Christmas Cooking

A festive Feast

Christmas gives friends and families a perfect excuse to come in from the cold and celebrate over plenty of delicious food! Get in to the Christmas spirit with our easy yet impressive recipes that will make this Christmas one to remember.

Roast turkey

with watercress and orange stuffing Prep time: 20 minutes Cooking time: 3hours Serves: 6 Ingredients: 1 (4kg) oven ready turkey, giblets removed 1 onion, halved 1 lemon, halved 75g soft butter 100g watercress For the stuffing: 50g butter 1 large onion, finely chopped 2 stick celery, finely chopped 1 garlic clove, crushed 100g watercress, chopped 50g blanched toasted hazelnuts, roughly chopped zest and juice 1 large orange 200g fresh white breadcrumbs 10ml dried thyme salt and freshly ground black pepper For the gravy 100ml sherry or dry white wine 500ml chicken stock 30ml cornflour

Method: Make the stuffing, melt the butter in a medium pan add the onion and celery and cook over a medium heat until soft and pale golden. Add the garlic and watercress, cook for a further 2 mins until the watercress is wilted. Remove from the heat and tip into a large bowl, add the hazelnuts, orange zest and juice, breadcrumbs, thyme and plenty of freshly ground black pepper and a little salt to taste. Mix well. Leave until cold. Preheat the oven to 190oC/ Fan 170oC Gas Mark 5. Wash the turkey inside and out and dry with kitchen paper. Place the onion and lemon inside the cavity of the bird. Spoon the stuffing into the neck flap of the turkey, packing it in tightly, then secure the flap with cocktail sticks, or sew together. Line a large roasting tray with two pieces of wide foil laid like a cross. Place the turkey in the centre of the foil and rub the breast and legs with the soft butter. Season with salt and pepper. Pull the foil up and around

the turkey to ‘tent’ the bird, sealing it at the edges. Place in the centre of the hot oven and roast for 3hrs. Half way through the cooking time, remove the bird from the oven, loosen the foil and spoon the cooking juices over the bird to baste, reseal the foil and continue to roast. Forty minutes before the end of cooking. Remove from the oven, fold back the foil, baste the bird with the juices again then, roast uncovered until the turkey is a lovely golden brown. Remove the bird from the oven, transfer to a board, cover with foil and leave to rest for 10 minutes this makes carving easier. To make the gravy, pour the hot stock into the roasting tin and use a wooden spoon to scrape away all the cooking juices that have collected on the foil

and in the tin. Then pour the liquid through a sieve into a medium pan. Place on the hob, add the sherry and bring to the boil and simmer to reduce for 10 minutes. Mix the cornflour to a smooth paste with a little cold water, then add to the gravy stirring until the gravy boils and thickens. Transfer to a warm gravy boat and keep warm. To present the turkey for the table, take a large warm serving platter, scatter the watercress all over the plate. Lift the turkey from the board and arrange in the centre of the leaves. The leaves will wilt and soak up the juices from the bird as it is carved. Serve the turkey and stuffing in slices with a good portion of the wilted watercress. Serve with all your favourite seasonal vegetables.

Roast Potatoes, Parsnips and Shallots

Festive Food

with Pancetta and Bay Leaves Prep Time: 10 minutes Cooking Time: 1 ½ hours Serves: 6 Ingredients: 1.5kg Potatoes, medium sized, peeled 900g parsnips, medium sized, peeled 2 tbsp plain flour 1 tbsp fresh thyme, chopped, plus a few sprigs 6-8 tbsp rapeseed oil 12 shallots, peeled 200g pancetta, roughly chopped 6 whole bay leaves Sea salt and black pepper www.UKshallot.com

Method: Preheat oven to 200°C/Gas 6 Cut any large potatoes in half and all of the parsnips in half lengthways, cook the potatoes in boiling salted water for 8 minutes or until parboiled. Meanwhile cook the parsnips in the same way in another pan for 4 minutes. Drain the potatoes well then return to the pan and cover, shake the pan to roughen the edges of the potatoes. Drain the parsnips and toss them in the flour, chopped thyme and seasoning. Pour the rapeseed oil into a large roasting tin and heat in the oven; you need around 1cm of oil in the tin. Add the potatoes and turn them over in the oil using a slotted spoon. Roast uncovered for 15-20 minutes, remove the tin from the oven and turn the potatoes, add the parsnips

and shallots and turn them in the oil too. Roast for a further 35-40 minutes then turn all of the vegetables again, add the pancetta. Increase the heat to 220°C/Gas 7 for a further 15-20 minutes, adding the thyme sprigs and bay leaves for the final 10 minutes. Sprinkle with a little sea salt and black pepper and serve immediately

Cranberry Meringue Roulade with Cointreau Orange Cream Prep time: 20 minutes Cooking time: 25 mins Serves: 8 Ingredients: For the meringue 5 eggs whites 275g caster sugar 50g flaked almonds For the filling 250g fresh cranberries 100g caster sugar Grated zest and juice of half an orange 300ml double cream 3 tbsps Cointreau Cooks Tip: For that extra wow factor decorate with chocolate holly leaves and delicious crystallised fresh cranberries. For the holly leaves paint melted chocolate onto the back of clean holly or bay leaves, allow to set in the fridge, repeat with another layer of chocolate and set again. Carefully peel off. To make crystallised cranberries, soak fresh uncooked cranberries in a sugar syrup, roll in caster sugar and allow to dry for a few hours.

Method: Preheat the oven to 200°C / Gas Mark 6. Line a 35cmx23cm Swiss roll tin with lightly greased baking parchment. Whisk the egg whites until very stiff, then gradually add the sugar. Spread the meringue into the prepared tin and sprinkle with the almonds. Bake in the oven for 10 minutes then reduce the heat to 160°C / Gas Mark 3 and continue to cook for a further 15 minutes. Remove from the oven and turn almond side down on to a sheet of baking parchment, allow to cool. To make the filling, place the cranberries in a saucepan with the sugar,

orange juice and zest and simmer until softened and syrupy. Then take off the heat and allow to cool. When ready to assemble whisk the cream and the Cointreau until the mixture stands in soft peaks. Spread the cool cranberry mixture evenly over the roulade then spread the cream over. Roll up from the long end fairly tightly, don’t worry if it cracks a little. Place on a serving plate and chill before serving. To freeze: Place the filled and rolled roulade on a suitable platter, open freeze overnight then wrap in a double layer of foil. Polar Bears swim miles to raise money Disability Swimming Club Blackpool Polar Bears have been making waves in an attempt to try and raise money.

T

he club took to Moor Park swimming pool at the weekend to rack up over 20 miles worth of swimming as part of a sponsored swim. Over 70 of the clubs members made a splash by swimming a total of 21.57 miles, as an attempt to raise money to keep the club running in the future. Blackpool Polar Bears helps people with disabilities to get swimming and holds its meeting at Moor Park every Sunday morning, with sessions for beginners and advanced swimmers. The club has also had success recently by supplying athletes to take part in the UK Special Olympics. Organising the club and providing the teachers is all done by volunteers, while Blackpool Council provides an offer for using the pool every week.

However, equipment and competitions still cost money, and every penny raised by the Polar Bears can be put to good use helping the members improve their abilities and their social relationships. Chair of the Swimming Committee, Lynda Inglis, said: “We hope that this event will help us raise over £1000 which will make a massive difference in helping to keep the club running.” Cllr Graham Cain, Cabinet Secretary for Blackpool Council added: “The Polar Bears committee and volunteers do a wonderful job and make a real difference to all their members. Research shows that exposure to the cold can have a devastating impact on the health of older people, who are particularly vulnerable to the impact of low temperatures. As people get older it takes longer to warm up which can be bad for people’s health. The cold thickens blood and increases blood pressure, and breathing in cold air can increase the risk of chest infections. The good news is that preparing effectively for the cold weather can literally save lives. That’s why this winter Age UK will be working hard to remind older people and carers of the importance of taking simple precautions to stay warm and well. The Charity is urging people to call Age UK Advice for free on 0800 169 65 65, and order a free copy of the Charity’s ‘Winter Wrapped Up’ guide which contains a free thermometer and provides tips on staying warm in winter. Alternatively the guide can be downloaded from www. spreadthewarmth.org.uk where contact details for local Age UKs can also be found.

AGE UK’S TOP TIPS FOR STAYING WARM AND WELL THIS WINTER l 64°F (18°C) is the ideal temperature for your bedroom and 70°F (21°C) is the ideal temperature for your living room. Check your thermostat or use a room thermometer to monitor temperature l Keep your bedroom window shut on at night. Breathing in cold air can increase the risk of chest infections. l Stay active and when you are indoors try not to sit still for more than an hour, if you can get up. Walk around or make a hot drink. l Eat well. It’s important to eat well, especially in the winter. Have at least one hot meal a day and have regular hot drinks, as they help to keep you warm. Also stock up on basic food items in case of a cold snap.

Age UK’s Campaign for Warm Homes For many years, Age UK has argued that improving energy efficiency in people’s homes is the long term to solution to the high levels of excess winter deaths, winter health problems and fuel poverty amongst older people in England. Due to the closure of one of the Government’s flagship energy efficiency programme - the Green Deal - currently there is very limited support for anyone who wants to install measures to make their home warmer. That is why the Campaign for Warm Homes is urgently calling on the Government to reform its energy efficiency programme to enable all older people to live in a warm home. Have a very messy Christmas As some of Blackpool’s finest musical acts take to the stage to reinterpret classic Christmas songs

B

ack for it’s eighth season after a two year break, A Very Messy Christmas is not just your average local gig. Over 14 of our finest local acts take to the stage in one night, packed tighter than santa’s sack, to smash out their own takes on Christmas classics as well as a couple of their own tunes. The event which started back in 2005 at the long since defunct South Shore music venue Riffs before moving to The Blue Room in Blackpool town centre after the closure of Riffs. However the curse of the ever evaporating Blackpool music venue struck once again with The Blue Room (Version 1) closing in 2013 (some may argue in part due to the bands polluting the atmosphere with terrible Christmas music) leaving ‘A Very Messy Christmas’ without a home. The night faded into the annals of Blackpool music history never to be heard of again. However the event, much like big screen adaptations of Spiderman and Keith Richards, refused to lay down and die and with the opening of the Bootleg Social Club on Topping Street last year the organiser

felt that ‘A Very Messy Christmas’ had once again found a home that it could move into, festive up and hopefully not cause the venue to close this time. Playing A Very Messy Christmas 8 will be a host of familiar acts to have graced the event over the past decade. Goonies Never Say Die, Blackpool’s very own instrumental rock act will return to the live scene alongside well as other familiar ‘Messy Christmas Carollers’ Kraul, Uncle Paul, The Drop-Out Wives, Dinosaurs Are S*** Dragons, Stewart Penwarden and Black Eddy. New acts to grace the festive stage this year are The Poly-Esters, I Drink Therefore There’s Darkness, Eye The Bomb and Adam Smith. We carry out home checks of all prospective new owners and foster carers and we ask for an adoption donation of around £35.
