The Local Chachi… Back in the days (so I have been told), there would be a local area Chachiji who would be the one processing all neighborhood news and sharing with the ones who cared (or didn’t). I always imagined her sitting on a jute woven charpai (a four-legged cot for gen-Y) sipping chai, surrounded by the other ladies of the local hood. She would listen to one and share it with the other..of course with the added flavor of gossip to make it interesting to the ears of the others. One would argue that it’s not news. News it what...
Bollywood movie review that is an opinion on the likes and dislikes of a Friday release. It is supposed to be plain simple facts.
What really is News? We take it for granted that we do know what it is. It is what we see on News Channels on TV, what we read on newspapers, find on social media sites. But is it?
Plain simple facts probably do not make news today. They need the spice, the masala, and the added pinch of opinion for folks today to swallow it with ease. Just like in the good old days when the local Chachiji would do the same single-handedly.
News, we would like to believe, is Facts of events, what’s actually happening. But most newspapers, TV channels, social media feeders etc seem to have a different version of the same News. But how can a “fact” have different versions? A lot of news fed to the people today is “opinion” of one over the other. A lot of times a biased opinion that tends to influence people (very smartly) in a certain direction. News is not a
There are so many cosmetics around news to glamorize it that the facts pretty much get the leftover space of a fine print. In a country so driven and obsessed with everything Bollywood, we somehow may be responsible for seeking News camouflaged as glamor. That’s how we listen, read or picture it. I guess that’s what catches attention.

ain, is a word that when heard in summer, provides relaxation to the mind and heart. It refreshes us instantly, but also reminds us of the problems that we face during the monsoons. There is no doubt that rains cool us down, but they also come with various other challenges like traffic congestion, floods, low visibility due to which accidents happen, etc . Life is full of uncertainties. You never know what is coming up next. One should be prepared for sudden events in your life, which can distress to you or your family members. Unfortunately, life does not come with a guarantee tag. At a recent meeting with a client, in a conversation about finances, I was told by the husband “Don’t worry Vishal, we have a lot in insurance”. On probing further, I discovered a long list of life insurance policies in the client’s name and client’s family members’ names. On reading through the list more carefully, I discovered further that although the list was long, it was far from what one could call adequate. Now came the challenge of explaining to the client, that the efforts he had taken, to keep the plethora of policies alive and paid, was not enough. Firstly, I asked my client what would be the financial scenario if he were not around. A question such as “How would your wife run the household and maintain the lifestyle for the rest of the family?” provided some insights. The answers from both the husband and the wife came gave a fair idea of what expenses are needed to run their household smoothly. Here, I brought in the effect of inflation and explained how running a home with

“x++” due to rising costs. This current household expenses number after accounting for inflation and extrapolated to an estimated lifespan to provide for the wife and family is what is to be considered, I explained. Next, I asked the client about “the dreams and goals for the family which would need to be fulfilled, even in his absence” On discussing, we were able to get prioritized list of goals that according to the couple would not be compromised on. Then we proceeded to arrive at some numbers associated with these dreams like planning for the higher education overseas and marriages for their children. We added these numbers to the lifestyle expenses numbers got earlier. I also brought forth the point that liabilities such as loans – home loans and personal loans, are also items that need to be looked at and these liabilities will need to be serviced and repaid by the family, whether the family had an income or not. Once having arrived at this number in this manner, I asked my client to compare this number to the current insurance cover that his list of policies was providing to him. At once, he said, “Vishal, you are correct. Could you help me with this further”. And the story goes on. The point of narrating this story was to bring forth certain points to ponder on before

buying life insurance. 1. Insurance is not an investment. It is a price you pay for covering your family from uncertainty, undue stress and unnecessary lifestyle changes and compromises. 2. If someone depends on you and your income, you need life insurance. 3. The amount of insurance cover you need is dependent on your income, financial dependents, current lifestyle, oncoming responsibilities, milestones, liabilities and last but not the least your current net worth. 4. Term insurance is by far the best form of getting the most mileage out of your rupee, as far as insuring oneself is concerned and hence highly recommended. 5. An insurance cover bridges the gap between needs and funds, in cases where one cannot or has not generated a large enough corpus already. 6. While insurance cannot make good the emotional loss to your family, it helps reduce the financial strains caused to the bereaved family members thereby providing solace in some manner. All in all, having adequate life insurance cover is essential. You never know when your loved ones may need it.

Red is my favorite color! I would wear a Red outfit for my job interview tomorrow. It has always brought me luck.” And there she was in the waiting room of a reputed Bank in her lucky red dress. Little did she know that she is about to be judged by her appearance even before she could utter a word? Or even before she can show her qualifications? A study at Harvard explains that it takes about 15 seconds for one to decide whether to hire or reject the potential candidate. Exactly that is what happened in her case. She was extremely intelligent with befitting qualifications however she was perceived as “aggressive” or “trying to catch attention” which was furthest from the truth about her. Just because of the COLOR of her outfit – she was perceived as someone who she wasn’t. The colors you choose to wear or brand yourself with will say a lot about you. At a personal level, I love to play with different colors, since I know what colors suit me the most. This helps me standout make a bold statement and a lasting image, as I have no desire whatsoever to blend in.

You ought to look creative, dynamic and definitely not “boring.”And that needs to be portrayed either by the color of the clothes you choose to wear or on the business website – which also portrays you. . WHITE WHITE is a color symbolizing purity, completion, innocence. Hence the white dove is a symbol of peace. Hence in western culture the brides wear white gown while in India it’s worn during death – which also means that now the person will start a new life or make a new beginning. GREY to as the GREY usually referred color of relaxation, depression and under-confidence. It is even associated with maturity and responsibility, as the gray hair of old age. It is a formal, conservative, neutral and unemotional color used in corporate world – being neither black nor white. Yet it can never be a glamorous one. It has a toning down effect on any bright color like green, red, yellow or orange. RED energetic, RED is a warm, positive, attention-grabbing color. YELLOW YELLOW: Being the lightest color on the spectrum, yellow stands for hope, illumination, happiness, cheerfulness and fun. Yellow is the best color to create enthusiasm and to awaken optimism in one’s life. Yellow has a tendency to make one, more analytical, critical, non-emotional coming straight from head and not heart. PINK representsPINK compassion, unconditional love and nurturing. Pink is a combination of red and white – wherein it has passion and power of red and purity, completeness of white. Pink is affectionate, intimate and caring. It tones down physical passion of red with gentle loving energy of white. Studies have confirmed that exposure to large amount of pink can have calming effect on the nerves. That is why cells of prisoners are colored pink as it brings a positive effect on them. While constant use of it can lead one to become immature.
BLUE BLUE:The color is one of trust, honesty and loyalty. It is a sincere color exhibiting inner security and confidence. This is a color that seeks peace and relaxation – color of water and sky. Blue is universally liked color, probably the most safest and non-threatening color. While it depends on whether it is the dark or light blue, because the darker one represents more authority while the lighter one is much calmer.

Why does it occur? Dandruff has two primary reasons: overgrowth of a microbe (a type of fungus - yeast) and inflammation of scalp skin. Usually both these come together to cause dandruff.

How to take care of it? Try a good anti-microbial shampoo (eg. Climbazole or ciclopirox) 3 times a week. Massage it into the scalp with the pulp of your fingers, leave it on for at least 5 to 10 minutes before rinsing off. ndia has the highest rate of road accidents per vehicle in the world with around 150,000 people dying and several times that number seriously injured each year. TRAFFIC RULES are habitually flouted, vehicles are badly maintained, drivers have the license however, they don’t follow the rules, regular PUC checks which helps control pollution is also given less importance, traffic police are easily bribed and the punishments for rash driving is rare. IN OUR COUNTRY ROAD SAFETY IS NOT GIVEN MUCH IMPORTANCE. ETIQUETTE ETIQUETTE means the customary code of polite behavior in society. Hence we should follow them if we are living in a society. Driving etiquette is essential as we share the road with motorists. By showing common courtesy, one can greatly improve your own driving experience as well as others. SAFETY RULES It is important to implement safety awareness among road users, drivers and violation of traffic rules and etiquette by users of cycles and auto’s have come to be regarded as

a problem and there are concerns about the number of traffic accidents caused by the users. ONE SPEED ONE LANE ALWAYS SAFE The basic etiquette the drivers need to know is to drive in a proper lane. Impatient drivers who believe they can save time by lane hopping are mistaken. Changing lanes and cutting in front of a vehicle immediately behind you forces the driver to suddenly turn the steering wheel and slam on the brakes which can cause major accidents. HONKING The main problem is at the traffic signals where the driver starts honking without waiting for the signal to turn green or for the traffic to move. The driver shows no respect of the law that prohibits the use of horn on the silent zones such as areas near hospitals or schools. The unwanted sound affects our health and behavior. It causes annoyance, stress and panic attacks. The drivers try to release their frustration due to lack of awareness and civic sense. The drivers should be taught to use the horn only for emergency.

If you witness an accident-Please stop, get down and see if anyone is hurt-if so offer help instead of arguing and fighting. If it is very serious, do inform the traffic cop and the ambulance service.
AVOID DISTRACTION Don’t talk on the phone, text message, eat or do any other distracting tasks while you drive. Don’t groom while driving. Don’t jump the signal. Don’t try to accelerate in an attempt to squeak through when signal has turned yellow. Be considerate to pedestrians. Slow down your speed at pedestrian crossing, road corners intersections and wait till the passage gets cleared. Always give side to AMBULANCE, POLICE, and FIRE SERVICE.
Don’t throw garbage from a running car nor spit outside. Look before you back into or back out of a parking space. And park carefully. Do not drive too close to the vehicle in front of you. Turn off your high beams for oncoming traffic. High beams are a helpful feature when driving at night. A good driving etiquette tip is that if you can see a set of headlights, turn off your high beams. Be considerate and patient to smaller vehicles, especially 2 wheelers. Leave your EGO at home.
Wear a helmet. It is essential for two wheeler drivers to wear the helmet, as it works like a shield or a cover for the head during any mishap that might occur. Best protective helmets bear and conform to ISI mark and ISI standards. Do not park your vehicle in a designated handicapped parking spot. As responsible citizens we need to create more awareness about these rules, as even educated people seem to err on these accounts. Most of us learn steering balance, shifting gears but driving etiquette is something that’s totally gone astray. Lessons of road discipline and civic sense should be taught at a school level. Most importantly discipline should start from home. Give your 100% of your attention. Accept the responsibilities of driving. Respect and protect others on the road by only driving when you’re behind the wheel. Give way with a smile-Giving a way is a nice gesture of driving etiquette.

To Diet Or Not To Diet… The Million Dollar Question!

ny time you are feeling guilty or being made to made guilty of being overweight, you will become self-conscious of having binged in the vacation abroad, or enjoyed your mom’s cooking when you visited your native place. As if that’s enough, you yourself will realize you love your fast food and juices and colas… and however much you try it’s not so easy to completely change your diet habits 360% overnight. I suggest you take a long pause, and a very deep breath before you head for the latest HEALTH AND DIET PLAN PROGRAM in town. Keep in mind that weight gain happens over a long period of time, and it cannot be shed miraculously. It takes a long time, hard work and a lot of effort to get you into shape. Each individual situation is different from others. So don’t blindly rush towards that hoarding of a slim and gorgeous model smiling in a leotard, and say to yourself, “if she can, so can I…” Believe me, this saying does not work everywhere. Talking to your personal physician will help of course, and also reading about the various Health Programs offered, but above all before you enter into a bind with any Health Group, talk in detail about the program, and do not fight shy of asking detailed queries. Will the diet change recommended suit you? Maybe it will augment some minor health issue instead. Many programs require a complete change in diet as well lifestyle. This will of course help the individual in the long run. But be
warned that Programs once entered into will not give you flexibility to change or alter any treatments. You will be required to follow the instructions, and more than the fact that it will be a new turf you treading, it is also a fact that once you pay the Program Fee, you will not get any refunds or backsides. LATERAL PULL DOWNS As we all know this exercise is designed to work the muscles situated over the lateral side of your back (LatissimusDorsii). The Blunder Approach: This movement requires excellent shoulder joint mobility, maintaining a straight spine and activation of core for stability. Most of the people pull the barbell down the back of their head and keep their backs either too hunched or hyperextend from the low back while pulling the bar down. Consequently the load is not directed to the Lats and results in trick movements leading in Rotator cuff injury, Trapezius spasm, lower back & neck strain and Shoulder impingement syndrome. The Correct Approach: If done correctly this exercise can prove to be a great way to develop your back muscles. Place your hands slightly beyond shoulder width distance and instead of pulling the bar behind your head pull it in front of your head. Make sure you lean back a little from your back while maintaining an erect spine and using your core muscles for stabilizing your body. Concentrate on pinching your shoulder blades together and take care to avoid pulling the bar beyond the level of your collarbone. Maintain the contraction while the bar moves up and fight the momentum while leaving the bar.

DEAD LIFTS This is the most effective manner of getting a strong and stable lower back along with the added bonus of working the core. Any form of exercises, which requires core activation, is great as all the movements of arms and legs can be carried out effectively if the core is active and working. 28

BICEPS CURLS Mention of this exercise may have you raising your eyebrows and has you wondering who would go wrong while doing this simple exercise but a considerable number of people fail to execute this exercise correctly. A major misconception that people have is that it’s good to lift heavier weights. This transfers all the weight over to your chest and other shoulder muscles, which are definitely not the target muscles. Instead pay attention to the form, direction and precision of your movement. Lift manageable weights with more reps; it will pay you greater dividends. Improper execution of this exercise can lead to Biceps tendinitis. Adopt a posture with your spine straight with a slight bend in your knee. Roll your shoulders back and lift by using your upper arms strength in a straight line and lower down with a slow and steady pace.

SQUATS Squats are the pinnacle of lower body strength. In addition if done correctly squats also help to workout core muscles, arm muscles, low back muscles and with more repetition act as cardio exercise and aid in weight loss. But it is easily possible to goof up while doing squats. Stand straight with your feet shoulder width apart with the knee pointing straight ahead. Bend your knee, keep the spine neutral and mimic the action of trying to sit in a chair. Take precaution to not let your knee cross over your toes and try making an angle of 90 degrees with your knee. Make sure you keep your chest up and don’t hunch your upper back. If you are lifting weights then roll your shoulders back before lifting. Practice this movement facing the mirror in the front and side view.
Set the bar over your mid-foot with the feet at shoulder width distance and pass your hand over the bar maintaining them at the same distance. Do not let your back hunch or hyper extend as either of the positions exert great stress on the disc and its structures when your lift weights. Drag the bar up just grazing your shin and squeeze your gluteal and thigh muscles while lifting up. When lowering the weight down the quintessential point is to bend from your hips rather than from your knee. If you bend from the knee the bar might hit or roll over your knees and land down over your forefoot instead of the mid foot. This will alter the mechanics and make lifting the weight up more strenuous for your back.

CRUNCHES Crunches are the most incorrectly and over performed exercises. It’s a trend to complete a 100 or 150 crunch challenge but what you forget in the process is that it’s the quality of exercise that matters and not always the quantity. Begin with lying on the ground/mat with a neutral spine and relaxed neck. Cross your hands over the back of your head in order to support your neck slightly with your hands. Make sure you don’t hunch your upper back or bring your elbows close to each other. Lift up using your abdominals by imagining someone is punching you in the stomach. Slowly lower down your back. The commonest mistake people make is to strain their neck while lifting up. This is because they fail to connect with the muscle they have to work and instead of contracting their abdominals they lift up with their neck. Apart from this there are numerous exercises where you can go wrong. Hence we conclude that if you carry out exercises with a scientific approach you can keep uninvited injuries at bay and focus on gain not pain. Another important fact to remember is that if you develop any injury, you should immediately visit an expert in exercise science - A Physiotherapist.

’m 42 years old. I am a graduate in Statistics and Mathematics and a Postgrad MBA Degree in Marketing. Looking at my academics you’d think I’m intelligent but when it came to my health I messed up big time. Being a copywriter in an advertising agency in Bombay (India) is dangerous. With the territory of being creative came the smoking, drinking and late nights. Add to that - bad eating habits and pretty soon I was a poster boy for everything that could go wrong in a single human being. Gout flare ups, high cholesterol, my triglycerides were off the charts, borderline obese, my body was aching all the time, I battled acidity - all of which led me to drink, smoke and eat more. I was spiraling out of control. It was horrible.

Pretty soon I lost 25kgs and people could see that I was onto something.
I decided to get in shape and started to scour the net for information on health. That’s when I chanced upon ‘Crossfit’. I was intrigued, here was a health program integrating science with fitness - my kind of stuff! I found a WOD (Workout Of the Day) and decided to do it. After trying it out I knew I had hit upon something amazing - the intensity of a hard workout made me feel fantastic! I knew I could never go back to the Rep and Set, bodybuilding routine after this. Now the gym I go to is a typical one treadmills lined up on one side, a host of isolation machines everywhere. And bang in the middle is me doing strange, ‘outlandish’ movements like the deadlift or the snatch - not a day would go by without someone coming up to me and saying that I was going to injure myself cause I was doing ‘dangerous’ movements! Pretty soon I lost 25kgs and people could see that I was onto something. I was glowing. I could lift heavier than anyone in the gym. I was stronger, more energetic and I felt absolutely amazing! Crossfit was changing my life! I studied more and more about the movements and saw countless videos

from all the different crossfit boxes (big fan of Kelly Starrett and Mobility WOD and Mike Burgener) and read as many CFJ’s (CrossFit Journals) as I could get my hands on. I wanted to join a proper box. Unfortunately, the closest one was about a 40 minute drive away and was full. That’s when it hit me. I had the knowledge and was adept enough with the movements - I would open my own Crossfit box, I would change people’s lives and help them achieve the best health they could - for people like me who needed it. I spoke to a trainer at my gym with whom I’m friendly with for help and he said he’d help me. I told my wife the plan and she told me it was the best idea I’d had in years. I enrolled for my CFL1 course in Dubai and passed. Then I trained my friends at the local gym getting as much experience as I could till I had the answer to the question- Am I ready? Hell yeah! All I need to hear is 3-2-1 GO!” On 25th March I received word that my essay was approved and that I could finally open my own Box. CrossFitBlackfire opens its doors to everyone on June 1st, 2015. An inspiration to all the aspiring chefs of India, Saransh Goila, is one of India’s youngest celebrity chef. He at a very young age of 12 had a contagious passion for food. Saransh Goila is a passionate contemporary Indian food lover with varied knowledge of Italian food, bakery and confectionery. His philosophy is to preserve traditional Indian cooking techniques and food while giving it a modern look and character so it is easily accepted by the youth. Young & Dynamic, he is your Chef next door. Apart from cooking, he has done a course at an acting school too in his young days which helps him face the camera with so much ease. 1)Tell us a little about your background and your journey.. I am a Delhi boy, after completing my schooling i wanted to be an actor because of my obsession with theatre but my grandfather and dad thought i should be a chef, though my mom wanted me to be an engineer. The fact that i started cooking when i was 12 excited everyone (including me) and being a chef fit my profile the best. So I graduated from IHM Aurangabad with a BA Hons. Culinary Arts in 2008. My grandfather who was my biggest inspiration to become a Chef passed away just before I graduated from college, his dream was to see me on the TV set teaching recipes like Chef Sanjeev Kapoor did. After his death, I took his vision very seriously and started to follow a crazy dream of being on TV someday as a Chef. I trained with the Taj group of hotels and worked in the Leela palace, Bangalore. Though my job was short lived as i realised that working in a hotel kitchen might not necessarily get me into food education or journalism. I chose another path. To survive I started my own catering company in Delhi and began training to learn acting for TV and some camera work for food styling. Like many people with big dreams i knocked on doors of several production houses and tv channels but all prayers were unheard, as they say you need a contact to get through in this industry. After 2 years 34

of failed attempts - i finally received a call from FoodFood channel to participate in a chef based reality show and i immediately took up the opportunity and shifted to Mumbai. The show was called MahaChallenge and was hosted by Chef Sanjeev Kapoor and Madhuri Dixit. I went on to win that reality show and as a reward i got an opportunity to host my own food and travel show on the channel. Then began the journey to follow the path i so desired. 2) Is anyone else in your family also a chef ? No. I am the first chef in the Goila clan! 3) A chef who inspires you and why? I think I’ve already mentioned Chef Sanjeev twice in my story and he’s my ultimate inspiration. I entered the industry because of him, he glamourized a profession that was looked down on. Many people like me today are proud to be chefs because he carved a path for us. 4) Tell us about your style of cooking. It is simple. I take home recipes, add my own imagination to them and cook them with my heart on the sleeve. 5) What makes the Goila butter chicken so special ? Is it your signature dish ? Yes my signature dish is Goila Butter Chicken even though I’ve a couple more dishes i would like to call signature dishes. It is the balance between tartness of tomatoes, sweetness of honey, smokiness of coal and the spiciness of red chilli that makes it special. 6) You have been working on recipes with Frooti. How did this idea originate. Can’t comment on this for now. 7) Smell, texture, presentation, taste. In what percentages do they combine to make a great dish. Taste - 50% Presentation - 20% Texture - 10% Smell - 20% 8) What is the difference between a great cook and a good cook? Natural instinct to cook is the biggest quality of a great cook. Just like painting and music - if you’re born with a certain skill set, it makes you shine brighter. 9) The global market is now a glocal market, meaning one gets all ingredients at the corner shop. How
is this effecting the food market in India? It is changing the way people eat for sure. The other day a lady walked up to me and before she said hi she announced “Basil ki chutney wala idea badiya hai, mera sabziwala basil lata hai roz”. People are experimenting with international cuisines at home now and the international food shows also make more sense. So the import for food products has really expanded. Though this is still very limited to metropolitan cities and perhaps a few others. 10) Your secret ingredient? The right quantity of salt. 11) Mothers in India have been making delicious food similar to what their mothers and grandmothers made. How do you, being a tv host, author, food consultant and columnist improve the taste and variety in people’s kitchens? I come from a middle class family and I’ve been lucky enough to see how a kitchen in a certain household works. There are a few techniques that just aren’t used in these homes because nobody has convinced mothers and cooks to use them. So that’s one part of my job, the other is to create new recipes that can be recreated in a home kitchen. So I do a lot of interstate and international fusion to make the cuisine more exciting. Also I’ve been getting a lot of requests to teach people how to plate their food, arrange it and make it look more appetizing, so improving that is another mission. 12) You may be traveling global but you are always living local. What does that mean to you? I am proud to be an Indian. Even though i might be free spirited and have a soul to travel the world - I’m lovingly attached to our
culture, food and festivals. The dream is to travel the globe with Indian food in my bag and to spread it all across. 13) Is eating vegetarian food a healthier option as compared to nonvegetarian food? This is like a who came first “Chicken or an egg” kind of question. Both types of foods if balanced with the right amount of protein, carbs, fats, minerals and vitamins are healthy. So really can’t pick one. 14) Any changes you would like to see in Andheri west, that will benefit the people, the working professionals? I think we need a couple of more work out of a restaurant kinda places or work sharing hubs. I think there is a serious requirement of home lunches for office going people. Rest this part of the city is shaping up pretty well. 15) Your favorite hangout spots in Andheri west? Love chilling at Woodside Andheri. Drinking coffee at Cafe Bistro 1. Eating ice cream at Kamaths. Drinking wine at Hipcask headquarters. Lunching at Empire canteen (Empire studio). The park at the Lokhandwala back road with the street stalls is really fun as well.

Recipe by Chef Saransh Goila Mango Curry
Ingredients: • 4 Mangoes (any variety that’s more sweet than tart, preferable is Alphonso) • 2 tbsp Ghee (Clarified Butter) • 1 tsp whole cumin • 1/2 tsp mustard seeds • 1/4 tsp asafoetida powder • 2 tsp coriander powder • 1/4 tsp turmeric powder • 1 tsp red chilli powder • 1tsp amchoor (Dry Mango Powder) if not available, increase the lemon juice • 1 glass water • 1 cup coconut milk • 1 Lemon juice • 8 – 10 curry leaves • Salt to taste Method: • Scoop the mangoes out and blend them to get the pulp. Retain the pips and keep them aside. •Now heat ghee in a pan, splutter cumin & mustard seeds
for a few seconds when the ghee is hot. •Now, add the coriander powder, amchoor powder, turmeric powder, red chilli and salt and stir-fry for a minute. Sprinkle some water to avoid the spice from sticking to the base and getting burnt. Now add the mango pips. Let them coat with the spices. • After two minutes pour over the mango pulp and stir for 5 minutes. • Finally add water and cook till it thickens a little. Then add coconut milk. Let this simmer for 5 minutes. • Now take it of the heat, add lemon juice and finish it off by adding a tempering tadka of asafetida (hing) and curry leaves. Serve with rice or any bread you love eating.
Spaghetti Moilee Servings: 4 Prep Time: 10 mins Total Time: 25 mins Description: This one’s an Indian fusion recipe where a Kerala curry meets Italian Pasta. Course: Main Dish, Dinner Cuisine: Indian Difficulty:Easy Major Ingredients: Spaghetti, Coconut milk Cooking Method: One Pot, Saute, Simmer Flavor Profile:Savoury, Spicy, tangy Ingredients: 2 pcs. medium onions, sliced 4 pcs.green chilies, stemmed, deseeded and cut lengthwise 2 ½tablespoons lemon juice 2 cups coconut milk (400 ml) 100 ml Veg Stock 1 cup Blanched Assorted Vegetables (Broccoli, trio of peppers) 1 medium tomato, small cubes 1 Packet Spaghetti 50 grams Parmesan Cheese 36
10 cloves Garlic chopped 1 inch Ginger chopped 2 Tablespoons Olive oil ½ tspmustard seeds 10 pcs. fresh curry leaves (curry patta), plus more for garnish 1 teaspoon ground turmeric Salt to taste Method : Bring salted water to a boil. Add the spaghetti and cook until tender, 9 – 10 minutes. Drain and place in a large serving bowl. Heat the Olive oil. When the oil is hot, add the mustard seeds. As they splutter, add the curry leaves and sauté for a few seconds. Lower the heat, add ginger garlic and onions, and cook until soft and translucent and garlic is golden, stirring occasionally. Stir in the chilies, curry patta and turmeric powder with assorted veggies. Raise the heat to high and cook, stirring, for about 30 seconds. Add the stock and

let it come to boil. Now add coconut milk to this mixture. Add salt to taste. Reduce the heat to low, cover, and cook for about 6-7 minutes, stirring occasionally so it does not stick. Now add spaghetti to this reduced sauce. Cook for another 3 minutes or till the time the sauce coats the spaghetti. Now stir in the tomato. Finally drizzle lots of lemon juice and parmesan cheese and serve hot. Notes: Do not over boil after adding coconut milk. It might split.

Butter Chicken Ingredients:

Chicken 1kg (pre-cut curry style with bone) 5 large tomatoes pureed 75ml Fresh cream 2 tsp Butter 2 tsp Chopped coriander for garnish 1 tsp whole jeera
3 tsp GnG paste 2 tsp Vinegar 2 tspGaram Masala 2 tsp Tandoori Chicken Masala 2 tspKasuriMethi hand crushed 2 tsp Red Chili Powder 2 tbsp cooking oil 1 tsp Salt
Method: Marinate chicken for up to 2 hours and then keep in the fridge. Fry the jeera in 1tsp oil till it crackles, add the marinated chicken and fry for 15 mins, add tomato puree cook for 15 mins, keep stirring, add the butter, mix well, take the pan off the fire and stir in the cream slowly, back on the fire till the chicken is cooked, garnish with coriander and serve with hot rotis/naan/paranthas or butter rice. Biryani For the biryani I took out about half the gravy in a bowl and served it as an extra on the side. I also fried and caramelized 1 large sliced onion in ghee as garnish. Sometimes I add cashews with the onions as well. We use half-cooked biryani rice(I always use basmati). I put a couple of star anise in the water to boil the rice.
Adds amazing flavor. Strain and cool the rice down. We transfer the butter chicken to a thick-bottomed pan. Then add the half cooked rice on top. Some people make two layers. Alternating the rice n the chicken. Some also use red food coloring to get three color rice. Garnish on top with the onions n the nuts. You can add some raisins here as well. Here I put couple of tbsp of ghee as well. Put a plate on the dish, cover with a cloth and keep some weight on it. We are going to slow cook or give “Dum” to the biryani. What this does is infuse the rice with the flavors of the chicken n the spices and also cook it. 15 minutes on low heat should do the trick. Keep the pan on a tava and not directly on the flame, we don’t want the chicken at the bottom to burn. Done. Best served with a chilled bowl of raita. Eat n enjoy!
Bruchetta Ingredients: Tomatoes Cilantro Onions Green chilies Bell Peppers Garlic Oregano Salt n Pepper Squeeze of lime n dash of sugar all chopped n mixed together. Method: Take a long loaf of bread(I used garlic bread). Cut to one inch thick slices. Apply butter and grill them till brown. Can be done on tava as well. Put a spoonful or two of the above mix. Garnish with cheese. Done. Drizzle with Extra Virgin Olive Oil and serve.

Honey Glazed Sesame Chicken Ingredients: 300gms Boneless Chicken breast - cubed marinate in 1 tbsp Soy Sauce 1 large Capsicum - cut small 3-4 cloves of garlic - chopped fine 2-3 green chilies chopped 2 large sprigs of spring onions - chopped 2 tbsp rice wine vinegar / regular vinegar 2 tbsp Red chili sauce 3 tbsp Soya Sauce 3 tbsp White Sesame - lightly toasted 2 tbsp honey 1 tbsp corn flour mix in some water Method: Fry the garlic and green chilies. Add the marinated chicken and fry for 15 mins. Add the capsicum and spring onions. Add the vinegar and red chili sauce. Bring to boil and add the corn flour mixed in water. Add the honey now and mix well. Done. Serve on a plate and garnish with toasted sesame. Note: Don’t add too much water to the corn flour. Just enough to make it gooey. Eat n Enjoy !

Infant Swimming Academy in your Hood (at Raheja Classique Club) - by Sidharth Sodhi
ost people are surprised when you tell them about six month old babies swimming around in an adult pool. The visual that popped in my head was an interesting one too. But later on a friend of mine pointed out to me that a baby does spend nine months in a mother’s womb in a fluid medium. Swim trainer India provides swim training programs for kids from three months to eight to ten years of age. In conversation with R.K Rajeev who heads customer experience at Swim trainer India, we find out more about their program. R.K.R : Most of the time when you think of inflatable devices, especially for young infants and children, you think of the traditional swim ring. However these are designed just to keep the kids safe in water enabling them to splash around and have fun. But these devices are no good if young children have to learn swimming because to learn you have to go flat in the water. None of the traditional swim rings will allow you to do that. Our swim trainer devices assist infants and young children to gradually transition into an advanced level of swimming. Q.: Why teach babies who are six months old to swim? R.K.R: Because there are a lot of developmental benefits for kids when you take them into the water early for example water provides them with seven hundred times the resistance of air for movement. So when they move their arms and legs in water it is one of the best ways to improve 44
their muscle tone. The sad part is with the kind of diet and lifestyles that we are leading today, childhood and infant obesity is a growing epidemic. You have kids who are 50-60% over the recommended body weight for their age. Sometimes even babies who are just three-six months old. Also when we were kids we had a lot of interactivity with our parents, grandparents, and the entire family. That system does not exist anymore, especially in our urban cities. The parents leave the kids with their nannies who will feed them and put them into their crib. You have to have a method for allowing them to burn some energy. Secondly, it is a fact of developmental psychology that the early brain is a lot more adept at picking out patterns and internalizing them to replicate it, be it a movement, a language, or a skill like swimming. The really young kids under a year old have that level of co-ordination with their legs which takes an adult swimmer three to four weeks to master. They have an innate reflexive movement, which is called a frog reflex, or a frog kick, which is infact the base kick for the breaststroke. A two year old will have a harder time learning how to move their legs forward because when they start walking and running, this movement is forgotten. The muscle memory of this movement if retained when they are young helps them become extremely strong swimmers, stronger than any of us can hope to be. Also since this movement stimulates both legs synchronously, it helps developing cross lateral patterning

within the brain. It improves their reflexes, improves their arm and leg coordination. Thirdly, water when it is moving over the skin provides a great deal of neural stimulation. Q.:I see you conduct your classes for infant swimming in the adult pool and not the kids/baby pool. Why? R.K.R: Because for a young child two feet is as good as ten feet or twenty feet. Also it is good if from an early age they get the feeling of going into a large body of water. All of our sessions are parent and child programs. Our young kids batches take six kids per batch. It is six young kids with their parent or parents and one coach. Because at that age the kids will not listen to a coach. These sessions will get crammed if you do it in a baby pool. Q.: Do young kids have less of a fear factor as compared to adults? R.K.R: Yes. The absolutely young kids under a year rarely create a fuss the first time they are taken in the pool. Between the ages of one to three is when they start developing the fear of the unknown. For the first fifteen minutes after getting in the pool they are a little tense wondering what is going on. Then they figure out ‘Ok, I have been in here for fifteen minutes..Nothing much has happened to me ..Let me .. Oh! What is that little toy there?’ And they are on..! It takes them ten to fifteen minutes to completely forget they are in a five feet deep pool, and start playing.
Q.: How do you keep the kids safe in the water? At a young age they are more prone to diseases, infections. R.K.R: We typically time our sessions to coincide with times when the pool water temperature is high. We never have our sessions too early or too late in the day because the difference in water temperature vis-à-vis the ambient temperature is something that can affect them badly. Also an important reason why we are operating here, at the Raheja Classique Club swimming pool is because they have low chlorine based process. Another thing that we do is that all kids under two years of age have to wear a special swim diaper, which is specially designed to prevent ‘accidents’ in the water and to ensure that all children have a safe time. Q.: If you spot talent in a child how do you then take it further? Are you affiliated with any sports agencies, institutions or do you leave it to the parents. R.K.R: Not at the moment. It is now only our second year in the business. None of the official bodies are perhaps even geared to deal
with infants in early years. It is going to take some time for this eco system to develop. Although several independent trainers affiliated with official institutions use our devices. A lot of the coaches also use our devices for special needs kids, as part of their physiotherapy. Q.: USA, Australia, China, the European Countries produce world class swimmers. They obviously have excellent systems in place. Have you taken anything from their models to use in your program? R.K.R: Yes. We are affiliated with Freds Swim Academy. They are a German academy and one of Europe’s leaders in infants in early age swim learning. They are
also the manufacturers of these devices. We follow their pattern in our classes. Q.: Any message you would like to give to the parents in Andheri west? R.K.R: Let your kids learn to swim as early as possible. It is a super fun activity. You do not know how much fun you are going to have with the kids until you get into the water. We have seen that with young children the challenge is not to get them into the water. The challenge is getting them out of it. (Smiles).

hese words by Goodrich eloquently describe the essence of parenting. Parenting is all about showing by example. One way to achieve this is communication. Effective communication starts from day 1 of your child’s life. Research has proven that there is higher cognitive and emotional development in babies where the parents regularly ‘talked to their baby’. Nonetheless, it’s never too late. Start now and here is how: Positive Communication and Not Just With Your Child. Children’s sensitivity index is very high. You can’t fake your way with them. So if you and your spouse or others in the family tend to have loud, unpleasant, blame passing arguments, well it is this pattern of communication that your child will adopt. It does not matter what you preach. So it is absolutely imperative that there is an overall environment of handling differences harmoniously.
Think Together Don’t just offer instant solutions. Help your child think. Ask gentle open ended questions. Arrive at solutions jointly. Sometimes it may not be the outcome you wanted. Helping your child to develop a positive and thorough cognitive process is the biggest gift that you can give them. Their thought process is the apparatus that they 48

Accept Your Child Your child was not born to fulfill your dreams or to be what you are. Accept that. It will help understand them better. Better understanding will lead to better communication. Listen With Genuine Attention Whatever it is, that the child is telling you, it means a lot to them. So focus and respect what they have to say to you. Do not be fidgeting with your cell or seem distracted in some other chore. The child is going to mirror your behavior when it is their turn to listen. Spend Quality Time Everyday. Set some time aside in your daily routine to ask the child how their day was. Moreover, briefly share how your day was. It helps the child feel important in the relationship.
