Magazines Editor With the warmer weather, the lighter nights and blossom on the trees it really feels like spring has sprung and it feels good to be alive! Perhaps it’s the two years of lockdown or the many storms we had in February, but the past winter has felt really long and I am glad to see the back of it. We are quickly approaching Easter and the children will be off school again. I really look forward to the Easter break . . .those four days in spring that I get to stay home with my girls, eat chocolate for breakfast and have friends drop in for glasses of fizz. It’s definitely my favourite holiday and you can read why I like it so much on page 64. This issue of the magazine is definitely celebrating all things spring; with tips on days out, Easter and Mother’s Day. On the back of International Women’s Day, earlier this month, we also celebrate some of the strong, fearless women we have in Preston & the Fylde: Sally Fazeli, our cover story tells her journey to finding self love. Zaralena Jackson is our Business Hour and shares why she has launched a cosmetics brand and we have Laura Massaro world number squash player as our sport lead as she has recently launched her autobiography. Our resident book reviewer Cat Dunlop shares her thoughts on a series of books based on Dick Kerr Ladies F.C. one of the earliest known women’s football teams in England. There are lots to celebrate this issue! It would however be remiss of me not to mention the troubles in the Ukraine. I, like many of you feel at a loss of what I can personally do to help and my prayers feel futile. On page 70 I share some practical steps from the UK Government, that we can take to help. Helen Sanderson talks to Sally Fazeli about the journey that she has been on to build her own self love
I
met Sally Fazeli over brunch. She oozes positivity and happiness. I’ve known her a long time and have always seen her as the smiley happy lady before me. But like many people Sally’s smile had often hidden feelings of self doubt and loathing. Her journey to find her true purpose had set her free and she confidently tells me that she’s smiling on the inside too, and it shows. Sally had a number of businesses over the years and many readers may know her from her jewellery store Tienne and a gift shop that she co-owned in Penwortham. When Sally started her family her life took another direction and she used her sales and marketing background to build an online business creating content for brands. She was very successful, attracting many followers and big named brands and her life on Instagram with her boys and her husband looked idyllic.
THE IMAGE I DREW WAS DARK. IT WAS DARK, ANGRY AND AGGRESSIVE But Sally was left cold and unfilled. She explained: “For each campaign I did I had to collect the data. The brands weren’t interested in me they wanted to see the numbers. I was being judged and measured on how many people followed me or liked a post.
“This just didn’t work for me. Everyday I would question my own self worth. I knew I was more than a number and my purpose wasn’t collecting data.” Sally knew she wasn’t being authentic, this wasn’t her true self, building brands for other people, she knew she had to realign with her true self and step away from producing content for this world. Sally said: “I was trained in dance and as a yoga teacher, so I began to go back to my roots and my first love. I spent more time in meditation and it sounds a little crazy but my purpose started to reveal itself to me step by step.” It was on a training workshop for somatic dance teaching in the USA, that Sally had her epiphany and truly awakened her own life purpose. Sally told me: “I was on a workshop in somatic movement called Shape your Soul, where you incorporate movement, writing and dance. It was in the workshop that I truly addressed my eating disorder that I had lived with since being a teenager. “I had to sit and meditate and draw. The image I drew was dark. It was dark, angry and aggressive. I scribbled over and over and drew daggers on the image going into my body.
“This was a representation of how I truly felt about myself. It was so dark and aggressive.” Then it was time for Sally to dance and move. She described to me how she shrank into a corner as small as she could and tried to hide herself from the world. “I wanted to disappear,” she said. “But then something remarkable happened. Another participant came and danced close to me and as she got closer she wrapped her arms around me.

“I could feel her encasing me in love and warmth. It felt like my soul was being nourished.” Sally vividly described the images she had in her mind at that time. “I felt like I was a worthless worm, a caterpillar and I was being cocooned. In the cocoon I was gaining all the nourishment that I had lacked and yearned for. The cocoon soon became a beautiful place.
I COULD FEEL THE TRANSFORMATION INSIDE ME AND I BEGAN BELIEVING THE WORDS ‘I AM BEAUTIFUL’ “I started to break free, slowly, and as I did, I felt an internal transformation. I lifted my arms and stretched. I felt like a butterfly. I danced lightly as I grew with my arms outstretched.” After the dancing Sally had to go back to her drawing. Over the darkness and the anguish, she drew a butterfly and wrote the words ‘I am beautiful’. She continued: “We had to regroup and I had to say over and over out loud ‘I am beautiful’. As I spoke the words tears rolled down my face. I could feel the transformation inside me and I began believing the words ‘I am beautiful’. “I was so emotional, I hadn’t believed these words for so long and now I felt transformed.” It was during this time that Sally knew that her true calling in life was to help empower women to love themselves from the inside out. Since then Sally launched her life coaching, counselling, meditation, yoga and somatic dance courses under the banner of She Rises in Self Love.

This is something everyone should keep practising and slowly it will just become naturally a way of life.
“I’m so so passionate about helping people transform their self love and start living a life that fulfils them… “And it feels amazing to see so many of my clients having massive results using She Rises in Self Love.” Sally now offers one to one and group sessions to women who truly want to unleash their inner self love and live more purposefully.

A classic Shaker kitchen for a penthouse apartment When Jan purchased a penthouse apartment in a converted chapel in Didsbury, Manchester, she wanted to replace the ultra-modern kitchen with a classic shaker style kitchen more in keeping with the Victorian architectural features in the apartment. The nature of the space meant the kitchen layout couldn’t change much, so working with a company who were prepared to consider utilising parts of the existing kitchen, such as the work surface and appliances was important to Jan. Equally important was a company that could offer a full project management service like Kitchen Design Centre. Rowan Chick at the Urmston showroom took all of this into consideration and was able to provide a range of options and ideas from a completely new solution to a hybrid of existing and new. It soon became clear that the new kitchen would be compromised too much by using the existing worktops but Jan was pleased that Rowan explored all the available options. Jan particularly liked the inspiration she was able to glean from the Urmston showroom and knowing she wanted a shaker style for a more classic look, was delighted with the wide range of door and handle options she was presented with. Jan is delighted with the finished kitchen and can’t praise Rowan and Kitchen Design Centre enough, “Rowan’s patience and knowledge was incredible. He was willing to try so many different options and went above and beyond with the amount of work he put in at the design stage. I needed a one-stop shop and Kitchen Design Centre delivered, handling the whole process from start to finish. Everyone from Rowan to the fitters were fantastic.”
Designer Rowan Chick says, “This room had the ‘wow’ factor but the existing kitchen didn’t work, being too modern. A new Shaker style works perfectly and makes the room. It was a challenge to work with this space and incorporate existing elements and appliances but we found the perfect solution in the end.”

IT STARTS WITH A SEED… March brings some sunny days to tempt gardeners back into the garden and many of us are really aching for Spring
M
arch is the month for sowing seeds and getting the garden ready for the summer months ahead. But, before you rush to get sowing, just take some to time to plan what you want to grow, how many plants you are going to need and when you want them to flower or bear fruit. This is particularly good advice for anyone with a vegetable plot.
A sowing plan of what seeds and how many to sow each month is your key to successful growing and means that you won’t be throwing out unwanted seedlings and that your flower and veg beds will be full all year round. A word of warning about sowing direct into the ground at this time of year… there may be a few sunny days to enjoy outside but the soil can still be chilly, making germination and survival hard. Sowing indoors is a better option, not only does it provide a warm environment for germination, but seeds and seedlings are easier to protect from pests. If you can find some environmentally sound sowing trays and containers, rather than using plastic,

then even better. Paper and cardboard pots can be packed snugly in a tray which avoids over handling and makes them easy to water. Small seeds should be scattered sparingly on the surface of compost filled seed trays and then covered with a sprinkling of sieved compost. If the seeds are big enough to handle, then you can sow them individually into 10cm pots – the quantity should be according to the instructions specified on the seed packet, but usually for small seeds between five and 10 seeds per pot. For plants that grow long roots, such as peas or beans, you can put them into a compost filled cardboard toilet roll tube, and once ready they can then be planted outside – tube and all! Most seeds will germinate and grow in a warm setting such as a greenhouse, cold frame or on a sunny windowsill.You should keep them damp by using a mist spray to start with before moving onto a watering can with a fine rose nozzle. Once the seedlings have grown their second pair of leaves and before they get too squashed in seed trays or pots, pot them on into small pots. Simply ease out a clump of seedlings with an old cutlery fork or dibber and – handling only the leaves to avoid damaging delicate stems and roots – gently tease them apart. Drop individual
seedlings into a five centimetre compost filled newspaper pot ensuring the lower leaves are above the compost level. Once you see roots appearing from the bottom of the pot, it’s time to pot on to a bigger pot before planting outside once the weather and soil warms up.

If you are growing your own vegetables then now is a good time to sow first early potatoes. These can be planted from mid-March however planting times will vary across the country according to temperature and risk of frost. Early potatoes grow well in the ground and in containers such as potato grow bags or old compost bags.You should plant your chitted potatoes with the shoots facing upwards in soil with plenty of well rotted organic matter, and approximately 12 centimetres deep and 30 centimetres apart. Once stems are about 23 centimetres tall, they will need earthing up – by drawing soil around them to create a 15 centimetre high ridge, to protect against frost and keep growing potatoes covered. Good varieties of early potatoes are Swift – good for containers, white skinned and white fleshed Annabelle – nutty flavour with firm waxy yellow flesh and Maris Bard – white flesh with good ‘new potato’ flavour and drought resistance. Spring seems tantalisingly close in March particularly as work in the garden starts to get going again. As the Royal Horticultural Society says: “Spring usually arrives by mid-March and the frequent sunny days provide the opportunity for an increasing range of gardening tasks. It’s time to get busy preparing seed beds, sowing seed, cutting back Winter shrubs and generally tidying up around the garden.” n

he over-arching trend this year will be the movement towards wildlife-friendly, plant-led gardens that enable everyone to do their bit for the environment. The heightened worry about climate change brings more understanding of the need for biodiversity, so gardens will be fizzing with plant and insect life. People will retune their eye to an aesthetic that is natural and perhaps a little rough around the edges, appreciating the character this brings. Another reason for surrounding ourselves with plants is for their therapeutic value. The pandemic has made us much more aware of our own mental health and we have learnt first hand how our gardens
have helped us through this difficult time. Biophilia – the basic human need to interact with nature – is the word on everyone’s lips, and our gardens can be used to give us the nature-hit we need.
using natural pesticides and herbicides to avoid pests and insects in their gardens instead of chemicals. You could take a similar approach in 2022. All products used should be non-toxic and safe for humans, pets, and the environment. Similarly, try using recycled water to water your garden. For most of our lives, we stay indoors. But many of us wish to cherish the beauty of nature. Having a lawn area with beautiful bushes and trees and a cozy central space will be a great place to escape the indoors.

Lustrous, jewel-like colours will be all the rage – but not necessarily in harmonious sweeps or blocks. Planting schemes will be random and natural, like a stylised meadow, designed more for pollinators than human beings. The uncertainty of climate change and the likelihood of longer periods without rain

This involves aerating, scarifying, tidying and fertilising your lawn, helping the grass to regenerate and grow strongly. What’s more, tidying the lawn edges helps to improve the overall appearance of the lawn. Your first cut of the year should be done with the mower blades set high to help thicken the grass. Afterwards, focus on weeding to reduce competition for nutrients and moisture. n

GARDEN INSPIRATION IN THE SPECTACULAR RIBBLE VALLEY

ete and Chris have gained extensive experience and knowledge in horticulture and growing whilst working at a variety of nurseries across the country, including Ashlea Cottage Nursery, which was across from Myerscough College at Billsborrow. Then in March 2020 they opened Newlands Nursery. The timing unfortunately wasn’t ideal as the country went into lockdown just four days after the nursery opened. Newlands Nursery was even featured on the BBC News for having to close within a few days of launching their business. That didn’t deter Pete and Chris and during this period they kept their business alive by offering alternative solutions to keen customers. Once the business reopened it started to really establish itself focussing on providing customers with home grown quality plants at competitive prices. Pete and Chris grow a wide range of plants and customers can purchase everything from alpines, perennials, bedding plants, hanging baskets and planted containers to shrubs, hedging, and fruit and vegetable plants from the nursery.

local GP working in the centre of Preston, Dr Linda Fan first moved there in 2008 and decided she needed an eye test. Unfamiliar with the city, she selected a high-street optician who conducted a routine eye test and left her to choose new glasses from their showroom. ith patients struggling to see their GP, Spire Fylde Coast Hospital is experiencing a growing demand for patients wanting to either book into their Private GP service or book in for a diagnostic test or health screening. There is also a growing demand for theatre space with NHS waiting lists increasing, so the hospital is trying to support the local Trust by increasing the number of patients they can operate on. This is in conjunction with an increase from patients who have private medical
insurance that are self-referring to see Consultants at the hospital, with some requiring surgery and others needing a procedure that can be carried out in an
outpatient setting. By creating a minor surgical room the hospital can pull out 1,000 procedures from main theatres into the new space and create more inpatient capacity in theatres to help increase the number of patients that can be treated in the hospital.

There are a lot of patients whose lives have been on hold during Covid, as they were waiting for surgery to get back to work or to get back to their normal activities.” Spire Fylde Coast offers a wide spectrum of procedures and have a number of Orthopaedic Consultants specialising in Upper and Lower Limb as well as Spinal
Consultants. Gynaecology and General Surgery plus a number of Cardiac Specialists. They also have ENT, Gastro and Ophthalmologists on site, and a growing number of Dermatologists providing support for a range of different conditions. With the investment in the past year, a new MRI scanner is now in use on site six days a week with a growing team of Radiographers. Their new Cardiac MRI scans complement the Echo and Cardiac stress tests at Fylde Coast and Cath Lab in Manchester for more complex cases. lifestyle I can celebrate with friends who ‘drop-in’ for a glass or two of fizz. My daughters and my nieces expect a visit from the Easter Bunny with an Easter egg hunt but they don’t need piles of presents, in fact they are happy to have fun in the garden running wild in a pair of bunny ears. Like many followers of Christian and Catholic faiths I close out Lent on Easter Sunday by attending a church service but then it’s about gathering with friends and family and really celebrating spring. The house is filled with Easter lilies as a reminder of our loved ones who are no longer with us and over the past few years we have had an ‘Easter tree’ and an Easter wreath on the front door. The kitchen cupboards will be filled with hot cross buns and seminal cake and we will have a huge family roast dinner on the Sunday. Being proud Prestonian’s we go ‘egg rolling’ on Easter Monday. Over the past few years we haven’t been able to go to the traditional site of Avenham Park so it’s the ‘hill’ at granddads that the girls run up and down

s a child my family always went big on the holidays, Christmas, Easter and birthdays. All the family would gather at my parents and we would eat in the ‘best room’ around the huge dinning room table. Mum would always ensure we had a new outfit and matching shoes, and there would be presents.
When I became a mum I took on the mantle of celebrating the holidays in a big way for my daughters. We actually celebrate everything and can always find any excuse to have a get together and a new dress, but there’s something very special about Easter.
THEY ARE HAPPY TO HAVE FUN IN THE GARDEN RUNNING WILD IN A PAIR OF BUNNY EARS Many see Easter as the poor relation to Christmas, but not me. I’m not sure whether it is the extended holiday weekend at the beginning of spring when the weather is always getting better, or the chance to eat chocolate for breakfast, but I always look forward to Easter. Christmas takes weeks of planning, events you need to attend and places you need to be, amongst a background of staging and executing the perfect Christmas Day for your children and family. I’m exhausted just thinking about it, or perhaps I’m still recovering from the last one! Easter just arrives. I don’t feel obliged to see the family I barely see all year and
with their decorated hard boiled eggs and chocolate eggs. Preston’s annual Egg Rolling event is back for 2022 this Easter Monday, 18th April. There will be comedy performances, the Magical Bewonderment Machine (an artistbuilt carousel for children), and many quirky and unique acts. Of course, the egg rolling itself will take place. the popular Painting Padiham is back Saturday 14 MAY 2022 Artists will be able to compete for cash prizes by creating an original piece of art depicting Padiham and its people, over the course of one day in May. This exciting plein air event is open to both professional and amateur artists who are asked to produce a piece of work on location, using any medium, excluding photography. Participants are asked to select a location within a 2km radius of Padiham Town Hall and produce a painting of Padiham or relating to a Padiham person. Gawthorpe Hall is also acceptable as a suitable location. Visitors to the event will be able to follow a trail to see artists at work and enjoy seeing original art created before their eyes. On the day, artists will register at the event hub in Padiham Town Hall from 8am. Blank canvases, board or paper will be stamped before they move out to their chosen location. Completed works will be handed in before the 6pm deadline. An exhibition of the submitted works will be held at Picture House Gallery for 3 weeks, following the prize giving and launch
event on Saturday 21st May. There will be 3 main prizes plus a Peoples Choice Award, decided via social media. A visitor guide & map will be available on the day, showing the locations of all the artists. Each artist will have a number and an artists bio on display. As well as the artists trail, visitors will be able to take part in FREE creative workshops and activities, taking part in both town centre locations and Gawthorpe Hall grounds. A free vintage bus will take visitors to and from the town centre to Gawthorpe Hall and visitors will be able to admire the recently refurbished town centre and visit the new shops and eateries. Gawthorpe Hall will also be open to visitors.

COHABITATION, CHILDREN & ‘COMMON-LAW MARRIAGE’
C
ohabitation continues to be the fastest growing family type in the UK, with the Office for National Statistics reporting that the number of couples choosing to live together without getting married or entering a civil partnership, in what is often called a common-law marriage, increased by 137 per cent between 1996 and 2020. Many people are still however, of the mind that a common-law marriage provides the same rights as legally married couples. It doesn’t. Some couples take the steps to put in place a cohabitation agreement, which sets out what they want to happen if the relationship breaks down. However, many don’t. So, what happens when cohabitees who are not married, but own a property together decide that they need to separate? What legislation is there to protect their property, and any dependent children?
Rachel Harrison and Angharad Bentley of Farleys Solicitors advise on protecting your assets as a cohabiting couple • Decide the nature and extent of how a property is owned by two (or more) people Essentially, TOLATA permits a Court to decide who are the legal and beneficial owners of a property, and in what proportion. In some cases, you can make a claim even if you are not named on the deeds to the property. The decision to issue Court proceedings is a last resort, and these types of claims can often be settled outside of Court, but it’s important to get the right legal advice on your side. Proving someone has/or hasn’t got a financial interest in property or land can involve very technical and robust legal arguments, so you need an experienced dispute resolution solicitor on your side to ensure the best result. We are also seeing a rise in separating unmarried couples who have been badly advised by a solicitor when a property was purchased, in terms of protecting their individual interests. These situations can give rise to a professional negligence claim.
DISPUTING PROPERTY OWNERSHIP
If an unmarried, separating couple own (or one person owns) a property which was shared together, then a claim might be able to be made under the Trusts of Land and Appointment of Trustees Act 1996 (TOLATA). With TOLATA, there are three main types of application that can be made with the Court having the power to: • Order a sale of a property, including directions on the practical arrangements for the sale • Decide who is entitled to occupy
often made in tandem with proceedings under TOLATA. Under Schedule 1 the Court can make provision for children under 18 years of age for periodical payments (regular maintenance), secured periodical payments, a lump sum, a settlement or transfer of property during a child’s minority.
IT’S ALWAYS A GOOD IDEA FOR PEOPLE WHO ARE PLANNING ON LIVING TOGETHER TO AGREE HOW THEIR FINANCIAL AND PROPERTY AFFAIRS WILL BE RESOLVED Once the children reach majority, unless there are factors that could trigger the end of the arrangement sooner, the property might be sold, with the proceeds of sale being divided in the proportions directed by the Court or as may be agreed between the parties themselves. For children aged 18 or over, in some limited situations the Court can make periodical payments and/or a lump sum payment, sometimes directly to the child for their benefit. It’s always a good idea for people who are planning on living together to agree in advance how their financial and property affairs will be resolved should separation occur – however unlikely that may seem at the outset. Whatever stage you are at in your relationship – legal advice at an early stage is the most important step to protect yourself and what matters most to you. n

These things understandably get more complex when children are involved. When a relationship between an unmarried couple breaks down it is possible in some cases for an application to be made to the Court in respect of children under Schedule 1 of the Children Act 1989. Schedule 1 claims are

AN AMICABLE DIVORCE? Whatever your personal circumstances, if you have decided to get divorced you will no doubt want to try to resolve things as amicably and cost effectively as possible anticipate an increase in the number of people getting divorced from April 2022 which will no doubt cause some delays.
What changes does the new law bring?
H
elen Lucking, head of family at Napthens, looks at changes to the divorce law which finally came into effect on 6th April 2022. This law, often called no-fault or amicable divorce, allows couples to start divorce proceedings without having to blame the other person. The divorce process has already been made much easier as you can apply online using a simple form. The Courts have been dealing with divorce applications relatively quickly recently, with the process taking about four months from start to finish. However, we
The new law promises to end the blame game between couples. The process will be instigated with a statement that the marriage has irrevocably broken down and in fact, couples can apply for divorce jointly should they wish. It is hoped this new process will reduce hostilities, improving the situation for all concerned during a turbulent time, particularly where children involved. It will no longer be possible to contest a divorce. There will be a minimum period of 20 weeks for couples to “reflect” before committing to divorce, followed by a further six weeks before divorce is finalised. Couples should be aware, however, that it is very unlikely issues relating to finances and children will be resolved within this same period.

INTUITIVE AND EXPRESSIVE ARCHITECTURE Helen Sanderson finds out more about the beautiful properties across the north west referred to as ‘Firth projects’

irth Associates is an architecture and interior design practice, that was established in 2003 in Lytham St Anne’s. They are best known for one-off houses across the north west which are fondly known as ‘Firth projects’. Joel Firth leads the teams on design and they have a number of production teams that help with larger projects. Joel explained: “Collaborative working methods work well for us and we aim to bring the best team together to suit each project. We have always prided ourselves in coming up with unique solutions always looking to improve the accessibility and environmental performance of the projects we work on many of which
have been historic or listed buildings.” One of Firths best known projects is Otter Bank on the shores of Lake Windermere. Joel said: “We are very proud of Otter Bank which recently won best residential new build at the Northern Design Awards.
We are working on five other large projects in the Lake District and the Yorkshire Dales including a number of off-grid structures for DEFRA. These are net zero carbon structures that will be constructed to the BREEAM excellent standard.” Joel Firth explained: “Working towards a low carbon future is an essential part of our day to day design work, as many of our projects include the use of existing buildings we use the definition of net zero carbon from an operational point of view as ‘when the amount of carbon emissions associated with the building’s operational energy on an annual basis is zero or negative. A net zero carbon building is highly energy efficient and powered from on-site and/or

off-site renewable energy sources, with any remaining carbon balance offset’.” Joel explained: “We are also using new commercial construction techniques which then feeds into our residential work keeping the designs current with advanced thermal insulation and heating systems. This becomes particularly interesting on rural historic properties where we often are trying to replace the use of oil with new systems such as air source heat pumps and mechanical ventilation and heat recovery systems whilst preserving the properties themselves.” Firths have worked on a number of historic properties over the years including a variety of projects from Grade I and Grade II listed buildings. In these situations, they collaborate with conservation specialists. For Firths it’s about putting the right team together to meet the challenge of each and every project.

On entering the studio there’s a beautiful mosaic floor with grey, terracotta and ochre tiles which leads on to an oak parquet floor. They use this area as a meeting space, a place to bring clients to look through the designs. Past work is showcased on the walls but the main feature is the meeting table and large screen which are used to show clients the designs and ideas.

Joel said: “We have recently started to sell lights on our interiors website some of which can be seen in the studio as we find it’s useful to show clients the products we are actually talking about. “Our supply chain for products and services is predominantly across Lancashire, Yorkshire and Cumbria and we try to source all of our products from these areas.” Having lived and worked in Lytham for nearly twenty years Joel has worked with most of the local businesses and enjoys helping many of the local societies and clubs. He has given talks to the local civic society and assisted with design work to renovate the rugby club. Joel added: “I really enjoy being the community architects and hope to continue to provide a great service to those local to the practice. “Over the years our workload has been really varied, from designing one-off houses

The gatherings reunited families and gave children who worked as domestic servants, or as apprentices away from home, the opportunity to have the day off to join their family and see their mother.
OUR MUMS Mother’s Day, or Mothering Sunday, is a day to show love, gratitude and appreciation to all wonderful mums everywhere

othering Sunday and Mother’s Day both have different origins, although they represent the same meaning, they originated very differently. We all celebrate the day and honour our wonderful mums and people who are like mums to us. The original meaning of Mothering Sunday and Mother’s Day has been somewhat lost but it’s still a day to solely appreciate your mum. Mother’s Day celebrations date back as far as the ancient Greeks where they would celebrate Rhea, the Mother of the Gods
and Goddesses, every spring with festivals of worship. The Romans also celebrated a mother Goddess, Cybele, every March as far back as 250BC. Like many traditions and festivities, Mothering Sunday began with a religious purpose. Held on the fourth Sunday in Lent, it was originally a day to honour and give thanks to the Virgin Mary, also known as Mother Mary. Such celebrations required people to visit their ‘mother’ church – the main church or cathedral in a family’s area. The spread of Christianity throughout Europe in the 16th century increased the

Whilst the day had a firm following for many centuries since the 16th century, by 1935 it started to decrease in popularity and was celebrated less and less in Europe, until WWII. At this time there was a crucial need to give thanks to their mothers whilst away at war, since then it earns pride of place on the UK calendar. n

INCREDIBLE SPRING DESTINATIONS 2002 is the year to travel so why not treat the family to a fantastic holiday this Easter?
W
hether it’s lazing on the beach, sightseeing on a city break, late-season skiing or going to a theme park, there are lots of options for a really amazing holiday at Easter. And you don’t even need to travel very far – the UK offers some amazing destinations just waiting to be explored. The island of Majorca is a fantastic option for an Easter break. With temperatures in the low-20s, it’s not boiling but it’s warm enough to sit outside and eat alfresco, explore the beautiful hilltop villages and even have a dip in a pool or the sea. Unlike the summer months, when Majorca can be quite a bit busy, Easter is much quieter and you’ll be able to sightsee in the historic towns of Deià and Valldemossa without worrying about the heat, the traffic or the crowds. If you want guaranteed heat at Easter (and who doesn’t), Dubai is the place to go. A direct flight to Dubai takes about seven hours but, when you land, you’ll find yourself transported to an oasis of amazing hotels, incredible pools, delicious food and beautiful beaches. This is perfect for a family
getaway, Dubai has its own theme park, aqua park, water sports and several luxury hotels with exceptionally well-equipped kids’ clubs. There really is something for the whole family. Or how about a city break among the dreaming spires of Oxford? You can try your hand at punting on the River Cherwell, look at the artefacts in the famous Ashmolean Museum and marvel at the beautiful architecture of the mediaeval colleges. There are some fantastic independent shops to visit too and check
out the Oxford Playhouse if you fancy seeing a brilliant play one evening. While it’s tempting to head abroad for the beach, Britain also has some lovely shoreline of its own. There’s plenty on offer in Cornwall which boasts stunning coastline, sandy beaches and yummy cuisine – especially if you like your seafood. Cornwall is famously a surfers’ paradise and Easter is a great time to pit yourself against the waves, before it gets too busy. In terms of sightseeing, don’t miss The Eden Project, Padstow Harbour and Pendennis Castle.
While some people might be in search of warmer climes, there’s still snow on the French Alps at Easter, making it the ideal time to have your last dose of skiing or snowboarding. Tignes and Val d’Isere are good resorts to head to for late-season skiing and offer plenty of run options, depending on your ability. Val d’Isere has a large children’s area with a magic carpet ski lift as well as lots of nursery slopes. If you fancy something a bit more challenging, there’s off-piste runs and a glacier to tackle, as well as waterfall climbing and lake diving for those wanting a break from the white stuff. n

PERSONAL BEST FOR FINLAY Finlay from year 10 represented both Oakhill and the Hyndburn and Ribble Valley district recently at Witton Park. Finlay qualified for a place on the district team after finishing in 8th place at the inter school’s cross country competition. He joined pupils from other local schools, competing against year 10 and 11 runners, taking on a boggy course in appalling weather. Finlay performed brilliantly, finishing in 21st place and achieving a personal best on a distance of 5k. Well done Finlay, you did Oakhill proud!
TOP MARKS Rossall School student, Oliver Hulme, 12, has passed his Maths GCSE four years early and gaining the highest grade possible. Oliver received top marks in the examination, achieving a level 9 (the equivalent of an A*). Oliver said: “My goal is to eventually study Maths at university and hopefully become a Maths lecturer.”
RETAINING LANCASHIRE CUP After two years of postponement, Stonyhurst St Mary’s Hall U13 first XIII finally got the chance to defend the Lancashire Cup at Preston Grasshoppers RUFC on Wednesday 23rd February. The team fought off strong competition from four competing schools including Kirkham Grammar and Bury Grammar. In a fast-paced final, the Stonyhurst St Mary’s Hall boys sealed the victory against St Mary’s Crosby, 10-0, to take home the Lancashire Cup. A fantastic achievement from Stonyhurst’s young first team.

Taylor Ng’s piano performance of Michele McLaughlin’s ‘Northern Lights’ impressed not only the school community but also the composer herself. Taylor was thrilled to receive a special video response from Michele, who complimented her on a “phenomenal job”. The Headmaster of Highfield Priory School, Mr Duke, said the school was “honoured” to have so many talented pupils. Highfield has been named as one of the Top Ten Independent Preparatory Schools in England for the fourth year running (The Sunday Times). Pupils from PP2 (Year 2) at Stonyhurst’s Pre-Prep School recently visited the Stonyhurst Collections during their humanities lesson where they had the unique opportunity to handle some fossils. Pupils held a large tooth of a megalodon, an ancient and much larger ancestor of the great white shark. To compare, and see how many teeth the megalodons had, the pupils were shown a recent shark’s jaw. Finally, by observing and handling the last object, the pupils tried to work out what it was. They discovered it was poo from a herbivorous dinosaur, fossilised over millions of years!

Both have challenged themselves and undertaken activities outside their comfort zones and have been rewarded for this. Year 9 student Erin feels the range of clubs Westholme offers is so different from anywhere else,such as Knit Club,Mindfulness, Lego Robotics and Foody Friday. She has improved her own sporting skills and is also involved in the school’s production of The Sound of Music as well numerous musical activities and the Digital Leaders Programme. Jessica started Year 7 in September 2021 and was recognised for her enthusiasm while showing parents and prospective students around the school at a recent open day. Dr Robson, who is incredibly proud of every student at the school, added: “The enthusiasm of each student is genuinely astounding. The awards programme recognises such a
wide range of skills, creating compassionate and kind students who are confident team players, prepared to rise to the challenges and take themselves out of their comfort zone.”

education the exterior panels, the iconic Borrodale tartan from the girls’ skirts subtly lining the interior of the shoe and the Stonyhurst logo neatly embossed on the sole. The Stonyhurst Borrodale tartan has a fascinating British history in itself, first being said to have been part of a kilt worn by Prince Charles Edward Stuart during the period of the 1745 Jacobite Rising. This Business Hour, Helen Sanderson talks to social media star Zaralena Jackson about her alopecia journey that led to a launch of a cosmetic brand to help other women live with the condition
W
ith almost a quarter of a million followers, Zaralena from Penwortham started using her social media platform to share her journey with hair loss after she was told she had the condition in summer 2020. What first started out looking like a severe allergic reaction, the former Ex On The Beach TV star soon began finding clumps of hair falling out of her head and within weeks, had lost all the hair from her body. Zara describes the ordeal as “soul destroying” and said she had spent months trying to desperately find answers and treatments, all whilst dealing with the mental impacts of what was happening to her. And after spending hundreds of pounds paying for specialists and private dermatologists, Zaralena was told she had alopecia and that there was nothing she
her journey on social media and says she gets hundreds of messages from young women struggling to deal with losing their hair. Zaralena said: “When I started my journey, I was open about it straight away on my social media which I found really helped me. It almost made it easier for me to deal with because I was reaching so many people who had the same experiences. “It all began in June 2020 when I started getting a rash all over my body and had inflamed lymph nodes in my neck. It was like I was just getting a major allergic reaction and before I knew it, I had lost all the hair from my head and my body.

I can’t put into words the panic you feel when you first find out you have got it and you start losing your hair. “For a woman, their hair is part of their femininity so when it started falling out it was soul-destroying. Every time I went in the shower, I would lose clumps of hair and it made me so scared to do anything or even touch my head.” Zaralena Jackson first appeared in the public eye when she joined seven other singletons in the Ex on the Beach villa but

had been designing clothes for years before that and managing her brand. From this, she said her followers, of which there are over 200,000 on Instagram, have remained supportive of her journey with alopecia and are eager to see a glimpse into her real-life struggles behind the luxurious outfits and selfies.
I REALLY WANT TO USE MY FIRST-HAND EXPERIENCE AND INFLUENCE TO HELP WOMEN IN SIMILAR SITUATIONS This was her opportunity to be raw and open about her battle with hair loss in the hope of supporting other young men and women who are struggling to deal with the condition, which currently has no cure. In a new venture, she set up Zaralena Cosmetics, offering non-permanent transferable eyebrow tattoos and false eyelashes to give other women a chance at returning to some normality after losing their hair. Zaralena said: “There are so many types of alopecia and different extremes of the conditions. Mine is the most severe, and when I lost my eyebrows and eyelashes it felt like my whole identity had been stripped from me. “I had to get used to adapting to another image again and even had my eyebrows micro bladed on which was painful and didn’t look right. I cried for four days straight, and I felt like I couldn’t even look at myself or get out of bed. “After looking into cosmetic products, I could use to help, I came across these transferrable eyebrows which last three days and are so easy to apply. They have saved me and saved so many other women
who are struggling to cope with losing their hair.” Zaralena widely researched products that she herself would use to boost her confidence and feel glamourous. She knew that other women would benefit from them so put her name to them and launched Zaralena Cosmetics. The current range which is animal cruelty free, includes transferable eyebrows and eyelashes strips for both the top and bottom of the eyelids. She also
supplies adhesive lash liners which are made to fit all types of lashes not just her own and provides the perfect look in eye liner. New to the range this April is a fantastic new product that will give wearers 4D brows! These are gel fibres that you can draw onto your face in place of your eyebrows that will give a real hair like appearance. Zaralena has also been using her real-life experience and influence in negotiations with the NHS to get real hair wigs and hair pieces listed for cancer patients, rather than synthetic wigs which are harsh to wear and don’t look natural. Zara concluded: “I really want to use my first-hand experience and influence to help women in similar situations. I just want to try and make peoples life a little easier, the strap line for my cosmetics business is ‘here to make people shine no matter how gloomy the world might seem’.” n

This latest £803,249 award marks another significant milestone in delivery of the project, bringing the total to £13.2m. This enables repairs to the external stonework of the building to be completed alongside Harris Your Place, in time for the planned re-opening in spring 2024.
THE HARRIS TO RECEIVE £803,249 IN FUNDING The Council owned Harris is among more than 60 galleries, museums, libraries and cultural venues to receive the Government’s Cultural Investment Fund (CIF)

warded through the Museums Estate and Development Fund (MEND) strand, this award will enable the Harris to undertake urgent stonework repairs to the deteriorating façade of the building, in addition to works already being undertaken as part of the £10m National Lottery Heritage Fund project. Galleries, museums, libraries and cultural venues across the country, including the Harris, are to benefit from almost £50 million of funding which will improve people’s access to the arts, safeguard cultural assets for future generations and power economic growth through culture. The Harris Museum, Art Gallery and Library in Preston, Lancashire has been awarded a grant of £803,249 by the
Department for Digital, Culture, Media and Sports, delivered by Arts Council England.
THE MEND FUNDING COMPLEMENTS THE EXISTING HARRIS YOUR PLACE CAPITAL PROJECT TO RE-IMAGINE AND PRESERVE THE HARRIS FOR FUTURE GENERATIONS The Harris is a Grade I listed building, and the jewel in Preston’s crown. The MEND funding complements the existing Harris Your Place capital project to re-imagine and preserve the Harris for future generations. In 2021, the Harris temporarily closed to the public to begin its major capital project.

It isn’t as accessible as it should be for everyone who needs it. Conservation is needed to reveal currently hidden original architectural details and to tackle the leaking roof and damp basement which pose a threat to preserving the Harris’ collections. The Harris Your Place project, along with this additional support of the MEND funding will allow us to preserve the much loved building. Harris Your Place is, of course, much more than just preserving the building and as our way of life changes ever more quickly, we need to ensure the Harris remains a vibrant heart of the community, where people want to spend their time. While work is carried out to our beloved building, visitors are able to enjoy our continued library service and range of Harris activities at our Home-from-home in Preston’s Guild Hall and pop ups across the city. n

COMMERCIAL BUY-TO-LET: THE BENEFITS R
Adam Bromley, partner at Forbes Solicitors looks at the benefits of commercial buy-to-lets
esidential buy-to-let has been criticised in recent years due to the three per cent Stamp Duty Land Tax (SDLT) surcharge, changes to mortgage underwriting standards and the reducing mortgage interest tax-relief combined with Brexit and Covid-19. Investors are now looking towards commercial buy-to-let as an alternative. This means purchasing a property with the goal of renting it out to another business. The benefits of a commercial buy-to-let include longer leases as commercial leases last years or even decades, which offers security for investors. Additionally, tenants are usually liable for any maintenance costs and landlords have very little to do with anything that goes wrong. Furthermore, there has been a slow discontinuation of the
mortgage tax relief and SDLT rates are capped at five per cent over £250,000 for commercial property, whereas residential SDLT rates can reach 12 per cent over £1,500,00. As with any property purchase, some risks need to be considered. For instance, commercial leases can often be terminated if it contains a ‘break clause’. This gives flexibility to tenants to deal with an uncertain future. Moreover, tenants can also be lost in times of recession and replacing them could take a while as evidenced by Covid-19. A valuation of a property is difficult to obtain because of the greater range of factors that can affect the value, such as the economic outlook and the location. The first step to the process of a commercial buy-to-let is finding a tenant to occupy the property. The Heads of Terms, which set out the main points of a transaction (subject to contract) are agreed between the landlord and tenant. Once the Heads of Terms are agreed, they are sent to the appointed solicitors, who then prepare a draft lease. Thereafter, the solicitor forwards the lease to the tenant or the tenant’s solicitors and a process of due diligence will be carried out whereby the clauses of the lease are negotiated in accordance with the parties’ requirements and enquiries are raised. As soon as the lease is completed, the tenant takes possession of the property. For prospective investors, a commercial buy-to-let may seem daunting. But our experienced buy-to-let solicitors can offer advice on the drafting of all forms of leases. Due to the rise in the Omicron variant, the government has awarded Preston City Council an additional £237,619 to support businesses in the area that have been severely impacted by Covid-19 restrictions. The conditional funding is being provided through March 2022 in the form of Additional Restrictions Grant (ARG) scheme and payments after this month will come to an end. The Council currently holds residual funds of £118k and when pooled with funds allocated under this latest announcement the ARG fund stands at £355k.

The study outlined the positive steps taken by the Lancashire County Council to protect people in adult social care and highlighted its support of the national vaccination programme.

hhh. Whisper it quietly. For this is a car – an electric car – that is gearing up to make a big noise. A really, really big noise. It’s an accepted fact that electric driving is not only here to stay but also likely to become the norm. So, for anyone still harbouring reservations, let me invite you to check out the magnificent BMW i4 eDrive. Worried whether it’s quick enough off the mark, provides enough power or cannot travel far enough on a charge? Well, how about 0-62mph in 5.7 seconds, 340 hp and a range of up to 365 miles? With emissions at zero and the UK already set up with close on 25,000 charging points, these statistics must surely leave the doubters with nowhere to go. Not to mention that the i4 eDrive also looks the real deal and handles with remarkable ease. And quiet. So very, very quiet. In fact, the silence resulted in a false start to my test drive when I pushed the ignition on and off a couple of times because I couldn’t believe what I wasn’t hearing and that the starter had actually kicked in! Along with the i4 eDrive40, with rear-wheel drive and one electric motor, BMW also

And all of the previous adds up to only half the story. Overall, the driving performance – away from the aforementioned stats – is truly awesome. BMW is particularly proud of the lithiumion battery pack (same on both models). For the technically minded, it provides 81.5 – 83.9 kWh (kilowatt-hour unit of energy). For everyone else, suffice to say that it is very high-voltage, extremely efficient with increased longevity and brilliantly concealed under the floor!

A special mention to the brakes. The Regenerative Braking System, which harvests energy that would otherwise be wasted when you brake, makes it easy to slow down smoothly. The Adaptive mode uses data from the navigation system and on-board sensors to judge when is best to increase the regenerative effect. The car operates silently. There is no engine noise, probably because there is no engine. However, from this year, ‘engine sound’ from none other than German film score composer Hans Zimmer can be operated via a driving experience switch.
Put your foot down (trust me, this is one responsive, quick-off-the-mark, exhilarating ride) and the noise gets louder with the pitch rising as your speed increases. Personally, I was happy to be at one with the peace and simply enjoy the drive. ALWAYS STRIVING TO BE BETTER
Laura Massaro the former world No1 squash champion has published her autobiography about what it took to become a world champion
T
here is a sentence in the foreword to Laura Massaro’s autobiography, written by England Netball Head Coach, Tracey Neville, that sums up just why her story is so worth the telling. It reads: “Most important of all, Laura should be a role model for young female athletes everywhere because hers is a story of resilience and of always striving to be better.” That Massaro could arguably claim to be one of the finest athletes that the UK
has produced in many decades would be enough of a recommendation to those who aspired to sporting success. And make no mistake, her chosen sport, squash, takes no prisoners in its demands on the body and mind. Not content with winning the World Championships in 2013, and reaching two more finals, winning the British Open – the ‘Wimbledon of squash’ – twice from four finals, winning the US Open twice from three finals, picking up three Commonwealth silver medals, two World Tour Finals titles, and a World Team Championships gold, this remarkable athlete achieved the ultimate measure of any athlete’s career, becoming world No1. What is more, hers has been a career of remarkable longevity, beginning with her part in helping to win the World Junior
Team Championship as a teenager in 2001, and concluding with the Monte-Carlo Classic in 2018. She retired in 2019 with 23 titles from 43 finals, and with more than eight years ranked inside the top 10.
THIS REMARKABLE ATHLETE ACHIEVED THE ULTIMATE MEASURE OF ANY ATHLETE’S CAREER, BECOMING WORLD No1 Yes, all that silverware and all that space in the history of women’s squash would be enough to inspire any young athlete. But it is the quality of the woman herself, the determination and the iron will in overcoming life-long self-doubt and personal insecurity that lifts Massaro to another level, and her autobiography is

there was nothing left for an off-court Laura. But she is a woman of many parts. There’s the intelligent one, who put her plans to take a degree in sports psychology on hold, but has drawn on and applied many branches of science and psychology throughout her career. And in her diversions into the difficulties facing women entering elite sport, her analysis is perceptive and well informed.
IT IS THE DETERMINATION AND THE IRON WILL IN OVERCOMING LIFE-LONG SELF-DOUBT AND PERSONAL INSECURITY THAT LIFTS MASSARO TO ANOTHER LEVEL as good a starting place as you could find for any hopeful world champion. The title sums it up, All In. The scale of the mountain that Massaro had to climb to reach the pinnacle of squash was writ large from the first in the shape of a woman born just three months before Massaro, Nicol David. The Malaysian would rise to dominate squash at a prodigiously young age, she was already world No1 at the age of 22, won eight World Championships, and went on to accumulate nine and a half years at the top. Perhaps not surprisingly, with a rival of this stature who happens to play in your own era Massro needed to devote a full chapter to her headed ‘Chasing Nicol’. It would be easy to be left with the image of a woman so focused on her professional life and with such a fierce will to win that
Indeed, how many sporting autobiographies throw in elements of Martin Heidegger and quotes from Friedrich Nietzsche and Søren Kierkegaard to illustrate their motivation and problem-solving? Then there’s the warm-hearted one who enjoyed the support of the women in her Lancashire league who took her under their wing as a teenager. They, and her fellow workers at the local leisure centre, supported her with their time and friendship, but also took such pride in their junior star-to-be that they organised fund-raisers to help her early career. There’s also the political one, the woman who joined the campaign for the merger of the men’s and women’s tours in 2015, and for equal pay – and the resultant conditions for young women seeking a career in squash are all the better because of it.

Finally, there’s the frank, honest, often humorous woman who has been brave enough to open her book to chapters by those involved in her story – among them husband Danny, coaches, psychologists, and therapists – and open enough to address issues around body image, and cliques in women’s sport. It is a fascinating read, and all the more so for shedding so much light on the struggles behind the headlines of success. And while the vehicle for this particular journey may have been squash, one is left with the impression that Massaro would have applied the same energy, passion, intellect and sheer sweat to whatever road she took in life. Even Laura herself has managed, now and then, to see the same winner in the mirror that the rest of us see. n

EASTER INDULGENCE Beyond colourful hard-boiled eggs and chocolate, there are many delicacies that factor into the traditional Easter meals enjoyed around the world

The recipes are often quite indulgent, featuring the foods that we’re forbidden during Lent. Lamb is the one food that is common in the Easter celebrations of many cultures. The roasted lamb dinner that many eat on Easter Sunday actually predates Easter it
version uses somewhat universal ingredients, like garlic, lemon, and herbs, which are rubbed on the lamb before roasting. Plan accordingly as the lamb needs to marinate for at least six hours, preferably overnight.
Roasted potatoes just seem like a natural accompaniment to roasted lamb and a popular side dish to lamb in Greece is patates sto fourno. Potatoes are tossed with a mixture of olive oil, oregano, garlic, lemon juice, and chicken broth, and then roasted until nice and crispy. Throw a bit of rosemary in the potatoes when serving with lamb. Potatoes are a big part of the Lithuanian diet and make another appearance in kugelis. This is a savoury potato pudding that is a very traditional side dish and popular on the Easter dinner table. Grated potatoes are mixed with sautéed bacon and onion, eggs, milk, and farina and baked until golden brown.You’ll also find several salads and many dishes that include mushrooms alongside a kugelis. Typically served with applesauce, sour cream, and bacon bits.

Possibly the most iconic dish from Greece is spanakopita, which can be found on nearly every dinner table across the country, especially at Easter. It can be in the form of a pie or individual triangles. Chopped spinach is mixed with feta cheese and layered between flaky sheets of phyllo dough. This dish can be served as an appetiser, light lunch, or add a Greek salad and make it a meal on its own.
Desserts abound at an Easter European Easter celebration. You will likely see paska, a moulded cheese delicacy, it’s no ordinary
cheese, either. The dry curd is sweetened, includes heavy cream and almonds, and is adorned with fruits and candies. This dessert has a taste that is similar to a cheesecake without the crust and is often spread on slices of kulich. The word paska literally means ‘Easter’ so you will hear it often in Eastern Europe. A number of treats take on the name as well, and in Ukraine, it refers to a lovely sweet bread. Italian pizzelle cookies are delicately adorned and crisp. Made with a special waffle iron, the batter for this recipe is flavoured with anise, while variations include vanilla, almond, citrus zest, or chocolate.You can even shape them into bowls or rolls while warm, then fill them with custard, fruit, or ice cream for an extra special treat. The lamb cake is a part of the Polish Easter table.You will need a lamb-shaped mould but can use a simple pound cake mix for to make it quick and easy. Decorate with a cream cheese frosting and use raisins for the eyes and nose. Coconut flakes died green work well as the ‘grass’. Babka Wielkanocna is a true representation of the celebration of rich foods after the Lenten fast. Similar to the Italian panettone, this is a yeasty cake recipe that uses only three eggs (rather than the typical whopping 15!) and requires only one 90-minute rise instead of two hours. The cake takes a little under three hours to make from start to finish. Koulourakia are butter cookies with sesame seeds that are quite fun to make.You can either twist, braid, or shape them into an ‘S’, or make a combination of all three.

You will often find them served with other desserts and strong Greek coffee as well as one of the famous Greek wines such as raki. These traditional Greek Easter cookies are great dunked in coffee or milk, too. With dinner, Lithuanians also serve a semi-sweet yeast bread with white raisins called velykos pyragas. This may be one of the best fruit cakes you’ll ever try: it includes a variety of glazed fruit, walnuts, and a delicious cinnamon-sugar filling. The bread is baked for 50 minutes and dusted with confectioners’ sugar or a glaze.
It seems that almost every country celebrating Easter has its own special Easter bread or cake, and yet, hot cross buns are a favourite in many area. Taking a little over two hours to make between the mixing, rising and baking time, these individual spiced yeast buns are filled with dried fruit and drizzled with lemon icing in the form of a cross along the top. The tradition supposedly derived from ancient Anglo-Saxons who baked small wheat cakes in honour of the springtime goddess, Eostre. After converting to Christianity, the church substituted those with sweetbreads blessed by the church. n

THE JOYS OF SPRING With warmer days and lighter nights it’s time to check out the new seasonal menu at the Three Fishes, while outside the permaculture plot will soon be yielding organic fruit and vegetables. Photography: Allen Markey

he arrival of spring has seen the Three Fishes at Mitton spark into life with a fresh new seasonal menu featuring aged Hereford beef, white asparagus and truffles, monkfish and pink prawns with a hibiscus sauce, finished beautifully with a blood orange and mango soufflé accompanied by brown bread and a marmalade ice cream, which Paddington Bear would be envious of! The wine pairing has been expertly put together by Hannah Taylor, the pub’s passionate assistant manager and wine specialist.
Nigel Haworth’s ‘farm to fork’ ethos is at the heart of the Three Fishes. The one-acre plot and polytunnel are set to be planted in late March, as he explains: “We have chosen some interesting heritage varieties of vegetable to grow. The plot and polytunnel are set to be planted and grown by the perma-culture method, renowned for its ‘no dig’ philosophy which retains all the goodness in the soil and is environmentally sustainable to nurture a flourishing natural ecosystem.” The Heritage seeds to be planted include Aztec broccoli, Hispi cabbages, Tokyo

With its roaring wood burning stove and flag floors, the area is perfect for birthday celebrations, wedding anniversaries and
family gatherings. The private dining room is split into two areas and can accommodate 14 on the beautifully restored mahogany table or larger groups of up to 35 in the oak beamed adjoining room. The two private dining areas are available for use either as a pair or individually, separated by a large oak sliding door ensuring privacy

There are a variety of menus available, ranging from the seasonal menu to a bespoke menu designed by Nigel.

The Three Fishes will benefit from the supply of organic fruit and vegetables throughout the Summer and into the Autumn. In the large vegetable bed nearest the state-of-the-art kitchen, herbs and edible flowers will be grown for micro-salads as well as decorative blooms for the restaurant and terrace tables.

Leading the 11-strong front of house team at the Three Fishes is general manager Jessica Moretti. With a background in retail management, Jessica has found her niche in hospitality and leadership: “I love it!” says Jessica, who is responsible for greeting guests on their arrival.
Hannah who has worked in various roles in restaurants in Melbourne and Sidney, Australia for over 10 years, says: “I worked in a bio-dynamic restaurant in Australia so when I heard about the Three Fishes and Nigel’s sustainability ethos, I immediately wanted to be part of the team!”
“I was brought up with the saying, ‘You never get a second chance to make a first impression’, and I think that’s very true. We want everyone to enjoy the brilliance of the Three Fishes. It’s more than just a four-course menu, it’s a culinary journey that we take with our guests.” Jessica adds: “As a team, we are all heavily invested in Nigel’s ‘farm to fork’ ethos, we believe in him 100 per cent! It’s an absolute pleasure to work here and we are always looking to evolve – every day we strive to be the very best.”
With her aim to become a Master Sommelier, Hannah honed her skills and has WSET Level 1&2 qualifications. One of Hannah’s main roles at the Three Fishes is helping choose the wine list and the wine flight to accompany the seasonal menu: “We recently had scallop and langoustine ravioli on the menu and we paired it with a white port. The citrus notes really livened the flavour of the shellfish. It was amazing!”

arlier this year Steve Smith of the Freemasons, Wiswell, had the honour of cooking for guests at the prestigious Estrella Damm Top 50 Gastropubs 2022 Awards lunch held at Escape to Freight Island in Manchester. Steve created a canapé reception and three-course lunch celebrating the wonderful produce of the north of England. Line caught cod from Morecambe Bay was selected and smoked salmon came from Wellgate fishmongers in Clitheroe. Ox cheek was sourced from Aubrey Allen and longhorn and shorthorn grass-fed beef fromYorkshire’s Waterford Farm.The fillets were Himalayan salt-aged for 65-70 days. Two of Steve’s signature dishes, truffle cheese hot dog and lamb fat and rosemary brioche also featured on the menu. Speaking about the experience, Steve said: “Being asked to create a menu and cook at such a prestigious event was a real honour as we were cooking for some of the best cooks in the country! “It was also a great opportunity to showcase what the Freemasons does and a fantastic

The Campaign for Real Ale has awarded the Spring 2022 Central Pub of the Season award to the popular Preston pub Vinyl Tap. In the Campaign for Real Ale (CAMRA) quarterly magazine Ale Cry, Edd Fletcher heaped praise on Vinyl Tap, calling it ‘a Preston staple for real ale and real music’ and ‘a triumph and well-deserving of the award’.
wagamama has officially opened a new delivery kitchen in Preston to meet the huge demand for the popular pan Asian food. The opening demonstrates wagamama’s confidence after the lockdowns and the need to meet local demand for popular dishes like Katsu curry, tasty ramens and delicious plant-based dishes. The new wagamama delivery kitchen is located in Blackpool Road and will be able to deliver to surrounding areas including: Penwortham, Ingol, Fulwood, Grimsargh, Samlesbury, Higher Walton and Lostock Hall.
Once Was Lost is a new cafe, bar, lifestyle shop, and wine and beer store located in what was Market Street Social. The venue off Friargate also features retail space for artists and artisan makers, and an event space and live performance venue. The independent movement will allow both artists and retailers to showcase their work to the local community in a social space, from the likes of live music every weekend to a Sunday makers market. The co-founders of PLAU Gin and Beer House were behind the temporary outdoors pop up bar Market Street Social, back when Covid regulations imposed restrictions on indoor spaces.
A new and exciting addition is on its way to Preston Market Hall. Tipsy Chef is a new restaurant where you can eat in or takeaway will serve up classic street food, including bao buns, smash burgers, dirty fries, freak-shakes and more, all made on site by head chef and owner Jay Oates.
A planning application has been submitted for Chain House Brewery Co to open its very own brewery tap room in Preston City Centre. There are plans to change the use of from residential property (Class C3) to Public House and Micro Brewery (Sui Generis) on 2-4 Clayton’s Gate. The proposed redevelopment will aim to upgrade a tired looking building into a high quality hospitality venue that will add as a new addition around the Friargate and Market Street area.
Preston city-centre restaurant headed up by a MasterChef finalist has secured a place in the esteemed Michelin Guide. 263, located just off Winckley Square, is overseen by Oli Martin, a BBC MasterChef: The Professionals finalist in 2018 and winner of BBC MasterChef The Professionals: A Festive Knockout in 2020. In the guide, Michelin said the restaurant has a ‘friendly vibe and subtle Nordic style’, with ‘fair’ prices that offer ‘modern, carefully cooked dishes with interesting textures and great depth of flavour’.

EXPLORING THE GASTRONOMY LANDSCAPE Having heard some great reports on the food at Mytton Fold, Tedd Walmsley tries it out and reports back
T
he Ribble Valley food scene continues to evolve and 2022 will see some new faces appear on the already burgeoning gastronomy landscape. I always think it’s hard for a restaurant within a hotel to stand alone and be counted as a destination in its own right. However, The Fold at Mytton Fold can certainly make this claim based on my experience. Just to remind you, Mytton Fold is a family-owned private hotel and the new owners have created a modern, luxurious style whilst maintaining many of the original features. Pre-lunch drinks in the lounge bar were a delightful way to start our lunch on a cold, frosty February Friday.
I could, however, see in warmer months, making the most of their beautiful al fresco dining area. Chef ‘Lammy’ has both been clever and ingenious creating a menu combining classics such as pie of the week, fish and chips and burgers with lighter options and weekly specials. As it was Friday it was ‘market fish of the day’ for me which was truly delicious.
to get some rave reviews with traditional sandwiches, pastries, cakes, scones with a selection of homemade preserves and cream all served alongside a variety of teas and coffee. The new menu certainly has something for everyone with a great selection of light bites, small plates, bar snacks, salads, pasta and decadent desserts. There is also a good selection of veggie and vegan options – there’s even a child friendly menu to tempt the little ones. Mytton Fold has a raft of special events including a Mother’s Day champagne afternoon tea on 27th March. Our Ribble Valley Singles Supper Club is looking at The Fold for one of their forthcoming events and our host Lynn is to meet the team to create a bespoke menu.
I really think that the new owners have made Mytton Fold into an exceptional dining experience. Choice and variety are abundant as is the quality of the offering so when trying to decide on where to eat out this spring please give Mytton Fold a try, you will not be disappointed. n

Melted hot butter drizzled over the fish and vegetables with tasty new potatoes complementing the dish perfectly. Kicking Off! The Dick, Kerr Girls Series Eve Ainsworth With International Women’s Day this month, it felt only right to focus on a book which celebrates an inspirational part of Preston’s history. Kicking Off! is the first book in Eve Ainsworth’s Dick, Kerrs Girls series, published in 2020 and aimed at the 9+ age group. It tells the story of shy 14-year-old Hettie who joins the production line at Dick, Kerr & Co Munitions factory, ready to do her bit for the war effort and who meets a group of ambitious women about to make sporting history. A kick about with a battered old ball, wearing too big, borrowed boots is just the beginning of their footballing journey. Descriptive and engaging, the book would spark the interest of any young reader (football fan or not), with the author bringing 1917 to life and reminding us that every generation faces the challenge of being brave and carving out your own path. The author introduces the harsh realities of war – boys going off to fight as men, characters waiting for news of loved ones and the horrors of mustard gas. Hettie and her colleagues face their own challenges at work, with the factory being a dangerous and exhausting environment. Hettie’s job of handling live explosives left her at risk of explosions and injury, whilst some women were known as Canarys, their hair and skin tinged yellow from prolonged exposure to TNT. Some of the male characters, including Hettie’s dad, are examples of the disapproval in society towards the new roles women were taking on – women had a place and for some, it was not on a football pitch.
Some readers may know a Dick, Kerr & Co lady. Women joined the factory workforce in 1914 and Dick, Kerr Ladies were established in 1917, one of the earliest female football teams in England. During their 48-year career, they played 833 matches, winning 759. They faced numerous challenges, from reluctance to accept that women could and should play football and resistance from the FA, who banned them from FA affiliated club grounds for 50 years due to their popularity threatening the men’s game. Their footballing legacy lives on, from junior grass roots teams to the premier league, proving that with support, hope and hard work, anything is possible.
The importance of teamwork, whether you were a soldier or a civilian is highlighted, as is the value of everyone playing their part. Hettie’s relationships with her brother Freddie and her new friends are mutually supportive and positive, with the characters protecting and nurturing each other through upset and injury. Hettie is surrounded by strong, tenacious female role models, who in turn, help her grow in this new world order. The author creates such likeable and real characters and writes with a sense of humour, you can’t help but cheer them on. It’s an uplifting book about friendship, family and being free to follow your dreams, even when the world around you is full of uncertainty. n Check out the second two books in the series, The Perfect Shot and All Together Now.
