Nirvana and the Rise of Indie Music in the 90s
Sub Pop Records co-founder Bruce Pavitt reflects on independent media and its power to change global culture. His Seattle based record label, started from humble beginnings, signed an unknown group named Nirvana which helped put Seattle on the map. Join Pavitt for an intimate look at what it was like in the early years, including images from his book and photography exhibit Experiencing Nirvana. Sept. 11, 2001 was a horrific day. This annual anniversary event aims to remember, recognize and celebrate the triumphant spirit of the American people to overcome the tragedies of that day. The ceremony will feature guest speakers, musicians and a special performance by the Fort Lauderdale Symphonic Winds 65-piece band. SUP for Pups
SUP for Pups will be a paddling event like no other. A mix of racing, fundraising and just flat-out fun, this soon-to-be annual challenge brings together the whole SUP community to encourage healthy lifestyles and raise money for injured rescue dogs and marine life. From pros and amateurs to local ocean athletes, SUP for Pups unites paddlers and fitness enthusiasts with animals in an effort to save lives and clean the ocean. Among competitive racing, attendees can expect SUP lessons with certified instructors and free SUP rentals to help clean-up the intracoastal waters after the race. Island Paws Rescue Charity Golf Tournament

Plans for the Lighthouse Point Bond Projects Continue to Make Progress City officials continue to make strides in laying the groundwork for the construction of the five bond projects that will be funded with proceeds from the $16.5 million bond issue approved by Lighthouse Point voters last November. The City is getting close to hiring a Construction Manager at Risk who will commit to delivering the bond projects within a guaranteed maximum price, and will work with the architect during the design phase to make sure the projects don’t go over budget. The bond projects include the construction of a new two-story fire station that will have an emergency operations center on the upper floor, and will be rated for a category 5+ storm; a new community center at Dan Witt Park; a new public works fleet maintenance building; renovation of the existing public works building; and the buildout of a second-floor community room in the library. A Request For Qualifications (RFQ) for a Construction Manager at Risk was advertised by the City in mid-June, and 10 proposals were received by the July 16 deadline. Five of those firms were selected to give presentations on Aug. 23, and were then ranked based on qualifications. The rank order is expected to go to the City Commission on Sept. 12 for confirmation. A contract negotiated with the top-ranked firm is expected to be brought to the City Commission at its meeting on Sept. 26, or its first meeting in October. was hired by the City in July to design the bond projects, requested a survey of the property that will be the site of the new fire station, and a survey of all of Dan Witt Park, where the new community center and public works building will be constructed. CSAA said the surveys were needed before design of the buildings could begin. The City advertised an RFQ for professional survey services on June 26, and received nine proposals. Three shortlisted firms gave presentations on Aug. 7, and Pompano Beach-based Keith and Associates, Inc. received top ranking. The rank order was brought to the City Commission for approval on Aug. 13, and a contract is expected to go to the City Commission on Aug. 27, or its

first meeting in September. Once the contract is signed, initial surveys of the two sites will be completed within three weeks. The City will retain the surveyor for the duration of the bond projects, in case supplemental survey services are needed. CSAA sought input from the City Commission to get an understanding of its vision for the projects. After viewing the different concepts, which were used as a starting point for discussion, it was the consensus of the Commission that the new fire station should be a “gateway” to the city and that the character of the building should carry through to the new community center. Completion of the bond projects is currently anticipated to be in March of 2022, but this is subject to change as the schedule will be further refined once the construction manager is hired. The library build-out would be the first project to be completed, and currently has an expected finish date of May 2020, with construction taking about 90 days. Gallo Herbert Architects was hired in April to serve as the City’s representative, and to oversee the construction of the new fire station and community center. Y

Lighthouse Point Yacht Club Redevelopment Update Plans to redevelop the Lighthouse Point Yacht Club continue to wind their way through a lengthy approval process that involves both the City and the County. Terry Paterson, the yacht club’s owner and developer, has been working with his team to put together a site plan and rezoning request that they hope to present to the City this fall. The developer’s application for a land use plan amendment, which would allow him to build residential units on the yacht club property, was scheduled to go before the Broward County Planning Council on Aug. 22, and is expected to be reviewed by the Broward County Commission this month. The site plan would go to the city’s Development Review Committee in October, according to Jessica Easterling, community outreach director for the Lighthouse Point Yacht Club. The developer will also be requesting the creation of a new zoning category that will accommodate both the residential
and yacht club components on the property. The city’s current zoning code doesn’t provide for this type of development, which mixes commercial recreational and residential uses. In April, the City Commission gave its preliminary approval for the land use plan amendment that is being requested by the developer. It will come back to the Commission for a second and final vote after it goes through the County’s review process. Paterson is asking that the “commercial recreation” land use designation of just under 3.7 acres of the yacht club property be changed, so he can build up to six residential units per acre on that portion of the site. Paterson plans to use the proceeds from the sale of the proposed luxury residential units to subsidize an updated yacht club facility. The original application Paterson submitted to the City in July 2018 proposed 36 townhomes, which is 11 units per acre, but city officials, the Planning and Zoning Board and members of the community

expressed concerns about the density. At the City Commission meeting in April, it was agreed that the land use plan amendment will not come back to the Commission for a second reading until after the site plan and rezoning application go before the Planning and Zoning Board. That way, the Commission will have all the information it needs to know what it’s approving. The review process for the site plan begins with the Development Review Committee. Next, it goes to the Community Appearance Board, and then the Planning and Zoning Board. The Planning and Zoning Board may also want to review the site plan before it goes to the Community Appearance Board. The site plan is not required to go before the City Commission. However, because of the importance and scale of the project, a development agreement between the City and the developer will provide that the site plan goes to the City Commission after final review by the Planning and Zoning Board. Beachfest: New Music Festival on the Beach Coming Soon to Pompano Starting next year, Pompano Beach will hold an annual two-day musical festival on the city’s main public beach, north of the pier up to about NE Fifth St. The festival will feature major headlining rock acts, but will also include artists from a variety of genres, Assistant City Manager Earl Bosworth told the Pompano Beach City Commission in July. The Commission unanimously approved a fiveyear license agreement with Beachfest Entertainment, the promoter that will be organizing and hosting the event. Beachfest will take place on mutually agreed upon dates for each year the agreement is active, and will start at noon. It is expected Beachfest will become one of the major events and fun things to do in Pompano Beach.

Ibis Bridge Replacement Is Now Scheduled To Start In October Replacement of the Ibis Bridge, located on Lighthouse Drive (NE 23rd Avenue) between NE 29th Street and NE 30th Street, was slated to get underway on Aug. 29, but is now scheduled to start the first week of October. The Florida Department of Transportation (FDOT) will carry out and fund the $2.4 million bridge replacement project. FDOT currently estimates that the new bridge will be completed in fall of 2020. During the project, there will be no access over the Ibis Waterway. According to FDOT, the project is starting later than anticipated because the contractor requested an extension to procure specialized reinforcement material that extends
the life of the bridge and requires less maintenance over time. During the construction work, a maintenance of traffic plan will be in place with detours north and south of the bridge. The City is encouraging motorists to use NE 24th Street, NE 29th Street and Sample Road to exit the city onto Federal Highway and bypass the work zone as much as possible. The first step of the project will involve setting up the maintenance of traffic plan, gathering supplies and staging equipment, which should take one to two weeks. Next, the contractor will demolish the existing bridge, which was built in 1950, and has been designated by FDOT as structurally deficient, but
is not a public safety hazard. The project work hours will be Monday through Friday from 8am to 6pm. Broward County had been working for several months to verify, through a hired vendor, the exact location of a sewer force main and two water mains that lie under the bridge, beneath the canal bed. The construction work involves driving piles on both sides of the utilities, and in order to avoid a possible rupture to the pipes, their specific location needed to be determined before the start of the project.Y
Public Hearings for New Millage Rates, Special Assessments and Budget Take Place This Month Public hearings to finalize the proposed city budget and millage rates for fiscal year 2019-2020, are scheduled to take place on Sept. 12 and Sept. 26 as part of the regular City Commission meetings to be held on those dates. Public hearings for the proposed special assessment rates for fire protection, stormwater utility and solid waste services will also be held on Sept. 12. The proposed city budget across all five operating funds is $20,689,285, which includes the General Fund (including police and fire), Tennis Center Fund, Garbage and Trash Fund, Debt Service Fund and the Stormwater Utility Fund. The proposed operating millage rate is 3.5893, which is the same rate that has been used since fiscal year 2011-2012. Because taxable property

values have gone up and the City will receive more tax revenue, levying the same operating millage rate is considered a tax increase. The debt service millage rate for repayment of General Obligation Bonds issued in 2002 is 0.1710, a decrease from its current rate of 0.1730. The debt service millage rate for the General Obligation Bonds issued by the City in April 2019 is 0.4110. The proposed fire protection assessment is $134.50 for singlefamily dwellings, which is the same rate as last year. The proposed stormwater utility assessment is $60 per year for a single-family property, which is the same rate that has been levied by the City since the stormwater fund was established in 2009. There will be an increase in
assessment rates for solid waste services, based on rates provided by Waste Management, the city’s contracted waste hauler. The estimated annual assessment rates are $484.68 per unit for dwellings with four or less units, and $434.88 per unit for dwellings with five or more units. During the hearings on Sept. 12 and Sept. 26, the public will have the opportunity to speak on the proposed assessment rates, millage rates and budget. The assessment rates will be adopted by the City Commission on Sept. 12; the final budget and millage rates will be adopted on Sept. 26. The City Commission meetings will take place at 6:30pm in the City Commission chambers, located at 2200 NE 38th Street in Lighthouse Point. Y

Are Your Habits Holding You Back? START SMALL TO GET BIG CHANGES BY CRAIG HALEY
EXPERTS AGREE THAT 90 PERCENT OF EVERYTHING WE DO ON A DAILY BASIS IS DONE OUT OF HABIT. I’M WILLING TO BET THAT YOU DO THE SAME THINGS, IN THE SAME ORDER WHEN YOU GET OUT OF BED. Why? Because of habit. All of us have habits that are serving us (reading, working out, saving money, etc.) and allowing us to live our best life. And all of us have a few habits that may be holding us back. Do a few come to mind? If you truly want to improve your life and habits, I’m going to encourage you to start small. Think of it this way: If you get one percent better every day for a year, you will end up 37 times better at the end of the year. If you get one percent worse every day, you will decline nearly down to zero.
Think of a plane flying from Los Angeles to New York City. If the pilot leaving from LAX adjusts the heading just 3.5 degrees south, you will land in Washington DC, instead of New York. Such a small change is barely noticeable at the takeoff – but when magnified across the entire country, you end up hundreds of miles apart. Small changes in your daily and weekly routine can lead to big changes in the long run, but you have to understand what progress really looks like. For example, cancer spends 80 percent of its life undetected, then it can take over the body in months.

The bamboo tree can barely be seen for the first five years, but down below the surface, it is growing an extensive root system. After five years, it can shoot up to as high as 90 feet. Author James Clear in his book “Atomic Habits” talks about the “Plateau of Latent Potential,” meaning that the measurable improvements will take a long time before they show up. For example, you can’t go to the gym for three weeks and complain that you aren’t getting major changes yet. It takes time. That work is not wasted, it’s just being stored. When the stonecutter is hammering away at the rock, he may hit it 100 times with not even a crack, but on the 101st blow, the rock splits in two. Was it because of the last blow or the cumulative effect of all the blows that broke the rock? Here is a strategy to help keep you on the right path. James Clear suggests focusing on “systems” instead of “goals.” Now hear me out. Goals are important. You need to have a direction and a vision, but many times when the goal is achieved, people digress back to their old ways. Look at it this way, someone may have a goal to run a 5K. They commit to the training, get in great shape, eat right, then after the race, they stop running because they achieved the goal. Instead of focusing on the race, focus on your identity. See yourself and think of yourself as a “runner.” Meaning, you becoming a runner is a permanent change. After the 5K, you will continue to run and find other races to participate in. You now focus on your daily and weekly system, such as what days you run, how much rest you get, what foods you consume for optimal performance, and consider working with a coach once a week. When you focus on the system or the process, you will get the desired results and keep them because you see yourself differently than the person that is just running to do one race, one time. What small changes can you start today? Get a few new habits in motion and the Law of the Big Mo (Momentum) will kick in. You will be on your way to living and feeling your best! Make a Successful Start Back to School BY DR. JILL SELBACH
IT’S THAT TIME OF YEAR ONCE AGAIN WHEN THE KIDS ARE BACK IN SCHOOL. EVERYONE HAS THE DESIRE TO START OFF ON THE RIGHT FOOT. BUT, HOW DO WE STAY ON THE RIGHT track? Successful students have several things in common. Some of these characteristics we are born with, and others we can easily institute in our lives. Good students tend to be curious. They enjoy learning and want to gain an understanding of new information. They have a thirst for knowledge. It is important to help children find out what excites them and expose them to that excitement for learning. A willingness to learn what is required, even when it’s not something you like or think is useful, is also really important to being a successful student. Set goals for the school year and determine what small steps need to be taken to reach those goals. The Drucker Institute talks about setting SMART goals that are: Specific, Measurable, Achievable, Realistic and Time-bound. Choose smart friends with similar goals. The people with whom we spend time greatly influence our thinking and behavior. It is much easier to stay on track with your goals if you surround yourself with people like you. They will be less likely to encourage you to forget about your homework and go to the beach. Be organized. Use a planner. Keep on top of long term assignments, breaking them down into small, manageable pieces. Schedule time to complete specific assignments so there is no last minute pressure that handicaps you from submitting your best work. Have an organized work area that is quiet, well lit and has all supplies on hand. Start the year with binders and notebooks designated for each class and have areas to store information from each class. Successful students ask questions and get the answers they need. Don’t be afraid to ask questions when something does not make sense. Many people are intimidated to ask a question in front of a class. Chances are several others are wondering the same thing and don’t have the courage to ask. You can see the teacher/ professor after class or ask another smart student. Be open to feedback during the learning process. It is easy for people to become defensive but this gets in the way of making improvements and adjustments. Review mistakes on tests, quizzes and writing assignments. Allow the teacher/professor to do their

job and provide constructive criticism. A good foundation of basic academic skills is very important. Start early with young children to develop basic reading and comprehension skills, number sense and math automaticity. Strong academic skills, written and verbal communication skills are essential to being a successful student. Students are far more successful when they attend class and show up on time. Good students look for opportunities to get extra credit and turn in all assignments. This demonstrates to the teacher/professor that you care about your grade and have the drive to work to improve your grades. And last but not least: Students who succeed manage stress and strive for balance. Good, regular physical exercise is imperative, as well as good sleep hygiene and proper nutrition. Same Sex Marriage or “Significant Other” Legal Issues in Florida BY MARTIN ZEVIN, ATTORNEY SAME SEX MARRIAGE IS NOW LEGAL IN ALL STATES SINCE JUNE 26, 2015, WHEN THE U.S. SUPREME COURT RULED IN OBERGEFELL V. HODGES THAT STATE BANS ON SAME SEX marriage are unconstitutional. This means that, if you are a same sex couple that has been legally married in any state, you are entitled to the same legal rights and benefits as heterosexual
couples, both in Florida and in the United States. This covers everything from taxes to health insurance, life insurance and pension benefits, as well as property tax exemptions for widows or widowers. Any state or federal law that previously applied to traditional marriages now applies to same sex marriages as well. It also means that, in the event of a divorce, the same rules apply. However, if you are not married but are living together as

domestic partners or significant others, regardless of your sexual orientation, none of the laws for marriage apply. There is no “common law marriage” in Florida. Basically, you are each treated as a single person for all state and federal laws and tax purposes. If you are living together but not married, it is particularly important that you have the basic legal documents in Florida to protect you if either or both of you become incapacitated. This includes the designation of health care surrogate for making medical decisions, the living will or pulling the plug document and the durable power of attorney for legal and financial matters. If you jointly own your home and/or other real estate, it is important to look at the benefits of a revocable living trust or a life estate deed to avoid probate when you both die. Even if you are married, it is important to have these legal documents. If you were living together and got married after doing those documents, it is important to review them now for any changes due to your new legal status. If you are considering getting married, regardless of sexual orientation, you should review with an attorney the legal benefits and disadvantages of doing so. Ultimately, a decision to marry should be based on love and compatibility; however, it is certainly important to also be aware of the legal and financial issues. Chile Peppers in Space BY JIM TERLIZZI NASA HAS FIGURED OUT ANOTHER WAY TO SPEND OUR TAX DOLLARS. EARLY NEXT YEAR THEY WILL SEND A HYBRID VERSION OF A NEW MEXICO CHILE PLANT to the International Space Station. (I kid you not.) Purportedly, this is to learn how fruiting crops perform in zero gravity. Not so. I have obtained a copy of an ultra-secret, internal NASA memo that shows the Chipotle Restaurant chain made a substantial cash contribution to NASA in exchange for the sole rights to put Tex-Mex eateries on the moon and Mars. Also, the reusable spaceships will bear the Chipotle hot pepper logo, which they hope will attract extraterrestrial customers. This is forward thinking, since the space tourism industry expects to be operational in two years thanks to entrepreneur Elon Musk and his Space Exploration Technologies Corp. — SpaceX. Not to be outdone , McDonald’s has contracted with SpaceX for franchise rights to any alien worlds it may visit. The burger company is creating a new menu for space travelers. For example, they will offer a “McMoon Burger” containing green cheese on a cratered bun and “Mars McNuggets,” pieces of chicken in a sticky red sauce to keep them from flying around the spaceship cabin. I have some suggestions for other things NASA could send into space. For example, shipping the Earth’s cows into orbit would offer many benefits. They could provide milk or be cut into steaks for the astronauts to eat. Getting bovines off the planet would be a boon to those who subscribe to the theory that cow flatulence contributes to climate change, while the methane discharges could be used as rocket fuel. A win-win. Another vegetable I would like to see fired into space — broccoli. And don’t bring it back. So far, NASA has made no provisions for adult beverages for tourists on space flights. This is easily remedied. Since the ships are surrounded by water-filled tanks which block gamma rays, simply replace the water with beer. Hundreds of gallons of Heineken will provide even better shielding and happier passengers. (Note: Since light beer is less opaque it is not recommended by interstellar brewers.) There is one problem with this I still am working on — getting

folks to overcome the thought of drinking recycled beer. I am negotiating with our space agency to be the impresario who will provide entertainment for all missions. My lineup already includes: a rock group called the “Saturn Five”; dancing twins known as the “Binary Sisters”; the radiant singer “Van Allen” who belts out show tunes, and “Marvin the Martian Magician.” This may seem a bit gross, but NASA should consider utilizing the cockroach as a food source. These insects are all protein and virtually indestructible. They laugh at gamma rays. Left alone, they propagate at an alarming rate, becoming an inexhaustible supply of chow — needed for a multi-year trip to Mars. To make them palatable, I have a great recipe for “Cucaracha Fra Diavolo.” This also would give NASA a practical use for the chile peppers. Y

To All the Grandchilden in the World BY WENDELL ABERN
DEAR GRANDCHILDREN EVERYWHERE, Today, I am writing to apologize to all of you. Usually, I try to write humor. But eighteen years ago, terrorists killed thousands of Americans by flying airplanes into buildings. And this month, memorials and other reminders of that horrendous day make it impossible to write anything funny. Instead, today I want to apologize to everyone in your generation from everyone in mine. As presumptuous as that sounds, consider: my generation inherited the scraps of one world war and struggled through another. Millions of people were killed. We should have learned something from those two terrible wars. We should have made the world a better place for you. We didn’t. And we didn’t. Just like all the generations that preceded us. More than 150 years ago, a man by the name of Georg Wilhelm Friedrich Hegel said, “What we learn from history ... is that we never learn from history.” True. Sadly, true. No generation has ever learned, for example, the one thing that every human being has in common: none of us asked to be here. We had no say in the matter at all. I believe that once given the gift of life, no one should have the right to take it away. I sometimes wonder how many concur with that, since human beings kill other human beings every day. Every hour. Every place on earth. And in wars, we kill each other by the millions, almost always in the name of some –ism, -ology, or –ocracy. One reason we keep warring is because of another reason no generation has ever learned: how to tell The Good Guys from The Bad Guys. That is just as dumb as it sounds. But it keeps happening. And it happens because we want so badly to believe in our leaders: our presidents, our prime ministers, our priests, our rabbis — any of our leaders. We want them to be smart, to be fair, to be honest, and always to be right. But we forget that our leaders are simply human beings, capable of making mistakes and being wrong. Note: This column first appeared shortly after the 9/11 tragedy in 2001. It has run every year since, with the author’s updates.

And because we want so badly to believe what they tell us, we seemingly do anything they ask, which includes killing other human beings. Our leaders realize they can manipulate us by using emotional keys, such as hatred and bloated patriotism. Ergo, wars. Millions of Americans protested our country’s involvement in Vietnam because we didn’t understand who hated us. Conversely, if President Carter had declared war on Iran after zealots kidnapped 52 Americans, we would have responded with fervent jingoism. One thing the human race has learned — and sadly ignored — is that history is written by the winners. So how can we ever be sure The Good Guys won and The Bad Guys lost? Many centuries ago, a man named Alexander led an army that conquered other countries, to make them chattels of the country of Greece. Some history books still refer to him as Alexander the Great. No one knows what he was called by the thousands of widows and orphans his marauding armies left in their wake. If Germany had won World War II, the madman Adolph Hitler — arguably the most evil human being who ever lived — would be portrayed in today’s history books as a dynamic, charismatic leader. Some 10,000 years ago, the human race discovered agriculture, creating the biggest sea change in our evolutionary history. We no longer had to hunt for food. We could grow our own. We settled down. We grew into little communities. We built villages. And towns. And boundaries. We have been at war ever since. Personally, my strongest belief is that nothing is as sacred or as beautiful as a human life. Any human life. I doubt many leaders would agree with that. At some point in the history of our civilization, our leaders determined that our beliefs were more important than our lives. That has never changed. Cantankerously Yours <<< listening to a few leaders, telling us to go kill each other in the name of some –isms. About 500 years ago, there were now 450 million of us, still listening to a few leaders, still telling us to go kill each other in the name of some new –isms. Today, there are almost eight billion of us, still listening to a few leaders, still telling us to go kill each other in the name of the latest –isms. When does it stop? When do we stop using our beliefs as license to kill each other? Today, more than 70 years after the unspeakable atrocity known as The Holocaust ... and after a weary world swore, “Never again”... and after a United Nations was created to bring peace to the whole planet ... genocides continue to flourish. Ethnic cleansing occurs every decade or so. As I write this, the slaughter of innocent people continues. Globally. Leaders of these slaughters invoke hatred, of course, as a motivator. And why not? It has always worked. Some have tried to unite people by other means. Mahatma Gandhi brought people together with love instead of hatred. So did Martin Luther King Jr. So have a precious few others. However, too many leaders have discovered that hatred works better. And finally, here is a lesson we all should have learned in kindergarten: ours is the only planet that supports life. We should be taking care of Earth. And I admit that your generation is doing a much better job than mine. Or any previous generation, for that matter. Today, we all face a disastrous calamity: climate change. In June of this year (according to the National Oceanic and Atmospheric Association), our planet averaged temperatures almost two degrees warmer than the entire twentieth century average. According to one scientist, “Earth is running a fever, and it won’t break, thanks to climate change.” Your generation has already shown its concern, all over the world. Yet many in my generation claim climate change has not really been proven. I hope you can prove us to be ill-informed and short-sighted. I hope you can start to change many of our entrenched patterns also. Most of all, I hope you can start ... to stop ... mass killings. It will take many, many future generations to overcome cycles of hatreds generating hatreds; of killings spawning revenge; of broken alliances, shattered truces and unconscionable genocides. I hope you can make the world a tiny bit better. And a little cleaner. And much safer. Pleasant White Wines from Italy BY DAVID EHRENFRIED
WITH SUMMER WINDING DOWN, PERHAPS YOU’VE HAD YOUR FILL OF ROSÉ OR FAMILIAR WHITE WINES LIKE CHARDONNAY AND SAUVIGNON BLANC. MAYBE IT’S TIME TO TRY SOMETHING different. Alternatives to consider are white wines from Italy, particularly those made with uniquely Italian grapes. Fortunately, there are plenty of good ones that are both easy-drinking and budget-friendly. Some have well-known names like pinot grigio and soave. Others are less familiar, such as falanghina, roero arneis and vermentino. These white wines come largely from grapes grown in Italy for centuries. Some, like pecorino (no relation to the cheese), originally grew wild and were first cultivated in ancient times. The wines are
in a sort of Italian wine comfort zone of dry, light to medium-bodied, easy-to-drink white wines that are neither very fruity or buttery, like some Chardonnay wines, nor very tart or acidic, like many sauvignon blancs. When made well, these wines are wonderfully pleasant and refreshing, and they work for many occasions and a wide variety of foods. They complement cheese and light appetizers as well as a range of pasta, fish, chicken, and vegetable dishes. As for affordability, many excellent bottles of these wines are available for under $20. Several we tried cost under $15. These wines come from all over Italy, including Sicily and Sardinia, the large islands off Italy’s west coast. I’ll highlight a dozen notable examples and skip over sparkling wines like

prosecco and moscata d’asti and Italian versions of chardonnay, gerwürtztraminer, riesling, and sauvignon blanc. Let’s start in the north, move south, and finish with notes on the wines I tasted for this column.
Northwest Italy Generally, white wines from northern Italy tend to be lighter, crisper and more citrusy than those from central and southern Italy. That’s to be expected, since Italy’s northern wine regions are generally cooler. Let’s start with pinot grigio, a wine that’s become a staple at many restaurants and bars. Italian versions are made principally from pinot grigio grapes (a.k.a. pinot gris in France and other places) grown mainly in the Veneto, Friuli, Alto Adige, Trentino, and Lombardy regions that lie north of Venice and Verona and extend into Italy’s Dalmatian Mountains and Tyrolean Alps. Worthy chilled pinot grigio from these regions should taste crisp, clean, delicious and refreshing with delicate to mild aromas and flavors, such as apple, lemon, melon and nectarine. Some might have a spicy or peppery finish, but pinot grigio should never taste harsh, sweetened, vegetal, or sour. Beware, then, of some cheap pinot grigio wines! They may be made with grapes harvested too soon, leading to wines with these characteristics. A few companies, such as Santa Margherita and Cavit, mass produce literally hundreds of thousands of cases of basic pinot grigio wines. Without disparaging these established producers, I encourage trying wines made by smaller wineries. Some I’ve liked over the years include Attems, Livio Felluga, Jermann, Alois Legader, Poggiobella, Terlato, Tiefenbrunner, and Torre Rosazzo (which we tasted for this column). There are many others. Some of these wineries also make white wine from other grapes, as well. Pinot bianco wines, for instance, are tangier and racier (and a bit pricier) than pinot grigio. In Lombardy, trebbiano grapes are used to make Lugana, a lovely wine that is softer and more mineral than pinot grigio. Another familiar wine to try is soave from the area by the same name in Veneto. It’s made from at 70 percent garganega grapes and, when young, should be light, precise and mouthwatering. It can have lemon, melon, peach, and almond flavors along with some spice and racy acidity that make good soave great for sipping. (Aged soave, by the way, is typically rich, >>>

Try the Wine <<< honeyed and floral.) We didn’t drink any soave for this column, but some of my favorites are Anselmi San Vincenso, Ca’ Rugate, Monte del Frá, Gini, Inama, Pieropan, and Graziano Prá. Northwest Italy The Piedmont region in northwestern Italy is known for its fabulous red wines, especially barolo and barbaresco. The region also makes two delightful white wines, gavi and roero arneis. You’ll likely not see many of these wines, even in the most diversely stocked wine store, because there aren’t many producers and production is modest. Gavi is made from cortese grapes, and roero from arneis grapes. Both wines are special for being light, refreshing, upbeat, smooth, and full of mild to subtle citrus, peach, apple and other fruit combinations. Gavi, I’ve found, is leaner and more austere. I prefer roero arneis wine, which I think is a bit richer and rounder. We tasted a totally pleasant and deliciously enjoyable roero arneis from Vietti, a leading barolo vintner. Other quality producers to look for are Ascheri Bra, Bruno Giacoso, Damilano, and Montezemolo. Central Italy The central Italy wine regions each have their special grapes and wines: orvietto in Umbria south of Tuscany and verdicchio in Marche, to the east, for instance. Marche also is home to the ancient grape, pecorino, which is often used in a blend called falerio (which we tasted). South of Marche, wineries in Abruzzo make easydrinking light-to-medium weight, often lemony wines with trebbiano, a widely planted Italian grape. Abruzzo trebbiano wines, by the way, tend to be richer and fuller than Lugana, which I mentioned. Let’s turn to Tuscany, specifically to the beautiful medieval hilltop town, San Gimignano south of Florence. San Gimignano is famous for more than its spectacular views and well-preserved tower-dwellings and other buildings. The surrounding countryside grows an indigenous grape called vernaccia. The wine, vernaccia di san gimignano can be abundantly pleasant with a soft, rich texture and apricot, honey, melon or almond flavors. And, it’s a great value. Producers include Tenuta Le Calcinae (which we tasted), Mormoraia, and Montenidoli, among others. Southern Italy South of Rome is the is the Campania region, home to Naples, the spectacular Amalfi Coast, and Pompeii and Herculaneum, both famously buried by Mt. Vesuvius’ eruption in 79 AD. Campania also is home to numerous outstanding wines. Three whites very worth seeking out are falanghina, fiano d’avellino, and greco di tufo. Made with grapes by the same names, these wines are thirst quenching, light to medium-bodied wines. Falanghina and greco, I think, are richer and rounder than fiano, which seems to be more racy and acidic.

Balance for Life — a new health and wellness retreat at the Wyndham Deerfield Beach Resort — is helping individuals set the reset button on their personal health while enjoying a beach getaway. The retreat is also now offering a day-cation option for locals who want to stay at home overnight. Reporter Danielle Charbonneau gave it a try. BY DANIELLE CHARBONNEAU

atmeal never tasted so good. Plump blackberries, blueberries and strawberries, plus crisp and juicy chunks of sweet watermelon topped the bowl, which I had dusted in cinnamon and sat down to eat at a table with a view inside the Patio Bar at the Wyndham Deerfield Beach Resort. A salty sea breeze came in through the open doors, which framed a picturesque view of the ocean horizon and its soft-sandy beach just across the street. I admired the people going by — joggers, walkers and bikers utilizing the beach boardwalk path that extends
along the sand for a mile and a half. I had just gotten back from a sunrise walk on that very path with a few of my fellow comrades participating in the Balance For Life health and

wellness retreat. Now, my group of fellow retreat participants convened for “breakfast” — which for some, was merely water, and for others an intimidating, giant plastic pitcher of green juice pressed from celery, spinach and cucumber. Ordinarily I would call my oatmeal a bland breakfast, but compared to my fellow retreat companions on liquid diets, it was a feast. That morning my oatmeal and fruit was the subject of great envy. The Balance For Life retreat is an ongoing, all-inclusive health and wellness retreat program started by real estate investor Harold Lebovic and led by chiropractor Dr. Frank Sabatino, D.C., Ph.D, a leading expert in water fasting, juice cleanses and plant based diets. While most tourists at the Wyndham Deerfield Beach Resort are indulging in fish-bowl sized cocktails and gorging on burgers, the Balance for Life crowd are detoxing their bodies of toxins and kick-starting their health goals by participating in one of three retreat tracks: a vegan, non-S.O.S. track (which consists of a strictly plant-based diet without any salt, sugar or oil); the juice cleanse
track (which consists of organic pressed green juices only); and for the real die-hards, the water-fasting track. The Balance for Life retreat is one of only a few water fasting retreats in the entire country, so guests come from near and far. Participants in the Balance for Life program come to the Wyndham Deerfield Beach Resort to rest, relax, exercise, learn and most importantly, hit the reset button on their personal health. The retreat includes a full schedule of activities including water aerobics, group fitness classes, yoga, tai-chi, meditation, informative health lectures taught by (might I say brilliant) Dr. Sabatino, workshops on topics like cooking and healthy shopping, group meals and plenty of time to enjoy the resort amenities, including private cabanas by the pool, in-room massages and beach concierge service (towels, chairs and umbrellas). Group fitness classes and lectures are held in a small conference room that has been turned into a dedicated space for Balance for Life programming. For those partaking in the non-S.O.S. vegan track, the food is surprisingly delicious. Dr.

INGREDIENTS
1 8-ounce box Thai rice noodles, cooked according to package instructions 1 block package of tempeh, cut into cubes and seared until browned (recipe below) 2 tablespoons neutral oil 1 onion, chopped 1 1-inch piece of ginger, grated 4 garlic cloves, minced 2 tablespoons Thai red curry paste (or a touch more) 1 15-ounce can coconut milk 1 cup vegetable broth or water 1 teaspoon Thai fish sauce 2 tablespoons soy sauce 2 tablespoons brown sugar 1 red pepper, cut imto stips 2 carrots, sliced 1 bunch of blue kale, stems removed and torn 1 head of broccoli, cut into florets Fresh lime juice to taste Salt and pepper to taste Sriracha to taste (optional) 1 cup fresh cilantro, chopped 1 lime cut into wedges

DIRECTIONS
In a Dutch oven, saute the onions in oil until softened. Add the garlic and ginger and saute until fragrant, just a minute. Add the red curry paste and stir to combine. Add the coconut milk and stir until well blended. Add the vegetable stock or water. (If you want a thicker sauce, you can omit this.) Add the soy sauce, fish sauce and brown sugar. Taste and add salt and pepper if needed. Add the kale and let in cook in the sauce for about 3-5 minutes, until itâ&#x20AC;&#x2122;s a little tender. Add the broccoli, red pepper and the tempeh and toss to combine. Remove from heat, add the noodles and toss everything so it gets coated by the sauce. Add the lime juice, cilantro and sriracha if using. Serve with additional lime wedges.
FOR THE TEMPEH
Marinate the tempeh overnight in a combination of soy sauce with 2-3 tablespoons of maple syrup and 1-2 tablespoons of smoked paprika. Before you start making the noodles, cut the tempeh up into cubes and sear it in a cast iron or non-stick pan with a little oil.

Sabatino worked with the chefs at the Wyndham resort to craft a tremendously tasty plant-based menu. Examples include stuffed bell peppers with quinoa and black beans, a sweet potato and lentil hash, and homemade herb salad dressing on organic mixed greens. The motivation that drives each Balance for Life participant varies — some are looking to loose weight, others are looking to detoxify their bodies, and some have serious health issues. Dr. Sabatino has devoted decades of his life and career researching the beneficial effects of water fasting for conditions such hypertension, diabetes, rheumatoid arthritis, cardiovascular disease, metabolic syndrome, osteoarthritis, fibromyalgia and chronic pain. He had a Ph.D in cell biology and neuroendocrinology and conducted landmark research as an assistant professor at the University of Texas School of Medicine studying how calorie restriction affects stress and aging. “In our culture of gluttony and overeating, the idea of voluntarily abstaining

from food (unless there is some enforced famine) may seem somewhat absurd and insane,” Dr. Sabatino said. “Yet, there is an extensive body of evidence, including lab studies involving a variety of species and clinical observations in humans, supporting the use of water-only fasting for a wide range of health problems.” From an evolutionary perspective, Sabatino explained, humans evolved to survive extended periods without food. The human body became very efficient at storing excess intake during bountiful times, primarily as fat, to use during lean times. But in today’s world, especially in America,
there are no lean times. The stored fat doesn’t get burned off and accumulates. And in a culture of processed foods, Sabatino said sugar levels in our blood have increased to toxic levels. In addition to water fasting, he is a passionate advocate for plant-based diets. In his daily lectures, he explains in great detail why. He explains the inner workings of our bodies — how the body processes food, stores fat, breaks down fat, replenishes sugar, what causes insulin resistance, how toxic levels of sugar in the blood effects our body and how we can reverse the damaging effects of decades-long bad nutrition. The Moshakos family — Lou and Joy, the founders of LM Restaurants, and their daughter Amber, now LM’s president — are the brains behind Oceanic, the new, highly anticipated oceanside restaurant soon to open right next to the Pompano Beach fishing pier. On July 31, the warm and hospitable family gave Pompano! magazine a private tour of Oceanic, which is still under construction but is in the final phases of its completion. With caution, Lou said the restaurant should hopefully be completed in September, barring any unforeseen hurdles. The word “wonder,” Amber said, has been the central word from which her family and their team conceptualized the restaurant’s architecture, design, menu, bar program and atmosphere. They were looking to capture the enchanting essence of the sea and pay homage to the restaurant’s majestic beachside location. “The concept idea from the beginning was how do we capture that awe and wonder of the ocean?” said Amber. “Thinking of those transatlantic voyages so many years ago, how do we create that awe and wonder? There’s a Jacques Cousteau quote that completely captures the essence of what this brand is going to be: ‘The sea, once it casts its spell, holds one in its net of wonder forever.’”

Upon taking the tour, it became apparent just what Amber meant. The oceanside restaurant indeed casts a certain spell.
THE DESIGN
The design is both ethereal and captivating. It was envisioned, Amber said, to evoke the feeling of being in the hull of a grand ocean liner. Arched wooden beams in the ceiling, massive glass windows peering out over the ocean and shades of blue throughout capture this spirit. The main dining room is lined on both the east and south sides with vast, floor-to-ceiling glass doors, which slide open and extend out to the bar, lounge and patio deck. Expansive views of the ocean are on every side, and the patio overlooks Pompano Beach’s new fishing pier. The old fishing pier building stands adjacent to the restaurant, maintaining a sense of the area’s historical roots. On the west side of the first floor is a grand, circular dining room with a cavernous, 25-foot-high ceiling. Cascading shades of aquamarine, teal and blue lead upward to skylights. and evoking an abstract sense of fish swimming under water. The room makes one feel as if they are standing in the center of a mythical aquarium. Frayed boat ropes hang Edison bulbs in the front entrance, and modern art pieces made of ocean drift wood are spotted throughout the first floor design. In addition to the drift wood elements, Amber said her family saved some of the historic wood from the original Pompano Beach Fishing Pier to craft a cool entrance table with artifacts from Pompano Beach’s oceanside history. Venturing upstairs to the second floor, one will find a stunning special events space with its own functioning kitchen that stretches out to another expansive bar, patio and lounge. The second floor, too, has open-air, floor-to-ceiling, glass sliding doors. The upstairs space will primarily be used for special events and weddings for up to 400 people, but if the demand warrants, the second floor may be utilized for the restaurant. All together, the restaurant is 20,000 square feet, with more than 9,000 of those open-air. Creating such a magnificent restaurant was no small feat. The project, Lou said, has been five years in the making and has gone through three architects and three design teams. Lou said that just when he thought his architectural plans were complete and ready to go, Amber sent him back to the drawing board urging him to think bigger. She wanted the entrance to be grander and more welcoming. “I said, ‘We can do better than this,’” Amber recalled. “We asked the second architect to dream. He came back with this idea of the hull of a ship. The first architect was an absolute specialist when it came to operational layouts and where you put the drains and how you get the flow and where are your operational challenges. The
other architect was more the visionary on how do you really transform what this architecture is going to look like.” The results are stunning, from both the interior and exterior.
THE FOOD & DRINKS
Like the architecture and design, the menu has been crafted to honor the ocean. “The fresh local seafood is the emphasis,” said Executive Chef Brian Cantrell. “We’re going to be offering fresh seafood and local fish everyday. We’ll do a whole fish every day. Our featured menu is going to be very large. Its going to have all of our raw bar on it — so our fresh oysters and our shellfish and shrimp cocktail, and lobster cocktail. Then the fish we’re doing is local stuff — grouper, cobia, mahi — whatever is the freshest. We’ll have a great offering of high-end steaks as well.” Cantrell has an impressive career working in high-end seafood restaurants all over South Florida. “I was in Miami Beach for ten years. I opened up Prime 112, was the chef at Nemo for six years, and was at a Fish Called Avalon on Ocean Drive for three years,” Cantrell said. “I worked at Blue Moon here in Fort Lauderdale for about five years and helped them when they remodeled and re-did their menu as well. And more recently, I was in Deerfield at Oceans 234 and Gigi’s in Hollywood.” Cantrell’s motto is “What grows together, goes together.” Diners can expect food that is bold, colorful and healthy. “I try to give a lot of big flavors — not muddled and very health-oriented,” he said. The bar program at Oceanic is rather progressive. The restaurant will offer 24 wines on tap. Wines on tap, though not common, is a concept that is growing in popularity in the restaurant industry because the dispensing system allows for custom temperature pours and is a more eco-friendly system. One keg of wine equals more than 26 bottles of wine, and over a keg’s lifetime 3,000 bottles will avoid landfills. LM Restaurants started pouring wines on tap at some of their restaurants eight years ago. “This keg system allows us to pour a wine at the perfect temperature every single time. And from a guest perspective, they’re able to taste different wines that sometimes would be out of their price range. Plus, [CONTINUED ON PAGE 94]

a change in your restaurant rotation, take a trip back to the old country at Checkers Old Munchen. The restaurant’s exposed wood framing is reminiscent of the German half-timbered architectural style and the walls are lined with classic German beer steins. For a traditional German meal, try the wiener schnitzel — it’s divine — a lightly breaded veal cutlet sautéed in lemon butter and topped with homemade brown gravy. The spaetzle (German noodles) are a real homemade treat and not to be missed — throw a little of that brown gravy on them and they could be a meal unto themselves. The red cabbage is both classically sweet and sour and there are other side options too including potato dumplings, potato salad and even hot potato salad. As you look around, you can’t help but get the feeling that most of the patrons are returning customers. And the next time we get a hankering for some schnitzel, we know where to go. A COMING HOME STORY
Oceanic is really a coming home story for the Moshakos family who started LM Restaurants more than 41 years ago in Deerfield Beach. Their first restaurant, Seafood Shanty, was opened in 1978 at the corner of Hillsboro and Federal, where the Walgreens now sits. Seafood Shanty was a 48-seat restaurant and the “quintessential family business,” said Amber. “My mom was cooking in the kitchen until mom was pregnant with me…Dad was working the raw bar. My aunt served. My grandmother was the hostess at various points. So it was truly a family run and started business,” said Amber. In the 41 years the Moshakos family has been operating LM Restaurants, which is now based out of Raleigh, N.C, the group has opened up seven restaurant concepts including Vidrio, Bluewater Waterfront Grill, Hops Supply Co., Taverna Agora, Carolina Ale House, Oceanic and Henry’s. Amber said the success of LM can be attributed to Lou and Joy’s working partnership. “Watching them dynamically work together — its magical,” she said. “Mom’s strengths complement dad’s. Dad is the visionary and he sees things so far ahead of time. And then mom is the one that can be systems, process, meticulous details.” Lou grew up in a farming town in Greece before immigrating to Canada. Joy’s lineage is from Newfoundland — a community of tight-knit fisherman. The couple, Amber said, inherited the same core values. “They are very family driven and focused on the earth and the community,” she said. “I think it’s because they came from fishermen and farmers.” The Moshakos try to instill those values in LM Restaurants, making staff family, honoring the communities and cultures in which their restaurants operate, sourcing fresh ingredients and promoting ecofriendly practices. Lou said he’s thrilled to have taken LM Restaurants full circle and landed back near Deerfield Beach: “This is a really exciting time for our family to be coming home to where it all began.” Y
