Sticky Fingers Easter Carrot Cake Nests

Baking with your little ones! Janet Cousins of Sticky Fingers Cookery Parties Recipe... “Carrot Cake is a healthier option and the cake itself is low in fat and has healthy ingredients such as wholemeal flour, carrots and raisins. The nuts are optional, but if they are included, the cake provides a good source of vitamins, minerals, protein and fibre. If you choose not to use the icing recipe (which is high in fat), an alternative would be a simple water icing on the top. Also great for when it’s not Easter! ”

Ground cinnamon

Bicarbonate of Soda

Baking powder

Plain wholemeal flour

50g

Raisins

Large eggs

Cocoa powder

1. Ask an adult to help with the grated carrot 2. Put oven on at 170ºC (fan), Gas Mark 5 3. Put cupcake cases into a 12 hole muffin tin 4. In a large bowl, mix grated carrot with walnuts (if using) and raisins In another large bowl, beat together the oil and sugar 5. Add the eggs and continue beating until thick and creamy 6. Mix the flour with the bicarbonate of soda, baking powder and cinnamon. 7. Fold the flour mixture into the egg mixture 8. Divide the mixture between two bowls. 9. Stir the cocoa into one bowl of mixture 10. Spoon the choc mixture into 6 cases and repeat with the remaining mixture. The cases should be nearly full as the mixture does not rise very much 12. Bake in the oven for 20-25 minutes until golden brown and risen. 13. Leave to cool.

1.In a medium bowl, beat together the softened butter and cream cheese with a wooden spoon 2. Add the vanilla essence and stir 3. Carefully stir in the icing sugar, then beat until well mixed 4. Divide the mix into two bowls and stir the cocoa powder into one of these. 5. Spoon the white icing into a piping bag and pipe a “nest” onto 6 cupcakes 6. Repeat with the chocolate icing on the chocolate cupcakes 7. Decorate the nests with mini chocolate eggs

Silvertrees Nursery have opened their doors to a newly refurbished and unique baby room. Based on Ashbourne Road, Derby, the nursery (part of the Treetops family) boasts a beautiful homely environment with a cosy atmosphere for their very youngest guests. Features include a fireplace, comfy sofa and a beautiful chandelier. Leanne Patrick, Manager, said: “We have purposely styled our baby room on a typical living room that you would find in many homes, so that baby recognises the surroundings as familiar. The priority in this room is play and of course plenty of

love and cuddles. We have included a host of beautiful and unique natural toys for the babies to explore. Natural resources encourage children to observe closely, use all their senses and stimulate their curiosity.” The room has proved a hit with Alice Letts, who’s seven month old child attends Silvertrees said, “I like the fact that the room reflects the lay out at home and also the fact that the toys are different and interesting! I think the care here is superb. Good personalities that really get involved with the babies!”
