During the preparation for my high school final exams, I was under quite a lot of stress, amounting from insecurities arising from fears and the impact my exam result would have on my future. The stress wasn’t healthy to the point my appetite began to wane and I was on a self destructive roll by refusing to eat properly. One day as I return to my desk to resume preparation for my exams, I found a small bowl covered with a note below it from mother. Inside the bowl was a generous serving of carrot halwa. The stress didn’t leave immediately nor did any of my concerns, but one bite into the halwa and my worries left with the wind even if it was only for a moment.

What is Gajar ka Halwa? It’s roots lays with the Turks where it was first made for the sultan so he could impress his women, the sweet dish after it made its way into India,was soon incorporated into the already large and impressive cuisine of the nation. During the 17th century Dutch horticulturist developed an orange strain for the carrot to honor 'William the Orange'. The orange carrot proved to be quite the hit after making its way to the Indian subcontinent via means of trade, chefs began incorporating the vegetable into their cuisines, that is how the orange color carrot halwa came into being. Make your own carrot halwa at home You will require  Carrots (2 cups)  Milk (1 cup)  Green cardamom (1-2)  Sugar (1 cup)  Desi ghee (5-6 tbsp)  Condensed milk (half cup)

Steps 1. First, stir fry grated carrots in a pot on heat, continue doing so until all the water evaporates. 2. After which add cardamom, sugar and cardamom, let your mixture cook for a while, once done add in desi ghee and let the mixture cooked for an additional 5-7 minutes, after which finally you add condensed milk or khoya. 3. For the final touches, you can add gold vark for decoration. 4. Garnish your carrot halwa with pistachios and almonds and enjoy it with your friends and family members.

It can be served both hot or cold depending on one’s preference. The sweetdish sweet yet smooth texture draws in a large number of following, its popularity and unique taste finds itself made duringspecial events, family gatherings, celebrations and as offerings during pujas to the gods.
