gratitude for your food

Consider the health benefits of gratitude for your food - not just during the fall holiday but every day. You can even go so far as to think of gratitude as a nutrient, like a condiment to sprinkle on your food to make it assimilate and taste better.

Why have Gratitude for Food?

First of all, you can’t live without it.

Think about that again for a moment: you can’t live very long without food. If that’s not cause for gratitude, I don’t know what is. Beyond that, feeling grateful puts you in an open hearted and receptive state - which improves digestion, heart health, and overall relaxation. Consistently giving thanks is a great way to both give and receive ongoing energetic, social, and even digestive gifts.

We are part of an amazing and complex food web we would do well to appreciate and connect with. Let’s take bees, for example. I first fell in love with bees when I first learned about their waggle dance in first grade and even now, thinking of bees makes my heart open. Bees are amazing and deserve our support and gratitude.

Without the work of bees pollinating the plants, most of the food we eat would simply not exist. And don’t forget gratitude for the hands that cultivate, gather, transport and prepare our food.

In slowing down as you eat and savoring the flavors, you give yourself time to fully take in the nutrients and energy in your food. You can amplify this effect by sharing your food with someone who doesn’t have as much or treating yourself to something extra-delicious and good for your body. To dial it down even further, appreciate the soil microbes and the work they do to nourish and transform the soil - that nourishes your food, that nourishes you! Opening to the wonder of it all opens your body to receive your food with love.

Growing and preparing food used to take up the majority of people’s time and energy. These days, we can buy prepared food or eat “out,” which gives us more time to be productive in other ways. Eating healthy food made with love, and eating it with others in appreciation is still the best way to take in your nutrients; it feeds your heart, soul, and stomach. It used to be - and it still is in many parts of the word that your only choice was to eat what is grown nearby, when the season serves it up. Now we have huge supermarkets with shelves full of food

from all over the world, in all seasons, as well as a resurgence of local farming communities that provide organic food grown with love. Whatever your food philosophy, whatever the source, take a moment to appreciate the food you eat and the edible bounty of choice that you enjoy.

How you eat your food matters – with Gratitude as nutrient The longer I live, the more I feel that how I eat is as important as what I eat.

Every chance I get now, I sit down and take a deep breath before picking up anything. I appreciate the colors, give thanks to the source that contributed to the food on my plate, and feel grateful for the whole process. That sets the stage for good assimilation,

and then the enzymes in my saliva can begin the physical process of breaking down the food. When I do this, I eat more slowly and enjoy the whole process more; plus, I stop eating before I’m over-full. I know I’m giving myself the benefit of better digestion and relaxation. Since I eat good food, I want to get my time and money’s worth by assimilating it well.

Don’t leave out the fun! Eating with your fingers when appropriate - the way you did before you could hold a fork properly - brings you back into your body and beckons you to delight in the colors, tastes and textures of your food - glorious food! Imagine wiping up a delicious sauce with bread and popping it into your mouth, or licking the juice of a perfectly ripe peach off your fingers. Touching your food can add the benefit of sensual pleasure to the nutrients it provides.

The Roots of Culture We think of a person’s culture as including shared customs, traditions, food, clothes, beliefs, and rituals. But historically, culture also included the particular microbes a people shared and used to make bread, cheese, sauerkraut, and other pro-biotic foods.

culture she got from her mother/ family and carefully brought with her to use and share in her new, married life, literally “bringing her culture with her.” This culture was important for the health of all the people who shared and ate from it.

I started culturing coconut water and making my own sauerkraut to improve my digestion. As an added benefit, I’m having fun with the new relationship I have with coconuts, cabbage, and the microbes that turn them into pro-biotic food. As I prepare a new batch, I beam gratitude at the little creatures that make the coconut water effervescent or transform the cabbage into something even more nutritious.

This simple process of cultivation connects me to the time before food additives and soil depletion and feeds my soul as well as my body.

We all have a guidance system, an internal compass directing us toward our greatest good. Referred to as our intuition, this sense of deep knowing is an aspect of our intelligence that can be accessed at anytime, for any reason and by anyone. Using our intuitive awareness to make decisions can be particularly useful when it comes to cultivating an uplifting and healthy relationship with food.

When out at a restaurant or at home preparing to make a meal we can take a moment to imagine what each meal choice would feel like in our body. When thinking of one meal choice we might get a lethargic, hazy or irritable sensation while the other might feel nourishing, grounding or energizing. We learn to opt for the meal with the most positive associated feelings, using these sensations as information to help us make energy-giving decisions. We keep in mind that we are both including and looking beyond our taste preferences to arrive at the best option avoiding the tendency of defaulting to an unhealthy choice based on cravings and quick highs.

Taking notice each day of the times we are truly hungry could be quite an eye-opener. We often eat breakfast, lunch and dinner at their socially accepted hours simply out of habit. We might be surprised to notice that we don’t actually get hungry until mid-morning, prefer to eat the largest meal of the day for lunch or enjoy small meals throughout the day instead of three large ones. Giving ourselves the option to move beyond the limits of habit and move into authentic awareness opens up the opportunity to communicate with and fully support our most personal needs.

Eating intuitively is an uplifting and healing practice that greatly benefits our relationship with food. By nourishing our bodies with whole, unprocessed and natural food, we have already taken the first step to cultivating intuitive awareness.

Macrobiotic Superfoods

You Should Incorporate into Your Diet

What is Macrobiotics? The word macrobiotic comes from Hippocrates of Ancient Greece, and is the result of the union of two words: makros—large, long and bios—life. Combined, macrobiotics translates to learning about long and happy human life, in tune with the nature that surrounds us and which we are a part of. Macrobiotics balances natural eating, regular physical activity, and expansion of consciousness. It is an approach to eating which concentrates on the meaning of the energetic worth of food. Rather than calories, we focus on finding a balance between our environment and what we put inside our bodies. The overarching disease of today is imbalance. Often, the reason people get sick is because we lose harmony between ourselves and nature. In Hawaii we are blessed to be living surrounded by raw nature, reminding us that we are not separate from it, nor can we reach our potential without nature’s balance. Macrobiotics offers the same teaching, allowing us to sustainably reach a balanced state through natural food. Based on the principles of yin and yang: expansive versus contractive energy, cool and moistening versus warm and drying, we regulate our system through a harmonious intake of food.

What are the best foods to incorporate into your diet according to Macrobiotics?

1. Whole Grains are the grounding base of macrobiotics. Brown rice, amaranth, quinoa, millet, corn, buckwheat, are examples of whole grains that support not only your daily fiber intake, but also fuel your body with iron, vitamin E, magnesium, and B vitamins. Always look for organic, non-GMO grains.

2. Beans are an important source of protein for a macrobiotic diet. They contain two types of necessary fiber— insoluble and soluble. Insoluble fiber lowers cholesterol, while soluble fiber aids in keeping you feeling full longer. High fiber content regulates blood sugar, and combined with whole grains, beans provide a virtually fat-free, nutrient rich protein that keeps your diet balanced.

Macrobiotics recommends adzuki, kidney, navy, chickpea, and pinto beans. As with grains, always buy organic, non-GMO beans.

3. Dark Leafy Greens such as kale, watercress, bok choy, mustard greens, dandelion, spinach, swiss chard, arugula, cabbages including broccoli, and collard greens are alkalizing and full of chlorophyll which helps purification of the body and aids in maintaining strong, clean blood. Dark leafy greens are ripe with vitamins such as C, K, A, as well as fiber, iron, beta-carotene, folate, calcium, and cancer-fighting phytochemicals.

4. Sweet Potato and Squash are a rich source of vitamins and minerals, including vitamin C, A (beta-carotene), manganese, vitamin B1, B2 and B6, copper, pantothenic acid, potassium, niacin. Half a large sweet potato offers more than 450% of the recommended daily dose of vitamin A. In macrobiotics, sweet potatos are often roasted or blanched and paired with dark leafy greens over a bowl of whole grains and beans.

5. Shiitake and Maitake Mushrooms have been found to be a powerful source of healing, supporting a healthy heart, strong immune system, reducing inflammation, combatting allergies, maintaining blood sugar, fighting against viruses and bacteria, reducing the risk of cancer, and aiding in detoxification. Mushrooms contain protein, fiber, calcium (1/4 of mushrooms equates to 1 glass of milk), vitamins C and B complex. Shiitake mushrooms are a common ingredient in miso soup, which is recommended daily in the macrobiotic diet.

6. Seaweed is regularly used in macrobiotics, particularly wakame, kombu, nori, hijiki, dulse, agar, arame. It is extremely beneficial to us who are living in the islands as it is a powerful source of iodine, supporting our thyroids and keeping us from absorbing radiation. Additionally, seaweed is rich in omega-3 fatty acids, zinc, calcium, magnesium, potassium, chlorophyll, and some are especially packed with B complex vitamins and protein. In macrobiotics, kombu is used for making dashi broth or when cooking beans, as it aids in digestion. Wakame is most often found in miso soups, while nori is the seaweed used to make sushi.

Fermented Food Pickles - Miso - Umeboshi Plums - Coconut Kefir/Yogurt Fermented foods are a great source of probiotics. Probiotics support your natural digestive system in breaking down and processing foods that you intake.

7. Pickles help prevent the development of yeasts (such as Candida), guard your body against infections, stimulate the immune system, and facilitate the synthesis of certain vitamins such as C and B12.

8. Miso is made of fermented soy and used most commonly in soups. Macrobiotics dictates that miso should be eaten daily for its probiotic, alkalizing, and immune system building properties. It contains isoflavones that have been studied for guarding against cancer, helping to cure intestinal infections, radiation sickness, and leveling out acidic conditions in the body.

9. Umeboshi Plum — a staple in macrobiotics, the tart and salty umeboshi plums are pickled with shiso leaves for 3-5 years and used as a balancing, strengthening, digestive aid. With powerful antibacterial properties, umeboshi is good to use every day in dips, dressings, sauces and sushi.

10. Coconut Kefir and Coconut Yogurt — a dairy-free alternative packing the same probiotic punch as their animal-sourced cousins.

Coconut yogurt

For thousands of years, people around the world have enjoyed the taste and benefits of probiotic foods. Probiotics are living foods, rich in beneficial bacteria. These bacteria repopulate the gut aiding with digestion, immunity, and general well being.

People with digestion issues often find healing after trying probiotics, even for a short time.

One of the most well known probiotics is yogurt. Yet, for the conscious consumer, buying a container of yogurt doesn’t always necessarily feel right. Hormones, antibiotics, and preservatives found inside can truly make it a less than healthy choice. Lucky for us, here in Hawaii we have an abundant and affordable alternative to dairy.

Coconuts are ALWAYS in season and coconut yogurt is ridiculously easy to make. It’s fun and takes only 15 minutes (including clean up) to make. Treat yourself, save that money and make some at home this weekend.

coconut yogurt makes one quart you’ll need: 3 Spoon-Meat Coconuts and a Probiotic Starter* of your choosing

* Vegan probiotic starters can be easily found at local health-food stores _____________________________________________________________ 1 - Open cocos, drain water and set aside. Remove the meat and clean by shaving off inner shell (a potato peeler works great).

2 - Blend the meat with a small amount of coconut water. Use the stick to pulverize until it takes on a smooth consistency.

3 - Pour mixture into a glass or ceramic bowl, not metal. Use a wooden or plastic spoon (again no metal) to stir in your probiotic mixture. _____________________________________________________________ Well done! You have just started your first yogurt culture.

Cover the bowl with a towel and set in a warm spot. You’ll need to wait 24 hours for the culture to mature.

After a full 24 hours, taste – it should have that classic yogurt tartness. Put into a mason jar and keep in the fridge till you are ready to delight in your delicious, healthy treat. The only thing left to do is top with fruit of the season and enjoy!

Keep in mind, not every probiotic is the same (there are thousands of strains). When experimenting with new strains, start small. Try a little taste, listen to your body and always trust your gut.

At the stem of most sickness and premature aging is dehydration.

When the cells get dry, they start to shrivel up and die.

This creates premature aging as cells are dying too early and not living their full life span. Also when the cells get dry, they cannot stay healthy and strong, so sickness sets in.

The body can survive without food for 30 to 40 days but the body can not survive without liquid for more than 3 days. So the most important way of eating – is to EAT JUICY FOOD! Eat as much food with liquid and oxygen as possible for maximum healing and thriving.

How do we EAT JUICY FOOD? Simple! the Chimp

Diet

by Alfred Morrissette I did a little research several years ago on what chimpanzees eat in their wild, semi-tropical rain forest habitat. I was thinking that they intuitively know what is best for themselves, and since they share 98% of human’s genetic heritage (as do bonobos) and are physiologically very similar to human, I assumed their diet would be quite relevant for us.

Ripe Fruits and Young Greens Are Superior I learned that chimps and other similar primates are primarily frugivores, and humans, who share virtually the same physiology, are designed as frugivores as well.

Chimps eat about 55% to 60% fruit, with bananas, wild figs and paw-paws being their favorites. Stool studies indicate that they generally eat one type of fruit at a time, and no more than two kinds per meal. They forage when hungry, not at set times. Moreover, fruit is 90% assimilable for primates (and humans).

In addition to fruit, plants are a key component of the chimp diet; chimps eat a lot of fresh young leaves and newly emerging young plant and tree buds, shoots and flowers. This group of foods comprises about 25% of their total diet. They are evidently very discriminating about their selection of these very

young plant materials (and their fruit, too). Emerging plant material like this is very bio-active, containing the highest concentration of nutrients, including protein, which is essential to chimps. It is important to note that fresh, very young (approximately 10 days old or less) plant sprouts, leaves, flowers and shoots do not have a mature cellulose covering surrounding each cell. This is critical, as chimps (and humans) cannot easily assimilate or digest cellulose to access cell nutrients. Aside from fresh young green shoots, chimps eat very few true vegetables, such as roots and broccoli crowns. Most root vegetables have a high percentage of cellulose, making assimilation difficult.

In his book Nutrition and Physical Degeneration, Weston Price noted that buffalo used to migrate from Texas to Montana every spring to follow the fresh young grass when it emerged as the spring season

progressed northward. They intuitively knew that young grass shoots are the highest in nutrient density and most tasty. Price called this the “vitamin tide” that the buffalo followed each spring. Similarly, it has been shown that domesticated animals fed young hay and grasses do better and need smaller amounts of food than those fed mature hay and Fruits and grasses.

It also has been shown that deer in the wild prefer the very freshest and youngest grass, which is high in nutrients and most easily assimilated.

Although deer can digest cellulose, they will not touch grass after it has jointed.

Think about this: A lot of mature foods that we may think are supposedly good for us, like mature green lettuce, kale, celery, spinach etc., are therefore poor foods for us, because we cannot extract more than perhaps 10% of the nutrients from that food due to the mature cellulose covering encasing the cell nutrients.

Juiced mature greens is an exception, because the juicer teeth or gears efficiently break open the cells of the plants’ fibers, releasing the nutrients which are contained inside the cells. It is best to process mature greens using a masticating juicer or a hydraulic press.

So, for whole food nutrition we should select only the very freshest, young, emerging greens, such as sunflower sprouts, other young sprouts, baby lettuce and spinach, and other micro greens.

The important takeaway here is that fruits, along with the emerging green plants, are our ideal and most efficient foods.

Chimps’ Natural Source of Water Another key point linking chimps and humans is our water source. Both species are not natural water drinkers. Chimps procure the majority of their water from juicy fruits, and that is the ideal way for man as well. The water in fruits and vegetables is not ordinary rain or pond water; it is structured water. The formula for structured water is H3O2 (not H2O).

The following excerpt is based on an interview conducted by Dr. Joseph Mercola. In it, he explains the work of Dr. Gerald Pollock, Professor of Bioengineering at the University of Washington, regarding the derivation and functions of structured water: “ The reason this fourth phase of water (structured water) is called the exclusion zone or EZ is because the first thing Dr. Pollack’s team discovered is that it profoundly excludes things. Even small molecules are excluded from EZ water.

Surprisingly, EZ water appears in great abundance, including inside most of your cells. Even your extracellular tissues are filled with this kind of water.” “ O ther inherent differences between regular water and EZ water include its structure. Typical tap water is H2O but this fourth phase is not H2O; it’s actually H3O2. It’s also more viscous, more ordered, and more alkaline than regular water, and its optical properties are different.” “ One of the greatest surprises is that the key ingredient to create EZ water is light, i.e. electromagnetic energy, whether in the form of visible light, ultraviolet wavelengths and infrared wavelengths, which we’re surrounded by all the time. Infrared is the most powerful, particularly at wavelengths of approximately three micrometers, which is all around you. The EZ water can build on any hydrophilic or water-loving surface when infrared energy is available.”

In fact, no being on earth eats cooked food except humans and their pets. Cooked foods are destructive and is not nature’s way. Cooking food destroys around 80% of food’s nutrients. Heat alters the chemistry of foods, creating many virulent poisons which the human body recognizes as threats. A diet of cooked foods leads to disease. One’s white blood cell count, temperature and heart rate automatically rise upon ingestion of cooked food. Furthermore, the body is dealt the burden of eliminating these toxic substan-ces and waste matter.

We are genetically and physiologically wired for raw food, based upon millions of years of humanoid existence.

Do as the Chimps Do In conclusion, it is simple to determine our absolute optimum diet: just eat like a chimp. The Chimp Diet is our optimum diet!

The vibrant and creative menu is reflective of Chef Stephen’s personal journey to better health. Classically trained and with over 30 years of experience in gourmet cuisine, Stephen underwent a dramatic transformation from consuming a standard American diet to a vegetarian, then vegan, then raw food diet,

losing over 150 lbs. in the process. The change, along with its resultant positive health effects, inspired a passion for applying his skill and talent to cooking plant-based foods.

The restaurant’s owners also take their responsibility to the community seriously. They have recently launched a fitness program for its guests, local and tourist alike.

SPIRITUAL EVOLUTION THROUGH

Living on Maui has always felt to me like being in a spiritual washing machine. My first ten years here were filled with ass kicking lessons through pain. To go through and out this pain and to nurse the wisdom these lessons were giving me, I got into Yoga, meditation, singing, dancing and other forms of therapy.

As the days went by, I looked around me and noticed all the other wandering souls who found their way to the islands, getting washed, tumbled, spun and wrung by their lessons and their own growing pains.

Often times I would sit with my fellow soul searchers over lunch or dinner, devouring whatever delicacy would be served on our plate as we would verbally

Three years ago, on another part of the planet, a sharp turn of events changed my perception of reality. Through various means of media, I was shown the real consequences of my dietary choices.

I was shown the gory details of the systematic cruelty my food went through before it was placed on my plate. This included my “happy”, organic, grass eating animal based food. These details I will spare you dear ones. I think that by now, most of us, at least most of us who work toward spiritual evolution, know these details. Besides the mass production of even organic, grass fed animal

cognitive dissonance and the one of many, well intentioned people who were operating from an acceptable norm which was no longer serving us humans, the planet and its other nonhuman inhabitants.

That is the question which made me turn my dietary habits around. I became 100% plant based, first as an experiment, then as a proclaimed lifestyle. I noticed the changes in me almost immediately. Not only did my subtle physical discomforts fade away, my mental and emotional clarity changed. I felt cleaner not just physically, but spiritually. I could finally sit in namaste and pray for the alleviation of suffering on this planet with a clean conscious. The vibration in my body was no longer one of suffering sentient beings, but rather of life giving plant foods. Soon I realized that it’s not just about

what is on my plate which makes my spiritual practice evolve, but also what I wear, what personal care products I used on my body and in my home. I did not want to wear the skins of tortured animals or use products which were tested on imprisoned beings. I decided to walk my talk of ahimsa; nonviolence to all living beings and be the change I wanted to see in the world. This was the spiritual evolution I had been looking for. Where once we needed the calories and density of animal flesh and byproducts in order to survive the harsh elements, we are no longer part of that reality. Our evolution is more of an awareness revolution than a physical mutation to fit our surroundings. I have to say that going 100% plant based is not bullet proof. There is still suffering involved in producing plant based food. Our mere existence on this planet causes suffering to other creatures and this planet.

Yet, I found that it is the least harming of all the available lifestyles. And that is a truth I can Om to until the cows come home to Krishna.
