My life ... MARK EVANS, CO-OWNER OF RUTLAND ANTIQUES & ART CENTRE IN UPPINGHAM How would you describe yourself ? I’m an eternal optimist, I’ve found that being positive will make life much better. I’m very passionate about charity and so far we’ve donated over £4,000 to the Rutland Foodbank and continue to donate monthly Where is home? And work? My wife and I love living and working in Rutland. We enjoy the countryside and care about the environment. Six days a week we are in our shop in Uppingham. There is a great sense of community in Uppingham, more towns could follow suit and benefit. What did you want to be when you were younger? Amongst the dream jobs, I had hoped to be an artist, but I chose to spend most of my life making jewellery including a 12 year incredible stint in Bermuda. I had a good voice when I was younger and learnt how to sing, never made it as a rock star though. Name a few of your favourite places to be... Our favourite holiday destination in the U.K. is north Norfolk, especially Holkham Beach, one of the most beautiful places in the U.K. I’ve travelled to many countries, Rio de Janeiro in Brazil, is one of the most spectacular places on earth. Manhattan in the winter, it’s stunning in Central Park when it snows. A journey along the south coast of France from St.Tropez to Italy is highly recommended. The last place I visited was Prague which is lovely. My favourite place is the Old Pheasant in Glaston. The service is always first class, the food is excellent and it’s very affordable. The staff are very attentive, and you are made welcome. My big weakness is Baines Bakery in Uppingham. Their coffee is always just the perfect blend and the cakes are virtually impossible to resist. If you need a great morning boost, try any of their delicious breakfast sandwiches. All handmade on the premises. We believe in the hashtag #shoplocal. For special occasions it’s the Lake Isle or the Falcon Hotel in Uppingham, both offer quality dining experiences. There are so many superb places to walk around Rutland that we are spoilt for choice. It’s hard to choose a favourite but the arboretum in Uppingham is a special place, most of it is hidden away. What or who inspires you? I am privileged to call the artist Paul Wright a friend. He has a very distinctive style of painting and we are thrilled to have his work for sale in our

shop and online. Paul’s artwork has been exhibited at the National Portrait Gallery and at numerous other galleries around the world. We have some very unique pieces created by Paul Wright which aren’t available anywhere else. I’m also fortunate to be friends with Mark Hayward, rock and roll author and memorabilia collector. We are the only shop in the world to sell his photographs and rock memorabilia. I’m inspired by a variety of musicians. The story about John Lennon travelling by yacht from the USA to Bermuda in 1980 is an incredible one. He was caught up in a tropical storm, after all the crew went down sick, John strapped himself to the wheel and managed to get through the arduous journey. It removed his writer’s block and he wrote Double Fantasy whilst living in Bermuda for a few months. Sadly, he was killed later that year. What was the last gift you gave someone? To my lovely wife Diane, I gifted a unique framed white label test pressing vinyl record from her favourite band Squeeze. Tell us a secret/fun fact? I once trained and played with Stockport County FC first team during their promotion season in 1997. I used to have David Bowie’s phone number after a phone call from him and meeting him in 1999. We were discussing a 1970s charity disco which I was organising at the Mariners Club in Hamilton, Bermuda. Who or what would you place in room 101? Fast fashion, it’s terrible for the environment. Sustainable fashion is so much kinder to the planet. Some people still believe in disposable fashion but it’s simply not viable or ethical. Your mastermind subject? The music of Joy Division and New Order. I’m a huge fan, we have Peter Hook’s amplifiers and speakers and New Orders flight cases amongst many other items in our shop. What’s been your biggest life lesson? Cobbler with a Conscience Natalie Anglesey visits Sir John Timpson to discuss doing things upside down, revitalising UK towns and his love of his family

I

first met John Timpson when, as a new recruit at the BBC, I was sent to interview him at his new shoe shop in Manchester. Now he’s Sir John Timpson CBE, and we are catching up with the intervening years in his luxurious Cheshire home, set in beautiful gardens, near Tarporley. Because of his generosity to a number of charities, the multimillionaire has earned himself the description as ‘a cobbler with a conscience’, but John’s quick to point out. “First, I was never a cobbler, but I’m proud of the fact that I worked my way up in the family business. I served my first customer in Altrincham in 1960 when I was only 17, eventually becoming chairman and owner of Timpson, the UK shoe repair chain. In the intervening years, we accrued fashion and dry cleaner businesses with over two thousand shops as well as outlets in the major supermarkets.” You may have seen John on BBC North West Tonight, power-walking down an Altrincham street as he tried to explain to a reporter about his latest role spear-heading a government initiative entitled High Street 2030: Achieving Change. “The aim is to investigate bringing life back to our ailing high streets, and I nearly said no when they first asked me,” John explains. “That was mainly because of the amount of work I knew it would entail - as we had to explore similar areas of need around the country from Aberdeen in the north to the very south. But when I realised that I

have more expertise in that area than most, I agreed, and it’s been an interesting investigation.” With John’s usual bluntness, he comes straight to the point about his findings. “First, let me say there’s no such thing as a quick fix. There are simply too many shops selling the same things. Although some people may prefer shopping online, many still love to go shopping. To bring life back to the high street, we need to bring people back into town - so residential housing would help. In the 13th century, people at Altrincham market would be selling their wares ranging from sheep to produce, then finding somewhere to eat, drink and sleep - it’s as basic as that still.”

But where, I wondered, was the money coming from to achieve this new look? “It’s all about policy and process,” John counters. “The government has set aside £675 million to help councils bring back people into the centre of towns. It’s now up to them.” As John leads me into his study, which is full of his business awards, I notice a picture of him outside Buckingham Palace with his CBE for Services to Business awarded by Prince Charles. Did he know who you were, I wondered? “Well he said all the right things, but I think he was just well briefed,” John chuckles. It’s evident that the study is the place where John likes to work. Many would describe him as a workaholic, but he obviously just enjoys a variety of challenges. Apart from his business interests, he’s been writing a weekly column about the various aspects of business management in The Daily Telegraph for almost 13 years, which he still enjoys. There’s also a shelf full of the books he has written about his own unique management style. He remains chairman of his own company but is also a non-executive director of Barclays. John’s keen to impress that he wishes more people would follow his Upside Down Management ethos, which he’s written about in one of his books. “You see most businesses have large middle management which tells people what to do. To me, that’s wrong. If you get the right people at the counter or in the workplace, they will tell you exactly what’s needed - that’s what I mean about Upside Down Management and, believe me, it works. I tell people working in middle management they should be listening to the people who deal with the customer and look after their well-being - it’s as simple as that.” John shows me an almost finished copy of his latest book, Mental Health Issues in Business,

which is something he’s been interested in long before the Royal Family became involved. “It’s a problem in business but also education, and I’ve been working on that for years in local schools as well as talking to OFSTED, the Office For Standards in Education. “I’m particularly interested in caring for children who have been out of the school system for whatever reason, perhaps they have been fostered or adopted, which are areas I do know a bit about.” Although Alex, his late wife, and John had three children of their own, they adopted two, and they also fostered 90, so he has more experience than most. I ventured that, in the past, with all the family around when they were small children, it must have been a noisy household at the end of a busy day. John jokingly replied, “Well, we didn’t foster them all at the same time! Alex was awarded an MBE for Fostering although she warranted so much more. That’s why I founded The Alex Timpson Charity in her name. We saw at first hand children who had never been loved or looked after and who needed that special care. We’ve still a lot to learn and do in those areas.” John was awarded his knighthood for Services to Business and Fostering. “I was awarded that by The Queen although the big awards are always at the end of the day, which meant a very long wait. Fortunately, Julie Walters was also being honoured that day, so she proved very good company!”

Alex was obviously a great inspiration to John as she encouraged him to go for a £42 million management buy-out of the original family business back in 1983. After selling the shoe shop division four years later, John created a separate Timpson Shoe Repair company which became the basis of today’s multi-service chain. They’ve diversified into retail, watch repairs, photoprocessing and barber shops among several other departments which are continually changing. One of John’s earlier books, entitled Dear James: Secrets of Success from a Management Maverick, was written as a guide to his eldest son James. “He

Nine of them have already worked for the business in some capacity or another, and they loved it.” Born in 1943, and educated at Oundle and Nottingham University, John is also busy writing a book about the history of the family business initially founded by a cobbler back in 1860. It will contain stories of family feuds, business lost and found, as well as take-overs. It sounds like an interesting read. How does this busy man relax away from the business world? “Our family are massive Manchester City supporters,” John enthuses. ”A recent highlight was when I was able to take my two sons to Wembley

Always make sure you’ve money in the bank. And as our business depends on customer satisfaction, make sure you’ve got the right people looking after the customer as we must respond to customer needs. Every day is different and do remember the value of a smile. Summing up, it’s important to look after your workforce on a personal level. If you look after your people - they’ll be loyal to you.”

with... ... RICHARD QUINN Q&A with Jo Malone London has collaborated with fashion designer Richard Quinn on a limited-edition collection for the home. The fragrance and lifestyle house’s scents are given a flamboyant makeover using Richard’s colourful prints on the products as well as gift boxes, ribbons and other finishing touches. Why did you decide to collaborate with Jo Malone London? It feels like the perfect collaboration. We are both British-based brands and are interested in fantasy and florals, so it felt very natural. I haven’t done anything similar to this before, so it’s been nice to see how I could put my own mark on something like the Jo Malone London packaging that is so established and see how our prints can be a visual representation of a scent that already exists. What was the inspiration behind the collection? We started with the Jo Malone London packaging and thought about how we could reinterpret it using both existing and new prints to create an eclectic collection with a vintage feel. We tried to create a visual representation of the scents using different styles of print designs. For Peony & Blush Suede we wanted to have something a bit freer, and so we used brush strokes to create the soft feel of a meadow to complement the scent. For the bolder scent of Tuberose Angelica we made a gingham grid with flowers going through it. You then have different intensities of prints for the different notes of the scents. How did the process differ from the way you normally work? You have to think of it in a whole new way because it’s completely different to designing fashion collections. I was struck by how tactile and luxurious Jo Malone London’s

packaging was: quite matte and textured. Obviously, we do lots of experimental things on fabrics, so it was interesting to see how the prints transformed when printed onto different papers and finishes. What’s behind your fascination with florals? I feel like we do florals in a really saturated way and put it in a darker context, embroidered with latex for example. There’s always a twisted element to how we use florals. Going back to the couture houses of the 1940s, 1950s and 1960s, you can always see florals as the archetype or the foundation of a collection, whether it’s embroidery or an impression of that flower. It’s been such a constant throughout fashion history, and you can map the mood of an era through the style of the florals, and that’s what I find interesting. Then thinking about florals through scent provides a whole new angle and interpretation. How do you envision this collection being used? I thought about how people can use all components of the packaging as keepsakes throughout the collection. So we’ve got three main stories with different edgings and prints, and also different prints and tissue paper inside the boxes. It means that the boxes can be reused again and again. Why do you think this collection would make a good gift? Because each piece has been thoughtfully designed, from the starting product through to the packaging. I will be gifting the collection to my mum– she’s always been a Jo Malone London fan and now she gets to have a piece from the collection with my take on it. We all understand what this is like – in life, we all experience those busy or stressful times where our health, wellbeing and self-care practices are pushed to one side to make space for something else. Whether you are sitting exams, having a busy time at work, or perhaps building up to a major life event, it is important to understand how movement can help your performance, rather than hinder it.

We all know that exercise is important for our physical and mental health, but it is not widely understood that movement can improve our cognitive function. I’ve recently been reading Move! The New Science of Body Over Mind by Caroline Williams, which gives a brilliant insight into how moving our bodies can change the way we think and feel. Getting outside on your lunch break for a 20 minute brisk walk allows blood to circulate throughout your body and to your brain, promoting the growth of new neurons in the hippocampus and boosting your ability to learn and retain information. In our busy lives, finding time to go to the gym and do a workout can be tough.

This month I look into the origins of the colourful ring-neck parakeets now found in the Cheshire wild

I was down in London visiting a friend, we were walking through Kew Gardens on a hot summer’s day. This must have been about 10 years ago now. As we walked through the gardens, I heard this shrill sharp loud squawk overhead, I looked up and saw two birds flying together, they cast long, slim silhouettes, with long delicate tails, and wings that were flapping much faster than an ordinary bird. They were flying at pace and were clearly communicating with each other, presumably a mated pair. As I stared at them for a while longer, I struggled to recognise the species. They were a beautiful, bright emerald green colour, with amazing blood-red beaks. They were like nothing I had ever seen in the British countryside, let alone an urban city landscape. They looked like they belonged in a zoo. Transfixed, and not taking my eyes off the birds I asked my friend what they were, she casually replied, “green parrots- you know- posh

pigeons!”. This was my first encounter with a ring neck parakeet. A medium-sized, gregarious green parakeet, with purple or red beaks and a black neck strap. Originally from Africa and Southern Asia, they are the UK’s only naturalised parrot and the most northerly breeding parrot in the world. Wild parakeets were first spotted in Norfolk in 1855. But it wasn’t until the 1970s, that breeding colonies were documented in London parks. Since then, their population has steadily grown from a few hundred birds in the 1980s, to over 30, 000 birds in the latest count.

With well-stocked urban gardens, rising temperatures and being generalist feeders, they are well adapted to urban living and have become firmly established in the UK. Initially, they were only located in the Southeast, but they have since been seen as far north as Scotland and Northern Ireland. The legend of their origins is as equally exotic. Some people say they were escapees from the set of the 1951 Katherine Hepburn movie African

Queen, shot in Isleworth Studios. Other people say they originated from a breeding pair of parakeets called Adam and Eve, released by Jimi Hendrix in 1968 on Carnaby Street. Or did they escape from Henry VIII’s menagerie at Hampton Court Palace? The truth is probably far more mundane. These birds have been kept in large numbers in private collections since Victorian times. Multiple releases and escapees over the years have probably added to a wild feral population, as the birds learnt to adapt and thrive in our mild climate. There are concerns about what could happen to native bird species after these birds have been introduced. They compete for space on the bird tables, food sources and nesting sites in tree holes, but information as to how damaging they are to wildlife remains limited. At present, like all birds, they are protected under the Wildlife and Countryside Act, unless they are proven to be a threat to native species. I would recommend the ‘Look at You’ cocktail, a twist on a classic rum sour made with Zacapa 23yo rum, Cadello 88 liqueur, lemon juice and banana and chocolate syrup, garnished with golden dark chocolate. Perfect for summer days with a nice sweet and sour balance. Where do you look to find new trends and inspirations to develop new cocktails? Usually visiting other bars, connecting with the industry and trying out new cocktails around the city is the best way to figure out the trends. Obviously, these days Instagram makes it easier in a way, as we can find pictures and recipes of cocktails from all around the world. Besides making cocktails I love cooking too and I follow many high-end restaurants to find inspiration. Pastry is probably where I find most of the ideas though. After all, making cocktails is just “cooking” with ice. What do you order in a bar when you have a rare night off? I like to go out to visit friends in other bars and try new cocktails if a new menu has just been launched. Otherwise, I’m very classic: Gin Martini and Negroni are usually my top choices, but I love a good Sazerac as a nightcap or a Brooklyn.

Could you name an underrated cocktail? Horse’s Neck is probably one of the most underrated cocktails. So simple (brandy and ginger ale) but so tasty and refreshing...I just love it. What tips would you give our readers for a signature cocktail to serve friends at a dinner party? Keep it simple! I’m a big believer that “less is more” and you can still impress your guests following some simple steps. For example; You can follow an easy ratio: 1 part sweet, 2 parts sour, 4 parts spirit for a sour style of cocktail or add a mixer to top up for a more refreshing style of drink. Pre-batch your signature cocktail in advance: this will allow you to quickly serve your guests without making any mess in your kitchen as you would measure and mix your ingredients in advance and bottle them. If you’re mixing only alcoholic ingredients you can also add water for dilution, skipping the stirring for example; all you’ll need is to keep your mix refrigerated and pour it over ice, job done. Choose 2 or 3 key flavours. Too many flavours will cover each other making it harder to distinguish them. Try not use perishable ingredients or pre-mix. If there’ll be some leftovers you can keep your alcohol bottled without a problem. On the other hand, if you include fresh citrus juices in the mix, they may spoil the whole batch, ending up wasting your precious liquid and money. Go seasonal: fresh fruit will taste much better! rbis Stamford was awoken in May 2021, after the flagship restaurant opened in January 2020 in Oakham, Church Street. The brand was founded by local entrepreneur Jonathan Spencer, with over 15 years in the industry. He decided to bring his love of world cuisines and great cocktails to life through Orbis. Orbis is most well-known for being an exclusively gluten-free restaurant that serves international world plates made to be shared. This style of dining is inclusive of all dietary requirements and appetites as it means the whole family can dine and enjoy a little bit of everything. As a team, this is our favourite way to eat when we go out for meals. The restaurant is based on two floors and has a rooftop terrace that seats up to 40 people, which is heated and undercover so perfect for a cocktail or two all year round. Based on All Saints Place you feel fully immersed in the Orbis experience from the minute you walk through the door. Our atmosphere within the restaurant varies on each floor. Downstairs has a more intimate

dining experience for date nights and intimate family meals, whereas upstairs is lighter and airier and has more of an upbeat bar vibe, perfect for parties and all types of celebrations. The rooftop terrace is a lively space for those who enjoy cocktails or for those that enjoy a full dining experience in the sunshine. The Orbis experience is very personal and the team tailor their recommendations to what each customer likes or dislikes. Additionally, they are very experienced with allergens and dietary requirements. Joshua Hames, our Head Chef has experience all over the country and is passionate about his job alongside the rest of his team. The team seasonally change the menus and keep up to date with local produce and create exciting and new dishes. Our most popular dish by far is the ‘Bang Bang Cauliflower’ suitable for all as it is vegan, covered in

our secret spicy, satay and peanut sauce. A very close second and some would argue is a fan favourite is the 'Cornflake Chicken' which comes with our BBQ sauce and peanut butter mayonnaise. Orbis as a whole is the perfect restaurant for any occasion- family meals, date nights and party groups. MEET THE CHEF:

Craig Douglas EXECUTIVE CHEF AT NESS WALK What was your first memory of your love for cooking? I vividly remember being in my first professional kitchen and feeling the tangible excitement of the pace, buzz and dare I say, the pressure. It was visceral. I remember making lobster bisque and that smell has created a lasting memory – it’s still one of my favourite dishes.

When did you know you wanted to be a chef? My first job in a kitchen was not a result of any great plan, I simply fell into the role, but within the first week, I knew that this was where I wanted to be. I tried to learn and absorb as much as I could. At the time, I was fascinated with Gordon Ramsay and his presentation of plates. I remember deciding on my goal to work for him, and I did! I went to One Devonshire Gardens as part of a college project and eventually worked full time.

Where were you trained? Firstly, I went to college alongside working at One Devonshire. I then moved on to work for Tom Kitchin at The Kitchin in Leith, Edinburgh. I then went to Aria in Sydney, Australia working with Matt Moran for one and a half

years before returning to Inverness. I wanted to work at a Michelin-starred restaurant to push my development so went to Boath House in the position of Sous Chef, before becoming Head Chef at the age of 27 at Aspects Restaurant. At the age of 29, I secured the position of Executive Chef at Ness Walk. Training to be a chef is a difficult path, but I have always been focused on the goal and put myself in positions to gain experience and continue developing. If you have a dream and a passion for the profession, then it is hugely rewarding. I consciously put myself out of my comfort zone to elevate my training and development.

What do you love most about your job? It may sound cliched, but Ness Walk is the first place I have worked that truly has a family feel to it. The team are incredible, and they are all so passionate about what we are trying to achieve. Our owners are visible and happily involved. They get as excited about our creations as I do. I love that sense of belonging and common goals. I pretty much get free reign but at the same time, I am challenged.

Describe your style in three words. I’m not sure I have a specific style as I am continually exploring and experimenting. If you pushed me, I guess I would say classic with a modern twist. I love being creative and bringing nature to the plate – everything on the plate has a reason to be there to enhance the flavour and presentation. What’s your favourite dish to create? I love working with seafood, specifically langoustine and lobster – it takes me back to that smell in my first

due to lockdowns and we have only just passed our first full year of operation. So, it’s a relatively short time but the brigade is incredible and happily, guests are loving what we do.

Who is your biggest supporter?

professional kitchen. Working in Scotland we have the very best seafood in the world and it’s wonderful to work with such outstanding produce that may have been landed only one hour before.

Where do you draw your creative inspiration from? My experience to date has been hugely informative. Each position has taught me something different, whether it be about techniques, flavours or produce. I follow many chefs, e.g. Marco Pierre White, Marcus Wareing for cross-fertilisation. Diners are much more aware of health and provenance when dining and I love the challenge to produce new and exciting dishes sustainably. We are working on one of our popular supper clubs where we will produce a zero-carbon tasting menu.

What four ingredients are necessary for your kitchen? Local, organic, traceability and fresh.

If you could prepare a meal for anyone, who would it be and what would you make? My formative years as a chef were influenced by Gordon Ramsay and I would still love him to say, "good job Chef". I would make him Beef Wellington and see how it compares to his!

What are you most proud of in your career? Always being willing to take a gamble and push myself. To move and keep learning. I am immensely proud, that at the age of 29, I opened the 5-star Ness Walk as Exec Chef and we’re seeing it pay off. The feedback we are getting is incredible. We had a strange beginning

Undoubtedly my children. They are hugely proud of what I do. I took them into the kitchens during lockdown so they can see where daddy is each day and they loved it.

What would you want to have as your last meal? Possibly not the healthiest but it’s my last meal so don’t judge! I would have a Surf and Turf – grilled lobster with chargrilled ribeye cooked medium rare, and bearnaise sauce. Tony and James Story are the Directors of Ness Walk and they both have an incredible knowledge of wine. I would let them decide what I am drinking with my Surf and Turf!

Are there any foods you just don’t like? No! I’ll try anything. Possibly predictable, but if I was pushed, possibly Brussel sprouts.

What do you think is the most challenging ingredient to work with? Pastry is a skill on its own. It takes time and precision but is worth the effort. We have an amazing pastry chef who makes the crispest pastry imaginable with perfectly balanced flavours.

Do you do the cooking at home? Yes, I do. I am keen to instil the love and appreciation of food in my children. Happily, it’s working.

reception area. You instantly feel the heritage of the building all around you. Stock Exchange Hotel opened its doors for the first time in 1906 and the Bull & Bear restaurant is the original trading floor, which is evident in the pictures on the wall and clever use of original features. We had previously visited for a meal at the Bull & Bear so already had a taste of how special this visit was going to be and our expectations were not disappointed. After being swiftly checked in and offered a glass of champagne to enjoy in the Residents Lounge, we were shown up to our suite. It was a lovely large corner room decorated in a luxurious colour palette of greys, browns, greens and creams, complete with a roll-top bath at the end of the bed and an electric television at the foot of the superking bed. We

loved the little touches such as the archived pictures of the traders at work on the walls and the delicious flapjack and card from Tom Kerridge. The hotel is ideally situated right in the heart of the city on a quiet street behind Market Street, a great location for exploring, with an array of shops on your doorstep. With great travel links (train stations and tram stops are within ten minutes walking distance), the hotel is so well placed to allow you to enjoy all the delights Manchester has to offer, from bars and restaurants to theatres, art galleries and sporting venues, everything is easily accessible. Stock Exchange Hotel just ticks all the boxes, with a quality restaurant, luxurious rooms, a great central location and friendly smiley staff that are on hand to help enhance your stay in any way they can. With the recent announcement of the launch of ‘Sterling’, set to open this summer, there is yet another great reason to return. Joe and Daniel Schofield, alongside leading wine expert James Brandwood, will take over the lower ground floor previously known as ‘The Vault’. Francesca Lee-Rogers falls head over heels with Sani, a family-friendly resort in Halkidiki, Greece, so much so that she never wants to leave

Y

ou know you’ve had a good break when as soon as you land, you’re already scanning the TUI and BA sites to look at returning. And, as a travel journalist, I’m not usually one to go back to the same hotel. Sani is definitely an exception though – I can see why many of its holidaymakers go back year on year. Its reputation follows it too; and as a relatively recent new mum, as soon as I mentioned going to Sani to my friends, the oohs and ahhs followed. Sani Resort is, in fact, a group of separate luxury beach hotels and properties, owned by

the same company. A privately developed ecological reserve offering 1,000 acres of forests, wetlands and stunning beaches, it sits on the rocky Kassandra peninsula at the southern peak of Halkidiki on the Greek mainland and overlooks Mount Olympus. Situated just a one-hour drive from Thessaloniki airport, it’s easily accessible too. A bonus when you have a little one. My husband and I and our 16-month son stay at Sani Beach, which has 392 rooms and suites altogether and where I would recommend staying if you have young children and want to be close to the heart of the action. home-from-home is a luxurious family suite, which comprises two spacious bedrooms, a separate living area and two marble bathrooms complete with Anne Semonin products. The contemporary and opulent design features floor-to-ceiling windows, Dream Beds – that live up to their name – and a balcony with views over the Aegean Sea. It makes for some pinch-me moments, and it only gets better. Opting for Sani’s VIP Service means that instead of phoning guest services, we can ask any query directly with the guest services manager on a private WhatsApp group, which makes our stay hassle-free; we use it for everything from booking restaurants to checking details about the laundry facilities; asking what’s on to finding out more information about the Resort’s new adventure park and splash park (both must-dos, but more on these later). When it comes to dining, the Resort has an astonishing 24 restaurants – including the only caviar restaurant in Greece – while Sani Beach alone has four. For our first breakfast we head to the main eatery of Sani Beach, Poseidon. The buffet means there are plentiful options and we enjoy everything from mouth-watering watermelon to delicious pancakes, a cooked breakfast to an impressive cheeseboard, and conclude with an abundance of sweet options such as doughnuts, muffins, and cakes. That evening, we dine at Ammos restaurant on the Dine Around menu; this means you can enjoy a set menu in many of the restaurants without any extra

charges, or you can use an allowance towards à la carte. Situated on the beach overlooking the ocean, it makes for a romantic meal as we watch the sunset while enjoying a three-course meal as we listen to DJ Miro who plays chilled out dance music. Other restaurants we dine at include the Japanese restaurant Katsu in the marina where we sample a delicious range of sushi and sashimi (but be warned: it’s a little on the pricey side) and Vosporos Grill House, which is a Greek taverna with a brilliant atmosphere and excellent food: we eat the four-course Dine Around menu which includes the potato soup and Greek salad for starters, followed by the “Souvlaki” pork skewers with pita bread and freshly cut fried potatoes for main and chocolate pie for dessert. The meal was simply faultless. Due to its size, it’s easy to not leave the Resort; with so much on offer, from shopping in the high-end stores in the marina to taking the bi-weekly complimentary sunset cruise, there’s plenty to keep you entertained when you’re not relaxing by one of the pools or on one of the many beaches. And couples who have a baby and wish to swim in the sea together can do so with the Babe Watch service on the beach where a dedicated childcarer will

look after little ones for up to 30 minutes a day free of charge. Those who enjoy an active holiday can visit the brand new Rafa Nadal Tennis Centre. Developed by the Grand Slam-winning tennis legend, it’s a rare opportunity for all of the family to hone their tennis skills and have a lot of fun doing so. There’s also the Chelsea FC Football Academy for four to 16-year-olds; a PADI dive centre; biking academy, watersports such as water-skiing, sailing and paddleboard yoga; bird watching; forest walks and guided jogging. Not forgetting the many excursions on offer such as the local wine-tasting tours and guided coastal hikes. If you do wish to venture further afield, the Resort makes for a lavish base for exploring Halkidiki’s coastline – Afytos village with its hypnotising clifftop views is just 15km away, while the unspoilt beaches of the Sithonia peninsula are also close by. During our stay, my husband and I drop our son off at Sani Crèche for the afternoon session (3-6 pm) so that we can try out the new

Sani Adventure Park (from ages six plus), a thrill-seeking treetop adventure experience, similar to Go Ape. There are two training courses, two family courses, and two youth courses – all of which are colour-coded and offer differing levels of challenges. We thoroughly enjoy unleashing our inner Tarzans as we zip-line through the trees, cross challenging bridges and step on tree platforms as we take in Sani’s natural surroundings. Last but not least, another highlight was to go to the Sani splash park, another new addition for this year. Featuring water jets, surprise buckets of water that tip and a mini water slide, it was a huge hit with our son. So much so, he wasn’t very happy about leaving. And it’s fair to say, neither were we. E

veryone needs to try and go to Seychelles once in their lifetime. The archipelago of 115 islands in the Indian Ocean, off East Africa, is just over 10 hours from Heathrow and is home to numerous beaches, coral reefs and nature reserves, as well as rare animals such as giant Aldabra tortoises. Mahe, a hub for visiting the other islands, is home to Capital Victoria. It also has the mountain rainforests of Morne Seychellois National Park and beaches, including Vallon and Anse Takamaka. I was staying at Hilton Seychelles Northolme Resort & Spa, which is located in the Northwest of Mahe near Beau Vallon Bay. It is a collection of peaceful villas all overlooking the Indian Ocean

surrounded by white sands and tropical gardens, just seven kilometres from the capital of Victoria. I was met on our arrival by the very friendly team and taken by golf buggy to my beautiful villa. I was lucky enough to be in an Ocean View Room with my own infinity swimming pool where I could swim while listening to the waves of the sea surrounded by what I could only describe as a tropical rain forest. Our first lunch was in the Wave Restaurant, here you can enjoy lovely salads, such as watermelon, Ceaser, spiced eggplant and quinoa or pasta and therutlandmagazine.co.uk

rice dishes such as seafood risotto, spaghetti arrabbiata or pasta Alla Sorrentina all tasted delicious, whilst watching the world go by in paradise overlooking the vivid ocean views. There are 3 restaurants at The Hilton, Wave, Ocean View and Mahe Restaurant which is the signature restaurant where a la carte breakfast and dinner are served. The setting provides a destination dining experience complimented with panoramic views of the Indian Ocean and the backdrop of Seychelles nature in all its bounty. Ocean View Bar and Restaurant is on split level decking with uninterrupted views and magical sunsets where they have a selection of international cocktails and tropical juices and three times a week you can experience a touch of local culture where live music is performed by top Seychellios musicians. There is a bar on the Lower Deck which is the only gin bar in the Seychelles, where they serve an array of gins and gin cocktails. wanted to hire a mini moke and explore the island, which we did and was great fun and ideal way to visit other parts of the island and see the beautiful beaches that are on offer. The Eforea Spa at the hotel uses Elemis products in its treatments and offers services such as massages, scrubs, facials and wraps and all treatment rooms boast views of the ocean. On one of the days we hired a mini moke and visited Takamaka Rum Distillery, a family run business where they make and bottle their own rum. Their rums are a true expression of the tropical island paradise and have been crafted to showcase their heritage and creole traditions while at the same time pushing the boundaries of conventional rum making. We had a delightful lunch at the restaurant at Le Jardin du Roi. Inspired by the original 18th century gardens developed by the French to promote spice trading in the colonies, Le Jardin du Roi spice garden offers visitors a day on a typical Seychelles plantation that grows spices and other rare plants. It is a haven for botanists, nature lovers and the environmentally conscious, to enjoy nature walks, and a fine meal at the restaurant where the drinks, ice creams and almost all of the food are flavoured with the plantation’s own spices. The hotel has a sister hotel – Hilton Seychelles Labriz Resport and Spa, this is the only resort on Silhouette Island and offers a

tropical paradise nestled between white sand beaches and forested mountains, to reach Silhouette Island I took a 45 minute ferry, but private boat taxi is available to hire. There are 7 restaurants on the island. Café Dauban is Creole and International buffet style. Grann Kaz, is the restored home of the Dauban family - the island’s owners during the 1800’s - and the restaurant blends modern Seychellois spirit with Silhouette’s English and French heritage. La Pizzeria and Lo Brizan Bar which is it as it says – pizzeria and grill and bar. Portobello is their fine dining restaurant which serves Mediterranean cuisine and specially selected wines. Sakura offers Asian fusion cuisine, Teppanyaki where you can watch your meal be prepared in traditional Japanese style, and The Four Degrees is located on the beach, where you can sip cocktails whilst enjoying a seafood platter. I was lucky to have a Creole cooking class where I made octopus curry to devour for my lunch. There are so many activities you can enjoy from hiking, snorkelling, boat excursions, fishing, tennis, yoga, mini golf, kayaking or diving as they are the only PADI five star dive centre in the region and have a decompression chamber on site. Or you could choose just to relax on the beaches or around the swimming pool area. Seychelles are very focused on sustainability and has no plastic bottles. The filter system harvests

water from Mount Dauban’s waterfall and then gets filled into glass bottles for use across Silhouette and Mahe and so far they have saved over 180,000 plastic bottles. They have also replaced single-use plastic straws with bio-degradable versions, this change has eliminated the use of approximately 40,000 environment harming straws since 2018. You can practise your golf swing by hitting balls from the beach or your terrace into the sea and each ball degrades within 72 hours into fish food. The climate is tropical oceanic, with little temperature variation during the year, with daily temperatures rising to the mid-80s (low 30s) in the afternoon and falling to the low 70s (low 20s) at night. Ferrari has taken the stunning 296 GTB supercar and made it even more striking – just by removing the roof

T

he latest Ferrari supercar, the 296 GTB, is a wonderful, wonderful thing. Yes, Ferrari fans find the V6 engine and plug-in hybrid system a bit controversial, but there’s no questioning its capability on the road or race track. It’s also unbelievably pretty. But now Ferrari has come up with something even more beautiful, and the effort required to do so was not that great. Yep, the famous Italian brand has chopped off the 296 GTB’s roof, creating the breathtaking 296 GTS. Like the GTB, it’s a mid-engined, V6, plug-in hybrid supercar with more than 800bhp, and it gets from 0-62mph in less than three seconds. But it also manages around 15 miles on electrical power alone and the battery is rechargeable, so theoretically speaking, you need never use the petrol engine at all.

In practice, however, you’re going to want to use the engine all the time. The V6 sounds fabulous in the GTB, and we can only assume getting closer to the noise will make it even better. To achieve that, Ferrari has given the 296 GTS a retractable hardtop that takes 14 seconds to fold away and can do so at speeds of up to 28mph. When it’s in place, it’s designed to look much like the GTB’s roof, but when it’s folded away the GTS becomes a dramatic, 205mph roadster. Ferrari 296 GTS, £TBC, www.ferrari.com 68

Mercedes-Benz is working hard to build all-electric versions of its existing models, denoting the zero-emission offerings with the EQ prefix. We’ve already seen the GLA-based EQA and GLC-based EQC, and we’ve had the E-Class-derived EQE and S-Class derived EQS. Now, there’s an SUV version of the EQS, which sits 20cm further from the road and comes with a similar electric powertrain. That’s good for up to 410 miles on a single charge, and the most powerful version has 536bhp, but there’s still an off-road setting that gives the car some all-terrain credibility. PHANTOM FANTASY As if the Rolls-Royce Phantom wasn’t already imposing enough, Rolls-Royce has seen fit to update its flagship limousine for 2023. New headlights and a new, illuminated grille are the main tweaks at the front, while there are new alloy wheel options and some new customisation options. Inside, the only change in what Rolls calls a “light-touch” update is a thicker steering wheel for “a more connected and immediate point of contact”. The new Ford Mustang Mach 1 might be a little bit rubbish, writes James Fossdyke,, but it’s also utterly brilliant

I

n 1969, the speed of sound was in vogue. Although the sound barrier had first been broken more than 20 years earlier, Concorde was making its first test flights and Nasa was launching missions to the moon. Soon, it seemed, everyone would be travelling at Mach 1. So Ford chose the perfect moment to capitalise on this need for speed by introducing a new, high-performance version of its fabled Mustang muscle car. With a super-cool bonnet air scoop, upgraded suspension and teak wood grain in the cabin, as well as sportier seats and more power, the Mach 1 became an instant hit. Following that success, Ford reprised the Mustang Mach 1 name in the 2000s, but at that time the fast Ford was not offered to British customers. And now, with the Mustang officially on sale in the UK, Ford has brought it back once more, creating this staggering study in shock and awe. The casual observer might dismiss this car as “ just another Mustang”, but those in the know will spot the grey alloy wheels, the grey pony badge and the grille with its round ‘nostrils’ on either side. Better still, the Mach 1 has upgraded aerodynamics courtesy of changes to the front and rear bumpers and a new rear wing, while the piece de resistance is the black stripe up the bonnet and along the door sills. Inside, the car comes with leather-wrapped sports seats with dove grey stripes, plus a B&O sound system and satellite navigation. But the most important changes can be found under the skin, where Ford has tuned that thumping V8 engine to produce 454bhp – up from 444bhp in the ‘standard’ Mustang GT. The American company has also fitted its MagneRide adaptive suspension system, which is specifically tuned for the Mach 1, and there are Brembo brakes to stop the car more quickly. In short, this car is built to be the pinnacle of Mustang performance; the best of the breed.

Of course, the Mach 1 is still a Mustang, and that isn’t always such a good thing. Yes, it looks dramatic and it’s relatively cheap – even this top-of-the-range version costs just over £57,000, and that’s £10,000 more than the Mustang GT – but the cabin quality is well below average. The Ford is built down to a price, and that means the plastics are unforgiving and unappealing, with some worryingly flimsy bits of trim and switchgear. Even a Ford Focus hatchback is more upmarket than this. It’s more practical, too. The back seats aren’t really fit for human habitation, and accessing the boot is made tricky by the letterbox-style boot opening. Once you’ve negotiated that, the boot measures 408 litres, which is fairly generous, but still only about 30 litres more than you get in the more accessible Focus. And if truth be told, the Mach 1 isn’t even that fast. The massive 5.0-litre engine is an old-school V8 with plenty of grunt, but no turbochargers to help it along, so 454bhp isn’t all that much by modern standards. Not when a BMW M4 Competition is producing 503bhp from a 3.0-litre engine with two fewer cylinders. As a result, the M4 will get from 0-62mph in 3.9 seconds, whereas the Mach 1 takes 4.4 seconds to manage the same feat. And that’s only if you choose the optional automatic gearbox – the manual takes 4.8 seconds. A European coupe will be more economical, too. The Mustang Mach 1 claims to manage 22.8mpg on the official economy test, but our test car managed, um… about 15mpg. Yeah, 15. Against that backdrop, and when there’s a fuel crisis in full swing, the M4 Competition’s 28.8mpg economy suddenly looks pretty impressive. So if you want a car that goes quickly and doesn’t burn too much Shell V-Power, the Mustang is easily bettered by its European rivals. But at least the Mach 1 version puts up slightly more of a fight when it’s on a road or race track. With tweaked suspension, Brembo

brakes and new aerodynamics producing 22 percent more downforce, this is the first Mustang that really can be thrown around on a back road without too much terror. Of course, there’s still an awful lot of power going to the back wheels and they have an alarming propensity to break traction, sending the Mach 1 into a buttock-clenching slide. There’s none of the poise you get from an M4 or a Porsche Cayman, and there’s less feel for what the wheels are doing. But it will dart into corners more keenly than a standard Mustang, and there’s something to be said for the adjustable suspension that slackens off or stiffens up depending on which mode the car is in. You can make it more comfortable on the motorway, or you can make it firmer for more ‘spirited’ driving.

All that said, however, the Mach 1 is still not as good as anything from Porsche, BMW or Audi. It may be the best Mustang on the road, but if we’re being brutal, even the Kia Stinger is a more impressive piece of engineering. Yet none of that really matters, because although the Mustang is objectively a bit rubbish compared with similarly powerful European coupes, it makes you feel incredible. Starting the engine elicits a blood-curdling roar, and revving that snarling V8 gives you an enormous sense of imperviousness. It’s like being the god (or goddess) of thunder, sticking it to the unimaginative neighbours with their predictable German sports cars. Yes, it’s silly and ridiculous and it makes Greenpeace very angry indeed, but that’s the whole point. And from day to day, it’s only racing drivers who actually care about performance or handling. You don’t buy a car like this; it’s the big kid inside you who signs the cheque. And the big kid inside you doesn’t do anything dispassionately or objectively – they act in search of something much more important but much less tangible. They do it because they love it.

KAREN HOWES, FOUNDER AND CEO OF TAYLOR HOWES DESIGNS How would you describe yourself ? I am the Founder and CEO of Taylor Howes Designs, a wife and a mother. A bit more about you… I was 19 years old when I first started exploring interior design. I had just bought my first flat in Camberwell and I set about decorating it myself - from sanding the floors to making the curtains. My friends soon cottoned on to my love for interiors and started asking me to help with their own flats. I quickly realised this was my calling so, whilst juggling a part-time job as an estate agent, I began to take on more clients and build up a reputation. At 21 I launched my first business and started to expand my property portfolio. I was lucky to meet my future business partner, Gail Taylor in 1993; we started working on an important show apartment

for a leading house-builder and that was the start of Taylor Howes Designs. In 2011 I assumed the whole business. We are now a studio of 35 staff with projects on an international scale across private residential, development and hospitality. Who are your greatest influences? My team is a constant source of inspiration – their energy and creativity are second to none. Nina Campbell once said always surround yourself with young designers and that’s exactly what I do! What have been some of your best jobs/ experiences at work and why? Back when I was starting out and finding my feet, I shared a tiny office space with the fashion guru, Isabella Blow. It was great fun and we really felt in the thick of London’s creative world. I remember every project I have ever worked on; I have a photographic memory when it comes to design and detail. But for me, the best projects are the ones I call my ‘game changer’ projects. For example, we did a church conversion in Knightsbridge for which we won the Andrew Martin Award. This was a gamechanging project for our design studio as it elevated us to the next level and gave us global recognition in the interior design sector. But I would say, the main project I will never forget is the first flat I bought in

Traditional vs contemporary style? I am aware of trends, it’s hard not to be, but I prefer to create interiors that are timeless and age well. Often this means the studio blends traditional elements with a sense of contemporary flair. We love working with traditional architectural features and elevating them further with a contemporary use of materiality. We also work with a lot of artists and artisans who blend traditional skills with contemporary nuances to create something exceptionally special and unique.

What would you consider your greatest achievement? I would have to say that my greatest achievement is being in the interior design business for over 30 years, still being on the top of my game, still learning something new every day, and striving to be the best that we can be as an international interior design studio. What would your super-power be? I would be Wonder Woman. I always think I can take on the world, take on too much – and then come back down to earth again. www.taylorhowes.co.uk

The Ophelia House Manuela Hamilford, owner of luxury interior design studio, Hamilford Design, describes the process behind creating a Cotswold Chalet-style family home

T

he Ophelia House at The Lakes by Yoo, which spans an impressive 4,000 sq. ft. in the Cotswold, is lovingly named after their daughter, which gives an indication of just how personal this second home is to the owners. The project was commissioned by a family of four from Chislehurst, Kent who wanted somewhere special to spend quality time together, particularly over the holiday and Christmas periods. The brief was to create a relaxed Chalet-style home that felt at one with its natural surroundings. We used reclaimed wood, sourced from farms in France on the kitchen cupboard fronts, along with traditional looking finger pull drawers for storing vegetables and potatoes on the side of the island. These were subtle nods to the rural life the family enjoy when they stay here. We wanted to avoid making the kitchen look too heavy and dark, so we added ribbed glass cupboards and a lighter coloured concrete island top, with industrial-style kitchen pendants to complete the modern look. The fireplace is made from reclaimed brick stone and has this stunning black stone detailing which you see when the light hits the surface. The floors are wide plank dark farm wood, which are full of knots and nail heads to give that relaxed lived

We used organic wood and fabric materials throughout the property to accessorise, making the home feel cosy and consistent with a typical Chalet One of the challenges was to design around and maximise the natural light to ensure that the tone of the woodwork and tiles we selected worked well no matter the time of the day or the season. In winter we wanted them to create a sense of comfort and warmth and in summer absorb all the sunshine

through the glass doors. The master bedroom was also this large blank canvas that lacked personality, so the challenge here was to find ways to make the space feel more homely but without compromising the view – the large statement headboard and oversized pendent are dramatic but stay on the right side of bold. One of the most practical challenges was how to create a dressing room that offered privacy and ample storage – by building this behind the wall of the headboard it was a great space-saver and it gave the room a sense of opulence that you want from a second home. This home is all about blending modern tastes and finishes with exquisite detailing. We sourced the kitchen table from Cattalen Italia, the sofa from Camerich, the headboard was made bespoke by Hamilford Design and the lights in the kitchen are from Holloways of London. Led by Manuela Hamilford, with experience spanning 21 years, Hamilford Design has a wealth of ambitious international and domestic projects under its belt. illeroy & Boch tiles, the international ceramics specialist, has unveiled its first designer collaboration in more than 20 years. Created by leading fashion designer Mary Katrantzou, VICTORIAN is a vibrant and colourful tile collection inspired by the art of lepidopterists and the geometry of Victorian tiles, bringing the natural world into the living environment. The new partnership also sees Katrantzou make her first foray into interior design, built on the global success of her eponymous fashion label of over a decade. A forward-thinking company with a rich heritage spanning over 270 years, Villeroy & Boch tiles continue to evolve and innovate – driven by its dedication to establishing a longstanding legacy in ceramic design. Inspiration When Katrantzou was first approached by the tile specialist, she was instantly drawn to its over two centuries’ history of design and manufacturing. The designer was keen to convert her approach to fashion into a spatial context of walls and floors, blurring boundaries between decorative mediums and drawing inspiration from objects, interiors and art. Through her personal visit to Villeroy & Boch tiles’ headquarters in Merzig, Germany, Katrantzou learnt more about the process behind the creation of its tiles. She also discovered that tiles from this era were still present in one of the hallways on site, and realised that 19th century Victorian tiles have truly stood the test of time, being as fashionable today as when they first came into style. Katrantzou recognised that this collaboration with Villeroy & Boch tiles should be an exercise in the understanding and application of balance, symmetry and proportion, and that striking a harmonious balance between colour,

pattern and form is just as important in interiors as it is in fashion. As a former architectural student, she also explored Victorian interiors and ornamentation in her Autumn/Winter 2018 Collection. As a result, the designer and Villeroy & Boch tiles decided to collaborate on a collection that interplays between their respective archival designs.

NewCollection: VICTORIAN Butterflies are central to the new VICTORIAN collection. A recurring theme in her fashion collections, Katrantzou sees them as one of the truest examples of metamorphosis. Notably inspired by her 10th anniversary collection in 2019, where the theme was the art of collecting, the designer wanted to utilise butterfly prints to communicate optimism while transforming tiles into a collectable piece of art. Another theme central to Katrantzou’s work since Spring/Summer 2013 is postage stamps. She believes that they “exude the allure of faraway lands and make you dream about what each piece of paper represents, where it might have been, who has touched it on its journey round the world.” In a world where stamps are becoming obsolete, the designer appreciates them even more “as tokens of the past and relics of a different era”. Through the VICTORIAN collection, she wanted to create a vignette within the home, a window into the world that captures this sense of nostalgia but is equally graphic and modern in its design. Gathering these themes together, VICTORIAN features eight different décor sets (20cm x 20cm) with borders and edges to complete the offering. Four coloured butterflies on either white or black

backgrounds have been created using a combination of digital print and traditional screen-printing, with light visual 3-D effect used to provide a handcrafted appearance to each tile. Seen either straight-on or at a 45-degree angle, each butterfly tile is enhanced with either gold, black or perforated borders. Continuing the theme of white, black and gold, authentic marble-effect tiles are offered in two different finishes – high gloss for walls and polished surface for floors. They are joined by concentric designs alongside modern graphic interpretations of Victorian tiles. The butterfly tiles can be used independently or in combination to create a design that perfectly suits every bathroom setting. Mary Katrantzou commented, “It’s been a privilege working on ceramics with Villeroy &

Boch tiles – an exciting process to imagine and create spaces that people will live in daily. “These designs form part of an individual’s home, where they surround themselves with things they love, creating a feeling of permanence that’s very different to the very nature of fashion. This collaboration allowed me to look at patterns outside the female figure and be guided instead by the power of interiors to create an extension of one’s aesthetic.” Dr Jörg Schwall, Managing Director of Villeroy & Boch tiles, added, “As one of the most styledefining companies, Villeroy & Boch is characterised by its love of design excellence.
