Blessed with the Luck of the Irish, I hail from sunny Southern California, a stroke of good fortune for which I am immensely grateful. My immigrant Irish grandmother, disenchanted with life in 1920s NYC, found solace in Gardena during a visit to her aunt, prompting her immediate relocation to California. Meanwhile, my grandfather, John McPolin, embarked on a daunting journey from an Irish farm to the shores of America at age 19 in 1921. Despite his modest fourth-grade education, John toiled in Utah's coal mines and later aboard steamships in Seattle before serendipitously finding his way to the oil fields of Long Beach, where his accent charmed Texan workers who offered him a job. Finally, he settled in Los Angeles, where fate intertwined his path with that of Jane McLaughlin, my grandmother.
Each March, as St. Patrick’s Day approaches, I reflect on the enduring legacy of my Irish heritage. Although I never met my grandparents, their tireless labor and unwavering love, passed down through my mother and subsequent generations, shape my gratitude. Their sacrifices, despite leading to early graves, laid the foundation for our family's enduring bonds.

CAKE CHANGES EVERYTHING
In need of a reason to celebrate? Look no further than the place known for celebrations, Nothing Bundt Cakes! Local bakery owners, Misty La Force and Annamarie Megrdichian, have been sharing celebrations in Southern California since 2016. In July 2023, they joined forces with their longtime friend, Christina Foley, and purchased the San Clemente bakery. Together, these ladies are making joyful history!
To find the perfect recipe, one first needs the perfect ingredients. And that’s exactly what founders Dena Tripp and Debbie Schwetz were for each other. In 1997, they joined forces, or better yet, kitchens, to make cakes to entertain their friends and family. The cakes they made were delicious, unlike anything anyone had ever tasted. As a result, their friends and family asked them
to entertain more and more. They quickly realized that this side project of theirs could be something more. There was a gap in the world for delicious cakes, readily available, that didn’t compromise on their ingredients. Fresh eggs, real butter, and real cream cheese, nothing was too good to achieve perfection. And perfection is those decadent, slowly melting bites of joy we all know and love.
Flash forward 27 years later, there are more than 500 bakeries operating, and at least 100 more are planned to open in the next year in the United States and Canada. This little “side gig” of theirs has truly become a mainstay in the world of celebrations.
Bringing joy to the San Clemente area is what drives this high-powered partnership.

Owner/Operator Christina Foley is the perfect example of how hard work pays off. She is usually at the bakery before her team, preparing for the day and planning her marketing efforts throughout the community. “Joining forces with these two proven bakery owners was the best decision I could ever have made,” states Ms. Foley. “I’m so excited that we are able to bring the joy to our local community. We love how our new fundraising model is providing a wonderful avenue to raise funds for local non-profits, schools, and organizations in our town.”
It doesn’t end there. The San Clemente bakery is getting ready to commence the new “Books and Bundts” reading program for local youth. This new program provides a free bundtlet for every 40 hours of reading a child completes, demonstrating another way that Nothing Bundt Cakes is changing lives and encouraging students to excel.
