JOIN THE ZERO FOOD WASTE CLUB
Wasted food is a big problem. When we waste food, we’re wasting all the water, land, labor, energy, and transportation that went into producing it. And if that food ends up in a landfill, it’ll produce methane—a major contributor to climate change.
The good news? You can help solve this problem right from your kitchen. Households are the largest producers of food waste, accounting for 37% of all wasted food in the U.S. But that means each of us can make a big impact just by changing how we shop for, cook, and eat food at home. Detroit-based nonprofit, Make Food Not Waste, shares some easy tips to keep more food from going to waste in your household.
START WITH A PLAN
Take stock of the foods you have on hand and plan your meals around what needs to get used first. A well-organized fridge and pantry make this even easier. You’ll be sure to use ingredients before they go bad, and save money at the store by not overbuying.
SHOP SMART
Use your meal plan to make a grocery list before you shop. And stick to it! Sales can be tempting, but if you won’t use it all, it’s not actually a good deal.
Store your food properly to help it last longer. Not sure if it goes on the counter or in the fridge? Follow how they do it at the grocery store.

Freezing food is a great way to extend shelf-life. Lots of foods freeze up great with little effort. It’s also great for storing leftovers you aren’t going to finish right away.

Not a fan of leftovers? Make them more appetizing by reheating them the same way you cooked them—if it’s a casserole you baked in the oven, reheat it in the oven. Still not working? Think of leftovers as an ingredient you can use to create a brand new dish.

FINDING THE FARM in the Bottle

All Kent Rabish of Grand Tr averse Distillery needs to source grain is a phone call. Up the road, Send Brothers Farm loads a large blue bin full of rye and makes the 20-minute truck drive into Traverse City. From there, the rye is loaded into a fermentation tank where it starts the process of creating the unique pepper spice of their Ole George line of whiskeys.
This is the way Grand Traverse Distillery has always made their products. “We’re a local company, and we want local products,” explains Rabish. Before a recent legislation change, this was not the most economically advantageous way to go. Then, PA (Public Act) 135 and the Qualified Distiller Program were put in place by Governor Gretchen Whitmer in September 2022. With significant reductions on state dues for distillers using 40% or more Michigan-grown grain in their distilled products, this allows for Rabish to continue making his 95% Michigansourced products, now at a profit that's more sustaina ble.

“This reduction will help small distillers invest back into their businesses and communities, create jobs, and strengthen new markets for grain growers,” remarks Jenelle Jagmin of the Michigan Craft Beverage Council. She expects the 3 million pounds of Michigan-grown grain and fruit that program applicants reported using to increase with the implementation of the Qualified distiller program.
At Detroit City Distillery (DCD), located in the historic Stroh’s ice cream factory, they choose to use Michigan agricultural products for the authenticity of their story. Founder and distiller J.P. Jerome attests that Detroiters can easily sniff out a false line. DCD occupies space in Eastern Market, a neighborhood steeped in the tradition of agricultural communities, and while there aren’t flowing wheat fields in this urban setting, their location still links to the broader farming network. These local relationships begin with Dexter Mill in Ann Arbor and include a prosperous growing contract with a farmer in Washtenaw County for cold-hardy grains like wheat and rye. DCD's intentional sourcing extends to cocktail bar ingredients from the market, solidifying their status as a part of the region’s traditions.
When it comes to expression of place, Black Star Farms looks beyond grain, to the orchards of Northwest Michigan. Located among the rows of Balaton cherry trees in the Leelanau Peninsula, distiller Lee Lutes uses on-farm and local sourcing to create a “true expression of this place, flavors that we derive from this place.” Their line of eau de vie spirits (fruit brandies made from area cherries, apples, pears, and other local ingredients) are traditionally enjoyed as digestifs, but are also savored onsite in creative cocktails and even a famous fruit salad. But Lutes testifies that it's equally about relationships as it is about a quality product. “We have believed and borne witness to the fact that what we represent
up here cannot be replicated elsewhere. This region has a very unique expression of everything it grows. It’s why we stand tall to support farmland, to support agriculture.”
In Thompsonville, Iron Fish Distillery has taken the spirit of place and turned it into a destination. As the first farmstead distillery in Michigan, the road to their bonfires and glasses of whiskey takes you past fields of winter wheat and rye. In each sip of vodka and other spirits, drinkers can experience the flavor of the grain aroma imparted in the distilling process. Beyond what is grown onsite, cofounder Richard Anderson works with other grain-focused farms as far north as the Upper Peninsula. He explains that his ability to approach farmers as a farmer himself builds a unique sense of community in every bottle; not only does each bottle of their Mad Angler whiskey represent their Manistee County farming story, but also those in the Michigan farming fellowship.
And that’s the brass tacks of farm-to-bottle practices: with each purchase of a bottle of whiskey, consumers also purchase 2.5 pounds of grain or other products that started in the hands of a farmer. Now, with incentives to use more Michigan-grown products, farmers and distillers are rewarded for crafting truly local spirits that uplift community and support a sustainable economy.

QUICK PICKLED Eggs
INGREDIENTS
12 local eggs
1 cup water
1 ½ cups apple cider vinegar
3 Tbsp local maple sugar
2 Tbsp salt
1 Tbsp peppercorns
OPTIONAL ADDITIONS: garlic slices, peppers, red onion
DIRECTIONS
Let eggs sit out at room temperature for 20 minutes so they cook more evenly.
Bring a large pot of water to a boil and slowly lower eggs into the pot using a large metal spoon or small strainer. Cook for for 7-10 minutes, depending on how you like your yolks. We like a gooey yolk, so at 7 minutes we test one to ensure the whites are fully cooked and it holds its shape, and if so, we go straight to a cold water bath to stop the cooking process. Crack the shells a little and let cool completely in the fridge until peeling. If it’s difficult to peel the eggs, try peeling them in a bowl of water.
Next, divide the peeled eggs, peppercorns and whatever other goodies into the mason jars evenly. They can go right to the top as long as there's a little room for the liquid to cover them completely.
Boil vinegar, water, maple sugar, and salt. Once boiling, pour over the jarred eggs. Let them cool on the counter for 10 minutes or so. Then, when they are not too hot to handle, lid them and place in a cold water bath for 10 minutes before refrigerating.
Pickled eggs are best if they can sit for two days before serving. They last for two weeks refrigerated.

For many, the image of a farmers market consists of a slow morning, strolling through rows of vendors with a hot coffee or flaky pastry in hand, happily considering seasonal produce for the weekly meal plan. For a farmers market manager, the experience is vastly different.
As the sun begins to light the horizon, the scene at your favorite farmers market is one of hustle and bustle. You’ll likely find the market manager helping vendors locate their space, setting up signage, answering questions, and directing traffic. Until you’ve helped two box trucks navigate a narrow passageway of vendor stalls without any crashes (on very little sleep), it may be hard to imagine what it means to be a market manager.
Depending on market size, the market manager may be a vendor volunteering their time, a seasonal part-time staff member, or yearround full-time employee. Dan Jere, market manager at Les Cheneaux Farmers Market, not only oversees market operations but also runs his own business, Jere Farms. Supporting local businesses and keeping fresh, local food available in the community throughout the year is what drives Jere to make time for both:

He notes that one of the most important pieces of a market manager’s role is curating a vendor list for market. A successful market balances the purchasing power of the community with the breadth of local products available in order to build a market where customers find desired products and vendors generate enough sales to return each week. A manager may turn away an additional baked good vendor in favor of a cheesemaker or blueberry grower to achieve the perfect balance.
John Snyder manages the three markets on the Keweenaw Peninsula that compose the new From the Ground Farmers Market Collective. Combining management efforts for these markets allows Snyder to be a full-time employee and makes it easier for all three markets to accept payments from food assistance programs like SNAP, Double Up Food Bucks, WIC, and local programs like Michigan Tech’s Husky FAN. While these programs require significant staff time to manage, they contribute to increased sales by vendors at markets and increase food access in the region. Snyder says, “Helping to fill the gap in food accessibility is one of the most rewarding experiences I could ever imagine.”

A Community Supported Agriculture (CSA) share is a way to support your favorite local farm by subscribing to their entire season’s harvest. Shares are often paid in advance to help farmers finance important early investments for a successful growing season, such as seeds and equipment. After purchasing a share, CSA members can expect fresh food for the rest of the growing season and connection with their local community.
CSAs come in many shapes and sizes! Some allow you to choose your produce, and some are dictated by the harvest. Several include a specific pickup time at the farm, while others are delivered to your home. Still others act as credit at the farm stand, where you can shop as you like. Some shares consist only of salad greens, and others fill out boxes with proteins, flowers, or bread. With a huge array of unique CSA shares across the state, it's easy to find the perfect fit for your family.

Farming is a practice that relies on connection — to community, resources, and, of course, the land. Farmers throughout Northwest Michigan who see themselves as stewards of their land recently had the opportunity to build further connections, thanks to the Crosshatch Center for Art and Ecology. Their Carbon Farming Planning Cohort uses peer-to-peer learning opportunities to focus on implementing carbon sequestration in farming and forestry.

According to Daniel Marbury, the Program Coordinator tasked with the success of the cohort, this dedicated time allows farmers to step back from the seasonal production cycle and take a moment to think of their land investment through a legacy lens. While the group is composed of farmers from all experience levels and walks of life, Marbury notes they all have a common goal: "We’re building friendships and real community because there is a shared commitment to do something at whatever scale people can manage.”
Caitlin McSweeney-Steffes of Mancelona’s Danu Hof says their intention to be a part of the change in the climate and food system when they first bought their farm was hampered by the realities of what traditional farming had done to their soil. “It was basically a sandbox where pastures once were, which was eye-opening to see how much work needed to be done to help the land and environment,” she recalls. The cohort has helped her better understand programs provided through the USDA, NRCS, and others to change this reality, as well as build a realistic 5-year cohesive plan.
Farming Planning Cohort
For many in this inaugural cohort, the ultimate goal is to apply for funding to cover carbon farming implementation costs. Crosshatch also plans to share the cohort’s stories of successes and challenges with the local farming community at their Northern Michigan Small Farms Conference, to help make carbon sequestration and risk mitigation through sustainable land ownership a part of the agricultural community dialogue. Marbury says that the response to this conservation call-to-action has been exciting, with a waitlist for future cohorts already starting to fill.

DIRECTIONS
Rub pork with half of the carnitas seasoning and garlic. In a crockpot, layer one quarter of the onion, then pork, then another quarter of the onion (reserve remaining onion for topping). Add water to cover pork and slow cook for 8-10 hours on low.
Make cherry bomb crema by combining a cherry-based hot sauce with crema or sour cream to your desired heat level.
Shred pork, season with remaining carnitas seasoning to taste. Sear on a skillet.
Brown corn tortillas on a dry skillet. Fill with pork.
Top with reserved onion, cilantro, cherry bomb crema, and pickled onions. Sprinkle with Sazón seasoning.

DIRECTIONS
Preheat oven to 425ºF and line baking sheet with parchment paper.
Put rutabaga, parsnip and turnips in a bowl. Toss with 2 tablespoons olive oil and ½ teaspoon salt. Spread evenly on baking sheet.
Roast for about 30 minutes, tossing once after 20 minutes. Rutabaga should be easily pierced with a fork. Remove from oven and set aside until ready to use.
Meanwhile, prepare the curry. In a 4-quart pot over medium-high heat add 2 tablespoons of olive oil, onion, garlic and ginger; sauté for 3 minutes. Add curry paste and sauté for another minute. Use a splash of water if it seems to be sticking.
Add the carrots, sweet potato, broth, soy sauce and ½ teaspoon salt; cover and bring to a slow rolling boil. Cook until sweet potato is mushy, about 20 minutes. Mash sweet potato with a fork to thicken broth.
Add coconut milk, lime juice and agave nectar to the curry and mix. Taste for salt and spice.
You may want to add another tablespoon of curry paste, depending on the strength. Add the roasted veggies to the curry and heat back up.
Serve over warm prepared brown rice topped with cashews and cilantro.

Local Food Distribution in Northeast Michigan
Tucked away in Michigan’s fingertips, Northeast Michiganders experience life surrounded by forests, rivers, and the sunrise shores of Lake Huron. It’s no surprise the region is considered a sanctuary by many.
However, the area’s distance from major highways makes distribution efforts difficult, especially for businesses in the region with goals of sourcing local Michigan food. It’s also a matter of demand; for many rural families, seeking out local food isn’t a priority.
“Everyone has to gauge for themselves what they’re willing to spend within their food budgets to consume seriously better-tasting and more nutritious foods that are ‘small batch’ and local. For some, the trade-offs in budget may be truly impossible,” notes Kristen Fairey, owner of Birch Hill Grocery in Presque Isle.
At Birch Hill Grocery, Fairey recognizes the importance of sourcing local products. Aside from a personal preference for fresh food, Fairey sees it as an economic contribution that “strengthens the social fabric of the area.” Everything offered in her store is baked in-house, sourced from local farms and online small-batch distributors, or acquired via monthly trips to Traverse City. Fairey notes that sourcing local food for a business like Birch Hill Grocery “requires a community effort and an excellent network” due to the

time-consuming nature of gathering products and the need for appropriate storage space.
For Eric Peterson, owner of The Fresh Palate restaurant in Alpena, sourcing decisions don’t just come down to local impact, but global as well. He notes, “If we don’t become more localized globally, then we’re taxing the earth more than it needs to be.” He points out that the cost of manufacturing and shipping throughout the world is not a sustainable option. “We live in Michigan. We shouldn’t expect fresh raspberries in the winter, especially when we’ve survived throughout generations on squash.” The Fresh Palate’s menu changes with the seasons, although customers sometimes expect more variety than the land and water provide in the leaner months.
Like Fairey, Peterson faces the challenges of sourcing hyperlocal products and must drive to Grand Rapids or Traverse City to make mission-
aligned purchases. As it stands, community buy-in is too small to warrant regional routes by local food distributors.
So, why even try?
Rest assured, local-sourcing Northeast Michigan businesses aren’t displaying local greens to capitalize on a cultural trend. These grocers and restaurateurs care deeply about their local economy and community, and the environmental elements of local sourcing. Although it’s physically and mentally taxing, they view the work as worthwhile. Fairey believes store owners “have a responsibility to address the wider population’s circumstances and needs as appropriately as [they] can.” Making local products accessible to folks in Northeast Michigan is how businesses like Birch Hill Grocery and The Fresh Palate are advocating for their communities on the sunrise side.

The Farm Bill may seem unapproachable with its 500+ pages of legislative language spread across 12 titles, but its implications are straightforward: it shapes what food is grown in the United States, how it’s grown, the livelihoods of those who grow it, and the health of those who consume it. Every five years, Congress reauthorizes the Farm Bill, creating and modifying programs covered in its titles (the main, thematic sections of the Farm Bill) and allocating spending to each program. Farm Bill programs cover an array of services, from providing low-income Americans access to healthy foods through the Supplemental Nutrition Assistance Program (SNAP) to offering farmers financial assistance for implementing conservation practices on their farms, like cost shares for installing pollinator habitats through the Environmental Quality Incentives Program (EQIP).
The first Farm Bill was introduced nearly a century ago, but the effects of land theft and discrimination on which U.S. food systems were built still impact the implementation of Farm Bill legislation today. This foundation has perpetuated the exclusion of farmers of color from Farm Bill programs, which has led to decades of land loss and inequitable resource access. In an effort to rectify the USDA’s history of discrimination, and ensure all future Farm Bills support the many faces of farmers and consumers, organizations and advocates across
the nation are pushing for changes to the 2023 Farm Bill to better support beginning and underserved farmers, and to provide better access to healthy and culturally appropriate foods for all.
Michigan Food and Farming Systems (MIFFS) is a statewide nonprofit connecting beginning and historically underserved farmers to resource opportunities and each other. In partnership with farmers, networks, and organizations across the state, MIFFS is identifying the priorities of Michigan farmers to ensure they’re addressed in the 2023 Farm Bill. MIFFS advocates for reforming programs that pose severe challenges to Michigan farmers, such as crop insurance access for farmers with diverse crops, assistance for farmers wanting to implement conservation practices, land access for marginalized farmers, and support for the unique needs of urban farmers.
Everyone has a role to play to make certain the Farm Bill supports individuals with limited access to nutritious and culturally appropriate food, as well as the people who grow it. SAUCE INGREDIENTS
1/4 cup olive oil
2 Tbsp pomegranate molasses
1 lemon, juiced
2 tsp ground cumin
2 tsp paprika
2 tsp red pepper flakes
2 tsp black pepper
3 tsp sumac
DIRECTIONS
Place bulgur in a bowl. Boil water, then pour over bulgur. Let rest it until bulgur is soft. If you cannot find fine bulgur, cook according to package directions.
Heat frying pan over medium heat, then add a small amount of olive oil. Sauté onions until they begin to brown. Add tomato and pepper pastes and continue sautéing for 7-8 minutes, stirring frequently.
Combine cooked bulgur, onion mixture, herbs, and green onion in a medium bowl. Stir to combine. Make the sauce by combining all ingredients in a jar and shaking until mixed.
Drizzle sauce to taste over salad and mix to combine.
Serve with herbs or pomegranate to garnish.

Did you know that Michigan is the second largest producer of dry shell beans in the United States? Huron County in Michigan’s Thumb is one of the largest producers of black and cranberry beans. Delicious, affordable, and proteinpacked, beans are an excellent addition to school meals.
10 Cents a Meal is a statewide program that matches spending up to 10 cents per meal on Michigangrown fruits, vegetables, and dry beans in school and early childhood care settings. In the 2021-2022 school year, 257 grantees across the state participated in the state-funded program. Grantees purchased and served a wide variety of Michigan-grown foods, but only 9% of grantees purchased
dry beans. By contrast, 92% of grantees purchased apples during the same year. Beans present a huge opportunity for growth within 10 Cents a Meal. With the per serving cost of less than 15¢, using 10 Cents grant funds on beans just makes sense!
From baked goods to soups to dips, dry beans can be easily featured in any meal of the day. Some popular recipes found on Healthy School Recipes, a website for school nutrition programs, include bean hummus, burrito bowls, chili, and bean salads. Recently, a Michigan student at Whitehall Public Schools developed a creative bean muffin recipe that harnessed the protein power of navy beans as a key ingredient.

FARM TO SCHOOL IN MICHIGAN TASTE THE LOCAL DIFFERENCE Michigan
It’s lunchtime at Houghton Elementary School in the Western Upper Peninsula.
The salad bar is ready with freshly sliced apples and students are buzzing for an opportunity to catch up with friends. For many students, lunch is the best time of the day; friendships are formed, taste buds are tested, and growling stomachs are filled. Recognizing the power lunchtime holds to shape student success, fresh food advocates across the country are teaming up to change the way students experience food.
The Farm to School (F2S) movement has grown steadily over the last decade, with the USDA estimating that nearly 42.8 million students engaged in F2S activities in 2019. These programs offer students, teachers, food service providers, and farmers opportunities to grow and learn together. When schools purchase directly from local farms, money stays in the local economy and students gain access to fresh produce while experiencing the value of local food with each bite.
Relationship Builders
Rachael Pressley, Regional Planner for Western U.P. Planning & Development Region (WUPPDR), views F2S programs as a way for schools and students to practice food sovereignty – to have a say in what and how they eat. From a young age, kids in the Upper Peninsula “are encouraged to participate in the food traditions of the region, like harvesting wild rice, berries, and participating in sugar bush (tapping of maple trees),” and community members are “eager to shake the hand of the farmer that feeds them.” Consequently, getting schools and farmers on board to put Michigan-grown food on the menu doesn’t take much convincing.
When Pressley approaches schools about F2S efforts, she finds many food service
directors already connecting students to their local food system. From there, she’s able to support and expand their efforts by introducing them to grants, programs, and connecting them to a network of farmers who have committed to supplying schools with their products.
Farm to School Coordinators, like Madelina DiLisi, also connect farmers and schools to resources. "I've witnessed firsthand how the Western U.P. Farm to School movement utilizes teamwork, enthusiasm, and dedication to transform our community for the better,” she says. “While there will always be challenges, the U.P. is resilient by nature. In my humble opinion, the Farm to School project is the epitome of successful community collaboration."

Farmer Friends
One of those key collaborators in the U.P. is Ashley TenHarmsel of North Harvest CSA, a small vegetable, herb, and flower farm in Calumet. As first-generation farmers, Ashley and her husband Jake started their operation from bare bones and can tell you that without the supportive community of farmers in the region, their farm wouldn’t be what it is today.
Because of the F2S movement’s holistic approach to incorporating fresh local food through cafeteria meals, taste tests, farmer visits, and school gardens, TenHarmsel sees consistent access to fresh local food “as the start of something big,
something that becomes the norm” for schools throughout the state.
Gina Kerr, owner and operator of Whispering Wild Market Farm in Toivola, has witnessed a growing interest from students and staff who “love to try new foods when they learn about why they’re different or special.” She also appreciates the connections F2S programs encourage between staff, students, and growers; it’s her favorite aspect of the movement. “I often run into families that recognize me from produce drop-offs or classroom visits,” she says. “It’s wonderful to see their smiles and know they have a farmer friend.”

School Staff Advocates
Farmer friendships forged in the classroom and cafeteria exist through support from school staff excited to use local food as an opportunity for learning. In schools that embrace F2S programming, students are more familiar with a diverse array of produce and empowered to make impactful choices at lunchtime. According to Shelby Turnquist, Food Service Director at Houghton Elementary, “In the beginning, we had to coax students to taste new things but after some time they were on the lookout for new items.” Because of farmer visits and witnessing produce drop-offs, she’s noticed students are now “connecting the dots” between their food and those who grow it.
To showcase those connections, Houghton Elementary students are designing a food systems-focused mural for the cafeteria, facilitated by their art teacher, Melissa Hronkin. “Our students have learned so much by tasting locally grown crops,” she says. “When people like Shelby [Turnquist] are willing to go through the extra work of making it all come together, it makes all the difference.”

What is 10 Cents a Meal?
· Founded by Groundwork Center for Resilient Communities as a pilot project in 2016
· Funded by state legislature and managed by the Department of Education
· Supports breakfast, lunch, supper, and snacks
· Grantees are eligible for a grant that multiplies their total meals served times 10 cents.
· Michigan-grown fruits, vegetables, and dry beans can be used in taste tests, harvest celebrations, and farm visits, as well as meals served to children.
Supporting Programs: 10 Cents a Meal
One of the ways schools can access locally grown foods is through the 10 Cents a Meal program, a grant that matches up to 10 cents per meal spent on local food for school districts and early childhood education centers.
Wendy Crowley, Farm to Program Consultant for Child Nutrition Programs with the Michigan Department of Education, says the key to the success of F2S in Michigan is for grantees (school districts/kitchen managers) to understand “it’s not an all-ornothing situation.” Food service managers can start with “a couple of things on their menu like apples or cherry tomatoes!”
10 Cents a Meal continues to evolve to match the needs of grantees and make Michigan-grown produce accessible. Work is underway to improve invoicing systems, create local food directories, provide continued education for food service providers, and support the expansion of processing facilities for easy-to-use items such as carrot sticks and cubed potatoes.
A Collaborative Effort
No one entity may be dubbed the leader of the F2S movement. It’s a collaborative effort by a statewide community of organizations, institutions, farmers, aggregators, processing facilities, students, families, food service directors, grant writers, and legislators. TenHarmsel sums it up well, “It’s not possible for just one of us to do everything. The whole community has come together in this energized and hopeful way to make Farm to School a reality.”

1 scallion, sliced into thin discs
2 Tbsp cheddar cheese, grated

Harissa mayo (½ cup
mayonnaise mixed with
1 Tbsp harissa paste)
Cooked bacon (optional)
DIRECTIONS
Toast the bagel. Smear cream cheese on one side and 1-2 Tbsp of harissa mayo on the other.
Vigorously whisk eggs with a pinch of salt. The best scrambles are made with eggs that are intentionally beaten to within an inch of their lives. Make sure scallions and cheddar cheese are on hand, this goes fast!
Heat a non-stick skillet over medium heat. Once (really!) hot, add a touch of olive oil or butter. Quickly add the whisked egg. The sign that your pan is hot enough is that it bubbles right away and the eggs start cooking immediately. Add scallions and cheese. Stir with a heat-resistant spatula and as the proteins coagulate, gently coax the egg into a round shape about the size of your bagel. Flip at about 30 seconds and make sure to cook it soft and take it off the heat before it overcooks. If your pan was hot, you can cook your scrambled eggs in about 1 minute.
Place the egg on the bagel, close it up, and enjoy!

In the state of Michigan, there are just under 10 million acres of farmland across 47,600 farms. Year after year, the state sees a 6% decrease1 as agricultural acreage is lost to development. For many in the industry, farming isn’t just a business but a way of life. When a farmer is ready to retire, they face the difficult decision of whether to pass the farm off to the next generation or sell it to developers.
For Jim and Crystal Zynda of Full Circle Farms, the decision is easy. Now running a revived third-generation farm, the Zyndas picked up the mantle from Crystal’s grandfather, Alpha Cogswell, in 2012.
“The dream is to have our daughters take over a financially independent farm,” says Zynda. “When we hit retirement age, the farm will be paid off. We aren’t taking on extra debt and investment; we want to manage the debt we assumed and get to a place of financial sustainability.”

The Zynda family exemplifies Michigan’s farming future. In their case, the path to sustainable agriculture is not only about building agribusiness but an agri-family as well.
How should the next generation pursue a career in agriculture? Zynda advises, “Find life learning opportunities. Take internships on farms and gain that immersive learning experience. When you start with your passion in front of you, you read fewer books and live more life. Living the farmer experience is what being a farmer is all about. Local Food Coordinator
At Lemon Creek Fruit Farm and Winery in Berrien Springs, Kait Lemon works the same land her family first cultivated 160 years ago. When deciding to plant the area’s first Cabernet grapevines in the mid 1980’s, they didn’t do so without direction from Mother Nature.
“Great quality grapes are grown all along the west coast of Michigan, from southwest Berrien County up to the 45th parallel in Traverse City, which rests on the moraine of nutrient-rich soil left behind by the glacial outwash that occurred 10,000 years ago. The lake effect helps prevent frost from killing spring buds and keeps it warmer later in the year for later harvest, creating the perfect growing conditions for grapes,” explains Lemon.
A ride up the Blue Star Highway will take you to Fennville, the home of Modales Wines, where these ideal grape-growing conditions are highlighted by a regenerative view of soil health. Marketing manager Jamele Favorite says, “We work to revitalize the soil with sheep grazing to continue the long-term success of the vineyard. The farming techniques we use for longterm sustainability affect the soil, and can be tasted in the final glass.” Pride in the land is also exemplified in their winemaking technique. While most wineries import yeast, an important ingredient in any alcoholic beverage,
Modales is experimenting with wild fermentation, using the indigenous yeast already found on the vineyard, to double down on local flavor. In each glass of the Riesling made using this technique, “low intervention” allows for a high amount of terroir.
OLD-WORLD TRADITION ON NEW WORLD SOIL
In the Lake Michigan Shore and Fennville American Viticultural Areas (AVAs) of Southwest Michigan, wine drinkers can expect ‘old-world’ techniques, a term used to describe methods resulting in wines with low alcohol percentages and high acidic content, to accent great grape growing conditions. “Southwest Michigan is the closest to the old tradition of winemaking in the United States," says Jake Nivision, viticulturist at Domaine Berrien Cellars. “The greatest old-world wine techniques are embodied here.”
Old-world winemaking is nothing new to Jim Lester of Wyncroft Wines. His relationship with his vines started almost 40 years ago, crafting a Cabernet Sauvignon in 1983. Lester keeps it simple; “I was told it couldn’t be done, but grapes don’t adhere to political boundaries. You need great soil to make great grapes, to create extraordinary wine.”

Incubator Kitchens in Southeast Michigan
“Hospitality is about sharing. I want to share and help people’s lives be better and sweeter,” says Claudia Morales, owner of Nutty Biscotti. Morales started her business after 20 years of making biscotti for family and friends.
Like Morales, all food entrepreneurs are driven by passion and belief in their products excellence, but how does that passion turn into a functional business? Behind every food business is a maker who has secured a license and production space, balanced books, marketed their product, and performed countless to-dos; each step required for business ownership contributes to a high barrier to entry.
“I suggest looking at their own weak points first, because finding a way to mitigate the things we aren’t good at right from the outset can make or break a business. Also, know that operating a food business has as much to do with problem-solving as it does with food production.”

Seeking to mitigate this barrier, a network of incubator kitchens across Southeast Michigan, including Proud Mitten Kitchen, Growing Hope, Eastern Market’s Detroit Kitchen Connect Program (EM’s DKC program), and others, supports budding food businesses. An incubator kitchen is a shared commercial kitchen space which accommodates early-stage food entrepreneurs. Incubator kitchen managers seek individuals who are “prepared, have a compelling product, passion & spirit and a strong motivation level,” says Christine Quane, manager of EM’s DKC program. Beyond their incubator space, EM’s DKC program partners with

Growing Hope Incubator Kitchen offers startup food businesses affordable rates and a kitchen ecosystem focused on collaboration to accelerate growth. They are launching an OCED funded business activator program which provides 1:1 coaching and significant monetary support for business growth.

Proud Mitten Shared Kitchen is an affordable commercial kitchen, assembly, packaging, and baking space which supports food businesses at various stages of growth. Recently, they launched the Culinary Concepts teaching kitchen, a community cooking school.

Eastern Market’s Detroit Kitchen Connect Program provides accessible, reliable spaces for local entrepreneurs to process high-quality food products in a diverse and collaborative community environment. Anyone interested in starting or growing a food business is welcome to attend DKC’s open monthly course: How to Get Started in a Commercial Kitchen.

Catherine Spencer of Beara Bakes started her baked goods business out of her home. “Every surface of our counter was covered with baked goods,” she shares. “We quickly realized we can’t do this [without more space]!” The support of Growing Hope has not only given her physical space, but helped Spencer double her sales. Humaira Arain of Peach & Honey Bakes has experienced similar support from Proud Mitten Kitchen, which continually adjusts to her business needs, providing storage for large equipment and connecting her with resources.

There are many business support organizations in this city that are waiting and willing to help; build that network out before starting.”

Incubator kitchens not only provide space and resources, but also a collaborative community
of industry experts and fellow entrepreneurs. Scott Eatmon of Detroit Jerky considers this community essential. “Choose the kitchen with the strongest community who are willing to be open and share resources,” he advises.
“A food business cannot just be a hobby or passion project. It’s important to know whether or not a business has gained traction. Our biggest resource is each other. Learn how to collaborate and build strategically.”

Kitchen managers are dedicated to building these environments and are considered key advocates and mentors. As Bee Mayhew, Kitchen Manager at Growing Hope shares, “I like to think that my own level of experience and honesty about the reality of owning a small restaurant is useful for many folks here. I’m an enthusiastic supporter and love finding ways to make different situations work.” This mentorship and connection in a supportive space equips food businesses to succeed. 1 tsp dried thyme

2 Tbsp garlic powder
2 tsp salt
1 ½ tsp cayenne

PASTA INGREDIENTS
1 acorn squash or
2 medium delicata squashes
1 lb penne pasta
1 Tbsp olive oil
2 Tbsp unsalted butter
½ green pepper, diced
½ red pepper, diced
3 garlic cloves, minced
5 oz baby spinach
2 Tbsp fresh thyme
¼ cup vegetable stock
5 green onions, sliced
1 cup heavy cream
1 cup parmesan, grated
DIRECTIONS
Preheat oven to 425°F.
Jerk seasoning: combine all spices to make the seasoning blend. Cut squash in half, scraping out seeds and any fibrous flesh and cut into 1 inch slices. Acorn and delicata squash have thin flavorful skin, which means it doesn’t have to be peeled.
Place squash in large bowl, toss with olive oil and 2 tablespoons of jerk seasoning. Transfer squash to baking sheet and roast until golden brown on the bottom, about 12 minutes. Flip the squash and return to oven for another 12–20 minutes or until tender.
Prepare the pasta: boil well-salted water in a pot over high heat. Add pasta and cook to package instructions. Drain and set aside. In a separate heavy pan, add butter over medium heat, sauté bell peppers with half of the green onions until peppers are barely softened, about 4 minutes. Add minced garlic and cook until fragrant, about another minute.
Season the peppers with 2-3 tablespoons of the jerk seasoning. Add thyme, heavy cream, spinach and stock. Bring to a simmer then add in Parmesan. Once Parmesan has been incorporated, add cooked pasta and squash.
Garnish dish with remaining green onion.
