General Manager’s Message Welcome to the February edition of our newsletter – our second edition for 2018. We have started the year heading great progress at the resort. Our display homes are well underway with new homes for our residents beginning as well. I am pleased to announce that the Living Gems Pacific Paradise Open Day will be held in March. You can find more information about the day within this newsletter edition. If you haven’t already, please join our Facebook page to get access to all the latest Living Gems news across the country. In this edition, you will find information about one of the many resort facilities that will be available to all the residents of the Living Gems Pacific Paradise resort – the tennis court. Sales Manager’s Message Recently, we had a fantastic morning tea at the Living Gems Pacific Paradise country club. It was a great opportunity for everyone to meet new people and catch up with old friends. It is so fantastic getting to know our deposit holders and interested parties who will soon join the wonderful community at our Living Gems Pacific Paradise resort. We will have many more fantastic events and gatherings planned for the rest of 2018, we hope to see you there! Living Gems Pacific Paradise has been very busy since the new year, with enquiries about the final homes for sale at the resort. We only have 30 homes left to be sold, so make sure you register your interest soon. Our display homes offer you the

opportunity to really visualise what your new home and lifestyle at Living Gems Pacific Paradise could be like. Meet ‘n’ Greet Morning Tea

Recently the residents of Jade Avenue in Living Gems Pacific Paradise resort held a street party. It was a lovely afternoon, it is a fantastic example of the wonderful social scene available at the resort.

Living Gems Pacific Paradise hosted a beautiful morning tea for deposit holders and interested parties last month. The information session was a great opportunity to view the display homes, country club and meet potential new neighbours.

At Living Gems, we like to know our people. Bringing like-minded individuals together is something that we’re truly passionate about. What are your favourite pastime activities?

Originally from Rockhampton Keith, 68, and Marion, 63, moved down to the Sunshine Coast 19 years ago for a sea change. After leading an eventful working life, they have set up a base at Living Gems Pacific Paradise. Marion and Keith tell us about what they have been up to since moving into their brand new home.

They love spending time with their family; they have three children and six grandchildren. They have spent the last ten years travelling Australia in three different motorhomes. Their Jayco motorhome was the last they owned – there was even a washing machine inside! We have taken our motorhome as far south as Tasmania and as far north as the Daintree rainforest. Our favourite places to visit are rainforest and coastal locations, New South Wales in particular. What do you love the most about your Living Gems Pacific Paradise home?

Tell us a little bit about yourselves

What floorplan did you choose?

Keith and Marion are both originally from Rockhampton, Marion grew up on a dairy farm in Mt Larcom. She started out working as a nurse early in her career and later moved on to administration and office support work. Keith is a butcher by trade, but he has also managed his own delivery business and spent some time working for Telstra. They really enjoyed travelling in their motorhome.

They decided on the Peregian, as it is the perfect size for them. They love the space the double lock up garage and two bedrooms offers. The open plan living area is so lovely on summer afternoons; the breeze flows nicely throughout their home. The covered alfresco dining area is also a lovely bonus; it’s great for entertaining.

They have had so much fun since moving here and feel reinvigorated. They don’t think they could have ever imagined retiring in such a wonderful community. They have met so many like-minded people and enjoy lots of social get-togethers – they love the social scene available here. There are great facilities on offer like table tennis, lawn bowls, tennis and the games room. Their family love to visit them here; they are now more popular than ever!

How did you come to hear about Living Gems Pacific Paradise? Since they were living in Bli Bli at the time, they were able to see the stages of construction at the Living Gems Pacific Paradise resort and it stuck in the back of their minds. Due to ill health in 2016, they made the decision to downsize and find somewhere local to their doctors, with a social and tight-knit community. Thankfully, Living Gems Pacific Paradise is in the perfect location for them, and they have been having a ball at the country club ever since.

How to Build the Perfect Charcuterie Platter 1

Sweet

Offer your palate a diverse and complex flavour experience by including sweet accompaniments such as grapes, sliced pear, fresh figs, quince paste and dried prunes. These sweet flavours go well with cured meats and cheese and add colour and dimension to your board. Soft and juicy prunes pair perfectly with the strong flavour of paté and a crisp piece of toast.

Sour

Further diversify the flavours on your board by adding sour tastes to the mix. Marinated olives, cornichons and capers complement the meat and cheese perfectly.

Meats

Make sure you mix up the flavours in your selection of meats; spicy and mild sopressa or sliced chorizo, full-flavoured and salty prosciutto or pancetta and mild and simple flavours like mortadella. You’ll need approximately 30-50g of meat per person you are catering for.

Cheese

Follow these seven easy steps to build the perfect charcuterie platter for your next dinner party or light lunch. 30 minutes – 1 hour before serving. Offer a selection of cheeses that range in flavour, try a combination of aged cheddar for a crumbly texture, triple cream brie for a rich, buttery flavour and gorgonzola for a firm cheese with bite.

Cheese is best served at room temperature so that the flavours are more pronounced. Remove your cheese from the refrigerator about

For an impressive board, diversify your colours; divide your colours around the board. Crackers and fruit can act as separators between cheeses, meats

and accompaniments. Serve on a large wooden board or piece of slate; this will complement the colours on the board and ties everything together. Include different cheese knives for each cheese so the flavours aren’t mixed.

Dips and accompaniments

Add roasted nuts like almonds and cashews – they are great to snack on. Beetroot or hummus dip and patés are also great to include on your board.

Breads and crackers

Last, but certainly not least, breads and crackers. Our suggestion is a combination of fresh, lightly toasted baguette, crisp bread sticks and water crackers.
