hat a month July is shaping up to be. As we go to press the young England football squad prepares to for the World Cup play-off and Wimbledon is reaching its climax. From the excitement of the World Cup to the mainstay of British traditions that is Wimbledon, it has so far, most definitely been a summer of sports. How would you describe yourself ? Dedicated, hard-working and reliable. Where is home? work? I grew up in Knutsford and now live in Wilmslow, so I haven’t moved far! After going to Manchester University and living in the city centre, I started working life there and I still love the area after all these years. What did you want to be when you were younger? When I was very young I wanted to be a nurse, but later an economist after studying economics in the sixth form. Happily, my job now involves not only economics, markets and investments, but also getting to know the clients whose portfolios we manage over a number of years, which is one of the elements I have come to enjoy most.

“When the worst happens, remember, you are stronger than you think” set when they visited recently, which they loved. They particularly enjoyed making ‘Auntie Hello’ look pretty. The blue and yellow eye shadow combination was rather striking!

Name a few of your favourite places to be... At home with my husband, Mark, and my two cats, Winston and Bumble. I also enjoy travelling, especially to far away, exotic places. I love scuba diving and the ever-growing list of places I would like to visit is influenced by this, in the hope that I will get to see some unusual nature and sea life. I visited Tanzania last year and my next trip is to Australia. A lot of my spare time is spent scuba diving, as I am currently undertaking the exams and training to be able to teach in my spare time. What/who inspires you? My mum. She was always kind, positive, strong and selfless and I hope to be more like her. What was the last gift you gave someone? I gave my young nieces a children’s make-up 16

Tell us a secret/fun fact? I am a great fan of the darts and have been to see a number of competitions. My favourite player is Michael van Gerwen. Who or what would you put in Room 101? Single-use plastics. On a recent boat trip, miles from land, the sea was covered in plastic and other waste, which I found very shocking and sad. SECRET GARDEN Arley Hall, is the country house home of Viscount Ashbrook and his family. The house and gardens are Grade II listed and on the National Register of Historic Parks and Gardens. It is a fantastic day out for all the family with lots of outdoor adventure for the kids including a zip-wire, sandpit, swings and slides. You can even build a den in the woods! The beautiful secret garden is a must-visit as you uncover lots of exciting twists and turns and the Tea Cottage is like a hidden fairytale at the end of your adventure. Aspiring David Attenborough in the family? Inquisitive kids bombarding you with questions about the wonders of the world? Then it’s time to don the lab coats and hot foot it down to Jodrell Bank for a bit of planet saving with Operation Earth. Throughout August, children are asked to become trainee environmental scientists during live daily science shows that investigate and explore the things that are damaging plant earth. The shows are suitable for children age six and over, and are free of charge. Additional fun and engaging Operation Earth activities will take place daily. TOP TIP

Wild Worlds at Chester Zoo Thought Chester Zoo couldn’t get any better? Think again! This summer, you are cordially invited to a one-of-a-kind celebration of the zoo’s 21,000 incredible animals and their amazing habitats; the Wild Worlds festival. Various spaces around the zoo have been transformed into unique worlds by talented artists, landscape designers, scientists and entertainers. Wild Worlds will be open until 30 September, and includes an exciting programme of events. TOP TIP

World of Wedgwood If creativity’s the name of the game in your household then get crafty with pot throwing pottery-painting and ceramic design at the wonderful World of Wedgwood. Summer holiday fun also includes factory tours, nature walks and children’s museum trails; with prizes for every child! The highlight of the summer will be the Bank Holiday Fun Day (Monday 27 August). Think circus skills, clay pit, and the opportunity to explore and discover the World of Wedgwood. TOP TIP

on the Hot off the success of an eleventh Bolesworth International, Nina Barbour chats to us about building a brand and loving the beach

W

e last spoke to Nina just over four years ago, as a new amphitheatrestyle ground was being added to the Bolesworth International offering. Today, Nina chats to us in the stunning parkland setting of the Estate after returning from a few days of relaxation at Hickstead. “My father died over ten years ago now, and mum and I took over the running of the Estate, along with a huge helping of support from our estate manager and right-hand man, Matthew. Before he passed away, my father was very much at the forefront of evolving the role of the Estate and developing a sustainable business plan, and we have kept this very much at the forefront of all we still do. This very much set us up to be able to grow the business as we freed up buildings for re-purposing and development, commercially and residentially.

“Originally a dairy farm estate, we still have 3,000 cows producing over 17million litres of milk annually, but we also have 150 commercial tenants. The latter range from Cheshire’s second largest visitor attraction, The Ice-Cream Farm, that attracts over three-quarters of a million visitors each year to one-room offices. And, as any successful business, we are still moving forwards with new ideas and conversations on the commercial and leisure fronts.” The Estate is perhaps best known for its four-day equestrian and business extravaganza held each July, The Equerry Bolesworth International. This is very much Nina’s passion project. “I have always spent a lot of time with horses; growing up, at school and university and been lucky enough to visit top establishments and meet key people in the industry.” Nina was a three-day eventer and transferred to

showjumping. Today, she still showjumps at amateur level. “I love the sport. Plus, it’s a great way to ensure I keep fit! As I was riding and travelling, an idea was developing as the location of our Estate seemed the perfect setting to offer an event. What is lovely, is that we were in the planning process when dad was still alive so he knew all about it. “Every year we are developing but at the heart of the event is putting on a social event for friends and families to enjoy. Whilst the horses are a central point, we hope to have created an event, like the races, which is very much a social event as much as it is a business and equestrian one. “Our business lunch attracts a lot of networking opportunities for local, national and international commercial partners and guests to gather, listen and do business. This year we were captured by entrepreneur Rachel Clacher’s story of building Moneypenny and we have to maintain the standard of our speakers each year. No pressure! “We also introduced Club Boles this year and the social space worked really well in the daytime, for drinks reception and for VIPs to enjoy the Ibiza classics and high-octane Rick Parfitt evenings. The Bentley Ride and Drive proved a huge crowd favourite too. “We are still going through all our review meetings from the event, but we are looking into our food and drink offering across the site as part of our overall aim to evolve and improve

the overall customer experience. “I think our biggest achievement to date was the creation of the amphitheatre-style arena about five years ago [as mentioned] as it really helped us put the event on the international competition calendar, attracting the top riders in the world. Today, Olympians Carl Hester and Charlotte DuJardin are regulars and ambassadors for this and for the Liverpool

International Horse Show in December. “With all the work that we have put in to develop the infrastructure on the Estate, we have been able to work together with some great names to be able to expand the venue and expand our offering. In particular our working with Car Fest North, which takes place later this month, has really taken us to the next level. “We are proud to be able to share the beautiful setting of our home and open it to

a wider audience. And by ‘we’ I mean my mum, Diana, sister, Cleo [artist and designer] and myself as well as the team here that ensures it all runs smoothly. “Now that we have all of the details secured and tested for high volumes of people, our future plans include searching for more of the right type of events to bring to the area, as well as looking into a few locations around the Estate to develop for the corporate market. “We are also looking to offer the facilities to charities or other local organisations just before the event, so that they can use the space at preferential rates. Calm and collected, Nina fills her time with the business of the Estate and her love of all things equestrian. When she has spare time, her other passion is for hot climates and getting away to the beach. The next beach may have to wait as Nina and the team prepare for the

Natalie Anglesey chats with musician, actor and family friend, Richard Fleeshman about working with some of the greats, and the importance of family

“I

’m living the dream,” grins handsome young actor and talented musician, Richard Fleeshman, as he gives me a big hug. He’s just walked off stage at the Liverpool Playhouse, where I watched him play Gideon Fletcher, the leading role in Sting’s debut musical, The Last Ship. It’s a marathon role and, considering Richard’s on stage most of the time, he’s hardly

broken a sweat. “Working with Sting, who happens to be one of my heroes, can hardly be called hard work,“ he beams. “I’m not just saying that because my Christmas present from my girlfriend was two tickets to see Sting on stage – and that was long before I knew this musical was going to happen.“ I’ve known Richard since he was a baby. Indeed many years ago I christened the Fleeshman family Bramhall’s answer to the Von Trapps! It’s no wonder, with his pedigree, he was destined for showbusiness. “Mum and dad, who are both actors and directors, have been in the business for over 40 years and although they can sing, musicals are a bit outside their comfort zone,” Richard smiles. “My sisters, Emily and Rosie, are also in the profession, so I suppose it may seem pre-destined. It’s certainly great for me that they try to be at every opening night. I really value their input.” Richard’s been making a mark since the age of 12, when he began his on-screen career in Coronation Street as goth, Craig Harris, where he stayed for four years. At 13, he was the youngest celebrity contestant to win Stars In Their Eyes. He also won Soapstar Superstar, in 2006, donating the prize of £200,000 for his chosen charity, The Kirsty Appeal. “That seems a lifetime ago now but following my mum into Corrie was a great learning curve as I was working in front of television cameras

with an experienced cast,” acknowledges the 28-year-old actor. Since those early days, Richard’s appeared in television series like Blue Murder, Monday, Monday, Call The Midwife and All The Small Things, in which he co-wrote the title song with the show’s creator Debbie Horsfield and Sir Elton John. “I was privileged to tour with Elton on several occasions, and had a record deal with my own album, Neon. Music’s still my passion and when I’m not on stage I’m still writing music and play regularly in a band.” Although Richard’s been fortunate in winning major roles, auditioning is a trial by fire for most actors. “However, none as intimidating as auditioning for The Last Ship,” he admits. ”I first auditioned for the director, Lorne Campbell and musical director, Richard John, both from Northern Stage, and was called back three days later. I then had to audition in front of Sting himself and sing When We Dance, one of his big hits, with the man who wrote it sitting three feet in front of me! Can you imagine how terrifying that was? I told him I’d already ticked our meeting off my bucket list and I would dine out on this experience for years! “When I was offered the role, obviously I was thrilled to bits. But the challenge has been to make the music – which has Sting’s masterly musical phrasing – my own and keep true to the story. Since then I’ve had the most fantastic time. Sting is one of the most humble men I’ve met and an absolute inspiration in how to deal with people. He worked solidly with us for ten weeks right up until the opening night, but after that, he had to leave as his family lives in New

York. However he told me wherever he is in the world, doing what he describes his day job, at 7.30pm he looks at his watch and knows we are about to go on stage telling his story.” Richard had already earned his musical theatre stripes in Legally Blonde and Guys and Dolls, but his first big break came with the leading role of Sam Wheat, created on screen by Patrick Swayze, in Ghost The Musical. I flew out to see Richard on Broadway and at the first night party I was amazed at his composure when faced with America’s great and good who turned out to see him. “I was the only English actor in an all-American cast, so I knew I had to get the accent right, and fortunately I didn’t get any negative feedback. In The Last Ship I’m a Cheshire lad playing a Geordie and, because we opened in Newcastle, I knew I had to get that accent right and again, fortunately there were no complaints.” As Richard reflects on his career, he appreciates his roots and his supportive family. “Although I was born and raised in Cheshire, I live in London now because it’s easier in this profession. But I’m really looking forward to coming home and performing at The Lowry for the first time. It will be the end of the tour so at last I’ll be able to catch up with friends and family. Natalie Anglesey discovers musical maestros without the drama at Clonter Theatre

here’s some good news for those who enjoy discovering emerging musical talent. You no longer have to fight heavy traffic driving into a busy city, nor battle to find a parking place. A wide range of talent varying from opera, jazz, folk and gospel are all to be found at Clonter Theatre. You’ll find this little gem near Swettenham, in the heart of the Cheshire countryside, surrounded by lawns covered with daffodils and bluebells. There, audiences can spot the stars of tomorrow – and the parking is free!

The successful Clonter was the brainchild of Jeffery Lockett who lives next door to the theatre in Clonterbrook House. Originally built in 1697 for Jeffery and Katherine Lockett, it passed from the family in 1769, but was bought back by Derek and Elizabeth Lockett in 1939 who set about its restoration. Jeffery read agriculture at St John’s College, Cambridge before National Service, and married Anita while still an undergraduate. He became an agricultural consultant and ran the family dairy farm. He was High Sheriff of

Cheshire in 1989 and a member of the Countryside Landowners Association as well as the National Farmers Union. A Fellow of the Royal Northern College of Music, he became Master of the Musicians’ Company and Deputy Lieutenant of Cheshire. In 2003 he received an MBE for Services to Music. I nominated him for a MEN Theatre Award in 2006, and in 2012 he was made a Doctor of Music by the University of Chester in recognition of his outstanding contribution to opera.

“It all began when my wife and I held a charity concert in a barn and the audience sat on straw bales,” Jeffery laughingly recalls. “It proved such a success that Clonter Opera has since expanded to become a 400 fixed-seat auditorium with an orchestra pit and dining facilities. I projectmanaged the expansion while Anita remains involved with production management. Clonter Music Trust was founded in 1991 and our trustees generously donate time and sound advice.“ Jeffery and Anita’s three daughters are all involved in the Trust’s work. Isabella Roberts

and Amanda Harman are joint chief executives while Sarah Farmer is chairman of the London Tour committee, and a trustee. Isabella explains: “As children we enjoyed helping productions during school holidays. But, as our parents grow older, we want to share more responsibilities. We all have different roles - but share as much of the work as we can. Amanda is passionate about inspiring younger generations to learn performance skills, as part of the Trust’s mission to expand its outreach work. ”We work with over 3,000 children and teachers from 30 different schools each year. We’ve courses for children from eight upwards, not only to write their own five-minute performance, but to learn about stage management, set design, lighting, and performance. The voice is a free instrument so we encourage singing everything from pop songs to musicals and opera.” Isabella explains: “The Clonter’s Opera Prize is awarded each year to the winner of an inter-conservatoire opera prize competition which takes place in February. Singers are nominated by heads of opera at the principal music colleges in the UK. The audience collectively acts as one judge and, when the panel makes its decision, the audience’s vote is also revealed. This is ideal for anyone who is interested in spotting emerging talent and the work involved is really rewarding.” Previous winners include Amanda Roocroft and Alfie Boe and I can personally recommend these entertaining events as my first visit saw a solo pianist playing for an entire opera where now there’s a small orchestra. wo of the automotive industry’s most evocative names, Aston Martin and Touring first came together in 1958 with the Aston Martin DB4. Britain’s convertible supercar is undoubtedly good, but it lacks the Ferrari folklore, writes James Fossdyke

T

hey say that when the Ferrari F1 team is struggling, the road cars are brilliant, and when the racing is going well, the road cars suffer. Whether that’s true is a matter for debate, but the current F1 standings may well give McLaren hope that its new supercar − the 570S Spider − has arrived at just the right moment. But can the British newbie really take on the established Italians? If looks are anything to go on, it’s in with a chance. There’s nothing retro about the styling, and it doesn’t look as though it’s trying too hard to live up to a long-ingrained ‘brand image’. It’s pretty, though, with sculpted surfaces and a clean, modern look. And while it’s neither as dainty as a Ferrari 488 Spider, nor as aggressive as a Lamborghini Huracan Spyder, it still feels at home among such illustrious company. And that’s a good thing because it’s this kind of supercar royalty that the 570S is competing with. These machines might be built to go quickly at the world’s racetracks, but they’ll spend most of their time prowling around Prestbury. For many, then, looks matter more than performance. Perhaps acknowledging this, McLaren admits that the 570S Spider is a car to be seen in. You enter through doors that open upwards, while the carbon-fibre folding roof performs 15 seconds of mechanical ballet to tuck itself away, leaving you to soak up the rays − and the (mostly) admiring comments from onlookers. If you want performance, you might be more attracted to the 570S Spider’s fixed-roof sibling, the 570S Coupe − a car that’s somewhat lighter thanks to its lack of roof-folding gubbins − but there’s really no need to compromise. Aside from the roof, the two cars are mechanically identical. Both are built around F1-style carbon-fibre foundations, and both use the same 3.8-litre V8 engine. With two turbochargers, it’ll produce 562bhp − an intoxicating tidal wave of power that takes you from a standstill to 62mph in 3.2

seconds and on to a top speed of 204mph. And it has the soundtrack to match the power. Although the McLaren is almost subdued when the engine is in ‘Normal’ mode, it changes completely when you switch to ‘Sport’ or ‘Track’ mode. In the most raucous setting − Track − it becomes almost violent, with the exhausts fizzing at low speeds and howling as the revs build. Occasionally, they punctuate their aural repertoire with a crackle during gear changes and, if you’re really pushing hard, the occasional jet of flame. Yet despite the drama of the performance and the aural stimulation, everything within the cabin remains calm. The McLaren doesn’t have the four-wheel-drive system you’ll find on a Lamborghini or an Audi, but it doesn’t need it. The four fat tyres cling to the road for dear life, giving you enough grip and confidence to corner at speeds that just shouldn’t be possible. Combine that with the precise, perfectly weighted steering that lets you position the car exactly where you want it, and you’ve got a car that makes driving fast seem almost outrageously easy. But the most amazing thing is the comfort. Supercars generally feel stiff and firm on the road, with potholes sending shockwaves from nose to tail. In the 570S, though, all is serene and smooth, with only the worst bumps making their presence felt. And even when you’re stationary, the cabin is a comfortable place to sit. As you’d expect from a car that costs about £150,000, it’s beautifully built, with expanses of soft leather, sporty microfibre and ALL IMAGES © MCLAREN AUTOMOTIVE

exposed carbon fibre. The design is clean, too, with a touchscreen infotainment system and, thankfully despite McLaren’s background in F1, the company’s engineers avoided festooning the steering wheel with buttons.

The roof performs 15 seconds of mechanical ballet to tuck itself away, leaving you to soak up the rays It’s also more spacious than many of its rivals, with plenty of wiggle room for drivers and passengers who’ve inherited the ‘tall’ gene, and there’s a surprising amount of luggage space. Because the engine is hidden somewhere behind the driver’s left ear, the boot is at the front, and it’s very nearly as big as the loadspace you’ll find in the back of a Toyota Aygo. If that’s still not enough and you’ve got the roof up, though, you can use a cubby behind the seats that can cope with some smaller items. The McLaren, then, really does tick all the boxes: it’s fast, comfortable, good-looking and spacious. But there’s a problem, and it’s nothing to do with the car. It’s about history. You see, when you look out of your window and see a Ferrari - your Ferrari - waiting on the drive, it’s the fulfilment of a childhood fantasy. Supercars are supposed to be the realisation of a dream, and sadly, despite all the F1 pedigree, McLarens just lack that final piece of immeasurable appeal. So if it were my money, I’d think long and hard about the 570S Spider - right up to the moment I walked into the Ferrari dealership.

New York I love Christmas, and New York at this time of year is absolutely magical. arBella Nido is the latest brand new, elegant five-star, adult-only hotel to have opened its doors in the south of Corfu. Just a three-hour flight from Manchester and a 25-minute drive from Corfu airport, it proudly stands atop a raised elevation, majestically overlooking the Ionian Sea and adjacent to the infamous MarBella Corfu. This is a suite-only hotel with all of their 70 spacious

offerings (min 25 sq m) including either a private pool or Jacuzzi. There are nine different room categories for guests to choose from, with each elegantly decorated room offering an espresso machine for early morning caffeine cravings, VIP treatment including a delicious local orange and gin combo welcome drink and sumptuous Gilchrist and Soames toiletries in bathrooms. This entire site is owned by one family: Mr Vasillis Dracopoulos the grandson owns Nido and it was his grandfather who built the neighbouring family friendly MarBella Corfu hotel. Nido originally housed a mansion with a church called St John. The name came about because in years gone by it was a look-out post set up to alert the locals to pirates arriving at this part of the island and when spotted, islanders could protect their land and families. In October 2016, the same owners bought what was formerly a 3-star hotel and renamed it Nido – or ‘nest’ in Italian. MarBella Nido is the pigeon’s nest and it’s from this warm and safe base you can enjoy your Corfu vacation. My elegant suite overlooked the chic pool that faced the vast blue ocean. From my Jacuzzi, it felt like I was immersed in a 180-degree water wonderland. This aqua blue backdrop served as a canvas for the hotel’s elegant design palette of

muted English countryside tones featuring pale blue and ochre. Regal olive trees envelop the environment, sprinkled with plants, herbs and vegetables planted by the hotel’s large team of gardeners. Understated elegance designed to stimulate all of the senses required to inspire relaxation. The hotel offers a personalised service and their mission is for the holiday experience to be a relaxing journey for its visitors: to provide solutions for all their clients’ needs and to alleviate any of the associated stress that comes from them excessively thinking. I encourage you to try one of their bliss-fuelled massages that left me feeling like I was walking on a fluffy cloud. Plus, for anyone who enjoys sand between their toes, they’ve a beach area opposite the hotel, accessible via crossing the small road. The hotel delivers on its gastronomic promise and offers decadent breakfast and dinner buffets called St Giovanni. The food includes local and international flavours to satisfy all tastes buds. Do try their creamy omelettes, and smoothies created from local fruits, delicious. Their pool bar, Aquavit, is perfect for a midday snack and is where I ate

the most delicious Greek salad and heavenly beef carpaccio. Appagio (a place the wind doesn’t blow and you’re safe) offers Corfu cuisine with a premium twist. Two chefs with a Michelin star write the gourmet menu between Tuesday and Sunday. I recommend trying the local fish that was delivered whole and boned at my table, accompanied by the most delicious roasted juicy beets. Finally, Heritage is the main lobby bar where I sampled freshly squeezed blood red orange juice while watching dreamy jazz. The perfect ending to a perfect trip. The elegant and tastefully decorated ship offers accommodations which range in size up to a maximum of 300 sq ft. The three suites and the majority of the 81 luxuriously furnished staterooms feature twin balconies – the perfect spot for an afternoon tipple while gazing upon the scenic views of life on the river bank. Every state-room amenity is provided, including an Apple computer, which features a selection of international television channels, Hollywood movies on demand, a choice of music genres, the Internet and information on the ship’s daily activities and schedules. The ultra comfortable beds, swathed in crisp, white linens and plump pillows ensure a deep slumber, and the gentle movement of the shifting waters of the Rhine creates a soothing feeling of being cradled in Mother Nature’s arms. We embarked in Basel, Switzerland. The check-in procedure was swift and efficient and we were pleasantly surprised to see our luggage in our accommodation when we arrived. Our delightful and charming stewardess, Alina,

welcomed us on board and provided us with the utmost care for the duration of the seven-night cruise. After relaxing a while on our balcony we made our way to the main lounge for a light snack with piping hot tea, and met some of our fellow passengers from all corners of the globe. AmaWaterways is an inductee of the prestigious La Chaine des Rotisseurs – an exclusive international culinary society founded in Paris in 1950 – and offers dining experiences like no other. Highlights include the elaborate Captain’s Gala dinner, served with much aplomb in the main restaurant. The succulent grilled Atlantic sole fillet, salmon with crab meat stuffing and tiger shrimp with Cognac sauce was superb. We selected the Moreau & Fils Chablis and enhanced by the vanilla, lemon and linden aromas, it was a simply first class dish. After dinner, ladies in their flowing gowns and gentlemen in their resplendent attire made their way to the main lounge, and the gentle strains of the music enticed couples to show off their nifty footwork to the delight of the admiring audience. Guests are also welcome to experience the tasting menu, served at the Chef’s Table, and

our menu featured a main course of delicious aged beef brisket with whisky sauce, pumpernickel foie gras, lamb rack, sweet potato peach salsa, mint jelly, corn soufflé, pumpkin mash and handmade ramson ravioli. Accompanied by our preference for the Chateau Magnol Cabernet Sauvignon, it was unforgettable. After dining we made our way to the lounge for a cocktail or two and were entertained with an evening of French chansons with vocalist Muriel, accompanied by Armand playing his accordion with gusto. Other entertainment options included a toe-tapping tribute to ABBA and an excellent classical concert performed by talented musicians La Strada. During the day, while the ship is sailing, the gorgeous sun deck is the place to be. Comfortable sun loungers with foot rests and wide, sturdy parasols afford the ideal spot for reading, followed by an afternoon snooze, and

for those keen to keep in trim, there is a walking track. Water babes will be drawn to the outdoor heated pool with a swim-up bar, or for those of us more inclined to recline, there is a large cushioned seating area at the bow, which provides the perfect place to admire the approaching scenery. For grown-ups entranced with the sight of fairytale castles and reminded of those magical stories of long ago, be prepared for an extravaganza. AmaPrima sails along the 65 kilometres of the Rhine Gorge, which was recognised as a UNESCO World Heritage Site in 2002, and between Koblenz and Bingen we passed by the verdant tapestry of vineyards, quaint historic towns, and the most majestic and beautiful castles imaginable. Twenty-eight castles came into view, including the Koblenz Electoral Palace, built in the 18th century, the Konigsstuhl, known as the King’s Chair, which is located in Rhens and dates back to the 14th century, and Sooneck in Niederheimbach, which was constructed in the 11th century. And as we enjoyed our serving of afternoon tea in the comfort of the lounge, we sailed on and on past the colourful kaleidoscope of the banks of the Rhine, bound for Amsterdam. We sipped on a glass of chilled Champagne and raised a toast to the words of American poet, Henry Wadsworth Longfellow: ‘Beneath me flows the Rhine, and, like the stream of time, it flows amid the ruins of the past’. ith the recent royal wedding still fresh in our minds, we decided to head to London to see if we could catch a glimpse of the bride, albeit after the event. The Milestone Hotel is located opposite Kensington Palace – home to royalty for centuries – and so the perfect spot for our stay. We arrived to a genuine and warm welcome and from the outset staff made us really feel this was our home for the next few days. The hotel is charming and characterful and our beautiful room was as inviting as it was luxurious. A hand-written welcome note from general manager, Andrew Pike, gave a glimpse of the attention to detail and personal service to come, something that is very much at the heart of this wonderful hotel. With two staff to each guest, our every need was to be met as the weekend unfolded. Once we had unpacked, food and beverage manager, Leo Forte wasted no time in dealing with our request for an indulgent Champagne afternoon tea. We had made the mistake of not booking, but Leo and his team soon organised a table in the Park Lounge; a beautiful and sumptuous living space with dark wood panelling and rich furnishings – the perfect setting for the afternoon. The quality of the food, level of service and the location set this experience apart from any other afternoon tea. We commented that the delicate lemon cakes were our favourite and were delighted to find some in our room, later that evening, as a special treat. After some sightseeing, we made our way to the hotel’s intimate Cheneston’s restaurant and dined on the roast Dover sole. Cooked according to chef’s own time-honoured recipe, this dish lived up to its reputation as ‘the best Dover sole in London’. We enjoyed the sommelier’s recommendation of wine selected from their exclusive and impressive cellar and, despite the sweet treats served up with afternoon tea, we managed to share the stunning Milestone Quartet of Desserts. We rounded off the evening in the Stables Bar and our nightcap came in the form of their

Manchester can't get enough of burgers, and Honest Burgers is the latest beefy brand to eye up the city - planning to open in Manchester Hall. The burger chain has applied for planning permission inside the former Freemasons Hall taking over the unit that currently houses a bar called Garage. I had entered the competition at Hotelympia before and knew how high the standard of entries needed to be to be successful. I knew, also, that I needed to think outside of the box. I wanted to use a combination of classic techniques and modern gastronomy to create a refreshing and crisp dessert with citrus notes. It was a challenge but the flavour combinations and marrying of textures were always my primary focus. For me, there has to be a surprise element in there, and it should be a treat and fun to eat. I started practising my dessert a few weeks in advance, and each time I revisited the recipe to improve the final product. I finalised my dish just a couple of nights before the competition, and I can proudly say that I got it right. WHAT IS YOUR FAVOURITE INGREDIENT? For me, it changes depending on the season. I love ingredients at their best such as strawberries, runner beans, turnips, raspberries and gooseberries during Summer. Late summer is great for peaches, foraged mushrooms, wild strawberry, wild blueberry and herbs. I also enjoy the beautiful produce from local farmers and fisheries such as lamb, venison and a wide range

of seafood available. So many favourites… WHAT IS YOUR FAVOURITE FOOD? This is a tough question to answer for me as I enjoy a wide variety of food, eating out, trying new things and cooking new recipes. I love food, and I cannot even pick a favourite cuisine never mind to choose a favourite dish. WHAT IS YOUR FAVOURITE PIECE OF KITCHEN EQUIPMENT? I love baking so for me would be a quality oven and a rolling pin. WHAT WOULD BE YOUR DESERT ISLAND DISH? I think I could be left on an Island with cooked pudding rice with baby banana in young coconut water wrapped in banana leaf and grilled on charcoal to perfection, and of course with a bowl of freshly picked British strawberries with orange marmalade and vanilla cream on the side. 1761 RESTAURANT AND LILY’S BAR, Booth Street, Manchester Best for... A modern take on British classics all served with great cocktails on the side

A

s Manchester continues to expand and thrive, Phil Healey and his team at 1761 restaurant are looking forward to the future and paying homage to the city’s past. The restaurant takes its name from the date which saw the opening of the Bridgewater Canal – a masterpiece of ingenuity and endurance – and the food and drinks menus are also inspired by the city’s rich history. But this restaurant is not to be confused with a theme bar. 1761 is an independent restaurant where fresh, seasonal and locally sourced food is served by a dedicated team, as we recently discovered. 1761 restaurant with Lily’s champagne bar located downstairs, occupies a great spot on Booth Street, just off Albert Square, with floor-to-ceiling bay windows making an impressive statement as you approach. We arrived early evening; the after-work crowd were settling in and tables were ready for the evening diners. The restaurant décor gives a nod to the city's industrial past, starting, as you enter, with the custom-designed giant bee metal-work door handle, signifying the Mancunian work ethic that fuelled the Industrial Revolution. The industrial touches are cleverly fused with plush deep red drapes and large chandeliers, giving the place a glamorous feel. Speaking of glamorous, we began with ocktails and pondered the menu inspired by Manchester’s finest. How about a Hacienda? Or A Proper Brew? Martini Extra Dry infused with Earl Grey Tea is definitely given some strength by the 88

addition of Finlandia Vodka and Peche liqueur and lemon. There’s even a mix for Mrs Pankhurst. But it’s the This Is The Place cocktail, which represents the ethos of 1761. Firstly, it takes its name from the famous poem by Tony Walsh, it’s made with Manchester’s own Three Rivers Gin and finally £5 from every purchase goes to the charity 4ever Manchester. This sums up perfectly the concept of a restaurant that is from Manchester and for Manchester. We can’t resist, and enjoy two

glasses which combine the gin with a buzzing mix of apricot liqueur, lemon, orange, honey, thyme and bee pollen. Cocktails ordered, we move on to the food menu. This offers a good selection of snacks and sharing dishes to start, including pork crackling with an apple and onion puree or mini ‘manc’ balls - small burger bites with cheese and bacon centre. Mains include classics such as Lancashire sourced sausage with creamy mash, or haddock and chips. The fish batter is made using the Three Rivers Gin, resulting in a lovely, light coating. There’s also a great selection on the grill, again locally sourced. Having begun with the very moreish ‘Frickles’ - dill pickles in tempura batter, we opted for the corned beef hash; a great, hearty dish that the team at 1761 has elevated with the addition of a smoky bacon crumb and a perfectly cooked and oozing duck egg on top. As we dined the restaurant continued to fill up with diners and guests also heading downstairs to Lily’s bar. Keen to join them, we ordered dessert. This choice was easy and two portions of Manchester Tart were delivered and devoured, ending a wonderful meal full of northern charm. (1761mcr.co.uk)

150g Panko Breadcrumbs

This light, bright dish from Tattu’s new summer menu is truly inspired by the season, bringing a burst of tropical fruit, a hint of spice and plenty of cooling coriander. The sauce and salad could easily be used to accompany barbecued chicken thighs, making it a versatile recipe for when the sun comes out!

150g Rolled Oats

2 Chicken thighs, Skinned 25g Egg Wash

15g Plain Flour SAUCE:

10g Spring Onion, julienne (cut into long thin strips) 10g Red Onion, julienne 5g Ginger, julienne 25g Tomato Paste

60g Pineapple Juice

50g Vegetable Stir-fry Sauce 100g Mango 10g Chilli

MANGO SALAD: 50g Mango 5g Chilli

5g Coriander

Serves: 2 people

METHOD Mix the oats and panko bread crumbs together evenly in a bowl Take each chicken thigh, dust in the flour so it is evenly coated, then dip into the egg wash and shake off excess Roll the thighs in the crumb mix making sure the chicken is completely covered Deep or shallow fry in oil until golden brown While the chicken cooks, take a separate pan and fry the spring onion, red onion and ginger until lightly coloured Add the pineapple juice and cook, uncovered, until the liquid has reduced by 25 per cent Add the remaining ingredients

to the sauce and bring to the boil for two minutes, strain the sauce and set aside Dice the mango, thinly slice the red chilli and chop the coriander finely. Combine those ingredients in a bowl and season to taste Once the chicken is cooked, drain on kitchen paper and slice into bite-sized pieces, cover with

e recently spent some much needed quality family time on the banks of Ullswater and fell in love with Another Place, a dog and family friendly boutique hotel which offers as much relaxation or activity as you lust after. hildren are more sophisticated and tech-savvy than ever before. A fact most parents are aware of! The influence of digital HD television, i-Pads, movies, music and the minefield (to most sane adults anyway) of virtual reality worlds, that challenge the skills of the most ardent computer gamer, is strong. There’s a tech revolution that has crept into all aspects of life; parties included. Young people’s expectations are grander now. The youthful naivety has (in many cases) gone. Ambitions are bold. And so, kids ideas and plans for milestone celebrations have naturally raised the creative and tech game for parents, and party planners. So how does a family manage to stay ahead of the curve? My advice - you don't. From Peppa Pig to Star Wars, Willy Wonka to Alice in Wonderland, families come to me with a dream party in mind and it’s my job to turn that fantasy into reality. It helps that my own young grandchildren have kept me on the radar of Paw Patrol and Ben 10. Sports, music and technology are always high on the list too. Entertainment choices often look to talent show bands, magicians, dancers as X-Factor and BGT has the youth audience entranced. A new era of popular talent. But surprisingly as those children get older, the parties become less routed in popular themes.

They are more focused on bringing a bit of the ‘magic’ back: 18th and 21st celebrations that embrace fairy-tales, for example; the early adventures of Winnie the Pooh or The Wizard of Oz. The innocence of great stories brought alive once again. A simpler concept perhaps, but still filled with extremely detailed elements to celebrate your theme. The devil is always in the details!

A new company has emerged in Cheshire’s interior design scene – Velvet Equinox. Jane La Valle and Rachel Buckley have combined their passions for design, colour and style to develop a business which creates bespoke, luxury interior schemes to enhance your home. We sent Liz Taylor to find out what’s behind this ambitious company and its unique style.

What inspired you to create your business? We have both worked in the homewares and home styling

industry for many years. It’s a world we both adore. When we met, we soon realised that we had an innate passion for all aspects of styling and interiors, so setting up our own design business, where we could share that passion – in many ways, it just felt like a natural progression.

How would you describe your design style?

Our individual design styles are quite similar; we both love the unique and quirky, so our own homes are an eclectic mix of both contemporary and modern. We draw inspiration from all aspects of day-today life; from films and books to fashion and art. We adore blending highly contemporary furnishings with vintage pieces. And both like a touch of glamour too – but definitely not ‘bling’. Stylish. Fun. Statement-making. With touches of opulence and, of course, comfort.

What’s the easiest way to transform a living space?

Clever layering of soft furnishings is the easiest way to transform a living space. Using throws, cushions, artworks, books, candles and object to lift a space will add ambience and drama to a tired area, and often for minimal outlay. Selecting the perfect pieces really can make a huge difference. We also find that a nod to the past and a wink to the future often strikes the right balance within the home. Our ultimate goal is to create stylish, individual homes that feel loved and lived in.

rushing off to dinner somewhere in the evening. So, Sunday’s are hugely important to me as a day of relaxation. What I enjoy the most is reading the Sunday papers, taking my dog Eric out for a walk and having the family over for a Sunday roast with a nice bottle (or two) of red wine.

What are the design trends this year?

Wallpaper is back in a big way. There are some fabulous new designs out there. Velvets also continue to thrive, which is great, as it’s our go-to fabric for adding a touch of understated glamour. We would always advise clients not to worry too much about the latest trend. The best homes evolve over time and are filled with designs and ideas that reflect you – not what is just trendy in 2018.

What’s your favourite architectural style?

We both love the Art Deco movement. The strong geometric lines softened with luxurious textures bring a touch of class to any interior.

Describe your average weekend

Jane: Saturdays are usually very busy. They are spent working all day, meeting clients or planning an interior design scheme and then

Rachel: I love to entertain at home. It’s a passion. There is something special about having people sharing your weekend, and so my house is often full of friends and family. If I’m not out and about getting ideas from visiting antique shops, stately homes or flea markets (I love up-cycling and vintage pieces), you can guarantee I’ll be at home entertaining the masses. A good Sunday roast is a focal point to my weekend, finished off with a film and feet up; it’s the perfect weekend for me.
