Welcome to Lone Star Local Guide! My name is Lindsey and I am so proud to not only call myself a Texan, but also a Houstonian. My family history is not only deep in the heart of Texas but deep in the heart of Houston since I’m a direct descendant of the Allen Brothers. I’m therefore very proud that my digital publication represents the area where I live and where my family is from. I am passionate about my community and the businesses that reside in it. Without a community, we have no place to call home and nothing to leave the next generation. I believe strongly in the power of the small business and what it represents. When you shop at a small business, you’re not only supporting your community, but you’re also supporting a family. I started Lone Star Local Guide to showcase these local businesses. I strive to fine unique small businesses, each offering something different. You may not have even known some of these companies were local to you and my hope is that I’ll be able to give them exposure and support for their businesses. Along with promoting these unique businesses, the Guide will also include informational, educational, and just plain interesting articles on various issues and topics that I hope you will enjoy. Conroe Noon Lions- Legacy of Service 80 Years and Counting Since 1917, Lions clubs have aided the blind and visually impaired, championed youth initiatives and strengthened local communities through hands-on service and humanitarian projects. That’s before masking tape was invented! A few short years later, in 1939, Conroe Noon Lions Club was founded and became part of a larger group of spectacular people. For 80 years, we have served where we live, and we have fun doing it. Lions Clubs International is the largest service club organization in the world. Its 1.4 million members in more than 46,000 clubs are serving communities in 207 countries and geographical areas around the globe. Though well known for its successful initiatives in vision health, Lions service is as diverse as its members. We meet all sorts of needs, from assisting the elderly to helping victims of natural disasters. Still not sure what it’s all about? Here are the answers to a few commonly asked questions: Who are Lions? Lions are everyday people like you that join together with an international network of men

and women to make a difference locally and globally. What do Lions do? Lions meet the needs of our communities and the world, ranging from assisting the visually impaired and working with local youth to medical missions and disaster relief. How are Lions relevant to today’s world? Since 1917 (1939 for CNLC), Lions have met the needs in their communities and continued to improve the areas in which they live. As long as there are needs around the world, we will work to meet those needs. Are there women Lions? Yes, of course! Women are a significant growing segment of Lions. Are Lions mainly retired people? No! Although many Lions are retired from various career fields, the organization is full of people young and old, and encourages young professionals to get involved! As in other community organizations, is the membership of Lions declining? On the contrary! Lions membership is increasing. In our district alone (District 2S2), there have been 5 new clubs started in the last two years! Programs such as Family Clubs, Leo Clubs, Campus Lions Clubs and New Century Lions Clubs, are helping us adapt to meet the growing needs of the world around us. I would like to volunteer in my community but why should I do so as a Lion? As previously mentioned, Lions meet the needs of those in their own communities as well as around the world and we have fun doing it.

Each year, Conroe Noon Lions serve locally by: providing vision screenings for children, seniors and the homeless; giving thousands of dollars in youth scholarships; assisting our elderly; providing services for children with disabilities, and so much more! Working together locally and internationally, the worldwide network of Lions has vastly more resources and is able to accomplish much more than individuals and small groups working alone. How do I become a Lion? Becoming a Lion is much more than joining a club. The time has never been better to visit us, as we celebrate 80 year for service to Conroe and Montgomery County! A few years ago, she spent many hours driving to Austin every month to float because she felt such benefits from it, but after so many hours in the car she wanted to find something closer. After searching long and hard, she realized there was nothing local. The U.S. Army Air Service in World War I - What’s in a Name Robert A. Kasprzak Major, USAF (Retired) After the United States entered World War I in April 1917, plans were made to construct numerous Air bases throughout France. One of these bases was located at Issoudun, about 100 miles Southeast of Paris. Issoudun was home to the 3rd Air Instruction Center (3rd AIC) and, at the time, was the largest air base in the world. The base boasted 13 airfields used to train American pilots in the art and science of aerial warfare. As part of military life, the 3rd AIC began publishing a newspaper entitled “The Plane News”. The Plane News captured life at Issoudun. Thumbing through the newspaper you’ll find articles about recent events associated with the War (especially the Air war), military topics such as customs and courtesies, poems, jokes, cartoons, scores from athletic events, social gatherings such as dances at the YMCA, songs, and letters. The Plane News is an excellent resource to gain real-time insight into daily life in the Air Service. One of the articles that caught my eye was written on 6 July 1918. The article was titled “Name Wanted for Men of Air Service”. Unlike the Infantry who were known as “Doughboys” and the Artillery, named “Rednecks”, the article noted there was no nickname for the U.S. Airmen. As a result, The Plane News sponsored a contest, open to all ranks, in search of an appropriate nickname. The winning entry would receive 100 French Francs (about $20). Originally, the contest was scheduled to end on 4 August 1918. However, there was so much

interest the contest was extended to 10 August then to 17 August. Ul;timately, about 300 names were proposed by readers from which a committee selected 25. Some of the entries included names such as “Sky Larks,” “Joy Boys,” “Eagles,” “Starshooters,” “Skyscrapers,” “Larks,” “War Eagles,” “Sky Bo,” “Sky Jackies,” and “Joy Stickers.” Subsequently, a vote was taken by the aviators at Issoudun where the name “Airnats ” was chosen. It was suggested by Sergeant C. B. Swafford, of the 655th Aero Squadron. The name had no particular significance, being an abbreviation of “aeronauts.” As the War continued, “Airnats” became more and more popular, In fact, in October 1918, Captain Jay W. Fay, Director of the First Air Service

Band, composed what he called the “Airnat’s March” which was a big hit wherever it was played. Another tune “When We Whirl In to Berlin thru the Air” composed by Nat Vincent, James Brockman, and James Kendis was a hit song “Dedicated to the A.E.F. Airnats” as well. (Author note: A.E.F. = American Expeditionary Force) When World World War I ended, the “Airnat” nickname also passed into history. It was obvious the name did not match the mission of the Air Service but the term used today and for the last 100 years certainly does. For the men and women of the Army Air Service, Army Air Corps, Army Air Force, and the United States Air Force, we are simply known as “Airman”!u

Creamy Chicken Marsala One of our favorite meals is Chicken Marsala. This recipe is quick and simple for a weeknight dinner. I used boneless skinless chicken thighs but you could substitute boneless skinless chicken breast. Trumpet Mushrooms was utilized in the recipe because I had received some in my imperfect product weekly box. Any type of mushrooms could be used

Ingredients: 9.5 ounce Trumpet Mushrooms or any variety sliced into quarters 1/4 Chopped Onion 1 TBL Chopped Garlic 2 TBL butter 1.5 pounds chicken thighs, boneless skinless 2/3 cup chicken broth 2 shot glasses of Marsala wine 1/2 cup parmesan, grated 4 ounces cream cheese 1/2 cup heavy cream Cooking Instructions: Start by adding mushrooms, butter, garlic, and onion to a saute pan and cook on medium low heat until onions and mushrooms caramelized. Add chicken thighs and brown on one side. Turn Chicken thighs and de-glaze pan with Marsala wine cook for a few minutes. Add heavy cream, broth, cream cheese and cook until all the cream cheese is fully incorporated into sauce. Reduce heat and add Parmesan cheese and stir gently until fully incorporated. Serve with cauliflower mash or steam broccoli. ENJOY!

Personal Prep By: Lindsey Kasprzak You know that feeling when you’re eat something delicious and then you feel guilty for eating it? Well, now you can literally have your cake and eat it too with Personal Prep! Personal Prep is a local, healthy food-prep company that can work with any diet! Not only are the meals incredibly delicious and healthy, but they are also hearty and filling. When Sophia, the owner of Personal Prep, asked me to do a review of her offerings, she gave me very simple and easy instructions on what to do. All I had to do was go to the Facebook page and give it a “like.” Every Wednesday morning, a new menu is posted, covering all the bases: breakfast, lunch, and dinner. When you decide what looks great, you simply shoot them a private message with your order and your email address. Orders just have to be received by Thursday night. It’s that easy!! No driving to the grocery store, no trying to find a parking spots, and no waiting in line. You can order right from your phone and pick it up at a local designated location (Pak’s Karate, Pro Body Fitness, Xcstasy Fitness, or Crossfit Conroe). When I went to the Personal Perp page to pick my meals, I was surprised at the variety of choices and the fact that everything could easily be made low carb if I wanted. I ended up getting

the Texan Scramble for breakfast: breakfast sausage, jalapeño sausage, diced sweet potatoes, and fresh spinach all scrambled with farm fresh eggs. For my other two meals, I ordered the BBQ Tater and the Shepherd’s Pie- both of which I ended up sharing with my 8 year old daughter (and y’all, when an 8 year old gets mad at you for taking the last bite, you know its good)! The BBQ Tater was a baked sweet potato stuffed with BBQ chicken and jalapeño sausage; and yes ,my child ate it and said nothing about it being too spicy. Her response was “Ohhhh this is absolutely AMAZING!” And believe me this child lives on Mac and cheese and refuses to try anything else. Next on our plate was the Shepherd’s Pie, which was a slight twist on the classic with garlic mashed sweet potatoes on top of ground turkey and mix veggies sautéed in a mushroom gravy (gluten free almond meal). This meal, I believe, hit my soul just a little bit. The favors were unbelievably and I actually didn’t even know the ground meat was turkey until after I had it. It was one of those meals where I couldn’t put my fork down and I didn’t care because it was healthy and under 500 calories! Yup, that’s right all the meals made my Personal Prep are 300-500 calories plus they’re all made from scratch and gluten free. You think that’s all they offer? Not even. Personal Prep can also have individual consultations with you and help plan out meals that will fit your specific diet and personal needs at a very affordable price. You’re probably thinking: (1) convenience by ordering on my phone, (2) super healthy that (3) tastes really good, these meals must

be really expensive! Not at all! You can order a single meal for $9.50 or order in bulk (15) for $7.50 each! Think about it, that’s 3 meals a day for 5 days at $112.50! I don’t know about you, but I spend way more than that at the grocery for 5 days’ worth of meals and let’s not even start with fast food and the other junk we put into our bodies. I think it’s safe to say that if you want the convenience of ordering yummy meals that are already made for you, then Personal Prep is the way to go! By: W.F. Strong The navigation apps so accessible in our cars and on our phones are to me, magical. Siri, Google Maps and the like save us collectively from hundreds of thousands of lost hours each day by saving us from, well, being lost. Siri also may have saved a few relationships by sparing couples from arguing about whether or not to ask for directions. In simpler times, the all-perceptive woman might say, “Just admit it, David, you’re lost – been lost for an hour. Driving faster won’t get you unlost. Stop, please, ask for directions.” Then the man would say, “Just hold on and let me concentrate, Martha. Two more miles up here and I believe I’ll know where we are.” Yet for all that Siri offers in real time efficiency and guidance, there are things she can’t do for you. She is not infallible. All of us have had the experience of being told “we have arrived” at our restaurant or hotel only to be welcomed by curious cows staring at us from a vast empty pasture. The other thing we have lost with these apps is the splendid, colorful conversations we used to have with random strangers we’d ask for directions, such as the gas station attendant, the woman walking her chihuahuas down the street, or the slightly drunk guy mowing his lawn. Siri and company are economical communicators, giving you the minimum information you need for maximum clarity. Most of your random direction givers over-communicate. They give you far more infor-

mation than you need. For instance, I once asked a Deputy Sheriff, who happened to be giving me a ticket for alleged speeding, how to get to Highway 71 to Austin. He said, “Oh you don’t want to go to 71 from here. Go back two miles and take that FM road west and it’ll take you to Austin eventually. The best thing is it’ll take you by Peggy’s Cafe – just a ramshackle hut at a wide spot in the road – best peach cobbler you ever had in your life. Bucket list cobbler for sure. Take a bit of the sting out of this here ticket.” See? Siri doesn’t have that kind of empathy, or, passion for cobbler. Another example is when years ago, I stopped to ask a farmer on some country road near Abilene how to get to Highway 277 to San Angelo. He said, “Oh, just go down to that green house on the corner there and turn left. Go straight 3 miles, you’ll hit it.” I replied, “That house you just pointed to is actually yellow, not green.” He said, “Yeah, well it was green for 30 years. They painted it recently. We ain’t got used to it, yet. Most of us don’t care for the yellow.” As I was about to thank him, he leaned his arms on my passenger door and said, “That house there is the Miller house. Three generations of the same family lived there and farmed that acreage. Jimbo and Carolyn after 30 years farming sold out last year, moved to Alpine and opened a bed and breakfast out there. Young couple, McGees I think, bought that house and painted

it yellow. Bad decisions all around in my opinion. But not my business. Irregardless, I’ll wager right now that ten years from now that’ll still be known as the Miller house. Well, you best get goin’ ‘fore the sun sets on you.” You see? Siri can’t give you that kind of local, social history with such authentic flare. Finally, Siri doesn’t offer you the “gone too far” landmarks. She’ll tell you to turn around for sure, but she won’t say, “If you come to a rise in the road and see a Texas Flag gate on your left, you’ve gone too far.” Or, “If you pass over a creek, you’ve gone too far.” Or, “If the pavement turns to dirt, you’ve gone too far, but don’t try to turn around down there – with all the rain we’ve had you’ll just slide off into the bar ditch and you’ll need a wrecker to pull you out.
