Farmers Market Scavenger Hunt You've got a big bag and a belly to fill. So head to the market and find what you will! We've crafted a mission to help you find plenty of veggies and treats and good times!  Fresh fruits and vegetables make us all merry, can you find an example in a yummy berry?

 The market is full of new smells and good eats, can you spy some purple beets?

 Farmers markets are filled with good people and smiles, say hi to a farmer in one of these aisles.

 Do you think you can find a big jar of honey? Bees make this sweet treat on days that are sunny.

 Markets are busy like cars in rush hour, but slow down and find a beautiful red flower.

Farm to Early Care and Education: Growing Up with Local Food Farm to early care and education (ECE) is a group of activities that support young children in early child care settings to grow, choose, and eat nutritious local foods. Farm to ECE can be an integral part of child care, influencing the ways child care providers obtain local food (procurement), and use gardening activities and nutrition and agriculture education activities.

Planting seeds with young children, watching them grow, and harvesting are some examples of farm to ECE activities. Similarly, reading books about farms, talking about where food comes from during a meal, or trying a new vegetable as part of a tasting demonstration fall under the category of nutrition education. Childcare providers procure local foods to serve in children’s meals and snacks from grocery stores, farmers markets, food hubs, or by working directly with a local farmer to purchase what they need.

For farmers who want to work with ECEs, it’s helpful to keep in mind that selling to child care sites can be different than working with K-12 districts in terms of quantity needed and sites’ storage capacity, but ECEs are an important and valuable market. To increase local food at the child care site and for families, some ECEs are working with local farmers to connect families with produce boxes, maximizing the trip for the farmer and increasing access to fresh produce for the whole community.

ECE sites can start procuring local food with farm to ECE by identifying foods they already purchase and looking to see if it is a local product, and if not, how to make the substitution. The Local Food for Little Eaters Guide can be a helpful resource for making small changes, one product at a time.

In 2021, the Michigan Farm to ECE Network celebrated champions in farm to ECE with the Michigan Grow More Award, and plans to seek nominations for both early care and education sites and farmers engaged in extraordinary work in farm to ECE again in 2022.

MEAT IN THE UPPER PENINSULA Lamb, goat, and rabbit have a lower environmental impact than larger livestock. Get a better understanding of what it’s like to raise smaller animals from these Upper Peninsula producers!

Lamb

Whitney Creek Farm Ironwood, MI

“Sheep are gentle, yet willful, and they have a way of touching one's heart,” Bobbie Nuce, coowner of Whitney Creek Farm, says. The hilly geography of the Western Upper Peninsula is the perfect place for Bobbie and her husband, John, to raise their flock of Icelandic sheep. These sheep are gentle to handle and produce fast growing lambs. For example, a nine pound March lamb will grow to weigh 80-90 pounds by fall, on a diet of mother's milk and pasture grasses. The herd doesn’t need much in terms of infrastructure, but they are susceptible to parasites, so a basic understanding of pasture management and veterinary skills are important for success. Lamb is a versatile, flavorful protein that can be used in most recipes that call for beef. According to Bobbie, “Olive oil, rosemary, and thyme are enough to make a lamb roast into something really special.”

Rabbit

MAD Rabbits Daggett, MI

For the Baumlers, raising rabbits is an opportunity to connect as a family. Amanda Baumler began raising rabbits in the Upper Peninsula for 4-H over 30 years ago. Now with her daughter, Malorie, and husband, Denco, they raise 150-300 rabbits each year to the standard requirements of the American Rabbit Breeders Association (ARBA). Together, they participate in national ARBA shows around the region, as well as local 4-H activities. They love to share their passion and knowledge with others looking to raise rabbits themselves. Rabbits are an accessible agriculture project for folks new to raising livestock. Not only are they rapid producers, but they can also be raised in small, ventilated enclosures, like a garage, to protect them from the elements. In the kitchen, rabbit is a great alternative for other braised or slow cooked proteins. The Baumlers recommend trying rabbit as a pulled BBQ sandwich or teriyaki marinated rabbit served with broccoli and rice.

Goat

Dead River Farm Negaunee, MI

Having goats was a childhood dream for Naomi Noordyk. Now the owner of Dead River Farm, she plans to double the size of her herd of Alpine dairy goats and Kiko goats in the next year. Noordyk enjoys raising goats because they are easy to handle and good with children, while still creating a delicious end product. For those interested in raising goats, she suggests investing in quality animals that are in good health and come from experienced breeders to alleviate issues in the long run. In terms of diet, goat meat is lower in overall fat, saturated fat and cholesterol than beef or pork. Noordyk notes that it’s the only protein some of her customers are able to consume for health reasons. Fortunately, goat meat can be used as a star protein in many delicious dishes, such as stews, soups, and curries.

INGREDIENTS

DIRECTIONS

6 oz. chestnut mushrooms, sliced

Heat stock in a saucepan and keep warm over low heat.

1 medium onion, diced

In a large skillet on medium, sauté mushrooms, onion and garlic in a little oil or butter until onions are translucent, about 5 minutes.

2 cloves of garlic, minced 1 Tbsp lemon juice 2 tsp fresh thyme ½ cup white wine 1 cup Arborio rice 4 cups chicken or veggie stock

GARNISH ¼ cup Parmesan cheese, shredded

1 Tbsp fresh parsley, finely chopped

Add lemon juice, thyme and white wine, and reduce for 5 minutes. Add Arborio rice to the pan and cook while stirring regularly for about 1 minute. Stirring constantly, add the stock ½ cup at a time, letting the liquid become absorbed by the rice between additions. Serve and garnish with parsley and Parmesan.

This recipe is a perfect combo of sweet 'n tangy and made in one pan for easy clean up!

2 thick pork chops

Heat a heavy duty pan on medium high.

1 shallot, chopped

Season pork chops with salt and 1 cup sour cherries, pitted and pepper. Sear chops. Start by chopped (sweet cherries also work standing them up on the fat cap, with reduced sugar) then brown all sides and remove 1-2 Tbsp brown sugar (adjust chops from the pan. depending on tartness of cherries) In the same pan, cook shallots 3/4 tsp thyme (increase if using for 2 minutes. Stir in cherries fresh) and brown sugar, mashing cherries further with a spoon. 1/4 cup balsamic vinegar Add balsamic vinegar, salt, pinch of salt pepper and thyme, stir. dash of black pepper Add pork chops back to pan and place in a 300° F oven. Cook for 10-15 minutes, checking temperature after 8 minutes, until medium rare, remove and let rest. Serve pork chop with sauce on top and enjoy! Pairs well with a riesling or red wine.

DIRECTIONS

2 oz. Detroit City rye whiskey

Add whiskey, lemon juice and simple syrup to a cocktail shaker filled with ice. Shake until chilled.

1 oz. fresh squeezed lemon juice (optional) 1 egg white

Optional: For additional richness, add one egg white to the above ingredients and dry shake (without ice) in the cocktail shaker for 30 seconds. Then add ice and shake until chilled.

1 oz. fruity red wine

Strain into rocks glass filled with ice.

GARNISH

Slowly pour red wine over the back of a spoon, held just above the glass, to create a surface layer.

1/2 oz. simple syrup

2 Traverse City Whiskey Co. premium cocktail cherries skewered on a cocktail pick

Consider for a moment, how a container of milk got on to your grocery store’s shelf. That milk started at the farm, was processed, delivered, then stocked by hand all before you could even buy it. This multi-step process to get a product to the customer is what makes up the supply chain. There is a vast network of people and businesses involved in this chain from start to finish, all with significant relationships to one another. Once the logistics have been fine tuned, a rhythm is formed between suppliers and sellers and it can be difficult for small or new food businesses to even be considered or get an introduction. That's where Taste the Local Difference comes in: we make connections between food businesses and larger markets to reroute the traditional supply chain. Using milk as the example again, we established new relationships for The Farmers’ Creamery, an Amish-owned and operated milk supplier in Mio, MI, who wanted to increase sales of their product through more retail locations in the Detroit area. This resulted in an entirely new distribution route for their milk, butter, and drinkable yogurt products, with 12-15 new retail outlets and a 20% increase in sales. Even with previously existing supplier relationships, TLD initiated change by communicating the value proposition of local food and positioning our

partners’ products as the clear solution. When a person or organization, like TLD, has a hand in shifting the supply chain to a local alternative it is often called Value Chain Coordination. Since we exist at the intersection between buyers and sellers of local food, TLD has the unique skill set and relationships to influence Michigan’s supply chain. As The Farmers' Creamery adds additional products over the next 6 months and expands their distribution throughout the state, they will continue to make those new connections through TLD. The same can be said for our partner SampleCart in Detroit, who offers free product samples for a chef to try before buying. TLD connected them to dozens of chefs and suppliers to support their growth and we continue to do so today.

Preheat oven to 350° F.

1/2 Tbsp olive oil

1 cup red pepper, sliced

In large sauté pan, heat olive oil and sauté carrots, celery, and red pepper until tender. Add green onion and spinach. Sauté until spinach is wilted. Remove from heat, and add dill. Stir in couscous and Boursin, feta and Parmesan cheese. Season with salt, pepper, and cayenne and place in refrigerator to cool.

1/4 cup carrots, diced

Heat olive oil in a sauté pan. Add carrots, leeks, and onion over medium heat until the carrots begin to caramelize.

1/2 cup celery, sliced 1 cup carrots, sliced 2 cloves of garlic, minced 1 quart spinach, chopped 1/2 cup green onions, chopped 1 Tbsp fresh dill, chopped 1/2 cup Boursin cheese 1 cup feta cheese 1/2 cup Parmesan cheese, shredded 2 cups couscous, cooked Salt, pepper and cayenne, to taste 1 lb. package of phyllo pastry sheets Melted butter, as needed

Put a sheet of parchment paper on your work space. Place 1 sheet of phyllo dough on parchment and brush with butter. Lay another sheet on top of that, brush with butter, then fold in half horizontally and brush with butter again. Place 1 ½ cups of filling along one of the shorter sides of the phyllo, leaving at least 2 inches between the filling and the edges of the pastry. Roll the phyllo dough around the filling, then fold the sides over the filling all the way along the dough. Roll the strudel over itself into a log shape. Transfer carefully to a baking pan. Brush top with butter and bake for 20 minutes, or until golden brown.

Add tomato paste and garlic. Cook until mixture begins to sweeten slightly.

Add red wine, thyme, and bay 1 clove of garlic, minced leaf. Bring to a simmer and cook until reduced by half. 1/4 cup red wine 1 bay leaf 1 sprig thyme 3 cups vegetable stock 3 Tbsp arrowroot powder (to thicken) Salt and cayenne, to taste

Add vegetable stock and simmer for 5 to 10 minutes. In a separate bowl, make a slurry by whisking the arrowroot powder with a little water, and add slowly to the sauce to thicken as desired. Remove bay leaf and thyme sprig. Season as desired.

Allow to cool for 5 minutes, then serve over vegetable sauce. 57

When Joan Nelson, co-founder of the Allen Neighborhood Center (ANC), speaks of Lansing’s Eastside, she speaks about the community with conviction, affection, and personal responsibility.

“We are an intensely placebased organization, and our place is Lansing’s Eastside or the Northeast quadrant of the capital city,” Nelson says. As the Executive Director of ANC, a 501(c)(3) nonprofit, Nelson and her team initiated a lengthy list of programs that support the health and food security of the neighborhood. They boast a yearround farmers market, food pantry, greenhouse, 30-farm CSA (including a subsidized veggie box program), educational gardening programs, and six multifunctional, industrial kitchens. In partnership with the Lansing Board of Water and Light, ANC will also have a solar micro-grid with solar roof panels, carports, and picnic tables. With a recent 36,000 square-foot development that built space for 21 mixed-income apartments, a food cooperative, and a federally-qualified health center operated by Ingham Health Centers, ANC has advanced beyond a food hub and has transformed into a holistic poverty-solutions model. “We describe our project as being at the intersection of health, food, housing, and energy innovation,” Nelson says. “And we think that’s a pretty impactful combination.” Kitchen Manager, Matt Jones, teaches the weekly Senior Discovery Group about sushi inside the Allen Market Place.

Even as ANC’s physical structure grows, its mission has remained constant: respond to the active and imminent health needs of the community. ANC conducts annual “front porch conversations,” where ANC volunteers and staff engage residents in conversations about the state of the neighborhood. From these discussions, tangible change occurs. In fact, after a question from her community, ANC’s Farmers Market Manager worked with the Federal Food and Nutrition Service to develop the EBT token system that many markets use today. Allen Farmers Market became the first farmers market in Michigan to accept EBT/SNAP in 2005. “The truth of the matter is, we didn’t set out to break new ground," Nelson says. "We really just fell into it. We're simply accustomed to following up on neighbors’ requests.” Another project that materialized because of ANC’s community listening structures is the Hunter Park Project which established a greenhouse, paved walkable paths, and an acre of parkland for growing food in a previously under-utilized park. One half-acre of the cultivated area is a free-to-all, you-pick garden with public fruit tree access. Additionally, the GardenHouse provides frequent in-person and virtual workshops to promote food sovereignty through gardening education. Nelson says, “We realized that real food security would require that we not only grow food in the neighborhood, but that we also teach neighbors how to grow food in the clay soil and the shady lots of the Eastside.” Allen Neighborhood Center is more than a physical place; it’s a commitment to the community. While Nelson is eager to see the nonprofit’s new developments, she and her team remain determined to meet the goals ANC set out to accomplish since 1999. Empty store shelves, high grocery bills, and ‘Now Hiring’ signs on every corner mark what the Bureau of Labor Statistics reports as a 40-year high in the Consumer Price Index of Food. Rohani Foulkes of Folk and Candi Fentress of CWO Farms continually navigate the pressure of increased costs within their food businesses.

For Foulkes, running a food business highlights the disconnect between consumer expectations and the true cost of what we eat. She says, “We’ve been normalized into thinking food should be quick, cheap, and you should get more than you ask for.”

R

ohani Foulkes, the owner and general manager of Folk, a café and market in Detroit’s Corktown neighborhood, scrutinizes the price of every item on her store’s shelves to make sure there is a balance between products that reflect their full cost and products that are more affordable. For example, she makes providing locally sourced milk as a commodity item a priority, regardless of profitability. “We want to make it accessible,” Foulkes says. “But the value to us as a dual café establishment is that is that we use the same milk in the waffle batter, and we’ve found this sort of balance between what is used in the market and café adds benefit. We have to be really mindful about that market mix.” Folk opened in 2018 as a full-service restaurant, but discontinued its dine-in service in March 2020, at the onset of the pandemic. Despite the setback, Foulkes' thoughtful menu and commitment to "supporting farmers and vintners who are focused on the environment" has given Folk a new identity as a specialty grocer, caterer, espresso bar, and wine shop. For Foulkes, running a food business highlights the disconnect between consumer expectations and the true cost of what we eat. “We’ve been normalized into thinking food should be quick, cheap, and you should get more than you ask for,” Foulkes says. Folk challenges those expectations with a pricing structure that accounts for the cost of humane food production and service. “We often have customers say we’re too expensive. Our staff are paid well above minimum wage, [which] factors into what we pay for a product and how much we mark up an item. As an establishment, we are constantly explaining that.” She cites a general lack of education around food that leads consumers to overlook the stakeholders involved in getting food from field to plate. From farmers and packers, processors and distributors, to chefs and servers, Foulkes says, “We’ve forgotten about all the people along the way.”

One of those people is Candi Fentress, the entrepreneur behind Detroit-based CWO Farms and SheGrowz. Fentress knows firsthand what it takes to bring food from farm to table. She describes herself as “a farmer who likes to grow everything,” including vegetables, herbs, cut flowers, and cannabis. In addition to wholesaling, she processes her harvest into teas, tinctures, and CBD-infused balms and salves. These diverse product offerings sustain her businesses, which she runs with her husband, Mark. “That saves us,” she says of the value-added products, online sales, and partnerships with customers like Folk that fill revenue gaps during the farm’s off season. Plants are more than a way to make a living for Fentress. She believes in “healing from the land,” and uses her expertise as an educator and Michigan State University Extension Master Gardener to connect with others and support the health of her community. “I like to make money off it, but knowing that it brings people relief is payment enough,” Fentress says. Her dedication has not gone unnoticed. Fentress received the Detroit Food Policy Council’s 2021 Food Power Community Choice Award. She calls it a “deeply moving honor because it signifies that the community knows what we’re about and they support us!” Community support is essential for keeping small food and farm businesses everywhere afloat. So, how can we do more with our food dollars and uplift the food and farm businesses in our communities? “Eat from your zip code,” Fentress says. The way we treat the folks who feed us matters. Behind every bag of groceries and to-go box are people working hard, often under less-than-ideal conditions, to bring us our favorite foods. Through patience and purchase power, consumers can show appreciation for food system workers by remembering what Fentress says about the future of small food businesses like hers: “We can honestly only be as successful as our community allows us to be.”

Many restaurants follow a standard method of pricing that acknowledges the price of ingredients, overhead and business operating costs, and cost of labor. These aspects stack up, leaving the benchmark for profit on menu items around 10% of the selling price, but sometimes even less than that. Rohani Foulkes, owner of Folk, consciously sources ingredients that allow her to follow the journey from farm to kitchen. Since its inception in 2018, Folk has been annually verified as a Good Food 100 establishment. This verifies that Folk's sourcing practices aim to provide food that not only tastes good, but also is good for every link in the food chain. Though Foulkes is often told her prices are too expensive, much of the profits are distributed back to her good food business partners.

DELICATA SQUASH SALAD

BRAISING RECIPE

8 pieces delicata squash, braised (see recipe at right)

2 delicata squash, ends cut off, quartered lengthwise, and seeds removed

3 Evercrisp or Gala apples, cut into matchsticks

1½ quarts water

2 oz SarVecchio or Parmesan cheese, grated

1/2 cup maple syrup

1/2 cup fennel, shaved

1/4 cup salt

1/8 tsp fresh thyme, chopped

1 head of fennel tops, chopped

1/8 tsp fresh tarragon, chopped

1 lemon, halved and juiced

1 tsp fresh parsley, chopped

1 bunch thyme

1 tsp chives, chopped

1 bunch sage

1/4 cup dates, chopped

3 inch piece of ginger, peel and sliced

1/4 cup fennel fronds for garnish Nduja vinaigrette (see recipe at right) Braise delicata squash and and make vinaigrette before building salad. Mix all remaining ingredients in a bowl and toss with nduja vinaigrette. Season with salt and pepper. Place braised delicata squash down on a plate or bowl and top with apple salad mixture. Garnish with fennel fronds and extra vinaigrette, if you like.

Once spices are toasted, add all liquid ingredients, additional spices, herbs, fennel tops, ginger, and bring to a boil. While waiting for everything to boil, lay out the delicata in a deep oven-safe braising pan. When liquid comes to a boil, pour over top of squash, cover pan with foil and put in the oven for 45-50 minutes. Squash will be done when it's soft to the touch, but not falling apart. Remove squash from braising liquid and cool. Reduce braising liquid by two thirds, cool, and use to make vinaigrette. Squash can be reheated in the oven at 350° F for 10 minutes.

3 Tbsp delicata braising liquid

Toast all whole spices on medium heat until fragrant in a medium saucepan, stirring frequently.

1/4 tsp ground clove

1½ Tbsp apple cider vinegar

Preheat the oven to 350° F.

Place all ingredients except oil into a food processor or blender. While the food processor is on, slowly add oil to emulsify for a smooth texture. When all oil is incorporated, season with salt, pepper, and sugar to taste.

Molasses Cookies INGREDIENTS

DIRECTIONS

1½ sticks soft, unsalted butter

Whisk eggs in a bowl and set aside.

2 cups brown sugar

Add all dry ingredients to a separate bowl, whisk together, and set aside.

½ cup molasses 3 eggs ½ tsp white vinegar 4½ cups all-purpose flour 2½ tsp baking soda 2 tsp ground cinnamon 2 tsp ground ginger ¼ tsp ground clove ½ tsp salt 4 oz rock sugar, for coating

Use a stand mixer to combine butter and sugar with a paddle attachment until just mixed. Keep the mixer at a low speed to avoid creaming. Add the whisked eggs and vinegar, and mix just until evenly combined, scraping the bowl and paddle as needed. Add molasses and mix on low speed until well blended, scraping the bowl at least once.

Add dry ingredients all at once, and continue mixing on low speed until fully incorporated. Scrape the bowl. Mix for another 30 seconds, just until mixed all the way. Scoop onto parchment lined baking sheets using a cookie (or ice cream) scoop. Roll in rock sugar and flatten slightly. Freeze cookies for roughly an hour. Bake at 350° F for 12-15 minutes, rotating halfway through. Let cookies sit on trays for a couple minutes before moving to cooling racks.

“Southwest Michigan has the perfect climate for growing blueberries,” says Joan Donaldson of Pleasant Hill Farm in Fennville. “Historically, the area was called the Fruit Belt of Michigan.” Wild blueberry plants are native to Michigan and were gathered by indigenous communities long before European colonization. It wasn’t until the early 1920s that commercial berry planting was popularized in this region. Today, Michigan has almost 21,000 acres of blueberries across 600 farms.

In Southwest Michigan, the proximity to Lake Michigan and the land’s naturally acidic soil create the ideal environment for blueberry growing. Officially called the Lake Effect, the microclimate generated by the lake keeps bordering lands cooler in early summer (preventing early bud emergence and the potential of freezing) and warmer in late fall, resulting in an extended growing season. Despite the favorable conditions, blueberry growers face significant industry challenges. Pest management has become increasingly difficult, especially for Certified Organic farms like Pleasant Hill. Insects without predators, like Spotted-Wing Drosophila and the Stem Gall Wasp, reproduce rapidly throughout the growing season causing growers to spend countless hours and dollars to remedy the damage; this wasn’t always the case.

Still, when it comes to the mechanical method, “the person driving a mechanical harvester is an artist and works the machine so it doesn’t harm the berries or the bushes. The newer machines can be fine tuned and as John [Joan’s husband] travels down a row of bushes, he will often change the vibrations to meet the ripeness of the fruit.” Pleasant Hill Farm does not employ folks to pick their berries, but most blueberry farms (and fruit farms in general) rely heavily on migrant farmworkers to harvest their crop. Without seasonal migrant workers alongside the hard work of growers, Michigan’s blueberry industry would look much different.

“Forty years ago, we had to spray for a pest that emerged near the 4th of July, buzzed around for a week and died. Now we have five or six weeks of insects that can destroy a crop overnight unless we spray a certain very costly organic compound,” Donaldson says.

No matter the harvesting method, blueberry farming takes a lot of work. “I think one concept folks need to understand is that earning a living as a farmer is challenging and demands working long hours almost every day, yet the work is rewarding,” Donaldson says.” The best way to help farmers is to buy locally.”

MAKING FRESH FOOD CONNECTIONS Fresh Food Connections (FFC) works to make local food more accessible for Michigan residents who are eligible for SNAP benefits. SNAP, or the Supplemental Nutrition Assistance Program, provides benefits to low-income individuals and families through an Electronic Benefits Transfer (EBT) card that is used like a debit card. In Michigan, this card is often called the Bridge Card. SNAP is the largest and most widely used assistance program in the country, but currently can only be used to purchase food online through select retailers, such as Amazon, Walmart, and Aldi.

City Commons is a participating multifarm CSA in Detroit. Through the FFC project, they increased their reach to more folks receiving food assistance.

The Impact Washtenaw and Wayne counties had the first six participating sites in 2021. A mix of farmers markets and farms in Detroit and Ypsilanti received training and funding to implement online sales and food access programming tailored to their individual business. Each model was different, but examples included accepting SNAP, offering more flexible payment options, or following a sliding scale model.

This project, championed by the Michigan Department of Health and Human Services (MDHHS) and Taste the Local Difference (TLD), supports the foundation for online SNAP sales at more locations, particularly ones offering fresh and locally grown food. Additionally, it fosters relationships by connecting low income communities to farmers and farmers markets with convenient online ordering.

“FFC provided us with technical support for our website and funds to purchase more packaging,” Alice Bagley, a collaborative farmer with City Commons, says. ”We also purchased items for our farmers market display where we were able to serve many folks receiving SNAP and Double Up Food Bucks.”

The Difference Unlike many other food access programs, this initiative does not subsidize the cost of the food. Instead, this project’s long term success is dependent on creating digital infrastructure for farms and strengthening relationships between farmers, consumers, and community organizations. Additionally, this program is not prescriptive. Consumer and farmer feedback is essential in determining the methods used to accomplish the project’s goals which are unique to each community. “FFC is great because it allows farms to try different ways to increase food excess,” Bagley says. In the first year of the program, they realized their initial access method wasn’t as logistically accessible as they hoped. This year, they changed their model to provide greater food access through home deliveries of CSA shares by partnering with a local organization.

Growing Forward Because of the success in the first year, this program is expanding to sites in the Lansing area and Western U.P. The technology and systems of support established through this project will ensure farmers and communities have strong models for providing fresh food access for years to come.

W H AT IS DA L? Dal is a thick puree or stew or soup made from different types of lentils and legumes. It’s nutritious and a humble meal served in every Indian household. Our family enjoys dal with warm rice especially during the cold Michigan winter.

INGREDIENTS 2 Tbsp olive oil

1/2 tsp chili powder

1/4 cup split moong (mung) beans

1/8 tsp asafoetida

1/4 cup red lentils 1/4 cup split green moong (mung) beans 1/4 cup toor dal (pigeon peas), rinsed 1 medium tomato, diced 4 cups water Salt to taste 1/4 tsp ground turmeric 1/2 tsp cumin 1/2 tsp ground coriander 1/4 tsp garam masala

1/4 tsp whole Jeera (cumin seed) 1/4 tsp mustard seeds 1-2 cardamom pods 1 whole red chili 1-2 bay leaves Optional: fresh veggies, fresh cilantro, grated ginger Note: If all bean/pea varieties are not available, ¾ cup red lentils and ¼ cup yellow split peas can be substituted in place of mung beans and pigeon peas.

INSTANT POT DIRECTIONS

STOVE TOP DIRECTIONS

Add olive oil in an instant pot on sauté mode.

Rinse and soak the lentils, mung beans and pigeon peas together for 2 hours to soften them.

Add spices, tomatoes, and (optional) ginger and sauté well for 3-4 minutes.

When ready to cook, add olive oil to large saucepan.

Add the lentils, mung beans, and toor dal and 4 cups of water.

Sauté the spices, tomatoes, and (optional) ginger for 3-4 minutes.

Cook on high for 15 minutes.

Add the lentil mix and 4 cups of water.

Naturally release the pressure for 10 minutes, then manually release the pressure. Mix well and add water for consistency.

Partially cover the saucepan, cook the mix for 15-20 minutes on medium low heat, or until they are well cooked. Mix well and add water for consistency.

GARNISH + SERVING Garnish with fresh cilantro and a few drops of fresh squeezed lime. Serve with hot steamed rice, crispy papad or pops.

Michigan is home to both public (also known as hatcheries) and private operations that produce kitchen favorites like shrimp and trout, as well as bait fish, ornamental fish, stocking fish, and fee-fishing operations.

Commercial fishing is the harvesting of wildcaught fish from their natural environment in large volumes to meet consumer demand. Michigan’s beloved lake whitefish represents 95% of the state’s commercial harvest sales.

“FARM-TO-TABLE” IS EASIER SAID THAN DONE .

Farmers and specialty food makers have their hands full sustainably producing quality local products. Chefs, food makers and grocers are busy maintaining and building their food businesses. While the intention to connect is strong, operationalizing that intention is challenging. This is where Grow Eastern Market comes in. Grow Eastern Market (GEM) is a regional food hub that connects emerging farmers and food businesses to wholesale buyers. Every week, we reach out to our growing network of small farms and food makers to create a robust list of exciting new products and freshly harvested produce. We then collect orders from restaurants, grocery stores, and food businesses. Our team picks up the ordered items from the farms and food businesses and delivers them directly to the purchasers across southeast Michigan.

This model strives to support the local food economy: farmers and food businesses have a transparent connection to their buyers and those purchasing their products are getting fresh, locally sourced ingredients straight to their door. In addition, we provide consultations to increase the business acumen of participating farmers and food businesses. We connect them to technical assistance and funding opportunities to strengthen their wholesale readiness. These are vital services, especially for small farms that may not have the resources to do their own marketing and food-safe transportation. The scope of GEM has expanded in 2021 and will continue to expand in 2022. We’re looking to connect with farmers, food business owners, chefs, grocers, and wholesale food buyers who could benefit from selling or purchasing through Grow Eastern Market’s platforms.
