How would you describe yourself ? Passionate about what I do. Practical. Motivated. Determined. Where is home? And work? Home is Waverton where I live with my partner and our one-year-old twins in a home we plan to ‘do-up’. On a day-to-day basis I manage the team at our Christleton Road office in Chester where we work on schemes across Cheshire, the North West and North Wales. What did you want to be when you were younger? Always an architect! From an early age I could be found drawing ideas for changing the layout for my family home primarily focused around making my bedroom bigger! Handdrawing of ideas is still very much a part of how I work today. Name a few of your favourite places to be... I love spending time with the family in Chester, as it has so much to offer, for example, the market with its independent retailers and Storyhouse, an iconic building that is great for the regeneration of Chester. I also love exploring the great outdoors - close to home there is some beautiful countryside along with walks along the canals. What inspires you? From an architecture point of view, I don’t have a specific architect I look to for inspiration. My source of inspiration

What was the last gift you gave someone? A box of doughnuts for the team for ‘doughnut Friday’. Tell us a fun fact? Since I became a mum to twins I am immeasurably more organised as my life outside of work is now run like a military operation! Who or what would you place in Room 101? Selfies. What’s been your biggest life lesson? Things that mean the most can be the hardest to achieve, but with determination, you can succeed. The Circus is Coming to Town Circus 1903 Costume Designer Angela Aaron on delving into the rich history of Circus for design inspiration
“T
he circus is coming to town” is a time-honoured phrase of pure Americana, but there’s nothing clichéd about Circus 1903, because from boots to braces, this circus is pure imagination. Circus 1903 is the product of many creative minds, and one of the most important is the veteran costume designer Angela Aaron. Angela has worked on everything from major theatrical productions, to billion hit music videos and the TV commercials we watch during prime time, but this Los Angeles based designer felt challenged by Circus 1903. “Each production presents different challenges, this time we had to take a black and white past and bring it into the present in believable colour,” she said, “everything had to be just right or it was back to the drawing board. We wore out many pencils, erasers and seamstresses!” When the idea Circus 1903 was first floated by Producers Simon Painter, Tim Lawson, and Director Neil Dorward, no
one truly understood the size of the challenge in front of them. For Angela it meant six months of research followed by hundreds of drawings, and then hundreds more as the stories of these fabulous performers changed and took shape. “It was never a case of one costume for each performer,” said Angela, “in the small travelling circuses of the early 1900s, everyone did everything, so we created street clothes, performance costumes and contemporary costumes that reflected various cultural groups that commonly
performed. It wasn’t easy.” While audiences might not notice the details as they whirl by above their heads, Angela certainly does: “We have to please everyone. Performers need comfortable costumes that stretch in every direction they want to go, producers want costumes that last a season on the road, and I need to have the ideal material in the right colour with the perfect details to make everything come together.” Angela sourced fabrics and materials worldwide, from the U.S., France, Korea, Germany, Japan and Great Britain, but built the costumes in the United States using seamstresses and tailors nationwide. Making the costumes was only step one, they were then dyed and aged, put through processes to help them look like the cast has been on the road for, well, about a hundred years. Sometimes the process takes specialised dyes and real antique techniques from the period and sometimes it took... a cup of tea. “New, bright fabrics not only don’t match the palette, they don’t look good under bright stage lights, and we have to dull the materials, so we wash them in a strong breakfast tea.” Circus 1903 is a symphony of detailed colour and artistry using the talent of artists like Angela Aaron, to bring the true spirit of theatre and circus back to audiences worldwide. Party Liaison Craig Hough talks to the founder of celebrity haunt Chinawhite about his success in bringing the brand to Manchester
Over the last 12 months, Chinawhite Manchester has established itself in the city and now boasts a busier weekend than the original London club. What made you choose the move to Manchester over any other city? We were initially looking at different cities and we were even thinking about international ones. We had tried a couple of franchises, including Northern Ireland, but ultimately we felt that to achieve the same results as London, we would need to be in total control of marketing and operations. We started our research and saw how vibrant the Manchester scene was and straight away we all thought it was an ideal location. We came back five or six times before our final decision, however, I fell in love with the city a little bit more every time we came. During one of our last visits, while having dinner, weirdly someone called me and asked if we were looking for a site in Manchester. This is how we set eyes on the now Chinawhite Manchester venue. It was the old Milton Club in Milton House and when we saw it, we immediately saw the potential. It’s a beautiful building with a unique entrance which creates a little journey as you arrive. We

agreed on the deal the next day and the paperwork was done very quickly. I will always consider the manner in which we found the site as a very happy accident!
Many London clubs have attempted to set up in Manchester and failed. What made Chinawhite’s move so successful and are there any plans to open any further venues in the north? What we wanted to do was build a club for Manchester. We had no desire to be a London

club in Manchester we wanted to be a Manchester space. We knew we were building a great product and the aim was to create organic growth. We’ve worked closely with local people that gave us insights about Manchester’s nightlife and we’ve quickly built a strong relationship with our clients and reached a great footfall. With all the shareholders, we all knew that what we would build would work and we really worked hard on it and hoped people would want to come. We had a well-established brand in London however we were all very aware that Manchester wasn’t London so adapted our business model to fit the city. We would love to open more venues in the north and have progressed well with plans for Newcastle and we’re also looking at other cities.
The venue is a well-known celebrity hotspot, with A-list celebrities such as Drake being a visitor. Are there any interesting stories you can share? Drake hired out Chinawhite on his recent tour after an arena gig. It was last minute, but we couldn’t really say no. We have such a broad cross-section of clientele and we are lucky enough to also have regular visits from some very well known faces from the sport and entertainment industries. We always try to create an environment where everybody feels comfortable and I think that is part of our success. I do have a celebrity story to share but it happened in London. I always look for DJs that are a little bit different and I knew that Connor Cruise – Tom’s Cruise’s adopted son – was a DJ. So, I’d been chasing him for six months, leaving messages on social media platforms but couldn’t get hold of him. Then, out of the blue, I got a call from CAA in LA, to say Connor Cruise was going to be in London and they knew I was trying to get in touch with him. They asked me if I’d like him to do a DJ set but that he would need a chaperone as he was still 17. So I booked him in and got everything sorted. Then around 5pm on the day, I got a call

from an American number and it was a member of the security team asking if Connor’s dad could come along and asked if that was OK? I tried my hardest to pause for five seconds before mumbling out “I think we can manage that”. As he’s a very popular guy I also had to work out a way to get him in without him being photographed. We managed to find a local shop on Oxford Street that was attached to our fire exit. We spoke to the owner and asked if a famous personality could come in. The owner tried to find out who was it, but I told him I really couldn’t say. He somehow came to the conclusion that is was David Cameron and was very excited, so I just kept quiet. That night I got the phone call, the car pulled up and Tom Cruise arrived with a very small entourage. As he walked in, the shop owner grabbed me by the arm and said “this is not David Cameron” and was absolutely furious with me. We then took Tom downstairs and he intently watched his son who was a fantastic DJ. He was incredibly polite and really complimentary of our team. He said thank you and the shopkeeper finally worked out who he was. They took photos with him and I really regret not asking myself. The next day The Daily Mail published a story with the headline, “Who knew you could make a sneaky exit from Chinawhite through a tourist shop?” Luckily for us it was the day he announced his divorce to Katie Holmes and the headlines continued for days.

Talking of Skullfades Foundation and Elle for Elle, what motivated you to get involved with both charities? We wanted to support something local. It’s very easy to work with the bigger charities but we wanted to have a direct impact in Manchester, as the city has been so good to us. I was introduced to Elle for Elle and The Skullfades Foundation and I really liked both projects, they are both really different, but both have incredible results. I really liked Ged’s story and understood the issue with homelessness in the city as soon as we arrived, so it felt more than natural to support the foundation.
Having worked in hospitality for over 15 years what have been your career highlights? There have been so many amazing moments; I’ve met most of my idols, seen the strangest things that nobody would ever believe, enjoyed incredible impromptu performances from superstars, dance-offs between supermodels and film stars. These things all create such wonderful memories for everyone who was there at the time and really leave you with the feeling of “did that really happen?”. The fact that our brand is still relevant after 21 years is super and the experience of opening here has been fantastic, long may it continue.
With your first birthday coming up and 2020 around the corner, what is next for the Chinawhite brand? We’re now quite advanced with our Newcastle plan, we’ve already found a site and people are already talking about our expansion there. But it will be a different offer, which will be revealed as we move forward with our plans. We also want to do something else in Manchester and introduce a new concept, so we’re always keeping a lookout for new sites. We also do a lot of club swaps at the moment especially in Europe and the US. We’d love to open in the US but it’s such a complicated market but they like the fact we have a unique following so we’ll be doing some more events there next summer. www.chinawhite.com
Regarding Elle for Elle, domestic abuse is something that isn’t talked about and I felt we could do something to make people more aware of that. We have a lot of girls in the club so I wanted to make sure we partnered with a women’s charity moving forward. We’re going to do a cosmetic collection box in the club across the Christmas period. It’s something we think our clubbers will want to get involved with.

Matthew O’Brien Craig Hough talks to Chester based fashion designer Matthew O’Brien about his career success and future plans Your passion for fashion began at an early age, and by the time you were, 18 were lecturing third-year business students at Chester University. Where did the love of creating garments come from, and how did it develop in those early years? In those earlier years, I was interested in electronics, robotics, graphic design, and web design. At the same time, I was running a clothing brand from my bedroom. I was always creative from a very young age and I won some of my first awards at the age of 8 for art and 3D sculpture. I think the art of constructing things has always been with me and never left. When developing my first clothing line geared towards the sportswear market my hunger for fashion and my passion for making evolved through fabric. As the brand developed and my thirst for fashion grew, I started to produce more fashionforward collections and taught myself how to make more complex pieces. Then it dawned on me that I wanted to explore this further and delve into the fashion world to see if it was for me. While studying fine art along with product design at a level I was able to make the most of these subjects and angle them towards garment decoration and fashion.

At the beginning of you were fulfilling every role of the business, from design and pattern cutting to stitching the garments and marketing yourself. At what point did you look to create a team around you and set up a base in Chester? Three years ago, I realised that I wanted to come back to Chester and open the first Matthew O’Brien store. I had been working from my studio space in Liverpool beforehand, and the Matthew O’Brien brand was beginning to grow legs. I had a lot of private clients and was working a lot in London at the time. I was showing in London fashion week and Paris seasonally but knew it was time to take the next step with the brand. So I moved all my studio to my first store in the heart of Chester city centre. When I came back to the city, I started to build my team around me, starting with one seamstress. I was so used to running the company and producing all the garments along with producing the patterns alone, but then I realised that the store in Chester was a massive success and I needed more support to allow us to grow.
Could you talk me through the process of how your ready-to-wear collection is put together? Do you design with a clear narrative or woman in mind or is it purely about the clothes? Our ready to wear collections are heavily inspired by our clients and their needs. I tend to take a number of hours each day to look back over what’s been really successful, whilst also going over suggestions and requests from clients as to what they would like to see in the collection. I pride myself on being able to have a great range of design aesthetics being represented within the store and being able to be so reactive to customer’s needs within the ready-to-wear collections. When it comes to designing the new ready-to-wear collections, I constantly draw ideas I have when they come to mind and save them until I can put all the ideas together. I then pair this information with other inspiration points which can range from architecture to fabrics. Clients can come to me at any time within their search for their perfect item of clothing. We have clients that come to us with a solid idea of what suits them along with having ideas on colours, shapes, and materials. We also then have the clients that come to me with the aim for me to have total creative freedom knowing the occasion of which they will wear their item. With our bridal clients, we find that people are heavily exposed to bridal dress ideas online and they are not able to find that anywhere, so they come to me so I can create their perfect garment. How do you continuously come up with new and original ideas and keep yourselves motivated to design new collections?
I find myself being constantly inspired and motivated through contact with different clients each day that all have different tastes and needs. On an average day, I see around six clients, which could range from bridal to bespoke evening wear to menswear. Throughout the day, my design skills are pushed as I explore new ways of designing and making sure we create something truly unique and innovative. You have won countless awards in your short career, which has meant the most to you? It has to be the title of Britain’s Top Designer for the whole of Britain. Winning such a prestigious award at 19 really gave me the confidence and boost to continue on the path I’m on. I’ve recently been awarded the Young Business Person Of The Year, which I’m incredibly proud of. I feel this is such an important award for me as this recognises my successes within business and not just design. What does 2020 have in store for Matthew O’Brien? I’ve plenty of plans including opening new stores in other major cities, growing the brand and its offering, gaining more stockists nationally and internationally. I also want to make our annual shows even bigger and better and also branch out and introducing a number of other lines including equestrian wear and my own homeware range. www.mattobrien.co.uk

Andrew Collinge How do I prevent dry hair and split ends during the winter months?
My curls don’t last long, what am I doing wrong?
Central heating and dry icy winds can surprisingly, be just as damaging to your hair as hot summer days. To prevent dry hair and split ends, rehydrate your hair, using a moisturising shampoo and conditioner. Also, to keep your hair supple during winter months avoid over rinsing until it ‘squeaks’, as this will mean you will have rinsed out all of the conditioner which can cause dry brittle ends.
There could be a few reasons for this problem. Long, one-length hair can be resistant to holding a curl, therefore a few long layers will help tremendously in solving this problem. Also, it’s essential to use a styling product to give hold to your curls. A medium to firm hold blow-dry lotion applied evenly to towel-dried hair before styling will make all the difference.
My hair always falls out of updos, what am I doing wrong? Freshly washed hair can be the problem as sometimes it’s too soft to style into an updo. Applying dry shampoo will help add texture to the hair and should help you achieve a longer-lasting style. It’s generally best to have shampooed your hair at least a day before you plan to wear it up. Applying a styling product to towel-dried hair prior to blow-drying will help considerably when putting hair up as it will give body and hold.

Braids, which are also bang on trend, are a great look for the party season and is also a fail-safe style that is petty much guaranteed to look just as good at the start of the evening as it is after a night on the dance floor. Braids can be worn in a variety of ways and not all the hair has to be braided. Braids help create the perfect party style as they can be accessorised to suit any occasion.

After working in a much smaller hotel for three years I wanted to move back to a bigger establishment for a new challenge. I had already worked under Graham Tinsley previously, both at The Castle in Conwy and at Carden Park, but was returning this time as Head Chef. What is your favourite style of food? French-British cuisine with a modern twist. What's your favourite ingredient and why? Lemon - acidity is key in a dish. What is your favourite drink? In the winter, a nice glass of red wine. In the summer you can't beat a gin and tonic in the sun. What piece of kitchen kit, could you not live without? It may seem a cliché but the most valuable item for me is my chef's knife, I couldn't go a day without it. Who inspires you and why? It is hard to pick a single person, but I take a lot of inspiration from following different chefs across the world on social media, I think it's had a massive impact on the industry. When I first started in a kitchen the only way you could find inspiration was through reading books or spending time in different kitchens. To be able to see what so many great chefs are producing on a daily basis is amazing. What would be your desert island dish? It's one of two things, either a ribeye with béarnaise sauce or a nice dressed crab. What has been your most memorable meal? When I was 17 I went for a meal with the Welsh Culinary Association to Simon Radley at the Chester Grosvenor, it was the first time I tried food of a Michelin standard and it still sticks with me ten years later. www.cardenpark.co.uk

Then decant on the worktop and work together until a smooth dough forms, if you are finding it a little dry just wet your hands and keep working it together. Once done wrap in cling film and leave to rest for 1 hour. For the Tortellini Filling Cook the kale in a pan with some rapeseed oil and a good knob of butter and season with salt and freshly ground white pepper, once cooked chill. Meanwhile, mix the zest of one Lemon & the ricotta. Once the kale is chilled chop it up and mix with the lemon and ricotta mix, then place in the fridge. For the Turkey Escalope Get 3 bowls and put the flour in one, the eggs in the second, and the breadcrumbs and parmesan in the third (make sure you season each in the bowls). Starting with the flour dip your escalope in and fully coat, likewise with the eggs and the breadcrumb mix, please see picture for how they should look. For the Tortellini Set up your pasta machine to the widest setting (10). Start working your pasta through the machine, each time twice on the number working from 10 until two, if you feel confident try going down to one, so as your
pasta is nice and thin. Then sprinkle some semolina on the worktop (to stop the pasta from sticking) and lay your pasta out. The pasta sheet should resemble a large rectangle. Now, get your mix out of the fridge and place a tsp of the mix in the centre of the pasta sheet and repeat with a four-inch gap in-between. Have a pastry brush at the ready with some water in a bowl. Then brush around the mix all along the pasta sheet and fold over, making sure you seal around the filling so there is no air at all (this will ensure your pasta doesn’t split). Then cut halfway between the space you left. Then attach the two corners and press together, this will give you your tortellini. For the Broccoli Blanch for about 2-3 mins until they still have a bite. Now you have everything prepared you just need to cook and assemble the dish. Fry the turkey escalopes in butter and oil for 2 mins either side on a medium heat until golden. Place the tortellini in salted boiling water for 2 mins, then drain on some kitchen roll. In a pan put 80g of butter and when it starts to turn brown put your broccoli in to warm through, and squeeze in the juice of the lemon you used previously to make the tortellini, then arrange on your plate and enjoy. www.chesterzoo.org

INGREDIENTS 500g Donald Russell turkey breast 200ml double cream 1 egg 1 leek finely sliced 2 carrots 1 star anise 2 large potato 200ml chicken stock 150g butter

METHOD Start with the turkey roulade, remove skin and keep to one side, butterfly the piece of turkey breast to be 1.5cm thick, square off edges keeping the trim (you want around 100g of trim). Next make the filling for the roulade, in a food processor place turkey trim, egg and 100ml of the cream, blend until smooth, then season with salt and pepper, in a bowl mix the turkey paste and a good pinch of the sliced leeks. To put together the roulade place a piece of foil on your worktop, then 4-5 layers of cling film on top of this, next spread out the turkey skin onto the cling film, the evenly spread the butterflied turkey and finally the turkey paste. Roll up in just the cling film to make a fat sausage shape, then roll up in the foil and twist both ends till the sausage becomes quite tight, steam for 35 minutes. For the carrot puree, sweat off evenly cut pieces of carrot in 50g butter, add star anise then half of the chicken stock, cook out until really soft, drain carrots remove star anise and blend until smooth, if you need to slacken off the puree add a little cream whilst blending, season and keep hot until needed. For the slow-cooked carrot, (we use vacuum bags but I have given alternative method) place the carrot peeled and cut in half
lengthways in a small pan with 50g butter and 100ml of water, cook until softened but not falling apart, in a clean pan heat up some butter until foaming, add cooked carrot, cook out until nicely coloured keep hot for serving. For the braised potato peel and cut out rectangles of potato, place in a deep ovenproof dish, place chicken stock in the dish (stock should reach halfway up the potato) put a knob of the remaining butter on top of the potato season and place in oven 180degrees for 30 minutes. For the leeks, put raw leeks and remaining cream in a small pan, season well, bring to the boil then reduce to medium heat cook out for a further 5 minutes until the leeks have softened and the cream has reduced by two thirds. To finish remove the turkey from steamer/double boiler, remove foil and cling film, get a heavy pan, put on high heat add a little oil the put in turkey to get colour and crisp up the skin, reduce heat to avoid burning keep in pan until golden colour all over. METHOD Fill a rocks glass with ice and set it to one side. In a cocktail shaker add all the ingredients and fill shaker to the top with ice cubes. Shake well for 30 seconds and strain into a rocks glass. Top with crushed ice and garnish with a slice of fresh ginger or edible flowers.

Laura Bamber Craig Hough talks to Laura Bamber, Operational Director at The Ivy Collection about The Ivy Spinningfields’ first year, how the venue has settled into Manchester and upcoming birthday celebrations The Ivy Collection is such a strong brand with venues up and down the country, why was last year the right time to finally open a venue in Spinningfields, Manchester? Manchester is at the heart of the North; a rapidly expanding and exciting city that is growing faster than anywhere else in Britain. This was really at the forefront of our minds when planning our opening there. We needed to cater to a city that already had a number of exciting food and beverage offerings, bringing something new and unique that would stand the test of time. We’d been interested to open in the city for some time and it was more a question of waiting for the right space to become available. The Ivy Spinningfields is a four-floor purpose-built destination, at the heart of the city’s financial district, a neighbourhood that contributes heavily to Manchester’s growth. We felt it would suit The Ivy Collection perfectly.
How do you feel the brand has integrated itself into the city? The Ivy Collection prides itself on being a forward-thinking brand, with The Ivy Spinningfields offering Mancunians a totally new
dining experience set across four fabulous floors. From the get-go, we wanted to become an exciting establishment that fitted into the city seamlessly. With its unique floors and dedicated entertainment, our hope is that The Ivy Spinningfields continues to captivate and excite guests. Whatever the occasion, we offer an all-day dining menu and private event spaces, providing guests with a premium experience, complete with friendly service, delicious food and cocktails, and a fun-filled ambience.

challenges have you faced over the last 12 months? We were truly overwhelmed with the support from the city and our neighbours following this year’s rooftop fire, and it was important for us to give back to the fire services who worked bravely and efficiently to contain the incident. The spectacular Roof Garden reopening in April 2019 was marked with a super party, seeing a show-stopping big top circus tent positioned outside the restaurant known as ‘The Ivy Circus’. All proceeds from the event were donated to the Fire Fighters Charity. A challenge that we were always going to face was remaining relevant and ahead of the curve. The Manchester dining scene has already seen a number of new openings since we opened. We have worked very hard to continue to offer something unique that leaves guests coming back for more.
Looking back over the last year, what have been some of your highlights? A definite highlight was our star-studded launch party back in November 2018, which was attended by notable Manchester faces including Ryan Giggs, Phil Neville, Simon Rimmer, Rhian Sugden and some of the cast of Coronation Street. The Ivy Circus was also an incredible night which raised funds for the Fire Fighters Charity with high-octane acts including drummers, stilt walkers, knife throwers, jugglers,
contortionists, flying aerial performances and for the grand finale, a Greatest Showman medley. VIP guests included Caroline Flack, Laura Whitmore, Lara Stone, Nicola Roberts, Ella Eyre, Kym Marsh and Nikki Sanderson.
What will the venue be doing to celebrate its upcoming first birthday? The Ivy Spinningfields will mark its first birthday this November, with a spectacular month of celebrations. We have an exciting calendar of birthday entertainment and live music throughout the month, launching from Friday 8th November, where we invite guests to join us in raising a toast to our first year in the city. Throughout November, every Thursday will see a roaming four-piece brass band performing throughout the Ivy Brasserie from 8.30pm, whilst The Ivy Roof Garden will see its two terraces transformed into the North Pole and South Pole. We also have a series of limited-edition themed cocktails too!
With such a successful launch year, what does 2020 have in store for The Ivy Spinningfields? As we enter a new year, we’ll have lots in store across all four floors. PF Chang’s Asian Table After a few hours shopping on the cobbled streets, we arrived for lunch at PF Chang’s Asian table. A firm favourite amongst London’s food lovers, the venues offer an authentic pan-Asian menu. For a starter, I opted for the Handmade Pork Dumplings which were pork hand-pleated dumplings drizzled with soy and (for that extra kick) chilli mash. My partner chose the Crispy Calamari, which was well portioned and came with chillies, spring onions which were served with a sweet chilli dipping sauce. For my main, I opted for the Lo Mein Noodles, which were wok-seared egg noodles tossed in dark soy sauce with chicken (other options were beef or vegetables) shiitake mushroom, fresh carrot, red onion, cabbage, bean sprouts and celery. My partner opted for one of the hottest options on the menu, The Dali Chicken. This dish consisted of slices of wok-fried chicken, spring onions, sesame seeds, chilli pods and potatoes in a gorgeous Sichuan chilli sauce. This was a taste sensation that left him clamouring for his Tropical Sunrise mocktail. For dessert, I had the Flourless Chocolate Cake. This was an incredibly rich mousse cake and mixed well with the side of vanilla ice cream. My partner had the White Chocolate bomb filled with honeycomb, cocoa nibs, popping candy, chocolate soil, hazelnuts and creamy hazelnut ice cream all covered with a bomb melting toffee sauce. Kensington For our second day of exploring we headed to Kensington High Street, a major thoroughfare running from Hammersmith straight through to Kensington Gardens. The street features a wide variety of brand name stores, as well as several cafés, restaurants and London’s largest Whole Foods branch. Japan House London We finished our trip on Kensington High Street at the luxurious Japan House, part of a global initiative led by the Japanese Ministry of Foreign Affairs (there are two other Japan Houses in Los Angeles and São Paulo). The venue offers an exhibition gallery, events space and a retail floor (yes, more shopping) of thoughtfully curated Japanese products. After our legs and feet finally gave in after two solid days of shopping we took our seats at Akira (the restaurant within Japan House) for our final feast. The restaurant from acclaimed Executive Chef Akira Shimizu (of Engawa) is founded on the trinity of Japanese cooking principles – food, tableware and presentation. On arrival, we were immersed in authentic omotenashi hospitality, which far exceeds any service we had ever experienced before. The highlights of the menu were their imaginative sushi specialities and chargrilled kushiyaki skewers made from umami-rich wagyu beef, pork, chicken, seafood and vegetables. The dining experience is further enhanced with exquisite, bespoke ceramics and glassware, personally designed by Akira and created in collaboration with artisan producers from his home country. DUBAI Starting his journey in The Aspire Lounge in Manchester Airport, Michael Gates took a first class trip with Destinology to the United Arab Emirates to sample their most luxurious hotels
Jumeirah Al Qasr
With the Burj Al Arab in sight, I knew I’d soon be arriving at the Jumeirah Al Qasr, one of Dubai’s most iconic hotels. Jumeirah Al Qasr is one of three boutique hotels, which form the Madinat Jumeirah Resort, just a stone’s throw away from the Burj and Jumeirah Beach. I was blown away by the sheer scale and grandeur of the place, the entrance lined with dramatic but stunning golden horse statues. Through the palatial lobby was the reception where the welcome was friendly and the check-in was swift. The Arabian Deluxe room overlooked the city and beautiful landscaped gardens and lakes, with every amenity you could possibly think of. Designed in a traditional Arabian style with a contemporary finish, the rooms were stylish and comfortable. Stepping outside the airconditioned room onto the balcony, you can
feel the heat with temperatures of 38 degrees even as it approaches the end of the summer season. After a quick freshen up, I ventured out to explore and what better way than taking a tour on the wooden Abra water taxis. From the waterways, you really get time to discover the uniqueness and outstanding beauty of the resort. After a few hours relaxing by the pool in of the quieter areas, it was time for lunch. With over 50 restaurants and bars from, you are literally spoilt for choice. I opted for the Greek beachside restaurant Shimmers having recently visited some of the islands. Looking out over the stunning private beach, the Arabian Gulf and the Burj Al Arab – the view was simply breathtaking. The waitress talked me through the menu and informed me the newly appointed head chef is Greek. I could have literally

ordered everything on the menu, but with it being lunch I opted for a few of the smaller plates washed down with an ice-cold Mythos. The chicken souvlaki was one of the best I have tasted, so succulent and flavoursome I didn’t want it to end. The Greek salad, so simple but fresh and delicious. And of course, no Greek meal would be complete without some Tzatziki with pitta to dip. In the evening, I took one of the hotel taxi buggies to the other side of the resort, having booked a table at the Rockfish Mediterranean restaurant for dinner which was nestled in the grounds of the Jumeirah Al Naseem. The restaurant had a nice vibe, cool music, neon lights, plenty of indoor and outdoor seating. I’d already been tipped off about the famous gin cart with many gins and botanicals on offer. The waiter suggested a Monkey 47 which was refreshing and went down a treat. I sampled several of the fish dishes, my favourites were the yellowfish tuna and the seabass carpaccio with fresh tomato. And for the main course, again is was the seabass with artichoke and seafood jus which was cooked to perfection. All the dishes were exceptional and well presented. Situated on The Palm, Jumeirah Zabeel Saray is smaller the Madinat resort but equally as grand and opulent. The hotel is renowned for its philosophy of catering to guests wellbeing, the perfect place to relax and unwind. The check-in was seamless and the staff were friendly and welcoming. A handy pocket guide outlined all the facilities including the Talise Ottoman Spa, shopping, fitness centre and nine restaurants and bars to choose from. All of which are situated in the wings off the lavish hallway which runs from one end of the hotel to the other. The luxurious Turkish styled room was generous in size with beautiful views of the Arabian Gulf and the resort. In the bathroom, there was a magnificent marble bath and a separate rain shower with luxury amenities. The beds were extremely comfortable and it was nice to have the spacious balcony to relax in the evenings. At the core of Jumeirah Zabeel Saray sits its majestic and award-winning Talise Ottoman Spa, combining the ancient healing

philosophies of the Ottomans with modern-day spa technology and luxury. This was one of the most indulgent spas I have visited, with 42 treatment rooms and facilities including a thalassotherapy pool, snow room, adventure showers and marble heated beds. I decided on the signature Turkish Hammam treatment, a full body cleanse and exfoliation which left me feeling relaxed and rejuvenated. There is also a well-equipped fitness centre in the Spa, which I did try and convince myself I would visit but surprisingly, I just never found the time. The first night I dined at Lalezar, which was serving authentic Turkish dishes. Starting with a Mezze tasting platter and some salads, the Gavurdagi with Turkish cheese, pomegranate dressing and crushed walnut was my favourite, sharp and fresh. For the main course, the braised lamb shank, slow-cooked for 20 hours was succulent and tasty and the portion was plentiful. I didn’t think I had much room for dessert I somehow managed to squeeze two dishes, the traditional pistachio baklava and the Firin Sultac, an over baked rice pudding which
is served cold and was surprisingly good. Amala the Indian restaurant had been highly recommended but unfortunately, it was fully booked for the duration of my stay, so next on my list was the Rib Room, offering a selection of meat cuts. The restaurant was elegant with a classic décor and had a very relaxed atmosphere. Alessandro, the waiter was an absolute delight, making pleasant conversation and guiding me through the menu. To start, I had the Wagyu beef scotch egg with pickled onion, green pea puree and chorizo aioli and I also tried the Caesar salad which was prepared at the table. Both of which were delicious. I was stuck for choice between the ribs and the steak for mains, but ultimately a steak was always going to win for me. My rib eye was served medium rare with sides of duck fat chips, asparagus and green peppercorn sauce. My stay at Jumeirah Zabeel Saray was the perfecting ending to my Dubai trip. It’s clear to see why people visit here time and time again. The hotel is a perfect choice for families too, as there is Sinbad’s Kids Club for keeping the little ones occupied, with an outdoor water and splash park, play pool, kids club and water sports facilities. Located in the heart of Dubai’s Jumeirah Beach Residence, Rixos Premium Dubai is a stylish and urban hotspot. Dominating the skyline, the impeccable crystal tower design is an architectural landmark. On arrival, the hotel seemed quite unassuming. That was until you walked through the foyer into the grand, modern and sleek reception which is where you really began to get the feel of how special this place is. Staying on the 22nd floor, the artfully decorated two-bedroom suite was stunning with stylish and contemporary design. The floor to ceiling windows gives you panoramic views overlooking the beach, the Palm and the world’s largest Ferris wheel The Dubai Eye. There was an expansive living area, Apple TV, kitchenette, and everything else you would expect. The luxurious and elegant bedrooms were very comfortable and both ensuites had a bathtub, standalone shower and luxury Hermes amenities. Having only caught a brief glimpse of outdoor areas I headed down to the pool and for some lunch at Azure Beach. The pool and surrounding areas were like modern-day paradise with an infinity pool, shisha terrace, DJ, private island beds, this place had it all. With a menu of exotic cocktails, mouth-watering Asian food, pizzas, salads and sandwiches, it was perfect for casual dining in the sun. It was the wonderful JJ who looked after me, the service was second to none. It was only afterwards I discovered this was the number 1 ranked restaurant on TripAdvisor, quite the accolade but well deserved. Beyond the pool area, there was a lush green garden which you crossed to get to the private beach, it was total bliss. With nine restaurants and bars to choose from I booked in at STK

for dinner, a chic upmarket dining and drinks venue with a New York edge. The place was absolutely packed to the rafters, again this great vibe and ambience seemed to flow through the hotel. There is a resident DJ on the decks, which worked well for the venue and was not over imposing. There was also a nice mix of groups and ages which complimented the atmosphere. Not just for meat lovers, there were lots on the menu. I opted for the Lil Burgers and Warm Asparagus to start and the Passion Fruit Miso Black Cod for main – every mouthful was divine. I was devastated there was no room for dessert. For the thrill-seekers out there, you can visit Sky and Sea Adventures on the beach. With over 30 boats, 20 parachutes and 100 inflatables you can enjoy fun and amazing water sports including jet skis, parasailing, doughnut rides and fly boards. If you prefer something a little less extreme, you can check out the state of the art fitness centre or sample one of the treatments to uplift your mind and body at the Natureland Spa. As Dubai is well known for its luxury shopping and you won’t be disappointed with the location of this hotel. The Rixos Premium is in close proximity to all the popular shopping destinations and malls and is also the Walk at JBR on your doorstep. Beci Wood travelled to Northern France for a foodie weekend away
M
y plate was a feast for the eyes – and my palate. Tucking into a French tapas lunch with a glass of beautifully chilled wine, I could feel the sun’s rays seeping into my skin as we dined on the terrace. A sumptuous mix of generously-sized beef tartare, Parma ham and olive tapenade, mozzarella, sweet peppers and mango salad, lightly grilled pork and chicken kebabs, it was so fresh and full of flavour. Since becoming parents, one of the biggest things my husband James and I miss is dining out. So, when planning our first mini-break since having our son, we looked for a European escape where good food would be setting the agenda. In the past, France has been somewhere I’ve overlooked due to its proximity (and weather comparisons to England!), but my feelings are quite the opposite now. Less than one hour south of Calais, Montreuil-

sur-Mer is a charming walled medieval town with 18 restaurants for all budgets and desires. Previously named by The Times as one of the best places for foodies to holiday, you’ll find an authentic crêperie, a quality pizzeria serving organic wines but also a two Michelin-starred fine-dining experience. Headed up by Alexander Gautier, who in 2016 was voted the best chef in France and also in the Top 50 worldwide, La Grenouilliere will set you back approximately £400 for two but is a real statement experience for a special occasion. Thankfully Gautier has two other restaurants in the town that are more reasonably priced that you can try. Capitalising on its gastronomique riches, the local businesses have come together to create a joint venture to put Montreuil-sur-Mer on the map. The town’s gastronomique allure stretches

back to the 13th century when the area was already known as a culinary Shangri-La. Charters published in 1316 reveal cugnots, a kind of brioche with spices and a melting sugar centre, were a speciality of the town. Documents from the 18th century also note the quality of the coaching inns, serving marvellous specialities of woodcock, snipe pate and frogs legs. Destination Gastronomique hosts three gourmet food festivals a year; in mid-June, Bastille Day on 14th July and a winter festival in December. The village’s main square is a hub of activity as thousands of visitors rush to sample the mouthwatering array of oyster and pastry stalls. Restaurants included in the guide proudly display the red Destination Gastronomique logo in their window and are all featured on the website. Local businessman Tim Matthews heads up the venture and says its main purpose is ‘to pull the businesses together, try good food and let people know we are here.’ “If you didn’t know it already you have stumbled upon a slice of foodie heaven in this historic and bucolic part of Northern France,” he adds. As the name suggests, Tim isn’t a French native, instead hailing from Sheffield. However, after rocking up in the town on his motorbike 44 years ago he knows pretty much everything there is to know about the area. From the best langoustines to the most exceptional wines and best seats on
the restaurant terraces, he is your man. He adds: “We only have 2,000 residents but 18 restaurants. There is a selection of restaurants for all. In the past ten years the number of restaurants has remained the same but the level of food on offer has increased. It’s superb. Having Alexander Gautier here is a great example of that.” The former graphic designer is also the owner of Maison76, a luxurious bed and breakfast with an eclectic and eccentric vibe which was the base for our visit. Sadly our trip didn’t coincide with one of the food markets but we tried our best to work our way through a variety of culinary options.

It’s known for its selection of offal but we plumped for the personalised tapas board. We don’t eat fish so we were grateful Tim had given the restaurant a heads up without me reaching for Google translate. The bizarrely named Froggy’s Tavern was another highlight, with its selection of typical Lyonnaise spit-roasted meats and aperitive menu. Le Bistromome adds an Asian touch to classic bistro food while Auberge du Vieux Logis is the place to go for the best-cooked sole meuniere. Le Douglas offers live music and a stunning selection of over 50 beers if you’re thirsty. Ten years ago Tim bought a former pharmacy

and transformed it into a luxury residence with three bedrooms and one suite. It’s been operating now for five seasons and Tim is the front desk, concierge and breakfast chef and waiter all in one. We stayed in the stunning Sarazin Suite; an exceptional roof conversion and decorated to the highest of standards. Overlooking a dreamy rose-filled garden, with a separate dressing room and a solid copper stand-alone bath it’s a heavenly space. France’s answer to Grand Designs were even filming here recently. On arrival, we relaxed in the summer house with a glass of rosé as Tim helped with our itinerary. He is the third biggest client pusher to restaurants in the area which is a credit to him with only four rooms available to rent. You can feel Tim really wants guests the experience the very best the area has to offer. Online shopping is a no-go! Instead each morning he collects crusty sourdough bread and flaky croissants from two separate bakeries. He also makes a trip to the local cheese shop for yoghurts “that have never seen the inside of a supermarket” and a deli for ham and eggs which he cooks fresh to order. Locally-sourced apple juice is served and each day different freshlypicked fruit – strawberries, melon and peaches – were available. Tim even experiments with flavours when making his own preserves. The gin marmalade was a real treat. There are 16 well-posted walking routes just minutes from the hotel to burn off any overindulgence. The town’s cobbled streets with its array of beautiful
buildings and nearby town walls are a nice stroll. A sound and light production of Les Misérables performed by locals on a selection of dates in July and August is another draw to the town. Residents unite in the citadel in tribute to author Victor Hugo who recalled his memories of a visit to the town vividly in the classic novel which was published in 1862. If you have time, Le Touquet is a great place to unwind. An upmarket beach resort 25 minutes away by car, President Emmanuel Macron is a regular visitor with his family to his holiday home. With it’s close proximity to the Eurotunnel terminal, Northern France is regularly a port of call for visitors on a road trip at the start or end of their holiday, however, it’s definitely worthy of being the main event for a long weekend. It’s also easily accessible from Le Harve airport and two hours by car or less by train from Paris. But driving has its advantages; primarily so you can take as much cheese and wine back with you as you can! www.maison76.com

Fast estate cars are becoming one of Audi’s strong suits, and the new RS 4 Avant promises more of the same
T
here was a time when estate cars epitomised everything that was uncool. Your geography teacher had an estate car, while the cool kids were swanning about in hot hatchbacks and sports cars. Now, though, the humble family wagon is in the good books once more, and that’s because of cars such as this. It’s the new Audi RS 4 Avant, and car bores will tell you it’s nothing like the diesel A4 Avant your accountant drives. But it is, because it has a big boot (495 litres, don’t you know?) and a solidly built interior full of satellite navigation screens and digital instruments. It even looks roughly the same, if you discount the big exhausts, lowered suspension and the new, flatter front grille. You’ll have to look past the bigger wheel arches, too, and the massive brakes hiding behind those huge alloy wheels. The RS 4, then has all the advantages of its lowlier stablemate, but there’s one all-too-crucial difference. Instead of an ultraefficient diesel engine hiding behind the four-ring logo, there’s a fire-spitting 2.9-litre twin-turbo petrol V6. It has 444bhp, which is transmitted to the road via Audi’s clever Quattro four-wheel drive system, and because there aren’t enough ‘fours’ kicking about here, the sprint to 62mph takes around four seconds. With electric cars set to take over the motoring landscape over the next few decades, questions have been asked about what happens to the world’s classic cars. Could old favourites be consigned to museums in a barrage of bureaucracy that started more than 50 years after they were conceived? Not according to a company called Lunaz. Based at Silverstone, the self-styled home of British motorsport, the company takes beaten-up oldtimers and gives them a new lease of life. But this isn’t just about restoration. The cars get modern air conditioning and braking systems, but the biggest change is the removal of the oldschool and often inefficient petrol engines, which are replaced with electric motors and batteries. Lunaz says the new-world tech is “sensitively integrated”, with charging connectors hidden under the old fuel filler caps and suspension tuned to match the “character” of the original car. www.lunaz.design

A decade ago, when Porsche launched the Panamera, it went straight to the top of the tree and set a marker by which all other four-door grand tourers are judged. If you’ve spent any time on the M60 in the past few months, you’ve probably seen the huge construction project that’s been underway near Junction 1. But far from being an office block or a retail park, it’s actually the new Mercedes-Benz dealership. Run by LSH Auto, the site is big enough to display about 140 cars across three floors. New cars populate the ground floor, with high-performance AMG models on the upper mezzanine. Used cars, meanwhile, are on the lower floor. More impressive, though, are the facilities, which include a bistro and a dedicated hospitality space. RAPTOR Ford’s performance cars are mad, writes James Fossdyke, but few are more bonkers than the unbelievable, unjustifiable Ranger Raptor
I
t was the Russian-American writer and philosopher, Ayn Rand, who said “if something is worth doing, it’s worth overdoing”. That’s not only an admirable attitude for birthday parties and bridge engineering, but it seems to work with cars, too. Ford’s Performance division certainly thinks so, having created the outrageous new GT supercar, the gloriously unnecessary Mustang GT and this, the Ranger Raptor. You might have heard of the Ranger - and even if you haven’t, you’ll certainly have seen one. To be honest, it looks pretty much the same as any other pick-up truck you care to mention, but if you want a vehicle that blends SUV and van into one reasonably seamless package, it’s among the best in its class. And buyers agree with me, because it’s now Britain’s best-selling pick-up truck. This new version is loosely based on the farmers’ favourite, but only very loosely. If you’re au fait with your American cars, you’ll know the significance of the word Raptor. Although that said, even those who don’t keep up with their yank tanks could probably have guessed that the F-150 Raptor - and the Hennessey Velociraptor it spawned - are not diesel hatchbacks. No, the Raptor name is reserved for Ford’s hardcore pick-up trucks. Oddly, though, the numbers suggest the Ranger Raptor isn’t all that hardcore particularly against the backdrop of the US market’s massive petrol V6-powered F-150 Raptor. In the Ranger, the engine is a 2.0-litre diesel much like the one in a Mondeo estate, and it produces 210bhp. Sure, that’s perfectly respectable, but it isn’t going to rip your head

off like some carnivorous Jurassic lizard. As a result, the performance figures don’t scream excitement. A 0-62mph time of 10 seconds is pretty unremarkable, and so is the top speed of 106 mph. But let’s be honest, did you expect a 2.5-tonne truck to be fast? And even if you did, we suspect you’ve missed the point of the Raptor. This thing isn’t designed to drag-race youths in modified Fiestas on a Saturday night; it’s designed to conquer the barren, rugged terrain of the desert. Just looking at it will tell you this is no ordinary pick-up truck. There are enormous tyres, huge amounts of body cladding and a massive grille, not to mention the raised suspension, sports seats and recovery hooks on both bumpers. Then there’s the stuff you can’t see so well, such as the strengthened chassis, bigger brakes and underbody protection. It’s all a bit anabolic. There are other tweaks, too, such as the reinforced bodywork that’s designed to resist damage from boulders, rocks and anything else that flies up when you’re driving away from

civilisation. Better still, there’s a six-mode terrain management system that includes a ‘Baja’ setting for high-speed off-roading. Yeah, you heard. You see, the Ranger Raptor is a great offroader, and the numbers back that up. It’ll wade through more water than a VW Amarok or Mercedes-Benz X-Class, and it’ll climb steeper slopes, too. Yet that’s only part of the story, because the Raptor isn’t just designed to do all this, but to do it at speed. And it really is capable of that. Where a normal Ranger would have to crawl over rocks and inch up sand dunes, the Raptor can simply charge headlong into the toughest terrain, then come out at the other side - probably airborne. And I’m not exaggerating. These things are incredibly tough, and they’ll soak up punishment like nothing this side of a Chieftain tank. Realistically, though, you’re unlikely to find yourself launching a Raptor through the Moroccan desert very often. You’re much more likely to cruise down the M6 at 70-something or sit in traffic in the middle of Knutsford, and the Raptor will do all that quite happily. In fact, despite the enormous tyres and the huge amount of ground clearance, it drives quite well. The steering is direct in a way pick-up trucks seldom

are, and it’s surprisingly comfortable - certainly among the best of any pick-ups I’ve driven. That said, it’s no match for a well-sorted SUV, either in the ride or handling stakes, and considering this is technically a product of Ford Performance, the lack of straight-line speed is a bit disappointing. There are more areas of concern, too, such as the cabin. It’s quite sporty and well equipped, but if I’d spent about £50,000 on my Raptor, I’d like a bit more luxury for my money. Then there’s the sheer size of the thing. Yes, you can just about drive it around town, but parking can be, um... interesting. And country roads are an absolute nightmare, particularly if you meet the only thing that won’t give way to a Ranger Raptor: an HGV. Most other drivers, though, will simply turn tail and run away if they see one of these steaming between the hedgerows. And that’s a good metaphor for the Ranger Raptor. It’s the school bully of pick-up trucks, stealing normal vehicles’ lunch money and flushing their heads down the toilet. Yes, the others may be smaller, smarter and faster, but nothing is as tough or as unyielding in its attitude. That said, there’s no way you’ll ever justify a Ranger Raptor, so it will always be a heart-over-head choice. Sometimes, though, those choices are the best ones.

NINA & SARAH As Sarah Callander-Beckett celebrates a centenary of her family’s custodianship of Combermere Abbey, Louisa Warde speaks with the lady herself and world-renowned interiors guru, Nina Campbell about the restoration of the Gothic masterpiece and leaving a legacy
I
am speaking to Nina and Sarah hours before a sell-out charity luncheon held at the Abbey in honour of the one hundred years. Nina is speaking and Sarah assures me; “the tables are set, the booze is in the chiller, the auction prizes have been collected. So far, so good.” So far, so good indeed. The event raised over £6,000 for the Together Trust, a charity co-founded in 1870 by Sir William Crossley, Sarah’s great-grandfather, and was previously known as Manchester and Salford Boys and Girls Society. The charity provides special education, residential services, fostering, family support and community services to young people and adults throughout the north-west and it has been chosen to be Combermere Abbey’s centenary charity of the year. The first question I have to ask is how does it feel to be celebrating the

Personally, it has been 27 years of putting it back together. Unfortunately, it wasn’t in the greatest of shape when I took over in 1992. Mainly due to curious structure of the building, so that we didn’t discover things until we began work.

Inheriting seven listed buildings lots of them had no formal use. They were a little lost. “The renovations have all been about creating something sustainable. Each building now has a contemporary use, so they will be used and enjoyed by people coming to stay with us and get married with us. [The North Wing is open as a two-bedroom B&B with private entrance,
with ten further holiday cottages within the grounds]. The completion of the North Wing has been the icing on the cake, pulling the restoration together. It is fundamental to the whole look of the building.” Nina Campbell is one of the world’s most respected and influential interior designers in demand for projects, contemporary and traditional, around the world. Indeed, she is flying out to LA after the lunch before a hectic preChristmas schedule ensues. How did she become involved with Combermere Abbey? “I met Sarah many years ago in New York through a mutual friend and was invited here many years ago, again, when the North Wing really was a ruin, a romantic ruin but a ruin nonetheless. For me, its been wonderful seeing what has

situation that you have done as things happen. More pictures arrive and so on. I must say it looks wonderful. I would like to be coming back more regularly! “The rooms were an amazing background for our fabrics too. What I try to do is take the classic with a contemporary twist, take a paisley and put a fresh apple green, for example, and this fits perfectly. We had some fabric printed especially for Sarah on linen with a big hydrangea print which looks glorious at
the windows with its autumnal colours on it.” Two of the ladies’ favourite rooms are Salamanca and Bhurtpore (pictured). They are very different in style, sympathetic to the architecture and heritage, yet young and fresh. With a stunning antique-gilded bed and decorated in tranquil pale blue, the Salamanca room leads through to an opulent bathroom with amazing views across the parkland. Bhurtpore was Sarah’s uncle’s bedroom and incorporates some of the oldest beams in the house. Sarah concludes, “It’s a beautifully warm cosy room because it’s panelled. That room has a real style in a lovely warm pink. FAMILY LIVING This new build home in Cheshire was in need of a functional, design-led kitchen and entertaining space for all the family
T
he team at Kitchen Architecture, Wilmslow, was called in early in the planning stage in order to help create a flowing, open-plan entertaining space for a family within a contemporary new build. A family home, the space needed to be created to allow sociability and functionality. Designed for a family of six, it was integral that there were sightlines from the kitchen space to the dining areas and playroom just off the kitchen to ensure that an eye was kept on the children without having to be imposed in the room. Entertaining is also a key part of family life and so, the flow was important so that people know

instinctively what areas are for what purpose. Overall, the client requested that the design wasn’t boring. Yet, it had to be functional. The back wall in bulthaup b3 furniture in graphite hides all appliances, services, and storage with recessed grip drawers and cupboards. A small utility/galley kitchen to the back of this wall was also cleverly conceived by the team mirroring the look but in a lighter colourway, thus maximizing the storage and functionality. The surfaces are completed with stainless steel worktops for durability and simplicity, topped with an oak bar to add a warmth to the scheme. In this very architectural build, it was important to incorporate all of the requirements of family life whilst also reflecting the classic, simple lines of the house itself. Therefore, the design had to be durable, practical and an impressive entertaining space.

pen-plan kitchens have been a growing trend for many years now as they best serve people’s modern lifestyles. Now, where people have the space and growing expectations of how they want to use the space, there is a growing trend for a back kitchen or hidden area which they can use when they are entertaining, keeping all the mess hidden from view. Or, what we call broken-plan living space, by where we divide space with room

dividing objects to give a more zoned and semi-private approach to open-plan living. One thing we have noticed is that people are getting much braver in their specifications when it comes to finishes. Clients are no longer craving the white box style clinical kitchens of 10 years ago but something bolder, more furniture-like and they are often choosing more striking and bold finishes. Things to consider when designing your space: • Who is using the space? • What will we be doing in the space? • Most importantly, how will the space work and flow for us when there is just two of us in the space and how will it work when we have 16 guests in the space? • How will the kitchen work for me when I am trying to entertain 16 people? • Will I have the space and storage required to entertain? • Will everybody be comfortable in the space? REBECCA J MILLS, PRINT DESIGNER
How would you describe yourself ? I’ve always had a passion for print and pattern, as well as interiors and fashion. After university I started my career as a Buyers Assistant buying boys’ formalwear and from here I went on to work for many retailers as a Buyer and Product Developer. I also worked in licensing for many global brands. In each of my jobs I worked alongside designers and there was always part of me that wanted to do their role. When I hit 40 I knew that I had to do something about it and I made the decision to retrain in print design. It was a tough period as I was working, studying as well as balancing family life. After three years, I felt confident enough to take the leap and set up my own business. I launched my website in May 2018 and exhibited at Top Drawer in January of this year and since then I’ve not looked back. I’m now listed in a few small independent retailers and I’m also building up direct sales through my website. It’s definitely hard work, but I wouldn’t have it any other way. Who are your greatest influences? I’ve had many influencers along the way, but I think my greatest have appeared in recent years, since I’ve really opened my creative side and many are fashion related. I love what Alessandro Michele is doing for Gucci, it feels so exciting and refreshing. I also love Molly Goddard’s collections and the colours she uses are just gorgeous. I’m also influenced by music and love designing while listening to many different artists and interpreting the feel into my prints. What have been some of your best experiences at work and why? I’ve had many great jobs and I’ve realised even the ones I didn’t enjoy so much were perhaps the best learning experiences. My best and most enjoyable has to be working for Habitat as a Product Developer in the late 1990s to early 2000s. We had such a great team and travelled the world sourcing and developing products and worked with some amazing manufacturers and suppliers. Traditional vs contemporary style? I prefer mixing up both contemporary and traditional styles. I love the feel of having a few special traditional pieces set against
a contemporary background. We’ve just re-done our bathroom with a monochrome theme and I‘ve placed a small dark wooden antique chair in the corner, it adds a gorgeous and unique touch. What would you consider your greatest achievement? My greatest achievement has definitely been taking the leap away from my career path and setting up my own business. It was completely nerve wracking and the first six to nine months were a rollercoaster of a ride, but now it feels so right. What would your super power be? P.S. Last book you read? How to Raise Successful People by Esther Wojciki; I’d recommend this book to any parent, it’s help me gain a really great balance perspective. Dream buy? An Airstream; they’re so beautiful and timeless. I’d love to be able to travel around in one, but equally they’re just as lovely to look at and admire.
