Free festive parking to boost business PARKING charges are to be waived at council-operated car parks in Clitheroe and Longridge town centres on three Saturdays in December and January.

T

he charges are being waived as part of the Retailers and workers are reminded that the council’s annual festive business boost. free parking is for the benefit of customers and visitors. Free parking will be on offer for up to four hours at council-operated car parks in Clitheroe Information on the locations of council town centre and Barclay Road Car Park in car parks in Ribble Valley is available from Longridge on Saturday, December 12, 19 and ribblevalley.gov.uk January 2. Ribble Valley Borough Council leader Stuart Hirst said the council was delighted to do its bit to boost trade during the festive season. He said: “The council has been offering free festive parking at its car parks for some years now and the initiative has proved a great success. “A lot of hard work goes into making Christmas in Ribble Valley special and we hope shoppers from throughout Lancashire will take advantage of the free parking to visit the borough and see what its unique, independent shops have to offer.” Charges will be waived at council-operated car parks in Clitheroe and Longridge town centres, but normal charges will apply at the Edisford Road Car Park in Clitheroe and village car parks. The free parking is available for up to four hours per vehicle.

A festive Feast

Christmas gives friends and families a perfect excuse to come in from the cold and celebrate over plenty of delicious food! Get in to the Christmas spirit with our easy yet impressive recipes that will make this Christmas one to remember.

Roast turkey

with watercress and orange stuffing Prep time: 20 minutes Cooking time: 3hours Serves: 6 Ingredients: 1 (4kg) oven ready turkey, giblets removed 1 onion, halved 1 lemon, halved 75g soft butter 100g watercress For the stuffing: 50g butter 1 large onion, finely chopped 2 stick celery, finely chopped 1 garlic clove, crushed 100g watercress, chopped 50g blanched toasted hazelnuts, roughly chopped zest and juice 1 large orange 200g fresh white breadcrumbs 10ml dried thyme salt and freshly ground black pepper For the gravy 100ml sherry or dry white wine 500ml chicken stock 30ml cornflour

Method: Make the stuffing, melt the butter in a medium pan add the onion and celery and cook over a medium heat until soft and pale golden. Add the garlic and watercress, cook for a further 2 mins until the watercress is wilted. Remove from the heat and tip into a large bowl, add the hazelnuts, orange zest and juice, breadcrumbs, thyme and plenty of freshly ground black pepper and a little salt to taste. Mix well. Leave until cold. Preheat the oven to 190oC/ Fan 170oC Gas Mark 5. Wash the turkey inside and out and dry with kitchen paper. Place the onion and lemon inside the cavity of the bird. Spoon the stuffing into the neck flap of the turkey, packing it in tightly, then secure the flap with cocktail sticks, or sew together. Line a large roasting tray with two pieces of wide foil laid like a cross. Place the turkey in the centre of the foil and rub the breast and legs with the soft butter. Season with salt and pepper. Pull the foil up and around

the turkey to ‘tent’ the bird, sealing it at the edges. Place in the centre of the hot oven and roast for 3hrs. Half way through the cooking time, remove the bird from the oven, loosen the foil and spoon the cooking juices over the bird to baste, reseal the foil and continue to roast. Forty minutes before the end of cooking. Remove from the oven, fold back the foil, baste the bird with the juices again then, roast uncovered until the turkey is a lovely golden brown. Remove the bird from the oven, transfer to a board, cover with foil and leave to rest for 10 minutes this makes carving easier. To make the gravy, pour the hot stock into the roasting tin and use a wooden spoon to scrape away all the cooking juices that have collected on the foil

and in the tin. Then pour the liquid through a sieve into a medium pan. Place on the hob, add the sherry and bring to the boil and simmer to reduce for 10 minutes. Mix the cornflour to a smooth paste with a little cold water, then add to the gravy stirring until the gravy boils and thickens. Transfer to a warm gravy boat and keep warm. To present the turkey for the table, take a large warm serving platter, scatter the watercress all over the plate. Lift the turkey from the board and arrange in the centre of the leaves. The leaves will wilt and soak up the juices from the bird as it is carved. Serve the turkey and stuffing in slices with a good portion of the wilted watercress. Serve with all your favourite seasonal vegetables.

Roast Potatoes, Parsnips and Shallots

Festive Food

with Pancetta and Bay Leaves Prep Time: 10 minutes Cooking Time: 1 ½ hours Serves: 6 Ingredients: 1.5kg Potatoes, medium sized, peeled 900g parsnips, medium sized, peeled 2 tbsp plain flour 1 tbsp fresh thyme, chopped, plus a few sprigs 6-8 tbsp rapeseed oil 12 shallots, peeled 200g pancetta, roughly chopped 6 whole bay leaves Sea salt and black pepper www.UKshallot.com

Method: Preheat oven to 200°C/Gas 6 Cut any large potatoes in half and all of the parsnips in half lengthways, cook the potatoes in boiling salted water for 8 minutes or until parboiled. Meanwhile cook the parsnips in the same way in another pan for 4 minutes. Drain the potatoes well then return to the pan and cover, shake the pan to roughen the edges of the potatoes. Drain the parsnips and toss them in the flour, chopped thyme and seasoning. Pour the rapeseed oil into a large roasting tin and heat in the oven; you need around 1cm of oil in the tin. Add the potatoes and turn them over in the oil using a slotted spoon. Roast uncovered for 15-20 minutes, remove the tin from the oven and turn the potatoes, add the parsnips

and shallots and turn them in the oil too. Roast for a further 35-40 minutes then turn all of the vegetables again, add the pancetta. Increase the heat to 220°C/Gas 7 for a further 15-20 minutes, adding the thyme sprigs and bay leaves for the final 10 minutes. Sprinkle with a little sea salt and black pepper and serve immediately

Cranberry Meringue Roulade with Cointreau Orange Cream Prep time: 20 minutes Cooking time: 25 mins Serves: 8 Ingredients: For the meringue 5 eggs whites 275g caster sugar 50g flaked almonds For the filling 250g fresh cranberries 100g caster sugar Grated zest and juice of half an orange 300ml double cream 3 tbsps Cointreau Cooks Tip: For that extra wow factor decorate with chocolate holly leaves and delicious crystallised fresh cranberries. For the holly leaves paint melted chocolate onto the back of clean holly or bay leaves, allow to set in the fridge, repeat with another layer of chocolate and set again. Carefully peel off. To make crystallised cranberries, soak fresh uncooked cranberries in a sugar syrup, roll in caster sugar and allow to dry for a few hours.

Method: Preheat the oven to 200°C / Gas Mark 6. Line a 35cmx23cm Swiss roll tin with lightly greased baking parchment. Whisk the egg whites until very stiff, then gradually add the sugar. Spread the meringue into the prepared tin and sprinkle with the almonds. Bake in the oven for 10 minutes then reduce the heat to 160°C / Gas Mark 3 and continue to cook for a further 15 minutes. Remove from the oven and turn almond side down on to a sheet of baking parchment, allow to cool. To make the filling, place the cranberries in a saucepan with the sugar,

orange juice and zest and simmer until softened and syrupy. Then take off the heat and allow to cool. When ready to assemble whisk the cream and the Cointreau until the mixture stands in soft peaks. Spread the cool cranberry mixture evenly over the roulade then spread the cream over. Roll up from the long end fairly tightly, don’t worry if it cracks a little. Place on a serving plate and chill before serving. To freeze: Place the filled and rolled roulade on a suitable platter, open freeze overnight then wrap in a double layer of foil. Top Tips on cooking the perfect Christmas turkey n Buy about 350/400g per portion or you will be left with lots of leftovers.

n Buy a thermometer - a turkey is safely cooked at 72C in its thickest point.

n Leave the turkey out at room temperature for a couple of hours before putting in the oven.

n Don’t use tinfoil - it dries the turkey out.

n Roast the turkey on a trivet of vegetables and the giblets this helps make a great gravy.

n Don’t truss and stuff a turkey - it adds too much cooking time and can dry out the turkey.

n Rub the turkey with lemon it’s a natural flavour enhancer and colours beautifully. n Allow the turkey once cooked to rest for a minimum of 20 minutes before carving. 12

n Don’t try to cook a turkey too quickly as it will dry out.

n Don’t cover with lean bacon - it just adds more salt. Use fatty streaky bacon.

Christmas Lights show-stopping success Thousands of people braved the wet weather to celebrate Chorley’s Christmas Lights Switch On which marked the start of the town’s countdown to Christmas.

C

HORLEY’S festive season got off to a spectacular start on Saturday as thousands of people packed into the town centre for fun, fireworks and fabulous entertainment. People packed into Market Street for amazing performances from bands, singers and dancers after Chorley Council joined forces with Rock FM to get the party started. The sensational X Factor singer Misha B wowed the crowd, along with a storming sing-along with everyone’s favourite snow sisters Anna and Elsa. The performances by up and coming talents Christ Atkinson, Myth of Unity, Tiger Heart and Dancer’s Wardrobe kept the audience cheering with joy before the finale when Sean Ward who played Callum Logan in Coronation Street joined the Leader of Chorley Council, Councillor Alistair Bradley, to press the official plunger and light up the town. The evening came to a spectacular end with pyrotechnics and snow from the stage as the town was transformed into a winter wonderland with a spectacular fireworks display from the top of the town hall. Councillor Peter Wilson, deputy leader of Chorley Council, said: “The Christmas lights switch on is one of our biggest events of the year and we’re delighted so many people braved the terrible weather to help us celebrate the start of the festive season in town. “We crammed as much into the line-up as possible to make sure all the family had a fantastic evening out, and from the feedback we’ve had people really

enjoyed the show. “As well as some fantastic acts, superb celebrities, the lights, pyrotechnics and the snow, we also had the town hall clock lit up in a way which had never been seen before. “It was a fantastic evening and it is only the start of our festive fun with events and attractions taking place every weekend until Christmas and the return of Chorley’s GIANT Ferris wheel from Friday 11 December plus Chorley’s Santa Express.” Other attractions and activities being held in the run up to Christmas include: • Chorley’s Santa Express land train and the chance to meet Father Christmas at Astley Hall, every Saturday and Sunday from 5 until 20 December. New Years Resolutions By Danielle Jordan

New Years Eve is often highly anticipated and a massive anticlimax.

Bars and restaurants are suddenly triple the price, the best laid plans often go awry and New Years Day is not only accompanied by a hangover but a big list of things you decided the day before would suddenly be your primary life focus. New Years resolutions are part and parcel of the holiday season, we’ve all got to the end of the year reflecting of the twelve months that have past and we wonder if we are where we wanted to be. With the dominance of social media, we now also have shiny glittering photos of all our family and friends lives that always look more successful, more fulfilling and generally better than ours. This of course is due to the fact that we only post our highlights on Facebook, the majority of people on your friends list don’t have a backstage pass to the less enjoyable moments! But ignoring the social side, the end of the year is when we decide how we will improve our lives in the year to come. January the 1st seems to have a feel of a fresh slate, a new beginning that we don’t associate with any other time in the calendar. The most common resolutions are to quit smoking, lose weight and gain better employment/promotion or change your job. These are three rather massive life changes, you go to work nearly every day, your weight is directly linked (in the most part) to your daily diet and exercise regime and if you’re a smoker, you smoke every day. To change such ingrained habits are not easy. 14

Depressingly, one survey I came across quotes only 8% as average of individuals achieving their goals. However, it’s not all bad news, we can give ourselves a better chance of success and this year we can take control of how we tackle New Years resolutions. I came across a list I made in 2005, the items on it? Well; 1) 2) 3) 4) 5)

Even just looking at the list gives me a headache, I’m surprised I didn’t go all out and add ‘cure the common cold,’ or ‘achieve world peace’ to the mix! Presumably I thought my new hobby was going to involve the family, include exercise and I was going to get paid for it, because that’s realistically the only way I was going to achieve all these things! So how did my 2005 shape up? Well, I saved no money, (in fact I had to borrow money from my Dad when I moved house because I had no savings) I joined a gym which I went to a total of seven times (try and hold back your awe for now) and although I put on nearly a stone throughout the year, I guess you could count ‘eating more when I realised I was failing at my goals’, as a hobby.

So although I’m clearly by no means an expert, here are my quick tips for a more successful New Year...

New Years Resolutions

1) Find your end goal and make suitable landmarks.

If you want to lose two stone that’s great but why not start off with the aim to lose 5lbs in a month? By showing yourself you can do it in smaller steps, those little chunks will soon add up, and you’ll look back and realise how far you’ve come.

2) Make your goals more specific.

‘Exercise more’ is a very wide aim, but if for example you specify that you’d like to exercise for 30 mins extra a week, you’ll have more direction.

3) Be realistic

Do you enjoy running? If not, you probably won’t succeed at it and then you’ll feel you’ve failed, think about what you enjoy, why

not check out a local netball team or inline skating club, by thinking about what you’d have fun doing and starting from there, in a few months you may find you’re exercising more without having to force yourself to do so, and you’ve found yourself a new hobby!

4) Give yourself a break

Big changes take time, one year might not be long enough, but the important thing is you’re committing to improve things for yourself, you’re not a failure, you just haven’t finished working on it. By alleviating the pressure you’ll have a much bigger chance of success. 5) And finally, why not also use the end of this year to

It’s very easy to say, I’m still not in a size 14, I’m not yet a marathon runner and I’ll never manage to save money. Realise your successes however small, ‘this year I finished reading that book I wanted to’, ‘I finally sorted out the shed’. Change your thinking and you’ll be amazed what a boost it’ll give you. It’s not easy and it can be difficult to persevere when it feels like a losing battle. But you’re not at war, just because things haven’t changed by January 2nd does not mean that you’re not going to see the changes you want to. So if you desire, by all means make a list but don’t set it in stone, or curse yourself for any slip ups, if you really want to, you will get there and in the meantime,

advice on staying warm and well this Winter Over the last ten years a staggering quarter of a million older people have died from the cold. Research shows that exposure to the cold can have a devastating impact on the health of older people, who are particularly vulnerable to the impact of low temperatures. As people get older it takes longer to warm up which can be bad for people’s health. The cold thickens blood and increases blood pressure, and breathing in cold air can increase the risk of chest infections. The good news is that preparing effectively for the cold weather can literally save lives. That’s why this winter Age UK will be working hard to remind older people and carers of the importance of taking simple precautions to stay warm and well. The Charity is urging people to call Age UK Advice for free on 0800 169 65 65, and order a free copy of the Charity’s ‘Winter Wrapped Up’ guide which contains a free thermometer and provides tips on staying warm in winter. AGE UK’S TOP TIPS FOR STAYING WARM AND WELL THIS WINTER l 64°F (18°C) is the ideal temperature for your bedroom and 70°F (21°C) is the ideal temperature for your living room. Check your thermostat or use a room thermometer to monitor temperature l Keep your bedroom window shut on at night. Breathing in cold air can increase the risk of chest infections. l Stay active and when you are indoors try not to sit still for more than an hour, if you can get up. Walk around or make a hot drink. l Eat well. It’s important to eat well, especially in the winter. Have at least one hot meal a day and have regular hot drinks, as they help to keep you warm. Also stock up on basic food items in case of a cold snap.

Caroline Abrahams, Charity Director at Age UK, said: “Although it sounds like common sense, advising people on how to stay warm in winter can actually make all the difference. Many people are not fully aware of how the cold affects our bodies differently as we age and how, if we don’t take sensible precautions, it can very quickly put our lives in danger. “Winter can be an incredibly daunting and difficult time for older people, especially those who live alone or are housebound, so it’s vital that we do all we can to help them prepare for the colder weather. We urge anyone who is concerned about keeping warm and well over winter to get in touch with their local Age UK to find out how we can help them.”

Age UK’s Campaign for Warm Homes For many years, Age UK has argued that improving energy efficiency in people’s homes is the long term to solution to the high levels of excess winter deaths, winter health problems and fuel poverty amongst older people in England. Due to the closure of one of the Government’s flagship energy efficiency programme - the Green Deal - currently there is very limited support for anyone who wants to install measures to make their home warmer. That is why the Campaign for Warm Homes is urgently calling on the Government to reform its energy efficiency programme to enable all older people to live in a warm home. Sticking to a strict budget might not seem the most thrilling way to spend the festive season, but you’ll avoid any nasty surprises afterwards. Check out our top money saving tips...

hristmas is portrayed as a wonderful time of year, if the marketing people have done their jobs properly; it is a time to lavish gifts on each other, completely disregarding the consequences. Many people have woken up with a hangover after a particularly exuberant Christmas party and asked themselves, “What have I done?”. Checking your bank balance after the Christmas festivities are over can provoke a similar reaction. January is a fairly depressing time of year as it is without making it any worse for you. Perhaps the banks should put one of those sad faces you sometimes get in texts on your statements, or the high streets should be forced to post pictures of a person pulling out a completely empty pocket.

Food

Pigging out is as big a part of the Christmas tradition as the Queen’s speech and being dragged to nativity plays. But the website lovefoodhatewaste.com states that a third of the food bought in the UK is thrown away. This is giving extra money to supermarkets that frankly they don’t need. When you do your Christmas shopping think about the quantities of products that you realistically require, and how long a particular product will last after Christmas (turkey sandwiches for a fortnight after Christmas is likely to cause family arguments and be met with some pretty sarcastic comments).

Entertainment

If you have a large family renting a DVD will prove far cheaper than going to the cinema, and if there’s a decent film on the television even better. Even better still get out and about and enjoy some genuinely beautiful scenery and as long as you wrap up warm many happy days can be spent with the family. Taking various bats and balls will let Dad show that he’s still got it (this usually involves showing that he can run rings around a toddler at football) and that people who just want to relax can do so in some of the nicest surroundings in the country.

Drink This is a fairly unavoidable cost, but forward planning can make it cheaper. Write a list of the products that you need and the amount well in advance of the Christmas period. You then have plenty of time to spot discounts on those goods and can buy bits whenever you see a bargain. Supermarkets are constantly having discounts on particular brands of lagers, ales, and spirits and these reductions are also changed frequently.

Presents This is still going to be expensive I’m afraid, particularly if you have a large family. The best way to make savings in this area is to have a family pact. The people that appreciate presents most are under the

age of 21, and these are the ones that will genuinely enjoy the more lavish gifts. Everyone agreeing to a set limit for presents for people over that age will save everyone huge amounts of money. If a person above that age really wants a particular product, they will usually just get it for themselves. We’ve all bought our parents some brilliant gifts that we genuinely thought they’d cherish only for it never to see the light of day again. Having a cap on the amount that you can spend on a loved one just means that you have to try harder to think of something that they’d really find useful, it is also likely to be a more personal gift so they should appreciate the thought that’s gone into it. Once you have compiled your list make sure that you don’t just browse the high street, many of the products may be considerably cheaper online, and with the amount of price comparison websites you can quickly ensure you are getting the best deal available. All of these ideas should help you keep the cost of Christmas down, whilst not impeding your enjoyment. Just remember that Christmas in the 21st century is partly about eating too much, embarrassing yourself at parties, and buying lavish gifts, but the main beauty of Christmas is that it is a time when all family and friends get together to spend time with each other, and no amount of clever adverts should detract from that. It is a nice time of the year because you can catch up with the people that mean the most to you, who you may not have seen for a long time.
