But over the last few years, more and more people have become aware of what happened to our food and are slowly shifting our view of food. We can see it as something that’s just a necessity or trend or we can make it our passion and use it wisely as nourishing for our body and mind. IN THIS WORLD THAT’S SO FULL OF MODIFIED FOOD, FULL OF SUGARS AND OTHER STUFF THAT DOESN’T BELONG, FOOD THERAPIST ASTRID TANIS HELPS PEOPLE WHO HAVE TRIED EVERYTHING AND FINALLY TURN TO NUTRITION IN ORDER TO FEEL BETTER. SHE USES FOOD AS A MEDICINE TO HEAL PEOPLE PHYSICALLY AND MENTALLY FROM THE INSIDE OUT.

Dr. Natasha Campbell-McBride is a medical doctor with two postgraduate degrees: Master of Medical Sciences in Neurology and Master of Medical Sciences in Human Nutrition. She created a diet for her son with autism and found that this disorder - and many others like AD(H)D, dyslexia, depression, dyspraxia and schizophrenia - become a lot less, and in some cases even disappear by changing their diet. She called it the Gut and Psychology Diet (GAPs diet) because it’s based to treat and heal the intestines, which as a result has an effect on what happens in the As soon as she moved out she started eating differently brain. ‘First of all it depends on your body if this diet helps you or not’ says Astrid ‘for some people the food they eat has a different and stronger influence on their body and mind than for others. In general, she believes that we are real omnivores, we should eat everything that nature provides us. Unless something is broken inside the body. If that is the case, a therapeutic diet like GAPs would be suitable. And then still, as long as you don’t touch the real junk foods, I think you should be allowed to sin a bit. Let’s say you should keep to a diet where 80 percent is pure food and 20 percent is a bit more modified food, a bit of sugar. And around Christmas this is 60 to 40 percent of course!’ If Astrid thinks starting the GAPs diet would help someone, she stresses two things: you will for sure improve a lot but there is a chance you won’t be healed completely. It’s a therapeutic diet; it will help you and it is there to support you but won’t necessarily heal you completely. You will have to keep looking and listening to your body to find a complete balance. The second is shifting your eating habits like this requires a hundred percent devotion, because you have to completely adjust your way of living. Generally speaking, you can say that this is more than just a diet. It’s a change of lifestyle, designed to go on a search to what is best for you and your body, a mental and physical balance. Most often people come to her after trying everything else, all doctors, medicine and therapy. They are motivated to grab this last change for what it is. But a lot of people would be willing to do and change anything, but woah now, don’t touch their food! ‘We can’t call ourselves homo sapiens anymore nowadays’ says Astrid ‘we’ve developed to a homo economicus. People only care about the messages of wealth they send to the outer world, what they wear, having a huge house, fancy furniture and a big car in front of the house. It’s where all their expenses go. No one doubts about bringing the car to the garage and paying thousands of euros to get it fixed, but spending a little more on real food, no, that’s out of the question, too expensive! It’s all about the outside at this time and we don’t realize the effect is has on our insides.’ And it requires a revolution to change this way of thinking and living, and according to Astrid this is slowly starting. Yes, the Dutch milk company Campina that has started to invest in real grass-fed cow milk again and there are more and more ecological, biologic and real products available. ‘But still,’ she says, ‘I am still sceptic about it. This whole change is run by the food industry, do you think Albert Heijn started selling almond flour because they think it’s better than normal flour? Of course not, they are after the money. I’ll never trust the food for as long as Unilever makes it, even if it is supposed to be healthy. It’s good this trend is there, but we need more.’ ‘What we need is a change in thinking about ourselves and the way that we live and eat. My grandmother used to say that you couldn’t eat beets or spinach more than once a week because of the high nitric oxide values. And nowadays, we are supporting the concept to eat a lot of these superveggies daily! Preferably in smoothies and juices and what have you. The point is, we don’t know what the foods do to us anymore and it makes that we don’t know what is really good for you.

ROAST OF S C HI E D A M Coffee is arguably the most important discovery in the history of human kind. It is the second largest traded commodity in the world and the second most popular drink; water being number one. Green coffee beans are living organisms and when roasted, the fresh food dies and loses its vitality and nutrients within a week.

You could be barbarian and roast in a skillet or you can buy a fancy professional roaster. And that is exactly what Michael of Schiedam’s Gebrand has done. He might just be one of the newly established secrets of Schiedam. His favorite ways to brew a perfect cup of coffee? Dutch-style iced coffee or in a syphon. These types of brewing create the finest way of keeping all the flavours of the bean together. One coffee bean contains over 800 flavours, where wine only contains 400. These techniques don’t force the water through the coffee, like ordinary, more common techniques. This type of brewing is called ‘slow coffee’. After a tasting his two different types of beans, I recognised the differences in taste of a slow coffee, which is much softer than that of an espresso, even though it is the same bean. But what makes this difference? Mainly the flavour and aromatics, but the body of the coffee as well. This depends on the type of bean, the way it was roasted and what kind of brewing technique is used. Let’s take a closer look at the two types of coffee beans Michael uses at Schiedam’s Gebrand.

ETHIOPIA SIDAMO Comes from Ethiopia from the region Sidamo. this bean is a part the Arabica family. It is a smaller type of bean. Farmers in this region grow many different heirloom varietal of native Arabica coffee beans, which also grow wild on the hillsides of Sidamo. The unwashed bean corps are harvest from October to March. After the second war, Europe decided to ban hunger from it’s grounds. The union developed a system in which we could produce big amounts of cheap food. Just think about it, food isn’t that expensive in Holland. It became a problem. We’ve gotten used to the large volumes of cheap industrial modified food on which farmers barely earn their costs. Our minds changed and food became a money based product. We want to spend money on popular brands but to pay 20 cents more on a biological apple instead of an industrial one is a taboo. Cheap food has given Europe prosperity. By knowing where your food comes from, you can choose for more local products of which it is easier to trace how they where produced. And by reading the ingredients of a product we may know what they contain. Recently, the difference between placing the label containing nutrient values has been compared, in which placing the label on the front of the product informed the consumer more, than the traditional placement on the side or back of the product. Furthermore single people (not in a relationship) eat more unhealthy than people who live together. This is mostly because of the fact that single people are not able to cope with the responsibility and time management of preparing a meal alone. Whereas people in a relationship are able to divide the work load of preparing a meal.

People who eat less healthy tend to spend as less time as possible on their food. These people put more effort in being social and their work than on their nutritions. They are active in several sports/ hobbies but not for more than 3 days a week. And spent more time inside. You can find these people in every layer of the society. They tent to have more health issues, especially because they aren’t well educated about food. As a result, these people are more stressed and sometimes are afraid of making a dinner. People who eat more healthy spend more money on their food than on other belongings. These people mostly live in less materialized homes. They tend to exercise more and are more cultural/community active. Most of these people come from the middle and the upper middle class. People who eat healthy know more about food and their environment. They live longer and seem to have less problems with their skin and digestive systems. People who eat more healthy spend more time outside and with their families/friends and are less stressed. The emotional value humankind used to have with food has plummeted. Food has become a price tag based on strange governmental laws, price wars, stress and above all low education about food. How would we deal with food if we knew more, spent more and took more time to think about it? We would at least eat less, eat better and become more creative with the foods we eat.
