A Testament to Failure BY SUSAN ROSSER Claire gazed into the camera and muttered, “Don’t show this part.” She had failed. Her disappointment was palpable. Claire is Claire Saffitz, a Harvard educated and French trained freelance recipe developer and video host who rose to food-fame thanks to a series of quirky videos she makes in the Bon Apétit magazine test kitchen entitled “Gourmet Makes.” In each episode, she attempts to replicate a popular junk food item — elevating it where she can. She has tackled Cheetos, Twix, Sour Patch Kids, Mentos and Oreos to name a few. It’s not easy — even for an accomplished food-guru like Claire. She fails a lot. And therein lies the appeal. Claire keeps it real. While most cooking videos are highly choreographed with the singular goal of making a particular recipe appear easy, “Gourmet Makes” is a testament to failure. Claire is 33 years old, yet an unexpected streak of gray interrupts her jet black hair. This might not work on some but Claire carries it off with a certain confidence. She is unafraid of failure, so what’s a few premature grays? She is hilarious, yet also meticulous. This is a woman who measured a Cheez-It. Still, she inevitably messes up time and time again. When Claire said “Don’t show this part,” she was wrapping up day-three of her valiant attempt to reproduce Sour Patch Kids. Gradually, she realized all her work up to that point was for naught. She had to completely rethink everything. I admit, I am a touch obsessed with this woman. Which is what got me asking myself “why?” She is quite funny, but I always come back to her failures. In these times when we are witness to so many highly curated lives on social media, it’s refreshing and incredibly appealing to watch someone with some serious credentials fall flat. And she let’s it show. She doesn’t stand in front of the camera all stalwart and stoic shouting something about onward an upward. Often, she slouches onto the stool behind her work station, slumped over like a 1930s stockbroker. And I can’t help but think “OK this is a woman who found her way to Harvard.” Even her grey streak sends a message to her audience, “It’s OK, no one is perfect.” I recently experienced a bad day in my own kitchen. I was baking an apple cake tatin for a few friends. As I was cleaning up, I noticed the glass on my candy thermometer was broken. Fully aware that no one enjoys glass in their cake, I snatched my cake

from the oven and dumped it. Not to be beaten down, I baked a whole new cake. The recipe calls for letting the cake cool for 15 minutes before flipping it to reveal gorgeously sticky caramelized apples. But I forgot about it. Later, when I tried to flip it, A failed attempt at apple cake tatin only half the cake actually made it out of the pan. Foiled again. At this point I considered serving fruit. But sometime around 3pm, feeling a sense of resolve, I baked my third and final cake of the day — inspired by Claire the whole time. Thankfully, it was perfect. What I hope is that Claire’s failures embolden me to take some more risks in and out of the kitchen. I’m seriously considering sourdough bread — which is apparently an eight-day project. As for outside of the kitchen — stand-up comedy? I find encouragement in knowing that this smart and hardworking woman can’t figure out how to make a Mento. And I don’t think I am the only one. She enjoys a loyal following. Her video entitled “Pastry Chef Attempts to make Gourmet Skittles” had garnered just over 12 million views as of press time. For many of us, fear of failure is a significant obstacle. If there is something you dream of doing in 2020 but are a little afraid, I suggest you watch an episode of “Gourmet Makes.” It’s not easy to make a Mento. I mean where would you even begin?

KIDS NIGHT OUT HOLIDAY PARTY

Yuletide on Atlantic 2019

Ring in another holiday season with the Yuletide On Atlantic Parade and Celebration. The parade will begin at 6:30pm starting from Riverside Drive, heading west on Atlantic Boulevard and ending at McNab Park. This year’s event will feature fun floats, marching bands, dancers, fire clowns, and a variety of other entertainment. After the Yuletide Parade, head over to McNab Park for children’s activities. Parade goers can write a letter to Santa in the North Pole, have a picture taken at the photo booth ride inflatable slides, and of course, meet Santa and Mrs. Claus. Be sure to have your phone (or camera) charged and ready for a photo opportunity with Santa Claus and other characters joining the fun in the park. Mayor Hardin will light the community yuletide tree to officially ring in the holiday season in Pompano Beach. Refreshments will be available in the park. Deerfield Beach Ocean Way Holiday

Enjoy the Sixth Annual Deerfield Beach Ocean Way Holiday Celebration at the International Fishing Pier. Festivities will begin at 5pm and run until 9pm. Come out for a family night of fun while walking the parade of lights display, taking your photo with Santa, enjoy snow flurries, kids’ activities, reindeer, an ice-skating rink and live entertainment throughout the event. There will be a complimentary shuttle during the event as parking on the barrier island will be limited. Parking will be available at the Cove Shopping Center (1500 E. Hillsboro Blvd.). Attendees can make the short walk across the bridge to the event or take the complimentary shuttle service between the Cove Shopping Center and the beach. Broward County’s drive-thru holiday lighting event is returning to Coconut Creek for 2019. The 25th edition of the Holiday Fantasy of Lights, with 3 miles of giant animated holiday displays and illuminated trees, is larger than ever blending the favorites of the past and the excitement of new creations by Brandano Displays. Boat Parades GREATER POMPANO BEACH AND LIGHTOUSE POINT HOLIDAY BOAT PARADE

Once again, decorated boats will light up the Intracoastal Waterway. The parade is put on by the Pompano Beach - Margate - Lighthouse Point Chamber of Commerce and chaired by Rhonda Bunker. The parade begins at Lake Santa Barbara in Pompano Beach and runs north to Hillsboro Boulevard in Deerfield Beach. Thanks to the efforts of boat owners in our community, this year will be the biggest parade in the history of this annual event. The parade begins at 7pm. Keep in mind, boats travel at about 3 to 5 knots, therefore the farther north you are the later the parade will start. Atlantic Boulevard and 14th Street Causeway Bridges will be in the upright position by 6:30pm and will not be usable for automobile traffic until the parade concludes. Enjoy this year’s event. Historic Bank Building Set to Become a New Restaurant Plans are underway to transform the 1920s building that housed the first bank in Pompano Beach into a restaurant with outdoor dining. The building is located at 61 NE First Street in Old Town, an area the Pompano Beach Community Redevelopment Agency (CRA) is developing as an arts and entertainment destination. Renovations of the old Bank of Pompano building are being completed by the property owner, Ghulam (Joe) Usman of DUC Pompano LLC. In October, Usman got approval from the City Commission to lease City-owned property just north of the building to use as an outdoor seating area for the restaurant. The property to be leased is a 2,500-square-foot portion of a passageway called “Artists Alley,” which is known for its colorful murals. Usman has agreed to spend $38,400 on capital improvements to the leased area, such as replacing existing landscaping and pavers, installing benches, tables, chairs, lighting, irrigation, security cameras, a gazebo or similar structure, fencing and electrical upgrades. As per the lease, the improvements must be completed within four years, and $19,200 must be expended within two years. . The restaurant, named Joe’s Camel Stop, will occupy the ground floor of the two-story bank building, which

dates to 1922. It will serve “down-to-earth American food with an international flavor,” including hamburgers, steaks, seafood, falafels and shish kebabs, said Usman. DUC Pompano LLC acquired the former bank building in 2008, as well as the Bailey Contemporary Arts (BaCA) building next door, when both buildings were under threat of being demolished. In 2012, the Pompano Beach CRA purchased the BaCA building, and turned it into an arts and culture venue. Usman used the proceeds from the sale, as well as a $40,000 grant from the CRA, to carry out refurbishments to preserve the bank building. The historic bank building, along with the BaCA building (formerly the Bailey Hotel, dating from 1924), were among the first buildings erected in what was Pompano’s growing commercial district or “downtown.” “To demolish those two buildings would be unjust to the history of the city,” said Usman. The upper floor of the bank building houses the office of Usman’s engineering and construction firm, as well as the office of an attorney who specializes in land use, zoning and environmental law. of the ground floor is occupied by an architectural firm that does renovation work in Old Town. “We are ready to help redevelop this area,” said Usman. Usman said he obtained the lease for the restaurant’s outdoor seating area in exchange for giving the City a five-foot walkway along the south and east sides of the bank building, which helped with the City’s streetscape improvements. Other restaurants are being planned for Old Town, including a hip “Southern comfort” restaurant concept, named Wood & Wire, that will occupy the building at 165 NE First Avenue. In addition, a vacant space at 122 N. Flagler Ave. will soon be home to a dual-concept sweets shop and coffee house. The CRA is in the process of creating a pedestrian and dining plaza, called “The Backyard,” that will serve as an outdoor dining area for these new restaurants. The plaza, which lies roughly north of the old bank building and BaCA, between NE First Avenue and N. Flagler Avenue, will also be used as a gathering place for the Old Town Untapped craft brew and arts event held on the first Friday of every month. Y

FPL Will Place Underground Lines In Pompano Beach, Lighthouse Point & Deerfield Beach Florida Power & Light has selected portions of Pompano Beach, Lighthouse Point and Deerfield Beach, as well as other areas in Broward County, to be part of a pilot program that will convert certain overhead neighborhood power lines to underground lines. Burying the power lines is part of FPL’s ongoing efforts to reduce outages during storms, particularly hurricanes. The three-year pilot project, which started at the end of 2018, is called the Storm Secure Underground Program. It is being carried out by FPL in different municipalities throughout its service territory, which includes 35 counties, or just over half the state of Florida. In Pompano Beach, the pilot program started in November, said Tim Hogans, FPL’s external affairs manager of northern Broward County. In Lighthouse Point and Deerfield Beach, the pilot program is slated to start in the first quarter of 2020, Hogans said. Overhead-to-underground conversions will take place in strategic areas throughout each city, based on FPL’s internal metrics. FPL estimates that, in all three cities, it will take about one year from the start date to complete the work. Approximately 80 percent of the FPL lateral and service lines in Lighthouse Point will be undergrounded through the program. The cost of the project in Lighthouse Point will be approximately $8 million, which will be covered by FPL. The existing overhead lateral power lines, which go from pole to pole, and the service power lines, which go from the pole to the house, will be replaced with brand new underground lines. FPL used several criteria to determine the location of these

projects, including the performance of power lines during Hurricanes Matthew and Irma, outages on power lines due to falling trees or branches, and the performance of power lines during day-to-day operations. FPL is currently in the process of designing the projects and getting permits. All customers in Pompano Beach, Lighthouse Point and Deerfield Beach who will be affected by the program will receive an official letter from FPL by the end of year, so they can plan and prepare accordingly, said Hogans. There is no cost to the municipalities to participate in the pilot program, and residents will not have to pay any out-of-pocket or upfront costs, because the project costs have been accounted for in FPL’s current rates. Earlier this year, the Florida legislature passed a bill that allows FPL and other electric utilities to increase their rates in order to pay for improvements that will make the state’s electrical grid more resilient against hurricanes. Any rate changes would have to be approved by the Florida Public Service Commission, which regulates the utilities. Since 2006, FPL has spent nearly $4 billion on strengthening its entire grid, including “hardening” its feeder lines (higher voltage main power lines), which involves replacing existing poles (usually

wooden) with thicker, taller concrete poles that can withstand winds up to 150 mph. FPL will continue to harden feeder lines in Pompano Beach, Lighthouse Point and Deerfield Beach, and other municipalities throughout its service area. “Undergrounding the lateral and service lines is the next step,” said Hogans. “Hopefully, we’ll see less outages all around. That’s the whole goal.” Once the new lateral and service lines are placed underground, the power poles will remain in place because AT&T and Comcast utilities will still be on the poles. FPL will remove its power lines from the poles and cut the tops off the poles just above the lines that belong to AT&T and Comcast. FPL will also remove the existing overhead transformers from the power poles and install transformer boxes at ground level. Pompano Beach Pier Closer to Opening, but Date Uncertain; Usage Fees to be Charged

The newly reconstructed Pompano Beach pier, recently named the Fisher Family Pier, is getting closer to opening to the public after several delays. Construction of a final component needed for the opening – a signature arch at the entrance of the pier – began at the end of October, and is expected to be completed in January. A new entry plaza to the pier, where the arch is being constructed, was completed last month. The arch is meant to be an iconic landmark that will become immediately recognizable in Pompano Beach and beyond. Once the pier is opened to the public, the City plans to charge a fee to access it: $2 for sightseers, and $5 for fishermen. However, due to concerns raised by residents over the cost, the City is exploring different options, such as offering a resident discount, or the possibility to purchase an annual pass. Completion of the arch was one of the primary obstacles delaying the opening of the pier, which was originally anticipated for July 4, and then was pushed to October. This was in part due to the ongoing construction of the Oceanic restaurant and Lucky Fish Bar and Grill, which blocked access to the pier entrance area. A date for the Pompano Beach pier ribbon-cutting and opening, which the City says will be on the same day, hasn’t been set yet because it depends on when the arch is completed, and also on Lucky Fish Bar and Grill, still under construction, adjacent to the new pier entry plaza. Lucky Fish is projected to be completed in February 2020. The City has said it does not want to have a grand opening until it’s safe for pedestrians to access the pier. The new plaza and arch are located at the west end of the pier,

When burying the power lines, in most cases, FPL or its contractors will use low-impact drilling equipment, such as a missile bore, which minimizes disruption to property. Once construction is complete, property will be restored to its pre-construction condition. At the Lighthouse Point City Commission meeting on Oct. 22, City Administrator John Lavisky informed the Commission that Lighthouse Point had been selected by FPL to participate in the pilot program. Mayor Glenn Troast said FPL has already contacted homeowners in the city’s marina area to get easements from them, meaning permission for FPL to install its facilities on their property. All the easements need to be in place before the project begins. It was the consensus of the Commissioners that they would like FPL to come speak to them about the pilot program. Hogans and members of FPL’s undergrounding program team are scheduled to be at the Lighthouse Point City Commission meeting on Dec. 10, 2019 to give a presentation about the pilot program, and to address any questions from the Commission. There are already some homes in Lighthouse Point that have underground FPL lines, which the customers did at their own expense. The standard practice today, based on state law, is that any new residential subdivisions are required to have underground lines, said Hogans Y

between Lucky Fish and the recently opened Oceanic, which are part of the beachside development project known as the Pompano Beach Fishing Village. The plaza and arch were originally budgeted at $250,000, to be funded entirely by Pompano Pier Associates, the developer of the Pompano Beach Fishing Village. For various reasons, the cost to construct the plaza and

arch exceeded the original budget by $400,000, and the Pompano Beach Community Redevelopment Agency (CRA) has stepped in to provide the additional funds. The extra $400,000 includes all the permitting and engineering fees involved in the plaza and arch construction. Mayor Rex Hardin said that even though the plaza and arch project is costing more, it will “pay huge dividends” in the long-term that will benefit tourism and residents. The arch is intended to be a place where visitors will take pictures that will be posted to social media. “Everybody across the world is going to begin to understand where Pompano Beach is,” said Paul Kissinger, a principal of EDSA, the firm that designed the plaza and arch, and that has also been involved in every phase of the development of the Pompano Beach Fishing Village, >>>

Pompano Beach Pier (continued) from master planning to construction. The design of the arch emphasizes the city’s history as a fishing and water sports hub, according to EDSA. The City, the CRA and the developer wanted the scale of the arch – just over 28 feet high (almost three stories) and 30 feet wide – to be substantial so it wouldn’t be overwhelmed by the distinctive architecture of the Oceanic restaurant beside it. They also wanted the arch to be large enough to be seen from a distance. It was also decided that the concrete used for the plaza should match the concrete that was used for the existing sidewalk along Pompano Beach Boulevard, which has circular inlays of shells and glass. The cost to use this specialty concrete for the plaza was 4-5 times more than the

cost of regular concrete or paver bricks. Another factor that drove up the cost of the arch is a lighting system that was added so it can be illuminated at night. Only special amber-colored lighting approved by the Florida Fish and Wildlife Conservation Commission could be used, to ensure it is sea turtle friendly. The arch will have orange acrylic lettering on both sides, so it can be seen by visitors when entering and exiting the pier. A fish representing a pompano will be made with dimpled aluminum that looks like the scales of a fish. The main structure of the arch, which is made of hurricane-resistant rolled steel, was put in place in October. The next phase will be to mount two customdesigned stainless steel surfboards,

one on each side of the arch. The surfboards are in the process of being manufactured and are expected to be completed this month, according to Dutchy Enterprises, the fabricator in Cocoa, Florida. Fort Lauderdale-based Art Sign Company is manufacturing the fish sculpture, lettering and lighting. Amenities on the new $11.5 million pier include shade structures, benches, splinter-free railings, marine-related artwork, Wi-Fi, and an underwater camera for watching fish. Last June, the Pompano Beach City Commission voted to name the new pier the “Fisher Family Pier,” in honor of the contributions made by former Mayor Lamar Fisher, now a Broward County Commissioner, as well as his family, to the city. One of Ely’s former students is Katheryn Gillis, who graduated from Blanche Ely High School in 1953. “It’s a good feeling to know that the young people that are coming to the museum will learn the history of Mrs. Ely – what she stood for, where she came from, and why she was concerned about this community,” said Gillis. Ely fought to bring quality education to Pompano’s African-American youth at a time when schools were segregated. “She wanted every one of us to be successful,” said Gillis. “We didn’t have the

best of everything, but she always let us know that we could reach for the skies.” Ely, who first came to Pompano in 1923 as a young teacher, earned several degrees, including a master of education degree from Columbia University in New York. In the late 1920s, she was principal of the Pompano Beach Colored School, which was later renamed Blanche Ely High School, and transferred to the site of the existing high school, while Ely was still principal. The former home of the late Blanche Ely and her husband, Joseph, also an influential educator in Broward County, reopened its doors as a museum in March 2019, after undergoing renovations costing $450,000. The museum is now a showcase for the significant social and cultural milestones of Pompano Beach’s northwest community, while also serving as an active cultural hub offering a variety of communitybased workshops focused on history, arts and culture. Can You Believe the Traffic? BY JEFF LEVINE

10,500 RESIDENTIAL UNITS. 2,000 HOTEL ROOMS. 6.5 MILLION FEET OF NEW COMMERCIAL SPACE. If you read last month's cover story in Pompano! magazine about the "Building Bonanza" the city is about to undertake, you probably read it in awe, as I did (and I even wrote part of it). The numbers above represent the growth expected, based on the upcoming projects we wrote about.

Residents have expressed enthusiasm for the overall concept and some trepidation for specific projects close to their actual homes. By far, their biggest concern is traffic. Where will all the cars associated with 10,500 new residences, 2,000 hotel rooms and 6.5 million feet of commercial space go... and how congested will our roads become? Before we dig into that juicy question, a few notes on our estimates. They are based on totals received from the city and the builders. The majority of growth comes from two long-term, large scale projects: the overhaul of the Isle Casino property and the new "Innovation District" to be built between Dixie Highway and I-95, north of Atlantic Boulevard Both could take ten or more years to complete and may evolve into different forms with different totals by the time they are done. Most of the other projects are underway or close to breaking ground. Even if we wind up with half the estimated totals, it will still mark a major change to Pompano Beach. Additionally, there are several substantial projects on the horizon that are either on the back burner or are too new to have formal plans brought before the city (including the Atlantic Square shopping center conversion into a possible hi-rise apartment, hotel, commercial development). We also haven't included recently completed additions such as Overlook Point and the Avery apartments on Federal Highway or other shopping, hotel or residential construction. So, back to our big question: How does a city with less than 55,000 residential units in 2017 transform its roadways and transportation system to successfully accommodate what may be over 65,000 residential units by 2030, not to mention the increased traffic from Westbound traffic on E Atlantic Boulevard in Pompano Beach the growth in businesses and tourists the plans are expected to bring? <<< our reliance on automobiles. South Floridian leaders have been bringing up big plans for decades involving more trains, improved bus service and new local area shuttles. Virtually all have underperformed or been dropped before even reaching fruition. I've heard about changing the timing of traffic lights. This will certainly help. But traffic is already backed up in high season along our major roads. A few timing changes will not prevent gridlock if traffic grows as much as projected. I've even been told of a possible flyover (when you pass non-stop over an intersection instead of driving through it) in the Powerline Road-Atlantic Boulevard area. That sounds like a good start but we'll need a lot more flyovers in Pompano Beach for them to have a substantial impact. For the most part, Pompano Beach's leaders seem in denial about the traffic problems headed our way. Not only do they not have serious plans to make traffic move faster, they are still proposing to reduce the number of lanes near the Dixie Highway-Atlantic Blvd. intersection in order to make the area more "pedestrian friendly." Hey let's cut even more lanes. And then when traffic is at a complete standstill pedestrians will no longer have to worry about cars speeding by at all. The City has done a terrific job in creating a new vision for Pompano Beach. The potential is amazing. Still, there are some issues needing resolution. Traffic is probably first on most residents' lists. The city needs to actively develop a realistic plan or we may not be able to drive from one end of town to the other to see the results of that awesome vision. Y

Fees For Pier Usage

You’ve probably read by now the city is planning to charge $2 to walk and $5 to fish on the soon to reopen Fishing Pier. If our Facebook page is any indication, many residents were horrified by this news. In fairness, the piers to our north and south charge admission, although slightly less than Pompano Beach’s proposed fees. (As we went to press the East CRA Advisory Committee also came out against the fee.) While I’d prefer a free pier, I’m not shocked by the revelation. There’s been talk of a fee for several years. However, no one from the city had been willing to confirm the charge until now. The city has probably expected it to happen for quite a while. Instead of discussing the fee publicly as soon as the wrecking balls began to demolish the old pier, they chose to keep the idea on the down low until now. That’s a problem for me. Good government is transparent. I’ll pay my two bucks, but as I take in the wonderful ocean breeze, I’ll also be wondering what other revelations we haven’t been told about yet?

It Dawned on Me

Should You Bring Home a New Pet for the Holidays? BY DAWNE RICHARDS THIS WILL BE QUICK, BECAUSE THE ANSWER TO THIS QUESTION IS NO. I’M KIDDING. KIND OF. According to the Mercury-News, “The temptation to present a child, or an adult, with a … puppy or … kitten [during the holidays] is hard to resist, but until recently, we were told the holidays were not the right time….Better to wait … until after the holidays. However, shelters and rescue groups have started embracing pet adoptions at the holidays [and many now offer] special rates on pets and encourage families to add a new member at the holidays.” Well, of course they do! PETA estimates that there are between 60 and 100 million stray* cats in the United States. *PETA prefers “homeless”, but I’m an old curmudgeon, so I’m sticking with “stray.” But I digress, as usual. We recently adopted a kitten, just in time for the holiday season to begin in earnest. My son convinced me that we “needed” her (by the way, “convinced” and “conned” both mean “tricking your parents”). At the vet’s office was a litter of five kittens, rescued from a Clewiston shelter right before Dorian, the storm that toyed with us for five long days while wreaking havoc on the Bahamas. One of these kittens is now wreaking havoc on my home. The charming and mischievous nine-week-old Jax arrived in our home with Dorian-like energy and fury. She’s adorable, and I’m in love, despite my better judgment. Any shred of that judgment went out the window two weeks later, when my son returned from a visit to the vet looking sadder and more manipulative than usual. “What’s wrong?” I asked. “Oh,” he said, “It’s just…two of Jax’s siblings are still there, and…” “No,” I said firmly, mentally debating whether we should just get both siblings. “Absolutely not!” While checking my calendar to see if we had time to go get one or both today, I listed the reasons why we absolutely, positively were not getting either one. Finally, after putting up a good front, I told my son to get in the car. At the vet’s, again, I fell in love, again. The two remaining siblings were a boy and a girl. The girl was absolutely adorable,

and absolutely crazy. I envisioned years of destroyed furnishings, broken priceless collectibles, and multiple therapy visits to uncover the roots of my madness. But oh, the brother! Calm, cool, collected and cuddly. He looked around curiously but was content to let his sister take center stage. “This boy,” I thought, “would make a wonderful ‘nephew’ to our adult cat, Percy.” “Plus,” I rationalized, “it’ll be fun to raise siblings together!” So, as the holidays are upon us, here we are, with two of the cutest kittens ever. Based on personal experience, I advise not bringing home an animal during the holidays; it’s too hectic, and we’ve probably got many hazards around the house. Instead, I recommend getting one (or two) this weekend, so everyone has time to adjust. Have a fabulous holiday season. Y

The parade begins at Lake Santa Barbara in Pompano Beach and runs north to Hillsboro Boulevard in Deerfield Beach. Thanks to the efforts of boat owners in our community, this year will be the biggest parade in our history. The parade begins at 7 pm. Keep in mind, boats travel at about 3 to 5 knots therefore the further north you are the later the parade will start. Atlantic Blvd. and 14th St. Causeway Bridges will be in the upright position by 6:30 pm and will not be usable for automobile traffic until the parade concludes. ITAL IAN for the HOLIDAYS As a young newlywed, I was invited to my in-laws house for Christmas Eve dinner. You should know that I am Jewish so this whole Christmas thing was new to me. I lucked out that year because my sister-in-law, who loves to cook, decided on an Italian menu. As a Christmas newbie, I was totally down with that plan. I mean who doesn’t love Italian food? During the holidays, many of us adhere to whatever our tradition dictates. But aren’t we all just a little jealous of the Italian families who sit down to feast on big trays of lasagne or chicken Parmesan? Let’s face it, Italian food is universally loved. Everyone is happy to see shrimp fra diavlo on the table. With that thought in mind, we were fortuitous to cross paths with the good people from Flora Foods, a local importer of Italian food and wine. We put our minds together and decided to host a holiday dinner at Café Med at the Wyndham Deerfield Beach Resort. Chef Tulio Castilla put on quite a show for us that night — from pasta to Porchetta — he showed off his Italian know-how. To get the party started, everyone was greeted with a glass of Proseco. Bubbles are always appropriate. Next, we enjoyed a beautiful antipasto spread stretching down the center of our long banquet table. Everyone dug in family style — there were meats and cheeses and artichokes and so much more. We moved onto two pasta dishes, Porchetta, snapper Livornese and two super easy yet delectable desserts. Naturally, a different wine was served with every course. Why it was John Flora himself who encouraged me to have just one more glass of the luscious chianti. Salut! —Susan Rosser

INGREDIENTS cerignola olives kalamata olives roasted red peppers marinated artichokes grissini breadsticks Parmesan cheese wedge pecorino cheese wedge olive tapenade salami prosciutto sun-dried tomatoes (We used Flora Foods ingredients for many of the items listed.) DIRECTIONS Set up your antipasto platter on a large tray or assemble the ingredients onto small and medium size white ceramic plates and bowls. It all depends on what best fits the mood of your gathering (rustic and informal or more formal and elegant). Either way, it is always fun to get creative with your antipasto presentation. Wine Pairing: Vino dell’Amicizia 2016 – Pinot Noir

SERVES 4 AS MAIN DISH OR 8 AS A SIDE DISH

INGREDIENTS 1/3 pound pancetta in 1 piece 2 tablespoons extra-virgin olive oil 1 onion, thinly sliced 1/4 teaspoon red pepper flakes 1 tablespoon fresh Italian parsley leaves, chopped 1 1/2 tablespoons red wine vinegar 3/4 cup of pureed San Marzano tomatoes D.O.P (such as Flora) 3/4 pound homestyle spaghetti or bucatini (such as Flora) Parmesan cheese, freshly grated PREPARATION Bring a large pot of salted water to a boil over high heat. Cook the pasta according until it is almost al dente. Cut pancetta into 1-inch long chunks, and then slice each chunk thinly across the grain. Heat the olive oil in a large skillet over moderately low heat. Add the pancetta and cook until it renders some of its fat (about 5 minutes). Do not allow it to crisp. Add the onions and cook until soft, about 10 minutes. (While the onion is cooking, add the pasta to the boiling water.) Add the red pepper flakes and parsley to the onion mixture and cook briefly. Add the vinegar and simmer briefly until it evaporates, then add the tomato puree and 1/4 cup of the pasta water. Simmer briefly to blend. When the pasta is almost al dente, drain it and return it to the warm pot over moderate heat. Add the sauce and cook briefly so the pasta absorbs some of the sauce, then transfer the pasta to a warmed serving bowl and sprinkle with the Parmesan cheese.

Wine Pairing: Villa San Giovanni Chianti Straw Basket INGREDIENTS 1 pound pennoni rigate (such as Flora) 1/4 cup extra-virgin olive oil 3 cloves garlic, finely chopped 1 large eggplant, peeled and chopped 1 28-ounce can San Marzano tomatoes D.O.P. (such as Flora) salt and freshly ground black pepper to taste 1/2 teaspoon crushed red pepper 1 cup ricotta cheese 20 basil leaves, thinly cut, divided Parmigiano-Reggiano, grated

PREPARATION Bring a large pot of water to a boil. Salt the water, add the pasta and cook until al dente. Drain the pasta and reserve a cup of the water. Heat the olive oil in a large, deep skillet over medium-high heat. Add the garlic and crushed red pepper and sauté until fragrant. Add the eggplant, season with salt and cook until tender (12 to 14 minutes). Break up the eggplant almost into a coarse thick sauce. Stir in the San Marzano tomatoes D.O.P. and heat through, break up the tomatoes as well and stir in half the basil. Simmer for a 5-7 minutes. Season with salt and black pepper to taste. Stir in the reserved pasta cooking water, add the pasta and toss. Serve on a large platter (family style) sprinkle grated Parmigiano-Reggiano. Top with the ricotta cheese — don’t stir it in. Sprinkle the remaining basil and Parmigiano-Reggiano over the dish.

PREPARATION Put belly skin side down; arrange loin in center. Roll belly around loin so the short ends of the belly meet. If any of the belly or loin overhangs, trim meat. Unroll; set loin aside. Toast fennel seeds and red pepper flakes in a small skillet over medium heat until fragrant, about 1 minute. Tip spices into a bowl; let cool. Finely grind spices in a spice mill and transfer to a small bowl, along with the sage, rosemary and garlic and set fennel mixture aside. ASSEMBLE PORCHETTA Set belly skin side down. Score the belly flesh with knife in a checkerboard pattern 1/3” deep so roast cooks evenly. Using a meat mallet, pound skin for 2 minutes to tenderize it. (This helps make crispy skin when roasted.) Turn the belly and salt skin and loin; rub

with fennel mixture. Roll belly around loin; tie with kitchen twine at 1/2” intervals. Trim the twine. Transfer roast to a wire rack set in a rimmed baking sheet. Refrigerate roast, uncovered, for 1 day to allow skin to air-dry; pat occasionally with paper towels. Let porchetta sit at room temperature for 2 hours. Preheat oven to 500 degrees. Season porchetta with salt. Roast on rack in baking sheet, turning once, for 40 minutes. Reduce heat to 300 degrees and continue roasting, rotating the pan and turning porchetta occasionally, until an instant-read thermometer inserted into center of meat registers 145 degrees, 1 1/2-2 hours more. If skin is not yet browned and crisp, increase heat to 500 degrees and roast for 10 minutes more. Let rest for 30 minutes. Using a serrated knife, slice into 1/2” rounds.

FAIRMONT LE CHÂTEAU MONTEBELLO My husband Richard and I virtually stumbled upon Fairmont Le Château Montebello while driving to Montreal without a hotel for the night. We were on vacation in the Adirondacks in upstate New York and at the last minute took a jaunt up to Canada. (Thankfully we had packed our passports.) As Richard drove, I researched hotels on my phone. I was able to book us a room at Le Château Montebello about 1 1/2 hours west of Montreal —man, did we luck out. The hotel is the world’s largest log cabin — imagine The Breakers, but it’s made out of logs and it’s in Canada. The resort is steeped in history and the grounds are breathtaking. And if by chance you harbor a secret desire to try curling — you’re in luck. The hotel offers lessons and curling is even included in the resort fee.
