How would you describe yourself ? Ambitious, energetic and driven. I am spontaneous with a genuine love for adventure. Where is home? And work? Home is work. Delamere! I grew up in Southport and went to university in Liverpool. I had a short time living in Manchester before I set my roots down in Cheshire. What did you want to be when you were younger? I always loved animals, so I wanted to be a vet! But I trained to become a lawyer, an interior designer, then a fitness instructor! I like to be continually learning, so there’s room for more yet. Name a few of your favourite places to be... I love travelling. Miami is my spiritual home. I also adored my travels to Cambodia, Vietnam and India. I’m always looking for new exciting places to try. I love to experience places as the locals would and have stayed with hill tribes in Vietnam and built huts with landmine victims in Cambodia. What/who inspires you? I have tremendous admiration for anyone who runs their own business no matter how big or
small with the challenges it creates. I especially admire strong women filling these roles, particularly those with families too. I also gain great inspiration through my travelling experiences.

Natalie Anglesey chats with Olivia Cooke about her meteoric rise from a theatre workshop in Oldham to the set of Vanity Fair and living in New York
W
hat takes a young girl from Oldham to Hollywood within a brief period of six years? Olivia Cooke’s meteoric rise, from Oldham Theatre Workshop, to star in Steven Spielberg’s latest film, Ready Player One, released earlier this year, seems itself the stuff of movies. Although her home is now in New York, twenty-five-year-old Olivia hasn’t entirely abandoned us. This autumn, we’ll see her star in the coveted role of the literary vixen, Becky Sharpe, in ITV’s sumptuous production of Vanity Fair. “When I first heard I’d got the role, I felt an overwhelming sense of grateful excitement I’d got the job. But then I thought they have cast the wrong person,” Olivia confessed at the London launch. “Everyone has their impression of Becky Sharpe in their head so, after the joy of getting the role, I felt an impending sense of dread at having to play her”. I’ve been fortunate to see the first two episodes, and Olivia’s performance on screen is excellent. Born and raised in Oldham, her parents divorced when she was a child and she and her younger sister, Eleanor, lived with their mother, Lindsy. Olivia loved ballet and gymnastics and started acting when she was eight years old at the famous Oldham Theatre Workshop. At 14, she secured her first local talent agent who placed her in a number of commercials. She appeared in One Direction’s “Autumn Term” video, as a student getting a

piggyback ride from Cheshire’s Harry Styles! Olivia attended Royton and Crompton Secondary School and studied drama at Oldham Sixth Form College. When she was 17, she starred as Maria in the college’s production of West Side Story. Soon after, she landed her first leading role at Oldham Theatre Workshop’s Prom: The Musical. She left college just before taking her ‘A’ Levels when casting director, Beverley Keogh, got her roles in two BBC miniseries, Blackout and The Secret of Crickley Hall.Both proved pivotal roles in Olivia’s career and eventually led to her leaving Oldham. “ I’m based in New York now paying flying visits back home. But that’s why it was great filming Vanity Fair because I was based here for six months. My mum, who still lives in Oldham, came down to see me in London for weekends. I couldn’t go back to Oldham because work on Vanity Fair was pretty full on. And you know what it’s like, wherever you are from, once you go back to your mum’s house for two days, you feel like a fifteen-year-old again!” In 2012, still with no formal training, Olivia was cast in the film, The Quiet Ones and acquired an agent in Los Angeles. She played Emma, one of the leads, in the contemporary Psycho prequel Bates Motel. Her second feature film, The Signal, with Laurence Fishburne, opened at the 2014 Sundance Film Festival. That same year she led the cast of Ouija, horror film which proved a box-office success in spite of being panned by the critics.

She also supported the Save The Children campaign by appearing in Bulgari adverts. Olivia next appeared in the comedy-drama, Me and Earl and the Dying Girl, in which she shaved off her hair because the female lead was battling leukaemia. The film premiered at Sundance where it was awarded both the Grand Jury and Audience Awards. Katie Says Goodbye, with Jim Belushi and Mary Steenburgen, was followed by Dan Leno and the Limehouse Golem with Bill Nighy- both premiered at the 2016 Toronto International Film Festival. Olivia then starred in the thriller film Thoroughbreds, which premiered at the 2017 Sundance Film Festival. Most recently she starred as Art3mis in Steven Spielberg’s science fiction adventure, Ready Player One, released in March of this year. She will also be seen soon alongside Samuel L. Jackson in Life Itself. But in spite of previous successes, Olivia admits she was still concerned about her starring role in Vanity Fair. “When I turned up for the first day of filming in Budapest I was really nervous and convinced I didn’t know enough about Becky Sharpe. She’s stuck in a class system and is determined to break through the glass ceiling by marriage. She’s become an expert charmer because she’s had to and if she was alive today she’d probably be running a film studio! But ultimately this is a story of female friendship and women empowering other women.” Olivia reminisced about filming in Budapest and putting on a corset for the first time. “It was 35C, and it was sweltering. However, we were filming in a beautiful location, and we had a good first day. Tom Bateman, who plays my love

interest Rawdon Crawley, Claudia Jessie who plays my best friend, and Johnny Flynn who plays Dobbin who is in love with her- the four of us got on really well and we laughed a lot which helps.” Olivia also shares the screen with some of our most famous actors including Michael Palin, who plays the author William Thackeray. Indeed Michael revealed he’d chosen Vanity Fair as his Desert Island book, as it’s one of his favourites, and he impressed Olivia. “Michael was such a gentleman and was so sweet and kind. There’s no ego there although everyone was a bit star-struck. It was also amazing working with Martin Clunes and Frances de la Tour. Martin was generous, very easy-going and a tremendous actor. We had such a ball together. Frances too was absolutely brilliant. I’ve just been very lucky with a great cast. I’ve never met a funnier bunch of people, and we laughed so much over the six months of filming.” I wondered if Olivia had any family time during filming.” I was going to ask my mum Lindsy to be an extra in one of the ballroom scenes, but she would have died of embarrassment. However, she’s still really proud of me. She says everyone in the street keeps asking about Vanity Fair and how I am. hen her Hawarden-born husband Sasha began his career as a DJ playing the best nightclubs and parties in the world, Zoie Kingsbery Coe was living the jet-set lifestyle and stayed in the very best hotels in almost every main city across the globe. As the superstar couple then became a three (and now a five), a switch change happened. Zoie began seeking out kid-friendly property rentals that made her family feel at home wherever they were in the world. As increasing numbers of parents asked Zoie to share her travel expertise and property secrets, Kid & Coe was born. Here Zoie talks to The Cheshire Magazine about how and why it is possible to really have it all on holiday with the children in tow. Can you tell us about life before becoming a mum and what changed in relation to how and where you travelled when you had babies/toddlers? Life before kids was pretty different. We travelled a lot - my husband is an international DJ - and in many ways, that travel was a lot easier, with just two adults to please. And then…My husband, our baby and I were travelling and realised that it took a lot of effort to find properties that were truly child-friendly and suitable. The hotel experience is wonderful - but it’s not always wonderful with kids. The room service menu wears thin, you’re worried about your children being disruptive, and night times can be a trial if you’re all in the same room. Like so many parents before and after us, we realised that our travel habits had to change if we wanted to keep on enjoying this lifestyle - and we certainly did. What was the lightbulb moment that inspired you to create Kid & Coe? That would have to be the Bali pool villa we checked into… if memory serves me right, I don’t think it had proper doors, was surrounded by pools, and loads of little pebbles. All my toddler wanted to do was pop those pebbles into his mouth or throw them into the pool. I was looking for a solution out there that would help - a website
with recommended properties for families, or a way to search for villas that would work for us, and I couldn’t find one. So...the idea for Kid & Coe was born. What are the essential elements that make travelling with a family easier and better for those who like the finer things in life? One of the things that we champion at Kid & Coe is freedom to travel the way your family wants and needs to. Family travel doesn’t have to mean hotels with kids clubs, resorts with all-inclusive setups and everything tailored around the kids but of course, it can! We believe there is a balance between something that works for kids and something that works for parents - and you don’t have to compromise. Every family is a little bit different, so I think it’s important to not be too prescriptive. Just speaking for my family (we have a toddler daughter, a 7-year-old daughter and a 10-year-old son), we’re looking for something that keeps Ivy safe and occupied, that’s close to activities that Luca and India will enjoy, and that is luxurious so it feels like fun for us too. Travel with kids of different ages needs a different touch, so we make sure all our listings have the right details on them so parents can decide for themselves if it’s going to suit their children. Anyone who has had more than one child can attest that one baby can be very different from another!

How do you select the places that feature in the agency? We get a number of applications per week from families wanting to rent out their homes when they are away - for a minimum of four weeks per year. We look at the location to see that it’s really family friendly, examine the property carefully to check it is safe and welcoming for children, and look for properties with a high standard of decor. A lot of properties include toys and books for kids, plus maybe bikes, a playhouse, high chair and crib. Some will also have add-ons, like a cleaner, private chef, chauffeur and other staff options, depending on where they are in the world. It’s hard to make a blanket statement about Kid & Coe homes because features can vary, but one thing I’d say is that they are all places we would love to stay in ourselves. What is it like to be a host family or to swap your home? We get really great feedback from our hosts and I’m one myself - our Ibiza apartment is on the site, as were our houses in New York, Los Angeles and London when we lived there. I’ve also participated in the rental and home swap options. It gives you a chance to meet a likeminded family from another country, and we’ve seen great friendships spring up from these interactions on the site. It’s much more than just a way to make money while you travel - being a Kid & Coe host is a way to join a select group of families who love travel, design and kids.

Do you ever use third party services like babysitters, car rental and day our guides when you’re away and what would be your top tips on finding ones that are good? Absolutely. These extras can turn a stay into a vacation and I’d highly recommend considering them! We partner with a concierge service for most of our American properties, where you can book all these extra items easily, and we also work with Baby Quip to offer supplementary baby equipment so you don’t have to travel with it. In terms of finding babysitting, car rental and guides in other locations, my first port of call is always my network. Mums know everything! And there’s always that friend who can provide extra insight. Second to that, I’d be asking the host of the property I’m staying in. Local mums are such a good source of genuinely useful information it’s one of the reasons Kid & Coe works so well. Being left a hand drawn map showing the nearest kid-friendly spots when you arrive along with ideas of what to do can really make your trip fantastic. Lastly, we work closely with Babyccino - they have a great selection of travel guides on their website, all written by well informed local mums, which serves as a good inspiration point too. What has been your ultimate favourite destination since starting Kid&Coe and where do you get the best feedback about from families? This is a hard one as there have been many great trips with my babies - all special in different ways. A trip that comes to mind was when we went to Playa

Las Tortugas and Sayulita, in Mexico. We celebrated my son’s 8th birthday at the Palmeras Residence residence, where they made him his favourite meal of fish and chips and chocolate cake. There was no WiFi, which was refreshing, and the kids roamed the beautiful grounds. We released freshly-hatched baby turtles to the sea and enjoyed the simple connection with nature and each other. In terms of feedback from our guests, we ask guests to review their stays - it’s a great insight when you want to book a stay yourself - and we get reports saying our properties have topped their all-time best lists, and that they are keen to make another trip. Both are also supporting her fundraising event in September 2018 in aid of Child Bereavement UK and Red Sea Pedestrians, an evening which Gary is hosting and sees an exclusive performance from Gary Barlow. In a rare couple interview, Liz caught up with Emma and Gary to find out more …… The fundraising event I am planning on September 27, 2018 is partly in aid of Child Bereavement UK. Why is this charity so dear to you? Emma: The charity is close to my heart. The services and teams at Child Bereavement UK are truly amazing in the exceptional and skilled way that they help the families that they support. The charity works with a family to find a purpose in their lives again, after the loss of a family member and offers support to these families at a time when they feel that they cannot go on any more. It’s just incredible. How did you get involved? What is your role? Emma: I first heard about CBUK at a charity lunch you planned at the Hilton Deansgate Manchester Hotel. I bought a table, Gary Barlow was the guest, and I am a huge Take That fan! I always wanted to be involved in supporting a charity and having heard about the work that the charity does; I felt this could

be the one for me. I got chatting with Ann Chalmers, the charity CEO, and knew that I wanted to get more involved. I am now a volunteer for the family support group at the charity’s Runcorn Centre. Emma: Money raised from the fundraising event will go towards supporting the work of CBUK in the north west, and in addition, support a number of small, local charities through the Red Sea Pedestrians charity. The couple - rarely do interviews, so I am honoured to get the husband and wife team together. How did you meet? Gary: We met at the Sugar Lounge bar at Deansgate Locks in 2004. I was out with friends and got chatting to Emma. The rest is history! How long have you been together? Gary: We have been together 14 years now. We have lasted a lot longer than the Sugar Lounge did! What are your tips for a happy marriage? Emma: Date night is crucial! Make sure you plan a night out, just the two of you, to chat

without the children being there. Our kids have transformed our lives, and we love spending time with them, but it’s also important to have some time as a couple. We have busy lives, so taking the time just to be together is very important. Who’s the most romantic? Emma: Gary. Gary: well, it might be me! How do you support each other in your careers? Emma: we are a team. Gary and I realise that life is busy. Gary works extremely hard, and this has always been the case. In whatever he does, he puts in 110%. We make sure that we have family time at weekends with our girls and try to at least once a month have a meal out - just the two of us. Likewise, Gary is hugely supportive of whatever I set my mind to. Gary: Emma is an incredible wife and mother, supports everything that I do and also has her own ambitions. Her work with CBUK has been inspiring. I was only too happy to support her by getting involved in the fundraising event - as a host for the evening! No pressure then! Where do you currently call home? We live in Bolton and have two girls, Molly aged 9 and Sophie aged 8. What makes the area special to them? Gary: I’m from Bury originally and since we met, we have lived in the Bolton area. We did have a spell of living in central Manchester, before the children were born, but moved back to Bolton so we could be closer to our family. Family is important to both Emma and I, so it was a natural move for us. Emma: Gary has an office in Manchester and
is there most days, and so we are both in and out of central Manchester on a weekly basis. We love our city! Manchester has a strength and personality that is unique. Favourite eatery? Emma: We love eating out! El Gato Negro in Manchester, Nutters restaurant, and a family favourite is Puccinis in Swinton. Things to do as a couple/family? Gary: You may have realised by now that we eat out often and are real foodies! As a family, we love watching sports, and we all go to watch Salford City as often as possible. Keeping fit and being active is also very important. Both our girls play netball at weekends, which keeps them busy. Where is your favourite holiday destination? Gary: Megève in France for the skiing. We all love Deia Mallorca for the tranquillity and great food. Emma: Bali - the incredible people, make it so special. What are the couple up to next / moving forwards? UA92? Emma: Gary is super busy getting the university (University Academy 92, offering sport, business and psychology degrees) started and his many business projects in the city. I’m looking forward to starting my studies in level 4 counselling and continuing to support CBUK. I suppose we cannot complete this interview without a cheeky prediction for the start of the next Prem season from both of them. Emma: We are both Manchester United fans and hope it’s an excellent season for them. Beyond that – we would hate to predict anything. Phuket’s celebrity chef Tammasak Chootong reveals his culinary inspirations
O
ne of the most famous and celebrated chefs in Thailand, Tammasak Chootong, or “Chef Noi” to viewers of the TV show Iron Chef Thailand, has taken Phuket Island by storm. Chef Noi has pioneered a Euro-Thai culinary ethos that utilises the finest and freshest locally-sourced ingredients together with European cooking and presentation techniques. Chef Noi learned his skills in the heat of several Michelin-starred kitchens across Europe, he cooked on board the Queen Elizabeth II cruise liner and was a senior chef for the JW Marriott and Banyan Tree resorts in Phuket. Since returning to his hometown, Chef Noi has developed the acclaimed SUAY restaurants brand and the Positive Kitchen culinary school.
We asked Chef Noi about his culinary inspirations and his Phuket roots. Where do you find your inspiration for the menus at your SUAY restaurants? I love Thai cuisine, especially the complex flavours and stimulating textures of our dishes. As a Thai, I personally enjoy local ingredients that make me feel a sense of home as I savour their tastes, and this has been my inspiration. When I set out to design a menu or a particular dish for the two SUAY Restaurants, I always keep in mind how best to stay true to basic and traditional components of a dish and showcase the “Thai-ness” of it, while enhancing flavours and incorporating lighter and more refined ingredients that appeal to a western palate. Why did you choose to open your flagship restaurant in Phuket as opposed to anywhere else? I spent time in Europe training in a Michelinstar restaurant and heading the kitchen on board an exclusive passenger cruise liner. But I always knew that I was going to return to my home and do what I love here.
SUAY Restaurants Chef Noi established the instantly successful SUAY restaurants brand in 2010, fulfilling his lifelong dream of owning his own restaurant on the island of his birth. His flagship SUAY restaurant is in Phuket Town, and this is where Chef Noi puts his many culinary ideas to the test. The restaurant combines fine dark leathers, floor-to-ceiling windows overlooking a manicured floral lawn, stone statuettes, and a cosy wooden balcony for those steamy Phuket evenings. Seven years later, the second SUAY restaurant was opened, SUAY Cherngtalay, a relaxed and stylish establishment with brown suede chairs, heavy wooden tables, tiled flooring, and an outdoor patio and bar overlooking a courtyard and private BBQ terrace for those more intimate foodie occasions.

I came to Phuket to work with leading luxury resorts on the island, and throughout that time I have come to love this paradise island that is not only beautiful but also rich in culinary history. Inspired by this, I decided to settle down here with my family and open the flagship SUAY Restaurant in Phuket. How has your time training and working abroad influenced your cooking? In addition to the skills of managing either a large or meticulous kitchen, or often a combination of both, during my time abroad I came to appreciate advanced and simplified cooking techniques aimed to enhance or preserve tastes, textures, and the healthfulness of ingredients. Many times, these essences can be diminished in Thai food through stir-frying and other similarly harsh methods. I tend to use modern cooking techniques to preserve flavours and the quality of the ingredients better, and create a lighter and healthier dish.
Positive Kitchen Chef Noi’s talents don’t stop at restaurants, and he also owns a catering, food consultancy, and cookery school in his own home, Permsap Villa near Cherngtalay. Not only do guests at Positive Kitchen learn how to cook the dishes that tantalise the taste buds of food critics from across the globe, but groups can also organise wine tasting sessions, intimate home-cooked dining on the 12-seater dining terrace and relax in the comfortable surroundings of an authentic Phuket villa.
You have a number of signature dishes at your restaurants. Which is your personal favourite? And why? Northern Thai cuisine is very special to me, and I always enjoyed the combination of sweet, sour, and savoury tastes that are characteristic of that region. And as a chef and restaurant owner, it is very rare that I get to sit down and enjoy a complete meal as I navigate both the kitchen and the floor each evening. So, my personal preference is the Thai Royal Leaf Wrap with Foie Gras and Tamarind Sauce because this bite-sized savoury dish is not only flavourful with the herbs, roasted coconut flakes, and Wild Betel leaf but also very easy to eat on the go.

Why did you decide to open up your home to both professionals and amateurs for cooking classes through Positive Kitchen? It all comes back to a sense of home to me. As a chef, I enjoy cooking food for people, no matter where. And when people can appreciate not just the food but the creativity, skills and effort that go into a meal, then I am excited to share what I know with them. I have always felt that my home at Positive Kitchen is a place that is inviting and very much conducive to culinary entertainment. How do you source the ingredients for your dishes? The first part of my day is always to go to the local markets to select ingredients for the day. I prefer to see and choose fresh produce myself, so I can be assured of the quality of the ingredients, keep on top of seasonal and local selections, be inspired by the variety available, and connect with local vendors. In Thai cooking, starters are important; they cleanse the palate for the main dishes and prepare the taste buds for the symbolic spices that Thai cooking is renowned for. Diners’ favourites include the Signature “Laab tuna”, which features a fresh tuna tartar with miso-lime and a side of crispy fried mushrooms and Isaan spices, and “Tomkha cappuccino” soup, which is a broth of galangal and coconut with Thai herbs and grilled fresh scallops.

FIRE UP YOUR ENGINES The big cat with a powerful roar

aguar’s F-TYPE, is a machine you can’t help but want to drive. And drive hard. Here, we are going to focus on the Convertible version. On first impressions, the car looks poised and ready, even when it’s standing still. ‘Drive me’, it seems to say as you approach the door and the handle springs out to greet you. ‘Start me’ it seems to shout, once you’re in the figurehugging sports seats. ‘Rev me’, it seems to insist, as you fire the engine and a spectacular set of aural fireworks begin. It’s certainly very driver-orientated, with those in the front seats separated by a prominent grab handle, which sweeps down and behind a joystick-shaped, SportShift gear selector. This is clearly part of Jaguar’s determination to create something very different; an intimate place, where luxury is not allowed to supersede purpose. The roof is a multi-layered fabric affair, with a thick Thinsulate lining, that raises or lowers in just twelve seconds, at speeds of up to 30mph. Even in the entry-level 340PS V6 model, sixty from rest takes just 5.1 seconds, en route to 161mph. Further up the range, where a Dynamic Launch Mode is standard, the V6S

model powers to sixty in just 4.8 seconds on the way to 171mph. Fast enough for anyone, you would have thought, though not for the folk who’ll settle for nothing less than the 495PS V8 version, which is good for sixty in 4.2 seconds, on the way to 186mph. Overtaking in this variant will be instant, with 50-75mph taking just 2.5 seconds. But making this car fast, was a very small part of making it great. This is a machine that steers, handles, stops, goes - and sounds - exactly as a Jaguar should

NEW OR USED ? Weighing up the options to help you decide what to buy
W
hen looking to buy a car, is it more economical to purchase new, or used? We spoke with a local Toyota dealership, who gave us the following examples.* Meet Amelia, a 20 year old student from Chester. Following a gap year, she is excited to be heading off to university in the autumn and her parents have decided that it would be nice, for Amelia to have her own transport. As this is going to be her first vehicle, Dad says, ‘let’s treat Amelia to a second hand car’. The family has a
budget of £3,000 and they search online, for something suitable. Amelia’s parents find a 2012 Vauxhall Corsa, with 59,000 miles on the clock, which they like the look of. The seller says that it is clean inside and out; a nice little run around, and would make an ideal first car. After a brief negotation, they purchase the car for £3,000. To ensure that the car is in good working order, Amelia’s parents arrange for it to have two new front tyres, at a cost of £120. After a service (£179) MOT (£49) three year warranty

loves If the family returned the car to the dealership, they would walk away with a cheque for £1,792.50. This means that their outlay has effectively been £4,670.10, which is extremely close to the used car example (£4,661). (£500) and road tax (£30) their outlay, is £3,878. For peace of mind, they also arrange AA Roadside cover, for £39 per year. During the first year, Amelia’s car runs perfectly and there are no additional costs. In the second year, it needs new discs and pads, as well as a new exhaust. After its annual service and MOT, it has cost Amelia’s parents an additional £619. By year three, the treads on both rear tyres have worn and they need replacing. The car also needs a new clutch and the total cost for the year, after service and MOT, is £747. Over a period of three years, Amelia’s Vauxhall Corsa has cost her parents £5,361. It is now valued at just £700, so when they come to sell the car, their total outlay has been £4,661. But what if the family had purchased a brand new car? Let’s consider, that instead of buying a used car, the family head to their local Toyota dealership. They meet with a sales executive, Tom, who shows them a brand new Toyota AYGO x-play, for £10,328. With a £3,000 deposit, the monthly payments will be just £89.16, per month. The car will need servicing twice within the first three years, costing £264. Amelia’s parents also pay £78 for AA Roadside cover over two years (the first 12 months of cover is free) and thanks to the AYGO’s fuel efficiency, tax on the car is £0! After three years, the family return to see Tom and having made 35 monthly payments, the total cost has been £6,462.60. The final repayment on the car, would be £4207.50, but when the dealership value the car, it is still worth £6,000. This means that Amelia has £1,792.50 equity and can choose to trade it in for a new car, if she wishes. Alternatively, she could finance the remaining amount and keep the AYGO.
Below, we compare the two options available, with an initial budget of £3,000. There is a lot to say for choosing a new car, over a used vehicle. We have been quite conservative with our examples, when considering the potential costs of maintaining an older car. For example, an issue with the timing chains on the Corsa, could cost £550 to repair. The cost to replace the ECU (Engine Control Unit) if it fails, could be in the region of £1,500 and a blown head gasket could cost £2,000.* If you choose to buy a used car for your son or daughter, when they head off to university this autumn, bear in mind that it is not necessarily the most economical way to purchase a vehicle. After three years, you might not be left with much to show for your investment. *We have estimated the costs involved, when purchasing a second hand car and the examples used are fictitious. We have not included the costs of insuring a vehicle, as these will vary significantly, with a wide range of variables.

A luxury pick-up might sound like a contradiction in terms, but Mercedes-Benz has made the combination work, as James Fossdyke has been finding out
W
hen Mercedes-Benz announced that it would build a luxury pick-up truck called the X-Class, the German company attracted the sort of questioning glances that make Roger Moore’s famous raised eyebrow look nonchalant. But although the words ‘luxury’, ‘pick-up’ and ‘truck’ may mingle as awkwardly as ‘excellent’, ‘German’ and ‘cuisine’, the idea is backed up by sound logic. You see, SUVs are seriously popular. If you wander down the streets of Alderley Edge, Hale Barns or any other affluent town you care to mention, you’ll find the kerbs peppered

with posh 4x4s. Standing out from the crowd, therefore, is difficult. You need something more imposing and more rugged than a Range Rover, but no less luxurious. That’s where the X-Class comes in. It’s loosely based on the Nissan Navara, which is widely regarded as one of the best pick-up trucks on the market, but it’s been heavily redesigned to ensure it’s both more luxurious and more capable than the Japanese vehicle. It certainly scores well on the luxury front. Sitting in most pick-up trucks is a bit like being a cookie in a Christmas selection box: it’s dark, it’s uncomfortable, and thin, shiny plastic surrounds you. In the X-Class, though, it’s much more like sitting behind the wheel of a premium SUV. Okay, a few of the fixtures aren’t quite what you’d expect from a Mercedes (mainly because they came from a Nissan) and there’s no obvious reason for the big, blank gap between the CD slot and the climate control switches, but otherwise, it’s very good. The infotainment system is straight from a C-Class saloon and the materials feel as though they belong to a car, not a workhorse. It’s certainly every bit as

premium as, say, a Jaguar E-Pace. And it has much more presence than the Jag, if only by dint of its size. At 5.3 metres long, two metres wide and more than 1.8 metres tall, it’s the sort of vehicle that projects an uncanny sense of imperviousness. If you meet one of these in anything smaller than a 32-tonne truck, you’ll get out of its way. Of course, plenty of pick-up trucks are similarly enormous, but the X-Class styling somehow gives it that little extra something. It’s difficult to put your finger on, but the suave Mercedes image seems to make the X-Class even more intimidating than its Nissan-badged cousin. The X-Class backs that image up with monstrous off-road capability. There is a selectable four-wheel-drive system, a low-range gearbox and about 22cm of ground clearance, so it’ll tackle terrain that would leave most SUVs floundering. It can wade through 60cm of water, too, and it’ll tow a trailer weighing up to 3.5 tonnes. It’s the way the X-Class behaves on the road that really impresses, though. Because their suspension is designed to carry a payload of up to one tonne, pick-ups often bounce around the road like Zebedee on speed, but the Mercedes doesn’t. Of course, the big Mercedes is nowhere near as smooth or as balanced as, say, a Porsche Cayenne, and it still leans a lot on bends, but it’s more comfortable and more stable than any other pick-up. There are issues, however, including the lack of a proper boot. You can buy covers for the rear-load bed, which is usefully enormous, but you will miss the convenience of an SUV’s integrated luggage bay. Another weak spot is the engine. It’s a 2.3-litre Nissan diesel that’s offered in 158bhp 220d and 187bhp 250d guises. Unsurprisingly, considering the X-Class weighs more than two tonnes, neither version is especially quick, and both are noisy whenever you try to use the
modest performance. Happily, though, Mercedes will soon introduce its own 3.0-litre V6 diesel that promises to be both more powerful and more refined. The price is a sticking point, too. If you want the luxurious 250d Power automatic version we tested — and you do, because the basic 220d Pure model comes with the less potent engine, a manual gearbox and little else — it’ll cost you almost £41,000 before you so much as see the options list. And the forthcoming 3.0-litre? That’s expected to cost around £50,000. That’s a huge amount of money for a pick-up. But before you dismiss it out of hand, consider this: because the X-Class can carry a one-tonne payload in its flatbed, the taxman considers it a ‘dual-purpose’ vehicle. So if you can convince your company to shell out for a top-of-the-range X-Class, it’ll cost you just £670 a year in company car tax (or double that if you pay 40 per cent income tax). Even a Ford Focus will cost you significantly more than that. But Mercedes’ mission was not to offer sales reps a cheap alternative to a Ford Focus; it was to provide you and me with a rugged SUV alternative. And in that aim, it’s succeeded. No, it doesn’t quite have the road manners of a Range Rover, but the shortcomings are minor enough to be forgiven by those who fall in love with the image.

The island holds so many special memories for me, my first trip back in 2015 was incredible, and I have gone back every year since. Calvin Harris during BBC Radio 1 week at Ushuaia in 2015 was a real eye-opener, lights, bassline and the planes flying right over ahead in Playa d’en Bossa. I have discovered some real hidden gems on the island, you have to visit Sa Capella for dinner it is an old chapel with a beautiful terrace and high vaulted ceilings, I had the best steak of my life there, and you cook on
your own grill. Ibiza’s sunsets are legendary, and most people opt for Café Mambo in San Antonio to view them. However, Sa Talaiassa in the south-west of Ibiza is incredible. I was lucky enough to see the most beautiful sunset there one evening and that undoubtedly the best place to experience the magic of the end of the day in Ibiza, plus it is entirely free! - Michael
With snow-capped mountains through one window and rolling waves through the other, we love Hapuku Treehouse Lodges in New Zealand’s crayfish capital, Kaikoura. Run by ex-banker and diplomat Chris and his wife and Masterchef runner-up Fi heading up the kitchen, the lodge is warm, quirky and a true family affair. With local food heroes introduced on the daily menu the dishes on offer are about what’s good right now. The local rock lobster (crayfish), after which Kaikoura was named (Kai - food, koura - crayfish) is a must. Simply served with lime butter, it has to be eaten the New Zealand way - making a mess. As part of Hapuku’s commitment to the environment they plant a tree for every guest but if you ask extra nicely you can go out and plant it yourself. Whilst dining al fresco and taking part in the popular sport of people watching, I sampled the delicious ‘monster fish n’ chips’, and served with a frosted glass of Kendall Jackson Chardonnay, it was just the ticket. For a more formal affair the Piccolo Ristorante serves first class Italian dishes. I ordered the ‘Chef’s Amatriciana’ – fusili pasta with balsamic caramelised onions, pancetta and crushed red pepper, which was served with aplomb. And accompanied by a bottle of Brunello di Montalcino, with its silky tannins and notes of cassis and cherry, it was unforgettable. And for those of us with a sweet tooth, head for Kilwin’s, which specialises in ice-creams, sticky toffee apples and homemade fudges, which can be viewed being paddled on site. The creamy sea-salt caramel fudge or delicious peanut butter fudge is sure to satisfy the most discerning taste buds. Or, wander along to Jan’s Homemade Candies, located on North Ocean Drive and select some of the mouth-watering chocolates on display, which include chocolate butter cream, coconut, lemon, maple, orange, raspberry and vanilla. lthough as a nation we love to travel abroad. So much so, that sometimes we forget there are many wonderful places to explore in our own country. A case in point is the stunningly beautiful Lake District which is only a couple of hours drive away. There’s plenty to suit all requirements: including the ever-popular Windermere, with a plethora of shops nestling round the beautiful lake. However, we enjoyed the towns glorious views en route to more genteel Grasmere and our destination The Wordsworth Hotel. This well-known, four-star spa hotel, located in the heart of the charming village, is built of Lakeland stone and named after the famous romantic poet, William Wordsworth, who lived in the village for many years. Several important people have visited there including presidents and royalty. There were portraits of both Prince Philip and Prince Charles on the walls and I slept in the spacious Woodrow Wilson room with lovely views of the neighbouring mountains. The hotel enjoys two acres of grounds and each of the 38 guest bedrooms and individual suites benefit from being individually designed with luxurious touches, including Egyptian cotton sheets, free internet access and Temple Spa amenities. The premium rooms also offer Grasmere Gingerbread, fluffy robes and slippers as standard. The Signature Restaurant holds one AA rosette award and is one of the finest restaurants in the area serving lunch and dinner to residents and non-residential guests, with delicious seasonal menus created with local produce. Next door is the Dove Bistro, where traditional pub classics can be enjoyed with a glass of ale. Lunches and afternoon teas are also served in the hotel, where guests can enjoy the surrounding views, from either the Conservatory or Garden Terrace. The Wordsworth Organic Spa makes a stay even more special with a small indoor heated swimming pool, sauna and Jacuzzi among the facilities to help you relax. Lauren, who runs the spa, is an expert in both specialist massages and beauty treatments which I can heartily recommend.

Grasmere, flanked by two small lakes, Grasmere and Rydal Water, is a wonderful location from which to explore the Lake District. In the quaint village you can purchase Grasmere’s famous gingerbread and lunch by the riverside. Fans of Wordsworth can visit the house, which was initially home to the poet, his sister Dorothy and eventually his wife and some of his children. How they could all cram into tiny Dove Cottage, which is preserved as a museum, is a miracle. The more imposing nearby Rydal Mount, which is also open to the public, was Wordsworth’s family home once he became famous and where he spent the majority of his life. He was visited by the great and good and, among his famous friends, fellow poets like Coleridge who all became known as the Lakeland Poets. In the village you can visit the graveyard where William and his family are buried.

I actually began working at Piste in 2014 as a Chef De Partie and was promoted to Sous Chef in that same year. I was offered Head Chef when we opened Piste Sandbach, but unfortunately, I had to turn it down to move to Ireland with my family. However, James and I never stopped talking, and when the opportunity came to move back, I jumped at the chance! It is a lovely place to work and indeed a family business. They never let anyone down and are always there for every single member of staff. So, I am now back here in Tarporley with my team, and it’s incredible! WHAT IS YOUR FAVOURITE FOOD? Definitely barbequed food, without a shadow of a doubt, cooked over a charcoal grill, tropeiro rice and a fabulous fresh salad. WHAT IS YOUR FAVOURITE INGREDIENT? Quite simply, the humble potatoe – You can do so many things with them! WHAT IS YOUR FAVOURITE DRINK AND WHY? Caipirinha of course! Okra
Okra, also known as lady’s fingers, is a pod grown in tropical and sub-tropical regions around the world. Infamously known for its slimy texture, okra was first discovered in Ethiopia, as well as some areas of Sudan. It made its next appearance along the Nile River around the 13th century. This vegetable is also a good source of potassium, vitamins A and C, as well as folic acid and other B vitamins.
WHAT IS YOUR FAVOURITE PIECE OF KITCHEN KIT? Having just one is difficult! I believe a good set of pans and good knives, anything is possible. WHO INSPIRES YOU? I have worked with so many great chefs in my career in Portugal, Ireland and the UK. John Coffey, Head Chef and owner of Thyme Restaurant in Athlone, Ireland has most certainly been my biggest inspiration and made me the chef I am today. WHAT WOULD BE YOUR DESERT ISLAND DISH? Braised lamb shoulder, crisp belly, spring onion mash, broccoli, lemon jus - I love this dish so much in fact, it was the first thing I put on my new menu when I got to Piste!

0 Stories are located at No1 Spinningfields with the culinary direction being led by acclaimed chef Aiden Byrne. 20 Stories are owned D&D London which is a group of diverse restaurants, bars and hotels based principally in London, but also with venues in Paris, New York and Tokyo. On arrival at 20 Stories, you know that you are entering into a restaurant that excels at customer service. You are greeted by a very welcoming efficient reception team, who guide you to the lift where your journey to 20 Stories starts. We were greeted by Vito the Assistant General Manager who whisked us off to the grand looking bar area. This area was a fantastic space for informal client meetings or after work drinks – and with incredible 360-degree views from this fantastic space. As an aperitif, we enjoyed a glass of a British Blanc de Blancs from Kent an Albourne Estate at £11 per glass which had a rich apple note that was very light and a perfect start to the evening. Once we had viewed the menu, we were swiftly taken to our table by Charlie, our waiter. To start, I chose the fennel cured salmon, beetroot and orange vinaigrette which were beautifully presented with all the colours of the rainbow on a plate. It was a great balance of fennel with the right amount of citrus to cut through the richness of the salmon but still keeping it as the hero of the dish. My colleague went for the Chicken and Leek Ballotine with roasted hazelnuts – this was simple but delicious. Keir, our very knowledgeable sommelier, recommended we try the 2017 Rose 88
Chateaux Minuty £12 per glass. Keir’s choice was perfect; it was a pale rose which had a crisp finish which was a perfect selection to accompany our starters. Next to the main – I opted for the rump of Herwick lamb, spiced couscous and apricots. The lamb was cooked to perfection and melted in the mouth. The accompanying couscous was a surprise as it was flavoured with saffron but had the consistency of a creamy risotto which was rich and delicious. Keir suggested I have the 2015 Pinot noir Neilson at £11.5 per glass, which was a rich, deep glass of dark berries which was a dream pairing with the lamb. My colleague opted for 21 days dried aged Yorkshire Ribeye which was beautifully charred. I must say I got very
distracted from my main by the triple cooked chips and often in a “carry on” style of distraction pointed out the beautiful views to my colleague while helping myself to a chip! Keir paired the steak with a 2014 Dolcetto Lagrein at £10.5 per glass which again went perfectly. He did an excellent job in pairing the wines, and I was suitably impressed with him all night. Then onto dessert, my colleague and I struggle to decide on desserts, so we ordered 3….. We opted for the Manchester tart, the Chocolate fondant with rocky road ice cream & Chocolate & Violet. The stand out here was the Chocolate and violet – it was like eating a giant Ferrero Rocher with a side of parma violets ice cream. All of the desserts had a nod to a childhood dessert/ sweet which is a great as they have such an emotional tie with people’s memories. 20 Stories excelled, both my colleague and I will be back for both food and just for drinks – it is the venue that has it all! Raymond Blanc We chat about Blanc Brasserie and the gorgeous King Prawn with Chermoula Dressing dish created for The Cheshire Magazine
O
ne of the world’s most respected chefs, Raymond Blanc is totally self-taught. His story begins in Besançon in eastern France, where Raymond was born. He was inspired by the local terroir, and most of all by his mother, the formidable Maman Blanc who used fresh, local and seasonal produce to create wholesome meals for the family. Raymond arrived in England in the summer of 1972, to work as a waiter. One day, when the chef was ill, Raymond took over the kitchen and his future career was born. In 1977, he opened his first restaurant, Les Quat’Saisons in Summertown, Oxford. It was an overnight success, winning Egon Ronay Restaurant of the Year, and two prestigious Michelin stars within a couple of years. It was in 1984, however, that Raymond fulfilled a personal vision, creating a hotel and restaurant in harmony when he opened Le Manoir aux Quat’Saisons in Great Milton, Oxfordshire. It is the only UK country house hotel to have retained two Michelin stars for the past 30 years. In 1996, Raymond opened his first Le Petit Blanc brasserie in Oxford. More brasseries followed. In 2006 the group was re-launched as Brasserie Blanc and
there are now 20 restaurants across England, the newest having just opened in Hale Barns at the newly refurbished Manchester Airport Mariott Hotel. The brasseries offer French classics and modern dishes, all made with fresh and seasonal ingredients. Raymond passionately believes in sourcing food with care from some of the best producers and farmers in the country, for dishes freshly prepared by Brasserie Blanc’s wonderful chefs. Each Braserie Blanc is a place to relax, and enjoy real French food, close to home at affordable prices.
Raymond has championed and nurtured some of the country’s most respected chefs in his kitchens, including Marco Pierre White, Michael Caines, Bruno Loubet, Eric Chavot, Ollie Dabbous and Brasserie Blanc’s own Clive Fretwell. Having worked together for more than 20 years, Raymond mentored Clive from the beginning of his career at Le Manoir with Clive eventually being appointed as Executive Chef at Brasserie Blanc. Clive and Raymond continue to work closely together developing seasonal menus full of the freshest ingredients for which Brasserie Blanc is well-known. In 2008, he was awarded an honorary OBE (Order of the British Empire) by Her Majesty the Queen, in recognition of his services in promoting culinary excellence and for raising awareness about the importance of healthy food as a central element of family life. In 2013 he was awarded the insignia of Chevalier in the Ordre national de Légion d’Honneur, the highest French decoration. The recipe for King Prawns with Chermoula Dressing has been created for The Cheshire Magazine by the chef team at the gorgeous new Brasserie Blanc in Hale Barns that serves delicious homecooked French food with a contemporary international flavour inspired by Raymond’s travels. Open from 6.30am for breakfast right through to late evening with a showstopping outdoor terrace, Brasserie Blanc brings a slice of rural France to Hale Barns.

INGREDIENTS FOR THE PRAWNS:
2 tbsp Extra virgin olive oil 2 tbsp Belazu
chermoula dressing 12-16 raw king prawns, peeled with heads attached 1 tbsp Olive oil
2 Lemons, halved
250g black venus rice, cooked according to packet instructions Large handful frozen peas, cooked Large handful frozen broad beans, cooked 100g French beans, trimmed and cooked
METHOD Preheat the grill to a medium-high heat. To make the marinade, mix the olive oil and chermoula together with a pinch of salt and thoroughly coat the prawns with the mixture. Place on a roasting tray and grill for around 5 minutes until the prawns are pink and cooked, turning half way through. Meanwhile, heat the olive oil in a frying pan
Serves: 4 people over a medium heat. Add the lemon halves, cut-side down and fry for 30 secs-1 min, or until lightly caramelized. Divide the rice amongst four plates and scatter over the vegetables. Top with the prawns and drizzle over the leftover cooking juices. Place half a lemon on each plate and serve immediately. 91

Louise Eccleston, Partner of Storrar Cowdry, is also a Trustee of the Centre she explained that it is so hard to raise the funds; hence we decided to organise a fun event for ladies. The centre helps members manage the symptoms of a wide range of neurological conditions including MS, Parkinson’s, MND and ME and supports nearly 500 people across North Wales, Cheshire and the Wirral. 93

Yet again the beautiful weather played its part as 100 golfers took to the course and after some impressive scoring, the winning team which included Andy Chatterton scored an impressive 94 points. Porsche Centre Wilmslow donated a fantastic Porsche Golf Bag for ‘nearest the pin’ with Russell Gay from Urban Edge Architecture winning with a hole in one! The golf was followed by a glamorous evening of fundraising for the St. James’s Place Charitable Foundation. Over 360 guests attended the ‘Diamonds and Pearls’ themed evening sponsored by TorFx which exploded in to life with Sarah Ikumu of Britain’s got Talent fame belting out the iconic Prince hit ‘Purple Rain’. This was followed by timeless comedy with the legendary ‘Mick Miller’ before the band Jumpin’ helped guests dance the night away. MC Darren Proctor from Key 103 Manchester Radio did an incredible job as compere for the evening. If you are travelling out of the country, a pet passport is required to travel to the EU and to re-enter the UK after your holiday. The process is simple but you do need to do a little planning. Make sure you speak to your vet at least one month prior to your trip to organise your pet’s passport. To qualify for a pet passport, your pet will need to be at least 15 weeks old at the time of travel, be vaccinated against rabies, have proof of tapeworm treatment and be microchipped. The proudest moment in your career to date? Design is a collaborative process, and I’m proud to have been part of various groups that have won international competitions and awards, which always reflect a huge team effort. So what I’m personally most proud of is what’s happening now at Janey Butler Interiors and the Llama Group. We are growing and developing: the processes in the interiors group have transformed in recent months, and we now have a fantastic, strong, dedicated team. I’m grateful to be part of this amazing unit, and very excited about what we can achieve in our future projects.
What’s important to you when beginning a design on behalf of a client?
At the beginning of the project, the most important thing to me is getting to know the client, gaining an understanding of how they live, and particularly how they want to use their space. As designers, we can work with and adapt spatial constraints, so the bigger challenge is working out what our clients need to enhance their experience of the space and transform it into a home they will love.
The best thing about working in the industry?
I love coming to work every day and being able to create; being able to come up with a piece of joinery or a scheme that will change the look and feel of a space. Also our work takes us to some beautiful properties in some stunning places.

I’m so lucky to have worked all over the world in fantastic places, such as Hong Kong, Hang Zhou, the States and throughout Europe. But my favourite place to work abroad is New York. Originally and at heart, I’m a Londoner, and I find New York

Jamie Bunce, CEO of Inspired Villages Group talks to Jan Clarke about building for the future, enjoying life and how prevention is always better than cure accommodation and the company are on a mission to reinvent retirement. amie Bunce’s zest for life is infectious. When we meet, he has just returned from holiday and his joy of traveling and spending time with his family is evident. His trip also gave him the opportunity to indulge in his love of cycling. A love so great, that while on holiday, he took a detour to ride a mountain section of the gruelling route of the Tour de France. I think this definitely qualifies as a “can do” attitude and it’s his ‘joie de vivre’ which is also the driving force behind the vision for the Inspired Villages Group. Currently little attention is being paid to the ‘last time buyers’ and there are limited options available to people wanting to downsize. By offering a good product with great facilities and trained staff, people no longer need to stay in accommodation which has become outdated for their needs and this will impact on the housing market as a whole. As our conversation continues, I’m inspired by his passion to offer the
elderly an opportunity to live a life less ordinary in an environment centred around health and happiness.
