The inspiration behind the amazing building came from the passion of dealership owner, Brian Ross, who for this special event brought a rare classic 1951 Ferrari 212 Export Vignalie Coupe from his own private collection to star as the main attraction of this year’s event. This exceptional one of a kind rare automobile, with an estimated value of over 5 million dollars shares a coveted history. It was built for a young Italian prince who custom ordered the car directly from Enzo Ferrari for his own personal use.

The invited guests were treated to a spectacular evening set among a sensational collection of some of the most beautiful Ferraris and Maserati’s imaginable. Malcolm Hasman served over 50 chilled bottles of Veuve Cliquet Champagane while guests enjoyed delicious West Coast delicacies courtesy of Global Group’s Coast restaurant. While basking

The French have long enjoyed unequivocal recognition for their mastery in the world of fine liquor – from Cognac to Champagne, and all things vine-related. However, vodka – that hearty, grainbased spirit evoking the icy cold of Eastern European winters – had not traditionally been part of France’s famed legacy, leaving the spotlight to Russia and Scandinavia. The blend undergoes over 500 quality control checks daily, including the crucial final taste test performed by a panel of experts and the Grey Goose Maître de Chai (“cellar master”) François Thibault, who applies his immense spirit-making expertise to personally approve each batch before bottling. Once rinsed and filled, each bottle is capped by the trademark cork, a nod to Cognac’s winemaking tradition.

Barbara Inglis and Paul Chalmers have pinpointed just what people are looking for when it comes to the ultimate dinning experience and offer just that at their popular West Vancouver restaurant, Fraîche.

Foodie aficionados and West Vancouver residents for over 30 years, Barb and Paul felt there was a hole in the

“The goal was to have it approachable, not stuffy, but really quality food, ” shares Barb on what their vision was for Fraîche. “People can come in, still relax and even wear their jeans if they want but they know they are going to get a really superior product and service.”

It appears Barb and Paul knew what they were doing.

Coming up on its 4th year anniversary, Fraîche has received numerous accolades and glowing reviews since opening its doors in 2007. Quickly winning their first award in 2008,

they were named one of Canada’s Top Ten Best New Restaurants by enRoute Magazine, and most recently given the Gold and title of Best North Shore Dining in 2009 by the Annual Vancouver Magazine Restaurant Awards.

Humble and modest when asked what it feels like to be considered such an outstanding establishment Barb says it’s all about their gifted staff. “For us it’s really exciting but the people that get the most out of it is the staff. For someone to recognize them as being good is the best part of receiving such an award,” says Barb.

Somewhat new to the Fraîche team is head chef, Jefferson Alvarez. He signed on 6 months ago and has quickly impressed many taste buds with his creative fare. The self-taught native Venezuelan has worked at numerous top restaurants in Toronto, New York and Philadelphia. He moved to BC in 2009 to head up the kitchen at wine bar and bistro, Divino.

“A friend in the food business took us to Divino where Jefferson was working and we just fell in love with his food and it just went from there. It was a good time for him to move on and it was a good time for us,” says Barb on how he came to work for them.

Most impressed with the passion that Jefferson puts into everything he does, Barb says he goes far beyond the average chef with his creativity and really stresses the importance of fresh, sustainable products.

Although hard to pick a favorite menu item, Barb narrowed it down to his beat salad, arctic char, and ash crusted ostrich that she calls, “just beautiful.”

Their goal to create the perfect dining experience that offers both quality and comfort has been achieved. Fraîche is suitable for any occasion, dressed with a simple elegance. Jason’s passion for fresh, often local ingredients coupled with his ability to create mouth-watering comfort food that is beautifully presented is a real people pleaser.

When asked, Barb reflects on what she believes is the best thing about Beachside Forno. “It’s almost like the place has gone full cycle and is coming back to a modern version of the original Beachside. Great, fresh, regional and seasonal food prepared with Chef Harris’s own unique style.

Guests have now learned they can come in anytime – lunch, brunch or dinner and find comfortable surrounds and beautifully executed food.”
