled up for their weekend trip to the Bahamas. It was to be a pleasant trip with friends. Once they capped off the tanks, they pulled out of the Hillsboro Inlet and headed east. A dozen miles were in their wake when they found him—hunkered down in the V birth below deck. They’d see n him at the marina before— this unassuming blond male. But, they hadn’t seen him come on board. They hadn’t seen him enter the cabin. Yet, there he was—a stowaway—not saying anything, just staring at them. While he didn’t seem threatening, fact was, they were out at sea. What were they going to do with a fugitive on board? The couple sent out a distress call to the marina. Surely they would miss him. After all, Diesel was their faithful dock cat. Had been for many years; one of a long line of felines (Dock, Dory, and Dinghy) who watched over the marina. Upon the couple’s return, Deisel jumped from the boat and scampered to the safety of the Dock House. Home for him is now Dock Master Wes Mitchell’s house. Even though Diesel hung out at the marina for years, it was quite obvious that in his heart he was really a landlubber.

[CONTINUED FROM PAGE 65 ] With urging from Debbie and Christian, Maureen, who, at the time, was living and working in California, agreed to return to South Florida to complete the siblings’ purchase of the marina and become its president and CEO. Christian became vice president, and Debbie Spieker Edwards, secretary/treasurer. “It was always understood by my parents that I would take over the marina and my sisters would get married and live in homes with white picket fences,” said Christian. “I was 19 at the time of my father’s retirement. I wasn’t ready to take over the marina, though I’d always had aspirations of running it. Maureen had the corporate background to make things happen much quicker than I could.” Since the siblings’ purchase of the facility, the marina has undergone a dramatic overhaul of its facilities, added acreage, and built Tillotson Square, a 21-unit condominium. Each sibling took on responsibilities befitting their talents and experience. Maureen is responsible for overall running of the marina, Christian serves as operations manager and makes sure the marine facilities operate smoothly, and Debbie oversees the restaurant Nauti Dawg. The siblings say they stick to their roles and rarely step on each other’s toes.


“They work together so well,” said their mother Mary. “I think the fact that we lost two children kept them close and helped them realize the importance of family and sticking together.” (Mary and Don’s youngest child, Kevin, was 11 months old when he drowned in the family pool in Florida in 1974. Doug, 15, and the Speiker’s second child, died in a car accident in the mountains of North Carolina in 1980.) Several large challenges faced the siblings after purchasing the marina. The first was to increase fees that had not had a hike in years. “We brought the rates up to raise capital, and a quarter of the tenants left. But it turned out to be a blessing in disguise. We needed to reconstruct the docks, and to do that, we needed to shut down one dock at a time. Where to moor the boats occupying those slips was going to be a problem. When the tenants left, we had plenty of space to move the boats to other locations while each new dock was being built,” said Christian. Renovating the docks wasn’t the only project the siblings took on shortly after purchasing the marina. They also wanted to construct a condominium complex on land just west of the facility. The Hull Thumper When Don Spieker purchased the marina in 1966 only 11 boats birthed there and fuel sales were . . . well . . . dismal. Not to be denied the success he’d dreamed of, he embarked upon a one-man marketing campaign that proved to be the best PR anyone could have. Boarding his runabout, he became the equivalent of a door-to-door salesman as he pulled up to private boats and thumped their hull, announcing his arrival. Like the Welcome Wagon, he offered boat owners an engaging smile, pleasant conversation, and gifts of lubricating oil and other small items boaters could use. He also told them about the marina and plugged his Phillips 66 products. Don saw immediate results. Within three years, his births were sold out, and fuel sales were the highest they had been and steadily increasing. The Hull Thumper proved that with a little persistence and hard work, dreams can come true.

“My father tried to develop Tillotson Square 15 years before, but couldn’t get City approval,” said Maureen, who oversaw the project. “We started meeting with architects to put together our dream. Surrounding Tillotson Square is city property and many of the condos used the property for overflow parking. Dad’s development plan didn’t consider the needs of the surrounding condos. We met with the condo associations and asked them what do you have for parking that you own and what do you need for overflow? We met with the mayor, commissioners, and other necessary groups, but none of them took us seriously. We took all the information and gave to our architect and said, ‘Design something that will work.’ And he did.” By the time Tillotson Square became reality in 2001, the city gained over $1 million of infrastructure as part of the development agreement. Streets were paved, parking lots added, and electrical lines were installed underground. The 21 units that make up Tillotson Square sold out quickly. The Spieker Family

Nauti Dawg, the marina’s restaurant, is overseen by Debbie, the Spieker’s eldest child. Prior to the sibling’s management of the restaurant in 2011, it was called Dockside Galley Grille and managed by an outside firm. “Our family never intended to get into the restaurant business, but over the years, we felt we knew what our customers wanted and decided to run it ourselves,” said Maureen. The menu evolved over time into its own special niche. “Nauti Dawg lends itself to casual, seafood-oriented dining. We give our chef free reign in creating daily specials. This showcases his talent, which patrons really enjoy. We’re not cookie cutter,” said Debbie. And indeed they are not. Patrons drop by via jetski, paddleboard, bicycle, golf cart, motor vehicle, yacht and on foot. Some even bring their own china and blankets. But these aren’t for themselves; they are for their canine companions. “People bring their dogs and sit outside. We have a doggie menu and a Yappy hour on Mondays where we have a special price off the dog menu. It’s a major outing for some of our patrons,” said Debbie. Lighthouse Point Marina has come a long way in 50 years; yet, what Don Spieker began as a friendly neighborhood business where folks can get good food, good service, and friendly smiles has never changed. Debbie, Maureen, and Christian have seen to that.

Tracy wondered if she could emulate the success of breast cancer awareness month which gets so much attention. So, she and a friend came up with the idea for the Trek with Tracy which took six weeks to plan and was a huge success. Tracy now has several speaking engagements lined up over the next few weeks.

The event was a great success and helped raise money to support local charities, some of which are The Children’s Healing Institute for the prevention of child abuse, The Broward Children’s Center, scholarship programs for local students, and other organizations. The event was attended by about 150 people, and raised nearly $30,000. Music was performed by the Weedline Band.
