setting. During my tenure with Auberge, I led the renovation and the repositioning of the Mayflower Inn and Spa in CT through the Covid years, and our team achieved record years of financial results and accolades. In late 2021, I joined Delamar Hotels, a small boutique luxury brand nested in CT, which is uniquely vested in the state and local community with amazing owners and partners. The adventure has been great, and the team is one of the best and most passionate I have ever worked with. With over 25 years of senior management experience in the luxury hotel industry and having worked in the industry’s most influential global locations, I learned 3 major lessons in the hospitality industry:
PASSIONATE LEADERSHIP Some people are externally passionate about everything they do (in private life as well as work life), and some are more discreet. Either way, we must remind ourselves that we are in the “people business.” What differentiates a good GM from a great GM is having a genuine interest in caring for your guests and colleagues.
BALANCE Hospitality is indeed a demanding industry; our responsibility and workload can easily put us off balance in our lifestyle and health. I believe that as leaders, we must be committed to looking after ourselves so that we are in the best state of mind and body to manage the business. I love my job. I have been working in hospitality for almost 25 years now. I was 16 when I had my first job working at a bakery, and I started my days at 4 am. As a restaurant manager, I regularly finished days at 2 am. Each position has its own demands in terms of schedule and requirements. I have had the grand experience of working my way up from pastry to dishwashing to operational management, and it has all been enriching. Remember to take as good care of yourself as you do your guests, and you will find it much easier to bring passion and heart to every interaction. Yours Sincerely,

ast the marble entrance and a brief elevator journey to the second floor of the Delamar Greenwich Harbor hotel, you’ll find a sanctuary—otherwise known as the Greenwich Spa. Offering a selection of relaxing massages, nail, and esthetic services, a visit to
this full-service day spa is an invitation to exhale and embrace true relaxation. “When you walk into the spa, we try to hydrate you right away,” Delamar
Spa Director Georgette Culucundis Mallory says. “We bring you into a world where the focus is the beauty engendered through health.” When Mallory first moved to the area, Connecticut was ranked one of the wealthiest states in the nation and historic Greenwich a highly-desired town due to its beautiful waterfront views and proximity to the Empire State. At the time, a considerable number of local women regularly traveled to New York City for facial treatments, indicating a clear demand for a comparable offering within the community. Mallory, an ambitious entrepreneur, recognized the untapped potential in her husband’s flourishing hotel and saw the stagnant spa evolving into a world-class experience
31
“My Greenwich friends were going to get facials in New York City,” Mallory says. “I realized if we offered the same services at an equal or better quality and at an attractive price, we would ignite a business. But more than that, we would engage the community with the hotel in a way that the restaurant achieved, but the hotel had not. That’s what Charles and I want, a hotel that is used and loved by its community.” The Greenwich Spa now proudly showcases two of the globe’s premier skincare brands, Biologique Recherche and Valmont, a credit to Mallory’s commitment to high-quality skincare with proven effectiveness. Guided by her strategic vision and supported by a capable team, the Greenwich Spa has progressed from a few bookings per week to a highly sought-after oasis. It welcomes bookings from locals, the wider public, and valued Delamar guests—counting celebrities, politicians, and royalty among its esteemed clientele. “Our spa hosted a sweet sixteen party a few years ago,” Mallory says. “There were four girls and three treatment rooms, and the birthday girl was waiting in the relaxation room while her friends were getting treatments. Justin Bieber walked in, at the height of his career, and after learning that it was her birthday, invited her downstairs to the lobby to play songs for her.”
Mallory adds that, though they strive to respect their guests’ privacy, the Greenwich Spa does host many celebrities like Robin Williams who become regulars while they stay at the hotel. Although they may be offered more anonymity, all of the Delamar guests receive the same protocols.
32
“At the Greenwich Spa, we are able to develop personal relationships with all of our guests, help build loyalty to the brand, and play a role in what makes the Delamar experience so special,” Mallory
Greenwich Spa, whether dedicated locals or visitors from abroad, is one of the most gratifying aspects of her work. “I’m not at any one spa on a regular basis anymore,” Mallory says. “I

used to one over the other. SERUM, FACE, & EYES: My holy grail is the ELEVAI enfinity™ serum that replenishes with Exosomes. I use it every day, like P50, no matter what else I put on my face. On top of that, I alternate between Valmont's V-Firm Serum and BR serums. I'll always tap in a drop of Vamont’s V-Firm Eye cream with essence of bees gel above my lips and eyes. You feel it tighten and fill your wrinkles. Before I go to bed, I pat on the brand's l'Elixir des Glaciers. It smells divine. On colder or hotter days, I add Biologique's Serum Grand Millesime over my moisturizer to create a barrier between my skin and pollution. LIPS: I use Macrene Active’s High Performance Lip Filler, which has an important place in my purse, on my dresser, and in my medicine cabinet. SUNSCREEN: I apply sunscreen every day. If I’m swimming or hiking I use Neutrogena. If I’m just going out, I brush on ColorScience that also blots the shine. When I want a glow, I use their tinted SPF.
For the Face BIOLOGIQUE REMODELING FACE FACIAL This signature anti-aging facial will instantly rejuvenate, firm, tighten and lift your skin. This treatment uses the state-of-the-art bio electrotherapy Remodeling Face Machine, to tone, tighten and shape facial muscles attempting to prevent or procrastinate the need for more invasive treatments. Forty-six individual muscles will be stimulated to activate firming and lifting muscle memory. LUMINOSITY OF ICE Valmont’s brightening & radiance facial combines HP DNA with Zinc, creating an anti-aging and soothing facial. This treatment includes the legendary Valmont medical grade collagen face mask. The zinc and HP DNA noticeably improve skin luminosity. This facial is perfect for a special event, and a series of treatments imparts significant brightening. For the Body SLIMMING BODY CONTOUR Starting with gentle exfoliation, this treatment combines bio-reflex massage techniques with a unique complex formulated to tone and refine the epidermis. The treatment continues with a massage of essential oils and specific creams curated to your skin needs. Through increased blood circulation and elimination of toxins, cellulite will be reduced and the silhouette visibly slimmer.
MASKS: I Use Biologique's Masque Vivant while I soak in the tub. It’s a mud type mask that purifies skin. It makes the impurities rise to the surface. Sometimes after I wash it off, I mix different hydrating masks while I’m still in the bath or sometimes while I meditate—something my neurologist advised me to do every day—and the benefits of cleanliness and hydration, along with the mind cleanse are evident.

n the realm of luxury jewelry, one name stands out, embodying a rare fusion of uniqueness and wearability — Faye Kim Designs. The visionary behind the brand, Faye Kim, began her journey in the heart of New York City’s jewelry district as a graduate of the
Gemological Institute of America, where she then took roles at iconic establishments such as Tiffany & Co. and Bergdorf Goodman. Born out of a lifelong passion for beautiful jewelry and nurtured through the study of gemology, Faye Kim’s foray into owning her own brand was a natural evolution. One of the first things you read on the website of the custom fine
jewelry brand is “From sourcing quality stones, to sharing knowledge and expertise, Faye will answer questions, add valuable design advice, and walk you through the process to create your very special piece.” — a testament to Kim’s dedication to crafting one-of-a-kind designs for her clients. Reflecting on her approach to fine jewelry, Kim says “I want my pieces to resonate with their wearer, to become part of their whole design aesthetic and narrative.” Now celebrating its 20th year, Faye Kim Designs has become an integral part of Westport, Connecticut’s artistic landscape. In an industry where trends come and go, Kim has managed to stay ahead of the game, consistently delivering pieces that not only capture the trends of the time but also maintain the essence of her contemporary style. Fueled by a commitment to individuality and expert craftsmanship, Kim caters to clients with diverse tastes and budgets, offering a unique array of designs, including her exclusive signature collection crafted in 18k green gold — found solely in her Westport showroom and online. Her approach extends beyond mere aesthetics; it embraces sustainability, with recycled gold minimizing the environmental impact. All pieces are produced either at the showroom or by her team of local jewelers, maintaining a hands-on and local approach to production. This unique position allows Kim to create an intimate

and personalized experience for her clientele, a refreshing departure from the mass-produced offerings prevalent in the jewelry world. Extending beyond their signature gold, Faye Kim Designs continues to enrich their evolving collection with the Platinum Edit. This collection showcases a stunning array of matte platinum pieces, ranging from elegant signature platinum hoops to vibrant platinum rings adorned with tanzanite and pink tourmaline. Inspired by the interplay between brightness and subtlety, Kim shares her perspective on this collection; she tells me “I started experimenting with different finishes because it speaks to that subtle, quiet luxury,” she says, “There’s such a beautiful juxtaposition between the bright stone and the matte finish. The style is classic with just the right amount of edge. Refined and dynamic, Faye Kim’s design philosophy is a narrative woven from diverse threads. Her pieces, while meticulously crafted, often emerge from a spontaneous and organic process. With each and every ring, earring, or necklace, Kim prefers not to let forecasting get in the way of her creative flow. “Each piece holds a story, a journey reflected in its unique design,” she says, “Ultimately, I hope the wearer feels comfortable and special.” Of course, with her dynamic experiences as a busy mother of three, Kim understands that jewelry isn’t just about elegance for its wearer; it’s about comfort and everyday luxury. “The most important thing is that my pieces are wearable,” Kim affirms, “something with seamless transition.” With an illustrious 20-year journey, Faye Kim has not only carved a niche in Westport, Connecticut’s artistic landscape but has also left an indelible mark on the realm of luxury jewelry. As Faye Kim Designs continues to flourish, the brand remains a testament to the timeless fusion of uniqueness, wearability, and sustainable craftsmanship.

A Spirited Journey Born from the beloved Grove Street trattoria, Via Carota Craft Cocktails bottles the elegance and warmth of its storied past into six bar-caliber blends. Written by Katelyn Rutt

hen the pandemic struck the award-winning West Village eatery, it marked the beginning of a new era. For the brick-and-mortar based on an oldworld Italian lifestyle—serving as a sun-drenched
neighborhood place and a cozy haven for evening gatherings—an unforeseen future was yet another opportunity for growth. “To be completely honest, we always believed the Via Carota brand could become a household name, and ready-to-serve cocktails were the unexpected product to make that happen,” Via Carota Craft Cocktails CEO Bart Silvestro says. “The pandemic taught us consumers were seeking a quality at-home drinking experience previously limited to skilled mixologists.” Much like other local establishments, Via Carota began selling pre-batched cocktails for customers to savor in the comfort of their homes. Silvestro notes that the offering was not only embraced by Via Carota’s devoted customers but in high demand, a fact that served as the catalyst for the initial brand launch. “Our priority from the start was to make sure this felt authentic to the vision of the Via Carota founders, Rita Sodi, and Jody Williams, while still keeping the two brands separate,” Silvestro says. “To ensure we were bringing the warmth and elegance of the West Village establishment to people around the country, we started with the logo, designed by the talented Louise Fili.” The Via Carota Craft Cocktails team collaborated with the creative minds at Stranger & Stranger to design the brand structure, bottles, and labels. The goal was to present a timeless look that resonated with the restaurant’s core identity yet stood apart as a brand of its own. One of the key aspects of that process? The selection of spirits.

HOW DOES DINNER AT YOUR HOME AS A CHILD INFLUENCE YOUR COOKING TODAY? My first memories of food are all about my home and my mom. Mom is French, and she loves food. Her cooking is very diverse, so I learned a lot. I would walk into the house and try to guess what she was cooking by smelling the aroma and food. I guess you could say all of my cooking today comes from my childhood dinner table. It’s all about generous cooking, always good food, local as much as possible. I think the best food comes from village markets, local farms, and farm stands, but mostly, food tastes best when it is shared with special people, and it makes you feel like you are home.
HOW DID YOU GET TO THE GREENWICH HOSPITALITY GROUP? It’s been a journey for sure. Greenwich is very far from my home at La Chèvre d’Or, a beautiful place overlooking the Mediterranean Sea in France. I had such a strong connection to food because of my family upbringing, so I went to school and earned a Bachelor's in culinary arts and a Master's in hospitality management, and then I went to work everywhere I could: restaurants, hotels, casinos, etc, all over Europe. When I was only twenty three years old I was working in Geneva, Switzerland and a friend of mine was going to America to work and he asked me to come with him, and, of course, I said, “sure.” I soon left home and went to work at the Wheatleigh Hotel in Lenox,
We had the restaurant for seven years, then went to Ireland, where I was the Executive chef of two restaurants. But part of our plan was to come to the United States to be close to Valerie’s family. I came to the Artisan restaurant from Ireland. My wife and I wanted to be part of the culinary industry in America, so I put my resume online and started looking for a place to work that could be a good fit with my values and philosophies. Chef Frederic Kieffer found me. We had a few interviews over the phone and then finally met in person. I did a tasting menu for him and the owners in Greenwich, and the rest is history. Working with the group has been a pleasure, and I am fortunate to find a place that cares about the food we cook in our kitchens. I am very lucky.
WHAT ARE SOME OF THE GUIDING VALUES AND PRINCIPLES FOR YOUR KITCHEN AT THE ARTISAN IN WEST HARTFORD? Values and principles are very important to me. I think the kitchen is not only a place where you cook but a place to teach about food. Sustainability in the kitchen, minimum waste, and utilization of the whole product are all part of my value system. It’s very important to work in accordance with the season and availability. This is really primordial in my kitchen. But team effort, generosity, and sharing knowledge are just as important because when you focus on all of this, you learn to respect people and food together.

HEY CHEF, TELL ME WHAT YOUR TABLE LOOKS LIKE. If you come to my home and sit at my table, you will always see my lovely wife and my adorable four daughters. I do as many family dinners as we can during the week; we cook dinner together whenever I am not at work. I think this is very important for balance in life. I share all my knowledge with them, teaching them techniques and all about the ingredients. After a while, I don’t have to do anything; they do it all. They love to help, and my daughters like all kinds of food. They love fish and duck, and we make homemade pasta and pizza. We also like putting together lots of little bites and charcuterie for the table. Simple, fresh and good quality is the theme for our table. We always have fresh sea salt and breads, crudités and dips, and many diverse foods with lots of color. And olives. In France, we had olive trees in our garden, and we harvested the olives and made our own olive oil. I like to use natural and organic foods at my table. In France, organic and natural foods are easy to find. It is very important to know where your food comes from.

Written by Marci Moreau hen it comes to food, the best hospitality companies realize the significance of the role cuisine plays as part of the business philosophy. To the front runners in the hospitality world, food is so much more than just a commodity, and for these best and brightest, their culinary platform is the hallmark of company values and ideologies. In their kitchens, offices, and meeting rooms, you will hear the echos of respect, principles, and culinary integrity,
as much as you hear about the ingredients in their very best dishes. And for, the even more enlightened, Greenwich Hospitality Group, what reverberates even louder, are the names and voices of the people who lead, manage, and work, as part of the culinary team. Built on the belief, without people, food is not as powerful, the Greenwich Hospitality Group understands the culinary landscape of a company is shaped by the people who are part of their team. Dedicated and committed to their people, as much as the food they serve, the Greenwich Hospitality Group, realizes food is a reflection of culture, and history, and tradition. They embrace the cultural contributions of their people and value the diversity of skill sets that make up the culinary platform on which they operate. Simply put, the foundation of the Greenwich Hospitality Group is all about celebrating the tapestry of flavors from all cuisines and cultures in their hospitality family. Brought together in a gastronomical melting pot, their people, and their food tell a story, bringing a cultural fusion of flavors to our palates, an, in some way, magically transport us all around

ith a name that translates to “bringer of light” in Celtic and Gaelic, it’s no surprise that Ellen Carey—named one of the leading 100 women photographers worldwide by The Royal
Photographic Society of London—carries an inherent fascination for the complexities of light. “My birth name was a prescient gift from my parents,” Carey says. “Photography means ‘light drawing’ from the Greek, so destiny and fate are intertwined into my DNA along with the characteristics of the medium. Light with color informed my childhood, from the stained glass windows of my Catholic upbringing to a fascination with light and all its properties: shadow, outline, silhouette, and reflection.” In 2021, the Hartford photographer and art school professor received an invitation to showcase her cumulative work around the concept of light at the Delamar Hotel. Carey presented her “Lights, Camera, Ellen Carey” exhibition, the sixth installation from the New Britain Museum of American Art (NBMAA) at the Delamar.
78
79
“The Delamar Hotel offered a unique experience for me,” Carey says. “Very special in that I, too, love to travel. Here guests and visitors viewed my work, in situ, reminding them (and me) of the importance of travel ‘pictures’ in photography. This reference doubles in the importance of a hotel’s role at the dawn of photography up to the present, seen at the Delamar, now in the 21st century. Here photographers and the hotel guests, plus the public can interact. It was terrific.” The showcase delved into Carey’s extensive career collections, offering a glimpse into her threedecade-long exploration of photographic subjects and processes. As a part of the NBMAA’s 2020/20+ Women @ NBMAA initiative, Carey was featured alongside other innovative, female-identifying artists who have helped make significant contributions throughout American History.

Seamlessly Yours: A Delamar Wedding Celebration Written by Hannah Kimberlee Fox Photography by Jane La Motta

he morning of the wedding had been going wonderfully. Floe Dean had her hair carefully coiffed, makeup applied, and had been
settled on the bathroom floor with her mother and sister sipping champagne in the bridal suite. It was the perfect sendoff – they reminisced over heartfelt memories of Flo’s late grandmother with the wish she could join them. She was preparing to meet her betrothed, Sebastian Cummings, at the end of the aisle. The time came to put on her bridal gown, and to her dismay, she noticed a slight tear in one of the layers of the skirt. Luckily for her, she was in good hands. After being introduced by mutual friends, Floe and Sebastian became inseparable. Almost immediately after the news broke of their engagement, a date for the wedding at the Delamar was secured. I had the privilege of speaking to the bride’s mother, Jaime, to hear all about the experience.
103
The vision for the special day was clear to the team: it would be an unforgettable, non-stop celebration that would demand dancing and partying throughout the night. Erin Neagle, the Director of Catering, was up for the challenge. The original plan called for two bartenders, which was doubled to ensure that the wait for a fresh drink would be minimized – all to maximize the time guests would spend on the dance floor. The second priority was to guarantee that there would be continuous music. The band was to play from seven o’clock to midnight with not a break in between. Originally, the oyster bar was to be a sushi table, and the family decided to change the wine selection a week before the big day. Erin’s response? Consider it done. The ballroom was transformed with draped fabric carefully strewn along the perimeter, which was inspired by a venue Jaime spotted in an episode of Bravo’s Real Housewives of Miami. The night would conclude with an ode to Floe’s sweet tooth: a twelve-foot table covered in every candy you could imagine. That, in combination with fireside s’mores kits, would be the cherry on top of an unforgettable night.
104
On the morning of September 25th, 2021, they were met with crystal clear blue skies. Jaime recalls feeling the utmost confidence in the team. She mentioned that “having a Plan A, B, C, D, and even E if we needed” put her perfectly at ease, which was all she could have ever wanted. When the bride noticed the tear in her dress, it took but a call to the front desk to summon someone from housekeeping with an on-hand sewing kit to perfectly mend the tear. The quick action by the team at the Delamar eradicated any last-minute stress in the bridal suite. When I asked Jaime if she would recommend the Delamar to others planning a wedding, she immediately said, “Yes, without blinking. You could not get better.”
105

The night was a triumph and serves as a reminder that magic can be found in the most unexpected places.
