CHEF’S WHIM: RECIPE OF THE MONTH

Greek Island Chicken Shish Kebabs with Tzatziki Sauce

Ingredients

¼ cup extra virgin olive oil ¼ cup fresh lemon juice ¼ cup white wine vinegar 2 cloves garlic, minced 1 teaspoon ground cumin 2 teaspoon fresh oregano finely chopped 1 teaspoon fresh thyme ¼ teaspoon fresh ground black pepper 2 pounds skinless, boneless chicken breast, cut into 1 ½ -inch pieces 1 large red onion, quartered and separated into pieces 12 roma tomatoes, cut in fourths (if small, cut in halves) 12 fresh cremini whole mushrooms 12 half-inch slices zucchini cut in half (creating a half-circle) 12 one-and-a-half-inch cubes of fresh bell peppers

Step 1 Whisk the olive oil, lemon juice, vinegar, garlic, cumin, oregano, thyme, salt, and black pepper together in a large bowl. Add the chicken and toss to evenly coat. Cover the bowl with plastic wrap; marinate in the refrigerator for at least 2 hours.

Step 2 Soak 12” wooden skewers in hot water for about 30 minutes before use.

Step 3 Preheat an outdoor grill for medium-high heat; lightly oil the grate.

Step 4 Remove the chicken from the marinade and shake off excess liquid. Discard the remaining marinade. Alternately thread pieces of the marinated chicken with pieces of bell pepper, onion, cherry tomatoes, peppers, squashes, and mushrooms onto the skewers.

Tzatziki Sauce

½ cup finely grated cucumber 1 cup thick whole milk Greek yogurt 1 tablespoon drained, fresh lemon juice ½ tablespoon extra-virgin olive oil 1 garlic clove, minced ¼ teaspoon sea salt 1 tablespoon finely-chopped fresh dill 1 tablespoon finely chopped, fresh mint, optional

Instructions

1. Place the cucumber on a towel and gently squeeze out a bit of the excess water. 2. In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if using. Chill until ready to use.

What did golf look like in the 18th century?

Although golf is known to have produced some of the worst dressed athletes in the world, universally golf has been considered, historically, to be one of the best platforms to make outrageous fashion statements.

Early golf players could be seen wearing knee length breeches over stockings, sported tailcoats, and wore ruffled cravats around their necks. Towards the end of the 19th century, long trousers became popular but they decided to reject the trend and tuck their trousers into long socks sometimes completing the outfit with full morning suits. The early 1920s provided liberation from the strict fashion for all genders. V-neck sweaters were at their prime along with brightly patterned socks (this was to nod towards the apparel of circus clowns that made their way into town). When the mid to late 1970s came along, golfers embraced color like no other, creating the most eyejarring color combinations. The current fashion trends were guided by the entry of companies, such as Nike, that had dedicated fashion designers introducing well-cut polo shirts, baseball caps, and all-round respectable attire.
