Taste the Local Difference is Michigan’s Local Food Marketing Agency. A social enterprise whose mission is to educate consumers about the value of local food while helping farm and food entrepreneurs build successful, well-connected and thoughtful businesses.

What a year it’s been. The phrase has meaning in all the tired and complicated ways, but also the beautiful ones, and even the reasons we have to be proud. In these pages, we reflect on the spirited people that make up Michigan’s local food movement, as they move determinedly forward to the new opportunities that lay ahead. Our cover story for instance (pg. 79), details how the staff and students at New City Neighbors will build a new farm, after being displaced, literally from the ground soil up.

We expect this year to build upon the unexpected nature of the last as adaptations become the new normal (like those on pg. 67-70). Loosened restrictions will continue to make way for untapped business opportunity (pg. 85), and the old way of doing things will start to change with the times (pg. 39).

The pandemic forced us to wake up from the mindless way we consumed food and understood its value. Now it’s time to take further action and keep things moving in a positive direction. For example, land is finally getting back into the hands of Black farmers in Detroit (pg. 109) and there are countless instances where our communities are collaborating to provide locally grown food to those who are hungry (pg. 21, 63, and 67 just to name a few). I encourage you to read these stories thoughtfully — to consider the way things were before the pandemic, what you learned in this last year, and how desperately the flaws in our food system need to be remedied. Use this guide as a source of inspiration to decide where you’ll spend your dollars and how to connect with the people behind these businesses. Give one to a friend or family member and discuss (maybe over a cocktail or takeout from a neighborhood restaurant) how you can support your local food economy through all that is yet to come.

FRE S HNE SS TIP S Whether you have a big CSA delivery every week or just can't help going overboard at the market, knowing how to manage a big haul of fruits and veggies is the best way to reduce waste. Follow these steps for produce bliss all week (and winter!) long. Make a plan: Take stock of all the produce and make a rough plan of what you want to do with it. Dishes like stir fry, pasta primavera, big salads, and grain & veggie bowls are all great ways to make an incredible meal with whatever produce you have on hand. Start with what will spoil quickly: Make note of things like delicate berries, perfectly ripe tomatoes, fresh leafy greens and other produce that will spoil quickly and make sure you use those items first. Root vegetables, hearty greens, and fruit, like apples, will all last quite a while. Freeze what you won't use: If there are items you don’t think you’ll be able to use, freeze them for later so you can enjoy the bounty of summer all year long. Many dishes like soups and casseroles are great candidates for freezing, giving your future self an easy dinner when you need it most.

Tips for keeping produce fresh in the fridge: Place herb stems in water like you would a bouquet of flowers and they’ll keep much longer. Put salad greens into an airtight container with a clean towel or piece of paper towel to absorb excess moisture. Store ripe fruit in the fridge to extend its duration of peak ripeness. Don’t forget — local produce stays fresh longer! This is just another benefit of supporting local farms who are able to quickly get their produce from the field to your fridge.

The Anishinaabe are people of a particular place, as the Indigenous peoples of the Great Lakes. Our identities, histories, spirituality, and traditions are inseparable from our respective ancestral territories. The very fabric of who we are is defined by the landscape of interconnected relationships and our responsibilities to all our kin—all of those human and non-human relatives that we live with in interdependent, mutually-beneficial relationships within this place. This is the foundation of our worldview. These cultural teachings are our Original Instructions of what it means to be human— our roles and responsibilities, how to live in balanced, good relationships with the rest of the world. These teachings inform our seasonal practices which make up our place-based lifeways. From this perspective, the preservation of foodways goes beyond basic sustenance—they affirm and renew relationships, nourish our spirits, and help us to be in balance with one another. Foodways are core to expressing our identities, are part of our spiritual practices, and play a role in our cosmologies.

Our cultures have endured because our daily practices are aligned with Natural Law and the Earth’s rhythms. Every plant, every animal, and even the weather– they all have seasons, cycles that dictate how they exist in the world. Our Traditional Ecological Knowledge (TEK) is specialized knowledge belonging to a specific culture and a particular locale. Our hyperlocal sense of time is based on generations of observations and collective knowledge about our plant and animal relatives’ lifecycles; today, people refer to this study of cyclic and seasonal natural phenomena as phenology. This intimate knowledge of place informs our seasonal lifestyles, foodways, and land stewardship practices. In our traditional Anishinaabe calendar, the names of each lunar cycle correspond with what is occurring in our local environment at that particular time and what human practices are in season. It is here that you can see that Indigenous cultures come from the perspective of place-knowing, rather than place-making.

However, over generations, many communities have experienced disruptions or disconnection from our foods and land-based practices. Food and land have always been weaponized against Indigenous peoples to coerce them into colonial agendas. These are the origin stories for many social and health disparities we see today. Indigenous food movements recognize that revitalizing these foodways is essential to our survival, cultural preservation, and sovereignty. Some call this process of revitalizing traditional lifeways “decolonization”, but in our language we say it is Biiskaabiiyang—a process of returning to ourselves. Recovering our land-based cultures, identities, and wellness is really about remembering who we are and living out our spiritual responsibility. Reclamation of ancestral lands, waters, and sacred sites is fundamental to preserving land-based practices and lifeways– without these we cannot be people of a particular place. The Indigenous food sovereignty movement recognizes that this is as much about upholding our sacred responsibilities as it is about protecting and exercising our treaty rights.

Tart Cherry Pie

Peace Pie, Marquette

2 lbs fresh or frozen tart cherries 3/4 cup white sugar 1/3 cup flour 1/4 tsp salt 1 Tbsp butter 1 Tbsp lemon juice 1/2 tsp almond extract 1 8" pre-made pie crust In a large pot, combine cherries, sugar, flour, and salt. Heat the pot and stir constantly until mixture comes to a boil. Continue stirring for approx. 5 minutes, or until the mixture thickens. Remove from heat. Add butter, lemon juice and almond extract. Allow to fully cool before assembling pie or refrigerate overnight. This pie is beautiful with a lattice crust! It is also delicious with Almond Oatmeal Crumble on top! Place pie on a cookie sheet - the juices will bubble over. Bake at 350° F for 40–50 minutes. Pie is done when crust is golden brown and filling is bubbling over.

1/2 cup oats 1/4 cup brown sugar 1 tsp cinnamon 6 Tbsp butter, melted 1/2 tsp almond extract ¼ cup slivered almonds Optional sugar, to top Mix flour, oats, brown sugar and cinnamon in a bowl. Melt butter and add almond extract to melted butter. Add butter mixture to flour mixture. Add almonds. Combine and sprinkle over pie filling. Optionally, sprinkle additional sugar over the top.

“When COVID hit, we wanted, like so many other people, to figure out how to help the community,” says Joe Newman, co-owner of Mighty Soil Farm in Chatham. To build local food security in Alger County, several farms, including Mighty Soil, collaborated to form Farms for Folks (FFF), a food access motivated CSA program. Area individuals and businesses donated to the FFF fund to provide fair prices to farmers and pay for food to give to those in need. This program was made possible through community funding and by working with Alger County Communities That Care(AC3) to act as a fiduciary. Local volunteers helped with aggregation of produce and delivery for those who lacked transportation. Seasonal items from area farms, like greens, potatoes, squash, and more, were packed and distributed to about 10 Alger-area families, with plans for 20 this year. These boxes also offered additional items like eggs, proteins, and bread. Participants were thrilled and, “farmers all felt great about their food going to folks who really, really needed it,” Newman says. In the early stages of this program, Newman pitched this collaborative CSA idea to the Upper Peninsula Food Exchange team, which inspired a similar project in the Western Upper Peninsula with the Portage Health Foundation (PHF). The foundation partnered with non-profit social service and health agencies, including U.P. Kids, Keweenaw Family Resource Center, BHK-L’Anse and the

Keweenaw Bay Indian Community Health Center, to identify area families to invite to the program. In the Keweenaw region, the PHF-managed program included culturally appropriate local items, like manoomin (wild rice) and maple syrup from Dynamite Hills Fam in Baraga County. “Helping the people (in our community) is really neat,'' Gina Kerr, owner of Whispering Wild Market Farm in Toivola, says. Her farm provided apples, corn, potatoes, collard greens, onions, and raspberries to the PHF program. “I love how things are budding off of this program.” Both programs offered educational resources to empower participants to store, prepare, and cook the ingredients. Seasonal recipes from MSU extension were shared with FFF participants. In Copper Country, the Portage Lake District Library, which was one of the distribution sites, even created their own educational cooking web series, Biblio Bistro, to complement this program. Collective CSA models like these strengthen the ties within the community, from the farmers to the eaters. After the successes of these programs in 2020, both are continuing through the 2021 growing season. These examples showcase how rural communities can have a voice in creating impactful programming that shapes their own food system. “Supporting local food efforts is a win-win for the community through increasing access to nutritious, locally grown food [while] supporting the local economy” says Dr. Michelle Seguin of the Portage Health Foundation.

“How am I going to get my products to the consumer?” This was the biggest question on the minds of food producers during the spring of 2020. Online farmers markets and farm stores, once a rarity in Michigan, are a positive and evolving adaptation to the ongoing pandemic.

“While COVID created challenges for farmers markets in 2020, many thrived through innovation – increasing sales and bringing new buyers to the table via online orders with curbside pickup,” says Amy McCann, CEO of Local Food Marketplace, an online sales platform designed for farms, markets, and food hubs. In Traverse City, the Sara Hardy Downtown Farmers Market quickly pivoted to using Local Food Marketplace and offered a minimal contact system. Online ordering was well received in the community with nearly 400 shoppers placing $16,000 in online orders in the first three days of going live. Throughout the 2020 season, the online market generated $164,750 in sales for 49 vendors, with over 1500 customers placing an average of 150 to 200 orders a week. “Personally, I found myself

shopping more at the farmers market,” says one online Sara Hardy Farmers Market shopper. “I don’t really like crowds of people, so having my options all laid out in front of me on the website made it super easy to scroll through and see what I wanted to buy.” Online shopping is familiar for most consumers and led to larger purchases at the market. However, selling online was completely new territory for many local food businesses. With dozens of small Michigan farms trying to navigate their first, or even multiple, online ordering systems at once, inventory management was one of the biggest challenges. For example, Lakeview Hill Farm in Traverse City operates their own e-commerce site, sells online at a farmers market and with separate wholesale platforms. “They all have different periods, deadlines, order cut-offs, and delivery dates,” says co-owner John Dindia. “That has been really hard to manage.” These growing pains are expected during any switch to a new method of selling, especially one exacerbated by a global pandemic. Though, many vendors are enjoying plenty of benefits to moving online. Farmers no longer had to spend hours setting up and tearing down stands multiple times a week, but could spend their time actually farming. Plus, many online markets extended their season or even stayed open year round with streamlined pick up options. Even though the switch to online was intensified by the pandemic, online farmers markets are here to stay and are shaping a more localized food system throughout Northwest Michigan and beyond.

1 lb Macintosh apples, peeled and cored

1 bottle Fustini’s Balsamic vinegar

Plath’s 10 oz. bone-in smoked pork chop

15 oz apple juice

1 tsp salt

SPICE MIXTURE: 2/3 cup sugar 1/4 tsp cinnamon pinch of each: allspice, nutmeg, ground clove, salt, pepper Boil apples and juice until the apples are soft, purée and then add spice mixture. Continue boiling until thick and bubbly, remove from heat and store in the refrigerator. This will make more than you need for your pork chop but holds well if kept cold, and is delicious in many other applications.

2 Tbsp brown sugar 1 tsp pepper Bring to a boil and reduce until thick. This will also be more than needed but it is delicious when paired with many other dishes.

BROWNWOOD MUSTARD DRESSING 1 cup Brownwood Mustard 2 Tbsp red wine vinegar 1 Tbsp fresh chopped rosemary Mix well.

1 bunch kale, stems removed and leaves washed 1 apple, sliced 1 medium red onion, sliced Grill Plath’s 10 oz bone-in smoked pork chop until it reaches 145° F with a meat thermometer. Glaze with the apple butter by brushing it on 1 minute before you pull them off the grill. Sauté fresh kale, sliced apples and sliced red onions until just soft, toss with a small amount of the Brownwood Mustard glaze. Place the pork chop on top of the salad and drizzle with Fustini’s Balsamic Reduction. 41

“How’d we end up getting this fancy lettuce? This stuff is good!” exclaimed a Posen High School student walking through the cafeteria line. As a collaboration between the Michigan Department of Health and Human Services (MDHHS) and local health departments, the goal of the Building Healthy Places initiatives was to improve access to healthy and affordable food and increase opportunities for physical activity in the places where people live, work, learn, and play. Since 2016, the project has worked across 37 cities within Northern Michigan and Washtenaw County. For schools, restaurants, and retailers, these funds gave businesses the initiative to provide healthier options.

“IT HAS BEEN INCREDIBLE TO SEE THE COLLECTIVE IMPACT THIS PROJECT HAS HAD WITHIN THESE COMMUNITIES. A LOT OF THIS WORK HAS BEEN A LAUNCHING POINT FOR LARGER INITIATIVES AND FUTURE COLLABORATION,”

says Ashley Bradshaw, Physical Activity Coordinator of the Michigan Department of Health and Human Services.

Schools used these funds to serve healthy, delicious food and to teach where their food comes from. Posen Consolidated Schools (PCS) secured $3,500 in grant funds to upgrade their cafeteria with a new salad bar, an industrial sized smoothie maker, and photos of the local farm where they get their produce to jazz up the cafeteria walls. Another nearby school district, Rogers City Schools, utilized funds to install filtered water fountains outside of their cafeteria and gym. Additionally, some of these funds helped Hillman Community Schools serve over 460 students breakfast and lunch for 81 days during the COVID closure. Restaurant recipients found ways to offer more nutritious dishes in many creative ways. For example, Nauti Inn Barstro in Cheboygan added an herb and vegetable garden that’s now featured on their menu. Garden plants are trimmed daily for food and beverage preparations with plans to dry and preserve excess yield for year-round use. Already a success, plans for expansion all the way to Water Street have been developed, according to owner Sharen Lange. Other restaurants like Austin Brothers Beer Company, The Hungry Hippie, and Nourish received money to upgrade their premises with equipment. "The funds from the TLD grant allowed us to buy a new prep table that we use in our day to day operations,” Greg Konwinski, owner of the Hungry Hippie says. “Having the new table has allowed for us to carry a few additional healthy options as well as improve our speed of service." Area retailers Kris Mart, Perch’s IGA, Sand Bay Trading Company, Marine Market, and the Alpena MI Stop Citgo Fueling Station & Deli also utilized the funds to purchase refrigeration equipment and to foster relationships with new local sources. The Building Healthy Places funding contributed to both the success of area restaurants and retailers through the continued pandemic, as well the health of children in the community.

1 15 oz can refried black beans

Combine refried black beans and broth in a 2 quart saucepan over medium heat. Stir until well combined. Add all other ingredients. Stir until taco seasoning is fully incorporated. Heat until soup reaches a low simmer. That's it! This recipe is easy, fast, and naturally low in fat.

REDUCING FOOD INSECURITY IN MID MICHIGAN These organizations are creatively fighting hunger in their communities. The Coronavirus pandemic ended a decade long downward trend in US household food insecurity. According to Feeding America, 45 million people were food insecure(lacking consistent access to enough culturally relevant food for an active, healthy life) in 2020. These numbers have improved slightly in 2021, but it is estimated that 43 million people will still be food insecure this year. In Michigan, 14.2% of our population is currently experiencing food insecurity.

Putting Good Food to Good Use Hidden Harvest rescues perishable food and redistributes it to those in need in the Great Lakes Bay region. Early in the pandemic, school and restaurant closings put large volumes of food at risk of being wasted and Hidden Harvest worked quickly to redirect it to their 181 partner emergency food sites. Over the course of 2020, they redistributed 3.3 million pounds of food, a 32% increase from 2019. In addition to rescuing food, Hidden Harvest also distributed fresh produce from local farms. “One of our favorite relationships is with a local farmer who grows sweet corn for us. This year he connected us to a few more farms so we’ll have even more to distribute next season,” says Samantha McKenzie, Hidden Harvest President and CEO. Snail Mail Seeds The Garden Project provides access to land, resources, and training to empower folks across seven mid-Michigan counties to grow healthy food and community. Without their in person events this past year, the Garden Project turned to the USPS to reach the community. In April, they mailed 1,100 free seed orders that reached 5,139 individuals. They also distributed 4,000 “Garden to Go” bags to 48 partner pantries to provide easy to grow vegetable seeds and instructions to pantry users. The Garden Project impacted many new gardeners in 2020 with their creative outreach. "This was my first time successfully growing my own food and I am so proud that I was able to do this. I know I will continue to build on this first experience and hope to continue to be able to share my excess produce with my neighbors and local free food stands," says one participant. Flint

Control through Gardening Edible Flint improves food access while fostering connection to the land and the community. They operate a demonstration farm and provide hundreds of garden kits to Flint residents each year. Last year, they distributed 350 garden kits to area residents. Each kit plants a 1500 square foot garden to provide most of the vegetables for a family of four during the gardening season. Kits can be purchased with SNAP and come with garden coaching. “Gardening is something that you can control,” says Ge'von Collins, Edible Flint’s 2020 Americorps Service member. “And, in a time where our lives were turned upside down, Edible Flint’s Garden Kits provided Flint residents with direct control over their own food security.” To learn more, visit edibleflint.org

There are many people who link farmers with the word resilience. It’s this ability of our farming community to adapt, adjust, or just plain work through whatever challenge is put in front of them. This last year that word probably could relate to most of us. Over the last 146 years, our farm family has watched the changes, challenges and opportunities in agriculture. Sitting on a hill overlooking Walloon Lake just outside of Petoskey, we evolved through the ages to provide USDA certified organic produce to our region. When COVID-19 lockdowns appeared certain to impact restaurant sales, Kathy and I kept our growing plans intact and pivoted to building up the on-farm market and ventured into a new one. The USDA Farmers to Families Food box program was designed to provide CSA-like produce boxes that were distributed through food banks to families in need. Over the summer, Coveyou Scenic Farm put together nearly 18,000 food boxes

filled with organic vegetables and produce from other producers including 10 local farms sending boxes to food banks across Northern Michigan. Looking back, what makes us pleased is the desire people have to buy from local farms. We are so optimistic from feedback of shoppers at our on-farm market. Our expansion to make the market an “All Things Local” shopping experience with local fruit, dairy, meat, bread and grocery changed our market permanently. Over 30 local suppliers now sell through our market in addition to Coveyou organic produce. The explosive growth of our unique unlimited produce Open Market CSA program is another great story. Lakeshore Depot was not planned prior to the pandemic. The circumstances surrounding the shut down in early 2020 and potential threats to food supply chains and farm viability illustrated opportunities to improve local food security. So, that’s what we did. Opening in July 2020, we opened our store on a 'farm stop' model, focusing on local products whenever possible, and limiting our offerings to products produced in the Michigan and Midwest region. Many of our local products are on consignment, which means the farmer or producer owns the product until it is sold. The consignment model for local producers, combined with wholesale purchasing of other items allows us to return a higher percentage of sales to our consignment vendors than a typical wholesale arrangement. One of the biggest surprises has been

managing the rapid pace of growth and working to expand our capacity to store and sell products while refining and expanding our operations. Before we opened, a conversation with Alex from Superior Culture spurred the idea of building a shared use kitchen and food production space. This has proven to be a mutually beneficial arrangement for both parties, by allowing us to share resources, information and the costs associated with building and maintaining a commercial kitchen. The ongoing and encouraging feedback and support from local residents, farmers and food producers has given me the greatest hope during times of uncertainty. We are contributing economically to the viability of local food businesses and keeping revenues within the midwest region.

This may sound weird, but we really enjoyed 2020 here on the farm. We had more than double the business this year with COVID. With the shutdown, we were able to slow down in other aspects of our lives and ramp up on the farm. After attending several markets throughout 2019, Rick and I decided we were just going to sell from the farm again. We ended up working with 20 other farms off and on this year to sell everything from chicken and pork to herbs, flowers and asparagus. Some of the farmers just reached out to me once they heard what we were doing and asked if I wanted to list and sell their extra produce. One farm we worked with, Blue Mitten Farm, is a local hydroponic farm. With the restaurants shut down in March, our farm’s lettuce not ready, and demand

for lettuce high, it ended up being a perfect match! We worked with them until our lettuce was in and business picked back up for them. We would send customers to each other and at our first couple of markets I sold out of all of our chicken and their products. It was wild how fast it all sold. For customers who came to our farm market, seeing our rooster, Gonzo, and farmer Rick standing around in his overalls and flip flops was a fun experience! Our customers love knowing about their food and seeing the baby chicks and produce growing. They love staying and chatting with us about what’s going on around the farm. I really hope that people will continue to want to stay connected to the farmers and have learned more skills during COVID.

In the beginning of 2020, you couldn't get a seat most nights at our restaurant. We were doing really well and were launching all of our new stuff. But, even before the mandated lockdown, we knew we had to shut down to be proactive rather than reactive. That was the safest choice for our community and for our staff —it was bittersweet. Almost immediately, we started feeding people in the food industry because everyone was being displaced. We had tons of food that was going to go in the trash otherwise. Then, we partnered with a bunch of restaurants and the Detroit Free Press to deliver to hospitals, and to the police and fire departments. It just kind of snowballed like that. We worked with a nonprofit called Brilliant to feed people in need because the food disparity In Detroit is just atrocious. I think I underestimated how big that was. Before I knew it, we were serving 600 meals a day. I had this, ”Holy cow, this is insane,”

moment. Lines of people were wrapped around the building, so we shut down the takeout again because we couldn't handle the volume in a safe manner. From there on, we focused solely on the meal relief. We also transitioned into working with the Detroit Food Policy Council and Food Rescue. Eventually, we were doing 1200-1400 meals a day for people in need. That work completely changes your mentality around hospitality and food. To help pay for the free meals, we started a subscription program. Subscribers take virtual monthly cooking classes with us and have the option to pick up a chef tasting box of ingredients to go along with it. It's been pretty popular and each subscription buys one meal for someone in need. Honestly, in order to survive, we just need business. We need people to order food, to support small local businesses, and to help their community.

Since 2006, New City Neighbors (NCN) has uplifted the Grand Rapids community through their urban farm and youth programs. They are a Christian organization and radically inclusive of people of color, the LGBTQ+ community, and of all faith perspectives. On a two acre lot owned by the 4th Reformed Church, NCN’s farm and weekly cafe annually employed about 15 youths, often with their first job. NCN has evolved into a robust 200+ member CSA, while sending 25% of their produce to food pantries and directly to community members in need, through “guerrilla food distribution,” coined by their Farm-to Table Director, Ayanfe Jamison.

However, in 2020, they received word that the church wanted to unexpectedly dissolve its relationship with the organization and they were unable to renew their lease on the farm property. NCN’s newly hired Executive Director Ricardo Tavárez, a pastor and a gay man of color, worried that the organization would have to disband, but but was determined to secure a new space that would provide a safe learning environment for the NCN youth and staff. In support of their organization, the Grand Rapids community showed up— pride flags popped up in the neighborhood, donations poured in, and a community member told them about a nearby vacant lot. NCN acquired a farmhouse and one acre growing space in the same Creston neighborhood. They are grateful and recognize that the experience of quickly accessing land is uncommon for many farmers. “Land access is a privileged thing,” Tavárez says. “We had the resources and connections to be able to call a donor.” At their new main location, NCN is in the process of renovating the old farmhouse to include a commercial kitchen and office space. This will be the central location for their educational programming, cafe and farm. In addition to the building improvements, the farm team will have to make amendments to the soil, transfer their hoophouses, and install the irrigation necessary for urban farming. Investments they had previously made on the leased land, but now must start all over again. Despite these setbacks, NCN is committed to expanding their youth programming with local food industry businesses and even Grand Valley State University. This year, NCN will collaborate with the GVSU Sustainable Agriculture Project to commence production on one acre with a new high tunnel. This extra growing space will directly connect their youth participants to a college campus. New City Neighbors creates a community for youth, not only through job training, but also through talking about anti-racism and faith development. Food justice work and radical inclusion are foundational to urban farming, and New City Neighbors is centering that in their work. “Youth empowerment is our mission,” Tavárez says. “But the avenue that we choose to do that through is good food, and it will continue to be so.” To learn more, support and donate to New City Neighbors go to newcityneighbors.org.

3 large eggs 2 1⁄2 cups milk (or alternative milk) 2 cups all purpose flour (or alternative flour: oat flour, tapioca flour, etc) 1 cup cane sugar 1 cup organic blue cornmeal 4 1⁄2 tsp baking powder 1 tsp juniper ash (optional) 1 tsp sea salt 2 tsp xanthan gum (if using alternative flour to make gluten free)

Clean and chop vegetables as directed, then set to the side.

Heat oil in a medium saucepan, then cook ginger, onion, garlic, collard greens, & tumeric (if applicable) until fragrant. Add wine and reduce by half.

Once the wine is reduced, add the remaining ingredients and bring to a boil. Once it comes to a boil, let everything marry together down to a simmer for about 15 minutes. Serve alongside roasted chicken or pork chops. Or on top of rice for a healthy vegan meal packed full of protein for a meal to go! Chef's Note: Although I intended for this to be a vegan meal, this recipe could benefit from some smoked bacon chunks.

Preheat oven to 400° F. In a standing mixer with a paddle attachment or with a whisk, cream the sugar and butter until mixed well. Add eggs and milk to the bowl of the mixer and combine at medium speed. Then in a separate bowl, mix the dry ingredients together thoroughly. Add 1 cup of the flour mixture at a time to the wet mixture and combine on a low speed until the batter is well mixed. Pour the batter in a well greased 13x9 inch pan and spread evenly. Bake for about 25 minutes or until you can stick a toothpick in it and it comes out clean.

1⁄4 cup honey

2 Tbsp lavender (wrapped in cheesecloth) 3⁄4 cup butter, room temperature While the cornbread is cooking, simmer honey in a small saucepan, but DON’T let it come to a boil. Add lavender, then cut the heat and let it infuse until fragrant for about 5 minutes. Remove the lavender bundle and combine remaining ingredients in the mixer. Serve over cornbread and enjoy!

What is the best way to enjoy your to-go cocktail at home? “Grab a rocks glass, fill it with ice, and that will give you a perspective of what your drink is'' says Rob Cleveland, the Managing Director at Ann Arbor Distilling Co. Like many to-go beverages, their canned cocktails contain the equivalent of two drinks, perfect for you and another person in your household, so using ice and proper glassware is important. Ann Arbor Distilling Co.’s cocktails range from classic Moscow Mules and Whiskey Sours, to sponsored cocktails which contribute to social missions in the community, such as the Humane Society of Huron Valley.

Jess Heller of The Little Fleet in Traverse City says that the added possibilities are a great addition to their usual offerings. “It offers people who don't feel comfortable to come inside, to still have a delicious cocktail at home,” says Heller. “We can continue being creative and keep our services going throughout the regulations and closures.” In order to meet the legal requirements, carryout cocktails must be less than a gallon in size, resealable, and clearly marked as containing alcohol and intended for those 21 years of age or older. For best results, businesses have to consider their unique container and how the cocktail will transform from bar to home. The Little Fleet offers a personal touch with their to-go

It’s a family affair at Café Rica, a coffee shop located in downtown Battle Creek. Against the backdrop of a technicolor mural of a flamingo, natural light fills the spacious shop, complimenting the wood floors and exposed brick. Brothers Tristan and Jackson Bredehoft run the cafe full time with help from their parents. After years of searching for the best coffee, their father discovered the beans they now source from Café Naranjo, a cooperative in Costa Rica. Their mom, who speaks Spanish, helps coordinate the orders. From its inception the cafe was integrated into the local food system. The brothers took the food business course at Can-Do Kitchen in Kalamazoo, brewing their coffee there before switching to Sprout’s incubator kitchen in Springfield. Café Rica sources from many local food businesses for their extensive menu that includes bagel and waffle sandwiches, tostadas, coffee and tea, and even their own canned cocktails and cold brew. “Working with bigger

companies that provide food and food services doesn’t have the same touch as a local person that you build a personal relationship with,” Tristan says. Their local suppliers include The Fire Hub, Continental Bakery, Avalon Farms, 365 Urban Farm, Horrocks, and others. “Anything we can get locally and fresh we try to get,” Jackson says. "It just tastes better.” Founder of 365 Urban Farm, Kathy Antaya, says in addition to Café Rica’s benefit to the community as a whole, they’ve continuously promoted her farm. “It was significant to boost our identity within the community,” Antaya says. In their food menu, Café Rica sources tomatoes, basil, carrots, broccoli, and cucumbers from 365 Urban Farm. Regardless of the cost, the brothers are committed to working with other local food businesses. “It was always in the forefront of our goals to integrate as much as we can with the community,” Tristan says.

Baby greens, microgreens, herbs, and edible flowers HOW MUCH? 130 pounds (about 600 salads worth) per week and growing! HOW DO YOU GROW THESE GREENS? At our farm, we grow using a form of Controlled Environment Agriculture — we control everything from the light to the water to the temperature. We never use pesticides or herbicides, and use minimal water. Our plants are grown using Nutrient Film Technique (NFT), meaning the little plants look like they’re growing in a gutter with a small amount of water circulating throughout the stacks. WHAT DO YOU THINK EVERYONE SHOULD KNOW? This type of growing is really new — so there are a lot of unanswered questions about best practices. We take our customer’s health very seriously, so we grow everything from seed to harvest, right on the farm, with very rigorous biosecurity protocols and cleanliness standards in place. Our customers can feel extremely confident in the flavor, shelf life, and food safety of our greens.

Within the college's 10,000 square foot greenhouse is an Aquaponics system, which raises fish and plants in a symbiotic relationship. The farm is a part of ValleyHUB which also includes a food hub and a vegetable processing operation. kvcc.edu/valleyhub WHAT DO YOU GROW? We raise tilapia, herbs, and leafy greens in the aquaponics system, as well as using it for propagation of other plants. HOW DOES THE SYSTEM OPERATE? The fish are raised in four tanks containing different generations. The water from the tanks flows to the plant growing areas before being pumped back to the fish tanks in a large recirculating system. The water supplies the nutrients the plants need and the plants clean the water for the fish. WHAT DO YOU THINK EVERYONE SHOULD KNOW? Aquaponics is a great method of growing for demonstrating the connection between plants and animals. It requires constant monitoring and care for both the fish and plants but is a favorite of classes and kids camps.

Midnight Harvest is a small scale indoor mushroom cultivator in Northern Michigan. midnight-harvest.com WHAT DO YOU GROW? We grow shiitake and maitake, but we will be focused on shiitake this summer. HOW MUCH? 60 pounds per week, and just over 3,000 lbs annually HOW DO YOU GROW MUSHROOMS INDOORS? We have a 400 square foot growing space which contains our lab, incubation, sterilizer, fridge storage, and a fruiting room. It is very water efficient: ultimately, the mushroom material plus water is mixed, sterilized, inoculated (bagged), and set on a shelf for 8+ weeks. The bag acts as its own microclimate. WHAT DO YOU THINK EVERYONE SHOULD KNOW? In terms of pounds to square foot, growing mushrooms is one of the best in the market. Some mushrooms can get multiple flushes indoors, like Oyster and Lionsmane which dramatically increases their production weight to square foot use.

SALAD INGREDIENTS

CITRUS VINAIGRETTE

2 ears corn, roasted

1 small shallot, finely chopped

1 red bell pepper, roasted and diced

1 clove garlic, minced

1/4 medium red onion, diced

1/2 cup fresh orange juice

1/2 stalk celery, sliced

Zest of 1/2 orange

10 oz cherry or heirloom tomatoes, cut in half

2 Tbsp red wine vinegar

Salt & pepper to taste 5 oz arugula/baby spinach/spring mix

1/2 tsp kosher salt 1/2 tsp ground black pepper 1/2 tsp Dijon mustard 1 Tbsp honey 1/2 cup extra virgin olive oil

DIRECTIONS Roast corn and red bell pepper. You can achieve this either by turning a gas stove on high and placing both corn and red bell pepper directly on the fire or removing corn off cob and dicing bell pepper and placing on a cookie sheet and roasting in the oven at 400 degrees for 15 minutes. Once the corn is roasted, remove off the cob. In a medium bowl, combine corn, diced red onion, roasted and diced red bell peppers, sliced celery, cut tomatoes, and salt & pepper. For the citrus vinaigrette, place all ingredients in a jar and twist on the lid and shake. If you don’t have a jar, whisk all ingredients together in a bowl. Pour ½ of vinaigrette recipe into the bowl with salad ingredients and mix. Add arugula/ spring mix/baby spinach and lightly toss. Chill and serve.

DETROIT BLACK FARMER LAND FUND 2020 AWARDEES

On Juneteenth 2020, a coalition of Black farmers banded together to form the Detroit Black Farmer Land Fund, an effort to empower Black farmers who have otherwise lacked access to capital to purchase land in Detroit. The Detroit Black Community Food Security Network, along with Keep Detroit Growing and the Oakland Avenue Urban Farm, launched a GoFundMe campaign with the goal of raising $5,000 to help Black local farmers to buy land. In just one week, they raised over $20,000 and, eventually, they raised more than $54,000. “Access to capital, such as if you owe any property taxes, (not being able to) get a loan, there are so many barriers,” says Jerry Hebron of Oakland Ave. Urban Farm. “We want to help them work through those barriers. We want to also help them build goals and business plans; what to grow, how to sell it, and how to grow.” Out of 60 applicants, 30 were chosen to receive funding based on their relationship with the community, site plans, and knowledge about the land they planned to purchase. Travis Peters, the founder of Greenthumbz Consulting Incorporated which operates Green Boots Veteran Community Horticulture Gardens and Marketplace, was able to purchase two plots with the help of the land fund. “I’m a veteran who suffers from PTSD, anxiety, and depression,” Peters says. “Horticulture therapy is a great way to relieve those things and relieve those ailments.”

Peters plans to create a community hub where other veterans who have experienced PTSD can live, work and heal. In addition, he hopes to increase food access by delivering his fresh produce to the homes of fellow Detroiters. Another Black Farmer Land Fund recipient, Brenda Sharpe, told Planet Detroit that she has had a personal garden for years, but for the last two has grown a community garden on lots adjacent to her home with hopes of expanding into an urban farm and to begin keeping bees. The Black Farmer Land Fund is allowing her to actualize that dream. “We wanted to do this as a way to bring something back to the community, to stop the blight,” Sharpe told Planet Detroit. Because of the momentum of the fund, organizers hope to continue providing muchneeded resources to more Black farmers. The fund has proven that this work is about more than just individual farms. It’s about connecting communities and creating a pipeline toward generational wealth.
