It is an honor for me to present to you this edition, which is one of my very favorites. This month we bring you a motivating edition, in which we were able to interview a few of the admirable fathers in our community. Among them, they have different backgrounds, different personalities and different careers, however they all share the same purpose - which is to leave their children with a legacy of love, education, excellence and strong family values. I want to thank all of them that accepted our invitation to be featured in this special edition that we called “Dedicated & Devoted Dads”. I would also like to thank all of the loving and dedicated fathers in Doral and throughout the world.

The Key to Staying Young As part of the normal aging process, our body’s hormonal function slowly declines. Restoring hormonal function slowly declines. Restoring hormonal function naturally using the Rejuvchip procedure inserts natural testosterone pellets, which are bio-idental, and are made using a botanical source. SURGICAL ONCOLOGY PROCEDURES

f you or a loved one is diagnosed with cancer, chances of meeting with a surgical oncologist are pretty high. Surgical oncologists focus on the surgical management of tumors, specifically cancerous tumors. These physicians are specially trained in advanced medical technologies, which include minimally invasive procedures and robotic techniques. There are many surgical oncology procedures, including laparoscopic surgery, whipple procedure and liver resection.
Laparoscopic surgery is best known as minimally invasive surgery for performing tiny incisions that will result in less scarring, less pain and quicker recovery time. A long thin tube with a mini-camera attached at the end is passed through one of the incisions and the images are projected on monitors. This provides the surgeon with a clear view of the surgical area. This type of surgery might take longer than regular surgery, but the benefits outweigh the cons for this type of procedure. Whipple procedures are used to treat pancreatic and distal bile duct cancers. This procedure is one of the most difficult
because of the placement of the pancreas among other organs and its role within the body. This procedure allows surgeons to remove affected parts of the pancreas, small intestine and gallbladder. The surgeon then reconnects the remaining pancreas and digestive organs so that stomach contents will flow through the small intestine. A liver resection, also known as a hepatectomy, involves removing all or a portion of the liver. With today’s growing technology there are more ways than one to perform liver surgery. One of them is called radiofrequency ablation, a technique that heats the tumor with an alternating radiofrequency electrical current rather than surgically removing it. Another technique involves the removal of all lesions in two operations – rather than one. This way the liver can “grow back” after the first operation, giving less strain on the patient and allowing enough recovery time for the second operation. Surgical oncology treatment depends on many factors, such as the type, size and location of the tumor. Surgery may also be combined with other cancer treatments such as chemotherapy. s a certified physician assistant, I work with patients all day long. (I’m lucky to be able to help our patients achieve their beauty goals with Pierini Esthetic Surgery and Pierini: A Solution For Beauty.) However, without fail, we hear certain myths about neuromodulators (common brands are BOTOX® Cosmetic, Dysport and Xeomin) on a regular basis. Today, I’m looking to correct those myths, one by one. MYTH 1: Neuromodulators fills your wrinkles around your face AND plumps your lips. False. What most people think of are fillers, which do a completely different job. If you’re looking to plump up your pout or fill in fine lines, you’re looking for an injectable dermal filler that contains hyaluronic acid. MYTH 2: They’re poisonous toxins that will freeze your entire face. False. Yes, the name can seem a bit off-putting. But neuromodulators have been FDA approved for years after going through rigorous testing. When properly injected by a trained professional, the substance relaxes the muscles where it’s been injected only. MYTH 3: You don’t need them until you’re in your 50s. False. Yes, there are the lucky ones who don’t start showing signs of aging until they’re much, much older. Certain ethnicities and skin types enjoy this perk. However, many people start showing signs up wrinkles in their foreheads and between their eyebrows much earlier, sometimes as early as their late twenties or early thirties. When this happens, patients develop a deeper wrinkle over time, making it harder to correct down the line. Like all medicine, the earlier you treat a symptom the easier it is to correct. Prevention is better than correction.
MYTH 4: They do the job permanently, so one treatment does the trick forever. False. The substance typically lasts three to six months in most patients, although it’s important to note that I’ve seen it last a shorter amount of time in some patients and a longer amount in others. How long a patient can go between treatments depends on how quickly the patient metabolizes the neuromodulator. Either way, the substance does wear off in a matter of time, and wrinkles will return over time if you choose not to continue with your treatments. MYTH 5: A cream from the store will do just as good of a job as an injectable. False. We know a lot of people that wish this were true, and see patients who have tried those creams before coming to us. However, while some creams may temporarily help correct mild wrinkles, no other cream on the surface does the same thing as an injectable. MYTH 6: It doesn’t matter if your BOTOX® Cosmetic (or other neurotoxin) comes from outside of the country. False, false, false! If you haven’t watched an episode of Botched or picked up the newspaper lately, then we advise you to do so. While we’re not saying that every substance or practice outside of the U.S. is bad, of course, the only way for you to know exactly what’s in your injectable is to make sure that it has been produced to the standards of the United States government. Unfortunately, we’ve seen all sorts of instances, whether people thought they were getting BOTOX® Cosmetic, Xeomin, Dysport, fillers or implants… and they turned out to be something completely different, harmful to the human body in many infection-causing ways. Be sure to ask your provider if they buy their injectables and implants second-hand or right from the U.S. manufacturer BEFORE you start your treatment.

l maquillaje para los ojos marrones se esta luciendo como nunca antes visto, y es porque la mayor parte de sombras siempre le va a favorecer. A continuación te dejo los pasos que debes seguir para realizar un maquillaje de ojos ahumados muy parecido al que lucen nuestras actrices o cantantes favoritas, tanto para el día como para las fiestas nocturnas y hasta para lucir super #Trendy en tu prom. Los #SmokeyEyes se caracterizan por brindarle profundidad a nuestra mirada. Claro que para el día no necesitamos recargar mucho nuestros ojos, dejaremos ese toque para los estilos nocturnos y de fiesta. Para cualquier maquillaje ahumado vamos a necesitar sombras en tonos degradantes ya sean en tonos plateados o tonos oscuros e opacos. En lo personal me gustan usar sombras que sean más cercanas al color negro y para delimitar ambas, sombras en marrónes. El delineador y el rímel completarán nuestro maquillaje, y de bonus te recomiendo unas pestañas para que tu mirada no se pierda.
VAYAMOS PASO A PASO:
Para unos ojos ahumados espectaculares y de fiesta, debemos de aplicar una sombra gris plata en el párpado móvil y con ella, un poco de tonos tierra. En el párpado superior, le vamos a añadir una marrón y vamos a difuminar bien con un pincel de brocha sobre todo desde la mitad del párpado hacia la parte de fuera o exterior. 16 L I V E D O R A L M A G A Z I N E . Ahora le toca el turno de la sombra gris oscura que aplicaremos entre la marrón y la gris plata, con mucho cuidado y con un pincel mucho más fino porque queremos que nos quede marcada solo una sencilla línea. Después de difuminar bien cada paso, le toca el turno al delineador quien aquí cuenta con gran protagonismo. Puedes delinear la parte superior e inferior del ojo y dejamos que saques tus mejores habilidades a la hora de hacer la raya final. Este tipo de maquillaje será perfecto si para ello usas sombras en lápiz que son más cremosas, las fijas con una brocha plana y las difuminas con una brocha de pelo. Te quedará una sombra uniforme a la que podrás añadirle el toque marrón en la parte externa, así como otros detalles que se te antojen. Sencillo, ¿no?. Los ojos ahumados paso a paso son más sencillos de hacer y siempre hay que acompañarlos de un maquillaje de piel perfecto para que nuestros ojos ahumados paso a paso destaquen mucho más.

UNA SOLA GO LO N D R IN A SI HACE VERANO En mi familia ese refrán era usado constantemente, crecí escuchándolo en boca de casi todos mis parientes, ya sea por el lado italiano de mi familia (una rondine non fa primavera) o el lado español que ya vimos, o ahora el lado anglo que a todos empieza a notársenos cada día más; “One swallow does not make a summer”. Expresión usada desde la antigüedad ya por el filósofo Aristóteles en su libro “Ética a Nicómaco” o por su aparición en “El Quijote de la mancha”. Famosa parece desde siempre. Usada de manera acertada o equivocada. Si uno medita el refrán, es bien desalentador, se usa para decir que una sola persona no puede cambiar las cosas, que un solo indicio no significa nada bueno o que las cosas vayan a cambiar, se nos quiere decir que ver una golondrina solitaria no significa que los tiempos cambiaran. Las golondrinas son aves muy inteligentes dotadas de un sentido muy claro de los tiempos, climas y sus variantes, su supervivencia depende de ello. En Europa están la mayor parte del año apareándose, incubando y trayendo sus crías a este mundo. Cuando se aproxima el invierno, migran al África, siendo tan pequeñas (18 centímetros aprox.), son capaces de volar grandes distancias. Como venía diciendo casi siempre esta expresión se usa de manera desalentadora, que lastima que así sea, porque en realidad muchos llegamos a creerla en todo el sentido de la palabra, si esto fuese así en la práctica, nada se habría logrado por parte del ser humano; uno solo fue el primero que descubrió la luz, uno solo cruzo el océano por primera vez, uno solo piso la luna por primera vez, casi cada cosa importante para la raza humana fue alcanzada por uno solo, uno solo murió y uno solo resucito. Cada año miles de seres humanos logran cosas increíbles hazañas inéditas, si ellos pensaran de esta manera, nunca lograríamos nada como especie. Piénselo bien, imagine: En Europa está a punto de llegar la primavera, nos encontramos terminando el crudo invierno un grupo de Golondrinas inicia su regreso desde África, es el primero de miles de grupos de golondrinas, viaja a muy buen ritmo y el viento a su favor, de todas ellas, una sola se adelanta, detrás de ellas vendrán miles y millones de estas aves, pero ella sola es la primera, un campesino desapercibido la ve en el cielo, ¿significa que ya la primavera está por llegar? Si, si y si, solo que esa es la primera, las demás vienen detrás, ella es la precursora, ella es la que se adelantó al grupo, las demás están por llegar. Como la Golondrina solitaria que nos ocupa, un solo inmigrante puede cambiar una ciudad, un sociedad, ser portador de buenas nuevas, un solo ser humano puede afectar la vida de muchos para bien, las sociedades cambian cuando un ser humano con un corazón dispuesto decide hacer la diferencia, allí se inicia el verdadero cambio. Quizás
usted este pasando por un crudo invierno, quizás atraviesa por dificultades de muchas índoles, cree que las cosas no saldrán bien, su familia puede estar en un momento de dificultades, financieras o emocionales, pero también quizás en su propia vida hoy hay un indicio pequeño, una lucecita de esperanza que empieza a encenderse, un indicio simple, sencillo que el invierno está por terminar, aférrese a él, véalo como algo determinante, créalo, al que cree, todo le es posible. Una familia puede ser transformada milagrosamente por el cambio de uno solo de sus miembros. Si un animalito tan pequeño es capaz de hazaña tan maravillosa, cuanto mas no podrá hacer el ser más completo de toda la creación? Solo debe cambiar su actitud ahora y hacer su propio refrán desde hoy:

Tropiezos
ace unos días, mientras buscaba unos documentos importantes, encontré un cuaderno en el que escribía muy seguido experiencias que vivía en ese momento. Reflexiones y frases -de hace casi nueve años- pero que al leerlas pude notar cómo desde ese entonces, escribía cosas idénticas a las que hoy en día. Leer esas vivencias me hizo recordar todo el camino que he tenido que recorrer para llegar a este momento de mi vida. En ese entonces aún estaba sola y ni siquiera conocía al hombre que llegaría ser mi esposo, mucho menos imaginaba que tendría una hermosa hija. En algunos de esos textos narraba emociones o sentimientos que me inundaban, situaciones que me eran difíciles de enfrentar o cosas que yo anhelaba que un día se cumplieran. Pero hubo una frase en especial que escribí que aun sigue siendo trascendental:
“Dios cumplirá sus planes perfectos en mí”. Tenía la convicción de que Dios haría algo maravilloso en mi vida pese a estar enfrentando momentos muy difíciles, como a todos nos pasa alguna vez. Al leerme pude notar la convicción que tenía: no importaba el momento que estaba viviendo o experimentando porque de una u otra forma Dios iba a hacer algo maravilloso en mi vida. Leer mis experiencias me hizo confirmar con absoluta certeza que es necesario pasar por toda esa clase de situaciones, pero sobre todo me hizo entender que al final Dios siempre cumple su plan perfecto en nuestra vida y ese plan siempre sobrepasa nuestras expectativas. Es necesario que vengan tropiezos…”. Él nos enseña que es inevitable que pasemos por situaciones muy difíciles, pero al mismo tiempo nos mostró la forma de enfrentarlas… ¡Confiando en su palabra! Todos tenemos una historia que contar, posiblemente muchos están pasando situaciones que no quisieran experimentar, quizás otros en este momento están tristes por lo que están viviendo, puede que lo que están experimentando les esté sacando muchas lágrimas, y que en este momento no vean una salida o una respuesta a lo que viven, pero aún en medio de todo ello, créanme que Dios tiene el control y que al final sonreirán. Yo puedo escribir esto porque sé lo que es, puedo hablar de ello con propiedad, porque he estado allí muchas veces y seguramente volveré a estarlo. La vida está hecha de capítulos que hay que enfrentar, pero más allá de lo difícil que sea estar allí en ese momento tan gris de tu vida, si hay algo que nunca debes de perder es: la confianza en que Dios hará algo. Puedes sentirte triste, estar llorando, estar muy confundido o con un dolor profundo en tu corazón, pecibir soledad y abandono, pero aun en medio de todo sentimiento que en este momento está inundando tu ser, debes confiar ciegamente en lo que Dios hará, porque si de algo debes estar segura es que se manifestará, de eso no hay duda. Dentro de un tiempo te darás cuenta que todo lo que hoy en día vives o experimentas, te servirá para el futuro maravilloso que tiene planeado para ti. No te quejes, no cuestiones a Dios, no te
enojes con él, porque todo a lo que nuestra vida venga es soportable con su ayuda. Dios ve la capacidad de resistencia que tienes y jamás pondría algo en tu vida que no pudieras sobrellevar, recuerda que no estás solo, Dios mismo es quien está contigo. Deja que él escriba las líneas de tu historia, que describa cada situación que tendrás que enfrentar, pero sobre todo, deja que te tome en sus brazos para que no camines en solitario, confio en que él está allí para cuidarte.
Tú historia se está escribiendo y el final será más asombroso de lo que un día imaginaste, solamente CONFÍA en lo que Dios hará en ti.

Esta parece ser la premisa en el hogar conformado por el Dr. Javier Andrade, odontólogo especialista en diversas disciplinas y su esposa Tatiana Cañas “Tenemos dos hijos, Mariana de cinco años y Mateo de un año. Instalado en la zona de Westchester desde hace más de una década, el centro de servicios odontológicos que dirige se caracteriza por ofrecer la más alta tecnología en los tratamientos. “Todos los avances tecnológicos terminan aplicándose a la odontología y ayudan a que los tratamientos sean más eficientes, rápidos, cómodos y en general permiten prestar un mejor servicio. Por ejemplo, yo empecé a usar el láser en el 2008, y el que utilizo desde hace unos meses es el Fotona Light Walker que sirve tanto para tratar tejido blando como duro, cortar huesos, remover lesiones o cortar dientes. El Fotona que también aprieta los tejidos, inicialmente fue utilizado para mejorar el funcionamiento de la uretra en los problemas incontinencia. Actualmente también se usa
para eliminar los ronquidos ya al estimular la producción de colágeno eleva el paladar y facilita la respiración. El Dr. Javier Andrade enfatiza que su fuerte es el CAD/CAM en 3D (Computer-Aided Design & Manufacturing). “Empezamos con un sistema llamado CEREC lo cual me permite en una sola cita tomar una impresión digital y fabricar una restauración en porcelana en aproximadamente una hora y media. Este procedimiento devuelve al diente su función con resultados estéticos muy buenos. Después incorporamos la tomografía axial computarizada (TAC) que nos permite ver con más detalles las lesiones en los maxilares y colocar los implantes con mayor precisión. La tecnología sigue adelante y por eso yo me ocupo de estar al día para brindar resultados más predecibles y satisfactorios a mis pacientes”. Mateo is hyperactive, a great dancer and full of curiosity.” Becoming a father, a life-altering experience for all men, for Dr. Javier Andrade brought a need to reach his goals, bring out the best he had inside him and turned into a fundamental support for his personal development. “I spend the mornings and evenings with my children and weekends are also dedicated to my family. I consider it very important to spend time with them, give them a good example and pass on to them those values that we Latinos have, our roots.” His professional training in odontology taught him order and responsibility, two indispensable characteristics for advancement in a career with high professional demands. Located in the Westchester area for over a decade, the center for odontological services that he directs is well-known for delivering the latest technology in its treatments. “All technological developments end up being applied in odontology, improving the efficiency, speed and comfort of all treatments
and providing an outstanding service. As an example, I started using laser in 2008 and a few months ago I began using the Fotona Light-Walker. It works just as well in soft as in hard tissue, helping to cut through bone and teeth and remove lesions. This procedure gives the teeth back their function with excellent aesthetic results. We have also integrated the use of CAAT or computer- aided axial tomography. This allows us to view in more detail lesions in the maxilla and place implants with greater accuracy. Technology improves constantly, that is why I aim to be up-to-date in order to provide my patients with more predictable and satisfactory results.”

Atrévete a Soñar. ¿Cómo consigues la atención de tu pareja? Con detalles, apoyo constante y con sorpresas. ¿Si pudieras tener un super poder, cual seria? Sería el super poder de ayudar a mi país a salir de lo que actualmente está sufriendo. El super poder de tener a una Venezuela libre, próspera y de oportunidades para todos. ¿Qué te inspira? Si les inculco valores, ellos tienen que verlos primero en mí. Si les enseño a ser leales y ayudar a los demás, tienen que ver ese ejemplo en casa.

Cesar Gonzalez Cuéntanos un poco sobre ti. Mira, soy una persona común y corriente, padre, esposo, hijo, cabeza de familia y de negocio. Solo que con una pasión por crecer, por ser mejor cada día, que no se agota. También, por llevarle lo mejor a los míos, a quienes me apoyan en mis restaurantes, a mis clientes en mi agencia de marketing digital. ¿Una frase que te guste? Factor diferenciador. ¿Cómo consigues la atención de tu pareja? Le cocino, jajaja. Hablando en serio, no creo que sea cuestión de llamar yo su atención o ella la mía. Ya nuestras atenciones están fijas en nosotros, desde hace mucho. Y en nuestra familia, por supuesto, con mi hija Isabella. Estamos sumamente conectados, muy pendientes de lo que hace el otro cuando no estamos juntos, y siempre con pequeños detalles que hacen nuestros días. ¿Cómo te desenvuelves en la cocina? Como pez en el agua, por muy trillada que esté la frase, pero es la realidad. La cocina es uno de esos lugares que puedo llamar hogar, en el que doy rienda suelta a mi imaginación, a mis sentidos, buscando experimentar y complacer mi paladar y el de otros. Soy un peligro para cualquier cocina, sea mía, de mis restaurantes o de mis amigos, jajaja. ¿Qué te inspira? Me inspiran mis hijos, mi Rosangélica, el apoyo masivo de mis comunidades en las redes. Cuando alguien me da las gracias porque hizo una de mis recetas y a su familia le encantó. ¿Cuál es el ejemplo como padre que te gustaría darle a tus hijos? Hay varios que me gustaría dejarles. Yo llegué a este país sin nada, llegué a tener mucho y con la misma se vino todo abajo. Quedé sin nada y nuevamente me levanté. Por eso, la constancia es muy importante para mí, el nunca rendirse. La humildad también quiero que siempre esté de su lado. El cariño y respeto por el otro. Son tantos que no alcanzarían las páginas de esta revista. Pero eso sí, cuenten con que desde pequeños le hemos inculcado esos valores. ¿Qué es lo que más te gusta de ser padre? Ser padre es mi oficio por excelencia, así que ya con eso sabrán por dónde vengo. La verdad es que es una tarea que me llena mucho. Me complace jugar con mis hijos, estar con ellos y para ellos, educarlos, que vean que en mí, más que una figura de autoridad, tienen una mano con que contar siempre. En resumen, ¿qué es lo que más me gusta de ser padre? ¡Todo pero sobre todo el apoyar a Rosangelica en su increíble rol de madre! ¿Cuál ha sido la labor más difícil que has tenido que hacer como padre? En este momento tengo lejos a mi hijo Sebastián, no es una labor pero es lo más difícil que me ha pasado como padre. ¿Qué le dejarías a tus hijos? Mi mejor herencia será esa en la que he basado, y basaré, sus crianzas. Valores de primera para que sean los mejores seres humanos posible. Que aprendan de mis errores, que los mejoren y que eso los haga personas de bien. Gerardo Beauchamp I have been a dentist for almost 30 years. I graduated from Georgetown University Dental School in Washington DC. I came to Miami in 1989 to do a General Practice Residency in hospital-based Dentistry at Mount Sinai Medical Center in Miami Beach. Since then I remained in Miami. I have been practicing in Doral for 20 years now. My specialty is Implant and Cosmetic Dentistry and I love what I do!!! Favorite quote: “If you think education is expensive, try ignorance.” How well do you do in the kitchen? Other than my office, my other passion is cooking and entertaining. In a parallel universe I am probably the Master Chef of a Great Restaurant! Over the years I have developed a liking for cooking all types of foods. I have a sweet tooth, and desserts are my forte. I often entertain guests for sitting-down dinner at home. In the end, the best part of it, is to share quality time with family and friends. Sharing conversations around a table is the most rewarding part of entertaining. What inspires you? Excellence inspires me. Being the best at what I do inspires me. There is great karma in doing a job well done, especially in the health care field. God’s creations inspire me. As a father, what is the example you want to give your children? I think a father’s greatest legacy to his children is the love that he shares with them. Each child is unique, and loving each child’s individuality is a gift unlike any other. A child who learns that he or she is loved, will in turn love his or her children. And there is no greater love than being there for your children, supporting them, participating in their activities, getting their backs during the good as well as the bad times. My children are grown up, and I love the persons they have become very much! What are the most important values you teach your children? We have always stress the importance of a great education. Succeeding in life will depend on having a great education. Education however, is not learned in the classrooms alone; it is learned at home. Manners and values are learned at home. A professional education without proper values is worthless. Travelling is another way children get educated. Knowing and understanding other cultures is part of a great education. What would you leave to your children? I suppose my legacy will be one of simple, uncomplicated love. Love for family. Love for work. Love for people. I expect them to live their lives with passion. I expect them to place love and devotion at the top of every list. Their values are good. I hope they leave this earth, leaving it better than they found it.
JC Bermudez Can you tell us a little bit about yourself? I was born in Cuba, came to Miami at the age of 3. I grew up in south Florida; I am the father of 3 beautiful girls. Been a lawyer for 28 years, been married for 26 years. I like to read, I like sports, I play basketball. As a father, what is an example you strive to give to your children? To be a person of virtue, integrity, and honesty, everything else will come and go, but I think children will remember what you stood for. They have to know that their father will impose the same values onto whatever he does. What is the most difficult situation you’ve had to deal with? My youngest daughter was born with a problem in her heart, she’s now 7 years old and doing much better. When your children get sick in a serious way that is probably one of the most difficult things that any parent has to deal with. How did you overcome this difficult situation? Well I think that faith is very important, having faith in god and having your family stick together is really the formula to get through difficult times. If you could have a superpower what would it be? That is a great great question! I think I would like to read peoples minds or have the ability to see the future.

Creo que la paternidad es la responsabilidad mas grande que se le ha confiado al ser humano. No hay felicidad mayor para un padre que lograr que sus hijos los honren a ellos y a sus enseñanzas. Pienso que criar y capacitar a los hijos requiere mucha comprensión, intuitiva, humildad, fortaleza, sabiduría, espiritualidad, perseverancia y mucho más trabajo que cualquier otra tarea que tengamos en la vida. ¿Cuáles son los valores mas importantes que le inculcas a tus hijos? Ser tolerantes para aceptar a los demás con sus diferencias, responsables de asumir sus acciones para bien y para mal, ser honestos con ellos mismos y los demás, consistentes o perseverantes y aprender a darle importancia a las cosas, no por lo que valen sino por lo que significan. ¿Qué le dejarías a tus hijos? Bienes de valor familiar y sentimental. I got my start in the public sector working in the Miami-Dade County while I was finishing my bachelor’s degree at the Florida International University. Then, completed a Master’s Degree while I was working for Williamson County, and for the past three years I have served the residents of the City of Doral, working as an Administrative Assistant to the Mayor and the later as Chief of Staff, position which I currently hold. Nicky was only 3-1/2 years old when his heart turned to stone. As one of 18 children born to witchcraft-practicing parents from Puerto Rico, bloodshed and mayhem were common occurrences in his life. He suffered severe physical and mental abuse at their hands, at one time being declared the “Son of Satan” by his mother while she was in a spiritual trance. When he was 15, Nicky’s father sent him to visit an older brother in New York. Nicky didn’t stay with his brother long. Instead, full of anger and rage, he chose to make it on his own. Tough, but lonely, by age 16 he became a member of the notorious Brooklyn street gang known as the Mau Maus (named after a bloodthirsty African tribe). Within six months he became their president. Cruz fearlessly ruled the streets as warlord of one of the gangs most dreaded by rivals and police. Lost in the cycle of drugs, alcohol, and brutal violence, his life took a tragic turn for the worse after a friend and fellow gang member was horribly stabbed and beaten and died in Nicky’s arms. As Cruz’ reputation grew, so did his haunting nightmares. Arrested countless times, a court-ordered psychiatrist pronounced Nicky’s fate as “headed to prison, the electric chair, and hell.” No authority figure could reach Cruz – until he met a skinny streetpreacher named David Wilkerson. He disarmed Nicky – showing him something he’d never known before: Relentless love. His interest in the young thug was persistent. Nicky beat him up, spit on him and, on one occasion, seriously threatened his life, yet the love of God remained – stronger than any adversary Nicky had ever encountered. Finally, Wilkerson’s presentation of the gospel message and the love of Jesus melted the thick walls of his heart. Nicky received the forgiveness, love and new life that can only come through Jesus. Since then, he has dedicated that life to helping others find the same freedom. CHEESECAKE WITH FRESH SUMMER BERRIES
I
nspired by the classic French dessert cour a la creme, this has all cheesecake’s richness without the rigmarole of baking. Just what you want on a hot summer day; perfect with a swath of juicy berries. During the summer time berries are in season I enjoy using them as toppings for delicious desserts like this creamy cheesecake. The texture of the berries really brings out the flavor an makes an impressive resentation. Once the dessert is done and plated these berries will seduce anyone to grab a bite. I like to wait and add the berries at the last minute, this way the berries are perfectly plump and fresh! A little slice goes a long way, it’s rich, creamy and packed with a smooth lovely flavor. This dessert starts starts with the crunchy graham cracker crust with a hint of cinnamon and lemon followed by the star layer that divides the cheesecake from the sweet berries! Finally top with your raw desired berries and enjoy!
Directions
For the cheesecake: Line a medium (about 8-inches wide) sieve, fine strainer or colander with a double layer of damp cheesecloth and set over a bowl. Beat the cream cheese in a large bowl with a hand-held mixer on medium speed until smooth. Add the sugar, lime zest and juice, and vanilla. Beat until light and fluffy, scraping the sides of the bowl and beaters as needed. In another bowl, beat the cream just until it holds a stiff peak. Stir about 1/3 of the whipped cream into the cream cheese mixture to lighten the cream cheese. Gradually fold in the remaining whipped cream to make a light mousse. Transfer mixture into the lined sieve and fold the cheesecloth over top and press gently. Cover and refrigerate to drain for at least 4 hours or up to 3 days. Just before serving, prepare the berries: Cook about half of the blueberries in a small skillet with the water and sugar, over medium heat until the berries get juicy, about 8 minutes. Toss all the berries together in a large bowl, along with a squeeze of fresh lime juice. Unwrap the cheesecake and invert onto a platter. (Discard the cheesecloth.) Use a large ladle or spoon to press a well in the center of the cake. Spoon the berries into the well and drizzle the juices over the top or serve on the side.

• 1 pound cream cheese, at room temperature • 1 1/2 cups confectioners’ sugar, sifted • Zest of 1 lime (about 1 teaspoon) • Juice of 2 limes (about 1/3 cup), • 1 tablespoon vanilla bean paste or vanilla extract • 2 1/2 cups heavy cream
BERRIES:
• 2 cups fresh blueberries • 1/3 cup water • 2 tablespoons sugar • 1 cup halved or sliced fresh strawberries • 1 cup fresh raspberries • 1/2 lime.
GRAHAM CRACKER CRUST
