M
ay will go down in history as a month of considerable change for us here at The Cheshire Magazine, but with change comes new ventures, high excitement and opportunity. A wise man once said, “If you do not create change, change will create you.” And with that in mind we begin a new chapter. First, we need to send special thanks to our readers, partners and contributors for their patience during this transition. We appreciate that is has created a slight delay in distribution, but nevertheless we are here to stay. But what’s actually changed we hear you cry? Very little is the honest answer. The title has been purchased by new owners: new owners who have worked on the title from the beginning and intend to continue to build on the foundations and outstanding work the previous management team started. We say a fond farewell with a heavy heart to Louisa Castle, our resident editor as she breaks for maternity leave to
have her first child, so it’s exciting times all around. The magazine style, design, editorial and production will only evolve as any living entity. We are maintaining the luxurious, high-end, monthly magazine we have always been proud to produce. We will also continue to distribute to precisely the same homes and businesses as before. We will also be introducing new opportunities for you, our readers and our partners, to share our journey with us. All with our very own The Cheshire Magazine style, quality and luxury so watch this space… And new team members will be welcomed along the way including a new Events and Charities Coordinator, Rachel who has all things Cheshire at her core, but more about her in the next issue. Changes bring new beginnings and excitement to life. Each change life throws at us is a turning page. It’s about closing one chapter and opening another one. THIS MONTH WE ARE CELEBRATING Elle for Elle, which has named the campaign, ‘Dignity After Distress’ is the brainchild of two local women Lynette Page-Collin and Rachel O’Hare who recognised that women who enter the region’s refuges usually do so with nothing, often fleeing their homes with young children as a result of domestic violence. Their aim is to collect donated body care, haircare and cosmetic products from local businesses and individuals and distribute them to women’s refuges and homeless shelters in the North West.

How would you describe yourself ? I am a father, a bar manager and a mixologist. When it comes to my cocktails, I have been told I am a magician! Where is home? And work? Alderley Edge. Work is at the Alderley Edge Hotel which is a great place to work. I enjoy socialising around Alderley Edge too. Before being part of the team here I was at the Bubble Room, so I’ve got to know a lot of people in the area and Alderley Edge has a great sense of community.
Name a few of your favourite places to be? Lindos in Greece is my favourite place to go on holiday. It’s a beautiful setting has an incredible beach. It’s really good for diving too which is something I love to do. The place I like to hang-out at the weekend when I’m not working, is Liverpool. I love that you can walk everywhere and it feels more accessible than Manchester. Above all, I love spending time at home and being in the village.
I’ve got to know a lot of people in the area and Alderley Edge has a great sense of community. Who/What inspires you? Making money. I am money driven. It sounds shallow but I want to earn as much as I can in order to provide for my family. This drives me to work hard. What was the last gift you gave someone? I bought my girlfriend Zoe a weekend away in Staffordshire. I booked a really beautiful spa hotel and we had some much-needed rest and relaxation. It’s fair to say, she was happy with her gift. Tell us a secret/fun fact about yourself I never reveal any secrets! However, something that is not so secret is that I am very goofy. Anyone who works with me could tell you that. What’s been your biggest life lesson? Having children. They have changed my views on life. Before them I didn’t have a care in the world but now I have responsibilities. Morgan is 14 Aiden is 7. What did you want to be when you were younger? A pilot. I loved Top Gun and Tom Cruise in particular, but then I saw Cocktail and wanted to be a barman. It’s all Tom Cruise related – he was my childhood hero.

Photographer, Paul Cooper takes five with Louisa Castle to share stories of sword-fighting, creating the perfect shot and living in the north west
P
aul Cooper first came to my attention last November at the Northwest Football Awards ceremony as a selection of his stunning portraits of the northwest’s finest went under the hammer, splitting the red and blue side of the room with boos and cheers. Needless to say, husband came home with one of his pieces which adorns the man cave today. All these months later, Paul and I meet for me to discover more about the man behind the camera. “I started my photography career as a press photographer, working with some of my heroes and in far-flung places like Israel to report the news. But after eight years I was looking for a
24
new avenue and challenge and moved to Paris where I set up my own agency. “At the age of nine, my mum bought me a Kodak point and shoot 110-film camera for my birthday. It was one you had to wind the film into and send away to process... remember, waiting to see what you had captured. I took photos of my siblings sitting on fences staring into the distance and I made studio backdrops with tartan blankets. Some of these first pictures are my most precious. “My passion started then and I taught myself colour and black and white printing the broom cupboard of the family home. “At A-levels, I diverted from a career path in medicine and took my first job in a photo lab, printing black and whites. It was here I met photojournalist Tom Stoddart who taught me that it is all down to the eye, the concept of the shot as much as technical ability. I picked up so many tips working alongside these great photojournalists during my time at The Times of London.

They still inspire me today, Sebastião Salgado and James Nachtwey, in particular and how they capture the injustice in this world. “I loved the medium of photography. I was always interested in art but was not the most patient art student. The immediacy of photography appealed to me and capturing that one frame that tells a story or gives an insight into a person really interested me. I love the moment when you press the shutter and you know you have a great photo, you can’t beat it, and that hunger for that next buzz kept me interested in photography and wanting to get better pictures all the time. “I’ve been doing this for over 30 years so I’ve seen first hand the transition to colour and then to digital and Photoshop. Alongside these changes, the quality of images, in my opinion, of the photography from professionals is much improved, you can do so much more with better lighting and tools like Photoshop now than I could do ever do with a roll of black and white and an enlarger in the past. Having said that, a great image is not dependent on the kit used, I believe that the idea is paramount, there are some great images on billboards shot with an iPhone! Originally from London, and a West Ham fan, Paul moved back to the UK choosing Manchester as his new base. “I liken it to Paris, it’s a small city that you don’t get too lost in. And it’s where I met my wife, Luisa in 2008. She works in the industry and we are both very much into sport. I knew a few people in the sports world so that became my focus, plus, you get the best seat in the house. Golf is one of my passions and I have been travelling on the PGA European Tour and on the 18th-green with Jordan Spieth – you get to see and capture what others can’t see. “I’m lucky in the fact that I’ve photographed a lot of high profile sportspeople on several occasions and they sort of ‘know’ me, having chatted with quite a few outside of shoots. I did a promotional shoot for the Deadpool movie with Rooney, Mata, and about six other Manchester United players. We had them sword fighting with

Deadpool so that was pretty easy as they loved it and it was bit different for them. “Over the past few years, I’ve got to know quite a few people at the clubs and the industry and this network has helped me get access to some great shoots. I am a great believer in that if you create great work, then work will come to you as a result. “The Paul Pogba shoot which I did for his Manchester United unveiling was pretty cool. a few people around from camera operators, stylists, make-up artists, directors, editors, sound engineers, Manchester United staff, plus his agent and family members. A pretty busy set. “When he arrived he had the usual styling and kit changes and we then had about three minutes to do the first set-up the urgent first profile image, which we nailed in about six frames! This image was to be released at midnight with the announcement of his signing. We then did the home/training kit shots, he was really good to work with, great presence in front of the camera and he could switch between moods easily, which was handy as we only had ten minutes to shoot everything! I spoke and joked to him in French which I think helped with the rapport, and a highlight of the shoot was afterwards when he spent about 15 minutes playing an impromptu game of keepy-uppy with the crew. “I always enjoy working with Rooney, he is the consummate professional and I have been fortunate to shoot him many times. recent shoot at St Georges Park with him as part of an editorial piece for the NSPCC, which ran front cover and spread and again he was great to work with. People don’t get to see what a decent bloke he is and the many charitable things he does, so it was nice to be involved with him on that one. “Finally meeting my childhood hero, Kenny Dalglish, was pretty special. Great sense of humour, I could not help getting a bit gushy and I don’t get gushy - and telling him when I was a kid playing football in the park I used to imagine myself as him, to which he replied “you better be kind with the Photoshop then!” Whilst these tales focus on the red side of the north west I am pleased to hear that Paul’s son, Toby (aged 6) is an avid City fan. So much so that he refuses to have a full team signed Manchester United shirt up in his room, favouring his sky blue hero Kevin de Bruyne.
“Working with top professional sportspeople is great as they are at the peak of their profession, in great shape and look good in front of the camera. Getting to meet them on shoots you get a small insight into their personality away from their workplace. I am inspired by the possibility that within that shoot there is an element of the unknown about what you may come away with. For me that is very fulfilling and inspires me on each shoot. The buzz of knowing I have a great shot is what photography is all about for me. I still get that feeling after many years in the business. “A recent project I have been involved in, Soccer Aid was interesting in that the vast majority of the team were not footballers and the challenge was getting the likes of Paddy McGuiness, Brendan Cole and Kevin Pietersen to look good on the ball, which was actually easier than I thought, these guys are surprisingly multi-talented! It was great fun getting Usain Bolt to show some of his scorers skills and it was a thrill to meet Sir Mo Farah, he joked with Usain, that the match at Old Trafford in June ‘will be a marathon not a sprint’ so going to be interesting to see how that works out with those two Olympians.” Any words of advice for budding photographers? “Look at as much photography in the area that interests you, then shoot, learn and shoot some more until you feel and develop your own style. Style is important and defines you and helps people identify your work. And be careful about your marketing. It’s no use being the greatest photographer around if no-one knows about you. Start with a great website and work hard on the SEO so get you get well ranked and so people become more aware of you. As your business increases spread your marketing budget wider and try to specify in a niche area or location to start out with, this will help you compete in a very competitive field.” Before we bring our chat to a close I have to ask, who is still on your hit-list. “Having shot quite a few of the world’s best, it would be nice to get to do Lionel Messi and Cristiano Ronaldo next - so if anyone’s listening...” (pcooperphoto.com)

Redemption With the news that The National Theatre’s production of the awardwinning play, War Horse, returns to The Lowry in Salford, Natalie Anglesey reflects on the talents of its original author, Michael Morpurgo
M
ichael Morpurgo, OBE, FRSL, FKC, DL, is a towering figure in every sense. Not only physically – as when we first meet at London’s National Theatre, he has to bend low to hear me - but also in the literary sense as author, poet, and playwright. He’s now written over 100 books and won as many accolades. Michael is the first to admit that his path to becoming one of our best-loved authors wasn’t always easy although he had an inspirational beginning. “My mother used to read every night to my brother Pieter and me. She would not only read stories but the poetry of Lear, De La Mare and Kipling. I loved the music in the words. It was her love of stories and poetry and how much she meant what she was reading - that brought the books to life for me.” However, a variety of schools in Devon, Kent, London and eventually Sandhurst, proved a very different matter for young Michael. “School days were not the happiest time for me, especially being sent away to boarding school as I missed home and my family. I think the best advice for parents whose child is unhappy is to listen closely, free of judgement, as this might help your child open up.”

Michael’s favourite books as a child eventually inspired him to write. “Treasure Island was the first real book I read for myself and Jim Hawkins was the first character I identified with totally. I lived this book as I read it. My favourite book as an adult is The Man Who Planted Trees by Jean Giono. I wish I’d written that.” But the impetus which encouraged Michael to put pen to paper happened during his time as a teacher. “I used to read the children a story at the end of the day but I could see it was boring them. My wife suggested I read one of my own stories so the next day I read them one I’d written for my own children. My class seemed to love it and when the bell rang for the end of the day, they didn’t want it to stop. A great feeling - and one that made me feel I could be a writer.” Should parents encourage their own children to write? “Each child is different but one thing parents and teachers can do is pass on a love of stories and hopefully writing will follow. When you read a story you love to a child, you hold hands through an adventure. You live the story together and imagine it together. I think the best advice you can give them is to write from the heart, without worrying too much about grammar and spelling. Try and live inside your story, hear and feel it all around you and become the characters.” Michael’s writing success meant he could leave teaching to write full time, eventually becoming Children’s Laureate from 2003-2005. He received a CBE two years later for Services to Literature
but he’s proudest of the MBE he shares with his wife Clare. “Together we founded the charity, Farms for City Children, and the honour is for that and the people who help to make it happen. The idea is that children from inner-city schools come to the farms and spend time helping to look after the animals.” It was on their first farm that Michael found the inspiration for his most famous novel. “On one of the school trips I noticed a little boy, who didn’t speak at all, talking non-stop to one of the horses. The horse kept nodding his head as if he was listening and in a strange way it looked like boy and horse were communicating. About the same time I found some old photographs of horses co-opted into the First World War and two of the oldest people in our village told me they’d seen at first hand the carnage in war zones. I was shocked to learn that as many horses died in that war as British soldiers. Over 10 million men and horses on all sides died. I wanted to record that and in 1982 War Horse was published.” Michael’s story centres around the relationship between young Albert and his beloved horse Joey, requisitioned by the army to fight in World War One. In the confusion of battle Joey serves on both sides ending up in No Man’s Land. In the meantime Albert, who’s too young to enlist, embarks on a dangerous mission to rescue him in a remarkable tale of loyalty, courage and friendship. “I don’t have a particular age range in mind when I’m writing as I write for myself. Yes, there are difficult themes in my books – like war and loss. War continues to divide people, to change them forever, and I write about it because I want people to understand the absolute futility of

war. Wars are still happening today and children see the effects of the suffering through their various technical devices. Knowing the sensitivities of children, we have to be careful not to traumatise them, but to approach it with hope at the centre of the story.” When the National Theatre first approached Michael about staging War Horse as a play, he had initial misgivings. “I have to confess I was sceptical and wondered how a convincing drama of the First World War could be made using life-size puppets of horses. Pantomime horses came to mind. But this was The National so maybe they knew what they were doing.” For over a year the NT directors, Tom Morris and Marianne Elliot, workshopped the story with Handspring Puppets. Michael explains the process: “The creative team came down to Devon to see the landscape of the story, and to watch horses working the land. The play won five-star reviews and the War Horse buzz is still there.” In 2011 the Broadway stage production received six Tony Awards and was seen by film director Steven Spielberg. Indeed several of Michael’s
books have already been made into films. “I wrote the screenplay for Why the Whales Came starring Paul Schofield and Helen Mirren. However, it became a family joke that when the phone rang one of the children would say Steven Spielberg’s on the phone – and then one day it actually was!” Spielberg’s movie premiered in 2012 starring Jeremy Irvine, Benedict Cumberbatch, Tom Hiddleston and Emily Watson and was nominated for six Academy Awards. “Steven’s a lovely man who was emotionally connected with the story. Like me he’s a story-teller who never shrinks from the horror of war. We all want young Albert and his horse Joey, to survive and find one another again. I met with Steven and his producer Kathleen Kennedy a few times and we talked about the book, Devon and the inspiration for War Horse. My wife Clare and I were asked to appear in the film and meet the cast which was quite an experience.” Plays, based on Michael’s other books, like Running Wild, have also proved popular here but

Not only is it a powerful play about loyalty and friendship but it’s also a play that parents, grandparents and children can all enjoy at different levels. There’s hope and redemption, not because readers like happy endings, but because I’m an optimist at heart. I think people return to see it because it’s both a piece of ground-breaking theatre and a wonderful anthem for peace. STAND& DELIVER Mark Radcliffe speaks with Natalie Anglesey about music, celebrating his birthday and the inaugural Knutsford Music Festival
“I
love living in Knutsford,” broadcaster Mark Radcliffe enthuses. “I’ve lived in Cheshire most of my adult life and moved here five years ago with my wife and daughters from Whitley. We love the beautiful architecture, the café culture and we’ve found folk here very friendly.” Indeed Mark is so involved in this community that he’s teamed up with Knutsford Town Council to host a series of gigs for the Knutsford Music Festival. ‘Mark Radcliffe Presents Folk at the Theatre’ will be part of the council’s wider celebration of music ranging from classical to blues and folk echoing throughout the town. “Nobody’s making any money out of this as much is done out of good will - but the music will be top quality,” Mark insists. “I’ve booked all the acts myself - thanks to my contacts presenting the Radio 2 Folk programme. Most of these guys are either doing this as a favour or appearing at massively reduced fees which will barely cover their expenses. “Friday’s headliner is Pilgrim’s Way. The BBC Radio 2 Folk Award nominees from Stockport include multi-instrumentalist, Jon Loomes, who played 22 instruments on their Red Diesel album. I wanted to book this act as a nod to Knutsford’s Highwayman Higgins as they sing songs about highwaymen through traditional English folk song… and even 1980s disco so there may be a bit of Stand and Deliver, you never know!” When I tease Mark about highwaymen in
Knutsford, he’s quick to correct me. “There really was a Highwayman Higgins and there’s a blue plaque on the Heath that tells you where he lived. I’m personally intrigued by these legendary figures as I also have a seven-piece, pirate folk-rock band called Galleon Blast; although they won’t be appearing on this occasion perhaps another time!” Born in Bolton and educated at Bolton School and Manchester University, Mark took an interest in music from an early age, joining numerous bands while at school and university. As a broadcaster, musician and writer, he’s perhaps best known for his work with the BBC although he began his broadcasting career in local commercial radio. “It was easy for me to get a foot in the door, as my dad, Phil Radcliffe, a well-respected journalist, was then on the board of Piccadilly Radio. My dad infected me with his love of music and words and we both shared a passion for art. Looking back I think my generation had it relatively easy because we didn’t have to fight any wars and we still had university grants in those days.” Mark’s BBC career started in 1983 when he produced sessions at Maida Vale Studios for John Peel’s show. He was my producer when I presented the Radio 2 Arts Programme, before deciding he really wanted to be a presenter. He was personally responsible for broadcasting many BBC Radio programmes from Manchester rather than London.

In 1991, Mark presented Out on Blue Six and a couple of years later The Guest List. He famously formed a radio partnership with former Fall guitarist, Marc Riley and as Mark and Lard, they worked on the Radio 1 Breakfast Show as well as a subsequent afternoon show which garnered three prestigious Sony Radio Academy Awards. Mark went solo in the mid-’90’s on Channel 4’s music series, The White Room, where he first met his wife. He joined Radio 2 and presented several television programmes, including Glastonbury and Top of The Pops. He even won Celebrity Stars in Their Eyes with his impersonation of Shane MacGowan of The Pogues. “There were all these glamorous folk from Emmerdale and Coronation Street as well as Paul Burrell, Diana’s butler, and there was me with blacked out teeth – so I knew I’d no hope of winning. I was gob-smacked when they announced I’d won and when I asked what was the prize? They said - just winning!” Mark remains a presenter on BBC Radio 2, where he weekly presents The Folk Show. On Radio 6 Music he co-hosts a weekday afternoon show, Radcliffe & Maconie, with colleague and friend Stuart Maconie. “When Wigan beat my football club, Manchester City, Stuart promised I’d never hear the end of it - and he’s a man of his word!“ In between broadcasts, for a time, Mark produced the comedy series Count Arthur Strong. He wrote the autobiographical Showbusiness: The Diary of a Rock ‘N’ Roll Nobody; a critically acclaimed history of his attempts at a career as a musician. His novel Northern Sky – based around a folk music club in an imaginary northern English city – was published in 2005. Thank You For the Days,
published in 2009 and another memoir, Reelin’ in the Years, was published in 2011. Is there another book in the offing? “I may have run out of things to write about. I don’t find writing relaxing - so not sure yet.” Mark remains a passionate musician, and he’s totally involved with Knutsford’s Festival. “On the Saturday Mike McGoldrick and friends will perform, while I’ll be on stage on the Sunday joining my former Family Mahone bandmates for a stripped back folk show. Acclaimed folk duo Greg Russell and Ciaran Algar will then close the show. They’ve won a couple of BBC Radio 2 Folk Awards and are still only in their early 20s. Mark was awarded an honorary Doctorate of Letters from the University of Bolton. “I was made up and my dad was even prouder,” he beams. As he approaches his 60th birthday, he‘s decided against having a party and with some friends he’s off on a musical tour of Nashville and Gracelands.
Meanwhile Mark’s really excited about this festival. “I’m thrilled to be part of Knutsford Music Festival as it’s the town I live in and I wanted to make a contribution. Jan Clarke talks to Chloe Moss, founder of luxury jewellery brand ChloBo, about designing her collections, calming her chakras and counting her blessings
C
hloe Moss is a ray of sunshine. Everything about her is sunny from her talk of travels in exotic places to her warm smile and her Barbadian heritage. A welcome tonic as the grey clouds refuse to blow over on the day we chat. She is also a force of nature, and in a short time has taken her jewellery business, ChloBo from her kitchen table to today’s stockist network of over 170 stores nationwide. Her designs have been featured in Vogue and also worn by famous faces from supermodels to popstars, including Elle Macpherson, Kelly Rowland and Ellie Goulding. The story of ChloBo started with a round the world trip and took Chloe on a journey from beach to business woman. Chloe explains, “In 2003 I decided to go travelling for a year, I didn’t realise it would end with the creation of a business.” Chloe’s travels started in New York,

San Francisco and Vegas, moving on to Fiji, New Zealand and Australia and eventually arriving in Bali. Along the way she experienced amazing places, met wonderful people and learned a little about heartache but, it was in Bali, that she fell in love. This was a place that calmed her restless soul, gave her chance to reflect and finally inspired her to build a business. Chloe tells me, “I feel a great connection to Bali and one day I would love to own a home there.” It was while on the island that she watched a lady making bracelets on Dreamland Beach and something resonated. Chloe’s ten-day trip to the island tuned into two months and with the help of friend Johan - now also an employee - they tracked down silversmiths and began sourcing the best materials. Her initial designs were

inspired by local iconography and many of the charms featured throughout her collections are influenced by her travels around her beloved Bali and South-East Asia. Our conversation sways between beautiful Bali and Chloe’s business. We chat more about ChloBo’s collections and how important it is that the pieces work for ‘every woman’. Chloe explains, “Whether you choose a simple, elegant necklace or layer many items for luxury, boho chic, our jewellery appeals to all women of all ages.” Her brand has grown dramatically since launching and her latest collection has been well received. Cherabella includes seven bracelets with intricately designed representations of the chakras and four layering necklaces. It’s a beautiful collection and features the warmth and femininity of peach moonstone, combined with the softest glow of gold and ChloBo’s trademark solid sterling silver. Chloe smiles, “This collection is very dear to me and reflects the positivity, peace and the energy that comes when we take time to focus and balance ourselves.” She
continues, “It also represents treasured friendships in my life.” Chloe is most definitely a bohemian spirit, for her life is a journey to experience to the full and as she talks, it’s clear that her travels have taught her the importance of seeking out happiness. She adds, “I’ve grown as a person along with my brand and I’m very proud of what I’ve achieved.” Being in the fashion business means Chloe spends a lot of time in London and spent time living in Notting Hill for a while. But, despite all her travels, she always loves to return home, which for her, and her business is in Chester. Stephen Field offers advice on securing a legacy for your future generations
I
n a recent speech delivered in Westminster, the former Conservative Minister and executive chair of the Resolution Foundation, Lord David Willetts, warned that the “baby boomer generation will have to reach into their own pockets to fund a spiralling bill for public services”, warning that “the age of tax cuts is over”. Lord Willetts went on to say that people’s property was an “obvious source of tax revenue and that the inheritance tax system was poorly designed, widely abused and under-utilised” and should be looked at, calling for tax reforms. You may now be recalling the 2015 Conservative pledge stating that “We’ll take the family home out of inheritance tax for all but the richest… it can only be right that when you’ve worked hard to own your own home, it will go to your family and not the taxman.” The changes introduced by George Osborne provided for an additional threshold for inheritance tax from 2017, known as the residence nil rate band. This provides an additional threshold by the tax year 2020 which, when added to the existing inheritance tax threshold, brings the total transferable tax-free allowance from both parents in a married couple or civil partnership to £1m, stated in the manifesto. The rules for claiming the additional threshold are, however, very prescriptive and therefore not everyone will actually benefit from this Tory pledge. The baby boomer generation arguably now faces a social and financial dilemma. How can you ensure that you are adequately provided for financially in retirement and later life, wanting and deserving to enjoy the fruits of your hard-earned pensions and savings, balanced with the potential threat to financial stability of leaving yourself with
sufficient capital to cover the potential long term imposition of ‘living too long’? The call for tax reform could mean that you are expected to meet the potential social care costs, while ever changing tax reforms increase the potential tax charges on your estate, leaving more funds to HMRC and less to your family. But was it not your desire and wish to help your children and grandchildren by leaving a financial legacy for the family? So how are you going to balance these important issues, knowing that you require the foresight to determine how much capital and income you will need for your own future personal security, coupled with the paternalistic desire to pass on the family wealth to the next generation? he unique Lexus Sport Yacht concept was recently recognised with a special award by Japan’s Boat of the Year committee at the Japan International Boat Show in Yokohama. The new yacht builds on the partnership with Marquis-Larson, leveraging their renowned boat manufacturing expertise. Planned as a larger 65-foot sport fly-bridge cruiser, the new yacht will have luxury staterooms below deck and entertaining space for up to 15 guests. The hull, inner structure and superstructure of the bespoke 42-foot open sport cruiser were made of hand-laid carbon-fibre fabric, vacuuminfused with two-part polyurethane resin. The Lexus Sport Yacht concept was powered by two marinised versions of the Lexus 2UR-GSE 5.0 L performance V8 engines, as used in the highperformance cars the manufacturer produces. hen you receive a press release saying that a car is on its third successive winning streak, you sit up. Especially when it’s not one we in the UK would have on the tip of our tongue, if asked. Now I have always had a soft spot for American muscle cars, having found myself living in the good ‘ole U S of A in my informative years, and this month a press release pinged into my inbox from the people at Ford, announcing that global demand for the new 2018 Ford Mustang has driven Mustang to its third straight year as the best-selling sports coupe in the world. Global Mustang registrations in 2017 totalled 125,809 cars putting Mustang ahead of all other sports coupe competitors worldwide. To put this in context it outsold my beloved Porsche 911 in 13 European markets, including the UK and Spain. Of the nearly 126,000 vehicles registered worldwide, Ford reported 81,866 of those were registered in the United States where Mustang is manufactured, meaning that just over one-third of all Mustang registrations are occurring in export markets. As we know, there’s a new Ford Mustang out this year in Europe, taking all of that Mustang personality but adding a little more athleticism to its look and technology. An upscale interior with soft-touch materials and 12-inch digital instrument cluster are coupled with enhanced powertrains, including Ford’s 450 PS 5.0-litre V8 and 10-speed automatic transmission for 0-100 km/h (0-62 mph) acceleration in 4.3 seconds, 12.1 l/100 km fuel efficiency and 270 g/km CO2. ur journey began in Cusco train station, sipping fruity cocktails while musicians and dancers dressed in vibrantly-coloured ponchos, performed traditional Peruvian dances. Behind us, a team of concierge staff dressed in elegant uniforms, quietly prepared South America’s first luxury sleeper train, Belmond’s Andean Explorer, for our voyage through the Andes towards Arequipa. The 16 white and midnight blue carriages reflected the early morning sun as it rose in the clear sky, and through large windows, we caught glimpses of our luxurious lodgings for the next three days. Stepping from the platform onto the train, we were greeted with Champagne in the bar carriage – with a baby grand piano, golden wall inlays reminiscent of Klimt’s masterpieces and ornate cornicing; it’s a setting that rivals some of the world's swankiest bars. A slight lurch and everyone’s hands fastened tighter around their flutes as the train departed from Cusco station and started its journey south.
Enclosed in an ornate balustrade, the open-air viewing platform was an ideal spot to watch glistening lakes and herds of alpacas and llamas pass by. Built in Australia in the early 1990s, the train originally travelled the Great South Pacific Express in Australia before the line ceased operating in 2003; 13 years later, the carriages were shipped to Peru and transformed by Belmond designer Inga Moore into South America’s first luxury sleeper. While an undertone of 1920s glamour is carried throughout the train’s décor, it is kept contemporary in a cool cream colour palette, with stylish modern fabrics and lighting. Expect the hallmarks of Belmond too, though: brass luggage racks, elliptical topped windows, and embossed ceilings, alongside plush fabrics and modern photography in slick, black frames.

Sleeping up to 48 passengers, the bedrooms are located in the front carriages; two luxurious suites closest to the bar and dining cars, with the junior doubles, bunks and small twin rooms located further away. Like the public carriages, the rooms are sophisticatedly decorated in similarly subtle tones, save for the bright blues and reds of the hand-woven Peruvian fabrics on the beds. All have their own ensuite with a shower, toilet and vanity. A highlight of the rooms is the service buttons – pisco sours are but a button press away… It was then time to explore. As I walked through the corridors, I caught glimpses of glacier-topped mountains and rich-green hillsides lined with terraces, until I reached the observation carriage at the rear of the train. Enclosed in an ornate balustrade, the open-air viewing platform, was my go-to spot for the leisurely hours aboard; an ideal spot to watch glistening lakes and herds of alpacas and llamas pass by. disembarked the train for our first exploration to the remains of the pre-Columbian settlement of Raqchi. Although a rather speedy stopover, it offers a glimpse of Incan architecture and a chance to stretch our legs in the Peruvian sun. As the daylight faded, we pulled into La Raya where we hopped off the train to view a small Spanish church and peruse a dozen or so stalls selling cashmere and vicuña. clutching hot cups of cocoa tea, we huddled around a fire pit and waited almost silently to see the still waters turn a rosy hue of red as the sun rose over the mountains behind us. A few hours later, we reconvened to meet our guide for the day, who, armed with a clipboard and a tour guide’s booming voice, led us to a boat docked at the edge of the serene lake from where we sailed to the floating isles of Uros. Here, the patriarch of the island explained how the islands were built and how families live on the bobbing bed of totora reeds: the reed-rocks of lake life, the reeds are not only used to build islands, houses and boats, but are also a nourishing snack for the islanders who live off catching fish and birds in the lake, and
tourists in search of eye-catchingly colourful souvenirs. With our feet on firmer ground, we enjoyed lunch on the tranquil shores of Unesco heritage site, Isla Taquile, after which the island’s inhabitants performed a traditional dance dressed in brightly coloured costumes and tall, feathery hats. As the train trundled forward into the darkening sky that night, we caught our last glances of Peru’s verdant green valleys; little did we know we’d wake to vast desert-like plains interspersed with rocky outcrops, although the snowy mountains in the distance remained a constant throughout. The second sunrise, this time over Lake Saracocha, was as picturesque as the first, although far comfier as I watched the sunrise through the window under the warmth of my duvet. The final outing of our trip was to the Sumbay Caves which date back to the Paleolithic era, between 6,000 and 8,000 BC. Down a steep rocky pathway, the caves are set in a small valley with a trickling stream. Within the caves you’ll find hundreds of white and ochre-coloured drawings of alpaca, llamas, men and even the odd ostrich. My Andean adventure ended in what seemed like the middle of nowhere, in the dusty train station of Tambo Cañahuas. Over three days we’d traversed close to 700 kilometres, and explored ancient, Incan and contemporary Peruvian culture. To fit so much into a three-day journey is no mean feat, but if you can ship a train across an ocean and serve Michelin-standard fare at 14,000 feet, what’s a spa, two bars and luxury accommodation on top of that… (belmond.com)

hen the Māori settled in Auckland around 1350, they named it the isthmus of a thousand lovers because of its fertile soil, thanks to 48 volcanic craters that shape the landscape. Also coined ‘the city of sails’, much of its appeal centres around Waitematā Harbour and its numerous wharves. Auckland might not be New Zealand’s capital any more (a title transferred to Wellington in 1865 when parliament moved there), but it is often considered the gateway to the country. Figures for the year ending June 2017 showed that Auckland had the fastest population growth out of all the country’s regions: an increase of 2.6 per cent, to a total of 1.66 million people. Queen Street is Auckland’s spine: it runs in a straight line down to the waterfront from the central point where the motorways gather before branching off to the city’s suburbs. Many of the tourist attractions, such as the Sky Tower and Auckland Art Gallery, require just a short deviation along a side road. Down by the waterfront, it seems that an elixir of youth has also been sprinkled over the structural design. The Wynyard Quarter – only around seven years old – comprises vast public spaces and casual places to eat and drink while overlooking the gleaming superyachts. Just along from Wynyard Quarter – across Queen Street – is the Britomart area. Next to Auckland’s main transport centre, this industrial site was once home to Fort Britomart, which was used as a base for British colonial troops in the 19th century. The remaining structures have been renovated in what is the largest heritage restoration in New Zealand to date, and has attracted a number of ultra-trendy stores, restaurants and art galleries. It’s worth crossing the Auckland Harbour Bridge, which takes less than half an hour, to stroll along the white sands of the tranquil Takapuna Beach. Afterwards, make your way along to Mount Victoria – a walkable 87-metre volcano – from which you can look back across the harbour and admire the neat, city skyline and aquamarine horizon. Auckland’s fertile earth has indeed flourished.

WHAT IS YOUR FAVOURITE INGREDIENT? My favourite ingredient is confit duck leg - it has a deep, rich, melt-in-your-mouth flavour. It’s so versatile and can be used in a salad, noodles, sandwiches, wraps… pretty much anything. WHAT IS YOUR FAVOURITE FOOD? My favourite food to eat would have to be a full English breakfast. Nothing beats it. My favourite food to cook varies with the seasons but right now it is Hampshire Chalk stream farm trout. It is on my Podium restaurant menu and has such a great flavour, not earthy tasting like your average trout – it’s farmed on the River Test in clear water and I have been to the farm to see how the process works so there is a great story behind this which is sustainable for the future. WHAT IS YOUR FAVOURITE PIECE OF KITCHEN KIT? The Triturator, which is basically a large potato ricer on a tripod stand. We couldn’t do without it here at Hilton Manchester Deansgate especially if we have mashed potato for a banquet of 500 people, which is very often the case.

Jake Lovatt HEAD CHEF AT DV8 BAR SANDBACH
Jake shares with us one of his recipes for his favourite dish ‘A goats cheese cake starter’
J
ake started his culinary career at the tender age of just 14, as a kitchen porter in several restaurants in and around the Congleton area, before demonstrating his passion for cooking and dedicated work ethic which seen him progress to a commis chef position. Being completely self-taught, Jake quickly picked up a flair for generating unique menu ideas and developed his skills along the way and has now been working in the industry for 18 years. Jake joined DV8 Bars Limited 5 years ago as Head Chef of Congleton DV8 and has never looked back. He opened the DV8 Sandbach site in November 2016 and has enjoyed seeing the brand flourish and go from strength to strength. The head chef’s cooking style is classical yet contemporary-casual, spending most of his career developing his skillset in gastro pubs. He tends to use traditional flavours which work well together and then upgrades the classic dishes by adding his signature twists that he knows DV8 customers will enjoy. His favourite dish on the DV8 menu is the Ham Hock Bon Bons with Piccalilli, taking the elements from the ultimate British comfort food and bringing it together in a lighter crisper way for the new summer menu. Everything is made in house by a large team of chefs at DV8; from the sauces to the ice creams, pride is taken in every element of each dish presented to customers. Brain-storming sessions involving the whole team from the apprentice to the Sous Chef are the main kick-starter to a new and exciting menu from Jake. The main menu is changed twice a year as well as daily specials, to ensure 78

Jake has created a summer-worthy recipe exclusively for Cheshire Magazine readers in the form of a Goats’ Cheesecake starter, perfect for al fresco dining and another take on the classic British flavours we all know and love during the summer. The red onion and beetroot compliment the goats cheese well while the vibrant colours of the purple contrasting against the creamy white cheese are delicious and perfectly suited alongside a chilled glass of DV8’s New Zealand Sauvignon.

INGREDIENTS RED ONION JAM:
400g of red onion, finely sliced 50ml of balsamic vinegar 2 Cloves
2 Juniper berries 4g Salt
1 Garlic clove, minced 350g Red currant jelly 3 Sprigs of thyme Oil
CHEESECAKE BASE: 120g Puff Pastry
20g Sesame seeds
METHOD
20g Sunflower seeds
120g Unsalted butter
FOR THE BEETROOT PURÉE
Place the beetroot in a pan and cover with water, cook on a low heat. Add a pinch of salt, and leave to cook until soft, this could take up to two hours, you will need to top up the water throughout the process. When soft, drain well and return to the pan, stir them round to evaporate the last of the liquid. Cook with a little with the brown sugar and then pour in the red wine vinegar, cook further until the liquid is a caramel colour and then add the double cream, leave to cook and thicken. Place the mixture into a blender and blend until smooth, season to taste.
FOR THE RED ONION JAM
Place a little oil in a large pan and cook the finely sliced onion and garlic with the salt until they have released their juices and are soft. Wrap the cloves, juniper berries and thyme leaves in a muslin cloth then add to the pan with the balsamic vinegar and redcurrant jelly. Allow to simmer for 30 minutes. Remove the muslin cloth wrap from the pan and chill the contents of the pan in the fridge until needed. It should resemble a jam. Preheat the oven to 180°C
FOR THE CHEESECAKE BASE
For the base, roll out the puff pastry to a thickness of 1cm and place in the oven until golden brown.

CHEESECAKE FILLING: 250g Goat’s cheese
100g Cream cheese
Leave to cool, then place puff pastry in blender with the seeds and salt in a bowl. Use the butter to bind the pastry together again. Line a baking tray with parchment paper and roll the pastry out to a thickness of 1/2cm. Place in the tray, pressing firmly into place so it’s even and flat. Leave to set in the fridge for at least 1 hour.
FOR THE CREAM CHEESE TOPPING
Beat the cheeses together until smooth. Place the cream in a small pan with the agar agar, bring to the boil and set aside. Pour the cheese mixture over the pre-set base and allow to set until firm, for 2–3 hours.
FOR THE PICKLED BEETROOT
Slice beetroot finely, place sugar white wine, white wine vinegar in a pan and bring to a simmer and sugar has dissolved pour over beetroot and leave to cool. Assemble the cheesecake starting with the chilled bases, followed by the goats’ cheese topping and the red onion jam on top. Place the pickled beetroot alongside the cheesecake and garnish by piping the purée in dots around the pickled beetroot.

7oz Caster Sugar MINT BUTTER MILK: 1/2 Bunch of Mint 500ml Buttermilk Salt
Serves: 10-20 people Prep time: 1 1/2 hours Equipment: Kitchen Aid, thermometer, heavy tray with 3cm sides, vacuum pack machine, muslin, thermo blender
METHOD FOR THE MOUSSE
Cook the chocolate with the powders in an oven set at 266°F for 30 minutes Blend the water and butter with the thermo blender at 140 °F, and once completely incorporated, add the gelatine Add the chocolate and blitz well Cool slightly. Then semi-whip the cream and fold in Leave to set in a fridge
FOR THE PARFAIT
Melt the chocolate with 3.5oz of cream and the icing sugar Whisk in the egg yolks and cook until it becomes a sabayon (thickened), and set aside to cool Whisk the egg whites until the soft peak stage Whip the cream until it also forms soft peaks Fold the egg white, and then fold in the cream Season and freeze
FOR THE BUTTERMILK
Vacuum seal (you can leave in a bowl and cover tightly with cling
film) the buttermilk and torn-up mint leaves Refrigerate for 24 hours Pass the buttermilk through a sieve. Then hang the buttermilk in a muslin cloth over a bowl to remove the whey Season and reserve the buttermilk
FOR THE DEHYDRATED CHOCOLATE MOUSSE
Mix melted chocolate with egg yolks and salt Whisk the egg whites and sugar, then fold through the chocolate. Dehydrate by placing in an oven overnight at 131°F
FOR THE CRYSTALLISED COCOA NIBS
Heat water and sugar to 275°F Stir in the cocoa nibs Stir off the heat until the sugar is white and coats the nibs Put on a plate and leave to cool
FOR THE MINT OIL
Pick and blanch mint in boiling water for 45 seconds Refresh in iced water Dry the mint and then dehydrate in an oven overnight at 95°F Blitz the mint with 100ml of oil and pass through muslin
TO SERVE
Slice the parfait to 5cm by 5cm Loosely spread some mousse over the parfait Squeeze five dots of buttermilk over the mousse and sprinkle with cocoa nibs Break up the dehydrated mousse and stand up in shards on top of the buttermilk, mousse/parfait combination. To finish, drizzle with mint oil and dust with cocoa powder Baby mint can be added for a fresh mint flavour and colour (grafene.co.uk)

ucked away down a leafy winding road just over a mile from central Wilmslow stands The Stanneylands. We arrived on a sunny April afternoon and parked in the generously sized car park. From the outside the building looks very traditional but inside we were pleasantly surprised to see a very contemporary interior, with an open plan layout giving it a lovely light and airy feel. The Stanneylands has recently undergone an extensive refurbishment at and more recently has been taken over by the family owned brewer and pub operator J W Lees, which also owns the much-loved Alderley Edge Hotel and Plough and Flail Inn. We ventured outside to make the most of the pleasant weather to a choice of three alfresco areas, choosing a table overlooking the tranquil fields., In spite of being only a few miles from the airport and neighbouring Altrincham and Wilmslow, it was peaceful and you could have been anywhere. Once we finished our glass of wine on the terrace we made our way inside and chose to dine at The Grill room, one of the two restaurants that they have to offer, the other being The Tap and Pantry which is more casual. The Grill Room offers a Best of British menu with a classic feel in design. We enjoyed a set menu of buttered asparagus, homemade cherrywood salmon, wild radish and spring herb salad followed by a trio of Cheshire Farms milk-reared lamb, parsley potatoes, glazed baby vegetables,

The perfect setting for a weekend bite to eat with friends or family red wine and hawthorn jus concluded with a classic lemon tart, red berry and mascarpone pavlova and white peach syrup. If that wasn't enough they then brought us a lovely selection of local cheeses to enjoy before coffee. Well who can resist a cheese board? The presentation of the food and standard was of the highest level, the asparagus was grilled to perfection and was balanced by delicate salmon. The three cutlets of lamb that followed were all equally delicious, earthy and slightly sweet in taste with a supple yet rich red wine jus
and the lemon tart was zesty and flavoursome paired perfectly with the sweet tasting berries. The food was superb and both myself and my guest agreed that we would come again with family, it’s such a perfect setting for those weekends where you fancy a drive somewhere and a bite to eat with friends or family (we are told the Sunday lunch is delicious). Overall The Stanneylands is a perfect choice hotel for a little weekend break and also a destination venue for food and drink. Even if you have been to Stanneylands in the past or grew up visiting for family meals, you should revisit as I think everyone will be pleasantly surprised with what they have to offer and we are excited to see where the new owners will take it next. There was a buzz of excitement at The Queen’s School when staff and pupils welcomed two very special visitors to perform in assembly. Alumna, Sophie Rohan returned to where her singing began, to deliver a stunning performance with her singing partner, Emily Burnett. The duo, known as Belle Voci, were contestants on this year’s The Voice and were mentored by US star Jennifer Hudson in the ITV show. The talented singers won through to the last four contestants and performed in the live final. The whole school loved watching the ITV show, voting for them and cheering them on each week. Pupils at The King’s School were recently given the opportunity to take part in a series of exciting and actionpacked workshops organised by visiting author Chris Bradford. Chris is a million-selling novelist who specialises in action and adventure books for teenagers, and spent time at the school teaching the children how to captivate the reader with creative writing. Although aimed at teenagers, Chris’ books attract an audience which spans the ages of seven to 77 with his stories that engage even the reluctant reader, with their fast-paced, powerful plots. Among his 25 books are two major series, the Bodyguard books in which young teenagers work as undercover bodyguards and the Young Samurai series which takes the classic Japanese warrior and transforms him into a fearless teenager, searching out the evil assassin Ninjas. Chris not only captivated pupils on his visit with punchy plot lines, but also gave an impressive masterclass in how to handle a Samurai sword using a classic blade in a series of almost balletic moves. The Firs School held a unique science week where the children learnt all about the wonders of science. The whole school enjoyed a trip to Manchester’s Museum of Science where they saw the first railway platform in the world, a Shackleton aeroplane and hundreds of engines, all of which were made in Manchester. Once back at school, the children took part in a range of workshops designed by the staff, where they learnt principles of physics such as will your boat float or sink and what makes a rocket go so fast, and much more. The children were also invited to take part in a special house competition to design a science project on a British scientist past or present. The Firs School even encouraged the younger Firs Cones nursery and kindergarten children, aged two and three to become young scientists. (firsschool.net)

25 Years of Quilter in Manchester
David Rothburn, head of office, reflects on the past 25 years of Quilter Cheviot in Manchester, but focuses on the future
I
t is with pleasure and pride that we celebrate Quilter Cheviot Manchester office’s 25th anniversary this year. So much has happened over that time, and so much has changed, yet our ethos remains the same - building long-term relationships with clients and their advisers using our disciplined investment process to provide bespoke investment solutions. We opened our Manchester office in July 1993. The timing seemed inauspicious: there had been the global stock market recession which began in 1987 (Black Monday) and the crisis of 1992, when sterling was forced out of the European Exchange Rate Mechanism (Black Wednesday). The property market was suffering from negative equity. All were good reasons for people to be nervous about investing their wealth. But actually, the UK economy was coming out of recession, and heading into a long run of positive growth that lasted until the dot com crash in March 2000. In hindsight, therefore, our new venture was well timed. The company has been through a number of changes. In 1993, we were known as Quilter Goodison, a stockbroker with a pedigree going back to 1771. Since then the company has been through a number of owners, and merged with Cheviot Asset Management in 2013, when we became Quilter Cheviot. Today, Quilter Cheviot has a national network of offices, including offices in Dublin, Jersey and a representative office in Dubai, managing £23bn of
assets (as at 31 December 2017). We work closely with adviser firms big and small, as well as accountants, solicitors and other professionals to create bespoke financial solutions for a range of clients, including private individuals, families, corporates, charities and foundations. One of the reasons for our continued growth over the years is the city of Manchester itself. Arguably, it is the second city of the UK. It has the largest regional airport in the UK, a significant number of legal and accountancy firms, Londonstyle property prices and (at time of writing) the top two teams in English football. Just as Manchester continues to grow - it has an impressive ‘crane count’ - so does our team. Since we opened our offices, the number of permanent staff has more than doubled, and we are expanding to handle the growing number of clients. We also have a number of consultants working with us in different capacities: for example, Kate Baldwin has been driving our Dementia Initiative, a campaign to make Quilter Cheviot a dementia-friendly business, working to raise awareness of the disease across the financial services sector and beyond. From the original team of six employees, two are still with us today: Tim Timotheou (who now works at the Liverpool Office) and myself. Growth means change, but for us it also means continuity. We’ve won many design awards, which are an amazing recognition of all the hard work you and the team put into a project. However, nothing makes me prouder than having positive feedback from delighted clients. Knowing that you have successfully taken them on what can be a very emotionally exhausting journey through to the completion of the project, and that it inspires them in ways they never previously understood, is reward enough.

t’s estimated that one in five home owners in the UK took out an interest-only repayment mortgage during the last decade or so, and that a not insignificant 85,000 interestonly mortgages are due to finish this year. If you’re one of that number and don’t have a vehicle with which to pay off your loan, my advice is to seek professional advice as soon as you can. Help is at hand. Taking out an interest-only mortgage means that none of the capital is paid off over the term of the mortgage, with a lump sum due at the end. If your property was mortgaged for £1 million, you would still owe £1 million.

Take the bull by the horns and speak with an experienced agent and a financial adviser to look at the available choices. Many lenders are offering to convert interest-only mortgages into repayment mortgages, but the rates may be higher than you anticipate and lending criteria have changed significantly since you last took out a mortgage. The overriding message here is don’t leave it until too late to make your plans for repayment. Planning now for the future will avoid unnecessary stress further down the road.
