What did you want to be when you were younger? A high school teacher as I enjoyed school so much! Name a few of your favourite places to be... Higher With more people than ever flying privately, Craig Hough sits down with Falcona Private Jets owner and former Manchester City forward Adie Mike to discuss his thriving business
Tell us a little about the company and your role... I decided to set up the company in 2011 after I completed a law degree. I knew someone who was looking after private jet charter flights for a few football players. The owner of that business decided not to continue so I decided to go on my own. Having a background in professional football some of my early clients were Premier League players, then the business started to grow from there. After a couple of years, I moved offices to the private jet terminal at Manchester Airport, which allows me to personally oversee each flight from Manchester.

The majority of our clients are business owners,

What are some of the locations you to travel? Most of our destinations are in Europe. During the summer months many private jet travellers fly off to Mallorca or Ibiza as many clients have second homes there. Other popular summer destinations include Faro, Nice and Mykonos. Business flights tend to be to Geneva, Amsterdam and Munich and these are all year round. I would say 65 per cent of our flights are for business. I have noticed that more clients are attending big football matches, especially Manchester United and Manchester City, whether it’s in the Premier League or Champions League. This year we

self-made entrepreneurs and large corporations who need to fly employees to meetings or shows. We also fly Premier League footballers, who either want to go on holiday, visit family back home or are attending commercial activities with their sponsors. What are the main benefits that you offer to clients who want to fly by private jet? The main benefit is time. Clients can arrive just 20 minutes prior to departure, without the hassle of queues and security lines. They travel in a private and secure environment, which is ideal if you’re travelling for business. No prying eyes. You can get more work done and be more productive en route to meetings. More of our clients are travelling with their pets as it’s a stress-free way for the owner and the pet to travel. We source pet-friendly aircraft from our database for charter flights. We also recently did a flight from Manchester to Bristol to pick up another passenger, then went on to Ibiza, so it’s possible to include a stop on the way to your final destination. What airports do you fly from/to? Private jets can access over 1,000 airports just in Europe, as they’re able to use smaller airports with shorter runways which commercial aircraft can’t. For those of us who have yet to fly privately, what is the etiquette? At most airports, you can drive right up to the plane and board your aircraft. Dancing on Ice winner and Reality TV finalist Jake Quickenden talks to Craig Hough about his career and upcoming, stripped-back performance at The ABode Chester You have recently made your musical theatre debut performing in Hair. What made you take up the challenge of musical theatre and how does it differ from anything else you’ve done? I just like testing myself, I don’t like doing the same thing. It’s great that I can always go back to music and acting, after doing reality TV. For me it’s all about that test, to see if I can actually do it and succeed without the years of training. At the end of the day, the people who I’m working with are so talented and go to schools through years of training and I come in with no training and have to work extra hard to prove myself to these people. It’s gone really well, it’s been a lot harder than I thought it would be I’m not going to lie, I thought it would be easier. Like Dancing on Ice, it’s been really hard work but it has been a challenge that I’ve really enjoyed.
You play George Berger in Hair, how would you describe him? He’s an absolute lunatic. When I went to the audition I was just chatting rubbish like I usually do, and they were like it’s good that you’re already in character. He’s a bit of a loose cannon and the leader of the tribe. He’s scared of the tribe breaking up and just wants to be young and have fun. Pretty much the same as me.
What’s the story of Hair? We play a group of hippies who love getting high but have been drafted into the Vietnam war and Claude (played by Paul Wilkins) is torn between staying with our tribe or going to war. That’s the pretty much the plot. There’s plenty more to see, including my naked scene. I’m pretty much in a thong for the whole thing, which weirdly I don’t actually mind.

Switching gears slightly. Your career really kicked off after appearing on X-Factor. How was that experience for you starting out as a lad from Scunthorpe that played football to appearing on one of the UK’s biggest TV shows? I think when you go for a show like X-Factor you don’t think about how many people are watching, you just think about the fact it’s a talent contest. I never expected to go as far as I did, so every round I was getting through I was thinking “this is funny”. From the audition to performing in front of millions of people - it’s pretty daunting, especially as I wouldn’t class myself as a singer. Singing was just something I enjoyed doing. As you said, I played football before, the music was never really there for me, I just always enjoyed it. Without the X-Factor I wouldn’t be where I am today so I’m super grateful for the experience. I know they’re doing an All Stars series, so Simon if you’re listening I’m ready to come back. I’m all about the challenge and feel I’d be better this time as I’d know what I’d want to do and the type of music I’d like to sing. I’d like to go on and prove to all the people who didn’t think I was any good that I can actually sing. You were runner-up on another of ITV’s main shows I’m a Celebrity. Looking back, how much of a challenge was that for you? What were the highs and lows? If I’m totally honest, I didn’t find it hard at all. In fact, I found it quite easy. I literally just lay in a hammock, it was so chilled. Obviously, we had the trials, but again, I enjoy the challenge, it’s like something else takes over me and I just want to win. The scariest thing for me was going in

and seeing all these celebrities and there’s me from the X-Factor sat there thinking “this is mad”. I just really enjoyed the experience. You were crowned King of the Ice Rink on Dancing On Ice last year. What was going through your head as you were announced the winner? I thought thank God I’ve finally won a reality show. I’ve done that many I thought “I’ve got to win this one”. It was nice because I knew how much work we’d put into it. We were never off the ice rink, we were always on there, eight hours a day messing around and trying new stuff. I wanted to do the headbanger in week two and my partner Vanessa was like “we’re not ready yet”. I just wanted to push myself. So when I finally got crowned it was like all the hard work played off. It was just nice to win, I’ve got that achievement for the rest of my life now. As this interview sits in our travel issue of the magazine, what is the most luxurious hotel destination you’ve stayed in? Obviously, the Versace hotel that I stayed in once I came out of I’m a Celebrity, it was stunning. I travel to Ibiza a lot with friends as I like a party holiday. Last year I went to Aberton

It’s going to just be me and my guitar. I think people will be surprised by my voice, stripped back. When I do these kinds of gigs, people are like “You’ve actually got a really good voice, I didn’t expect that”. I’ll do a few original tracks to show off my songwriting. It’ll be acoustic music which I love to listen to which will fit in perfectly into a lovely venue like the ABode. With the intimate setting, I’m hoping guests will get to know me a little better, it’ll be more personal and better than a larger gig. It’s the kind of gig I like doing. A Confession Natalie Anglesey talks telly and family with Imelda Staunton, CBE
“O
h it’s you!” Imelda Staunton CBE, one of our best-loved actors, grins with delight, leaping up to greet me warmly in London’s impressive ITV Centre. Small and slim, she exudes such an air of exuberance you can understand why she’s in demand for so many comedy roles. Although this time I’ve come to find out about her latest television drama series and reminisce about her incredible career. Considered the darling of stage, television and film, she possesses no airs and graces although her mantelpiece must be groaning with the number of awards she has won including an Oscar and a Golden Globe for her remarkable performance in the dramatic film Vera Drake. Her full name is Imelda Mary Philomena Bernadette Staunton so, as you may have guessed, she’s the daughter of Irish immigrants and learnt her work ethic from them. Indeed it was her working class background in London’s Archway which helped her play Vera Drake. ”That role was such a gift although it was harrowing,” Imelda recollects. “The director, Prestwich born Mike Leigh, starts with no script just weeks of improvisation before you have a script of sorts - really hard work - but so rewarding.” Imelda’s collection of awards include BAFTAs and a host of European and Olivier
Awards. Nominated for at least thirteen Oliviers she won individually for Guys and Dolls, The Corn Is Green, A Chorus of Disapproval, Into The Woods, Sweeney Todd, and most recently her acclaimed role as Mama Rose in Gypsy. How does this modest actress feel about winning so many awards? “In spite of what some actors may say, I think we all like to be recognised and it’s a way for the public and your peers to acknowledge your work. It’s also a good excuse to wear a posh frock,” she grins. “I was particularly proud of the OBE awarded by the Queen and the CBE awarded by Prince William. All he wanted to talk about was The Gruffalo - I had voiced the talking book version - so I presume he was either reading the story or listening to it with his children.” If you have any young people in your family they’ll no doubt reel off a list of Imelda’s films like Maleficent, Paddington, Nanny McPhee and, of course, two Harry Potter films as the dreaded Dolores Umbridge, who became Head of Hogwarts and nearly stole the show. “That woman may have been dressed in fluffy pink, but she

“I’ve been so lucky recently,” Imelda beams. “I’ve been doing a great deal of stage work where you have to act big so it was great to work again in television where you get to be up close to the camera lens. I’ve had the chance of appearing in a powerful new drama series for ITV. A Confession, is a thrilling six part series written by award-winning screenwriter, Jeff Pope (Little Boy Blue). I’m such a fan of his work that I said yes immediately as his script was so beautifully crafted. It wasn’t sensationalist - which it easily could have been. It wasn’t over emotional which again it could have been. It just hit the right note for me. That was before I even knew it was based on a true story! “ A Confession, is the true story of the disappearance of 22-year-old Sian O’Callaghan in 2011. On a night out with girlfriends, Sian left a nightclub in Swindon Old Town to walk the 15 minutes home to boyfriend Kevin Reape. Kevin reported Sian missing when she failed to appear

was so dangerous. She hated Muggles, wanted them all erased in favour of what she called pure-bloods and was sadistically cruel. When you think about it it was a form of ethnic cleansing with a smile! Quite terrifying but fun to play! “ Work wasn’t always as plentiful at the beginning of Imelda’s career. After training at the Royal Academy of Dramatic Art, she spent six years in repertory theatre in the 1970s before returning to London and the National Theatre. There she met her future husband Jim Carter who has also enjoyed a prolific career but is perhaps best known as Carter the beloved butler in Downton Abbey. At 6 feet 2 inches he towers over Imelda’s height of 5 feet. They married in 1983 and remain happily so while their daughter Bessie has followed them into the profession - although they rarely get the chance to work together.

Police met Sian’s mother, Elaine O’Callaghan, played by Siobhan Finneran (Cold Feet, The Moorside, Happy Valley), who thought her daughter may have stayed overnight with a girlfriend. Detective Superintendent Steve Fulcher, played by Martin Freeman (The Hobbit, Sherlock, Fargo), is in charge of the investigation and believing Sian is still alive, he puts her recovery first - breaching police procedure and protocol to catch a potential killer. “I play Karen Edwards,” Imelda explains. “She’s the mother of Becky Godden, a 20-year-old who disappeared a decade previously in 2003. Reminded of her own daughter’s disappearance, she’s afraid her own daughter may be involved. A known drug addict and prostitute, Becky had disappeared many times before and although Karen had tried to help her daughter, staging interventions and paying for rehabilitation, sadly Becky continued to lapse back into addiction.” Did you ever meet the real Karen I asked Imelda? “At first I didn’t want to because I didn’t know how I’d react. It’s so difficult when you‘re playing a real person. I didn’t want to upset her if I got it wrong or didn’t live up to her expectations. In the end I was glad I did because she was a revelation. It wasn’t so much what she said it was her pain and anger which just

overwhelmed me. I let her feelings wash over me and tried to harness them if I was to play her truthfully. Her daughter is still classed as missing not dead. I do hope she feels I did her justice. It was so hard to do because I have a daughter of my own and I know how I would have felt if anything happened to my child. It makes you realise how fortunate you are.” The drama series has an impressive list of credits. It will be executive produced by Jeff Pope (Little Boy Blue, writer and executive producer, The Moorside, executive producer, Cilla, writer and executive producer) for ITV Studios. When Imelda’s daughter, Bessie, first told her she wanted to act I wondered if she’d encouraged or discouraged her? “Encourage her of course it’s a wonderful life. My husband Jim, Bessie and our dog have all appeared in Elizabeth Gaskell’s Cranford. I played the village gossip Miss Pole but we had no scenes together. Bessie’s already made her first film and she’s joining the National Theatre. I sound just like her agent don’t I?” she hoots with laughter. Imelda is equally proud of her husband Jim. Earlier this year, he was awarded an OBE. “What he didn’t know was that I’d invited all his family and friends from his home town of Harrogate to come down as I’d organised a marvellous party for him to celebrate his investiture. We were all so thrilled for him.” What next for Imelda? “Well I did want to do a bit more telly because it’s less physically draining than being on stage every night. No matter how harrowing the scene is, once it’s filmed it’s gone and you can wipe the memory banks clean. You don’t have to take it home.” That wish has already come true as her next ITV drama series is called
Flesh and Blood with Francesca Annis, who also appeared in Cranford, Stephen Rea (War and Peace) and Russell Tovey (Years and Years). “I’ve also been lucky enough to appear in the new Julian Fellowes television series set in America, and I’m in the new film of Downton Abbey!” Imelda laughingly tells me about one particular scene in the long-awaited Downton film. “I only have a small role because as you know my husband Jim is one of the regulars as the butler. But there was one party scene where he was serving drinks and I was willing him to serve me with a drink so we could be in one scene together and do you know he deliberately avoided coming anywhere near me - can you believe it?” She dissolves into mock, outraged laughter. Before we part company, Imelda reminds me: “I’m really hoping viewers will watch A Confession because it’s a gripping thriller. Sadly there were repercussions for many concerned. Fulcher, who was in charge of the investigation at the time, suffered because he put the recovery of the kidnapped girl first rather than following the legal protocol at the time.” I for one am looking forward to seeing A Confession but perhaps the question we should all be asking ourselves is - what would we do in similar circumstances?

The general trend has been a shift from surgical to less invasive non-surgical treatments, especially in the face. Media coverage and celebrity culture is both influencing and raising awareness in the public, changing the attached stigma in the UK. WHAT ARE THE MOST POPULAR TREATMENTS/ PRODUCTS? Treatments that can condition the skin and improve pigmentation problems without trauma are more sought after. Most face reshaping is now performed using dermal fillers due to improved techniques, outcomes, cost and decreased downtime – just to name a few. WHAT ARE THE LATEST FILLER TRENDS TO LOOK OUT FOR? WHAT YOU SHOULD KNOW BEFORE GETTING INJECTABLES; One of the first questions you should ask yourself is who is performing the treatment. Are they medically trained? Such as a doctor, nurse or a dentist. And, how many years’ experience do they have? Secondly, are they getting their anti-wrinkle and dermal filler product from a reputable supplier? Such as Allergan, who are industry leaders when it comes to making neuro toxins.
Bin the bargains! If you come across a price that is questionably low then there is probably a reason for this. The product may be of a lesser quality which can mean a treatment not lasting for as long as it should or not achieving the desired look. Once you have established the right person to do your injectables there is a couple of things you need to know for yourself. Pre-treatment, anti-coagulants such as aspirin and ibuprofen should be avoided as they hinder blood clotting and increase the risk of bruising should a needle nick a blood vessel. Finally, the early bird gets the best results. Preventative Botox is the term used when those is their late twenties or early thirties start having anti-wrinkle injections. Starting early will not only prevent worsening but can typically reverse the first signs of ageing. Tell us what brought you to your current position? After working for many years as a private chef and travelling with the job, I joined the Distinctly Hospitable Group in 2014 as Head Pastry Chef at our Staffordshire sister venue Weston Hall. As the years went by, my knowledge grew in all aspects of the business and I felt ready in my career for the next chapter. The opportunity arose to be the Executive Chef for the group and with that, an even bigger challenge with our new venue Hawkstone Hall & Gardens. I couldn't feel more grateful to work for this amazing, ever-growing family business, especially with the team I have working alongside me.
Who inspires you and why? I've had the pleasure to work alongside many influential chefs and mentors in my career. My current Venue Director Martin Hirst and my previous Executive Chef Nigel Smith, have been my biggest inspiration and have helped me to become the chef I am today. What would be your desert island dish? This is a hard one! But I do have a sweet tooth, so I think it would have to be a classic sticky toffee pudding. What has been your most memorable meal? Best for... Authentic Spanish tapas dishes
I
am a huge fan of tapas – it’s my go-to lunch and dinner with friends as it never fails to impress and is very relaxed as well as a social way to spend time together. Simon Shaw and his team are an institution on the North of England food scene. With their humble beginning in Ripponden with El Gato Negro they soon built up a reputation for outstanding authentic tapas by winning best Spanish restaurant on Gordon Ramsey’s F-Word. Word got out fast and soon Jay Reyner from The Guardian came knocking for a review – normally not the biggest advocate for the food scene in and around the North - He wrote a rave and very rare positive review! Before they knew it El Gato Negro was firmly put on the food scene, Simon and the team decided to move to a Manchester city centre restaurant in February 2016 which was followed with equal acclaim. Fast forward to August 2019 and Liverpool is about to get its first taste of Simon and his team's amazing culinary experience. Cited in Walker House, Exchange Flags
it couldn’t be in a better venue tucked in behind the Town Hall, a picturesque surrounding as you would expect from the Liverpool skyline. Once through the door you are greeted with the friendliest of welcomes and given the option of sitting at the bar for a pre-drink or heading straight to your table. The noticeable difference with the Liverpool venue is space – the Manchester site is in a narrow building and is very intimate. The Liverpool venue is much more open and gives a feel of space and breadth which delivers a very different overall experience. My colleagues and I were very lucky to attend a press launch where Simon attended and developed a tasting menu especially for the evening. It was a journey of fine Spanish cuisine with delicacies such as fresh oysters, gazpacho crab, roasted monkfish tails and Salt aged lamb. It was a real treat and Simon made sure he came around and spent time with people chatting whilst they were eating. El Gato Negro also has the Spanish classics such as ham and cheese croquetas, padron peppers and you
must try the Catalan bread with olive oil, garlic and fresh tomatoes – it's amazing! Not forgetting the desserts section, here you will find the classic crème Catalan along with cheesecakes and chocolate tartes. El Gato is a welcome addition to the Liverpool restaurant scene and we wish Simon and the team all the success going forward. As we were leaving we decided to make an evening of it and stayed at the Nadler hotel – a short cab away on Seel street in the Ropeworks district. It’s a comtemporary hotel which we had a luxury mezzanine suite. The staff were super friendly and made us feel very welcome – a great end to a fantastic evening. L
ancashire born Kevin Wigglesworth, Operations Chef at Individual Restaurants, boasts an impressive CV. Introduced to the art of cooking at a young age by his older brother, Wigglesworth built his career at some of the most respected restaurants in the UK including: Chez Nico and Le Gavroche, where he worked alongside Gordon Ramsey under Albert Roux OBE; the man he credits with teaching him the art of ‘happy cooking’ and ending every service with a smile. He joined Individual Restaurants as Head Chef of The Restaurant Bar & Grill Manchester in 2005, on his return to the North West, and hasn’t looked back since, working with the acclaimed restaurant group to open and establish eight award-winning restaurants across the UK, including the notable Opera Grill, Chester. Standing out from the crowd, the restaurant, housed in a grand Grade II listed building, is recognised for its internationally inspired dishes, using outstanding ingredients. INGREDIENTS 2 egg yolks Teaspoon of tarragon vinegar 110ml white wine vinegar 1 bay leaf 1 small packet broken tarragon stalks 1 shallot, finely chopped 125g clarified butter 1 small packet of fresh tarragon 25ml fresh lemon juice
Béarnaise Sauce
Tarragon Vinegar First make your tarragon vinegar placing the white wine vinegar, bay leaf, broken tarragon stalks and finely chopped shallot in a pan. Cook over a low heat until the mixture has reduced by half
When it coats the back of a spoon you’ve reached the right consistency
Take off the heat and sieve the liquid into a separate bowl
Season with salt to taste and pour into a serving jug
Leave to cool
Keep at room temperature and serve immediately
Béarnaise Sauce Gently whisk the egg yolks, tarragon vinegar and a tablespoon of cold water in a bowl, over a pan of simmering water. This slowly cooks the egg without causing it to scramble Keep whisking the ingredients until you reach a ribbon-like texture. Don’t be too vigorous or this will cause the ingredients to split
Add in 25ml of lemon juice along with the finely chopped tarragon, gently stirring all the time
Top Tips Keep the eggs and butter at the same temperature to avoid the ingredients from splitting If you feel the mix becoming too thick, add a little water
Remove the mix from the heat and slowly add the clarified butter, whisking it continuousl until it reaches a thicker consistency

Less than a three-hour drive from Cheshire, Hartwell House is a stunning stately home in rural Buckinghamshire, situated in a tranquil setting of more than 90 acres of English countryside. History
Hartwell House was originally built as a family home in 1699, but in 1809 was the palatial refuge to the exiled King Louis XVIII of France and his court. Today, it still feels like a regal residence thanks to the restoration work of many of its Jacobean and Georgian features such as the ornate Rococo ceilings, original oil paintings and the impressive hand-carved statue staircase. Every nook and corner of the House has a story to tell; a tour is a must-do for understanding more about the history of the property and something that its owners, the National Trust, are keen for visitors to experience.

Being city dwellers, as soon as my husband and I arrive at the House, we’re keen to get out in the great outdoors. We decide to take a stroll in the grounds, which was originally landscaped in a formal style but was re-imagined by a follower of the “Capability” Brown movement, Richard Woods. The serpentine lakes are teeming with wildlife, the eighteenth century features such as the pavilion, temples and towers hark back to its past and the spring garden planted with snowdrops, daffodils, eranthis, primroses and anemones is a gardener’s dream while the fruit

Spa
No trip is complete without a visit to the spa. Set in an orangery, in the style of a regency building, Hartwell’s has a generous-sized swimming pool, spa bath, steam room, saunas and treatment rooms. I decide to pamper myself and opt for a BIOEFFECT facial which begins with a thorough cleansing, clearing and exfoliation of the skin, followed by a massage using long, deep strokes to de-stress and create the perfect surface for the skin to absorb the vital anti-aging ingredient of BIOEFFECT EGF serum. It’s applied to the face and décolleté with a warming face mask to gently open the pores, allowing the serum to penetrate into the skin cells. Another mask is then applied, followed by a second application of the serum which is given ample relaxing time to work its magic. My skin is left feeling thoroughly hydrated, refreshed and rejuvenated, and younger-looking.

Kathryn Otto and partner took a short journey to Seal Street in Liverpool for a boutique hotel experience Using the excuse of travelling to Liverpool for the opening of a new restaurant, I decided to extend my stay in one of my favourite cities with a stay at Hotel Nadler as I had heard so many great things about the hotel from several friends and colleagues. Liverpool is fast becoming another foodie destination with many of the big names we know and love from Cheshire and Manchester moving to the city. Located in the heart of Liverpool city centre’s fashionable Ropewalks district, housed within a stunning former warehouse dating back to the 1800s. We were within a short walk of the city’s main railway stations and all its top attractions, including the Albert Dock, Tate Liverpool, The Beatles Story, and the world-famous Cavern Club, it’s the perfect base
from which to discover the best of Liverpool. It is also really close to a supermarket which incredibly convenient when staying in an apartment hotel. We were welcomed by a lovely friendly lady who checked us in and directed us to our Junior Suite. Boasting impressive full height windows that allow for plenty of natural daylight, the striking split-level Junior Suites offer plenty of space. FELDON VALLEY Joann Khatib discovers serenity in silence in The Cotswolds

ilence. Beautiful, glorious, incredibly underrated silence is what you’ll hear as you settle into your contemporary lodge at the stunning Feldon Valley. Better yet, the pure bliss of not hearing rushing cars and angry honking, is fittingly accompanied by the exquisite ceiling-to-floor window views over the 105-acre golf course, all set in the beautiful Cotswolds countryside. Having made the journey from the bustling city on a Saturday morning, my partner and I couldn’t quite believe how we’d managed to transport ourselves into such serenity. Having recently opened – in May of this year, everything at The Lodge is sparkling new, and every last comfort has been considered, down to coffee pods and luxurious robes. The Main Lodge houses 13 trendy en-suite bedrooms, with easy access to the coffee bar, a tranquil lounge and extended patio overlooking beautiful scenic views. Meanwhile, down past some charming woodland, you’ll find four individual lodges – complete with lounge and kitchenette – for those seeking complete privacy.
With no real distractions around, including the deliberately missing TV in your room, Feldon Valley is the ideal escape for a romantic getaway, presenting a rare opportunity to break away from interruptions and instead focus in on spending actual quality time with the 76
company you’ve chosen. If you’re a golf buff, then you can perfect your swing and make your way through the magnificent par-71 golf course. With a panoramic view at every corner of the hilly terrain, you won’t be short of landscapes or challenges. However, Feldon Valley isn’t just for golfers. With plenty of walks to choose from, of varying distances and difficulty levels, you can easily go off on an adventure. And with so much to explore – almost 800 square miles and more than 3,000 miles of footpaths and bridleways – you can gleefully get lost in its sheer beauty. After a long day of exploring, I personally couldn’t wait to visit the raved-about on-site restaurant, The Kitchen. With more breath-taking views overlooking the countryside and the sunset producing all sorts of colours in the sky, the setting was ideal for a romantic evening meal. Executive Head Chef Darren Brown, who has gained quite the reputation for earning a Michelin star and working at numerous prestigious restaurants, serves up breakfast, lunch and dinner daily. Working with a handpicked selection of suppliers to ensure the best ingredients, each dish is brimming with flavour and character. Having opted for the divine Salcombe Crab starter, my partner and I quickly agreed that we couldn’t resist a main course and dessert too. And while partner’s Cornish Plaice was cooked to perfection, my ricotta dumplings were deliciously filling. Dessert didn’t disappoint either, choosing a sublime raspberry tart and the dark chocolate mousse, it’s safe to say we were most definitely sated. Following a heavenly night’s sleep in the huge, comfortable bed, and using the swanky power shower, the buffet breakfast and option to order hot food was certainly welcome. FISHMORE HALL Overlooking the stunning Shropshire countryside, Michael Gates visited this beautifully restored Georgian house
T
here is something about a deep breath of fresh air and the complete sound of silence that gives you the feeling of peace and tranquillity. After a busy and stressful week, a hotel spa break was exactly what we needed. A two-hour drive from Manchester, my partner and I eagerly arrived at the beautiful and lovingly restored Fishmore Hall which stands just outside the historic market town of Ludlow, Shropshire. A warm and friendly welcome awaited us as we were shown to our room which had unspoilt views of the countryside. There are 15 individually styled rooms with everything you would expect from a boutique hotel; luxurious towels, slippers, robes and a minibar with locally produced goodies. Having booked a table at the hotel’s fine dining Forellle’s restaurant for dinner in the evening, we seized the opportunity to unwind by taking a relaxing bath which was of course accompanied by a chilled glass of champagne. Once seated for pre-drinks and canapés, the restaurant manager talked us through the menus on offer. We opted for the Tasting Menu which she
highly recommended. Created by their Head Chef Joe Gould, the ingredients are sourced from within a 30 mile radius of the hotel with the exception of the seafood and fish which comes from the Isle of Skye and Brixham. Of the six dishes, my favourite had to be the pork with red prawn, aubergine, apricot and harissa which was perfectly paired with a sharp Australian Riesling. And of the two dessert dishes which were both divine, the lemon crumble with honey, rosemary, gin and tonic most definitely deserves a mention. After a peaceful night’s sleep and a delicious traditional breakfast, we headed to the Spa Shell which is nestled in the gardens of the hotel. With ample space to relax including a steam room, sauna and an outdoor wellness hot tub, the spa boats four treatment rooms which can be combined into couple’s rooms. It was a surprisingly sunny day in Shropshire so it was perfect to soak in the outdoor hot tub and take in the views. With Ludlow only a short drive away, there is plenty to see and do. With its historic streets and castle, there are many festivals and events throughout the year. In a state of total bliss it was time for us to head home. YOREBRIDGE HOUSE Hayley Murray goes back to school in the Dales
A
mongst the hills of the Dales stands a hidden gem the stunning 5 star luxury hotel. The Victorian grade 11 listed former headmasters schoolhouse is sat in 5 acres of idyllic grounds. Situated next to the River Ure and the river Bain. The historic building was restored in 2006 when David and Charlotte took inspiration from their world travels and incorporated exceptional one-off pieces of furniture to create a unique yet romantic feel throughout. Each boutique bedroom holds a relaxing slipper bath in an impeccable bathrooms and the Barn Rooms feature a hot tub. My husband and I headed up to the dales on the 80-mile journey from Manchester. From the motorway there’s a beautiful 45 minute drive through the hills, offering plenty of time to enjoy the wonderful scenery. We made our way over to the unspoilt village of Bainbridge in the heart of Wensleydale. The perfect location for walks and activities close to the
picturesque walks of the Aysgarth falls to Bolton Castle or the semerwater circular walk. Upon arrival, we were greeted by the wonderfully pleasant owner Charlotte who gave us a tour and showed us to our exquisite room. The venue had a warm welcoming yet luxurious feel to it. It’s a family business Charlotte cares for with husband Dave and daughter Lola amongst the other welcoming and friendly staff. The venue has a small boutique feel, finished to the highest standard. With beautiful sitting rooms by the bar area where we sat for welcome pre-dinner drinks. It’s very clear why the hotel has received 5 AA gold star awards as well as 3 AA Rosette menu. The hotel has actually received many awards including England’s small hotel of the year award, the white rose small hotel of the year 78
award and restaurant of the year award. We asked to show us down to the wine cellar where we went down the beautiful traditional stairs and into a fabulous stone cave. We then entered the most incredible exclusive Laurent Perrier tasting room. The hotel is in partnership with Laurent Perrier, with hundreds of bottles of port, Champagne and wine from all over the world- it was certainly impressive. An exclusive feature with seating at the marble table for 10 guests under the sparkling chandeliers it’s certainly perfect for a special occasion. We then went on to pre-dinner drinks and an exquisite meal. The drinks menu included over 35 white wines, 35 red wines, a selection of Laurent Perrier Champagnes and other fine and rare Champagnes. The cocktail list is also impressive with Laurent Perrier cocktails as well as my usual favourites of ameretto sours and espresso martinis. Certainly plenty to chose from whatever your mood. The food was delicious starting with the canapes offered before even entering the restaurant. Our first course was onion broth and homemade bread rolls. This was followed by a 62 degree duck egg with chorizo and broad bean. The food was certainly 5 star, incredibly impressive. For my main, I had Goosnargh Duck with Beetroot and Blueberry which was tender and perfectly cooked served with a Pinot Noir, Grace Bridge, Central Valley It was delicious. Pudding was delightful with a Yuzu curd very light and tasty. With a great view of the chef’s from the whole restaurant, you can see your food being prepared very efficiently with Head Chef Daniel Shotton ensuring the menu is first class. The ingredients are all sourced by local suppliers, or from the garden in the grounds. They even have their own bees for honey which can be sampled at breakfast. We will certainly be going back to visit. such a relaxing and enjoyable stay. Barbados
The British island of Anguilla has some of the most incredible beaches I have ever seen. My favourite is Meads Bay, where the sand is white and powdery soft and the water so clear and blue that it took my breath away. The island has a certain sophistication and authentic charm, exuding a laid back atmosphere that makes it impossible not to unwind. Without a doubt Anguilla has some of the best food in the Caribbean, with over 100 restaurants to choose from. There’s everything from refined hotel restaurants to relaxed beach shacks serving freshly made fish tacos. Besides feasting, Anguilla offers typically Caribbean activities; beach and water sports, fishing, snorkelling and diving. Carrier can also arrange a private yacht charter to explore the island’s bays and secluded beaches.
A holiday to Barbados wouldn’t be complete without visiting the famous coastal town of Oistins, where Friday night fish fries bring locals and visitors together. After a long day, treat yourself to a signature full body massage, so you begin your evening feeling completely revitalised. Don’t forget to take the shuttle to Sandy Lane’s famous golf course, it’s worth a visit even Alison Logan if you aren’t really a fan of golf, as the views are just incredible. I am not the kind of person who spends the duration of their holiday sunbathing on the beach or relaxing in the pool. Whilst I love beautiful beaches, chic hotels and the easy-going Caribbean outlook on life, there’s something even more important that I look for in a holiday; Antigua guarantees adventure! Snorkelling, dining at a local Antiguan house and Jeep Safaris are just some of the activities that can be experienced. The highlight of my trip and the perfect place to take in a spectacular sunset is set at the southern-most tip of Antigua, Shirley Heights, which offers a breath-taking view over the whole of English Harbour. For an atmosphere like no other, visit late afternoon on a Sunday when, Irina Safaryan at 4pm, an afternoon party kicks off and carries on late into the night. Bespoke Travel Partner
New York is such a vibrant city with so much to see and do. I spent four nights here and saw all of the major attractions. The highlights for me were watching the sun go down from the top of the iconic Empire State building, walking across the Brooklyn Bridge to admire the Manhattan skyline and watching the Broadway Show Pretty Woman. I would also definitely recommend spending several hours unwinding in Central park, take a picnic with you and just watch the world unfold – there is always something going on. We stayed for four nights before travelling directly to Antigua for some R&R in the Caribbean sunshine – a great combination.

Canouan
Mandarin Oriental in the Grenadines is a perfectly matched twin for Barbados, reached by a short charter or private jet transfer. Canouan is the Arawakan Indian word for ‘island of tortoises’ and it quickly became apparent why when we spotted so many tortoises parading around the island. At just five miles in size, it’s a small island with a surprisingly large number of natural assets and attractions including the Caribbean’s largest living coral reef, an 18-hole championship golf course and a 17th-century Anglican church that was brought over stone by stone from Canterbury and is now used for weddings and special events. My lasting memory is the idyllic, secluded powder white beaches, acres of untouched lush tropical Carrie Whiston terrain and the breathtaking views while watching the sunrise during an early breakfast. My favourite destination is Vietnam for so many reasons. The best thing about Vietnam is that you can combine city and beach so easily. I would suggest spending a few nights in Hanoi to thoroughly explore the old town before travelling down to Hoi An for a relaxing beach stay. Finish in the capital of Ho Chi Minh for a cosmopolitan city break. One of my favourite memories is experiencing a street food tour on the back of a vespa! I think there is an itinerary to suit any kind of holiday-maker in Vietnam, it is a must-visit!

Bali & Singapore One of my most treasured trips was to Singapore and Bali. I enjoyed visiting the Supertree Grove at Gardens by the Bay, which comes alive at night with an exhilarating display of lights and sound. There’s a vast variety of places to eat, from simple street food accompanied by friendly locals, to fine-dining. The whole vibe was enthralling. Then, it’s just a short flight to beautiful Bali. Here I was stunned by the difference between the volcanic beaches and the mountain rainforest in Ubud, where you can find ease in a yoga class while making the most of the stunning views of rice fields and Amanda Doherty jungle. The idea of putting a powerful engine
in a small family car is nothing new - hot hatchbacks have been around for years - but few car companies do it as well as MercedesBenz. The German companyâ&#x20AC;&#x2122;s AMG performance division is known for its madcap takes on everyday Mercedes products, and its new high-powered A-Class continues the trend. The new Mercedes-AMG A 45 S, which is the size of a VW Golf, comes with a 2.0-litre engine producing up to 416bhp, as well as a clever four-wheel-drive system and some outrageous aerodynamic additions. The result is a four-door hatchback that gets from 0-62mph faster than a V8-powered Jaguar F-Type.

here was a time when Rolls-Royce, the king of all things luxury motor car-related, thought it rather uncouth to tell you how much power its engines produced. Not any longer. Now, every manufacturer’s wafty saloons publish performance figures like they’re playing the world’s largest and most expensive game of Top Trumps. The latest four-door rocket ship comes from Audi, and it’s called the S8. Essentially a standard A8 luxury saloon with the engine from a Bentley, it boasts a 4.0-litre V8 with not one but two turbochargers. That means you get 563bhp, and although Audi hasn’t said quite how fast the S8 will be, we suspect it might give some pretty serious sports cars a run for their money.

But despite the power, the S8 is still a big Audi saloon, so you get a very un-sporty noise-cancelling system that keeps the sound to a minimum, as well as clever suspension that allows the chassis to cope with all the extra power without upsetting the ride comfort. And, like the standard A8, you get two massive touchscreens to control pretty much everything, and acres of space in the back to stretch out, or hold a business meeting on Skype. loves COUPÉ DE GRÂCE BMW practically started the whole coupé-SUV market with the original X6, and as the competition has grown, so too has the car that started it all. This new version, with its updated styling and new running gear, is a smidge longer and wider than its predecessor, but it packs in more equipment. BMW’s latest touchscreen satellite navigation system is included, along with a digital instrument cluster, a parking assistant and a fleet of driver assistance systems. You can even choose to have the BMW ‘kidney’ grille light up, if you so wish. Engines range from the ‘basic’ 3.0-litre diesel and petrol units to the top-of-the-range 523bhp M50i petrol. DREAMBOAT Italian speedboat manufacturer Riva rose to fame by building arguably the prettiest motor launch ever created - the Aquarama - back in the 1960s. Today, the vessel once known as the Ferrari of the boat world has gone, but Riva is still going strong; a fact proven by the introduction of this stunning new superyacht. Unveiled in Venice, the Riva 50 Metres is an ocean-going masterpiece, complete with a jacuzzi and five cabins, as well as storage for a tender and jet skis. The yacht unveiled in Venice is called ‘Race’ and she is the first in a range of Riva yachts that will eventually grow to 90 metres in length. Speaking as the vessel premiered at the fabled Arsenale described as the largest naval factory in the world - Alberto Galassi, the CEO of Riva’s owner, the Ferretti Group, paid tribute to Riva’s late founder Carlo Riva, saying Race was the Italian’s “dream that came true”. Merseyside-based BAC’s single-seat road-going Mono track car is about as close as you can get to driving an open-cockpit racing car without actually being Lewis Hamilton. Or at least it was, until this came along. It’s called the Mono R, and it’s fitted with a 2.5-litre petrol engine that produces 340bhp. That doesn’t sound like much, but thanks to some obsessive weight-saving measures, the car only weighs 555kg. That means it’s fast, with 0-62mph taking just 2.5 seconds. Sadly, all 30 examples penned for production have already been sold to existing Mono owners, but if you’re among the lucky few, rest assured you’re the envy of us all. After 100 years in business, Bentley’s cars are as cool as ever, writes James Fossdyke, but is the Continental GT the coolest of them all?
I
f a company can stay in business for a century, it must be doing something right. Big brands such as Clarks or M&S have earned the respect of a nation, becoming the go-to shops for the country’s shoes and pants. But while these firms have a deserved reputation for quality, they aren’t always at the cutting edge of desirability. Few will boast of their M&S boxer shorts, and you’re unlikely to find Clarks mixing it with Christian Louboutin or Jimmy Choo. For car manufacturers, though, it’s a different story. BMW and Rolls-Royce - both more than 100 years old - are riding a wave of popularity, with honourable mentions in feature films and rap videos propelling them to the top of drivers’ wish lists. These companies have moved with the times to survive.

The same could be said for the latest entrant to the 100 club - Cheshire’s very own Bentley. Like Rolls-Royce, which was effectively saved from ruin by BMW, the company from Crewe has undergone something of a renaissance under German control. No longer dismissed as a purveyor of leather-lined limos for aristocrats, Volkswagen-owned Bentley is now one of the hottest properties on the luxury scene, enticing the great and the good with its compelling blend of sportiness, style and heritage. No car epitomises the new-look Bentley better than the Continental GT. This big, brutish grand tourer somehow manages to be contemporary yet old-school, carrying the weight of the British brand’s remarkable history like a supermodel clutches a Ted Baker handbag. For the

Continental, the Bentley folklore has never been a burden, but an essential piece of a thoroughly modern image. This latest version, though, melds that look with more beauty than ever before. Every iteration of the Continental GT has been attractive in a muscular, blue-blooded sort of way, but the new model is absolutely gorgeous. And that was before Bentley chopped the roof off, creating the even more jaw-dropping Continental GT Convertible. From any angle, it looks sensational. The way the nose droops down into the bumper is sublime, the striking rear haunches are as perfect as Sienna Miller’s cheekbones, and the smooth rear deck that’s created when you fold away the roof is worthy of a place on any luxury speedboat. It’s by far the prettiest bodywork yet applied to the Continental GT, but it still pales into mediocrity next to the utterly divine interior. You sit in seats of plush leather with seemingly infinite adjustment and support, surrounded by beautiful wood veneers and flawless stitching. And it’s full of well-considered features, too, such as the rotating touchscreen in the middle of the dashboard. When the car is switched off, it’s just another section of the wood panelling, but when you press the starter button, it flips to reveal the 12.3-inch satellite navigation and infotainment screen. Yet if you know where you’re going - or you just prefer the classic look - you can rotate the
screen again to reveal three gorgeous analogue dials. One is a thermometer, one is a compass, and the other is a lap timer. There’s a big digital screen in front of the driver, too, offering customisable displays. If you want, you can have usual dials, but at the push of a button, you can swap these for other useful displays, such as the sat-nav map or a readout of your chosen radio station. As you might expect from a company under German ownership, though, it isn’t just the styling or the technology that sets the Bentley apart - it’s the way they’re all stitched together. The Continental GT really feels as though it was simply hewn from one solid lump of luxury. But then perhaps that’s to be expected, considering the sheer size of the beast. It’s almost five metres long, it’s more than two metres wide, and it weighs 2.4 tonnes. And that’s before you fill it with luggage and passengers - not that it can take all that much of either. You can just about fit adults in the back, as long as nobody minds sitting with their knees around their ears, but realistically they’re only for kids. And the boot is even smaller than that of the tiny little VW Up! city car, so massive suitcases are out. If you’ve decided not to take the kids along for the ride, though, you can use the back seats as a sort of glorified parcel shelf to supplement the boot. The other thing you can do when the rear seats are empty is erect the optional wind deflector. Without it, and with the roof retracted, the cabin gets a bit blustery at speed, and those of a longer-haired disposition might find their locks whipping them in the eyes at anything more than 50mph. Aside from that, though, the Bentley is an absolutely incredible motorway car. The most striking thing is the uncanny quiet

that descends on proceedings - particularly when the roof is up. Even the massive tyres don’t make too much noise as they rumble over the asphalt. Mostly, that silence is down to Bentley’s hard work on the soundproofing front, but the glorious 6.0-litre W12 engine up front has to take some of the credit. As the name suggests, it’s a huge 12-cylinder unit, and it produces a mammoth 626bhp. In most cars, an engine like that would sound like the sky falling in, but Bentley’s motor is unbelievably smooth. Even at speeds most people would call outrageous, it barely makes a whisper. Not that it can’t shout when it wants to. Playing with the settings and stamping on the accelerator leads to an enormously satisfying burble, punctuated with enthusiastic whumps during gear changes as unburned fuel ignites in the hot exhaust. And despite its enormous weight and civilised nature, the noise is accompanied by speed. Lots of speed. Setting off from the lights in a hurry will see you hit 60mph in 3.7 seconds, while flooring it on the German motorway will take you all the way to 207mph. Going that fast in any car, let alone one weighing 2.4 tonnes, is frankly ridiculous. There’s absolutely no need to travel that quickly on a public road. But having that power in reserve makes driving at normal speeds feel so effortless - as though it isn’t really trying.

And it handles that way, too. The steering has a perfect weight to it, giving you confidence that the car will obey your commands every time you turn the wheel, and the grip from those enormous tyres makes it feel like some sort of road-going limpet, hanging on to the tarmac for dear life. The only problem, really, is slowing it down again. There’s nothing wrong with the brakes, but the laws of physics mean stopping a near-2.5tonne lump is always going to be hard work. So, although it comes with supercar speed and a supercar price tag, the Continental GT Convertible is not here to set lap records. Instead, Bentley has created the ultimate summer road trip machine, perfect for winding down the Riviera or swishing through the Spanish countryside. In fact, I can’t think of a better way to travel.

If you can get something that matches the inside as closely as possible then that will again create a seamless transition between inside and out. It will also have the added benefit of making your inside space feel much bigger as the space appears to continue all the way outside. If it’s a new extension or new dining space that you have created, try to get the garden designer in as soon as is possible so you can work with them to get this part right.

3 Planting Too much hard landscaping can make the whole scheme feel sterile and hot. On a midsummer’s day, planting can help to keep your entertaining space cool and comfortable. To get the balance right between soft planting and hard materials is key to any successful garden. I would say a minimum of 40 per cent of your outside entertaining space should be left for plants. Definitely no less than 30 per cent and more plants does not have to mean more maintenance. Again, a good designer should be able to advise you on low maintenance, evergreen plants.

Pots
There are so many amazing pots available. They are pieces of art in themselves and can become a focal point or main feature of any outside entertaining space. You can be plant them up with anything from large bamboo to specimen olive trees. You just need to make sure they stay watered and ideally with an automatic irrigation system. Irrigation systems are very easy to install so you can just forget about the watering and enjoy. If you up-light your specimens, they will be enjoyed long into the evening.

entertaining space. If you have invested in your outside space, it makes sense to maximise the time you can use that area. Lighting will enable you to use your garden up to midnight and beyond if the weather allows. It also doubles up as an effective display in the colder months allowing you to appreciate the garden even when you are wrapped up snug inside. When designing your lighting there is a simple acronym that you can follow. FAF. Function, Aesthetic and Feature. Functional lighting is not going to be much use when it comes to creating ambience. If you can imagine your security light coming on as you sit down for a romantic meal you can get the gist of what I’m trying to say. Functional lighting may also light a path or steps around the garden. Aesthetic lighting should be considered when trying to set the atmosphere. Soft floor lighting or gentle wall lights can all help to set the right atmosphere for the evening. Lastly, if you choose a few choice features to light up, a beautiful old tree of a water feature. This will all help to create a cohesive lighting scheme that works on many levels throughout the garden. They all have an important job to do but just be careful not to put them all on at once. the Better
If you’re making a terrace, don’t be scared to make it big. There is nothing worse than going to all of that effort in making a new outside dining area to find that you have to ask Grandma to get up and out of her chair every time you want to get up for a drink. Make sure your furniture fits comfortably on the terrace and it must have adequate space for everybody to pull the chair out (once tummy is full of BBQ food) and still be able to move around the back. You may also want to consider a dedicated space for cooking and food prep. Again, this will help make your outside space feel more integrated.

SALES ON THE UP Latest figures from Zoopla reveal that sales of homes across cities in northern England have increased by, on average, 6 per cent since 2015. Whilst the headline stats focus on sales in southern England cities falling by 13 per cent in the same period, we wanted to shout about the increases seen ‘Up North’. Transactions in Liverpool have increased by 19 per cent over the same period and has also had the strongest annual house price growth in March among the 20 cities in the index, with a 5.7 per cent year-on-year price increase in average property value. Manchester recorded a house price growth of 5 per cent in the same month. IAN KNAPPER, STONEMASON & MANAGING DIRECTOR, IAN KNAPPER LTD
Tell us a little about yourself… I am the Managing Director of Ian Knapper Ltd, married to Liz, dad to two boys – Fred and Joe. I like bouldering (low level climbing with no ropes) to keep my body flexible and concentrate the mind and food /restaurants – especially the pursuit of discovering a new chef or restaurant before they make it big! I was born in Staffordshire and landed a Saturday job (aged 11) working at a local quarry. It was here I found my love of the craft. I went on to study at Bath college – one of the few colleges in the UK running a stone masonry course. During this time, I won the national stonemasonry competition (Skillbuild 1992) and went onto to represent the UK in the international “Skill Olympics” winning Bronze in Lyon 1994. Subsequently, I set up my own stone masonry business (aged 21) – initially just myself and literally doing anything and everything stone related – dry stone walling, architectural stonework, the odd house, fireplaces etc. We now employ 11 persons at our base in Staffordshire and several onsite installation teams across the land. Who are your greatest influences? Professionally, Paul Smith for his absolute quality product, that has quirk and puts a smile on my face – also to have taken that commercially to the international brand it is now. And Zaha Hadid, not only for the beauty of her designs (which I love), but for constantly sticking to what she believed in from an architecture perspective, not softening her vision or bowing to commercial pressures, especially in a male dominated industry and environment – a great loss. The material we work influences be greatly. It motivates me and brings out a creativity that no other man made product can – to be able to take a natural material that is literally dug out of the ground – with no other processes required other than shaping it to something useful and beautiful is special. What have been some of your best jobs and why? Initially when working for myself, the pleasure of engaging directly with the client – designing and making them something from stone was (and still is) very rewarding. Any
“firsts” for us also give a great feeling of excitement – our first solid stone staircase, my first fireplace directly for the customer, meeting them, designing for them etc. We recently completed what is likely to be the largest solid marble staircase in the UK – seven flights of solid Carrara marble staircase in a very exclusive property in Knightsbridge. And we have been part of a historic project at Westminster Abbey which was fascinating. Traditional vs contemporary style? Personally – contemporary. I like to clean back the clutter and busyness and let the material take centre stage What would you consider your greatest achievement? To produce the things we do, with the great team we have… and to be able to make a living out of it! www.ianknapper.com
