I believe that as leaders, we must be committed to looking after ourselves so that we are in the best state of mind and body to manage the business. I love my job. I have been working in hospitality for almost 25 years now. I was 16 when I had my first job working at a bakery, and I started my days at 4 am. As a restaurant manager, I regularly finished days at 2 am. Each position has its own demands in terms of schedule and requirements. I have had the grand experience of working my way up from pastry to dishwashing to operational management, and it has all been enriching. HOW DOES DINNER AT YOUR HOME AS A CHILD INFLUENCE YOUR COOKING TODAY? My first memories of food are all about my home and my mom. Mom is French, and she loves food. Her cooking is very diverse, so I learned a lot. I would walk into the house and try to guess what she was cooking by smelling the aroma and food. I guess you could say all of my cooking today comes from my childhood dinner table. It’s all about generous cooking, always good food, local as much as possible. I think the best food comes from village markets, local farms, and farm stands, but mostly, food tastes best when it is shared with special people, and it makes you feel like you are home.

HOW DID YOU GET TO THE GREENWICH HOSPITALITY GROUP? It’s been a journey for sure. Greenwich is very far from my home at La Chèvre d’Or, a beautiful place overlooking the Mediterranean Sea in France. I had such a strong connection to food because of my family upbringing, so I went to school and earned a Bachelor's in culinary arts and a Master's in hospitality management, and then I went to work everywhere I could: restaurants, hotels, casinos, etc, all over Europe. When I was only twenty three years old I was working in Geneva, Switzerland and a friend of mine was going to America to work and he asked me to come with him, and, of course, I said, “sure.” I soon left home and went to work at the Wheatleigh Hotel in Lenox,

ith a name that translates to “bringer of light” in Celtic and Gaelic, it’s no surprise that Ellen Carey—named one of the leading 100 women photographers worldwide by The Royal

Photographic Society of London—carries an inherent fascination for the complexities of light. “My birth name was a prescient gift from my parents,” Carey says. “Photography means ‘light drawing’ from the Greek, so destiny and fate are intertwined into my DNA along with the characteristics of the medium. Light with color informed my childhood, from the stained glass windows of my Catholic upbringing to a fascination with light and all its properties: shadow, outline, silhouette, and reflection.” In 2021, the Hartford photographer and art school professor received an invitation to showcase her cumulative work around the concept of light at the Delamar Hotel. Carey presented her “Lights, Camera, Ellen Carey” exhibition, the sixth installation from the New Britain Museum of American Art (NBMAA) at the Delamar.

T

he morning of the wedding had been going wonderfully. Floe Dean had her hair carefully coiffed, makeup applied, and had been

settled on the bathroom floor with her mother and sister sipping champagne in the bridal suite. It was the perfect sendoff – they reminisced over heartfelt memories of Flo’s late grandmother with the wish she could join them. She was preparing to meet her betrothed, Sebastian Cummings, at the end of the aisle. The time came to put on her bridal gown, and to her dismay, she noticed a slight tear in one of the layers of the skirt. Luckily for her, she was in good hands. After being introduced by mutual friends, Floe and Sebastian became inseparable. Almost immediately after the news broke of their engagement, a date for the wedding at the Delamar was secured. I had the privilege of speaking to the bride’s mother, Jaime, to hear all about the experience.

The vision for the special day was clear to the team: it would be an unforgettable, non-stop celebration that would demand dancing and partying throughout the night. Erin Neagle, the Director of Catering, was up for the challenge. The original plan called for two bartenders, which was doubled to ensure that the wait for a fresh drink would be minimized – all to maximize the time guests would spend on the dance floor. The second priority was to guarantee that there would be continuous music. The band was to play from seven o’clock to midnight with not a break in between. Originally, the oyster bar was to be a sushi table, and the family decided to change the wine selection a week before the big day. Erin’s response? Consider it done. The ballroom was transformed with draped fabric carefully strewn along the perimeter, which was inspired by a venue Jaime spotted in an episode of Bravo’s Real Housewives of Miami. The night would conclude with an ode to Floe’s sweet tooth: a twelve-foot table covered in every candy you could imagine. That, in combination with fireside s’mores kits, would be the cherry on top of an unforgettable night.

On the morning of September 25th, 2021, they were met with crystal clear blue skies. Jaime recalls feeling the utmost confidence in the team. She mentioned that “having a Plan A, B, C, D, and even E if we needed” put her perfectly at ease, which was all she could have ever wanted. When the bride noticed the tear in her dress, it took but a call to the front desk to summon someone from housekeeping with an on-hand sewing kit to perfectly mend the tear. The quick action by the team at the Delamar eradicated any last-minute stress in the bridal suite. When I asked Jaime if she would recommend the Delamar to others planning a wedding, she immediately said, “Yes, without blinking. You could not get better.”
