recipe of the month California Wine Country Salad Serves 6 1 pkg (10 oz) mixed salad greens ¾ cup red pepper, cut into strips 1 bunch fresh asparagus, trimmed ¾ cup olives, sliced in half ½ cup toasted pine nuts 1 cup marinated artichoke hearts, quartered ½ cup Bleu Cheese Crumbles ½ cup Litehouse Balsamic Vinaigrette 2 cups shredded rotisserie chicken or cooked salmon (optional) Break asparagus into 1 ½” pieces. Add ¼ cup water; cover and microwave 3 minutes. Immediately drain and put in bowl of ice water to stop cooking. In a flat pasta bowl, toss salad greens with red pepper, asparagus, olives, pine nuts, artichokes and Litehouse® dressing. Toss gently; top with Bleu Cheese Crumbles and chicken or salmon. Although we were being married in New Hampshire, I wanted to add a touch of my home state, Kansas, to the wedding. My fiancee, explaining this to a friend, said that we were planning to have wheat rather than rice thrown after the ceremony.

Driving down the highway, I saw this slogan on the back of a well-known trucking company’s vehicle: “We Always Go the Extra Mile.” In the grime beneath it, someone had scrawled, “That’s Because We Missed the Last exit.”

Our friend thought for a moment. Then he said solemnly, “It’s a good thing she’s not from Idaho.”

Proper attire is required in the cafeteria at the University of Maine. To enforce that rule, the management posted this notice: “Shoes are required to eat in this cafeteria.” Next to it, a student added, “Socks can eat wherever they want.”

For many of us life as we know it is on a fast-paced track that takes us from here to there and there to here, day after day after day. We slow down only when were forced to! We pack so much into each day and then complain that we never have time for anything else, let alone doing something for someone else. Although our hearts go out to others in need and we desire to help, our mind quickly puts it all back into perspective and reminds us that there is still so much we need to do in our own life. It’s a cycle that keeps most of us from accomplishing great things, but for four local Sandpoint residents this “cycle” means something different. This “cycle” is something they’re going to ride to make a difference in the lives of thousands of people across America.

Wayne Pignolet, Jacob Styer, Al Lemire and alternate riders Mike Murray and Jim Mellen have set their goal to finish in seven days and raise $1 million for autism and they are well on their way having already raised more than $15,000 through fundraisers. The team knows they’ve set a lofty goal. The RAAM website says that in each of the past three years, all the participants, collectively, have raised about $1 million for a variety of charities.

“It started with four guys sitting around a campfire and deciding they wanted to do “The Race Across America,” said the 51-year-old Pignolet, an avid cyclist who lives in Sandpoint.

“To be able to help the community is really what it’s all about,” Dick said.

But unlike so many other races, this particular one is different; it’s a race with a purpose. “The very cool part of this is we’re raising money and awareness for autism.” said Pignolet.

Case in point, for the past 12 years, David and Lisa Barth, of Sandpoint, have cocooned around their small family, maxed out with the day-today challenge and joy of raising an autistic son. But now they’ve been inspired to use their experience to raise awareness about autism in this region. And the connection with this group of Sandpoint bicyclists taking on one of the country’s biggest endurance challenges in the name of autism has provided that opportu-

Their mission is to raise awareness and raise funds for organizations that support families living with autism in the Pacific Northwest. The route is o over 3000 miles, touching 14 states and climbing over o 100,000 feet. Teams typically cross the country in 6 to 9 1 days, averaging 350 to over 500 miles per day. Solo racd ers finish in 9 to 12 days, averaging 250 to 350 miles per e d day. Teams have a relay format and race 24 hours a day. SSolo racers have the challenge of balancing a few hours of sleep each night against race deadlines. o

volunteer of the month Jeff Johnson For those of you that haven’t noticed there’s something neat happening on Pine Street. The old “Babe Ruth� field, which is referred to as Pine Athletic Field, is in the middle of a transformation. Once a neglected piece of real estate, it has quickly become one of the nicest fields in Sandpoint, thanks to one individual who has volunteered to restore the field. In less than 3 months, Jeff Johnson has single handedly brought life back into this old field with hard work, dedication and passion. Having grown tired of watching his son play on lousy fields in Northern California, Johnson went to work on finding solutions. “I stole and idea from a friend and went to the local parks district and within a three year time frame, we built 4 fields from scratch. The landscape architect told me it would’ve cost the district $450,000 to do the project; we spent just under $50,000.� Johnson went onto say, “it became obvious to me that doing it yourself was the only way to go.� It became a passion and since, Johnson has restored and or built 11 fields. When given the opportunity to spend 3 weeks with Chicago Cubs players, Johnson opted to hang with the grounds crew. “I knew when I got home I had baseball fields to tend to,� Johnson laughed. Johnson went on to say, “the people here in Sandpoint have been WONDERFUL to work with. It’s a whole different attitude here and people like Matt Biel, Tom Albertson and Gary Lambert have made this possible and want to be part of the solution - not part of the problem. My goal with the Pine Street field is to have the players at all levels want to play there, rather than at Memorial Field. I guess it’s the ego in me.�
