ith Dry January and Brexit firmly in the rear mirror, we enter February with love in the air. With Valentines just around the corner, we walk down memory lane as loved up couples share their wedding stories (p.63). We visit sunny Sardinia (p.83) and head to Valle Dell’Erica, a 5* family-run sanctuary hidden away, a short distance from the ancient village of Santa Theresa Gallura. From the relaxed Italian retreat to the party hotspot of FIVE Palm Jumeirah and FIVE Village Jumeirah (p.86) where we review this much talked about luxury hotel. For those looking for a lakeside retreat somewhere a little closer to home, we took a weekend break away at The Belsfield in the Lake District (p.76). Mary Jane Greenhalgh meets Matthew Naylor (p.20) to discuss his family business The Boutique Hotel Group, which runs the beautiful Peckforton Castle, Nunsmere Hall and Inglewood Manor. Olisa Odele (p25), the star of BBC’s Scarborough and Channel 4’s Chewing Gum shares stories on his career and the challenge of starring in his first play, Crongton Knights. Elsewhere, our resident petrolhead James Fossdyke (p.96) questions whether performance-enhancing upgrades can make the 8 Series appeal to your heart. Our Home & Garden news is full of the latest trends, from the Fantastic Peacock Kings mural by Andrea Haase (p.101) to Bombay Duck cushions (p.128).

My life in
CHESHIRE JONATHAN ROSS, SOCIAL MEDIA & MARKETING MANAGER, LOWE & SONS
How would you describe yourself ? I’d describe myself as passionate, creative and quietly confident. Where is home? And work? I am lucky in terms of home and work location - I work on Chester’s iconic Rows in one of Chester’s most beautiful and reputable jewellers and my home happens to be directly opposite my workplace. What did you want to be when you were younger? I’d always dreamed of being a pilot but also had an interest in gemstones that I’d collected from a young age - turns out I ended up working in fine jewellery thus feeding my passion for beautiful gems. Name a few of your favourite places to be... I love being in the water, whether its a swimming pool or at the beach - I love the feeling of being weightless, gliding through the water and rolling with the waves as I lay on my back. What or who inspires you? I am inspired by everyone who surrounds me, from my partner Callum to my friends and family, my colleagues and even people on the street. I’m always listening and learning to better myself.
“I’m always listening and learning to better myself” What was the last gift you gave someone? My family and I recently treated our big sister Samantha to a surprise 30th Birthday party. She was flabbergasted! Tell us a fun fact? Not a lot of people realise (as I don’t like to brag) but I have been to nearly 80 countries due to my previous job. Who or what would you place in Room 101? Negativity. I am always challenging myself to be more positive and I often encourage those around me to also look on the bright side of life. What’s been your biggest life lesson? Learning to go with the flow with the mentality of ‘nothing ventured nothing gained’ and ‘Carpe Diem’. www.powellsjewellery.com

F
rom 28th December to New Year’s Eve 2019, 400 horses and ponies travelled to Liverpool Docks to compete in the spectacular TheraPlate UK Liverpool International Horse Show. The impressive four-day event, held at the M&S Bank Arena at the historic Docks location, brought an awe-inspiring show of world-class equestrian sport, acrobatics, live music, LED bike shows and much more. During the show, audience member Andy Dutton dropped to one knee and proposed to his partner, Chrissy Leak. Show President, Nina Barbour commented: “We were thrilled to help Andy organise a proposal like no other at this year’s show. The plan was to announce that their seat numbers had won a special prize during the Puissance to get the couple down on stage. Once they were in place, Andy popped the question and thankfully Chrissy said a big ‘hell yes!’. “Although this was a truly unique proposal, it’s not the first year a reveller has got down on one knee so there certainly must be something in the air here in Liverpool! It really has been another special year for us and we look forward to 2020.” www.liverpoolhorseshow.com

A Family Affair
Worth a Visit Mary Jane Greenhalgh meets with Matthew Naylor, the Marketing Director at Peckforton Castle in Cheshire
T
he conversation I have with Matthew is a spin through family, hospitality, history and the future, and Matthew Naylor replies to all my questions with warmth and thought, even if he’s probably answered the same questions a hundred times. Most of all I’m struck by his calm but passionate demeanour. Matthew is one of four children. He has two brothers and one sister, all of whom are involved in The Boutique Hotel Group, which is a family business that owns the beautiful Peckforton Castle, Nunsmere Hall and Inglewood Manor. I am keen to hear about Peckforton Castle having always admired its fairy tale like quality and read all about the decadent setting, the wonderful weddings they have there, as well as the Land Rover experience and much more.
Steeped in History
To give you a bit of background Peckforton Castle stands in stunning woodland at the north end of the Peckforton Hills. It is set against a backdrop of rolling Cheshire countryside and the house was built in the middle of the 19th century as a family 20
home for John Tollemache, a Cheshire landowner, estate manager, and Member of Parliament. It was designed by Anthony Salvin in the Gothic style and during the Second World War it was used as a hostel for physically disabled children. The Tollemache family used the castle for occasional gatherings, but otherwise, it was unused until 1969. From 1969 to 1980 the Castle was leased by John, 4th Lord Tollemache to George W. Barrett when it again became a private residence and was closed to the public. The right-wing and tower and the castle gardens were restored by Barrett, an American employed by the U.S. Government. His daughter Pascale’s wedding was the first to be held in the chapel and a special decree had to be obtained
from the Archbishop of Canterbury to legally hold Catholic weddings in the grounds of the castle. During the 1970s and early 1980s it was used as a location for shooting films and television programmes, but in the late 1980’s the Castle was converted into a hotel, open just for weddings. In 2006 it was purchased by the Naylor family, who expanded its use to include, hosting weddings, conferences and other functions. The family has given the castle an air of serenity and tranquillity. It feels like a haven for those who want to escape the madding crowd.
Family Affair
It is immediately apparent from speaking to Matthew that he is very much a family man. He explains to me, with warmth, about how his family bought the castle in 2006. It was his elder brother, along with his wife Kate, who spotted that Peckforton was for sale. “My elder brother married in 2005 and together with his wife they could visualise the potential. Peckforton had previously been used just for weddings, but with limited
consistency and the castle opening and closing sporadically. The previous owner had been able to obtain one of the first civil ceremony licenses in Britain and my brother and his wife saw the opportunity to make the most of this which brings us to where we are today.” As soon as Matthew’s family took over, Peckforton Castle went from being open only for weddings, to being open all year round. It was a challenging start and it took until 2008 to take off, but the hard work was worth it and the word
“We were keen to turn the hotel into somewhere magical and a destination where people wanted to come” started to spread. Soon well-known names such as Wes Brown from Manchester United and Wayne Rooney’s agent Paul Stretford chose Peckforton for their weddings. Both remain big fans and keep in touch still today. “This helped us gain exposure and put us on the map. We were keen to turn the hotel into somewhere magical and a destination where people wanted to come. We now only close Peckforton Castle when someone would like the ‘Key for Castle’ where they get to close the castle down and have it solely for their own use - this is really appealing to celebrities and high-profile members of society.” 21
The hotel boasts the stunning Great Hall for weddings which is beautifully Church-like and theatrical with high vaulted ceilings. This was originally the dining/ entertainment room for Lord Tollemache. It is a truly stunning room. Every wedding hosted at Peckforton Castle, Nunsmere or Inglewood Manor (its sister hotels) has a particular focus on the couple and the Naylor family firmly believe in creating the most magical and bespoke wedding for everyone. “Each and every bride has a very different vision of what they want, and we ensure that we make it bespoke for them.” People come from all over the world as well as the UK. It’s hugely important for us to create an atmosphere that is unique and opulent, and we work with the couple to help create their most perfect day, surrounded by flowers, flickering candlelight, friends and loved ones. Other well-known celebs, to mention but a few, include footballer Phil Bardsley and his Real Housewives of Cheshire star, wife Tanya, who married there, as well as Russell Wilson the American footballer. Matthew goes on to tell me about the fire in 2011 which caused a huge amount of smoke damage and was reported across the world. It was devastating for the family. Subsequently, the castle was refurbished after being closed for eight months. The family took the upmost care to redevelop and refurbish it after the fire along with ensuring the décor and heritage of the style were 22
followed intimately. “My Dad has worked in the building trade for the last thirty years and has a huge amount of experience in building and developing hotels. He worked closely with English Heritage and did a fantastic job.” Matthew’s brother, Chris, also had a key role in the refurbishment, along with the running of Peckforton Castle and he is the managing director. Chris’s wife Kate is the Financial Director and Matthew described her as “the person that keeps the business on track and strong. Chris, as the M.D. is the bigger picture person, however, Kate is intrinsically linked to making us successful and is the cohesive element that keeps us all pulling together.” Hannah Naylor, Matthew’s sister, heads up the family office at Peckforton and his younger brother is the manager at Inglewood Manor, also part of the Boutique Hotel group. “As all families do, we have disputes, but this is what makes us successful. It helps us to think everything through properly and keeps us questioning how to make sure we get it right. As

they say, you can’t make an omelette without cracking some eggs!” Matthew goes on to describe his parents as caring and patient and who are both still passionate about Peckforton and remain heavily involved. “You will still find Matthew’s father doing wedding “show rounds” at the weekend. He is passionate about Peckforton and loves to do so.” It is clear that as a family, Matthew and his brothers and sisters are hugely passionate about the area they all grew up in all having been educated in the vicinity.
Fabulous Food
Matthew was keen to talk to me about the dining experiences at Peckforton Castle. The focus is on sourcing local produce which is of a fantastic quality. The byword is simplicity but with a wow factor attached and Mark Burke the executive head chef is keen to provide guests at Peckforton with a memorable experience that befits the fabulous backdrop.
group’s business model. Nunsmere Hall was acquired in 2015 off the back of the success of Peckforton Castle and this was followed by the subsequent acquisition of Inglewood Manor in 2018. This year is looking very promising for both venues. The Naylor family have adopted an identical business model for each of these venues, having the same approach to weddings and private events. To achieve this, they have invested heavily on exclusivity and the results speak for themselves. Matthew notes that the fact that they have a strong wedding proposition at each of the venues, provides them with a good level of clarity over their future earnings. This provides them with stability for the business, which in turn gives them the opportunity to capitalise on development opportunities within the hotels and provides flexibility for the quieter periods. “We can be flexible and really do some interesting, bespoke
“The Naylor family firmly believe in creating the most magical and bespoke wedding for everyone”
It is the Little Things
The attention to detail is reflected in the fact that no two rooms are the same at Peckforton and the family has been at pains to ensure that the historic fabric of the building is seamlessly blended with all of the amenities that today’s guests would expect to see. This is not just notable in the physical spaces of the hotels, but also in the amazing customer service. “We are trying to understand our guests as deeply as possible to provide the services that are important to them. I am confident that we will continue to prosper in this environment because that is what we do really well…and that is what people come to expect from a brand like ours.” Finally, we talk about the hotel market in general and it is interesting to hear about the
and exciting offers on the hotel side which are high level and test the water.” Peckforton has carved itself out a niche by offering the world-renowned Land Rover Experience. It is one of only a handful in the country and is really popular with Land Rover customers, as you would expect, but also a big hit, Matthew tells me, with private parties and provides something a bit different! There is a small but stunning spa which is treatment focused, again very bespoke and intimate. My time spent chatting to Matthew has given me a fascinating insight into the workings behind a set of hidden gems on our doorstep in Cheshire and I, for one, am very much looking forward to experiencing their individual charms in due course. www.peckfortoncastle.co.uk 23

The Crongton
Knight
Here to Slay Craig Hough talks to actor Olisa Odele, the star of BBC’s Scarborough and Channel 4’s Chewing Gum about his career and upcoming play at The Lowry Theatre Your next project is Crongton Knights which is Emteaz Hussain’s adaptation of an Alex Wheatle’s novel. Could you briefly explain the story? The plot is based around the South Crongton Estate and a group of friends that live on it. It’s set in modern times and shows what it’s currently like socially and economically growing up on an estate. The story is about the gang going on a mission to help one of their friends and along the way things are unearthed, things get broken up and my character’s older brother gets himself into a bit of trouble. You see the group navigating through the trouble whilst trying to stay together. Will they return back together? We don’t know.
Did you read the book before the script and how does the live version differ?
the book is very much focused on McKay and his family and in the play, we delve into the other characters and introduce music.
Speaking of the music, the soundtrack includes all original songs, what’s the process of creating them? The cast, our Musical Director (Conrad Murray) and Directors Esther Richardson and Corey Campbell were literally in a room together writing songs and came up with eight originals within the first week. We would lay down a beat and then jump in with ideas and our Director encouraged us to write some lyrics. We have created a real mixture of styles from R’n’B and Hip-Hop to Grime. There’s singing, rapping, choreography and incredible storytelling. It’s going to be fun.
How does the experience differ from working on a TV project? Oh, it’s so different, it’s a different world. I had done musical theatre when I was much younger but then
Yes, I loved the book. I feel like the live version is a bit more balanced in terms of the worlds that we see, as we see a lot of the other characters stories. Some plots in the book are smaller or drawn out a lot more but this is more of an ensemble show, with each of the cast having a little something going on. I think
“This play has really brought out my passion for acting again” 25

went into television. I think that unless you are a lead in a show you don’t really get much rehearsal time. You literally get on set, rehearse for five minutes and then do the scene. Whereas, for this play we’ve had time to get into the story, really ask questions and try one hundred different ways of doing things. And it never really stops evolving, I can’t do a scene the same twice. I feel very much alive in that sense and it’s about what you create in that moment. I love TV and I want to write TV. My original focus for this year was to get the two pilots I have written commissioned. The the audition for this play came along and I had so much fun that I knew I had to be a part of it. This play has really brought out my passion for acting again.
The Lowry plays host to Crongton Knights in March, how much time have you spent in Greater Manchester and what are your favourite things to do whilst in the area? I have lots of experiences up in Manchester and worked in the city three times last year. I filmed some of Scarborough there and recently filmed a small role in the new Russell T Davies show Boys in the area as well. I’ve had many a night out on Canal Street and I love going to shows at the theatre in the city. I like me some Manchester!
You actually started your television career in Leeds at the tender age of 9 on My Parents Are Aliens. How did you find filming this huge children’s show at such a young age? I remember half-way through my second season and someone asked me how I was doing and I replied ‘I want to go back to school’. It was really fun and looking back now I wouldn’t change it for anything, but my problem was the other kids were a lot older than me and although everyone was so lovely and nice, I think I just missed being around kids my own
“There’s singing, rapping, choreography and incredible storytelling. It’s going to be fun” 26
age. I was just constantly trying to get in on big kids/ adult conversations and I was probably so annoying to the others (who were 17/18 at the time). I remember being chased at Butlins at the height of the series, by kids that recognised me and I didn’t know how to respond. It was quite trippy and intense at the time. I could never watch the show as I hated watching myself back. It’s like watching your Year 6 play and I wasn’t very good (laughs). Now I’m better at watching back and have seen some episodes and was like ‘aww his lisp is cute’.
Chewing Gum was one of my favourite comedies from the last decade and your character Ola was so fun and over over-the-top. Your on-screen chemistry with (writer) Michaela Coel was incredible, how was your experience working with her on the show? Working with Michaela over those two years was the best things that could have happened. Between season one and season two we just went out all the time and just danced around Shoreditch. She taught me a lot. I got to learn a lot about the industry, both as a performer and trying to make your own space. I actually worked for a year as her assistant after Chewing Gum where we got to work in Ghana and Paris and discovered a world we didn’t know. We became really close friends.
As you two were so close did you get more input in your character and have the freedom to ab lib? Michaela would see things that I would say or do naturally and she’d be like ‘I’ll slot that in there’. She is very observational and really watches people. One time I remember being on Brighton Pier doing a dance to a Fifth Harmony song as my friend was
The CHESHIREMagazine Magazine| Regulars | Feature The CHESHIRE
“I really work on hype. Basically, if you don’t hype me I think I’m bad and give a rubbish performance” filming me. I uploaded to my Instagram and Michaela was like ‘so what’s this film?’. I then got the Chewing Gum script and the dance was written into the script.
Your outfits in that series were super colourful and fun. Did you work with the costume department on picking those out? Yes! The incredible Lynsey Moore was the costume designer for the show and I think she and Michaela talked about the outfits a lot. I wore a fancy dress outfit during the series which took inspiration from my old Lush uniform. The outfit looked like my work apron, with a red jacket and some random gold chain I took from a friend’s house. My outfits were leggings, colourful, sparkly, African Prince in zebra prints. The plan for the outfits from that show was clash, clash, clash.
In the show, you play PC Merrick and you are a complete scene-stealer. What were your initial thoughts on the character and how to play him? I just took myself very seriously. I was thinking ‘if I was a policeman what would I do?’. I also wanted to always be doing the wrong thing so if my partner was sat taking notes, my pad would always have a blank page or I’d be writing scribbles. I was really nervous at the beginning but Derren would be really encouraging and empowered me to try new things.
When did you first hear about (Benidorm creator) Derren Litten’s new show Scarborough and were you a fan of his earlier work?
The other actors were also really encouraging. I really work on hype. Basically, if you don’t hype me I think I’m bad and give a rubbish performance.
How did you enjoy working with the legendary Stephanie Cole?
I actually auditioned for a small part in the final series of Benidorm and had a terrible audition. My accent was off, it just wasn’t great. So, when I got the call about auditioning for Scarborough I thought ‘he must have never seen that tape’ and read the script and thought this new show seemed fun. I did a self-tape (audition to camera) at my friend’s house which took me three hours because I didn’t know what to do with the character. My friend’s boyfriend was a northerner so I was trying to mimic him, and tried several different versions of the character until I found two I was happy with.
That was actually my first day of filming Scarborough. She is a beast (in the best possible way), she is amazing. The way she delivers her dialogue is so conversational, I’d just sit back and think ‘I just want to do it like her’. When the other person you’re acting with is doing it well, it makes it so easy, because you just have to try and do what they are doing. She created a really good energy on set, as did my on-screen partner Rebecca Scroggs (who played WPC Treeves). Rebecca held it down. We were definitely a duo, she brought a lot to it and was very professional. Olisa Odele stars in Crongton Knights at Lowry Theatre from Tuesday 10 March - Saturday 14th March. What inspired you to start Dino Ski Wear? We thought there was a massive lack of imagination in children’s outdoor clothing. Particularly in the ski sector, there were no stand out brands so we thought that we could create something that kids actually wanted to wear, which encouraged them to play outdoors. What does a day in the life of you as a business owner look like? Usually starts at my desk with an 8 am coffee. Attempt to blitz my way through a backlog of emails, exploring new retail opportunities, responding to customer queries, press requests, marketing material and chasing any fulfilment issues. There would normally be a very quick, very late lunch at some point, and a few retail or partner meetings in between. Depending on the time of year, design tasks would be creating social posts, tweaking investment/promotional decks, designing new products/packaging or print material and making sure all communications are ‘on brand’.
ski sector, there were no stand out brands so we thought that we could create something that kids actually wanted to wear, which encouraged them to play outdoors. How do you gather inspirations for your designs? We keep an eye on what cool other brands are doing. We also store files online for anything which catches our attention, whether that might be clothing, artwork, imagery, video, interior design, quotes etc that might provide inspiration at a later date. We make mood boards to give art direction on new products or photoshoots and save a folder of pantones or colour themes which fit our project.
What inspired you to start Dino Ski Wear? We thought there was a massive lack of imagination in children’s outdoor clothing. Particularly in the What is your favourite part of the job? Trying to create the world’s best adventure brand for kids provides lots of room for imagination. This could be the best job/brand in the world if we manage to do it properly. You famously agreed to a deal with Peter Jones on BBC’s Dragon’s Den only to later decline the offer in
favour of a successful crowdfunding campaign. What were your thoughts behind the decision and on reflection how has it worked out? We would have loved to have Peter involved but unfortunately juggling the crowdfund and the Dragons Den raise at the same time was too complicated. Luckily both were successful so we had the luxury of choosing one or the other in a way that was amicable all round. Time will tell whether that was the right decision but we are really excited about the future. What are your plans for the business for 2020? We’re focused on growing our retail network globally and creating awesome experiences within any physical stores. We also have a new range of coats, backpacks and wellies to release in October, in an attempt to establish ourselves as more of an outdoor brand rather than just ski. We also have 2 new ski suits being released in collaboration with one of the worlds biggest children’s brands so we can’t wait to share those with everyone. Beyond that, we are designing a summer range (DINOSEA!) to be released in 2021. Watch this space. www.dinoskiwear.com

The Perception 0f
BEAUTY Experienced GP, cardiology and aesthetics practitioner, Dr Rosh discusses the concept of beauty and wellness within his Cheshire clinic
W
hen you think of beauty, what do you think of? Is it the feeling, or is it the aesthetic? Does it come from your originality, or does it manifest itself through external influences sculpted by the way in which you view beauty? Here, Dr. Rosh takes us on a journey insinuating a paradigm shift in our perception. “Beauty is a mindset, which we are expressing daily in our routine lives. This is a distinctive, unique construct in each of us. So rather than a way to describe a person’s physical appearance, beauty is much more than this, it starts from the inside and works its way out through our thoughts and feelings. The more beauty you can internalise, the more of your ‘beautiful’ you will feel, and the more confidence will radiate from the simplest flash of your smile. With intense pressures for all of us to fit into strict beauty standards and the adherence to a rule book that continues to change. The concept of beauty is a complex one and perhaps far deeper than we realise, it is simply not about vanity. Altering our perceptions of beauty can help us reach an improved sense of wellbeing and validation. Wellness is not a conclusion or a fixed state of mind. It doesn’t stop
through undergoing treatment. KLNIK sees the patient journey as a process to uncover healthy needs and engage purposefully in order to thrive, helping to increase resilience, empower mood, reframe the true nature of self-care with compassionate care and to connect with others in more meaningful beautiful way.”

I am super excited to be joining team Cheshire Magazine as the resident vet, answering any veterinary or pet-related questions or concerns you might have. I will be available for tips and advice on common issues encountered by pets, and their owners, potential pitfalls and how to avoid them. A little about myself- I qualified as a vet in 2005 and have been working for the last 15 years in the UK and Australia, with some charity work overseas. I mainly work in a small animal practice as clinical director of a four vet private practice in Manchester treating all kinds of common household pets. I have always given my professional advice as if I was treating one of my own pets - I have three, a two-year-old blue Burmese cat called George, he rules the house! Two French bulldogs: Maggie who is six years old and her three-year-old son Timmy. We all moved to Mobberley, Cheshire in April 2019. I cannot wait to get started, so please, send me any questions or concerns you might have to james@thecheshiremag.co.uk, and we shall begin next month with the first topic - choosing the right puppy! What is your favourite style of food? Italian, I love how simple it is and yet, the flavours of the quality products just scream at you. What's your favourite ingredient and why? Sesame if I really have to pick one, the flavour is wonderful, savoury or sweet. What is your favourite drink? A good port. Any port for that matter. What piece of kitchen kit, could you not live without? I really appreciate a good knife, a pastry knife is one of my favourites, so versatile. Who inspires you and why? I grew up watching Marco Pierre White. I've such admiration for that man, the way he makes everything look so effortless yet detailed, a masterclass in every breath. What would be your desert island dish? Sticky toffee pudding, as I have a real sweet tooth.

Tell us what brought you to your current position? I was attracted to the Head Chef position at Three Little Words as I'm able to have full input on the menu from start to finish. The only brief given to me is that the dishes must pull inspiration from the botanicals used in our Manchester Gin’s range so that the dishes and drinks all pair perfectly.

SPOTLIGHT ON... SIX BY NICO, LIVERPOOL W O R D S : M I C H A E L G AT E S
Best for... Fine dining in a vibrant setting
A
lready taking Scotland, Northern Ireland and Manchester by storm – ‘Six by Nico Liverpool’ from renowned Scottish-Italian chef Nico Simeone is the sixth and latest addition to the growing restaurant portfolio, occupying the former ‘La Vina’ site on North John Street. If you have not yet heard about ‘Six by Nico’ or the concept, its ingenious. Every six weeks, Nico and his team re-invent the dining experience, serving a brand new six-course tasting-menu with each dish themed upon a different place, memory or idea. It’s taking the best of fine dining but enjoyed in a more vibrant and atmospheric setting. Having missed some of the popular menus in the Manchester restaurant, I was delighted when the Liverpool launch menu was announced as ‘The Chippie’. Based on the classics found in a traditional British Fish and Chip shop, each one re-imagined and re-created with a contemporary twist, the menu includes the most popular dishes, with items including chips and cheese, steak pie, fish supper and the classic deep-fried mars bar. There is also the option to swap out individual dishes for the vegetarian equivalent. Of the six courses it was genuinely hard to whittle down my favourites, however, one would have to be the ‘chips and
cheese’ with parmesan espuma, curry oil and salt and vinegar potato croquette. Served with a side of bread to dip (or in my case mop the plate) – it was delicious! For my next favourite It was a close call between the beef shin ‘steak pie’ and the ‘fish supper’, but who doesn’t love a good fish supper? The cod served with confit fennel, samphire, beer pickled mussels and brandied was fresh, light and very satisfying on the palate. The final twist was the dessert, the ‘deep fried mars bar’. After many visits over the years, I’d somehow never managed to sample this Scottish delicacy. Although I’m
not sure I’d enjoy the original as much, this take on the dish, served with caramelia chocolate mousse, orange sorbet and cocoa nib was a taste sensation. Not everyone is a massive fan of tasting menus, whether it’s down to the food or perhaps the restaurant, but Nico has managed to encompass the best of both without compromise. It’s clear to see why the other restaurants have been so popular. The food was exceptional, the service was great and then there is the cost. With the six-course menu priced at £29 per person and the option to enjoy wine pairing for an additional £26, a visit every six weeks seems perfectly reasonable. Harri Williams
Head Chef at Carden Park, nestled in 1,000 acres of rolling Cheshire countryside
H
arri Williams, the 27-year-old Head Chef at Carden Park, comes full circle back to where his career began at the Cheshire Country Estate. Harri’s original goal was to become a head chef by the time he reached 28, but he managed to achieve this goal at 24. He started his time in the Carden Park kitchen at the tender age of 15 working Saturdays under Executive Head Chef Graham Tinsley which soon turned into a full-time apprenticeship. Spending his early twenties at the iconic Sydney Opera House as a sous chef, his stint ensured his style of cooking remained versatile and out of the box. His work ethic came from growing up in Pandy Tudur, in North Wales, on his family’s farm and his mother’s bakery in Llanrwst. Having spent his childhood helping his father rear cattle and produce milk, Harri joked he was never handed pocket money, “I had to work for chicken feed at the farm, this was for the chickens I was rearing, I was then able to sell their eggs, and only then would I start to see my pocket money!” This work ethic and his

mother’s mince pies that Harri brought in from the bakery is what led Graham to offer the young Harri an apprenticeship and over 10 years later, they are reunited in the kitchen at Carden Park. You can enjoy the result of this team with delicious dining in the formal restaurant of Carden Park Hotel. Offering a wide selection of dishes using locally sourced ingredients Redmond’s Restaurant boasts an AA Rosette awarded experience that is a must for all visitors and guests at Carden Park. If you fancy a day visit with the family come and join the team for the ever-popular three-course Sunday lunch available every week between 12.30 pm and 2.30 pm. Ravioli Harri Williams shares the perfect recipe for winter featuring seasonal ingredients
INGREDIENTS For Ravioli Mix: 2 small butternut squash 4 sprigs of fresh thyme 4 cloves of garlic 20ml oil 200g goats cheese curd 30g Dijon mustard 10g Maldon sea salt For Assembling Ravioli: 1 egg white 1 tbl spoon cornflour 28 sheets wonton wrapers 8cmx8cm For Garnish: 300g tenderstem broccoli Top half of 1 butternut squash 20 sage leaves 2 lemons 100g sultana 100g butter
METHOD Cut the butternut squash in half and take out the seeds, drizzle with oil and season with Maldon salt, garlic and thyme and roast in the oven on 180°C for 40 mins until golden brown and soft.
goats cheese and butternut squash mix onto the middle of each one. Fold the wonton over diagonally then with a 6cm cutter upside down press gently to seal the mix in then cut the half-moon with a 7cm cutter to form your ravioli.
Allow to cool slightly before scooping out the flesh and then hanging in the fridge overnight in a muslin cloth, this will allow the moisture to drain (a little tip: use a banana tree).
For the garnish trim up the tenderstem. Dice the top half of the butternut squash into 1cm pieces and peel the lemons and cut into segments.
Take the hung butternut squash and place in a food processor with the goat’s cheese and Dijon mustard and blend until smooth. Check the mix for seasoning, and season to taste. Whisk the egg white and cornflour to form a smooth paste, this will be used to stick the wonton sheets together. Place the wonton sheets on a lightly floured surface and pipe approx. 15g of the blended
“Harri Williams the 27-year-old Head Chef at Carden Park comes full circle back to where his career began at the Cheshire Country Estate”
Deep fry the sage leaves and leave to one side until serving. With a pre-heated hot pan, roast the diced butternut squash until it has a nice colour all round. Then add the butter, sultanas and allow the butter to brown slightly. Bring a pan of water to the boil and add the ravioli and tenderstem and cook until the ravioli is floating. Take out and add to the roasted squash and also add in the lemon segments. Using the water from the ravioli, create an emulsion with the butter to be used as a light sauce for the dish. You are now ready to plate up the finishing dish. After you have plated garnish with a little more Maldon salt and the sage leaves on top.

Memory Lane Some of our favourite venues share one of their most memorable winter weddings with us
Chris and Charlene Benson at
C
Inn on the Lake
hris and Charlene’s story is one of true Northern determination. Despite snow and setbacks, the Beast from the East did not manage to freeze over their big day. With their ceremony, reception and meal taking place at Inn on the Lake, Ullswater in March, Chris and Charlene had planned a beautiful wedding with pastel green tones, rustic bouquets, and an outdoor ceremony under the lakeside gazebo but the Cumbrian weather had another idea. Landing in the middle of the infamous storm, Charlene said “The days before the wedding were emotional, to say the least. Many other venues were cancelling their weddings due to the extreme weather conditions, and we prepared ourselves for the fact that our wedding may not happen”. Unfazed by the weather, the staff at Inn on the Lake were determined not only to make sure the wedding happened but that it was a truly special day for the couple. With reserve suppliers on standby and plenty of nervous guests to reassure, the team were fully prepared. Everyone pitched in to help, as the hotel’s general manager and chef braved the freezing temperatures to shovel the path to the lake to ensure the couple could incorporate the magical Lake District surroundings into their day. Serving a delicious four-course wedding breakfast for 116 people, followed by a hog roast for 140, the couple said: “Our guests loved the food, and we received so many compliments.” The couple praised not only the excellent service of the hotel staff but their wedding photographer Jason Chambers who
even lay flat on his stomach on sheet ice to snap from the perfect angle, “we were amazed he didn’t launch straight into the lake!” Other suppliers included Classic Ensembles who brought guests to tears and laughter with their mix of upbeat and moving covers. Peaches & Cream rose to the challenge, changing the bride’s hairstyle at the last moment to suit the extreme weather and Photobooth Cumbria kept all the guests entertained throughout the night. The Inn on the Lake is licensed to hold civil wedding ceremonies and offers an exceptional setting for your special day, any day of the week, whatever the weather, www.lakedistricthotels.net

hester Town Hall was a very easy choice and we only viewed one other venue beforehand. I (Daniel) am originally from Chester and grew up attending Cathedral services over the road with my school. I’ve always loved Chester’s rich history and architecture and when we came along to a Horseradish open viewing it was love at first sight for both of us! Brendan (the Town Hall Keeper)’s immense enthusiasm, knowledge and love of the Town Hall also convinced us we were in safe hands from the off. He could not have been more accommodating, even with Jen ‘popping in’ so many times in the months before the event I was worried she would be charged rent! The catering by Horseradish was absolutely fantastic and we have received so many compliments on the food, both during and since the big day. The menu was so diverse and interesting that it was a challenge to arrive at a final decision. But the fantastic menu tasting evening which Katie (our Horseradish Wedding Coordinator) arranged for us in the luxurious surroundings of 1539 really helped make up our minds. We often joke that it was one of the best date nights we’ve had! Whilst Jen undertook the vast majority of the planning, I know she found Katie’s continual and unerring assistance throughout the process utterly invaluable. We were both incredibly impressed by her diligence and attention to detail, not to mention her patience with the multitude
66
of changes we made, even up to the last minute. We felt she genuinely cared about ensuring we had the best possible day and we could not be more grateful. The day itself was absolutely perfect. We have thought back so many times wondering whether there was anything which could have been better planned or executed and we honestly cannot think of a thing. From the excitement of the bridal party getting ready in their fabulous, west end worthy dressing rooms, to the beauty of watching the sun set over the Cathedral as the guests took their seats in our candlelit ceremony room, we could not have been happier. The weather was even kind enough to allow us a stroll through Chester’s fabulous Christmas markets. So many guests have told us that it was one of the most magical weddings they can recall having been to, so full of joy and celebration. We truly consider that was in no small part due to the amazing work of the Horseradish team and the stunning setting of Chester Town Hall. www.horseradishcatering.com, www.chestertownhall.co.uk, 01244 304 660

y husband Steven and I married in early October 2019 at the gorgeous The Oak Tree at Peover in Cheshire. We chose this venue as we wanted a rustic converted barn type of setting. Having viewed several potential venues, as soon as we entered The Oak Tree we knew it was the one. The beautiful oak frame venue looks out into the gardens and the Cheshire countryside, ideal for wedding pictures and for guests to explore. I wanted an autumnal wedding and a venue which suited my theme. I envisioned colourful leaves to go with the oak and worked with Flossies (the venue dresser) to help bring my vision together. I was so pleased with the end result. The day ran smoothly and the staff at The Oak Tree did everything to ensure we had the most amazing day. Our photographer (Jessica O’Shaughnessy) and videographer (Big Bear) really captured every moment so we can cherish these memories forever. I was so excited preparing for the day and for my first glimpse of my groom in the venue we had chosen surrounded by our family and friends. My excitement turned to nerves a little as I was about to walk down the aisle but a quick intake of breath
was all I needed to get me back on track. I could not quite take in everyone’s reaction to the dress as I walked to meet my handsome groom to take our vows. My husband said that nothing could have prepared him for the what he saw when I walked down the aisle – that is good enough for me! The flowers by Adele Ellis (It Stems From), were outstanding and were in keeping with the theme of the venue and the day. The food was unbelievable, and all of the guests commented on how much they enjoyed their meals (provided by The Olive Tree) both during the day and evening. The crepe station (Original Crepes) went down well with the sweet-toothed guests. Entertainment throughout the day really brought a great atmosphere with all of the guests singing and dancing along to the live music, even during the wedding breakfast. To end our wedding week we went on a mini-moon to the Canary Islands which was a perfect end to a perfect wedding. We have already booked our honeymoon in Singapore and Bali this summer where we plan to sit back, relax and reflect on what a magical day we had. www.oaktreeofpeover.co.uk 67

Rookery Hall
fter visiting various wedding venues my husband and I settled on Rookery Hall to celebrate our big day for a number of reasons. The initial drive into the venue showed off its stunning grounds and made you feel like you’re in a secluded private stately home fay away from the hustle and bustle of the world. The venue itself is beautiful, with a mix of the original house and newer buildings that seamlessly flow and compliment each other. This was also good for us as it meant there was plenty of rooms to accommodate my large family to stay over. The cherry on top was how much light the ceremony room had to offer, with the rear of the room being floor to ceiling windows overlooking the grounds and countryside, which really set the place apart from other venue’s we had seen. We chose to stay over at Rookery Hall the night before the wedding and numerous members of family and friends joined us so we could all enjoy what the venue had to offer, together. We all took full advantage of the beautiful terrace area and garden just outside the bar as well as the relaxing spa facilities. The day itself was brilliant. As I enjoyed a morning of sipping on prosecco and eating bacon butties with my bridesmaids in the beautiful June Suite, the boys were downstairs greeting guests and getting a few beers in with family and friends admiring the views of the garden.
68
The ceremony was short and sweet so we could get back to enjoying the day with our guests and get the drinks flowing again. We had a lovely couple of hours of everyone enjoying the sunshine, taking photos and listening to ukulele’s (including my dad strumming a few chords). Again, everyone taking full advantage of the gorgeous setting right next to the lawn fountain. Rookery Hall made a beautiful backdrop for our wedding photos and continued to look stunning as the ceremony room was transformed into the wedding breakfast. We feasted for hours on a delicious 3-course meal followed by our wedding cake of cheese. Before we knew it, the evening party began and celebrations just kept on coming. Our guests enjoyed a caricaturist and a roulette table, to reminisce of our engagement in Las Vegas. Faces were smiling all around, especially when we revealed our second wedding cake of pork pies! The fun and laughs continued as inflatable guitars were handed out for people to join in on our first dance and the partying was then well underway. All in all, the day is one we will never forget and couldn’t have done it without the help of our bridal party, family & friends. All the suppliers we had were also amazing and perfected the day, with the hard-working staff at Rookery Hall showing another reason why we were so glad we chose this venue for our big day. www.handpickedhotels.co.uk/rookeryhall

Bora Bora, French Polynesia Bora Bora is unbelievably beautiful with the clearest water and the best beaches. The locals made the trip very special, they are wonderfully warm people with an amazing vibe, making Bora Bora a very happy and joyful place to be. It was the most perfect honeymoon destination which offered the option to relax or to go on a water adventure or boat trip. I feel incredibly lucky to have visited Bora Bora, a once in a lifetime experience.

New York, USA

My favourite place to visit in the whole world would be The Big Apple - New York! I love that the second you step off the plane you feel as though you’re in a movie set, it really is magical. From culture to history and shopping to incredible food, the city holds something for everyone of all ages - on every corner, there’s something different. If you want to be in the middle of it all, witnessing things you thought only ever happened in films, this is the place to visit.
Bodrum, Turkey
Barbados, Caribbean
I found Xanadu Island to be an ideal holiday destination to escape the hustle and bustle on a secluded peninsula surrounded by beautiful gardens and grounds. There are places to sit and take in the views (and sun!) with a cocktail or two. I love the fact that you can have a different view every day. The sunsets are not to be missed.
Sun, sea, sand and of course rum! What’s not to like about Barbados? I’ve only been once and I fell in love with the place. We stayed in a beachside villa on the west side of the island not too far from the capital, Bridgetown. I have never seen water so blue in all my life. Crystal clear with white sand beaches, it was just paradise and the perfect setting for swimming with turtles, an experience I’ll never forget.

Rovaniemi,Finland My wife and I chose here for a short Christmas break and enjoyed everything the city has to offer, from the outdoor activities and Santa Claus Village to the range of bars and restaurants. The stand-out experiences for us included a husky ride and snowmobile trip through the snow-filled forest on the outskirts of the city – with Lapland’s berry juice and Finnish Chocolate as a treat while we took in the incredible views! I would recommend Rovaniemi to anyone looking for an extra special and unique winter getaway.

Not one for a relaxing break, I travelled over 3,000 miles from Minneapolis to San Francisco then to Vegas, doing 17 days in total. During my visit, I spent Independence Day in Jackson, visited the Yellowstone and Yosemite National Parks and saw the Hoover Dam, Golden Bridge and Alcatraz in San Francisco. The highlight was the four nights I spent in Las Vegas, filling my days with pool parties and casinos.
Barcelona, Spain
Moscow, Russia
I recently visited Barcelona for a long weekend as a surprise gift for my brother’s 30th birthday. The main priority of the trip was a visit to the imposing Nou Camp to watch, arguably, the world’s best football team play. Whilst we were there, we also managed to take in some of the breath-taking architecture, shop at the famous La Boqueria market and relax on the beautiful beachfront. The city is perfect for a long (and potentially busy!) weekend spent surrounded by culture and I certainly plan on returning.
Prior to visiting, I was intrigued by the vast history, culture, and architecture of the country, dating back over 1,000 years. The ex-Soviet nature only adds to that intrigue. Having now visited on a few occasions, I can attest to the beauty of the places I visited, the friendliness of the people and the mesmerising sights (not to mention the fresh caviar and homemade cheburek). Moscow was incredible, and travelling by car over the Kerch bridge, into Crimea (and onto Yalta), was a truly memorable experience.

ollowing a glorious drive along some of the countries most impressive vistas with World Heritage Site status, the Lake District is more appealing than ever. We pulled up to the hotel, built initially as a grand, Victorian private house in the Italian style of heavy cornices, Roman-arched windows and stone balustrades lovingly restored and painted white, it stands out from the azure blue sky like neatly folded and stacked linen. Laura Ashley began their partnership with The Belsfield in 2014 and started a radical refurbishment; the move from drab to fab was sudden and dramatic. It’s challenging to stay at The Belsfield Hotel and not immediately begin designing your own visionary house interiors. Set on a lush green hill atop stunning views overlooking the largest body of water in the Lake District: Windermere. So if you’re looking for luxury accommodation in the centre of the Lake District, with superb views so close you could roll out of bed and be at the lakeside, look no further! The modern glass reception is situated alongside the hotel and enjoys the same panoramic views the guest welcome is warm and genuine. As we took our little tour of the hotel, we noticed some beautiful features from the underlit bar just off the reception emanating a consuming warm fireside glow to the charmingly old-fashioned lift up to our room. Our room was situated to the front of the hotel with superb views over the manicured six-acre gardens and lake beyond, and what a view! It was like a postcard especially as the sunset turning into the most fantastic scene. We had one of the 62 bedrooms available, the bed, a comfortable bed with luxurious and sumptuous topper and freshly pressed crisp linen, probably one of the most comfortable I have ever slept in. The bath was deep and filled

weekend away
Laura Ashley Hotel Windermere Scott Illingworth-Harrison enjoys a lakeside retreat on a weekend away at The Belsfield in the Lake District (enjoyably) very quickly. We had feared overpowering florals and loud prints, how wrong could we have been! The decor throughout the hotel is pastel with muted tones, dark woods and beautiful wallpapers and accessories; this is modern Laura Ashley. You have two options at the hotel when eating, the informal Brasserie serving salads, burgers, sandwiches and of course fish and chips and a more immersive silver-service fine dining restaurant, each strategically placed so you can gaze out over the lake while dining. As we were staying for two evenings, we decided to eat Brasserie style on Friday, and the Fine Dining was reserved for the following evening. The level of cooking at the hotel is confident and balanced; well-deserving of its 2 AA rosette awards. The moderately priced wine list is mainly New World, and there’s an excellent choice of single malts. In the Brasserie, we can recommend the more adventurous meals available of the menu, crispy hens egg with Cumbrian air-dried ham and pea puree and the chicken liver parfait (which I would dispute was not a parfait, more a paté) but delicious

nonetheless. Our mains of harissa lamb rump with mash, baby onion and chorizo and pea jus and garlick and tarragon chicken with wild mushrooms and dauphinoise potatoes did not disappoint. Our second meal in the formal evening-only restaurant was superb; we couldn’t fault a single course or meal of which we enjoyed, smoked chicken breast, avocado mousse and black garlic and wood pigeon with sweetcorn puree and mushroom, both stunning starters. Our mains of Cumbrian Lamb, goat curd and herb bon-bon, shallot and potatoe rosti and due of beef with brown butter salsify, watercress puree and baby turnips were a revelation and pleasantly danced on your tongue. With heaps of activities on offer locally, you are spoilt for choice as
what to do first, take a trip on a lake cruiser (right opposite the hotel gardens) or a car ferry across to the western shore to see the home of Beatrix Potter and her countryside animal stories. The beautiful Hawkshead and Coniston are just a short drive of around 5 minutes. It’s just a hop skip and a jump into Bowness which can be extremely busy with tourists. Still, thanks to the hotel’s vicinity, you can stay out later or get up earlier before the crowds arrive and can retreat back to the hotel quickly if the need arises. Beautiful old steam trains run between Haverthwaite Village, Newby Bridge and Lakeside Pier on Windermere lake. Tie your 18-minute ride in with visiting some of the most popular Windermere attractions such as the Lakes Aquarium, the Lakeland Motor Museum and Windermere Lake Cruises. Coniston Launch runs boat trips and special themed cruises on Coniston Water, which retains the true qualities of peace, remoteness and adventure that will appeal to the true ‘laker’. Here it is possible to escape for a while and enjoy the Lake District that has almost ceased to exist. There are two traditional timber launches which are named after very different writers who had close associations with Coniston. M.L.Ruskin was built in Chester in 1922 and saw war service on minesweeping duties, while her sister ship M.L.Ransome was built a year later in Portsmouth and was also requisitioned by the Admiralty. After a few days in the elements, mainly of the wet variety (this is the Lakes, after all!), we made our way back home, thank you The Belsfield Hotel for a truly wonderful stay. www.lauraashleyhotels.com/hotels/the-belsfield 77

They have first-hand experience on a variety of cruise lines so can offer you insider tips and advice. For instance, Assistant Retail Manager Phil Munro has vast cruise experience: “I started my career back in 1998 and my intention was to explore some of the world whilst getting paid for it, little did I know that I would love it so much I ended up spending 11 years onboard cruise ships. I got to travel to many destinations, the Caribbean, Hawaii, Panama Canal, Alaska, Europe, Australia and beyond. Since leaving the ocean I have cruised over 15 times to other destinations that I never managed to get to whilst working onboard, such as China, Japan, New Zealand and the West coast of America. I have a love for cruising, specifically the luxury cruise lines and there certainly is a cruise company for everyone. It is important to speak to a specialist like myself, Danielle or Kirsty to make sure the right experience is booked for you. Also, cruising is about the destination. Exploring the ports and sharing those experiences, with great restaurant choices onboard and my favourite; unpacking once and letting the ship take you to the next destination. Why not give it a go, I promise you’ll become hooked.”

Kelly Hoppen takes on the World of Cruising with Celebrity Cruises ®
Celebrity Apex ® is the latest Edge-class ship in the fleet designed by a global team of world-class architects and designers including interior design mogul, Kelly Hoppen MBE. Her collaboration with Celebrity Cruises ® began with their first dynamic ship, Celebrity Edge ®. This ship was designed to push the boundaries of how a ship traditionally looks and at the same time evolve how luxury cruising is presented. Celebrity Edge ® and Apex ® feature innovative design elements such as the Magic Carpet which is a moving deck that can move up and down the 16 storeys on the side of the ship as a floating bar and restaurant. There are 150 suites, a luxury spa which offers all kinds of state-of-theart treatments, fantastic dining options and lots of activities on board.
Luxury in-focus The design process was led by focusing on modern luxury and immaculate style taking inspiration from boutique hotels. Every stateroom and cabin were to reflect this and make guests feel at home and relaxed at sea. Creating a mix of modern luxury along with a relaxed home away from home feel became the key focus for Kelly.
Ground-breaking design
World-class architects and designers Most of us are familiar with the magnificent Burj Al Arab Hotel standing out amid the Dubai skyline and Tom Wright who designed this also created the Magic Carpet. When it comes to the interior of the ships, celebrity favourite interior designer Kelly Hoppen worked her magic on Celebrity Edge with a clear vision of what she wanted to achieve. The partnership with Celebrity began when Kelly was approached to collaborate on the design of their new ship focusing on luxury and innovation and to create a relaxing atmosphere through design.
Traditional cruise interior design fell by the wayside when developing the style for Celebrity Edge ® using a combination of modern style, comfort and luxury along with Kelly’s style and ethos. This centred around her distinctive neutral palette, sleek lines and splashes of colour creating a modern, luxurious and comfortable feel aboard the ship. After designing Celebrity Edge ® and new for 2020 Celebrity Apex ®, the task of the ‘Celebrity Revolution’ a $500 million revitalisation project for the rest of the fleet is underway, taking them to the same level of design as the Edge series.

Seek Sanctuary in
SARDINIA Richard Harrison discovers that Sardinia really is a place of natural beauty, and Delphina certainly shows this throughout their eight lush-green Resorts and Thalasso spas Hotel Valle Dell’Erica
I didn’t have the pleasure of visiting all eight resorts; however, I was given a tour of three northern hotels and stayed in one of them, Valle Dell’Erica. Valle Dell’Erica is an award-winning 5* family-run sanctuary hidden away, a short distance from the ancient village of Santa Theresa Gallura. I say ‘hidden away’ quite lightly as the resort is quite sizeable. Yet, it seems concealed due to its extensive array of floral-scented shrubbery and many secret coves dotted along the sparkling turquoise coast-line. The resort is split between two hotels, Hotel La Licciola and Hotel Erica. With 271 bedrooms and spacious suites, four swimming pools, a luxurious Thalasso Spa, seven delicious restaurants and five different bars between them, it’s hard to choose. Hotel La Licciola opened in 2013 after Hotel Erica as a stylish extension using traditional Sardinian decor in the various suites and rooms, one of which is a duplex Imperial suite with a private panoramic terrace and pool. Hotel Erica, my hotel of primary residence, had everything to offer! The Hotel’s Front of house, Lorena welcomed me with open arms and assured me my stay here would be fantastic, she was right! My room was grand with a slightly rustic feel, a spacious bathroom and had a view out across the pretty
foliage and the stunning blue sea. Only a short walk to reception, breakfast was served buffet-style in the main restaurant with a mesmerising morning pianist. It was a buffet fit for a king! I’ve never been so spoilt for choice- canapés, fresh fruit, made to order omelettes, pancakes, fresh-baked pastries, everything was delicious. I highly recommend the evening BBQ buffet that includes a hog roast, fresh salads and home-cooked bread. I couldn’t help visiting the Thalasso spa when at the Hotel Erica as it looked so tranquil. Having a relaxing full body massage with essential Sardinian oils around 4 pm indeed sent me heading for an afternoon nap! The beaches at Erica are a selection of idyllic petite white sandy coves, each with sun loungers dotted around for peaceful relaxation and to capture the perfect sun-kissed glow. The boats out to sea look as though they are floating along with the crystal clear water. This resort is the ideal location for families as the resort has a children’s club ‘Ericaland’, family excursions and an evening piano bar ‘La Piazzetta’ with music and live shows. At resort Valle Dell’Erica everything has been thought of, so guests don’t have to; even a complimentary nursery service with highchairs, pushchairs, sterilisers and baby food. For the older kids Nintendo, Wii and X Box can be arranged. 83
Hotel Capo D’Orso
Capo D’Orso is perfect for a couples retreat or a peaceful getaway. It is smaller than Hotel Erica, although similar to its array of beautiful foliage. With only 86 luxury suites with a private veranda (10 of which are luxury suites, 6 with private pool), one small, fresh seawater pool, a Thalasso spa, two restaurants and a nine-hole golf pitch and putt course it is the ideal retreat for those wanting an intimate yet luxurious stay. The whole resort is nestled amidst wild olive groves and junipers. I visited Capo D’orso by boat from Hotel Erica after stopping off at the little town of La Maddalena for a spot of retail therapy and a dip in the crystal blue sea at the Spargi islands. Arriving into Capo D’Orso I knew it was going to be my favourite, especially arriving by boat, it just oozed luxury. And if you want ultimate indulgence, there is even a private helipad! The restaurant Il Pagura over-looked the marina, so I stopped for lunch and of course a glass of Sardinian wine. I had Caprese buffalo mozzarella with tomatoes to start with which was perfectly refreshing on a hot day, for main I decided on the ‘Chiusoni’ Sardinian pasta with ragu served with
mushroom and pecorino cheese. The meal was finished off delicately with an exotic fruit mousse with yoghurt. I had the day to explore the resort, and the thing I loved most was the hidden sun traps entwined within the bushes and trees. There were sun loungers spaced out in the glistening sunshine and hammocks placed in cosy shaded areas, even a hidden bar down the narrow pathways that are all interconnected along the coastline. With another Thalasso spa here, you can enjoy the opportunity to indulge your mind, body and soul with various treatments and specialities. Additional facilities at Capo D’Orso include diving excursions, inflatable boat rental, sport-fishing, bikes and kayaks. I had the whole day here and felt pure relaxation from the minute I arrived and already started planning a trip to return here.

Hotel Marinedda
I visited Marinedda by car, arranged by the lovely Tamara who was so helpful throughout my trip, she is the oracle of Delphina and being from Sardinia herself she certainly knows a thing or two about the island including speaking seven languages! Marinedda is another fantastic hotel for families boasting nearly 200 rooms (including suites and interconnecting family rooms), a Thalasso spa, two swimming pools, three restaurants including a pizzeria and a children’s club to allow parents to have some down-time. For the gym-fanatics and sportytypes, there are free activities including gym, archery, tennis, five-a-side football, mini-basketball and trekking routes. For the not-so-sporty types that enjoy relaxation, the spa here offers a 2,500 m2 haven of treatments that include massage, hammam, beauty essentials, and holistic therapies. For those couples wanting uber-luxury, the hotel offers an exclusive suite (Executive Elicriso) which has its own terrace with private Thalasso heated seawater pool and jacuzzi. The main pool is surrounded by a panoramic terrace and is the perfect spot to enjoy dinner and be enchanted by the chef’s live cooking show. Because the hotel is on a slope down to the beach, the views from the main restaurants are breathtaking. I had lunch at the restaurant ‘Petra Ruja’, which again was buffet-style lunch with plenty of mouth-watering delights. The beach down the hill at Marinedda is easily accessible and has plenty of comfortable sun
loungers and an excellent beach bar with clean and modern changing facilities. The beach at Marinedda is known as one of Sardinia’s best beaches. Sardinia is well-known for its high concentration of centenarians (People aged over one hundred), and I was lucky enough to meet two of them. One of which, Francesco Punta told me the key to good health is down to the high levels of salt in the Sardinian sea which was filtered through the animals they hand-reared on their farms, and as he has aged he has become more vegetarian as he doesn’t like modern-day farming. He added that dancing and spending time with his family helped him stay young! Sardinia is one of only five “blue zones” in the world which is considered to be the best places to live for longevity. Overall my trip with Delphina is certainly one I will not forget, If you want exquisite luxury and tranquillity, with all the amenities of a larger hotel then Delphina is the right choice for you. Delphina is the first Italian hotel group to use entirely green and renewable energy, (including electric buggies and recycled paper and inks) and has won many awards including ‘Europe’s Leading Green Resort 2019’. Delphina is inspiring to become the World’s leading green resort soon. 85

agerly arriving at the architecturally stunning FIVE Palm, it’s easy to see why this party hot spot has been dubbed the hottest hotel in Dubai. Entering through an impressive glass cube with expansive views of the tree-lined pool and views beyond, this place was beautiful and absolutely bustling. It was a Friday lunchtime and Friday is famous for one thing in Dubai - brunch. Staying in a Luxe Sea View room on the ninth floor, the styling was modern yet elegant with dark wooden doors, neutral colours and handcrafted marble floors. The geometric print in the bedroom and the bathroom gave some colour and depth and there was a touch of Art Deco with the furniture and drinks cabinet which housed the minibar and cocktail equipment. The marble continued into the bathroom, which had a free-standing gold-coloured bathtub and separate rain shower. The wow-factor was the balcony with its stunning views of the Dubai skyline, especially when lit up at night. With a table booked for brunch at FIVE’s recently opened city chic urban hotel in Jumeirah Village Circle, I took the hotel

shuttle for the short 25-minute journey. The new award-winning FIVE Village Jumeirah boasts rooms, suites and apartments with floating pools, hot tubs and lush green terraces. Similar to the FIVE Palm, the hotel was buzzing. It was clear to see guests, visitors and even the staff in high spirits and loving life. Soul Street is the latest edition to Dubai’s culinary scene. Offering honest and authentic street food from around the world, this immersive dining experience with a live DJ encourages diners to sample street food favourites and socialise with other guests - the food was plentiful and the dishes were vibrant and delicious. After brunch, it was time to head
outside to join the high-rise pool party, before watching the sunset and making my way back to the FIVE Palm for a restful night’s sleep. There was a more relaxed and laid back vibe the following day as I enjoyed breakfast in BVLD On One and then explored the rest of the hotel, pool and private beach. The luxurious finishes and high-end décor was evident throughout. The FIVE Palm and FIVE Jumeirah Village resorts have plenty to offer. With second-to-none facilities and experiences, 17 food and beverage venues and an impressive calendar of events, you really get to live and experience the Dubai life in full. First created by the Duchess of Bedford in 1830 to stave off her mid-afternoon hunger pangs, afternoon tea was firmly established as a British staple in Victorian England, a light meal of tea (usually Darjeeling) and cakes or sandwiches was the perfect balance. The Duchess found taking an afternoon snack to be such a perfect refreshment that she soon began inviting her friends to join her. Afternoon tea quickly became an established and convivial repast in many households. Afternoon Tea at The Chester Grosvenor offers a wonderful and memorable experience for all occasions. Indulge in sweet creations made by our award-winning chefs, served alongside a selection of finger sandwiches, fruit and plain scones with clotted cream and strawberry preserve and freshly brewed tea or coffee. For those celebrating an indulgent Champagne option is also available. Eastgate St, Chester CH1 1LT, www.chestergrosvenor.com
The Alchemist For a divine meal of theatrical treats, the Alchemist St John Street is just the ticket. They’re masters of molecular mixology, mystery and all things unconventional. The all-day dining menu offers a tantalising selection of dishes: creative classics and sensational winter warmers - each with their own unexpected twist. But before your meal, take a seat at the bar; the centre stage of cosmic cocktail concoctions. Our starter of choice is the chorizo and cheddar doughballs: sumptuously smooth with a hint of spice, and just the right amount of cheese. Elevate this culinary experience by injecting the cheese yourself. Next up, a delicious winter warmer. The braised beef ragu is a hearty dish of exotic tastes; a creative spin on an Asian classic. The dish boasts unexpected cuts of beef shin, sesame noodles, hints of kimchi, and accents of toasted coconut. Delicious. To finish with a flourish, we opt for the sweet gyozas. A bewitching twist on the beloved apple pie and custard. At the Alchemist, sweet apple is encased in crispy gyozas, paired with creamy chilled custard and a tangy miso puree - to take the dish to the next level. You’ll find the Alchemist on Chester’s St John Street - just a stone’s throw from the city’s age-old amphitheatre. The venue brings a glimmer of gold, an air of mystery, and dark decadence to an already captivating city. To make a booking, call the restaurant directly on 01244 319425 or visit the Chester venue page here. Terms and conditions apply. Official fuel consumption figures in mpg (l/100km): combined 49.5 (5.7) – 54.3 (5.2). Combined CO2 92 g/km. Figures are provided for comparability purposes; only compare fuel consumption and CO2 figures with other cars tested to the same technical procedures. These figures may not reflect real life driving results. Fuel consumption and CO2 produced varies significantly depending on a number of factors, including the accessories fitted (post-registration), driving style, conditions, speed and vehicle load. All models and grades are certified according to the World Harmonised Light Vehicle Test Procedure (WLTP), which replaces the New European Driving Cycle test procedure (NEDC). All CO2 figures quoted are NEDC equivalent. Drive LIFTING the Lid
Car design seems to have hit new heights in recent years, but the Lexus LC must be one of the decade’s standout performers. Now, though, the spaceship-style coupe has been decapitated, and it looks even better for it. A big V8 engine promises power to match the style, not to mention the sort of noise that normally precedes volcanic eruptions. Lexus hasn’t said how fast it will go, or how much it will cost, but who cares when it looks like this? £tbc, www.lexus.co.uk

MODERNISED MERCEDES Mercedes has completely rethought its smallest SUV, giving us something much more stylish and more modern...
O
nce upon a time, 4x4s were big, dirty, horrible things used almost exclusively by farmers and tree surgeons. Now, though, we live in the age of the SUV, with big premium brands clamouring to quench consumers’ thirst for high-riding road cars. All the big companies are at it, but with the likes of BMW, Audi, and Jaguar launching new models over the past few years, the Mercedes-Benz GLA is starting to feel its age. It’s about time, then, that Mercedes launched a new version, updating the styling and most importantly the interior, to drag its smallest SUV into the 2020s. This is what the German company has come up with. As before, it shares
94
much with the A-Class hatchback, albeit with jacked-up suspension and a slightly more SUV-appropriate body. That’s no bad thing, though, because that means the GLA gets some of its sister car’s smart styling features and the same gorgeous cabin. That means high-end versions get a bank of digital displays instead of normal instruments, and there’s a laptop-style touchpad to control it all. Even the air vents look stunning, with the turbine design that’s used across the Mercedes range. The new GLA gets the same engine range as the A-Class, too, with the 1.3-litre ‘200’ petrol engine set to be a staple, while speed freaks will get the 2.0-litre AMG 35 version, with more than 300bhp. An even faster version is expected soon, though. £TBC, www.mercedes-benz.co.uk

AUDI DO THAT?
loves
Audi has something of a history for turning big and/or boring cars and making them outrageously fast. See the RS 6 Avant and SQ7 for details. But Audi’s latest concoction is the RS Q8, a mutation of the enormous Q8 4x4 that gets from a standstill to 62mph in 3.8 seconds. Most Porsches can’t do that. The secret to the performance is the 4.0-litre turbocharged petrol V8 that lives under the bonnet and churns out a stonking 592bhp, but Quattro four-wheel drive and clever air suspension play their parts, too. £TBC, www.audi.co.uk
BACK IN BLACK
GULF IN CLASS Gulfstream is one of the biggest names in business jets, and when the company reveals a new flagship, you have to sit up and take notice. The American company claims the sleek new G700 is “an unprecedented aircraft experience”, with the longest, tallest and widest cabin in the sector and the biggest windows. That cabin is divided into five distinct areas, with the option of on-board Wi-Fi and seats that convert into flat beds, and there’s a high-tech flight deck for the crew. Two Rolls-Royce Pearl jet engines allow the aircraft to get close to the speed of sound, while the 7,500-nauticalmile range is plenty for transatlantic flights. £TBC, www.gulfstream.com
There are few cars sexier than the Range Rover Velar, which somehow blends delicate style with the sort of assured, fuss-free ruggedness that only a Range Rover can provide. Think Ryan Reynolds on wheels. But now Land Rover has made the Velar even meaner, with the arrival of the R-Dynamic Black. It’s a limited edition -- only 500 will be made -- but it comes with a plethora of black-themed fixtures and fittings, including massive 21-inch alloy wheels, black trim on the grille and mirrors, and privacy glass for those in the back. There’s a panoramic glass roof, too, and black leather seats. Customers get a choice of Santorini Black and Eiger Grey paint, but there’s only one engine on offer -- a 178bhp 2.0-litre diesel. £56,995, www.landrover.co.uk

SOU L M8 James Fossdyke finds out whether performance-enhancing upgrades can make the 8 Series appeal to your heart, as well as your head
C
haracter is something I find myself talking about regularly on these pages. Not characters in Breaking Bad or even characters on the printed page, but the special kind of character that makes a machine feel like more than the sum of its parts. It might sound very arty-farty, but I stand by it because if you’re spending six figures on a car, you want it to feel special. If I’m completely honest, some of the best cars in the world leave me stone cold. The numbers would suggest the Audi R8 is brilliant, and the driving experience is almost faultless, but even with that magnificent V10 engine on board, there’s no way I’d ever get attached to it. To me, at least, it just doesn’t have the character to justify the £130,000 price tag. The BMW 8 Series is another sterling example. The engines are great, it drives well, it’s well built, it looks good, it’s comfy… you get the picture. But although it’s flawless in pretty much every measurable way, it’s also as joyless and forgettable as a Swiss accountant. I’d just want a bit more excitement and joie de vivre for your money. All of which is why I drove the fastest 8 Series -- the M8 Competition -- with more than a little trepidation. It’s billed as the pinnacle of the range, and it’s priced accordingly, but I
96
feared the German engineers would be too preoccupied with lap times and performance figures to give it the drama that befits the price tag. At first, I thought my fears were well founded. Aside from the slightly odd satin paintwork that adorned my test car, the M8 doesn’t look all that different from a ‘normal’ 8 Series. Sure, there’s some carbon-fibre stuff on the bumpers and bigger gills, and it’s quite handsome in an understated sort of way, but the pictures won’t be adorning any kids’ bedroom walls anytime soon. Inside, though, things are better. There’s more evidence of the car’s sporty pretensions in the gorgeous figure-hugging seats, the skeletal gear lever and the carbon-fibre trim, while the addition of a red starter button feels less gimmicky than it sounds. But my favourite features are the two red buttons on the steering wheel. They’re the preset buttons that work as shortcuts to your preferred driving modes. If you like sporty steering and everything else in ‘comfort’, as I do when I’m pootling around the country, you can set the car so those settings are just two button presses away. And if you like a firmer, more focussed setting for your favourite back road, you can attach those attributes to the other button. All this is kind of useful if you’re really into the art of driving, and it’s far better than swimming around in the endless sub-menus of the iDrive infotainment system, but those buttons serve a far more noble purpose: they reawaken your inner child with dreams of fighter jets and nuclear submarines. There’s a sense that pushing those buttons will invite

hell to break loose, even if you know it’s just going to make the suspension stiffer. Maybe, I thought as I pushed the scarlet ignition button, BMW had worked out what they needed to do. A fraction of a second later, I thought my hopes had been dashed. When the M8’s 617bhp V8 got up and running, I wanted my ears to be pummelled. But they weren’t. In fact, aside from a gruff bark as the engine fired, a barely-audible burble from the back was the only thing separating the M8 from an electric car. But as I learned over the course of my time with the car, that is the M8’s trump card. Most cars that manage 189mph and 0-62mph in 3.2 seconds are pretty focussed things, with rock-hard suspension and less soundproofing than an Egyptian brothel, but the M8 is quiet when you want it to be. The ride is stiff and sporty, but not uncomfortable, and the cabin is quite spacious, as long as you aren’t sitting in the back. It’s a bit of a sleeping bear, though, giving you cute and cuddly vibes right up to the moment you poke it with a stick.
98
Put this thing in its hardcore race mode and it’s all teeth, ready to rip you to shreds the moment you make a mistake. Unless you’re on a track, the hard-hitting go-faster modes - of which there is a bewildering array - are best left well alone. Go somewhere in the middle, though, and the bear becomes your protector, even if you’re being a little bit of an idiot. Unlike so many fast cars, the M8 has four-wheel drive, which, when the traction control is turned on, serves to make it more manageable than most 600-odd-horsepower coupes. Combine that with the ultra-precise steering and the superb chassis and you’ve got something that’s almost worryingly easy to drive fast. The M8 Competition, then, has all the qualities of the 8 Series, but it brings them to life in a way the standard car never could. It’s no supercar - it’s too big and heavy for that - and my test car’s £140,000 price tag rather precluded any delusions of value for money, but the M8 has this epic breadth of capability that you can’t help but admire. And although it still isn’t quite as beguiling as, say, an Aston Martin DB11, it’s finally close enough to be considered a proper contender.
