changing seasons for Cubs’ Coghlan by Andy W. Clapp

W

In a BusinessWeek article discussing the shift in the Cubs business model, Ira Boudway wrote, “Last fall, Epstein let fans know that the Cubs’ goal for this year is to win the National League Central Division. Maddon is thinking World Series.” A key component to their success this year is left-fielder, former first round draft pick Chris Coghlan. Coghlan understands the everchanging seasons of life. While at Ole Miss, Coghlan admitted a lack of humility. “I was every bit of cocky and egotistical as you could get, so the better I did the more my ego grew and the more of myself I worshipped,” he told Unashamed Athletes. When he was called up to the

Majors in 2009, although he struggled at the plate during the first half of the season, the Florida native went on to be the team’s leader in hits, batting .372 over the remainder of the season, and in doing so earned the NL Rookie of the Year Award. After a stellar rookie season, one would think Coghlan’s career would take off. Instead, he would see more time in the minor leagues battling through several injuries, including to his knee and back. In 2014 when Coghlan wasn’t offered a contract by the Miami Marlins, the team he had spent his eight-year career with after being drafted in 2006, a new season

began for him. As a free agent, he signed with the lovable, but championship-starved Chicago Cubs. Now, the 29-year-old is helping lead the charge to break the “Curse of the Billy Goat.” To know Chris, however, one must look beyond the batter’s box and see the prologue to the story of this season. In 2001, the 15-year-old found himself in an unwanted season. His father Tim, a former SWAT Team member in the Montgomery County police force, was tragically killed in an accident – something Chris struggled to accept. He was only 46. His father would not be there

In life, we have seasons of loss and struggles that eventually give way to seasons of incredible joy and successes. Baseball also has its seasons. But for the Chicago Cubs, the seasons of struggles have amassed to a point other franchises could never imagine, having last won the World Series in 1908. This season has a sense of hope with new manager Joe Maddon, renowned President of Baseball Operations Theo Epstein, and phenom Kris Bryant expected to make an impact on this season as well.

Living Light News - May / June 2015 by Lailani Mendoza “What are you doing? Let me go!” The homeless girl screamed as a group of infuriated farmers grabbed her wrists and ankles. They tied her arms and legs to the waterwheel so tight she couldn’t move. Her crime? The famished youngster had stolen a few onions. As if being bound up wasn’t enough, one farmer set the wheel spinning. Her mouth was filled with slimy water and gravel every time her head plunged underwater. Suddenly, a man with gentle hands and a kind voice untied her. Pressing a wet cloth to the girl’s face, he said, “Little girl, these people want to hurt you. Listen to me. You must live!” The girl had a name but hadn’t heard it since her Korean mother abandoned her at a train station at age four. When people saw her slightly rounder eyes and wavy hair from her American GI father, they’d call her “toogee” (“foreign devil”) instead. To find her way home, she followed the railroad track. Instead, it led to three years of extreme hunger, poverty and abuse that ultimately left her half-dead on a garbage heap. That’s when a caring Swedish nurse found her and brought her to an orphanage. Stephanie was legally adopted by David and Judy Merwin, an American missionary couple who loved her like their own birth child. “They brought me to the States. I was given a citizenship, a name, a beginning of a physical identity.” After she left the orphanage, it took a while for Stephanie to understand what it meant to be adopted. She recalls telling another girl she’s not an American, that she simply lives with an American couple. “She said, ‘No, you don’t just live with them, you’re their daughter.’ It was like this light went on.” She ran all the way home to find her parents. “I remember throwing my arms around my adopted mom, looking up into her eyes and saying ‘I’m your daughter!’ ” Knowing the life-changing impact of adoption, Fast

when Chris graduated high school or to give fatherly advice. He would not be there to see him play in the Majors or hear him exchange “I do’s” with The Bachelor’s Corrie Adamson. Yet, Cogs would find father figures around him and a focus on baseball that helped him cope with the loss. Coghlan trained at the Winning Inning Baseball Academy and Roy Silver, the owner of the academy, was one of the first ones to comfort him when Tim passed away. When Chris locked himself inside his room, it was Silver that Chris’s mom, Heather Roefaro, turned to for help. Silver told the Tampa Bay Times, “There were a lot of tears. A lot of anger. He had a real problem with the idea that he never got a chance to say goodbye.” He continued, “It’s one of those

now works as a global orphan advocate and mentor to adoptees. In the 1980s, she also founded Destiny Ministries with her husband to lead people to their Godgiven destiny. Raised as a pastor’s kid, she’d heard the Gospel countless times: God sent His only Son Jesus Christ to die on the cross as payment for people’s sins so that anyone who puts their faith in Him may be forgiven and have eternal life. Yet it wasn’t until she had a personal connection with Jesus that she understood His sacrifice. “Until that moment, I only saw Jesus as the Son of

God,” she shared in Lee Strobel’s book The Case For Grace. “I knew He had come down to earth, but that night for the first time it dawned on me: He understands me. He walked in my shoes! “As a matter of fact, He was sort of a ‘toogee.’ You know? His daddy – His earthly father – wasn’t His real daddy. He slept in the straw as a child. He was ridiculed and abused. They chased Him and tried to kill Him.” Fast remembers when she fully committed her life to Jesus at 19. “I basically said ‘I have no strings attached.’ I want to be connected to You 100 per cent ... That to me was the moment of transformation and redemption of my life.” In her riveting memoir She Is Mine, Stephanie Fast shares the heart-rending trauma she faced as a

moments where you realize you’re living in a storm. But the good thing is we know storms never last.” Chris would use baseball to help him cope with his loss and in the process, grew as a player and gained strong Christian influences in his life in Roy Silver and the Winning Inning coaches. His mother told the Palm Beach Post, “Boys tend to look up to their dads and he didn’t have a dad to give him any guidance. Now, God has blessed him with a number of father figures. They really helped Chris become who he is today.” However, the road hasn’t always been a smooth one. After being called up to spring training, Chris injured a teammate on an errant throw after a night of drinking. He was sent back to the minors. God placed another influence in Chris’s life in the minors, another ballplayer who shared the gospel with Chris. In an “I Am Second” video, Chris explained, “One thing that I’ll always remember is that, if you confess with your mouth Jesus is Lord and believe in your heart that God

war orphan and her remarkable story of overcoming the odds. To write her autobiography, Fast visited South Korea several times to verify her childhood recollections and to give a voice to the parents she never knew. “To actually sit down and write my childhood story was extremely painful because I had to sit in those ashes and the Lord asked me to feel all the emotions and the pain … so that it would be a flowing story,” says Fast. She wrote it for three reasons: as a legacy for her children, as a rare firsthand orphan account, and this: “I felt like there are many people that did not walk in my shoes but have emotionally and spiritually walked in my shoes … and God is the only one that can piece a broken child (together) with His truth and make us a whole people that He wants us to be. “So many people connect with my story not so much because of my physical abandonment but because they identify with my emotional and spiritual abandonment,” Fast tells Living Light News. “We’re all orphans somewhere in our lives and unless we’re found, nurtured and given back our true identity (in Jesus Christ), I truly believe we all wonder. “I always say I’m twice adopted,” Fast says, referring to her parent’s adoption and being adopted by God. This spiritual adoption brought her the healing she desperately needed. When Fast accepted Jesus’ sacrifice on the cross, He absorbed all her hurts, shame, guilt and sin and transformed them into something beautiful. Now when Fast remembers the darkest moments of her life, she can see God’s grace – the farmer that rescued her, the nurse that carried her from the garbage heap, her parents who adopted her. “He was there at every stage in my life – crying with me, broken with me – but always knowing that there is another story beyond that. “The cross says to me there is no event that I would be better without because Jesus went back and took all that the enemy stole from me. So in that point, my life is victory, not defeat.” For more information, visit stephaniefast.org.

raised Him from the dead, you will be saved. “And that hit me right here. I knew it right then and there. I remember my heart just beating a thousand times per second. I realized at that time that I wanted God. I wanted Jesus. I wanted Him in my life. I was tired of chasing ... chasing the wind.” The seasons changed in Chris’s life that day. “At that point God radically changed me and my heart. There were also areas that I cleaned up on the outside with things people would see such as my language, partying, and drinking. It really took a lot of work that God had to just chisel away at my heart that started exposing other issues and other sin. “Along that journey, that’s when I started to grow and it’s a constant renewal daily to just die to yourself, renew your mind and stay meek and humble each day because the world exalts you.” He now has a calling to share his faith. As Roefaro told the Tampa Bay Times, “Out of this terrible event something wonderful has emerged.” Indeed, a new season has begun in Coghlan’s life, a season which spans longer than 162 games. This season is eternal.

Newsbriefs Curry Carries The Cross NEW ORLEANS, LA – Soon the NBA will decide, but Golden State Warrior’s Stephen Curry added one more cogent reason why he should win the league’s MVP Award. The point guard’s latest “impossible shot” – a three-pointer that tied the game and eventually led the Warriors to defeat the New Orleans Pelicans (123119) – had basketball pundits and sportswriters unofficially hailing Curry as the winner of the coveted NBA title. Despite being the son of Dell Curry (one of the best three-point shooters in the NBA), it’s a wonder that coaches missed the hidden talent in the 6-3, 190-pound Davidson College grad. Without much fanfare, Curry quickly moved up the ranks nonetheless: 23.8 points

per game on average; fastest player in NBA history to reach 1,000 three-pointers; broke the NBA record for three-pointers in a season and broke his own record two years later. “Each game is an opportunity to be on a great stage and be a witness for Christ,” the Christian baller told Active Faith. “I’ve had a lot of great moments in my career, a lot of down moments, and I try to praise Him the same because of the opportunity He’s given me and the blessing He put in my life. When I step on the floor, people should know who I represent, who I believe in. We’ve been blessed to play sports at a high level and it’s in His name we go out there and perform and compete and use the gifts He’s given us in the right way.”

Caring For The Community VISTA, CA – Every two years, members of North Coast Community Church are allowed to skip church. Instead, members are encouraged to be a part of the Weekend of Service, two days of charitable projects for the community. For the first time since it was launched in 2007, the megachurch is attempting something huge this year: accomplish over 400 improvement projects worth over $2 million in labour and materials at 100 locations. “It’s a ton of work, but the reward is seeing how much we’re able to impact our community in just one weekend,” says Pastor Chris Brown. “It’s a great way for our church to be the church, instead of just go to church.” The record-breaking feat was scheduled for April 25-26

this year with the help of 100 project managers and 10,000 volunteers. Captain Vincent Joseph, an active duty Marine helicopter pilot, is volunteering this year to oversee 40-60 volunteers engaged in a variety of community service projects. “My military service has really opened my eyes to the importance of helping others get through hard times,” said Joseph. “My relationship with God has taught me to serve selflessly.” He added, “I want to be a living example of God’s love to those who don’t know the Lord.” The projects will take place in public schools, hospitals, parks, veteran and senior housing, NGOs, community centres and homeless shelters. SAN ANTONIO, TX – WWE Hall of Famer Shawn Michaels once declared The Heartbreak Kid is dead. His new autobiography Wrestling For My Life, a New York Times bestseller, explains the “death” of his wrestling persona long before his WWE retirement and how he acquired a new identity as a born again Christian. Arguably one of the best pro wrestlers of all time, Michaels basked in the limelight with a huge paycheque, legions of fans and a hedonistic lifestyle at the height of his career. But in the midst of success, fans didn’t know about the wrestler’s inner turmoil and self-loathing that led him down a destructive path. “I didn’t recognize my life as sinful,” he wrote. “In my mind, it was my life

and I wasn’t hurting anyone else.” The transformation came after an encounter with his son that compelled Michaels to turn to God for help. Writing the book was “an opportunity to truly tell of the most amazing, most impactful thing that happened in my life, and that was coming to Christ in 2002,” he told Life Today. “I get asked a lot, ‘Do you have any regrets?’ Of course I would like to have not made any of the mistakes, but at the same time, we travel the road we travel for a reason and it’s to bring us to where we’re at,” he told Suns.com. “And I wouldn’t change where I’m at right now for anything in the world, and I don’t think I would have gotten here if it wasn’t for that road. So I am thankful for that.”

SUMTER, SC – After getting rejected from American Idol three times, Kimberly Henderson had no clue a grainy video is all it would take to launch her singing career. The 26year-old mom’s heartfelt lullaby to her daughter – Sam Smith’s arrangement of Whitney Houston’s “How Will I Know” – was posted on YouTube in December. Five months later, the video has garnered five million views, and Henderson’s dream of being a recording artist has come true – an artist development company sought her out to record a single, Tiny Hearts, released on iTunes in February. While it’s been a wild ride for the South Carolina native, she said the biggest miracle is her viral video co-star, her daughter Vaida. Henderson’s pregnancy came as a surprise

Secret To Being ‘Kelly Tough’ Revealed CHICAGO, IL – Pro football Hall of Fame quarterback Jim Kelly had a chance to represent the Bills again in the second round of the 2015 NFL draft. The league enlisted the help of 32 former players, including six Hall of Famers, to announce the highly coveted picks of every NFL team. Kelly, who played almost his entire NFL career for the Buffalo Bills and led the team to a record four back-to-back Super Bowl appearances, was the team’s spokesperson. Others included linebacker Dick Butkus for the Chicago Bears, cornerback Willie Brown for the Oakland Rangers, cornerback Mel Blount for the Pittsburgh Steelers, centre Dwight Stephenson for the Miami Dolphins and San Francisco 49ers’ Charles Haley.

The Bills icon was known for being tough, not just on the gridiron but also in life. Kelly’s inspiring spirit in the midst of his son Hunter’s illness and Kelly’s ensuing personal battle with cancer have been well-publicized. He became a Christian in 2007 after Hunter died, and he’s attributed his faith in Jesus Christ as the source of his strength. “You can only be tough so much,” Kelly explained in a recent PBS feature. “And I’ve just been blessed that I have an open heart now, and I listen a lot more than I used to listen.” His wife Jill, who had weathered the storms with him, agrees. “It’s not, ‘Oh, look at the Kellys.’ It’s ‘Look what God has done.’ Even though it’s our story, it’s really about the greater story.”

When Dr. Stephen, an Edmonton doctor, signed up for a nine-month long missions trip to Guatemala, his main concern wasn’t just the limited access to medicine. It would take sacrifice. Like the grandmother who carried four-year-old Rolando into the clinic. She had walked a long distance, carrying the desperately ill boy the whole way. His mother was in prison and his father had to move away to find work. Rolando was limp in his grandmother’s arms, and breathing hard. “That’s a bad sign,” Dr. Steve explains. “There is little medicine, and we are only able to run the most basic kinds of tests.” And Rolando was fading fast. Dr. Stephen is a third generation Canadian-born Chinese. Registered nurses Arianne and Lindsay Piojo have seen their share of life-threatening illnesses in their career. Even their own father, John, survived liver cancer and kidney failure. That’s why they founded Stand Up For Love, an annual benefit concert. Stand Up For Love benefits the Neurosurgery Kids Fund (NKF) through the Stollery Children’s Hospital Foundation. The NKF provides programs and initiatives, such as Camp Everest, that improve the quality of life of those affected by pediatric neurosurgery. Camp Everest is designed to help children with brain and spinal trauma achieve independence and make friends with others like them. As volunteers at the camp, the twin sisters enjoy building relationships with the children. “We had a little girl named Naomi who was filled with so much courage, joy and love. She called Jesus her best friend,” says Arianne. Before Naomi passed away three years ago, she and her family shared their story onstage at the 2012 Stand Up For Love. Every year, Arianne and Lindsay share their father’s recovery story as well. In preparations for a kidney transplant, doctors had discovered malignant tumours on his liver and decided to

perform a double kidney and liver transplant. After the surgery and chemotherapy, he made a full recovery. They were only 15 years old at the time. “Our family was hit with several roadblocks and challenges but through it, we found Jesus and discovered how amazing God’s love is for us,” says Lindsay. “My sister and I always believed in God and would pray, but never really had a relationship with Him,” says Arianne. “We always knew there was more to life and that we were here for a purpose.” At youth camp, Lindsay and Arianne learned about Jesus and decided to follow Him. As a proclamation of their faith, the twins were baptized. Arianne and Lindsay’s parents didn’t go to church with them for two years after that, but the girls kept praying they would. When they finally did, it changed their family forever. “God saved my dad physically but the real blessing came two years post-transplant, when my parents made the decision to accept Jesus as their Lord and Saviour and followed Him in the waters of baptism,” says Lindsay. “God is love and He sent Jesus to be the perfect example of what true love is. 1 Cor. 13:13 is at the heart of what Stand Up For Love is all about,” says Arianne.

Celebrity chef Melissa d’Arabian shares tips on serving nutritious meals for cheap in her latest book Supermarket Healthy.

by Elisabeth Handley

Do you think feeding your family a healthy meal requires buying organic, artisanal, and locally sourced (read: pricey) food? Au contraire, says Food Network chef Melissa d’Arabian in her latest cookbook, Supermarket Healthy. D’Arabian knows of what she speaks. She’s the mother of four young girls in Southern California where expensive has become synonymous with nutrition. “We want to feel good about how we feed our families,” she says. “But I need to do it in a way that’s accessible. I love the farmer’s market, but not everyone can shop there all the time.” Raised by a single mother who was putting herself through college and medical school, d’Arabian

“I always want my recipes to be an example of a bigger story for somebody.”

grew up on a shoestring budget where cooking together was a favourite pastime but expensive ingredients weren’t part of the menu. In fact, sometimes food itself wasn’t in the menu. When Melissa’s mom didn’t have food at home, she would get lunch at the school cafeteria, though she didn’t have the 45-cent fee. When the school discovered the “tab” she’d racked up, a note was sent home for the money. Her mother told her she could not pay. They didn’t even have an extra 45 cents a day. With this background plus an MBA and successful career in finance, d’Arabian was hardwired to streamline her family’s expenses when she chose to be a stay-athome mom. This experience ultimately led to her New York Times best-selling cookbook debut, Ten Dollar Dinners: 140 Recipes and Tips to Elevate Simple, Fresh Meals Any Night of the Week. She says the philosophy behind both her books is the same. “They are rooted in a sense of stewardship of our resources, our bodies and the earth’s resources. It’s a much more mindful, purposeful way of thinking about our food and finances than eating the cheapest thing at the grocery store.” Wanting to be a good steward of finances and health, d’Arabian made a video tutorial of how she makes yogurt — a strategy that saved her over $1,000 a year — to share with local moms. One thing led to another, and she entered and won the fifth season of The Next Food Network Star. After she snagged her Ten Dollar Dinners TV show, things shifted to high gear. She has since hosted The Picky Eaters Project (a Food Network web series that teaches parents how to deal with picky eaters through a fun eight-week workshop), writes for AP’s nationally syndicated cooking column “The Healthy Plate,” and serves as a judge on Food Network’s Guy’s Grocery Games. D’Arabian is also leveraging her success by being a part of the No Kid Hungry program to help others growing up like she did. Her latest effort, Supermarket Healthy, debuted in December 2014 to enthusiastic acclaim. Featuring more than 130 tasty recipes, Supermarket Healthy shows readers how to spend with purpose, cook with love, and savour healthy, homemade meals without having to shop expensive specialty stores and remote farmer’s markets. The book is packed with extras, like

colour-coded tips for shopping, cooking, and entertaining as well as the innovative Blueprints. These easy-to-follow strategies for recipes are presented in a flowchartlike simplicity that show how mixing and matching ingredients can be easily adapted to create endless options in the kitchen. “I always want my recipes to be an example of a bigger story for somebody,” d’Arabian says. “How people can make it their own, have fun, and feed their families seven days a week.” From oven-baked crab cakes to portobello steak-frites, each recipe is created from a health-conscious perspective featuring ample protein, healthy fats, slow-burning complex carbohydrates, and plenty of vitamins and nutrients. As a mom and a celebrity chef, food plays a major role in d’Arabian’s life; yet food needs to stay true to something she considers even more important — her relationship with Jesus Christ. Though a churchgoer growing up, d’Arabian saw Christianity simply as an intellectual ritual. That changed in seventh grade at a church camp. “That was where I really understood Jesus not just intellectually, [and Christianity] as a personal relationship — a living, breathing faith.” This faith was shaken to the core at age 20 when d’Arabian’s mother committed suicide. “This blew away the structure of my life — logistically, financially, emotionally, spiritually,” she says. She describes the following 10 years as a spiritual winter, one where she could not feel God in her life. Over time, though, she says, “I started craving a living, breathing, daily faith again. I know that God in my life is not dependent on me sensing Him there. He is very patient.” D’Arabian says following Christ affects how she spends her money and feeds her body, that all of her actions are linked to her faith, with food in a special class. “It’s a very holistic, all-inclusive thing to have faith in Jesus Christ,” she says. It’s also evident in the way she feeds her family. D’Arabian told Coronado Lifestyle Magazine that she believes in sit-down family dinners, sharing stories about the day during mealtime, and training her daughters to make healthy food choices. “I want them to grow up having respect for their bodies, knowledge of how food nourishes them, and awareness of the positive power of sharing a meal with others.”

Recapturing the Lost Art of

Getting Together “Those were special days.” by Carolyn R. Tomlin These days when much of socializing happens on social media, it’s becoming uncommon for families to visit with neighbours face-to-face. “Those were special days,” a friend comments. “Talking and visiting with people was an important part of life.” “My mother took her mending and visited with relatives and friends as she sewed on buttons or stitched up a rip in my Levi’s jeans,” he recalls. “When dad came in from work, we usually had an early dinner and the family returned to the porch to enjoy the early evening. At that time, my grandparents lived with us. So, there were three generations sharing news and stories. Without fail, neighbours walking down the street stopped by.” If you want to bring back the lost art of getting together, some of these ideas might work for you.

Find Interesting People To Hang Out With

If you’re looking for people of similar interest,

what hobbies or pastimes do you enjoy? Is there a location in your community where seniors meet? Check the yellow pages in your telephone directory for organizations. Contact senior centres nearby for times when people meet for specific activities, such as card games, checkers, or book clubs. What if no activity is available that interests you? Start one yourself. Talk to the centre’s director and ask what’s required to start up a club for seniors. A book club is one group that seniors might be interested in joining. For activities, you could either get together to discuss a well-known book, or invite a local expert to speak on a certain topic. If there’s a popular author who lives in your area, invite him to speak to the group. Churches are another good place to meet like-minded people. Most churches have programs designed for senior adults where members enjoy monthly potluck meals, and then take part in an activity or listen to a speaker.

Organize Monthly Meetings

Contact local friends and acquaintances through email or telephone about starting a regular meeting each month. Make this informal – no business or dues. Ask for suggestions on the topic of the month to be discussed. If necessary, avoid polarizing subject matters. To meet new neighbours, try a “Progressive Dinner.” One person serves the first course, a salad or small bowl of soup. The next host serves the main meal – or meat, vegetables and bread. Then, dinners move on to the last course: the dessert. In this relaxed setting, people have time to interact and get to know those new to the group. Keep the group manageable – no more than eight. As more people become involved, start new groups. Request email addresses to save time and postage. You may also ask for a volunteer to contact people through social media.

Prepping Food For A Group

Part of getting together usually includes

delicious food. Seniors have always enjoyed the fellowship that comes from preparing food for a group. Barbecue involves hours of slow cooking over hot coals. Roasted turkey needs basting and careful supervision. Homemade stew requires many hands to peel, chop, and stir the big pots. When seniors work together, they find a sense of community – a belonging.

Recognize Special Accommodations

As you plan group activities, consider those with special needs. If taking a bus tour, check if the bus is equipped to allow for those in wheelchairs or walkers to participate. Are steps involved in meeting rooms? Are ramps available for those with limited mobility? State the accommodations available when contacting people. Recapture the art of getting together. Seniors who spend time with those who share a common interest can build strong friendships. Giving of your time is sometimes the greatest gift!

Ah, the joys of summer produce — crisp green beans, pick-your-own strawberries and ripe watermelons that “thwump” when you tap them. The fresher the fruits and veggies, the better they taste and the more nutrients they contain, right? Usually. But it also depends on your definition of fresh and what’s happened to the food since it was harvested. Don’t snub frozen peas or canned peaches just yet. Let’s take a look at the facts on fresh, frozen and canned.

Let’s Talk Freshness

“Fresh” is one of those hazy, imprecise terms. There are actually several kinds of “fresh” produce. The first kind is garden-fresh, as in right from the field to you. When you buy sweet corn from the back of a farmer’s pickup truck or pluck homegrown tomatoes from the vine, you have genuine fresh produce. Then there’s the “fresh” produce

aisle at the grocery store. The truth is, most of that colourful crop isn’t really fresh; it’s been picked before it’s ripe, then transported from many miles away by truck or boat or plane. How many days does it take for grapes grown in Chile or avocados from Florida to arrive at your grocer’s loading dock? According to experts, an average time of 10 to 14 days from farm to fork is not unusual. Vitamins sensitive to light and oxygen, such as vitamin C, can be lost during travel time. For example, green beans can lose three-fourths of their vitamin C content in a week of cool storage. So fresh is a relative term. Comparing garden-fresh and produce-aisle fresh is like comparing ... well, apples and oranges!

Frozen is Fine

What about those frozen peas? They are harvested, then sent to nearby processing facilities. After being washed, the peas are blanched, which is dipping the veggies in boiling water or steaming them for a short time. Even though the high temperature causes a percentage of the water-soluble vitamins (C and the Bs) to be lost, blanching is essential for preserving the produce. Blanching kills bacteria, helps remove pesticide residues and halts activity of natural enzymes in the food. Without blanching, the enzymes would cause additional nutrient losses and alter the food’s flavour, texture and colour. After blanching, which doesn’t affect fat-soluble vitamins such as A and E, the veggies are flashfrozen, which preserves nutrients. However, even frozen produce suffers a bit of nutrient loss over time due to oxidation.

Which is Best?

Depending on how they’re handled between picking and your plate, many fruits and vegetables retain a good portion of their nutrients. By eating a variety of colourful produce each day – fresh, frozen or canned – you’re likely to get a range of vitamins, minerals and plant phytonutrients. Fresh-picked produce is your best pick for nutrition, flavour and freshness. But when you don’t have access to a garden, frozen is probably your best nutritional bet. If you prefer the flavour and texture of store-bought fresh produce, eat it quickly to get the most nutrients. If you didn’t make it to the Farmer’s Market to grab fresh peas or peaches for dinner, steam a bag of frozen peas and pop open a can of peaches. Whether they’re from the farm, fridge, freezer or cupboard, fruits and veggies are a healthy addition to any meal.

percent of the vitamin C in produce. Other nutrients sensitive to high temperatures include vitamins A and E, some of the B vitamins and carotenoids, such as lycopene and beta-carotene. However, tomato products are an exception, with many canned tomato products containing more lycopene than fresh. On the plus side, once canned, nutrients stay stable during storage due to lack of oxygen. One thing to watch for with canned produce is the add-ins, such as sodium and sugar. Rinsing canned veggies before eating them helps wash away much of the salt. Look for fruits without added sugar, such as those canned in their own juice. Minerals and fibre are minimally affected by heat, air exposure or time since harvest. That means fresh, frozen and canned produce have similar mineral content and about the same amount of fibre.

Bosworth believes

by Crystal Kupper

Imagine the man who would say this: “We’re so delicately connected to one another. It’s the way you interact on a daily basis that will have a domino effect around the world. That comes from hope. We find a place in our hearts where peace lives instead of conflict or resentment.” Now contrast such talk of hope and connection with this guy: “In the middle of a play, I go crazy and don’t realize what I’m doing. I’ll snap back to reality and I realize, ‘Hey, I just ripped that boy’s helmet off,’ or, ‘I’m over here twisting this guy’s knee.’ ” And this: “To me, I don’t think I’m out there hurting enough people. I should hurt a lot more people than I do. I’d like to hurt someone on every play.” Believe it or not – and these days, Brian Bosworth’s beliefs would blow the mind of his 21-year-old self – those quotes came from the same mouth, nearly three decades apart. Yes, the trash-talking, controversy-courting, muscled-and-mullet Brian Bosworth, best known for his stellar college football career with Barry Switzer’s Oklahoma and shortlived Seattle Seahawks stint. The same one who was suspended for alleged steroid use by the NCAA but still sported a “National Communists Against Athletes, Welcome to Russia” T-shirt at the 1987 Orange Bowl, leading to his Sooners exit. The linebacker who spent an injury-riddled two seasons in the NFL before bowing out of what he told Muscle & Fitness was “a complete clown show.” That guy. Today, the 50-year-old is still ripped, still famous for his game – in fact, as the sport’s only two-time Butkus Award winner, he was just inducted into college football’s 2015 Hall of Fame class – but “The Boz” is no more.

In his place is a man who has traded tackling for acting. Bosworth made his movie debut in 1991’s Stone Cold. Since then, he has worked on various projects such as Adam Sandler’s The Longest Yard and CSI: Miami. “[My agent] kind of dragged me kicking and screaming into Hollywood,” he tells Living Light News. “I felt, going in, completely unprepared, not something for which I was trained.” Quite an unusual feeling for someone who aimed for pigskin perfection. “When I first got [to Oklahoma] I was very humble; I was hungry and desperate to try to find a measure of acknowledgment, success and encouragement, that all the work I was putting in was for a reason,” he says. “That’s why I understand how easy it is to get lost.” Today, however, Bosworth’s soul is decidedly found – but not on the field, or even in the gym. Instead, it’s in the relationship he began with Jesus Christ on March 3, 2013, in a Baptist church in his native Oklahoma. “There’s an amazing vehicle to ride through life on; [God’s] given you a bicycle that will never break down as long as you keep the training wheels on. God is the training wheels,” he says. “As soon as you take the training wheels off, that’s where He removes humility. Once you lose humility, it only becomes about you and how it affects you.” Admittedly, Bosworth’s time as a 6-2, 245pound collegiate tackling machine was all about him. His rocky relationship with his demanding father didn’t help; he “was raised in the atmosphere with a father who coached me when I was eight, nine years old in the pup

leagues – and I’m bleeding out of the eyes and ears, hurt, and your dad is screaming at you ‘You’re not hurt, get back out there!’ ” he told Muscle & Fitness. “You’re programmed to turn pain off.” So he did, both in body and heart. From 1984 to 1986, Bosworth racked up statistics that earned his coach’s praise (Bosworth was “the best that’s ever played the game,” Switzer said) and spots on College Football News’ “100 Greatest College Players of All-Time” and Sports Illustrated’s “All-Century Team.” Yet Bosworth, who appeared in one of ESPN’s “30 for 30” films, wasn’t exactly cuddly; Los Angeles Times sportswriter Richard Hoffer once penned, “As horrific as Brian Bosworth is on the field, baying at the midday sun like a crazed coyote with visions of decapitation and disembowelment in his feral mind, he is possibly even more frightening off it. He is 248 pounds of upper-body strength, newly acquainted with karate, and as fierce a visage as anything this side of the Neanderthal age.” The anger kept sizzling, first through Bosworth’s controversial years with the Sooners, then his career-ending shoulder injury with Seattle in 1988, then a divorce. It practically defined him. So when Pure Flix, (the faith-filled film company that produced the sleeper hit God’s Not Dead) needed an angry motorcycle gang leader for 2013’s Revelation Road, they turned to Bosworth.

Surprisingly, Bosworth said yes to the Christianthemed movie. As the months passed, he found his own heart was changing just like his on-screen character’s. “Once I fell down that rabbit hole, you just keep falling. You think you can control it, but you can’t,” he says. “The harder you fight to control your own life, the more you lose control.” That all changed, however, when he asked Jesus to be his Saviour. And when he joined the cast of Do You Believe? (also by Pure Flix and due out this March), he realized how his life had reached full-circle. Joe, his character, lay in a hospital, dying. Bosworth flashbacked to his own father’s deathbed. Though Bosworth’s dad passed surrounded by family, “he died angry and alone. I remember how painful that was,” he says. “He felt like he was lost and angry with God. It was my mirror image of what I didn’t want a dying person to ever feel like.” If not for Christ’s love, “The Boz” knew it could have been him. “What you’re leaving behind is what people will remember forever and ever. If you leave behind hope, hope will never die,” he says. “There’s always the hope. [Christ] will be there, things will get better.”

Living Light News - May/June 2015 HAWK NELSON Diamonds hawknelson.com Review by Josh McConnell I still remember when Hawk Nelson first came to the scene after Thousand Foot Krutch’s Trevor McNevan recommended them to Tooth & Nail Records. It was nearly 11 years ago. They were young and all punk. Fast forward to today and to say the band has matured over the last six albums would be an understatement. Their latest effort, Diamonds, sounds like a completely different band, one that’s willing to experiment. The title track and “Sold Out” have a real percussion-driven, Imagine Dragons sort of vibe that makes you want to clap along. Tunes like “Just Getting Started,” “Thank God For Something,” and “Straight Line” have a West Coast, popmeets-funk sound that would make Train proud. Combined with the rest of the tracklist, Diamonds is evidence of how far the band has come from the punk of their earlier years. Wrap it up with a message of how trials and tribulations make us stronger, and you’ve got an album any youth group can get behind. With an accessible and fun sound that is extremely popular today, Hawk Nelson’s Diamonds is a solid effort that will surprise any listener who hasn’t checked the group out in a while. DAN BREMNES Where The Light Is EP danbremnes.com Review by Lindsay Williams Salmon Arm, B.C.-native Dan Bremnes was already a household name before signing a record deal with Capitol Christian Music Group. The singer/songwriter has won four GMA Canada Covenant Awards, including one for Artist of the Year, and toured with everyone from Crowder to Steven Curtis Chapman. Where The Light Is introduces a broader audience to Bremnes’ signature style comparable to labelmates Matthew West and Shawn McDonald. The title track provides glimpses into the singer’s childhood. While Bremnes grew up in church, his mother’s tragic death in a car accident became a defining moment that shaped his faith journey and his early songwriting efforts. Gentle pop gem “He Knows” and the sparse “Born Again” find Bremnes in-step with his modern CCM counterparts. However, it’s “Heart On Fire” that’s the real shining star of the short six-track collection. With a spacious chorus ready-made for robust singing, the song captures Bremnes’ unique ability to craft pop-centric, yet poetic anthems. Once listeners preview Where The Light Is, Canada’s best kept secret will be out. Bremnes possesses too much talent for Canadians to keep him all to themselves. CHRISTY NOCKELS Let It Be Jesus christynockels.com Review by Lindsay Williams There is no voice sweeter than Christy Nockels’. Her third solo project, Let It Be Jesus, reveals the vocalist at her best, doing what she was born to do – leading others in worship.

JukeBox The 11-track set, recorded live at Passion City Church where she serves as a worship leader, shows Nockels carving her own niche as a songwriter. While upbeat lead cut “Freedom Song” and Americana-coloured “If You Never” propel the album forward, it’s in the ballads where Nockels really shines. The singer cites “Everything Is Mine In You,” which she co-wrote with Ellie Holcomb, as her favourite track; and it’s bound to become an immediate listener favourite as well with its abundance of truth-filled nuggets tucked into a delightfully buoyant melody. “The Wondrous Cross” and “Leaning On You, Jesus” branch off from time-honoured hymns, providing exquisite moments of worship. Meanwhile, “Wonderful Name,” co-written by Crowder, concludes the album on a high, praiseworthy note. The centerpiece of the record comes in the form of the title track, a cut ready-made for Nockels’ heaven-sent voice – the most remarkable gift of the entire album. PLUMB Exhale plumbmusic.net Review by Matt Conner The recent years of Plumb’s career were marked by her willingness to open up her life to fans. Her last album, Need You Now, told the story of a marriage on the ropes and the resulting restoration. She even went more in-depth with a memoir of the same name. On her newest musical release, Exhale, Plumb brings her strong pop/rock sensibilities and track record to bear on another vulnerable set of songs. These are spiritually authentic songs sung from the heart – songs borne from taking steps of faith. “Lord, I’m Ready Now” is a radio-ready anthem of an artist stating her readiness to do what is required as a servant and child of God. The mid-tempo number is filled with confessional statements – “I was so caught up in who I’m not” – that give way to the title refrain. The opening title track, “Exhale,” takes a similar sentiment and scales it to a corporate level, as she sings, “We do not exist for us, but to share your grace and love.” It’s an interesting move for Exhale to open with this pair of songs, because they feel like the conclusion of the rest of the album. Songs like “Champion,” “Great Is Our God” and “Restored” all tell the reasons why Plumb is now ready to move beyond herself. Exhale is another resonant collection of songs from an artist can speak (or sing) from a well of experiences. JON MICAH SUMRALL Faith & Family kutless.com Review by Josh McConnell If you don’t know Jon Micah Sumrall, you’ll more than likely know his band Kutless. First hitting the scene in 2002, the group started out as an alternative rock act but has slowly turned into a worship group. Many great songs written for Kutless weren’t released simply because they didn’t fit the band’s distinct rock sound – until now. “I’m excited to share these songs with everyone as they are a window into my heart and a reflection of who I am,” says Sumrall. The end result is Faith & Family, a collection of 11 mellow

13 songs with honest lyrics. Made up mostly of ballads – a departure from Sumrall’s trademark sound – the songs are often driven by either the keyboards or the acoustic guitar. Songs such as “King & Savior” and “The One I Love” express Sumrall’s spiritual reflections. “What I’m Trying To Say” feels like Michael Buble’s “Home” with a country tinge. Meanwhile, “Live Like You” with its violin strains and bright xylophone has a funky sound. Faith & Family shows Sumrall’s fans a different facet of the singer-songwriter but it may take more than novelty to create a lasting impression. MATTHEW WEST Live Forever matthewwest.com Review by Lindsay Williams Live Forever is the next edition of story songs in Matthew West’s burgeoning discography. The serious tone of the song topics is juxtaposed with upbeat, fresh and celebratory music. There’s ample opportunity for fans to sing along with repeatable hooks running throughout the 11 tracks. Lead single “Day One” provides evidence of the colourful fun West brings on Live Forever evoking images of a confetti filled carnival. “Tryin’” marches on like a veritable ticker tape parade with acrobats and ribbon twirlers, encouraging listeners, particularly young girls, to not believe the lies of the media. Stand-outs “The List” and “Grace Wins” break down the Gospel, emphasizing that mistakes are in the past. “World Changers” pays tribute to a young cancer patient who gave her Make-A-Wish request away; while “Mended” tells the story of a young woman rescued from human trafficking. The album concludes with “Heaven Is The Hope,” a country-tinged cut pointing believers toward their ultimate home. Live Forever celebrates the length and depth of everlasting life, and every song proves West has become a master storyteller. JONATHAN THULIN Science Fiction jonathanthulin.com Review by Matt Conner Jonathan Thulin has made waves both in and out of Press Play in recent years with his own solo work as well as the pop group’s efforts. JT, as he’s often called, is a Nashvillebased pop artist who found serious chart success with hits like “Architecture” and “Dead Come To Life.” Thulin’s latest, Science Fiction, is a decidedly mixed effort. When Thulin makes it work, the results are very impressive. This applies both to a banger like “Hat Trick,” which features Derek Minor, and more heartfelt songs like “Mockingbird,” which features both Kevin Max and Shine Bright Baby and is the strongest track on the album. Such songs fit strongly alongside the aforementioned previous hits to show off Thulin’s potential. However, Science Fiction could also use quite a bit of editing. The title track is a one-note song that attempts to be a playful pop number à la Jason Mraz, but instead lacks any substance or style, especially with a repetitive refrain. “Cry Wolf” is another mediocre cut that reaches for more emotion than necessary. That said, there’s enough here to keep JT’s fans quite happy with other notable guest spots, including Moriah Peters on “The Ruins.” Still, fans might have to make their own mix from the overall selection.

SOMETIMES IT’S THE RIGHT SONG AT THE RIGHT TIME. Safe & Fun for the Whole Family!

Confessions of an FIM Sufferer by Phil Callaway Have you ever started saying something that you began to regret around mid-sentence? Did you try backing out but it only made things worse? Then you are a fellow sufferer. I, too, have been diagnosed with foot-inmouth syndrome. After speaking at an s Phil Callaway event, I noticed a guy named John coming my way. He was about my age but his hair was particularly thick and curly. “Thanks for making me laugh,” John said. I thanked him for thanking me and said, “Man, I love your hair. How do you keep it so thick?” Why I reached out to touch his hair, I have no idea. But when I did … well, it shifted. Thankfully, he gave me the best gift he could have given me. He began to laugh. I’m learning very slowly to avoid saying things like: “Congratulations! When is the baby due?” This is something we need to expunge from our collective vocabularies. Here’s another: “That yellow shirt sure brings out your teeth.” We said this in high school and we must stop. In marriage, we must resist the urge to ever say, “Honey, this is good soup. Next time try my Mother’s recipe.” Or, “If it makes you feel better, I’ll pretend you’re right.” Nothing gets me into trouble faster than my words. So if like me, your feet see more of your mouth than they do of your shoes, here are four suggestions: 1. Be the fastest draw in the West when it comes to apologizing. The word sorry goes over far better than any excuse I can come up with. A simple, humble apology beats trying to explain to a dear friend how the angle of the lighting, my nearsightedness, and the fact that she was carrying a watermelon to her grocery

Nothing gets me into trouble faster than my words. cart caused me to think she was expecting. Bury faults and don’t mark the grave. 2. Laugh at yourself every chance you get. When I almost pulled John’s toupee off, we began to talk about our mutual baldness. In no time at all, we were laughing together. 3. Make sure your words are like Lego. When the purpose of our words is to build others up, we’ll never be short on friends. Proverbs 15:4 says, “Gentle words are a tree of life, but a deceitful tongue crushes the spirit.” Anyone can pick apart what’s wrong with people, but finding the gold in others makes everyone richer. 4. You’ll be shocked at how many agree with you when you keep quiet. Proverbs 21:13 says, “Watch your tongue and keep your mouth shut, and you will stay out of trouble.” Enough said. I once phoned applying for a summer job. A highpitched voice answered “Hello.” I said, “Is your husband there?” Silence. “I am my husband,” he replied. I took step one that night and apologized. And the next day during a job interview, I took the next three steps and I got that job. In fact, it lasted for three summers. In Isaiah 6, the prophet Isaiah stood in the presence of God, overcome by how filthy his mouth was, and cried out, “It’s all over! I am doomed, for I am a sinful man. I have filthy lips … and I have seen the King, the Lord Almighty.” Then an angel took a burning coal and placed it on Isaiah’s lips and said, “See, this coal has touched your lips. Now your guilt is removed, and your sins are forgiven.” Today may we live with our feet in our shoes and not in our mouths. May gratitude and joy characterize our speech. And if one of you ladies gets a call from a guy who says, “Is your mother there?” Just respond, “No. My husband won’t let her live here.” Phil Callaway is a speaker, bestselling author, and host of Laugh Again Radio. Courage In The Lonely Hour by Dr. Charles F. Stanley Loneliness is one of life’s most painful experiences. Since God created us as relational beings, the absence of companionship can be very discouraging. At some point, all of us have probably dealt with feelings of isolation. But it’s especially difficult when we’re going through a trying situation and s Dr. Charles F. Stanley there is no one to help or encourage us. assurance is the Bible. A Godly Response To Loneliness Maintain an eternal focus. Throughout his prison ordeal, the Bible tells us how the apostle Paul was able to respond in a godly fashion because he never lost his eternal focus. His goal was to finish what the Lord called him to do and receive the heavenly reward laid up for him (2 Timothy 4:6-8). Without this kind of eternal perspective, we are all likely to descend into self-pity or bitterness. Keep reaching out. But Paul never became inwardly focused. Until his dying breath, he looked for ways to share the gospel of hope. His last letter is filled with concern for others and advice for his dear friend Timothy. The limitations imposed by his situation did not hinder him from serving and caring for other people. Hold no grudges. Despite being abandoned, Paul did not hold a grudge. When no one supported him at his trial, he said, “May it not be counted against them.” He wasn’t even bitter toward God because of his lonely situation. Although a prison hardly seemed a fitting end for such a faithful servant, Paul considered it the last phase of his assignment from the Lord. He courageously endured until God brought him safely into His heavenly kingdom.

Stay in the Word. As Paul closed his letter, he requested little from Timothy; just a cloak and “the books, especially the parchments” (v. 13). The cloak was obviously for his physical comfort, but the reading material was for spiritual support. The parchments were probably copies of the Old Testament – though he didn’t have long to live, Paul wanted the Scriptures. They had guided his heart and mind for their comfort and encouragement in the cold and lonely dungeon. For all of us there will be times when we feel alone or when others are unable or unwilling to help. But dwelling on our situation or others’ wrongs against us leads only to resentment and self-pity. However, if we seek the Lord and rely on the truth of His Word, we will discover the comfort and strength of His presence. Courage will enter our souls, empowering us to endure loneliness and finish the course God has set for us. Dr. Charles F. Stanley, author of more than 50 books, is the pastor of First Baptist Church of Atlanta, GA and founder of In Touch Ministries. In Touch programming is available in Canada on television and radio. Book of Yeezus? What Next? Y

of right. Because he has come to a place where … the role that God has played in our lives – our spiritual figures – have been replaced by media icons,” he told The Christian Post. Our adulation of pop icons have created “gods” that have shaped our world over the years, from Elvis Presley (King of Rock and Roll) and the Beatles (The Fab Four), to Michael Jackson (King of Pop)

ou’re familiar with the Bible. How about the Book of Yeezus? The Book of Yeezus is a reworked version of Genesis, the first book in the Bible, with one major difference – every mention of God has been replaced with rapper Kanye West’s name or his alias “Yeezus.” This was not West’s idea. It’s the brainchild of Channel222, a

and Beyoncé (Queen Bey). This obsession with celebrities, says the author, reveals “an innate human desire” to worship something greater than ourselves. Channel222 might be on to something. Over the years, numerous studies on the religious instinct seem to suggest that the idea of a supreme being is hardwired into humans’ brains. The question is why. The Bible makes it clear that a Supreme Being does exist and

California man who insists it wasn’t meant to offend Christians but it was made to make people think about our culture’s obsession with celebrities. West’s notorious God complex (his 2013 album Yeezus features the song “I Am A God”) made the iconic rapper the perfect subject for this social commentary. “Not only does this guy call himself a God and not only is he incredibly egotistical but in a way the irony is that he’s kind

we have this instinct because He placed it in us and wants to make Himself known to us. “They know the truth about God because He has made it obvious to them. For ever since the world was created, people have seen the earth and sky. Through everything God made, they can clearly see His invisible qualities – His eternal power and divine nature. So they have no excuse for not knowing God” (Romans 1:19). And while many people view God as wrathful and punitive, the Bible talks about a God of love and forgiveness who wants a personal relationship with us. “His purpose was for the nations to seek after God and perhaps feel their way toward Him and find Him – though He is not far from any one of us” (Acts 17:27). But why not just worship Kanye? Why Jesus? Because, simply put, we all have sinned and our sins lead to death

Christ, “he commands everyone everywhere to repent of their sins and turn to Him” (Acts 17:30). In Jesus, there’s abundant grace, love, hope, peace, and eternal life. When you have Jesus in your life, He fills that yearning for meaning and purpose in a way no human celebrity ever can. Adoring pop icons bring happiness, but for a season. Jesus says, “I am the bread of life. Whoever comes to me will never be hungry again. Whoever believes in me will never be thirsty.” If you’re ready to start an abundant new life with Jesus Christ, pray this prayer from your heart:

Dear God, I admit I have chased after earthly pursuits. Now I’m running to You. Please forgive me for all of my wrongdoings. Thank You for sending Jesus Christ to die on the cross for my sins to save me and give me a new lease on life. I give my life to You. Guide me now as I live for You from this moment onward. In Jesus’ name I pray. Amen.
