Preston Markets Shops Local for its Design Team

P

reston-based architecture and surveying practice Frank Whittle Partnership (FWP) has been appointed as the lead consultant to take forward the development of the city’s historic markets. FWP won the contract to realise the vision for the new market working in partnership with architects Greig and Stephenson, leading specialists in market developments. The skills, expertise and experience of both practices together combined with FWP’s local knowledge make this a great team. To complete a Lancashire line up, the project will be supported by Preston-based companies Blezard Ltd, Morgan Martin and PWA Planning and Wigan-based Sanderson Watts Associates. Welcoming the appointment of Frank Whittle Partnership and Greig and Stephenson, Deputy Council Leader Councillor John Swindells said: “This is a major investment and I’m confident we have got a great combination of local experts to lead the Preston Markets redevelopment. This was a tough contract to win, with a field of top architectural practices in the running. It is a true partnership and by that I mean traders, architects and the people of Preston. The response from traders to the draft scheme has been positive. We’ve captured the imagination and have the basis for a wholesale re-generation of Preston Markets. The markets are hugely important to Preston and attract thousands of customers every week. I am confident with the passion and good will of traders and expertise of our design team, we can deliver a market truly fitting for the city of Preston and one we can all be rightly proud of.” Martin Whittle, Partner at FWP, said: “It’s good to see major aspirational projects like Preston Markets 14

Christmas gives friends and families a perfect excuse to come in from the cold and celebrate over plenty of delicious food! Get in to the Christmas spirit with our easy yet impressive recipes that will make this Christmas one to remember.

Roast turkey

with watercress and orange stuffing Prep time: 20 minutes Cooking time: 3hours Serves: 6 Ingredients: 1 (4kg) oven ready turkey, giblets removed 1 onion, halved 1 lemon, halved 75g soft butter 100g watercress For the stuffing: 50g butter 1 large onion, finely chopped 2 stick celery, finely chopped 1 garlic clove, crushed 100g watercress, chopped 50g blanched toasted hazelnuts, roughly chopped zest and juice 1 large orange 200g fresh white breadcrumbs 10ml dried thyme salt and freshly ground black pepper For the gravy 100ml sherry or dry white wine 500ml chicken stock 30ml cornflour

Method: Make the stuffing, melt the butter in a medium pan add the onion and celery and cook over a medium heat until soft and pale golden. Add the garlic and watercress, cook for a further 2 mins until the watercress is wilted. Remove from the heat and tip into a large bowl, add the hazelnuts, orange zest and juice, breadcrumbs, thyme and plenty of freshly ground black pepper and a little salt to taste. Mix well. Leave until cold. Preheat the oven to 190oC/ Fan 170oC Gas Mark 5. Wash the turkey inside and out and dry with kitchen paper. Place the onion and lemon inside the cavity of the bird. Spoon the stuffing into the neck flap of the turkey, packing it in tightly, then secure the flap with cocktail sticks, or sew together. Line a large roasting tray with two pieces of wide foil laid like a cross. Place the turkey in the centre of the foil and rub the breast and legs with the soft butter. Season with salt and pepper. Pull the foil up and around

the turkey to ‘tent’ the bird, sealing it at the edges. Place in the centre of the hot oven and roast for 3hrs. Half way through the cooking time, remove the bird from the oven, loosen the foil and spoon the cooking juices over the bird to baste, reseal the foil and continue to roast. Forty minutes before the end of cooking. Remove from the oven, fold back the foil, baste the bird with the juices again then, roast uncovered until the turkey is a lovely golden brown. Remove the bird from the oven, transfer to a board, cover with foil and leave to rest for 10 minutes this makes carving easier. To make the gravy, pour the hot stock into the roasting tin and use a wooden spoon to scrape away all the cooking juices that have collected on the foil

and in the tin. Then pour the liquid through a sieve into a medium pan. Place on the hob, add the sherry and bring to the boil and simmer to reduce for 10 minutes. Mix the cornflour to a smooth paste with a little cold water, then add to the gravy stirring until the gravy boils and thickens. Transfer to a warm gravy boat and keep warm. To present the turkey for the table, take a large warm serving platter, scatter the watercress all over the plate. Lift the turkey from the board and arrange in the centre of the leaves. The leaves will wilt and soak up the juices from the bird as it is carved. Serve the turkey and stuffing in slices with a good portion of the wilted watercress. Serve with all your favourite seasonal vegetables.

Roast Potatoes, Parsnips and Shallots

Festive Food

with Pancetta and Bay Leaves Prep Time: 10 minutes Cooking Time: 1 ½ hours Serves: 6 Ingredients: 1.5kg Potatoes, medium sized, peeled 900g parsnips, medium sized, peeled 2 tbsp plain flour 1 tbsp fresh thyme, chopped, plus a few sprigs 6-8 tbsp rapeseed oil 12 shallots, peeled 200g pancetta, roughly chopped 6 whole bay leaves Sea salt and black pepper www.UKshallot.com

Method: Preheat oven to 200°C/Gas 6 Cut any large potatoes in half and all of the parsnips in half lengthways, cook the potatoes in boiling salted water for 8 minutes or until parboiled. Meanwhile cook the parsnips in the same way in another pan for 4 minutes. Drain the potatoes well then return to the pan and cover, shake the pan to roughen the edges of the potatoes. Drain the parsnips and toss them in the flour, chopped thyme and seasoning. Pour the rapeseed oil into a large roasting tin and heat in the oven; you need around 1cm of oil in the tin. Add the potatoes and turn them over in the oil using a slotted spoon. Roast uncovered for 15-20 minutes, remove the tin from the oven and turn the potatoes, add the parsnips

and shallots and turn them in the oil too. Roast for a further 35-40 minutes then turn all of the vegetables again, add the pancetta. Increase the heat to 220°C/Gas 7 for a further 15-20 minutes, adding the thyme sprigs and bay leaves for the final 10 minutes. Sprinkle with a little sea salt and black pepper and serve immediately

Cranberry Meringue Roulade with Cointreau Orange Cream Prep time: 20 minutes Cooking time: 25 mins Serves: 8 Ingredients: For the meringue 5 eggs whites 275g caster sugar 50g flaked almonds For the filling 250g fresh cranberries 100g caster sugar Grated zest and juice of half an orange 300ml double cream 3 tbsps Cointreau Cooks Tip: For that extra wow factor decorate with chocolate holly leaves and delicious crystallised fresh cranberries. For the holly leaves paint melted chocolate onto the back of clean holly or bay leaves, allow to set in the fridge, repeat with another layer of chocolate and set again. Carefully peel off. To make crystallised cranberries, soak fresh uncooked cranberries in a sugar syrup, roll in caster sugar and allow to dry for a few hours. 18

Method: Preheat the oven to 200°C / Gas Mark 6. Line a 35cmx23cm Swiss roll tin with lightly greased baking parchment. Whisk the egg whites until very stiff, then gradually add the sugar. Spread the meringue into the prepared tin and sprinkle with the almonds. Bake in the oven for 10 minutes then reduce the heat to 160°C / Gas Mark 3 and continue to cook for a further 15 minutes. Remove from the oven and turn almond side down on to a sheet of baking parchment, allow to cool. To make the filling, place the cranberries in a saucepan with the sugar,

orange juice and zest and simmer until softened and syrupy. Then take off the heat and allow to cool. When ready to assemble whisk the cream and the Cointreau until the mixture stands in soft peaks. Spread the cool cranberry mixture evenly over the roulade then spread the cream over. Roll up from the long end fairly tightly, don’t worry if it cracks a little. Place on a serving plate and chill before serving. To freeze: Place the filled and rolled roulade on a suitable platter, open freeze overnight then wrap in a double layer of foil. WAG offers a chance for everyone to get involved in practical archaeology, whatever their age, knowledge or skill level, through our programme of excavations and other activities. In previous years our Spring and Summer ‘Big Digs’ have found evidence of Iron Age, Roman and early mediaeval activity in the Fylde peninsula and this year’s digging season is just as promising. WAG is affiliated to the Council for British Archaeology and we have strong links with professionals in the field.
