José Bernal MAYOR OF MARBELLA by María Elena Paganini
You are now going to be mayor of a city such as Marbella for at least four years. In order to achieve this, you have had to resort to dialog and consensus with other political parties. How has this process turned out, and how is it getting on? We are heavily involved in a new political era, a period where we now need to achieve agreements between the various parties for everyone’s sake. In this sense I believe that Marbella is a clear example of politics where dialog and consensus are of utmost importance. We parties that previously formed the opposition, PSOE, IU and OSP, with the extra support from Costa del Sol Sí Puede, have now taken on the role of government and I do believe that the results are positive. We are bringing a breath of fresh air to government with proposals that will greatly benefit the city. How is this city recovering from the enormous damage caused in the past? Since we arrived at the Town Hall, eight months ago, we have undertaken measures to normalise the democratic process, to provide transparency and teamwork, paying particular attention to key issues such as the efficiency of the public sector, employment and social issues. We have also renewed promotional activities on both a national and an international scale with significant proposals such as participating in the recent editions of Fitur and the ITB of Berlin, with our own stand. This is serious work, to readjust and recover from a model of government when we found ourselves faced with the various problems that we inherited. But I believe that this format is now bearing fruit and we will continue along this path during the next few years to ensure that Marbella will become a model city. One of the themes that has concerned investors most is the cancellation of the General Plan for Town Planning (PGOU) which had legalised thousands of properties. What is the present situation and what assurance can you give to all those who have chosen to invest in Marbella? The Town Hall has been working from the very beginning with the Junta de Andalusia to provide the city with a definite Town Planning programme since the cancellation of the PGOU of 2010 by the Supreme Tribune. At the moment we are in the process of adapting the PGOU of 1986 to the Law of Town Planning of Andalusia (LOUA) as a transitional formula in order to provide 6
assurance to the city’s planning progress up to the approval of the new programme. On a parallel scale, we have already initiated the procedure for the creation of a new General Plan which includes the creation of tender documents by that body’s team of writers. It is a necessary step in order for Marbella to obtain a planning system that will improve the existing 86 version and will bring us closer to the model city that we are aiming for. I can add that so far this year the value of projects applying for licences is more that 8.5 mil-lion Euros, a statistic that emphasises the city’s economic potential. You have stated that no investment will leave this city since the Town Hall will provide businesses with all possible facilities. What processes is the Town Hall undertaking in this area? We have initiated a whole series of steps in order to provide a flexible and efficient solution to the town planning situation that has developed since the cancellation of the Plan. We have created a document that has been approved by the Local Government Board which clarifies the progress of each building project and which can be consulted on the Local Government’s website. We have also created an office for both the physical and virtual public with contact address and a series of Frequently Asked Questions and their Answers. We are also in the process of digitalising the PGOU of 86 and we have requested information from the Legal Department in order to clarify certain sentences. The Town Hall is obliged to offer the public all necessary guarantees, both to businesses and to individuals, with regard to the new scenario in which we find ourselves. To strengthen the luxury tourist sector and the city’s image, and to confront one of the most important problems of the local government, which is the seasonal nature of tourism, these are what the Town Hall has promised. What measures are being taken to achieve this? The new Town Hall Team for the promotion of tourism is clear. Fitur and the ITB of Berlin were the first big exhibitions where we have advertised our presence with our own stand, but they will not be the last. We will be present in all the main international tourist events to present our new image and the theme “ Marbella, a Five Star Destination”. This new image strengthens and illustrates our main tourist assets: nature, gastronomy, golf, beaches and luxury shopping. It sums up perfectly the assets of

our city, the attractions which have turned Marbella into a first class tourist destination. Furthermore, the investment in the promotion of tourism in the 2016 budget is 500,000 Euros, which is much greater than in previous years. According to the statistics of the Spanish Luxury Association (Asociación Española del Lujo), Marbella was at the top of the national list of 2015 with a turnover in this sector of nearly 1,564 million Euros. This figure accounts for a third of the national amount (27.5%) recorded by the tourist industry and which amounted to more than 5,600 million Euros. The annual barometer of Exceltur also provides very positive figures since the profitability of the tourist sector grew by 18.6% in 2015, by 27.5% for hospitality and by 11% for employment in the tourist sector. We must stress that Marbella is the city in Andalusia with the largest amount of 5 star and Luxury Hotels, and last year it was the holiday destination where high class establishments registered a greater increase in relation to the previous year, by 16.3%. We are aware of the need to improve this sector in order to generate wealth, work and employment, and, of course, to counteract the seasonal nature of tourism. Marbella has had a stand at Fitur for the first time. What was the result? The result was absolutely satisfactory. The stand made numerous presentations and held more than fifty workshops. There were meetings with the directors of Turespaña of London, Paris and Berlin and with the executives of tour operators, hospitality establishments and media groups such as Atresmedia. The economic impact of the media has been 150,000 Euros. The presentation of the new tourist image of Marbella in the Traje Museum Exhibition was attended by about 40 representatives of the various branches of the media. There was also
a high diffusion in social networks with more than 40,000 posts on Facebook, and 578 re-tweets and 471 favourites in Twitter during the entire Exhibition. I am a lover of art and culture. What degree of importance will your government give to this sector? All the importance that this sector, which we consider to be of great importance, deserves. We are supporting the culture programme with proposals for all types of Public. This month we have initiated “The Theatre Lives” with workshops, micro-theatre, musicals, comedy, classics and childrens’ programmes. We also intend to improve the infrastructure for culture. The Town Hall has initiated the project to extend the Museum of Contemporary Spanish Engravings, it will transform the building of the Sugar Factory of El Ingenio to a huge Centre for Scenic Art and it has also programmed a series of improvements in the installation of the OAL Art and Culture of San Pedro. Culture is a priority for this Government’s team, and we are proving it. What message would you give to businesses who have committed themselves to Marbella during the last ten years, such as Hansa Realty, and which are still here after having made great efforts and having witnessed various periods of crisis? A clear message, of tranquillity and confidence. Marbella continues to be an international destination that is completely consolidated and all the statistics suggest that it is on the path to economic recovery. The city has the potential to continue to grow and the Town Hall Board of Executives is working hard to ensure that it continues to generate wealth. hansaestates

“EVERY CLIENT IS A KING, AND NEARLY EVERY KING IS A CLIENT OF MARBELLA CLUB.” by María Elena Paganini How did the concept of Marbella Club come about? It is a luxury hotel, but it doesn’t pretend to be a palace, with its typical Andalusian charm and character, which you created together with your cousin the Prince of Hohenlohe. I am lucky enough to have been here almost from the very beginning. Frankly, for me it was the best stroke of luck of my life! At the time, my cousin the Prince of Hohenlohe had persuaded so many friends to come to Marbella. The word “glamour” is of course appealing, but for me there is more: class and style, and at the same time the atmosphere. Alfonso had fallen in love with the property which then became Marbella Club, an absolute paradise, offering so many features which made it the perfect spot. We preserved the Andalusian atmosphere, including a garden that was not landscaped in the French style, but which boasted many natural features. With the variety of local plants that my cousin planted here, the location itself with its wonderful climate, the mountain in the background which brought us water, and so many other things that today we all take for granted, but which did not exist at the time. The staff we met in Marbella in those days were not professionals, they were the sons of the local bricklayer or carpenter and we had to teach them how we believe one should attend to a client. It is not a question of great luxury! The luxury here is the garden, the mountain and its minerals, the joyful atmosphere, the greenery – that is what made it a success. We were proud of the simplicity that we had achieved albeit with all the comforts that you can offer a visitor, and many decided to make their homes here. It was never the intention that we would make a fortune out of the hotel; the idea was simply to attract people of the same mentality. “Elegant simplicity” or “simple elegance” is how Marbella describes itself.

When he came to Marbella Club he was so pleased that we treated him with respect but without overdoing it, without theatrics. The best moment was when he entered the dining room and walked past some British gentleman, and they all stood up until he sat down. That is what is so enjoyable here. “Every client is a king, and nearly every King is a client of Marbella Club.
Once I read an interview where they said that you were the keeper of the secrets of Marbella Club; which personality has had a special impact on you? Many... friends and clients have all been people who are on the same wavelength; the Prince’s character, my contacts and those of Maria Luisa have all contributed to this place being fortunate enough to attract so many celebrities, particularly from the world of cinema, politicians, presidents of governments, and royalty, some of whom are ruling at the moment, and others who are in exile, as well as business people who come to enjoy themselves, not to show off. The Duke and Duchess of Windsor, for example, these are aristocrats who, throughout their lives, have shown how much education and style they possess, particularly the Duke. I was disappointed that he did not become King of England and Empe-
Do your children have titles of nobility? Yes, they are counts but they do not want to use their titles, they don’t like to be noticed. They are Sofia and Federico von Schönburg.
Your wife is a princess, a descendant of Emperor William II and a cousin to Queen Sofia. What can you tell us about her? She is the ideal wife and a perfect mother. I was very lucky to find a wife like Maria Luisa, a woman who has brought so many qualities to our family which we have passed on to our children. This is what her imperial family taught her even after they had lost everything, not just their castles, but the Prussia that was, and which has now been wiped off the map.

What are the most important values that you have passed on to your children? We always want to pass on what we were taught by our parents from childhood to our children, a sense of responsibility and duty, of honour without vanity, and always to be at the service of one’s neighbour. We were born to do our duty and nowadays we feel duty bound to serve the people of Marbella. Marbella is my country, my home. God gave me the opportunity to rebuild the life that I had lost in Eastern Germany after having escaped from our castle when the Russians came. If we had not been so quick we would have spent the rest of our lives in Siberia as the Russians had planned. I feel I must repay this stroke of good fortune here in Marbella, with my work.
What do you think of the Spanish Royal Family? They have proved to be very positive. After the crisis caused by King Juan Carlos’ abdication we were a bit afraid of what might happen, but today King Felipe VI has been a great asset to the Royal Family, thanks to his education and his character, and to the blue blood from both sides, being also a descendent of a branch of the family of the Emperor of Germany. So, really, very few people in Spain have had such a solid background. Most of all I admire his sense of duty, the way he knows

what his obligations are and perhaps this is what is most important for Royalty. The Royal Family have many obligations and very few pleasures. He is resolving problems every day and he manages them extremely well, such as changes in government, amongst other things. What do you think of the present Queen, Letizia? She has a great sense of human values, and that is very nice, she follows the advice of her mother-in-law and her husband and helps where she can help, and in her own way. She does not try to be another Doña Sofia and I hope that she will be remembered as a great Queen amongst the Spanish Royal Family. Going back to Marbella Club, 62 years later, is there an era that you look back upon with nostalgia? This place has been wonderful, I look back at everything with nostalgia. I remember when I arrived in an aeroplane on a runway full of cattle, and they had to chase them away in order for us to land, and I was a young hotel manager who was still very green, as they say, but here I was able to fulfil all my dreams. My very life has been a dream. How much does Marbella owe to Count Rudi? (Laughs) love, perhaps... I don’t believe that Marbella owes me anything, Marbella knows that I am part of it and this is my greatest reward. It doesn’t matter which politician or political party is in power, all appreciate my presence and they treat me as one of their own. Do you still have a dream waiting to be fulfilled? All I want is to is to consolidate everything that I started here so many years ago, I want it to continue to flourish when I am no longer at Marbella Club, whether it be because I have gone to Heaven or I have retired, I want everything that we planted here to continue bearing good fruit. We did everything with such idealism... both Prince Alfonso, and myself as his right hand man. I would not like it if good manners were forgotten, if it were to degenerate into something inferior, if people forgot style, I want class to be maintained. Nowadays we don’t expect dinner jackets and ties... well, except for Christmas and New Year, perhaps! What would Count Rudi say to a young entrepreneur who has a dream such as yours? If you have chosen this profession, you must be seriously in love with your work because if you are not, you can become a slave to the hotel business, you have to be on the lookout for so many small details! On the other hand, quality management is number one. The customer must receive more than he expects. And to finish off, the word “family” is the most important for me, the staff must feel that they are part of the hotel, the customers must feel that they are part of the hotel, and I am also part of Marbella Club, albeit without any financial interest. hansaestates

Juan Miguel Marín LAWYER-PARTNER LEXLAND by María Elena Paganini
There are few legal practices in the Costa del Sol with so many professionals specializing in so many disciplines, and who are multilingual as well, as in Lexland. This is a great advantage for the client base since they can obtain both legal and tax advice in one place, but there must be difficulties managing a practice at such a high level? The main skills that you need to manage a successful legal practice are a combination of technical, personal and conceptual skills. Lexland’s roots date back from 1978 and since then we have been updating ourselves at the same time as the market has, thus increasing these skills day by day. Furthermore, our main focus has always been our clients, listening to them, understanding them and offering exactly what they need when they need it; this is what has made us leaders in our field. One of the areas which worries the investor at the moment is the cancellation of Marbella’s Urban Development Plan. We would like to know what the consequences may be. After the Supreme Tribunal cancelled the Urban Development Plan (PGOU) of 2010 we have to go back to the PGOU of 1986 which in turn has to be adapted to the Junta de Andalucía’s new planning rules (LOUA). This process of adaption is scheduled to be finalized in a year and a half, thus resolving a great proportion of the present problems, however, we must wait for the new PGOU of Marbella to appear in about four years’ time before achieving full normalization. In the meantime we must look at each issue on a case by case basis, to find out if a building was constructed under the 2010 plan, if the building license or the license of first occupation were annulled or not by the courts. Anyway, it is true that, apart from a few exceptions, regarding the majority of cases we must be optimistic, given the good will of all parties concerned, above all the Town Hall and the Junta de Andalucía, in order to succeed in normalizing the urban planning situation in Marbella. Every day there are more and more people wishing to work in the Costa, and on the other hand, there is a large number of businesses who only want to employ self-employed workers (autónomos); what advice would you give to both parties? It is vital to understand clearly that a self-employed person (autónomo) is different from a normal salaried worker, particularly due to the fact that he works independently. Therefore it is important that the parties, from the very begin-
ning of their collaboration, study carefully the contents of the contract and its execution in order to avoid the business relationship becoming a working relationship, which ends up as what has become a well-known category of “false autónomo”, which can create multiple problems for both parties. My advice in this case is to be very careful with the contract both as worker and businessman. There is an enormous range of options, each one with its own characteristics, and it is absolutely vital to choose the one which best adapts itself to each situation. What steps must an investor take when buying a property in the Costa del Sol, and on the other hand, are there any differences between Málaga and Estepona as regards taxes, etc., for example? The Costa del Sol is a focal point when referring to real estate investment. Each destiny is mainly chosen for its incredible climate or its excellent reputation in comparison with other destinies, since the Costa del Sol offers a solid communication network, high technology medical centres, great sympathy towards foreign residents and a very wide range of services which clearly differentiates it from other “Sun and Beach” alternatives. When a client wants to invest in the Costa del Sol, the first thing he must do is to find a property which can adapt to his requirements. Because of this, and in order to save time and money for the client, we recommend that he gets advice from a real estate professional. The other day I read in the newspapers that a buyer can waste more than 100 hours visiting properties that do not come up to his expectations, therefore it is important to surround oneself with professionals with suitable experience who know how to identify the requirements of the client, thus saving both time and money. However, given the experience that we have in this field, we can confirm that the most important step at the time of acquiring a property, even before choosing the property, it to employ the service of a lawyer in order to learn the procedure and to commence a legal study in order to ascertain if the property is free of charges and taxes. The lawyer will help the investor from the moment he reserves the property right up to the execution of the notarized title deed, thus ensuring that all is correct and that the client is constantly kept informed of the progress of his operation. As for the last part of the question, Malaga and Estepona are two cities that are in great demand with investors and it is up to the investor to choose one or other

of the two depending upon his requirements, his profile, if you like. With regard to taxes, the most obvious differences relate to local taxation. Local taxes depend upon each Town Hall, for example, the IBI (Property Tax) or the municipal capital gains tax. Therefore differences can arise with regard to local taxation. However, these are not normally of great importance. What are the rates for a “non-resident” regarding Andalusian Inheritance & Gift Tax? The rates applicable to a Non-Resident will depend on various factors such as the residence of the deceased, the residence of the beneficiary and the location of the assets that form the estate, amongst others. Recently (1st January 2015) a modification of the law regarding this tax was approved, which allows “Non-Resident” heirs, who up until now were assessed by the State law without the possibility of applying for reductions accorded by the rates imposed by the Autonomous Regions, to take advantage of the regulations of the Autonomous Region which has jurisdiction over the estate. In order to determine the jurisdiction of the autonomous community over the estate, the law takes into account the above mentioned factors. Inheritance taxi is quite complex. However, if we assume that the rates imposed
by Andalusia are applied as mentioned above, a non-resident can calculate that he will only have to pay taxes for those assets situated in Spain according to the rates applicable in Andalusia, which range from 7.65% to 36.5%. In these cases, given the complexity of this tax, we recommend that clients contract the services of a professional who will ensure that all possible benefits, reductions and deductions can be applied in order to reduce the tax burden of the heirs. And to finish off, after the crisis experienced by the world in general and Spain in particular, have you observed an increase in the real estate market, or at least an improvement in the real estate market in these last few years? The Spanish economy was greatly affected by the crisis in many ways. Luckily, statistics show that the Spanish real estate market is consolidating its recovery. In 2015 we could already note a moderate upturn in the demand for property with a very positive improvement and it was the second consecutive year in which we have seen these improvements. Thanks to this we note that the market is approaching normalization with a firm step, reaching the required levels for us to be able to confirm a clear recovery. www.lexland.es hansaestates 11

Our magazine is based on the world of art in general and on the Costa del Sol in particular. How do you manage insurance policies in this sector? As Spain’s leading broker for high net worth individuals, we have many clients who invest part of their wealth in works of art; allowing them to enjoy the collection whilst making a shrewd investment. Insuring art is far more challenging than insuring a car or standard home. So we use specialist underwriters who are able to provide the scope of cover necessary - all risks cover, declared values, restoration of a partially damaged work, artistic depreciation, cover in transit, specialist loss adjusters in the event of a loss etc. I know many artists and gallery owners who have great problems when transporting their goods due to the inefficiency of some haulage contractors. What sort of insurance should they obtain? The majority of claims in the art world relate to losses or damages sustained during transit, often as a result of using a standard transport company with no experience of transporting high-value art and inadequate packaging. The best advice is to use a specialist art transportation company. The second step is to arrange all risks insurance (with previously agreed values for each piece of art) to ensure every item is adequately covered should anything go wrong.

Marbella is a leader in the Costa del Sol when it comes to hotels, restaurants, bars and fashion shops, so to insure them is part of managing a business. What is the basic insurance cover that you recommend to an entrepreneur? In simple terms, insurance is designed to return a business to its pre-claim position. In order to provide advice on the best insurance program we would first need to understand the business, with regards to value and various risk exposures. Apart from the obvious risks of fire, flood, theft, loss of profit and liability, depending upon the type and size of the company, other areas of cover may be required, such as data protection, cyber risk, kidnap and ransom, directors’ and officers’ liability. A recent survey by ‘Mapfre’ concluded that over one third of SMEs in Spain do not have adequate insurance. Our advice is to ask an independent insurance broker for an ‘insurance audit’ to get a thorough review of your current policies and exact requirements. We offer this service to all new clients, completely free of charge. At the moment there is a lot of unease regarding inheritance tax. What is your advice when assessing a client in order to protect his family? Benjamin Franklin once famously said that “In this world nothing is certain except death and taxes”. With this in mind it is fascinating to see how many people are ill-prepared financially for the death of a loved one. At the very least, we recommend that everyone makes a will and informs the right people of its existence. Secondly, depending on which stage of life you find yourself, it’s a very good idea to consider life assurance. This should be essential for the breadwinner in a young family, or the married couple who have a substantial mortgage, or the prudent parent who wishes to make sure that any inheritance tax bill is met by a life assurance policy.
Finally, I would like to talk about boats, ports such as Puerto Banus or the Sports Port of Marbella host boats of all sorts. But surely when it comes to insurance you need an expert team for this particular sector? THE PROPERTY CHECK DONE BY AN ARCHITECT “It’s better to get some good advice than a bad deal” An Interview with Benno Bühler, Architect, Building Surveyor and Home Buyers Consultants by María Elena Paganini
Don’t buy what you don’t know: The Home Inspector helps to find construction defects and negotiates with them a better price. Our fees are calculated based on the savings we negotiate for you. At the end, everybody will win, you’ll get a better price, and we earn our money on the savings we are able to negotiate for you. Similar to second hand car purchase Bühler is an architect at bühler & partners architects | engineers | consultants who have been on the Costa del Sol since 1996. In his profession he works specifically on new buildings and reforms on existing residential property on the Costa del Sol and Costa de la Luz. He also works as a building surveyor and recognised property valuer. His latest service is “Home Inspector”, a consultancy service for buyers covering the whole of Spain, for non-residents seeking to buy property. Benno, why do we need a Home Inspector? Surely there are enough estate agents, experts and architects on the Costa del Sol? Of course. But we need to ask what each of them is actually doing: estate agents concentrate on sales. We, in our capacity as Home Inspectors, are architects and have undergone technical training. Our motive is to negotiate the purchase pri-
ce, since we earn our fee from the savings which we negotiate for the buyer: the more the buyer saves, the more we earn. You could hire a professional Surveyor as well... By all means, but the Surveyor will present you with a pages-long and cost-intensive technical report, and will need several days or weeks to prepare it. The Home Inspector comes on the same day and will tell the potential buyer about the state of the property on the day he inspects it. That is now, not in a few weeks’ time. That brings me to the next question: what does the Home-Inspector service cost? The potential buyer will get top-class information from EUR 350 plus VAT, no matter whether a purchase is made or not. If the buyer decides to go ahead, we calculate our fee as a percentage of the savings which we have negotiated for the potential buyer: official offer price less actual purchase price paid. But surely the buyer of a real estate property could negotiate on his own as well? Of course he can. But he will lack the arguments for a successful negotiation. We

find them by searching and discovering the defects of the property. We will calculate the repairs required and give the seller no chance to argue: he must admit that these repairs involve a cost, which has to be deducted from the selling price. In your experience, how much can realistically be saved? We have been able to save up to 20% of the offer price by identifying defects in the building. With some other sellers, however, nothing will work. Unfortunately it has happened that potential buyers have shown too much interest before they employed us; clever sellers have good antennae and this makes further price negotiations impossible. So my recommendation is: show no interest and come to us straight away. So when employing a Home Inspector, I don’t need a lawyer? As consultants we cannot give any legal advice, nor are we allowed to. I see our service rather as a complement to that of the lawyer. The lawyer makes the legal check and we do the technical check. Apart from the Home Inspector, what other services does your planning office offer? jects of more than a million square metres of residential property, including hotel projects, and the German school in Málaga. Our largest detached residential property, which we also built, had a living area of just under 2,500 m². We constantly work for the state government, and we have completely rebuilt and modernised the Palace of Justice in Estepona – and did so while normal business continued. And where are further focal points of your work? We are chartered building and construction surveyors. Spanish courts employ us constantly for “peritaciones terceras”, (third party studies) when two reports have already been submitted and no agreement is in sight between the disputing parties. Since 2015 I have been recognised as Mediator by the Spanish Ministry of Justice, and have been asked to mediate (engaged by the Courts or private parties) in terms of trade and company law, family law and of course all types of litigation in construction law. We also carry out valuations – both for the courts and for bank finance. Food at Da Bruno’s reflects the cultural varieties of the various regions of Italy. What is Bruno’s favourite dish? Italian cuisine is so rich that it would be impossible for me to choose one single dish! Prosciutto, piadina, the great variety of cheeses, but I have to admit that I have a weakness for pasta. This is probably why it is one of the star products of our restaurants, fresh pasta, always prepared with natural ingredients of great quality to that you can appreciate the great taste of our dishes. It is a dish that everyone likes, from tiny tots to the older generation and which you can have with sauces, salads, fillings... It is a pleasure for the taste buds! Giuseppina has the soul of a cook who is at the same time mother and grandmother, the knowledge that your kitchen exudes family aromas and tastes. But apart from this you are also a great entrepreneur. How do you juggle these two roles? Like everything in life, with a lot of effort and dedication. It is a pleasure for me to share the management of our restaurants with Bruno, since our journey to the world of hotel business started many years ago, in Germany, but I have never neglected my family role. I love to cook for my family, to create dishes with much love so we can all gather around a table. Sharing these moments with my family is a wonderful thing, something that will never cease to enchant me, no matter how much time goes by or how many restaurants we have to look after. “La famiglia” as you say in Italian, how important is the family for you? You work as a family, you write books about eating as a family and, of course, in your five restaurants you are surrounded with families from many countries of the world. At Da Bruno’s, the family is one of the fundamental pillars in life, just as it should be. Our loved ones give joy to life, particularly when the time comes to sit down at the dining table. It is the moment when we share our daily activities, worries and joys. That is why at Da Bruno’s it is so important to sit down and eat as a family, it is the moment when families meet and strengthen their relationships and improve the family atmosphere, something that we have always tried to reflect in every one of our restaurants.
The décor in each restaurant is very much “a la italiana”, based on high ceilings, wide spaces, strong colours, ultra classical chairs and sculptures. You still want to feel as if you were home? The idea behind the décor of all the restaurants is to transport us to Italy. It is almost 25 years ago that we came to the Costa del Sol on holiday and we fell so much in love with this land that we decided to stay, but we have never lost contact with our roots. Nostalgia blossoms, and with every dish that we serve in the Da Bruno restaurants, and their décor, we want our customers to experience a journey to our home country, and to share with us this very special bond that unites us with our roots. Music is of great importance to the Italians and it is also, without doubt, very important for Da Bruno. What effects have your famous musical soirées had on business? For Da Bruno our musical soirées have become our identity card, if you like. We want our clients to enjoy the best musical ambience so that apart from tasting the various dishes offered on our menu, they will enjoy a special evening with family or friends. Being together at the dinner table is very important for us to share moments with our loved ones and to enjoy a relaxed atmosphere. That is what we want to do at Da Bruno, offer our customers a top class music show, with different types of music, so that their visit to Da Bruno’s becomes an unforgettable experience. Apparently you are planning a very new and interesting venture in the Costa del Sol? Can you tell me about it? We are very excited about this project. Essence of Argentina by María Elena Paganini
The success of an Argentine restaurant is based on its meat. People world-wide like to eat meat, it has to do with our genetic memory, those ancestors who hunted and made fires and hence fed their families. But what makes Argentine meat so special? The cuts? The way in which it is cooked? All the above, but first and foremost is the animal’s breed, and its free range life, in freedom, eating from green pastures. Only these animals can produce meat with such richness of taste and tenderness. Argentine cuts are different from other countries. You can use various cuts: T-bone steak, rump steak, even the expensive fillet or sirloin, all are good, but for us nothing can achieve the perfection of the rib eye steak, black label angus, with just the right balance of fat, which gives the meat unbeatable tenderness and taste. And last, but by no means least, the way in which the meat is cooked over a barbeque. This question is for Cachy. I think that as far as our readers are concerned there is a secret passed on from generation to generation amongst Argentine men, which is “how to do a barbeque”. Give us a few tips. The fire is one of the big secrets, we use embers without flame. Ideally you must use mature wood, do not touch the fire until the branches are burning properly, do not cook over live flame, you must let the wood burn and wait until the charcoal breaks up and is red-hot, and shortly it gets covered with a whitish ash. This is the best moment to cook, and don’t turn the meat over from one side to the other, the meat will tell you when it is done, only when you see the blood come up, you turn it over. As for salt, quite a lot, but not too much, the meat will tell you. What goes with the meat in Argentine is a classic combination. What garnish is best for a good steak? A good tomato and onion salad with chips, a classic, as well as the salad of cold boiled potatoes, hardboiled egg with chives with a white wine and olive oil dressing. And if we are talking about a family meal, the ideal way to accompany a good barbeque with your loved ones, is with a good glass of Malbec wine in your hand.
One of the things that we notice in your restaurant is the atmosphere that you have achieved, this feeling of being on a ranch... things that are so typical of the country, like polo or personal memories. Who designed the décor? To be honest, we did it ourselves. In La Rosa you will find family effects brought in from our parents’ homes, gifts from friends from Argentina. All have great sentimental value. We wanted to create a warm and personal atmosphere. Another theme which we, as clients, point out, is that we do not feel like we are customers, but part of your family. We welcome the customer in a family environment, with personal attention and careful detail. Diego Gutiérrez, our son, is the restaurant’s front of house, so to speak, and, without a doubt, this is the secret of this family restaurant’s seven years of success, where we pamper our customers, with great pleasure! We cannot talk about Argentina without thinking of a good barbeque and of course, the Tango. You have both in your restaurant. What do your customers think of this sensual dance, with its Negro roots mixed with the influences of various immigrant nationalities who arrived in our country at the end of the nineteenth century? They love our Tango nights, they join in with enthusiasm and surprise, they admire the expressive quality and the passion of our dancers. We have had the pleasure of enjoying the great performances of the professional dancers of the CIA Real Danza in our shows. It is wonderful to see how our customers, particularly young children, are spellbound when Esther & Upa dance. How long have Cachy and Rosa been living in Spain, and what do you like most in this country in general, and in the Costa del Sol in particular? In my case (Cachy) I arrived for a fortnight’s holiday 35 years ago. That says it all – I never left. Here in the Costa del Sol we love the climate, the light, the landscape, the mix of cultures and, of course, its cosmopolitan soul.

Ginés Serrán by María Elena Paganini
Gines, you are considered as one of the most important contemporary artist in the world, exhibiting your work in the five continents. At this moment, you are concentrated in Asia, tell us about your most recent projects? I’m working on a few projects in Asia and the Middle East. In China, I’m sculpting a series of bronzes sculptures consigned by Megaworld. This company owns Group Fundador, Terry, Harvey’s and Emperador. I’m making now an “Emperador” with a Quadriga of horses and lions; with the pedestal, it would be 20m high. The Chinese government asked me to create the largest Bubbha in the world (138m high), which I will start in 2018. In Philippines, I will be making the “Jesus of Peace,” a bronze of 60m of height, two times the size of the Christ of Brazil. I just finished “Calypso,” 6 m, the nymph who according to the legend lived in Ceuta, in the Strait of Gibraltar. I’m also preparing exhibitions of my paintings in Tokyo, at the Yoshii gallery (October), and a retrospective in Miami at Nina Torres Fine Art (December).
These fantastic sculptures which illustrates these pages, where are they going to be exhibited? In China, Philippines, Dubai, United States and Spain. You love to sculpt, are your anthropological studies explain the love that you profess to the human body as an integral whole and the importance you give to themes related to culture...? It does... I graduated in Anthropology in New York university and definitely anthropology has been a constant influence in my art work. From your large sculptures of “Hercules” to the works you are making now which would be the largest in the world, what it implies to create sculptures of this scale? It is a challenge. We are only few artists who are able to work in sculptures of such a large scale. My two Hercules are considered today the largest

sculptures of classic mythology in the world. My Jesus and the Buddha will be the largest sculptures ever made in history. I have to work with many assistants, architects and engineers. These works converted in bronze will last thousands of years. Your work is in many museums, from the Guggenheim of New York to well known private collections, your talent is recognized worldwide, but there is something else that this great artist need to accomplish? Last year we celebrated in Shanghai 225 exhibitions in 22 countries but I can tell you that I always feel like at the beginning, always learning ..., like a child. I have made Art my life and I’m completely dedicated to it, it is a way of life... There is
another project that I intend to do which probably would be the most ambitious in my career, but I will tell you about it next year... To finish this interview, I would like to know what would be your advise to young people, in this case young artists? To believe in yourself..., to be yourself…,to express your life…, to create with no fear…, to work very hard to make out of your dreams a reality… I’m obsessed with Peace ..., I don’t believe in geographical borders.... I think that we are a Big Family (humans, animals, plants ...), sharing the same air and water in this planet. COLP ONE “I want to reach a stage where people can appreciate art wherever they see it, even in a surprising context” Although I exhibit in galleries, I consider myself a graffiti artist. My tools are stencils and sprays, and I am inspired by the adrenalin I feel when I paint. I like to play in my head with the design I am about to create, and then project some of my eclectic personality onto each panel or wall I work with. I love the challenge that is inherent to my art, and I love the reaction from the public that you can get when they see art on the street.
I know where I am and where I want to go – I want to reach a stage where people can appreciate art wherever they see it, even in a surprising context. My emotions are key to everything I do – balancing the chaos of life with the need to control. My work reflects the integrity and honesty that I believe to be so essential to art.

Javier Infantes “PERHAPS WE ARE WHAT WE REMEMBER. MEMORIES MAKE US WHO WE ARE” by María Elena Paganini
Javier, you are one of those painters who have succeeded in carving yourself a great path in the difficult world of art in New York City. How much is down to effort, to creativity, to technique and to just plain luck? It all starts by preparing yourself properly in the beginning and feeling the need to constantly create and innovate inside your head. For this I chose two universities in two very different cities in Spain, but it is no more than just the beginning. You have to continue preparing yourself every day. The life of an artist is a career of great depth, not of speed. The effort and sacrifice that an artist goes through are enormous in any part of the world, but even more so in New York, even more so if you are a foreigner and you have to adapt to a new country where culture, society, thought processes and languages are different. You cannot allow yourself to fail at any single moment, and if you do, you have to get up again immediately and continue with even more energy if possible. You make the sacrifice of being far away from your family and losing all those moments with them in order to follow a vocation and a dream. Terribly hard. Only those who go through this know what it is like. It is not even worth thinking about. On the other hand, creativity, experimentation and technique are also crucial, you have to continually cultivate them in order to help yourself to bring an idea to its physical form. Luck is always welcome, but you have to look for it, provoke it, and even deserve it. Luck can be important when it comes to meeting someone influential, or making contacts, but it does not influence the quality of your painting, this has to be YOUR work, for better or for worse, this depends upon your preparation, your knowledge and your work. It is thanks to all this effort that my work has been appreciated and acquired in various countries in Europe as well as certain cities in the United States. It is a great honour for me that one of my most distinguished clients in New York (apart from being the Sponsor of my Artist’s visa in the US, and my friend), is Mr. Frucher, Vice Chairman of the NASDAQ OMX Group. You are not an improviser, you have studied a great deal and in great Spanish universities such as that of Seville and of Madrid, but what is it that makes an expert in the world of art place your work up at the same level as names such as Andy Warhol, Murakami or Keith Haring, amongst others? It was a great honour to be chosen to exhibit my work in the impressive Waterfall Mansion, amongst other well-known artists of contemporary art in the
last decades and on a world-wide level. The exhibition took place during the Festival of Art “FEEL LIFE”, organized by Kate Shin. It was a great reward for all the work I had done during so many years. Thanks to this exhibition I appeared in a fantastic article in the top art magazine in Spain, “Descubrir el Arte”, written by Manuel Rodriguez Pardo. Before being chosen to exhibit in the Waterfall Mansion, I had done two separate exhibitions in Manhattan, one in Chelsea and the other in Midtown. I had also participated in a collective exposition in the Lower East Side. It was a progressive and logical development. Recently I was selected once again to take part in international collective expositions in places such as Woodward Gallery in Lower East Side and Caelum Gallery organized by Art Takes Manhattan in Chelsea. What influence has this beautiful city on the Costa del Sol, Estepona, had on you and on your creative spirit? The light of the Mediterranean Sea stays with you forever. I was very lucky to have been born near the sea, with so much history and culture. The blues of the crystalline sea and its brilliant reflections. The sky, the clean and transparent air – I would say that all these have had a never ending influence on my work. As well as all the energy, the joy and the warmth that radiates from this land. You have succeeded in becoming a prophet in your land now that the Town Hall of Estepona has asked you to paint a large mural in the city centre? Yes, it was a mural commissioned by the Association of Town Halls of the Costa del Sol and the Town Hall of Estepona. I am very grateful to the people of my home town for having asked for one of my works for their city. It makes you feel very good when they still remember you. I am always bringing the name of Estepona with me wherever I go, I try to make it known internationally and I always include it by my name in any exposition that I may take part in or in any magazine that I appear in. It was a pleasure to come all the way from New York in order to paint this mural, and at the same time to hold an individual exhibition commissioned by Conchi Álvarez in the Stoa Gallery of Estepona a year earlier.

You are an excellent portrait painter, however you have changed the direction of your work in New York, for example, to epoxy resin. Why do you like working with a material that is so seldom used by other artists? In my case I don’t find great differences between figurative and the abstract art. I am a painter who loves painting above all, in its very essence. For me painting is the need of the human being to leave his prints behind for posterity, amongst other things. It has been so ever since the first bison appeared in cave paintings. Painting has not changed much since then. Therefore I love to leave my print behind for posterity on canvas; if this footprint, this memory is recorded in a portrait or an abstract image, well so be it, it doesn’t matter, it is circumstantial. I deal with painting in its entirety, all of it. I do not separate anything, I learn from everything. Epoxy resin can fit perfectly into the idea, the concept. I work with the concept of memory and epoxy resin serves as our memories, emotions, sentiments, which all form a fundamental part of the human make up when it comes to creating our identities. An artist’s spirit is full of emotions and conflicts, what does Javier Infantes’ spirit contain? For me painting is the food of the spirit. It is also its medicine. Painting becomes a medicine that helps to cure many illnesses and helps us to live. Furthermore, I see the creative process as a vehicle for knowledge, a form of investigation. A way in which
we can submerge ourselves into what it is to be a human being, and his identity. Memory is fundamental. I believe that we are what we remember, memories are what make us what we are. They shape our identity. Epoxy resin helps me to speak of time and its memories. It acts as a transparent container where certain elements exist, which represent, for example, our memories and emotions, and which define our identity; these remain caught up in the epoxy, remaining unchangeable forever. This is the pursuit of Utopia, the fight to remain eternal with fragile memories. To a certain extent it means going against nature. Painting allows you to do these things. You are going to stay for some months in Europe but still remain in contact with your American galleries and collectors. At the moment you have a very interesting project in the pipeline which involves introducing art education as an essential part of the human’s educational process. As I said before, painting, the Arts, feed the spirit and help us to get to know ourselves, amongst many other functions. Therefore I believe that learning all these things have a tremendous importance in education thanks to the deep effects of visual language. And this can be done by providing specific workshops and courses to those who are interested, whether it be in the United States or in Europe. e all love Bulgari, we all dream of possessing something with the iconic name of Italian excellence. A legacy that is more than 130 years old, with a timeless sense of exquisite beauty. But lately Bulgari has made giant steps in the world of watchmaking. Guido Terreni was the craftsman when it came to reinterpreting the classics and converting them into new icons. Bulgari has always been recognized for its jewelry because it is what it IS. His Serpenti collection is my great weakness. The serpent, the symbol of seduction which dates back from Greek-Roman mythology, but is also associated with the Egyptian Pharaohs and the beautiful Cleopatra, takes us on an irresistible journey through history. This year I met this talented Panamanian artist in New York. It was thanks to my friend Judy Sahagian. We were looking at some of his works and talking about the fantastic Interior Design and Lifestyle Exhibition Maison & Objet Americas. This famous Parisian exhibition took place for the second year running in the city of Miami Beach where this fantastic photographer has become recognized as one of the new “rising talents” Javier Gómez has photographed urban architecture in a surreal and abstract way so that it becomes universal. After decades of experience as a patron of the arts, Bulgari commissioned Gomez to create 13 images, “The light catcher”. How do we feel when we are in front of a work of art? We enter the cathedral of Monza to find out. The 6th century is coming to an end, and we are at Queen Teodolina’s side, the wife of King Atari of Longobardi, and later Agilulfo. We owe her everything that surrounds us: one of the most important ecclesiastical structures in Italy. The centuries pass, and we witness various transformations. In the 14th century, precious details get added on – among others, the altar and the pulpit, symbols of the imperial coronations related to Visconti’s family. The basilica that we admire today took form in the 15th century, at the hands of the Zavattari painters. Thanks to a complicated restoration implemented by Fondazione Gaiani, the paintings narrating Teodolinda’s story through forty -five everyday scenes come back to life. The individual expressions of the eight hundred characters of the tale are now before our eyes. A visual Kaleidoscope translated by a detail, the sixteen radu rose – windows, which reveal the profound connection between all these works: brightness and colour. We’re overcome by surprise, emotions, enchantment. Art gives us back a piece of reality to unleash emotional earthquakes. All because of a single element that is shared between the place, the works and the photographer: light.

How has the Santa Maria Polo Club reacted to such an award? With great pride! To be placed in the Grand Slam category is a clear recognition, not only of the great competition that we have developed, but also of the excellence of our polo fields and our installations. Santa Maria Polo Club is without doubt the best polo club in the world, since none other is able to host a month long competition with so many competing teams. Do you think we are approaching an era when the Spanish are getting a clearer understanding of the game of polo itself, and do not just judge it by its lifestyle? There is no doubt that each time we have more and more visitors. Last year we counted more than 88,000 and many of them are becoming more and more keen on this sport – we notice this when the stands are full of spectators who do not leave until the game is well and truly over. This year we do not just have the winning hand, we have the best FULL HOUSE in our hand and this will ensure a great battle between the teams to win their place on the podium. Apart from the Magnificent Five, other stars of the polo world will take part in the show, such as Eduardo Novillo Astrada, Alejo Taranco, or Facundo Sola. This will be the 45th International Polo Tournament; what news, other than sports news, can the Club offer us for this year? The magnificent installations of the Santa Maria Polo Club in Sotogrande, which are situated in the countryside surrounded by 4 polo fields and are only 30 minutes away from places like Marbella, Gibraltar, or 15 minutes from Estepona, provide new opportunities for visitors to enjoy the afternoons and evenings to the full. The sport of polo is considered to be a very masculine one. How did you get involved? I was spending some time in Argentina and later in Palm Beach when I first got invited to stick & ball on a polo pony. Even though I loved the experience, I did hesitate to get involved in such a masculine sport and therefor it wasn’t till some years later when I started to play polo. Are women welcomed and accepted in a polo team? Polo is a team sport, and in order to be accepted you have to try your best to support your team out on the polo field, then you will always be welcomed, regardless if you are a man or a woman! There aren’t many women playing polo in Spain or abroad, probably due to the rough nature of the sport? Up to this day, there aren’t too many women playing polo, probably because it is considered a fairly rough and dangerous sport. The rather few women that play polo do so in mixed teams, though lately ladies teams and tournaments are rapidly gaining popularity. The sport of polo seams to be surrounded by a lot of glamour, but the reality of a Polista looks quite different, with hours of training, all the preparation before every tournament, the organization of putting a team together etc. What is your benefit of all this? The benefit without a doubt, are those moments that you live on a polo field, difficult to put into words - the adrenalin, the agile fast horses, playing in a team and so much more that is hard to describe! If playing polo already needs a lot of preparation and organization, then organizing a event such as “TARIFA Beach Polo” must be even more demanding? After playing polo for quite some years now, and being a ‘gran aficionada’ of the sport of polo on and off the field, I found it a natural way of evolution to transmit my passion for polo to my friends, sponsors and aficionados. Beach polo is a fairly
new and fresh interpretation of the sport, which has been very well received among everyone participating. Adapting a sport that normally is played on large grass fields, to the beaches of Tarifa and next to the Atlantic Sea, must have been quite a challenge? Yes, indeed! Tarifa was my first choice of location, offering the perfect sand conditions for ambitious beach polo. Though the logistics of organizing a polo tournament so close to the sea, is more complex, the outcome is very rewarding, as the proximity of being at short range to the action on a smaller polo field on sand, creates a great atmosphere and ambience for players and audience, making beach polo very popular around the globe. Possibly the famous lifestyle around polo makes the sport so attractive for the audience. What is your approach and success that people keep coming back for more beach polo? “TARIFA Beach Polo” is going into its third edition in 2016 and will go on growing. The success of the event is that polo players as well as supporters and sponsors are positively attracted by this more casual and more beach ambience orientated version of the sport, yet without losing the touch of glamour surrounding every polo event. What is the unique point of your beach polo event ? The high level of polo players and patrons participating, the great ambience on and off the field, the established ‘ After Polo Party’ and the ‘Asado de clausura’ with chill out atmosphere till late sunset and the spectacular Rif mountains of Africa as the perfect visual backdrop! Tell me about your new venture of beach polo? I am currently working on a new project that means a lot to me, the first luxurious event of “Marbella Beach Polo” bringing world class polo to the shores of the international city of Marbella in the very near future! Edmond Fokker by María Elena Paganini
I have always believed that a person’s artistic temperament starts with his ancestors, and in his genes. What did you inherit from your family? My family’s “DNA” produced mostly lawyers, diplomats, scientists, entrepreners; Anthony Fokker (Fokker-airplanes), senators, MP’s and a minister. I have mixed blood, Dutch, English, Irish, Scottish, French and German. My English grandmother was a pianist, my father played violin and piano and my mother sang. The “DNA-combination” of entrepreneurship, diplomacy and languages are good for the music-business. But the most important is to understand what your public really wants. My approach to music is different from standard classical musicians or pop-artists, it forms a bridge between these worlds. I mix styles to reach different people and wider age-groups. The love for people comes first because my music is for them! How important is technique, and how important is creativity and personality when it comes to playing the violin? For a terribly difficult instrument like the violin technique is essential. The paradox of violin-playing is the fact that understanding and mastering the instrument is a mathematical affair, touching someone’s heart is an emotional affair. Violin-technique is harder than any other instrument, talent is only 5%, the other 95% is work. At least 3-5 hours a day if you want to improve! And then there are the elements of the correct style for the period and taste (which you have or you don’t). So, one has to be technically able to play the work, respect the style and then you have to understand the bandwidth left to leave a personal mark. Only when these three conditions are met with integrity you can add the personal touch, show your personality and touch the hearts of your public. How important is the instrument itself for a violinist? I know that at the moment you are playing one of the best, which was Paganini’s favorite. The instrument will transform your ideas to music. The better the instrument the more colours it has to offer if you have the technique to draw this from the violin. There is also psychological side to a top-instrument. The first time I played a Stradivarius I realized which great violinists played this precious instrument before me, at the various courts of Kings and Emperors and the famous Concert halls. There are still many great instruments left. Stradivarius still has about 600 registered instruments and Guarneri around 190. Their tonal characteristics are different. Stradivarius has a rounder, full-bodied, rich sound where Guarneri has a slightly more nasal, deep, almost gipsy-virtuoso sound. To give you an insight on today’s prices: for a Stradivarius you pay between 4 -12 million Euro and for a Guarneri del Gesu between 9-14 million! These top-instruments are incredible investments as they have an annual value-increase between 7- sometimes 14%! Paganini played the beautiful Guarneri del Gesu “Canone” nick-named after its rich and tremendous tone. I am totally in love with my Guarneri. I feel fortunate and smile every day when I open my violin-case and carefully pick it up to play.
When we first met we quickly recognized your admiration for Niccolo Paganini, who is one of my ancestors. What is it that we note most about this violinist, who seems to have made a pact with the Devil? In the history of violin-playing we speak of before and after Paganini. His inventions changed everything, his creativity was tremendous. Nicollo Paganini clearly was the most famous violinist ever. His first work, age 16 were the 24 capriccio’s that are still today very difficult. Many myths surrounded him, his so-called pact with the devil being the best known-one. But the historical facts of his life are sufficiently interesting. His concert-tours to Paris, and London were unique events where women fainted, ticket-prices rose to the highest amounts ever and everybody travelled from far to hear him. His popularity can be compared with the Beatles in the sixties or to later rock-stars and super-DJ’s. He inspired many artists, composers and fellow virtuosi. Liszt was crazy about Paganini, so was Rossini who stated that he cried when he heard him play. For me Paganini embodies the romantic, slightly mysterious figure who composed in the operatic “belcanto-style” where a single but touching melody was surrounded by dazzling fireworks and violinistic pyro-technics to impress and to transport you to another time to make you believe that wonders exist. I played Pagannini-pieces for many different people and everyone today immediately understands why Paganini is still cool. What is your favourite composition? The compositions I love are so well written that they are capable of transporting you to other times and places. I start with Bach. I love the “cathedral” of his solo-works from the second partita; the Chaconne. Lonely in its quality, its magnitude, its structure and beauty is unsurpassed. I love the happy super-talent Mozart and also the violinconcerto of Beethoven concerto and Brahms. But my heart starts beating a little faster when we come to the romantic era. I am a lost romantic although happy with many luxuries of the modern age. The violin-concerti by Bruch, Mendelsohn and Tchaikowski are brilliant. The more virtuoso concerti by Wieniawski and Paganini are simply thrilling and totally addictive. I like to play many short beautiful pieces that people recognize, from Vivaldi’s Four Seasons to gipsy-music to film-music like Morricone and John Williams with his touchingly beautiful “Schindlers List”. So all together a wide-ranging selection focused on quality, story-telling and what touches my heart. You support several charities with your music, for example a Gala in the Netherlands when they paid 30,000 Euros to listen to you and which you then donated to charity. Is this a part of the soul or the heart of an artist, to support charitable causes? The heart of an artist has empathy and compassion! Three times a year I play for a charity of my choice to support their good work. I strongly believe that our talents come with the responsibility to work hard and let people enjoy it. By playing for a charity you can reach people that need specific medical treatment or

people that cannot help themselves because of the situation their countries are in. Talent carries the responsibility to regularly share the benefit. Last Christmas, I offered free concerts for the international troops in Afghanistan. Music was much needed for the military men and women doing great work in a highly dangerous environment. Long-hidden emotions were expressed on that special Christmas-day in Masar-e-Sharif. An unforgettable experience! Giving back is not an obligation, I consider it a privilege. What I do consider an obligation is to pass on the flame, a totally new approach to teaching and performing, to the younger generation; An academy for young musicians where they receive the best tuition from classical to modern violin-playing. This does not yet exist but I will realize this dream. You have been invited to perform in concerts in the most wonderful places in the world. Please tell us, who are lovers of good music, what your plans are for this year. Where can we come to see you? There are so many beautiful places to play. One of my favourite hidden treasure Concert-halls is in the home of a friend Alexander Prince zu Schaumburg-Lippe, Bückeburg castle, Germany. It is the most amazing private concert-hall with great acoustics. For me music-lovers have a heart and they know how to open it from time to time. Good music is as wide-ranging as music itself as long as it is authentic, honest and it speaks to you.
My plans for this year are wild and diverse. All over the planet and with different types of music for different publics. In the summer I will be playing the Bruch violinconcerto and improvisations with a DJ on a beach in the sun (not with Guarneri)! In September I am honored by the invitation to play for HH Pope Frances in the Vatican. In October I have various concerts in Europe including Russia. A very special event this year is a concert for the President of Argentina in His Palace in Buenos Aires in November. Christmas is still a surprise! It will be a concert in Amsterdam, Ziggo-dome, 5000 people, totally cross-over, a mix of styles, with great international artists. This year I want to start with this all-round academy for young talents to become ‘New-Violinists’ able to play Paganini with orchestra and free improvisations with a cool DJ. This project has to start now. Prof Ervis Gega is the concertmaster of the Klassische Philharmonie Bonn, great violinist and a dear friend with whom I work together on founding the academy and a summer festival. Focus, humour and passion for people and music today with respect for the classics and an open mind to the future! When we talk about one of the best recording studios in the world, we talk about the quality of the equipment and of the sound engineers, but I suppose that for your artists it also becomes home, a place where you take your time to compose the latest cords and make your sound mixes. Quite so, in PKO our objective is to offer artists the opportunity to create a quality product in agreeable surroundings with the best of the best. Our aim is to make the client feel comfortable whilst he builds what will become the realisation of his dreams, which is a very delicate matter. And we encourage him in all this with our experience, our savoir faire and our good will, we provide everything we have in our power to help the client. Apart from our professionalism, it is important to note that our Studio is situated in a unique environment, a quiet residential area. As far as technology goes, at PKO we have the best brands in the professional audio market (GML, Manley, Solid State Logic, API…), you cannot find system consoles with the quality ours have in this country (SSL 9072 J Series, Neve VR48, Legendary Neve 8014..). Tell me about your engineers, I know that you have a Grammy or two. What makes PKO so special, apart from its installations and technology, is its personnel. It is no good having great equipment if you don’t have someone who knows how to make full use of it. Our technical engineer is Caco Rejogo, a Galician who is now living in Madrid, who, after having worked in various recording studios, arrived at the PKO STUDIOS in 2006, brought in by José Ramón Flórez to work in his production studio, and he is now the chief engineer of the studio. Since then and up till now he has worked with producers such as Red One, Peter Walsh, Cheche Alara, Javier Limón, Jacobo Calderón, amongst others. In B.S.O. such as Enredados and Disney’s Frozen. National and international artist have visited your fantastic installations, from Plácido Domingo to Lady Gaga. Can you tell me whether any of these geniuses have any particular mania? As I already said when I answered the last question, our list of clients is very long, and we try to treat all clients the same, without exception. And yes, it is true, that the great stars do have their particular requirements. For example, Lady Gaga came with her personal entourage and brought her own chef, but although she may seem to be a very eccentric artist her behavior and requirements were quite normal. And this seems to be the general attitude, the artists come to work and to feel at ease, and they don’t have too many manias. But then, yes, some of them do, for example Malú, she is very superstitious about the colour yellow and in one of our recordings we had to remove everything of this colour, including cables and the technician’s T-shirts, which just happened to be yellow on that day.
Do you specialize in any specific type of recording? At PKO we record, mix and master all types of music, and we can guarantee that, whatever it is, the result will be 10 out of 10. We have recorded Flamenco, pop, rock, jazz, classical music, electronic music, etc. any type and genre of music that you may think of has been recorded in our studio. Also as far as musical variety is concerned, and groups, we have recorded everything from a single voice to a Big Band live. We know that your installations are considered unique in Europe, but what is the daily routine like for an artist who comes to record at PKO? Well, from the moment he enters our establishment, we do everything we can to make him feel at home. We look after every detail, from personal attention to the last technical detail. The artist has total freedom to be able to record, listen to the mixes, create and develop his dreams. What is the difference for an artist when he chooses this particular studio? very summer the richest in Marbella support attending the annual gala. It is surprising that a disease so badly seen socially, it is precisely in Marbella (where seems that everybody surrenders to the frivolity of consumerism), where people spend 300 euros per person to help the Princess Marie Louise of Prussia (cousin of the Queen Doña Sofia of Spain), President of Honor of Concordia, to maintain a day Center for patients and families of this disease in San Pedro de Alcántara. The Concordia Anti- AIDS Association starts in 1994. Its vocation is to help the growing need of those people affected by HIV/AIDS. The people that due to different reasons need specialized services.
This Association is a non-profit, private (non-governmental) organization which was set up in 1994 to look after the urgent needs of a group of people connected with HIV/AIDS who require special care and services. In April 1997, with the aim of meeting the needs of this category, Concordia opened its Day Centre in San Pedro de Alcántara. The Centre’s mission is to carry out a programme of informative and preventive advice campaigns specially designed to break the advance of HIV infection, and to ensure the comprehensive care of AIDS patients and those infected by HIV, their families and contacts.

He is the best chef in the world, according to the prestigious English magazine “Restaurant” which places the restaurant Celler Can Roca on number one position and who, according to the experts, achieves no less than perfection. An Oscar in the world of gastronomy. What is it like being the “alma master” of one of the best restaurants in the world? How much is responsibility, and how much is happiness? A mixture of both, so even though at times it is my turn to be the star, this restaurant has several people in the team, especially my brothers, Jordi who is in charge of the desserts and Josep who is in charge of the front of house and the wines. So I must say that I share the honour of this award with a team that has been working together for many years, and this provides me with support and tranquility. Those who know these three brothers note your humbleness, your simplicity. To what extent do you owe this to your parents? Of course they have a lot to do with this! The way we started, the way we were brought up, the values and beliefs that we have inherited. Effort, hard work, generosity, being hospitable, being true in everything we do or everything we say, it seems obvious, but in the end it is the most important. The role in society of the chef has changed a lot and this accolade gives us the chance to spread the news, but we must do this responsibly. In Spain there are many chefs who are very respectful and who are also very modest. What remains of the restaurant that your parents founded in Celler Can Roca? We still have the memories of the tastes, the recipes, everything that they taught us, but above all we have kept the idea of sharing, of working, of keeping our feet
firmly on the ground, and when success comes, we need to know how to deal with it, how to accord things the importance that they really have and to continue to work with the same enthusiasm, as though nothing at all has happened. I have always been impressed by the amount of excellent chefs that Cataluña produces, always in the best places in the world! What do they get to eat over there? This is changing, things are levelling out, there are great chefs in Andalusia, Valencia, Galicia, Asturias, Extremadura, but perhaps what has happened here, as well as in the Basque country, is its closeness to France. We were easily able to go and look at what happened with the great chefs and to learn, also our clients who would visit France would come back to our part of the world having become more demanding and that would force us to improve on our own work, and we would accept the challenge. What is traditional Catalan cuisine, what are its aromas, its tastes? It tastes of lots of sauté, or stir frying, onions fried until they are golden brown, ground and minced almonds, garlic, saffron, spicy red nora pepper and parsley….then you have a cuisine that plays with sweet and sour, juggles meat and fruit, blends surf and turf. It is very open, very diverse and open to creativity. It was always very daring - if you take a book from the 18th century you will find dishes with combinations that can be considered totally contemporary in the way they are made up.

What does Joan Roca and his family eat on a normal day? At lunch time we all go to my mother’s restaurant, and in the evening I normally make dinner at home, something simple, healthy and nourishing that doesn’t take long to prepare, so that I can spend time with my family. Varied cuisine so that my children can experience as many tastes as possible, and, of course, the meals must be balanced. It is important that you enjoy eating and, whenever possible, enjoy eating healthily. What would a food wizard like you say to a young person who wants to become a chef ? I would say that it is a wonderful career, it brings a very quick return on your efforts since you can look at your customer’s face, and if you have cooked with love they will thank you for it, and, above all I would say look for happiness and do not be obsessed with success. The only important thing is to be happy! Just as much in a simple restaurant with a menu like my mother’s or in one like mine. CARPACCIO OF BUTTERFISH (Restaurante Trocadero Arena)
Serves 3 – 4 300 gr Butterfish 25 gr Tuna Furikake 10 Piparra peppers (similar to chili peppers) Juice of 2 Limes 15 gr Olive Oil 5 gr rice vinegar 1 dessertspoon Mayonnaise
Cut the Butterfish very fine whilst it is still half frozen to avoid it breaking up, and spread over a plate. Mix the juice of the limes with the mayonnaise. Mix the olive oil and vinegar to make vinaigrette. Slice the piparra peppers finely to create “circles”.
To make up: Spread the Carpaccio on a plate and season firstly with the vinaigrette, then sprinkle the pepper circles and then, using a spoon, coat with the lime mayonnaise. Finally sprinkle the furikake evenly over the rest of the ingredients.
SEA BASS WITH NOODLES & BLACK TRUFFLE SAUCE (Rest. Albert & Simon) Serves 4 1 Sea Bass approx. 1.50 kilos ½ kilo Fresh Noodles 40 gr. Melanosporum truffles (black truffles) ½ litre Cream 1 cup White Wine 2 Shallots 1 Leek 2 Mushrooms Salt and pepper
Ask the fishmonger to clean the Sea Bass, remove the scales and fillet it without removing the skin, leaving the head, very clean, which will be used to make a stock. In order to make the stock, place the Sea Bass’ cleaned head, the sliced shallots and the mushrooms in a saucepan. Add the white wine, salt and pepper and cover with a bit of water. Bring to the boil, allow to cook for 20 minutes, and pass through a sieve. In the meantime make 4 good portions from the 2 Sea Bass fillets and fry in a frying pan with a bit of extra virgin olive oil, firstly on the skin side, and then on the other side, about 2 minutes each side. Place the 4 slices of fish
in an oven tray and pre-heat the oven to 200º C. The Sauce: Bring the stock to the boil and reduce by half with the cream, salt and pepper. Once reduced, grate the black truffle and cover to allow it to diffuse during 15 minutes. In the meantime cook the noodles to “al dente” and add them to the sauce. Place the oven tray with the Sea Bass fillets in the oven for 5 minutes. Serve the noodles with the truffle sauce and place the fish fillets on top. Serve with a garnish of broccoli and sauté green asparagus.

GNOCCHI (Restaurante Da Bruno)
25g Butter 1 liter of Milk 250g Semolina 2 Egg Yolks lightly beaten 80g Grated Parmesan Cheese 100g Diced Cooked Ham A bit of salt
A lovely dish which can be made in many different ways and can be accompanied by many different sauces. This particular recipe is Gnocchi with Semolina and Ham, and I am sure you will love it. The recipe is easy. First of all you pre-heat the oven at 200ºC and grease a clay dish with butter. In the meantime bring the milk to boiling point and add a pinch of salt. Add the semolina, stirring all the time, and cook over a low fire, stirring constantly, for 10 minutes.
Remove the mixture from the fire, allow the milk to cool a bit and then add the egg yolks, 50g of the Parmesan cheese and the ham. Shape the gnocchi, slightly flattening them slightly, and place them in the greased clay dish, and sprinkle with the remains of the Parmesan cheese, and bake for 30 minutes until they are golden. And then you have some delicious gnocchi ready to enjoy with whichever sauce you prefer.
DULCE DE LECHE (Restaurante la Rosa)
1 litre full fat Milk. 400 gr Sugar. Half a Vanilla Pod or half a teaspoon of Vanilla Essence. A pinch of Bicarbonate of Soda dissolved in a few drops of Water.
A typical dish from Argentina which now is enjoyed world-wide. It takes only love and time! Homemade caramelized condensed milk ( for approx.. 400ml) Place the milk, sugar, vanilla and bicarbonate of soda in a bain marie (double saucepan). (Tip 1) Stir over medium heat until the sugar is dissolved. When the milk starts to boil, reduce the heat and allow to cook for two and a half hours stirring from time to time to avoid it sticking.
(Tip 2) You should end up with about half the original amount of liquid, but which by now should have taken on the colour of caramel. Once it has thickened, remove from heat and continue to stir for a few minutes whilst it cools down. Tip 1 – the Bicarbonate of Soda neutralizes the milk to stop it from coagulating, and it also helps to bring out the caramel colour due to the caramelisation of the sucrose. Tip 2 – To avoid the liquid from sticking during cooking, put some “drops of glass marble” in the bottom of the saucepan. hansaestates 57
