How would you describe yourself ? I am a new father and the new marketing manager of one of the most unique rural hotels in the country. Where is home? And work? I live on the Wirral but work at the Carden Park Estate, 20 minutes south of Chester. I adore the countryside setting and feeling of space – so the commute is well worth it! What did you want to be when you were younger? I tended to drift from one thing to another, but I always wanted to do something that involved communication and creativity. Marketing gives me this and so much more. Now I couldn’t see myself doing anything else. Name a few of your favourite places to be... I love travelling to exotic places but I’m also lucky enough to be able to say my workplace is one of my favourite places to be. The setting is luxurious and tranquil, but professionally it has an infectious sense of energy and innovation. What or who inspires you? No one is perfect, but my friends, family, and colleagues inspire me. I try to emulate the most admirable parts of their individual personalities.

It was a fantastic feeling seeing her face light up as she opened it. Tell us a fun fact? My wife is obsessed with rabbits. When I proposed to her, I chose to do it on a tropical island off the coast of Japan that was completely overrun with them. It backfired slightly as she spent more time with the rabbits than me! Who or what would you place in Room 101? Other hotels in Cheshire potentially… or a more serious answer would be animal cruelty. What’s been your biggest life lesson? Everything is made-up and there is no predetermined plan for you. I believe the more you can take ownership of your life and drive the agenda the more fulfilled you’ll be. www.cardenpark.co.uk

All-Rounder As the final episode of the latest series of new-look Top Gear airs and it is announced that it will be moving to BBC One, we speak with presenter, broadcaster and cricketing legend, Andrew ‘Freddie’ Flintoff
F
reddie made his first-class debut for Lancashire in 1995, and international honours came when he made his Test Match debut in 1998 vs South Africa. He made his biggest impact for England in the summer of 2005, when he played a major role in regaining the Ashes from Australia. His contributions won him the BBC Sports Personality of the Year award in the same year. In 2006 Freddie was awarded an MBE, yet in September 2010, as

one of the biggest players in the game, Flintoff retired from professional cricket due to a recurring knee injury. Since his retirement, Freddie has developed a strong broadcast career. From becoming a Team Captain, along with Jamie Redknapp, on the Sky One sports panel show A League Of Their Own, currently on its fourteenth series to making his acting debut in one episode of the BBC drama Kay Mellor’s Love, Lies & Records. He also made his stage debut in Kay Mellor’s musical Fat Friends, touring around the UK in 2018 playing the character Kevin alongside Jodie Prenger and Sam Bailey. The announcement of the new line-up of Paddy McGuinness, Freddie and Chris Harris as Top Gear presenters came as a surprise to some but they have been a hit with viewers and critics alike. So much so that the show is moving to a prime-time BBC One slot when it returns for its 29th series later this year.
What were your highlights from the last series? We went to Peru, which was amazing. The Incas built the roads years ago. They were so far ahead of their time that I’m inclined to believe it’s actually aliens because some of the structures and the roads are so regimented, I just don’t think it’s possible. It’s almost like the Egyptians with the

They are so welcoming, they’re so proud of their country and so eager to show it off. It might sound like an odd thing to say, but the country was so clean. So clean from pollution and plastic and litter. They have real pride in their country. I love Peru. As you know, it was the original American road trip, so we had to get American road trip cars. I went with a 1980s VW Campervan. Even though it’s not an American car, it’s perfect for an American road trip, and I’ve always, always loved them. I had never driven one before, so I thought: “This is the chance to do it.”
You did an extraordinary bungee jump in a car from the top of a high dam in Switzerland. Can you recall how you felt just before the jump? The bizarre thing was, I was quite relaxed about it. I’ve done stuff like that before. Then, they hoisted me up in the car, and I just thought: “What am I doing? Why?!” I’ve done bungee jumps before, and they’re actually alright. The problem with that one was that if you’re doing a normal bungee jump, you’ve got a rope around your feet and you know you’re attached. But in a car you can’t feel

anything – you are just sat there. I was trying to style it out a little bit but… My main concern was that it’s not attached to a fixed thing. It’s a crane. Also, if I had seen that crane driver before I did it, I’m not sure I’d have done it. He looked worried, he looked like it was his first day on the job! I was also worried about the crane and the thought of something like 7 tonnes of that coming down. I just imagined this crane toppling over, that was my main concern – all for TV!
Tell us what you enjoy about working with Paddy... He makes me feel so clever! No, we’re from similar areas, both from Lancashire, not brought up in too dissimilar a way. We’ve probably got similar values as well from when we grew up. I love Paddy’s enthusiasm for things. One of the nice things about travelling with him is that, by his own admission, he wasn’t well travelled before. He’d been to Portugal and I think he’d been to America once. So, when you go to countries with him now, he’s like someone who’s opened their eyes for the first time. And that’s

kind of infectious, isn’t it? He also loves cars. And he’s funny, isn’t he? Let’s be honest.
Do you feed off Chris’ expertise about cars? Yes. I feel I’m learning all the time. I love cars – I always have done since I started driving. But I just listen to him; he talks about auto stuff and I don’t even know what he’s on about. It’s a great learning curve. I’m asking him questions all the time – like you would in a cricket team where you’ve got someone more senior and you try learn as much as you can. I think you do that with Chris. You see him drive and it’s unbelievable. He can do a piece to camera when he’s got a Ferrari 488 going sideways and he’s just talking as if it’s the most natural thing in the world. He is amazing.
After 28 series, why is Top Gear still so popular?
Do you relish being a TV presenter? Yes, although it isn’t what I thought I’d be doing. I finished playing cricket at 31, and all I ever wanted to be was a cricketer. Then I’ve stumbled into TV presenting, and, I’ll be honest with you, I’m not quite sure what I’m doing! I just turn up and just do whatever. I think I’m going to get found out every day!
What do you love about it? I just see it as an opportunity to do stuff that I’d never get the chance to do otherwise. I think of all the places I went playing cricket, which were amazing. But since retiring, I’ve been to places and actually seen them, rather than just visiting a cricket ground and a hotel. Driving the roads of Peru, say, which is an unbelievable country. Yes, it’s for a TV show, but the thing that excites me more than anything is just having the chance to go to these places. I never thought I’d get the chance. I look at my life, I’m from Preston, and now I’m driving round Nepal and Peru and doing bungees in Switzerland. It’s bonkers! Beyond filming the next Top Gear series, Freddie is currently working with the BBC on a documentary film about bulimia, seeking to understand the causes and impact of the disease on his life and why eating disorders, in general, are so hidden in men. BBC One has not yet confirmed when the documentary will be shown. www.bbc.co.uk

Dream It, Believe It, Do It... Mark Bryant shares his incredible and inspiring journey from illness to wellness
I
t was June 2015. I was 36 and had just been diagnosed with acute lymphoblastic leukaemia – a type of cancer so rare that it accounts for less than 1 per cent of all cancer cases in the UK. Whilst it was initially a big shock, my approach was always one of trying to learn and understand what I could do to help my body heal. I tried to love myself back to health. You hear lots of people talking about their fight or battle with cancer, but I just didn’t feel like it was something to be beaten… I wanted to know why. At the time, I was the CEO of a £15 million company and married with two beautiful children. But I wasn’t in a good place. I was mentally, emotionally, and physically exhausted. To the point that I fell off the hamster wheel and my engine stopped. My treatment was considered one of the most toxic treatments in the world, it was a full intensity stem cell transplant and my brother was my donor. It consisted of two months of chemotherapy followed by four days of full-body radiotherapy, at which point my brothers cells were introduced into my body. Unfortunately, it didn’t work. And
just six months later, I received the worst possible news. The cancer was back. I was given a secondline chemotherapy tablet and a few weeks later another dose of my brother’s cells. Three days later we find ourselves at The Milestone Detox to meet a naturopath. Despite the hours of research I had already done prior to the stem cell transplant, something changed massively for me on this day. I finally got off the medical fence of ‘the disease is just one of those things’ to ‘perhaps I helped create this in the first place.’ I took responsibility and followed the protocol I was given with every detail which consisted of a raw diet of living plants and vegetable, taking supplements and eliminating toxins from my body through colonic hydrotherapy, infrared saunas, oil pulling, body brushing and other detoxifying protocols. I looked for other people that lived a similar lifestyle and found health educators based in the UK that had been trained by the Hippocrates Health Institute in Florida. I

was determined to go and experience their three week Life Transformation Programme but wasn’t allowed to leave the country. Unfortunately, I hit another roadblock. The extra dose of my brother’s cells were now fighting inside my body and I had a severe case of graft versus host. I was man down and admitted myself back into The Christie Hospital. It was during this period I was feeling my most vulnerable as a cancer patient, husband, father and provider for the household. I had left my business, we had no income, and our savings were running out. We had just had the estate agent out to come and value our property. Lying on the sofa late one night completely paralysed by the worry and fear about what could be around the corner, I thought that perhaps my life insurance covered me for something other than death. In desperation, I got the insurance folder out and realised that my policies covered me for death and terminal illness. I had to wait a whole week for my consultant oncologist to return from holiday to tell me. Four months earlier I had refused to be told the revised prognosis, but today I was asking for it. I refused initially so I could put all my energy into healing and recovery without the seed of doubt that this could be the end. Claiming my own life insurance was one of the most challenging processes I had to go through; verbally having to answer

questionnaires and interviews from the insurance companies. The three insurance companies were all fantastic in the way they dealt with our claims. In October 2016, I was finally well enough to head to Florida and immerse myself in their three week Life Transformation Programme. This for me was another game-changing moment when I realised that the healing journey I was on was so much more than just a physical journey, it was a mental, emotional and spiritual healing journey too. Returning to the UK for Christmas I believed I was on the home straight having had two all clear bone marrow biopsies and was ready for the next phase of my life. Little did I know what was around the corner. It was this speed bump that really tested my resilience. In February 2017 I had my routine

“I am now a professional speaker sharing my story to help be a shining light for others on their healing journey” bone marrow biopsy. The result was not all clear, it was positive on the outer range. When you have a blood cancer they can only test a sample of cells down to an accuracy of 1:10,000 cells. This is amazing but frustrating as it means they can detect the tumour cell, but can’t quantify it as it is too small a number. Given that I was a relapse case, there was a big concern that it was the disease popping its head up and was on its way back. The options I was given was; one, do nothing or, two, head back into hospital for another round of treatment meaning I would be on IV chemotherapy in isolation for another month. I decided to take a second opinion from a haematology oncologist based in Florida. The protocol he was recommended was considered quackery by my UK consultant a potential waste of money. Torn trying to decide which way to turn, a huge investment focussed on boosting my immune system back in Florida, or another month in isolation. After another two painful bone marrow biopsies in March and April, I finally decided to head back to Florida. Whilst I have total admiration for the work that my doctor in
Florida did, I am more convinced that the time I got to spend healing mentally, emotionally and spiritually has had the biggest impact on my healing journey. One of the founding principles that I have carried forward is that our mind leads and the body follows. You have to have the imagination and belief that health is on its way. The more research and personal work I do, the more convinced I am that it is actually that change in our consciousness that can explain how spontaneous remissions occur. Spontaneous remissions are unexpected recoveries that happen and can’t be explained by medical science. Four years later, I am now a professional speaker sharing my story to help be a shining light for others on their healing journey. I am a co-owner of a local fitness business in North Wales and mentoring entrepreneurs with my Mastermind Community. I am currently training for an Iron Man in 2021 supporting a campaign 10000donors.com to raise awareness for people to get themselves on the stem cell registers to help save lives. The Cheshire Magazine’s resident vet James Dutfield, advises on how to choose the right puppy for your home
Firstly, always consider if your lifestyle is appropriate. Dogs are social animals and require regular exercise. If they are home alone for most of the day, this will invariably lead to behavioural issues, so make sure there are provisions in place to keep your dog company, such as doggy daycare or dog walkers. Remember, pedigree dogs are usually bred for a purpose. If you deny these dogs the ability to express their inherent instincts, this can create behavioural problems. Some pedigrees can come with (potentially expensive) inbred health issues too, so maybe consider an appropriate cross? Crossbreeds have a mixture of genetics which is meant to lead to a healthier dog, with recessive damaging genes being diluted. Many rescue dogs are crying out for a home, so check out your local shelter and see if you could provide a forever home. If you do decide on a pedigree, I would always suggest choosing a kennel club registered breeder www.thekennelclub.org.uk. Do not to collect a puppy from a meeting point or buy one outside of its home environment. Unscrupulous breeders or puppy farms will often arrange a meeting point to avoid you seeing how they are reared. The best family pets come from home-bred dogs, as the puppies will already be used to all the sights, smells and sounds of a home environment. Check if your puppy has had its first vaccinations, been vet checked and has been treated against fleas and worms. All puppies sold at eight weeks old are required by law to be chipped by the breeder. These are a few tips I have picked up over the years when picking a pup suitable for a typical family environment. • Get in amongst the puppies, watch how they behave around you. • Think twice about selecting the ones that run over and start scrambling all over you or who are excessively vocal; these maybe overly confident and could be a handful in future years. • Avoid the overly shy or scared puppy at the back of the pen as these may be timid, sensitive dogs not suitable for a family. • Choose the one that looks interested in you, but then sits or lies down near or next to you these often make the perfect companion, calm confident with a healthy energy level. Most of all, enjoy your new pet, lavish with plenty of attention and guidance just as you would a new baby. Next month we will discuss routine care of your pet during the first 12 months of life.

Dakota Manchester has revealed plans for an extensive refurbishment of its waterside terrace, to be unveiled in Spring 2020. Yu Alderley Edge unveils new casual dining concept with brand new menu. Multi-award-winning Cheshire restaurant Yu Alderley Edge, have redesigned their popular menu to incorporate smaller plates for a “Chinese tapas” inspired dining experience. This comes about as owners Victor and Vinny Yu announce their plans to make their Chinese food more accessible to customers with a unique casual, fine-dining atmosphere. Best for... Robust grilled meat and fish dishes with a creative spin

et in an 18th-century manor house, DoubleTree by Hilton Chester hotel is a hidden gem handily located within a fiveminute drive from Chester Zoo. Situated in 12 acres of landscaped grounds, DoubleTree offers contemporary accommodation which beautifully combines the past and present. The Manor House and Hall are accompanied by a 19th Century, Grade II listed conservatory, a beautiful glass oasis. We dined at ‘the godfather of modern cooking’ Marco Pierre White’s Steakhouse which is located within the luxurious hotel. On arrival we were greeted by friendly staff and seated within the restaurant which boasts a comfortable and intimate atmosphere. For starters I opted for Mr White’s Scotch Egg with a Colonel Mustard sauce, which I was informed Marco himself singles out as one of his favourite dishes. My dining partner chose the delicious Baked Camembert Fondue which came with roasted vine tomatoes, a warm baked sourdough, vintage balsamico and a quality olive oil. The camembert was small but just the right size for a starter with the
sourdough (rather than normal bread) a big plus. Moving on to mains, I adapted a “when in Rome” mentality and ordered their signature Fillet of Beef à l'Escargot. It was a decentsized fillet perfectly browned on the outside with a narrow, perfectly pink and moist, blood-red centre served with tasty roasting juices. Accompanying the steak I also had triple cooked chips with woodland mushrooms, garlic butter, and buttered leaf spinach. My partner opted for the melt-in-your-mouth Roast Chicken à la Forestiere. Both dishes were quickly devoured. Having filled up on previous courses we left a little time before ordering dessert and
we were glad we did. I demolished the Baked Vanilla Cheesecake (which came with a fresh blueberry sauce) whilst my partner had the Strawberries and Cream, Vanilla Panna Cotta. We had a dedicated waitress throughout the evening who was knowledgeable and incredibly helpful, offering options and pairing wines with each dish. As I looked around the restaurant, I could see a table with a family, a couple who were out on a date and also a group of ladies who had enjoyed a day at the spa together which perfectly illustrates the diversity of the customers. Marco Pierre White Steakhouse Bar & Grill Chester is a nice alternative hotel restaurant suitable for families, groups of friends or for a romantic night away. INGREDIENTS For the Caramelised Puff Pastry: 1k all butter puff pastry 200g icing sugar For the Raspberry Gel: 200g raspberry puree (frozen is fine) 1 tbsp caster sugar Juice of ½ lemon 2g Agar For the Vanilla Chantilly: 300g double cream 30g icing sugar 1 tsp vanilla seeds (or 1 fresh vanilla pod) To Serve… 40 fresh raspberries Icing sugar to dredge
METHOD
Caramelised puff pastry, fresh raspberries and vanilla cream
For the Caramelised Puff Pastry: Split the pastry into 2 x 500g pieces, roll out using the icing sugar until about ½ an inch thick. Put the 2 sheets of pastry onto lined heavy baking trays, dust again with icing sugar and cook at 170°c for 8 minutes. Remove from the oven, turn over the pastry and cook for a further 7 minutes. Check the pastry is fully cooked and golden brown, cover the top of the pastry with greaseproof, stack the two trays on top of each other, cover with a third tray and use a heavy weight to press. Whilst still hot, cut the pastry into 12 discs using a 9cm plastic pastry cutter, allow to cool and place the discs in an airtight container until needed.

Serves: 4 people
For the Raspberry Gel: Mix the raspberry puree, sugar and agar in a thick bottomed pan, gently bring to the boil whilst stirring. Allow to boil for a minute then pass through a sieve into a container. Leave to cool until it forms a hard jelly-like substance. Place in a food processor with lemon juice and blend to a smooth thick puree, pass again and place in a plastic bottle. For the Vanilla Chantilly: Mix cream, vanilla, and sugar together and whisk until stiff peaks and place in a piping bag. To Serve… Lay out 8 of the discs on a clean surface, place a neat blob of the raspberry gel in the middle of each disc, arrange 5 raspberries around the edge of the pastry then fill in the gaps with the vanilla cream. Gently stack 2 discs on top of each other and top with another disc. On your serving plate put a small blob of gel in the middle and put your stack on top, dredge with icing sugar and serve.

New for this year, the Thalassa Spa at Anassa has introduced the innovative fat reduction programme CoolSculpting for guests, overseen by Dr. Michael Prager from the Prager clinic in London’s exclusive Chelsea. The non-invasive technology uses controlled cooling (Crypolipolysis) to target and kill fat cells; once the fat cells are treated they are gone for good. This can be used on a number of problem areas to get rid of unnecessary fat – with results of up to 25% reduction after one session although a few sessions may be required to reach desired results. ISLAND Matthew Roper travels to the Carribean island of Nevis to discover its rich history and luxury offerings
T
ranquil beauty, stunning hikes, delectable island cuisine, volcanic springs, long white sandy beaches and lots of sunshine: The small mountain Caribbean Island of Nevis was the birthplace of America’s founding father, Alexander Hamilton. The opening lines of the multi award-winning musical of the same name calls this idyllic island the forgotten spot in the Caribbean but when you visit this tropical oasis you definitely won’t forget it. The island is in the northern part of the West Indies, close to St. Kitts where we flew with British Airways direct flight from Gatwick. Now, I’ve flown with quite a few airlines but have to admit that the new BA world traveller plus offering is worth those extra few pounds. The plane was full when we travelled so those few extra inches across all directions made the 10 hour flight much more comfortable and I have to say the food and service was flawless. Nevis is pretty easy to get to when you land, generally a quick 7 minute water taxi across from St. Kitts and you get to see the island as you approach for all its splendour. It’s also full of spectacular sites which are dominated by the 3,233ft Nevis peak which is an intensely green sight. I’m told the locals refer to this as the “old man” as when the clouds drop over the peak they almost
look like an old man’s hat. The exquisite capital of Nevis, Charlestown, sits on the western side of the island where Georgian buildings stand side by side an old courthouse, a sombre reminder of the days of slave trading. Those memories have now gone and The Nevisians (and the regular visitors who love this island) are more than happy to keep their paradise off the radar, it’s almost like an insiders secret. Tourism does drive the local economy and the 196-room Four Seasons, which opened in 1991

really put Nevis on the tourism map. It is the biggest hotel on the island and still employs a great deal of the population. We were fortunate to stay in one of their three-bedroom villas which were something out of a dream. Spread across a sprawling 3,000sqft with floor-to-ceiling windows in the living room overlooking your own private pool the view was dominated by the beauty of Nevis Peak in the horizon. Each villa gets given its own buggy to explore the sprawling estate and when you explore on your own and drive up through the resorts golf courses, you stumble on some of the most stunning $15 million villas with breathtaking views across the ocean below. You can really see why this is the playground of the rich and famous who love this island for its anonymity and splendour. We ate in the Four Seasons restaurant Mangos and made use of their splendid spa and gym facilities. Like you would expect from this stunning five-star resort, they never cease to amaze and deliver with their impeccable service and standards. If you do stay there you must book a Botanic Tour with Makie Frances who has been at the resort since it started in 1991. His knowledge, dedication and love of showing the sustainability of the island through its plant life, makes you understand why everyone looks so healthy and happy here on this island. If five-star luxury with all the trimmings is not what you want when you explore a Caribbean island and you want to sample a little piece of history and see the island for its pure beauty there really is an option for every

traveller. We also stayed at Nisbet Plantation Beach Resort a four-star property on the North West Coast of the island. When you arrive you really get a sense of the island’s history. The ancestral home of Fanny Nisbet the ever-faithful wife of Horatio Nelson. The original Great House dates back to 1778 and you get a real taste for the history when the island’s main economy was from sugar plantations. It’s a fabulous place to stay as it’s the only property on the island to have its own private beach. When you walk down The Avenue of the Palms from the Great House with the ocean in the distance you feel that wave of relaxation pass through your body. The property has a collection of 36 cottage style rooms each with space and privacy. Each private room on the ground level comes with its own veranda along with the convenience of hotel services like a concierge and twice-a-day housekeeping. a private pool, stunning bathrooms and if you’re up early loads of Vervet monkeys running around outside. The rooms have no TV’s which personally is perfect as the only soundtrack you should want is the sound of the waves or the wind through the palms.

Tempting as the beaches are, a visit to Nevis is all about exploring if you want to understand a little of the island’s history. You can’t miss Nevis Peak. The inactive volcano that dominates the island’s interior peeks above the skyline wherever you are on the island and is (literally) one of Nevis’s biggest attractions. You can hike to the top but it’s not for the faint-hearted. During the 17th and 18th century Nevis was largely driven by the abundance of sugar plantations that thrived on the island. At its peak, this island supported 99 sugar plantations and you can actually stay in one of the Old Sugar Mills at the Golden Rock Hotel. The current owners transformed the mill into a two-floored suite with views over the brightly coloured grounds. At the Montpelier hotel, which was favourite of Princess Diana and her young princes in the early day. The old mill has been turned into a private dining room, the windows perfectly framing a view of Nevis Peak. That’s not to say that all of the plantations have lost their original identity. The New River Estate is the last sugar plantation on the island (it stopped operating in 1958) and has now been preserved as a living museum. Eating out on this island is one of the splendours on a holiday you look forward to and boy did we try them all. Each place has its own unique story and splendour and a firm place on the map. There are many to mention from the Great House at Nisbett Plantation where the king prawns were divine to the more relaxed vibe of Chrishi Beach Club on Cade Bay, the ideal spot to have casual food and drinks on a snowy white beach. When you drive inland on the southern part of the island there is also a small Nevisian run restaurant shack called Passions which has grown over the years into a firm favourite of locals and travellers
and you really can’t visit this island without finding this little gem of a place. What makes Nevis truly special is that you can really choose the type of escape you want here. I sat alongside a couple from the UK on the plane who had been coming back to Nevis every year for many years and simply renting a property up in the hills to appreciate the island for its pure relaxing energy. The Caribbean has always been known for its charm and can-do spirit, the locals are always friendly and accommodating but there is something very different about Nevis where the Nevisians just love to have you on their little piece of paradise. For most travellers, it’s the atmosphere and energy that the island gives off that brings people back. There are no traditional all inclusive resorts or visits from the big cruise ships that can almost overwhelm other islands. In fact, there is a government restriction across the island where nothing can be built above the height of a palm tree and this just adds to its idyllic charm. Nevis has something for every discerning traveller. Explore the rich history, relax on the beach, hike, swim or cycle and finish with the taste of the best seafood and potent rum cocktails. The ultra-luxe Parklane, a Luxury Collection Resort & Spa, in Limassol, southern Cyprus is now a base for Rio Ferdinand’s Football Escapes camp which offers premier football coaching for kids aged between five and 15-years-old. Six times a year, Rio, or one of his team of ex-Premier League star coaches, runs a
five-day morning workshop for children of all abilities on the hotel’s two football pitches. Former Tottenham midfielder Jermaine Jenas will kick off proceedings in 2020 during the Easter school holidays in April. It’s a win-win situation, allowing parents the opportunity to switch off in absolute luxury while their kids are having a kick-about with one of their Premier League heroes. Having extensively travelled around the globe during his career as a professional footballer for Man Utd, England and now as a popular TV pundit, Rio knows what he wants on a break. And the Parklane, which sits on its own 100ft stretch of beach with the Troodos Mountains in the background, is now his go-to place, and not just for work. The hotel only opened in March 2019 and Rio is already lining up his third visit. Rio, who has also been a guest with his wife Kate and three kids Tate, Tia and Lorenz, continues: “Cyprus is such a top location, and the weather is good all year round. “The resort suits Football Escapes perfectly. It gives families beachfront access and world-class food. It has a spa, gym and an amazing kids area with an actual castle. Everything you need.” Teddy Sheringham, Michael Owen, Wes Brown and Dimitar Berbatov are among the big names who have so far taken part alongside a team of UEFA licensed coaches who also come from renowned English Premier League Clubs. One of

the children from 2019’s courses even landed a contract with his local team Watford FC after taking part. Rio continues: “We have had some really talented players on our courses and a few are now training in academies since being on Football Escapes courses. It’s also great to see more and more girls joining our courses too!” I visited with my husband James and our two young kids Ruby, 4 and Rocco, 1, who were unfortunately too young for the football (and we were too old!), however, we have plans to return for that in the coming years. Instead, we spent a large majority of our time at the spectacular 3,000 square meter Park Kidz adventure playground next door to the hotel’s sports complex which is also a hit with Rio’s kids. With a big pirate-themed splash park at the centre and a huge indoor play castle, there’s plenty to keep children from toddler to 12-years-old entertained. The staff are exceptional, offering the highest standards and varied activities such as t-shirt painting and pottery, plus an evening disco. If Rio’s not playing football, it’s likely you’ll find him chilling out in a robe. “The spa is unbelievable!” He says enthusiastically. “Myself and Kate went for a massage whilst the kids enjoyed the water-sports and kids club.” The Kalloni spa has a whopping fourteen indoor/outdoor thalassotherapy pools with an extensive and tempting treatment menu. However, if adventure’s more your thing the hotel’s on-site water sports centre offers paragliding, water-skiing and even bright pink flamingo pedalos that went down well with Ruby. There are also three large swimming pools located surrounded by palm trees within the manicured gardens, with one dedicated solely to adults. Whether it’s playing football, running around the kids club or chilling by the pool, you can be sure of
the highest quality accommodation to rest your weary head. From two-level three bedroom Park Suites with a private pool, to spectacular panoramic suites and more standardised bedrooms, the resort has offerings for all. The rooms are quite simply the best I’ve ever experienced with furnishings designed by Harrods Interiors. Given our lounge had nine different light settings I’m sure you can get the idea. We also had a bathroom with a cryotherapy option which can change the lighting to reflect your mood, high-tech electronic blackout shutters and curtains, and more bathroom products than you’ll find in Boots. The hotel – a former Le Meriden property – has been transformed over the last decade with a whopping £50 million makeover. The Russian owner, who used to be a guest before he decided to buy the hotel, has added many of his own personalised touches including a beautiful collection of lights hanging above The Gallery Bar which are modelled on iconic chandeliers from five of the world’s most eminent concert halls and theatres, a stunning colourful hanging masterpiece from the ceiling of the lobby in a nod to the vast array of local herbs grown and a wooden floor which has been imported from Africa and said to be the most comfortable you can buy. To be part of Marriott Bonvoy’s Luxury Collection, the resort must have unique ties to its location, including experiences and its own emblem. Each

member of staff has been hand-chosen for their role and have taken part in thorough training about the area and the ethos of the hotel before facing guests. “The guys at Parklane are brilliant”, Rio continues. “Their attention to detail and service is great. They are always on hand when you need them.” He’s not wrong. From the moment we stepped through the door we were handed a welcome drink of rose water and hibiscus and we were treated like film stars. The head concierge David is only one of two in Cyprus with the ‘Les Clefs d’Or’ (a top honour for concierges) and the other also works at the hotel. David took me for a complimentary ‘epicurean moment’ to the nearby Amathus ruins which was truly fascinating. Another offering is a masterclass showing guests how coffee was traditionally made using the heat of the sand. The resort has two distinct motifs which are woven through the hotel from the large floor markings at the hotel entrance to the small stitching on the mirrors in the bedrooms. The elegant Lefkara is a pattern in honour of the lace-making traditions of Cyprus which stretches back to the 16th century where Leonardo Da Vinci bought himself an embroidered tablecloth. A two-handed jug amphora symbol also features throughout the hotel in a nod to a 4,000-year-old perfume factory, believed to be the oldest in the world, which was amazingly discovered nearby in Pyrgos village during an historic 2003 archaeological dig. A perfume called Avra has now been specifically made for Parklane guests. The hotel has seven different dining options,
from traditional Cypriot delights at Daphne, to a grand buffet at Lanes, to sushi and live music in The Gallery Bar, steak at The Grill and Italian delights at ll Teatro. While Rio singles out The Grill as his favourite with ‘one of the best rib-eye steaks I’ve ever eaten’ we sadly didn’t get to try that as our children were too young (only 10+ are allowed). Al fresco trattoria ll Teatro was our pick of the bunch with its glorious pizzas and wines and a backdrop of the sea. Daphne had a delicious menu of meats and salad with the best Baklava I’ve ever eaten. Our children enjoyed walking around the little water features and up and down the restaurant ramps and all staff were very accommodating, friendly and relaxed in us letting our kids roam and enjoy themselves. In addition to families, the hotel hosts large events and attracts business people with its state-of-the-art conference facilities. There is nearly 2,000 square footage of meeting space with Swarovski-encrusted chandeliers and the ability to hang six Roll Royces on the ceiling! Rio and his star Football Escapes coaches aren’t the only sporting elite to visit in the hotel’s opening year. Former England and Manchester City goalkeeper Joe Hart picked the hotel for an October break with his two kids and Greek tennis sensation Stefanos Tsitsipas enjoyed a ten day end-of-season break at the hotel after winning the ATP Tour Finals in London in November. Former Wimbledon semi-finalist Marcos Baghdatis is also a regular visitor with his family. Marcos, who lives nearby says: “I come to the hotel most weekends with my family to relax. The facilities are excellent and we know we will be looked after. The kids club is amazing and my girls love being in there. It gives us the chance to relax. I like to chill.” Don’t we all. B
eing a super short flight of just 1 hour 50 from Manchester to Geneva, the Alps are an easy destination to reach for a short break away when the snow calls. After our super Skiidy Gonzales transfer from Geneva (taking just over an hour) to the foot of the Alps, we arrive into picturesque Morzine village, which is set at a lowly altitude of just 1,000m. Surrounded by undulating summer pastures that become pleasantly rolling, mainly intermediate slopes in winter. The resort’s low altitude means pistes are not always open down to the village, so booking an early or late-season holiday here can be risky. Morzine is a beautiful alpine village at the heart of the Portes du Soleil region, offering visitors an authentic mountain experience. With
access to 650 km of slopes, 293 snow-filled pistes spread across 12 villages in France and Switzerland, with 200 lifts spread over 14 valleys and 400 sq miles, the vast Portes du Soleil area offers near-limitless skiing for all levels. Morzine’s local pistes are on both sides of the valley – on one side is terrain shared with Les Gets and topped-off by the Pointe d’Angolon (2080m), while on the other is Super Morzine and the remainder, the more significant part, in fact – of Portes du Soleil. Both sides of the valley benefit from rapid gondola access to the high altitude pistes. As you’ll discover, it’s hard to convey on a piste map just how big the combined ski area is, although getting around is getting steadily easier each year we visit as lifts are upgraded. Skiing from Morzine not only brings rapid access to Les Gets but also to Avoriaz, beyond which lie the respective delights of Les Crosets, Champéry, Champoussin and Morgins in the Swiss sector. Our accommodation for the four nights was

the Crows Nest by More Mountain, a stunning state-of-the-art luxury chalet situated in a prime location on the Rue du Bourg in the heart of Morzine. On arrival, we were greeted by our fabulous hosts, Evie and Seb, who plied us not so weary travellers with the most immense charcuterie board of meat and starch-based goodies I’ve ever seen. On the subject of food, Morzine boasts a rich history, heritage, traditional architecture, and an excellent gastronomic scene, Morzine has all the ingredients for the perfect winter holiday for skiers and boarders alike. As we had flown in the late afternoon, it was starting to get dark, so we headed downstairs, yes downstairs! The chalet is situated on a hill overlooking picture postcard Morzine, so the living quarters consisted of two spacious and comfortable lounges. One of which is designed for lounging by the fire for pre-dinner drinks, the other is a modern high-tech cinema room with Apple TV, Netflix, Bose sound deck and a mega flatscreen TV. Our bedroom was vast, plenty of room to store all of our equipment, although no need to bring boots and helmets inside, these stay outside in the custom-built heated kit room complete with high tech boot dryer/warmer. Our bedroom offered cutting-edge modern design, with a wonderfully cosy, retreat-like feel. The whole chalet features free Wi-Fi, and Bose Bluetooth Sound Docks can be found in every room. To our surprise, we found the hot-tub, inside, which made the jump from robe to water easier than usual. The room which housed the hot-tub had huge sliding doors which could be pushed back, revealing the stunning nightscape across twinkly Morzine to the blackened snow-covered pistes in the distance, making it feel like you were outside.

More Mountain chalets are also dog-friendly, where dogs are VIP guests and offered a bag of food, a coat, a soft bed and toys (in partnership with Mutts & Hounds) making this a potential holiday for both dog and master. Our fabulous Chalet hosts were super friendly, very informative about what to do and where to go and how to get the best out of your winter break. To top it off, Evie and Seb were on fire in the kitchen, not literally of course. The food offered by our hosts was a perfect three courses of restaurant-quality food, plus the option of a cheese board each evening was the ideal end to a funfilled day on the slopes. Though we only managed the cheese course once! My highlight of the food was the greenest, freshest, crushed pea, and mint soup served with fresh warm bread and french butter, absolutely sublime! I seem to remember having two bowls that evening. There is something about the mountain air that helps you sleep so soundly. After waking from my deep muscle-tired-slumber on our third day, a hot, powerful shower later, we were ready for what the day had to throw at us. Before heading off, we charged our batteries on fresh-from-the-oven croissants accompanied by honey and granola and all washed down with strong sweet coffee. The Swiss Wall awaits us. Our hosts kindly arranged daily transport to any of the local gondolas saving

us the walk through town with our kit, a wonderfully useful personal touch! As we are transported through Morzine, our fabulous hosts fill us in on some local info. As well as being an excellent base for families, Morzine has a lively après scene with plenty of bars. For those who enjoy off-slope activity, or are not so dedicated to full days on the slopes there’s a reasonable amount of other activities to fill the hours. These include ice-diving beneath a lake, nature discovery tours, snowmobiling, tobogganing, snowshoeing and shopping. There’s also a world-class ice rink and a large swimming pool. Who knew? The SuperMorzine gondola is tucked away in a side-street across from the Tourist Office and gives more impressive bird’s-eye views of the village and the valley on the rapid haul up the mountain. At the top is a large restaurant, but we continue onwards transferring to the Zore chairlift before things become too crowded with the morning’s skiers. We ski onward to ride the Séraussaix chair,
then the Proclou chair which offers stunning views across the La Chapelle snowpark to high-rise Avoriaz perched on its dramatic escarpment high above looking like a Bond villains lair. After hanging out on the lifts the prospect of a spiked coffee on a sun terrace while watching the world ski by is irresistible, so we take a break before continuing onto Mossettes. We are whisked rapidly to the 2,262m summit, where we are greeted by the fantastic panoramic views we’ve been expecting. The scenery in all directions is dazzling, and from here it takes just a few minutes to drop in on the Portes du Soleil’s Swiss sectors around Les Crosets, Champéry, Champousin, and Morgins. From here it’s all downhill back to the chalet, a red-graded run down Chamois we emerge from the trees and find ourselves confronted unexpectedly with a passerelle (a snow-covered footbridge) across a deep gorge. Once across we join the fast-rising numbers of other skiers heading back to Morzine village snapping out of our bindings with the satisfaction that we’ve not only covered a lot of mileage but also accumulated a very respectable vertical drop. We will be sure to return to Morzine; we will undoubtedly be making arrangements to stay in another More Mountain chalet, as the hosting service and accommodation have both been fantastic! LIVE AND LET FLY Bond’s carmaker of choice has branched out into helicopters, reaching new heights in the process

hen you think of helicopters, two names that probably won’t come to mind are Airbus – the maker of the A380 ‘super-jumbo’ – and Aston Martin, a firm that makes sports cars for one Commander James Bond, among others. Nevertheless, these two firms have collaborated to create something that brings “a new level of aesthetics and rigorous attention to detail” to the helicopter market. You see, Airbus Corporate Helicopters is Airbus’ imaginatively named sideline in helicopters, and it’s that firm’s ACH130 model that has had the Aston Martin treatment. The British carmaker has provided buyers with a choice of four

interior and exterior designs, which it says will “delight helicopter owners and pilots”. That means the new chopper comes with a choice of Aston Martin paint options, including Stirling Green and Skyfall Silver. Inside, meanwhile, the cabin is trimmed in Pure Black ultra-suede, with a choice of Aston Martin leather upholstery colours. Aston Martin badges are scattered around the cabin, too. And the helicopter has the performance to make it worthy of the Aston Martin name. CAR ROYALE Few nations are as well-versed in the art of luxury as Italy, and there aren’t many Italian companies that have mastered that art as well as Maserati. For more than 100 years, the company from Bologna has been building classy sports saloons, and this is the latest iteration. Despite being built in a country that hasn’t had a monarchy since 1946, it’s called the Quattroporte Royale, and just a handful will be made. Customers get a choice of two lustrous colours — green or blue — and a choice of brown or black interiors. Both get woven leather textile panels in the seats, a Bowers and Wilkins sound system and an electric sunroof. SPORTY UTILITY VEHICLE Porsche’s SUVs are, without wishing to be too gushing, brilliant. Somehow, the German company has managed to imbue its high-riding, practical off-roaders with the sports car DNA that made its coupes and convertibles so special. And now the engineers have set about making the smallest SUV, the Macan, even better. The new GTS model is designed simply to go fast, with a 375bhp V6 petrol engine and lowered suspension that makes it better through the corners. Since its reincarnation at the turn of the century, Mini has been no stranger to a special edition, but this new Sidewalk Edition is the latest to hit the road. We gave James Fossdyke the arduous task of finding out whether the Ferrari Portofino is more than just a pretty face?
T
hey say beauty is in the eye of the beholder, but researchers claim there could be science behind attractiveness. Apparently, 1:1.618 is the so-called ‘Golden Ratio’, from which you can draw an almost universally gorgeous visage. The bloke who discovered this was a plastic surgeon, and he wanted to use it to perfect his creations. Whether it worked for him I don’t know — I haven’t seen his handiwork or his accounts — but there’s something ironically appealing about a rationale for beauty. Presumably, then, there’s someone in the automotive industry being paid millions to find a similar ‘Golden Ratio’ for cars. And I can only assume he or she works for Ferrari because the famous Italian manufacturer has cracked it. Yep, Ferrari has made the most beautiful car on sale today. It’s called the Portofino, and walking around it feels almost voyeuristic. It’s like you’ve accidentally glimpsed your favourite supermodel in their underwear and you can’t stop looking — even though part of you is questioning the wisdom of such an activity. There’s something about the long nose, the demure smile of the front grille and that simple, pure rear end… It’s gorgeous. But before I get too carried away with the looks, let me explain what the Portofino is. Or more to the point, what it isn’t. You see, Ferraris are traditionally at their best on race tracks, where you can open up the taps and experience the poise spawned by generations of racing triumphs. But while the Portofino still displays some of that ability, it’s much more of a road car, designed to whisk you around at high speed without sacrificing style and comfort. As such, the Portofino has back seats, a folding metal roof and an engine that sits in front of the driver, rather than somewhere behind their left ear. So when I finally drew up the courage to touch it, I opened the boot and dumped my bag in a space more than big enough for weekend luggage. And if I had run out of room, I’d have found that the tiny rear seats make a surprisingly capacious parcel shelf, which is probably their best use, because while kids might fit in there given a bit of persuasion, fully-grown adults will not.
Once I’d packed my bags, I slid the beautifully engineered driving seat back into place, settling into a high-tech cockpit of exposed carbon fibre, digital screens and complicated-looking buttons. And the cockpit is precisely the right word because it feels nothing like a road-legal sports car, but a proper racing machine. Sure, having half the buttons (including the indicators) on the steering wheel might take a bit of getting used to, but it certainly adds a sense of occasion. Not that you need much more of that when the prancing horse is looking right back at you. Anyway, leaving the bright red ignition key buried in the pocket of my Levi’s, I stood on the aluminium brake pedal, stabbed the big scarlet button on the wheel and jumped out of my skin. The 3.9-litre V8 doesn’t rumble into life; it barks like a Doberman that’s taken exception to the postman. And once it’s settled to idle, it growls as though it’s fed up with being trapped in the front of a six-figure supercar. Because I’m a child at heart, there’s something about the noise of a highperformance engine that makes me swoon, so with the rain temporarily banished, I lowered the roof. Unlike supercars of old, there’s no need to employ a troop of boy scouts here; just push a little button, and you’re suddenly left with all the headroom in the world. That doesn’t just expose you to the mercy of the elements, but to a lot of stares. One chap on the M6 just gaped, wide-eyed, as I cruised past. I’m fortunate to have driven my fair share of supercars over the years, but few have attracted so much positive attention as the Portofino. If you can name it, I’ve been called rude words in it, but people love the drop-top Ferrari. Some go as far as stepping out into the road to get a better picture, even in towns where supercars are ten a penny.

But while everyone in town loved the Portofino, I was less enamoured with driving it through town. It’s wide, it’s low, and when you’ve just been told the optional alloy wheels cost nearly £10,000, you quickly become nervous around kerbs. But despite my skittishness, the car actually coped quite well. Visibility is decent — especially with the roof down — and the nose is far enough from the ground to deal with most, although not all, undulations. The suspension is impressive, too, soaking up the jolts when one of those huge alloys disappears down a cavernous pothole. Once you’re out of the urban sprawl, though, the Portofino really comes good. On the motorway it’s soft and comfortable, only getting intrusively noisy when you prod the accelerator and unleash a few of the 592bhp on board. Its home territory, however, is a flowing A-road laced with fast bends, and when you get there, the whole car comes alive. Twiddling a switch on the steering wheel to ‘Sport’ makes the car go into what I call ‘no more Mr Nice Guy’ mode, and you enter driving Nirvana. With the roof still stashed in its hidey-hole in the boot, the noise of that scintillating V8 reverberates off walls and crash barriers, howling as the engine revolutions build. Each gear change is heralded by a crackle of petrol-fuelled gunfire from the exhaust, and overly judicious application of the throttle can result in a small tailslide,

particularly when the road is still damp. But that’s fine because the steering is faultless. It’s lighter than you expect and it’s unerringly precise, which helps to keep the car on the straight and narrow. And good God it’s fast. Official figures suggest other Ferraris are faster, but I can assure you that 199mph and 0-62mph in 3.5 seconds is plenty quick enough. I found that acceleration especially useful, not to mention enormously enjoyable, on motorway slip roads. But the performance is not the thing I love most about the Portofino. No, I love its usability. Supercars have traditionally been uncomfortable, cramped and noisy, with creature comforts sacrificed in pursuit of lap records and other things that don’t really matter on the M56. # 1 DECLUTTER BEFORE SPLASHING OUT ON STORAGE Daily duties can leave little time for regular clearouts and before you know it you’ve accumulated far too much clutter than is comfortable. But before splashing out on new storage, have a clear out. When decluttering, experts suggest applying an 80/20 rule in that, in theory, most of us only need 20 per cent of what we own. So, weed out the paperwork piles, turnout the tops of cupboards and dig around the back of the wardrobe to get rid of clothes, bags and shoes you no longer wear or need.

PHILIP PALMER, LAND DIRECTOR FOR ELAN HOMES IN THE NORTH
How would you describe yourself ? I live in Hoole, affectionately known locally as Notting Hoole or the Notting Hill of Chester, with my beautiful wife and children. We’re an active family and weekends are very much centred around our two boys, aged seven and four. As a family we enjoy exploring Cheshire and North Wales, going on country walks and having meals out together. I’m a keen sportsman and avid Liverpool FC fan. I regularly play five-a-side and, when time allows, golf. I have a tidy 17 handicap and would love to play more often – I’m known to be useful in Stableford competitions. Who are your greatest influences? My family, particularly my two elder brothers who are very much ‘yin and yang’ with me having a more balanced personality. Also, my uncle, who was a local house builder in the Formby and Southport area where I grew up. Being on building sites at a young age, in part, inspired my career path. What have been some of your best jobs/experiences at work and why? I’ve been privileged to work with some great north west businesses, learning from my superiors along the way. An old adage in business generally is that ‘you are only as good as your last deal’. My last deal was pretty significant
for Elan Homes – the acquisition of the former Philips Electronics factory in Southport for a scheme for 157 homes providing a broad product mix from two-bedroom first time buyer units through to mid-sized four-bedroom detached family homes. It’s a true statement of intent in the market place and one that sets the foundations for the growth ambitions for the business. Traditional vs contemporary style? I like to combine traditional historic roots with a touch of contemporary style. What would you consider your greatest achievement? Aside from being a husband and father, my greatest achievement to date is maintaining gainful employment during the 2008 recession. During a period of economic uncertainty, I remained positive and flexible towards the market dynamics, developing a strong reputation for due diligence and a well rounded approach to development opportunities.
