WEIRD and wonderfrul house in Essex designed by eccentric artist Grayson Perry and dedicated to a woman called Julie, is available for those wanting a holiday let with a difference. Overlooking the Stour estuary in Wrabness in the north of the county, the building is an architectural wonder from the Turner Prize winning and Chelmsford-born Perry. It is available to rent through holiday rental company Living Architecture, who have a number of amazing abodes across the UK. Perry designed A House for Essex along with London-based FAT Architecture and it accommodates up to four people with the interior just as exotic and lavish as the exterior with its Russian empire-style roof. It contains a number of specially commissioned art works by Perry himself including beautiful tapestries, ceramics, decorative timberwork and mosaic floors. There are two bedrooms and a bathroom. The upstairs rooms boast undulating views across the landscape to the east and west, and (from the bedrooms) balconies overlooking the living room. The building has been designed to evoke a tradition of wayside and pilgrimage chapels and fits in with Britain’s rich history of follies. Campaign aims to safeguard children

HE Essex Safeguarding Children Board this week launched its ‘Wise up to water safety’ campaign. As summer approaches, families enjoy being in the garden, but many family gardens contain ponds, paddling pools or even hot tubs and swimming pools - all of which can be a potential hazard. In recent years in Essex, there have been three child deaths where the cause of death has been found to be falling into and drowning, in a residential swimming pool. But it’s not just swimming pools; any water area of more than a few centimetres in depth in the garden can be dangerous for young children. It takes just three minutes to drown in less than two inches of water. Mike Gogarty, Chairman of the Child Death Overview Panel, said: “There are some really simple steps people can take to make their gardens water safe for young children. Securing fences around

Ever thought about fostering a child?

OSTERING Fortnight is the perfect time to find out more about fostering. The National Campaign runs from June 1 to 14 and aims to encourage more people to consider applying to become a foster parent. During the two weeks, various

information sessions take place throughout the county run by expert staff from Essex County Council’s fostering team. There is no upper age limit for prospective foster parents and they can come from all walks of life. Most importantly children need to be

Those who may have considered fostering which can be both an enjoyable and challenging role, are encouraged to come along to the sessions and find out more. This year’s theme for Foster Care Fortnight is ‘Make a Connection.’ With 775 Essex children living in foster homes, thousands of people have a connection to fostering family members, friends, neighbours or colleagues may foster, have been fostered or work to support children and young

people in foster care. Essex County Council is aiming to recruit enough foster carers to provide homes for an additional 60 children in 2015/2016. There is a particular need in Essex for carers who can provide a home for large sibling groups, teenagers, children with disabilities and children seeking asylum. Fostering can be for as little as a few weeks or a few months until a child is able to return home to their family or occasionally until a child grows up and is able to move onto independence. Stephen who was in and out of care from a young age, said of his carers: “If I didn’t have them in my life I don’t know where I would be by now, probably no education, job, family or friends. I am thankful as they changed my life for the better. Chief Executive Officer, Barry Wood commented: “The store has been serving Baddow for decades but in recent years, has started to look very tired. Following the results of a resident survey carried out a few months ago a plan was drawn up to update the store incorporating where possible the aspirations of the residents.” The store was gutted in order to replace the floor and ceiling, create wider aisles and introduce new automatic doors, it was then refitted and ranged to include more fresh food and meal solutions. Taking a musical journey

EN Knight has been presenting Off The Record on Phoenix FM since 2012 when former presenter Bryan Powis took him under his wing and showed him the ropes. The music enthusiast from Brentwood grew up listening to artists such as David Bowie, The Police and Thin Lizzy, studied Music Industry Management at University and also plays the drums occasionally, for a couple of local bands. He also supports Ipswich Town Football Club for any Tractor Boys out there! “I didn’t really get into radio until a few years ago. It’s a bit weird because radio seemed to be less important when I was growing up compared to the ‘early years’ that went before. For me, music exposure came through word of mouth and taking a chance when buying a CD from HMV.” He continues: “I read that today, most listeners want to be taken on a musical journey without having to dig through all the undergrowth that is available through various streaming services and online stores.”

Ben tells us more about his show: “Better know as Off The Record, it is the place where listeners can discover the latest music from all around the world. We are blessed this day in age with a number of incredible tools for music discovery. It’s funny how I end up reading posts on an Australian blog about an artist based just around the corner. “My rule is to give everything a chance and never be tied to one particular genre. I’ve been exposed to a lot of Soul, Electronic and Alternative music when growing up and these influences definitely shine through on a weekly basis.” Ben wants to expose listeners to music they wouldn’t have necessarily listened to before. “It’s hard to judge, and people are sure to have heard certain tracks previously, but I take the approach of not playing lead singles or music I’ve heard on other radio shows. This can take a lot of work, listening to brand new albums multiple times to find that killer track someone may have skipped over. I also like to add in a few classics to show how

my taste has developed over the years. It really is as personal as you can get music choice wise.” Working for the station has seen him mingling with artists of the moment too. “I interviewed Goldie Lookin’ Chain at Brownstock Festival last year and my first interview as a host was with my favourite local band The Milk. I was lucky enough to chat to them before their Shepherds Bush Empire headline show which made the whole event seem more special.” He praises Phoenix FM as being a great learning curve and for having a real ‘team’ of people behind it. “From the very beginning everyone at the station was so friendly and welcoming, you really feel like you are part of something. Being that little bit smaller as a group means you are constantly conversing with colleagues about new music and events. It’s also a great place to learn as the presenters range greatly in terms of age and experience. Chairman Paul Golder really does deserve a mention, because without him the station wouldn’t be what it is,” he adds. Ben’s radio presenting inspirations include Chris Evans ‘because we share the same colour hair’ and in terms of what

they stood for ‘John Peel’. “I spend a lot of time browsing the online archive of all his records, and the the unique way he kept everything organised gets me every time,” he says. He credits Ben Knight, above, in playing the drums as interviewing mode another good way of keeping his musical tastebuds tingling. “It’s one thing pressing play each week, but there’s not many better feelings than performing in front of people. Lets hope I never get to play anything bigger than a pub in Chelmsford, I might literally explode with excitement.” He also has a bit of a reputation for being a festival fiend. “It’s a great feeling laying in a field having not washed for a few days, listening to the bands you’ve been wanting to see for almost a year. You’re likely to see me at Glastonbury, Brownstock, Field Day and Bestival. A refined taste for ale lovers Brentwood Brewing Company has good reason to celebrate, says Wendy Pike

PINT of disappointingly ‘average’ ale in a Brentwood pub was what sparked two friends into the radical act of setting up their own brewery. Those friends, Roland Kannor and David Holmes, resolved to produce quality beer for real ale lovers. “In the belief we could make a better beer, we did some research, got brewing and produced a really decent first pint,” said Managing Director, Roland Kannor. Initially brewing in a friend’s garden shed, Brentwood Brewing Company went into production on July 4, 2006, with its first real ale, Summer Virgin. This debut beer was well-received by real ale enthusiasts, winning Chelmsford Beer of the Festival in Summer 2007 and Colchester three years later. When the first batch was brewed, nobody could have guessed nine years later that same beer would be marking a milestone in the brewery’s history, becoming its thousandth brew run. Roland’s son Ethan is Head Brewer. At 23, he is thought to be the youngest in the country. Assisting Ethan is David Holmes’ son Mike, a full-time brewer, though David is now no longer a partner in the business. “For six years I trained with Sophie De Ronde, our Head Brewer. When she left last year, I was ready to take on the role,” Ethan explains. “I love coming up with new beers and ideas, looking at flavours and being inventive. My latest creation, Ethan’s Marvellous Medicine is pretty much a new concept in beer-drinking.” Ethan’s Marvellous Medicine is due

to be launched at Chelmsford Beer Festival in July. As the company has grown, so too has its portfolio of beers with about 80 different varieties being created under the Brentwood banner and the company’s Elephant School Brewing brand. Awards for Brentwood beers keep pouring in too. From appreciators of beer bottle labels, or labologists as they’re known, to industry and CAMRA awards plus accolades from overseas. They include a Gold award for Brentwood Gold from Hungary, Beer of the Festival in Serbia and a Silver award from Hungary for Chockwork Orange. Roland said: “It’s always good when someone else says we’re doing a great job. We’re constantly developing and identifying niche markets for our products at home and abroad, but we remember our fundamental aim - to produce honest, quality, craft beer for local people. “When we started there were two hundred independent brewers. Craft beer has become so popular there are now thousands. That’s happy news for real ale lovers but competition is fierce. That’s why exports are increasingly important to the future of our business.” Making exploratory inroads into the export market, Brentwood Brewing Company is testing markets on the other side of the world in Australia.

Russia and Hong Kong too. Thirsty ex-pats and locals in Thailand are already enjoying Brentwood beer in bottles. It has also available in Hungary, Austria and Scandinavia. Following a move nearly two years ago, Brentwood Brewery is based at Calcott Hall Farm in Pilgrim’s Hatch with the capacity to brew up to 20,000 pints weekly. Open days are held on the first Saturday of the month. Tours, tastings and beer are available from the Brewery Shop and Visitor Centre. For true beer fans the company offers a range of gifts including Brewery Experience Days and a Beer Club giving discounts to members.

The brewery sees itself as an active member of the community, working with Brentwood groups and charities. “We like to do our bit by supporting the community we serve. It can be making charitable donations from beer sales, sponsoring Brentwood Pubs in Bloom or taking some of the borough’s older residents on outings,” said Roland. Local businessman Jason Jopson joined the team as a director in 2008. The company now employs 10 staff, some in part-time roles, including Roland’s other sons Hal and Ralph. But with the arrival of the first Kannor grandson last year and first granddaughter just weeks ago, future brew crew recruits may not be difficult to find. “My proudest achievement

The year round Coastal Bus Services are specially designed for walkers; take the bus a few miles down the coast and then walk back at your own pace. HIIT it!

So many people are doing High Intensity Interval Training (HIIT) aren’t they! But why? Fitness instructor Helen Barness gives us the lowdown

IIT sprints, cardio, weight training — many different variations of intervals — working hard for say 30 seconds, 10 seconds recovery or 45 seconds and 15 recovery. Tabata training short intervals of high intensity exercise done usually over a 4 to 8 minute period which quite often is with eight types of whole body exercises repeated for whatever duration of tabata you are doing. Intervals are 20 seconds on, 10 seconds off. Accumulators — you have say six exercises and you escalate the intensity. The first one you do for

30 seconds, then rest 30 seconds. Then you do the 1st and 2nd exercise 30 seconds each, then 30 seconds rest and so on up to all six exercises back to back then you can have a full minute off and repeat if you like!

Armageddon — this is more like a circuit but again you are working as hard as possible for a minute then move on to the next exercise. You will get a short rest interval between each exercise. Metafit — a 20 minute high intensity interval training workout which is very popular at the moment.

OLF is a sport with a long history and growing popularity, but for those who are giving it a go for the first time it can be tricky to know where to start. Here are my top tips for golf beginners of all ages…

Pro advice: it probably sounds obvious but the best thing to do when you first start playing golf is to have lessons. A technical sport which relies on nuance, it is important to get your technique right not just so that you become the best player that you can be but also to help avoid common injuries and strains. A firm stance: a solid base creates good balance and supports high club head speed (these are things you want). Remember to flex your knees a little and don’t let them roll inwards. Press them away from each other and it will allow you to shift your weight in the correct way rather than reducing your power as you pivot.

A little and often: practicing a new skill can be tiring so a simple tool such as a chipping net in the back garden can be a surprisingly effective way of practicing when you have a spare half hour on a summer evening. You might be surprised at how quickly you improve and if you have friends and family around it can be fun and sociable as well without doing a full 18 holes.

5 Great HIIT exercises to try! burn up so many calories?

During the HIIT interval you should be working at 80% of your estimated maximal heart rate so you are working at hard to very hard so there should be no conversation whilst exercising! This intensity will mean that after the workout our post exercise oxygen consumption or EPOC will be much stronger than if we did a longer less intense workout. The body is restoring itself to its preexercise level so it is continuing to use more energy to do this.

What to consider before trying HIIT?

If you have never done exercise before, let your instructor know this as you will need modifications for some of the moves till you get your technique correct. It would be good to try to get a base level of fitness before you launch into a HIIT programme. Also if you are a beginner, maybe do just one HIIT a week, till you start getting used to the intensity and then add another session. Don’t try running before you can walk and doing five sessions straight away in one week as your body will not like this and you will not get the results you want.

Wide jack Do each of the exercises for 30 seconds on, 10 off to start with. Do one set and then add another set as you feel ready to keep pushing your fitness levels. You can play around with the duration of the exercises or you might prefer to do a set number of say 12 of each exercises with 10 seconds rest between and then do longer if your fitness levels are higher and

you have been exercising regularly so say 45 seconds on 15 seconds rest or 50 and 10 - up to you. Hip rock – a simple but great exercise to shape your waist. Get into a plank style position on your elbows and rock your hips side to side but think of lifting up and over a small ball rather than just dropping the hips down. Your back will stay slightly flexed the whole time not like a normal plank so we keep your abs working hard! Walking press up with jump in squat – Get into a full press up position. Walk it side for two and back. Do this four times then jump the legs into a deep squat four times and repeat. See picture of travelling press up, plank position before you

As HIIT is high intensity your body does need recovery. So for example, if you do HIIT Monday then do something less intensive on Tuesday, perhaps go to a flexibility session. Flexibility does tend to get punished if you only do HIIT training and ultimately what is

Power jack criss cross – This is a deeper version of a jumping jack. Jump legs out wide and sink into squat then jump them back in and cross legs over to use a lot more inner thigh. Forward lunge with rotation - Take step

Losing three stone weight, Rebecca Lockwood has already achieved an incredible feat. However, wanting to scale even greater heights she has also just completed a skydive to raise money for charity. Here’s her story.

EBECCA Lockwood, 21, from Chelmsford had always been heavy, even as new born she weighed 10lb 4oz and growing up she had believed that was just the way it was going to be. However, after losing an amazing 3stn 6lbs going from 15st 3lbs to 11st 11lbs, she has a whole new lease on life. Rebecca has just completed the ultimate leap of faith - literally - a skydive with the Red Devils to raise money for Little Havens Hospice. “A sky dive is something I have always wanted to do and there are certain restrictions on the height to weight ratio. If I had not lost the weight then I would have not been able to do my skydive with the red devils,” she says. After seeing a photo of herself on a night out, 5ft 10in Rebecca realised how unhappy she was with how she looked and knew she had to do something about it. “I joined a local fitness

class and signed up for 1:1 sessions with Lindsey Abbott from Shimmy ‘n’ Groove Fitness, the weight started to drop off and before long I even ran a half marathon (13 miles).” This is when her passion for fitness kicked in. Joining her local Bootcamp (MiBootcamp) she continued with her training and healthy eating regime. “I have changed what I eat

beautiful but I don’t believe in the term “diet” as this is something people stick at for a week or two then go back to eating how they did before,” she explains. “To succeed with weight loss you need to have a new lifestyle. It doesn’t mean you will be eating bland and boring food. Healthy food can also be extremely tasty! BUT it is important to always have a little treat. For me it is a slice of cake every now and then.” Since losing the weight Rebecca’s confidence has soared both at home and at work. She is no longer ashamed of what she looks like and as the only female Apprentice Engineer at her work (e2v) she can now confidently stand up and carry out presentations without feeling she will be judged. The reaction from friends

and family has also inspired her to maintain her new weight and inspire others to make the journey that she has. Rebecca adds: “When people see me after a long period of time or see my comparison photos they cannot believe the transformation. I have even managed to inspire other to change what they eat and take up more fitness and exercise as they have seen what I have achieved. It makes me very proud to

Choose an exercise you enjoy doing as you’re more likely to stick with it. Training with others normally is more motivational and encouraging. 5. Give your body a week’s rest every 8 weeks. Your body needs to re-cover from all your hard work and rest. Your body will repay you in the long term.

Camden-based housing association that has been helping its local community for over 90 years has provided an increasingly rare opportunity for local people to move into new, affordable properties in the heart of central London. Origin Housing has just completed

Suffolk House in Whitfield Place, a stone’s throw from the iconic BT Tower and just two minutes’ walk from Warren Street tube station. The local area is known as Fitzrovia and it is one of London’s most fashionable addresses, with properties there commanding considerable prices, which makes the provision of affordable homes there a notable occurrence.

Suffolk House is a Victorian former warehouse which has been restored and converted into a 100% affordable housing. Meeting the London Borough of Camden’s pressing housing need, the new development is a collection of six duplex shared ownership apartments and seven affordable rent homes, including two five-bedroom,

split-level units, designed to house families of eight. The former commercial building had fallen into disrepair and was bought by real estate investment trust Derwent London plc. Derwent received planning consent for the 13-unit affordable scheme, which acts as part of the ‘Section 106’ affordable housing provision for its wider development programme in the Charlotte Street area, just a few minutes to the south. Subsequently, Origin Housing acquired a 999-year lease on the building and have built out the consented scheme. The original, late 19th-century façade has now been fully restored and the building extensively refurbished. In order to accommodate the shared ownership properties, an additional

It has done this by growing its private sale arm and using the proceeds for the full market price homes to subsidise the affordable homes it builds. Distinct from private developers,

housing associations are not driven by the expectations and demands of shareholders and investors and can channel their surpluses towards providing homes for those that need them rather than dividends. Origin has a current and future pipeline of 900 new homes in highprofile areas. Among its current and planned projects with affordable home elements are schemes in

Additionally, there is space on the lower ground floor, where the local charitable organisation Fitzrovia Youth In Action will be based and carry out its work to extend community involvement in the local area. The charity organises events and initiatives for young people in the local area, involving everything from sport to mentoring and work experience to tackling drug- and gangrelated problems. Gareth Jones, development director at Origin Housing, remarks: “Suffolk House has given us the opportunity to deliver another much-needed, fully affordable housing scheme in central London. We have worked with the borough to maximise affordability of the units, and have developed large family units, an increasingly rare offer in central London.” Prices for the shared ownership homes at Suffolk House started from £198,750 for a 25% share, based on a full market price of £795,000. Of course, at this price point, the standard shared ownership model simply couldn’t work, as the deposit and rental requirements would be beyond the means of those at whom the partbuy/part-rent initiative is aimed. In order to make them truly affordable, Origin Housing came up with a unique financial model for Suffolk House, which has reduced the deposit and rental payments to a more viable level. Perhaps unsurprisingly, all homes were reserved within weeks of launching. All the affordable rent homes have now been allocated, with tenants already starting to move in. Paul Williams, director of Derwent London plc, adds: “Derwent London is delighted to work with Origin Housing on delivering a dedicated building of much-needed affordable homes in Fitzrovia. We are also pleased to support Fitzrovia Youth in Action’s potential relocation to the building and to work with them on creating opportunities and amenities in the area.”

How have your new homes been welcomed by the village and those who want to enjoy the lifestyle which living there can bring? We acquired a former agricultural field on the western fringes of Charing village with the benefit of existing outline planning permission. Ashford Borough Council had identified and allocated the field for up to 90 dwellings. Following our pro-active engagement with local residents and Parish Council, it became clear that their aspirations were for a lowdensity, informal development with high-quality, family housing. We held a number of local consultation workshops and a presentation to the Kent Design Panel. Through this process, we positively responded to local wishes and reduced the density by a third. We have delivered a scheme which is both sympathetic to the desires of the local community, positively shaping the future of their village, and delivering a viable, high-quality development to leave a positive lasting legacy. It’s fair to say that when we started the planning process there was a degree of opposition; however, as we met with local residents and took on board some of their concerns, a more supportive relationship developed. By the time the planning application was considered, the local councillor and adjacent local residents were happy to see the scheme progress. During the construction phase we have built on these relationships and like to think we have become an accepted part of the community; indeed, an integral part of it, from our ongoing support and work with local organisations, such as Charing Primary School and the community therapy garden currently being developed by the Gardening Group at Charing Surgery.

As part of our ongoing commitment to the local communities where we build, at David Wilson Homes we often ask local schools to help name a development or street names, often in conjunction with the council, which will stipulate themes sensitive to the area. For Poppy Fields we asked the local Charing Primary School if they would like to get involved and the reaction was phenomenal, starting an ongoing relationship which has extended to include a safety and walk-to-school campaign. Poppy Fields was chosen as a fitting name, encapsulating positive futures while remembering the past. All purchasers of our beautiful homes at this development will be given a fitting commemorative poppy from the recent Tower of London exhibition to continue the symbolic theme. What are your favourite features at Poppy Fields? There are many features about Poppy Fields, from distinctive architecture with impressive façades yet retained country charm, to thoughtful landscaping fitting to the character of the local area. My favourite element of Poppy Fields is the central area of open space. This area will become an everyday feature in the lives of our future residents, whether it’s used for informal amenity purposes or residents simply to enjoy the view on their way to work; it is a distinctive individual feature which will contribute to this high-quality development.

Prices are now slightly ahead of pre-recession values, which is a really positive sign for the market. Is it currently a good time to sell your home in Kent? Yes it is. In Kent we are enjoying a period of stability, with prices rising steadily, though it’s definitely a sellers’ market. Properties coming onto the market in good areas, at the right price, are attracting a lot of interest quickly and are selling well, which only services to highlight the confidence of people in this area to make the move. And as we all know, spring/early summer has always been a good time to sell. What trends are you expecting to see in the remainder of 2015? It is likely that we will see a steady market for the rest of the year, and I anticipate that we’ll see an overall rise

of around 2-3% by the end of 2015. We are starting to see the bottom end of the market moving, which is integral to give the right balance in the market. What effect do you expect the upcoming election to have on the property market? For any party, the priority will be ensuring economic stability and instilling confidence that the country is moving in the right direction by cutting the deficit. From our point of view, the knock-on effect of that is maintaining a buoyant property market.

Apart from the economic downturn of the 80’s and early 90’s, the property market in Kent has been broadly resilient and has flourished regardless of political parties in power, due to the relative wealth of people choosing to live in the area. Whatever happens, I believe 2015 will remain bright with the majority of house prices still holding their value, if not increasing steadily in certain pockets of the country.

Taught by her mother Gillian from the age of three, she has been baking homemade cakes and treats for special occasions ever since and at the age of 14 bagged a book deal. Amy’s first cookery book entitled ‘Amy’s Baking Year’ which is now on sale, was published in November 2014 and includes amazing creations from French Macarons to fluffy sponges and whoopie pies to toffee apple jam and cinnamon doughnuts. Here’s a few of her temptingly gorgeous recipes for Made in Essex readers to give a whirl:

s Amy’s tip: To make your cake pop secure before coating them with melted chocolate, it is important to chill them in the fridge after you have inserted the sticks.

These heavenly bitesize cakes covered in white chocolate are a very special sweet treat for you and your guests.

(Makes 20) Ingredients: 110g (4oz) butter, plus extra for greasing 110g (4oz) caster sugar 110g (4oz) self-raising flour 2 eggs 1 tsp vanilla extract For the buttercream: 110g (4oz) butter 225g (8oz) icing sugar, sifted For decorating: 300g (101⁄2oz) white chocolate Food colourings (gel/pastes are best) 15cm (6 inch) lollipop sticks Edible glitter

For the lemon buttercream filling: 50g (2oz)

(Makes 20) Ingredients:

Method 1. Preheat the oven to 180°C/ fan 160°C/350°F/gas mark 4. Grease a 20cm (8 inch) cake tin and line the base with baking parchment. 2. Cream together the butter and sugar until light and fluffy. Add the eggs and vanilla extract then beat well to combine. Sift then fold in the flour. 3. Put the mixture in the tin and bake in the oven for 25 minutes until golden brown and well risen and a skewer inserted into one of the cakes comes out clean. 4. Transfer to a wire rack, gently peel off the baking parchment and cool completely. Once cooled, break into fine crumbs using your fingertips. Set aside. 5. Prepare the buttercream. Beat the butter until soft and creamy, then add the

sifted icing sugar until mixed well. Add the buttercream to the cake crumbs and work together until the mix has the consistency of moist crumbs. Roll the mixture into 2.5cm (1 inch) diameter balls using your hands. Set onto a tray and chill for 1 hour. 6. Meanwhile, melt the white chocolate gently over a pan of simmering water. Once melted, transfer half to another container, adding a small amount of food colouring. Allow the chocolate to cool slightly for 10 minutes. 7. Dip the end of each lolly stick in the chocolate and insert one into each cake ball, about three-quarters of the way through. Chill for 15 minutes. 8. Dip the cake pops into the melted chocolate until fully coated. Push the cake pops into a block of polystyrene or acrylic cake pop stand. 9. Before the chocolate sets, sprinkle with edible glitter and top with pretty edible decorations.

Method Preheat the oven to 150°C/ fan 130°C/300°F/gas mark 2. Sift the icing sugar and ground almonds into a bowl to remove any lumps. 2. In a separate bowl, whisk the egg whites with a pinch of salt to soft peaks, then gradually whisk in the caster sugar until thick and glossy. 3. Using a spatula, fold half the almond and icing sugar mixture into the meringue. Add the remaining half then cut and fold the mixture until it is shiny and has a thick, ribbon-like consistency as it falls from the spatula. 4. To make assorted colours as I have, divide the mixture into three small bowls. a. For rose flavour macarons, in one bowl add 1⁄4 tsp rosewater and mix in a little pink food colouring using the tip of a cocktail stick. b. For the white chocolate and pistachio ganache macarons, add a little green food colouring. c. For lemon flavoured macarons add 1⁄2 tsp lemon juice and mix in a little yellow food colouring. 5. Line 2–3 baking trays with baking parchment. Pipe 4cm (11⁄2 inch) rounds of the macaron mixture, about 1cm across, onto the baking trays. You can draw around a round cutter onto the baking parchment to make an outline to help you. Give the baking trays a sharp tap on the work surface to make sure they don’t go flat in the oven. Leave to stand at room temperature for 30 minutes to form a slight skin. This is important – you should be able to touch them lightly without any mixture sticking to your finger. Bake for 15–20 minutes. Remove from the oven and cool. 6. Meanwhile, make the fillings. For the white chocolate and pistachio ganache filling: 60ml (2fl.oz) double cream 40g (11⁄2oz)

butter 110g (4oz) icing sugar, sifted 1 tbsp lemon juice Yellow food colouring (gel/ paste is best) For the rose buttercream filling:

50g (2oz) butter 110g (4oz) icing sugar, sifted 1 tbsp milk Rosewater Pink food colouring (gel/paste is best)

white chocolate, chopped 10g (1⁄2oz) pistachio kernels 1 tbsp caster sugar To make the lemon buttercream 1. Cream the butter and icing sugar until combined, incorporating the lemon juice. Add a little yellow food colouring using the tip of a cocktail stick. Mix until soft and creamy. 2. Fill a piping bag fitted with a round 1cm (1⁄2 inch) nozzle and pipe the lemon buttercream filling onto half of the yellow macaron shells. Sandwich the other half of the yellow macaron shells on top. To make the rose buttercream 1. Cream the butter and icing sugar until combined, incorporating the milk. Add 1⁄4 tsp rosewater and mix in a few drops of pink food colouring using the tip of a cocktail stick. Mix until soft and creamy. 2. Fill a piping bag fitted with a round 1cm (1⁄2 inch) nozzle and pipe the rose buttercream filling onto half of the pink macaron shells. Sandwich the other half of pink macaron shells on top. To make the white chocolate and pistachio ganache filling 1. Heat the cream in a saucepan until it is steaming. Put the white chocolate into a bowl and pour the cream over it. Grind the pistachios and caster sugar in a food processor until fine. Add the ground pistachio and sugar mixture to the white chocolate ganache and mix until combined. 2. Refrigerate for half an hour until cold. 3. When cold remove from the fridge and whisk with an electric whisk to form stiff peaks (take care not to over whisk) 4. Fill a piping bag fitted with a round 1cm (1⁄2 inch) nozzle and pipe the filling onto half of the green macaron shells. Sandwich the rest of the green macaron shells on top.

1. Preheat the oven to 180°C/fab 160°C/350°F/gas mark 4 and line a 12hole muffin tin with paper cupcake or muffin cases. 2. Put the butter, caster sugar, eggs and vanilla extract into the bowl of a free-standing mixer (or you can use a handheld electric whisk and mixing

bowl). Then sift in the flour, lifting the sieve quite high to incorporate air, and beat for 1-2 minutes until light and creamy. Be careful not to overmix. Divide the mixture evenly between the paper cases. 3. Bake in the preheated oven for 20-25 minutes or until well risen and a skewer inserted into one of the cakes comes out clean. Remove from the oven and leave to cool in the tin for 10 minutes. Transfer to a wire rack to cool completely. 4. Meanwhile, prepare the buttercream. Beat the butter until soft and creamy. Sift the icing sugar and add to the creamed butter in two stages alternating with the milk mixing on a low speed. when fully incorporated, add the vanilla extract and beat for 3-5 minutes on a higher speed. 5. Divide the buttercream between two bowls. Leave one bowl of buttercream white. Use the tip of a cocktail stick to add a little pink food colouring to the other bowl of buttercream. 6. Spoon the white buttercream into a piping bag fitted with a star nozzle and swirl it on top of six of the cupcakes. Fill a second piping bag with the pink buttercream and swirl it on top of the remaining six cupcakes. 7. Dust with edible glitter and decorate with handmade fondant roses, flowers and butterflies. Amy’s tip: For an extra special finishing touch, sit each cupcake in a decorative wrapper.

to beat together the eggs, honey, butter and Chocolush milkshake. Add the bananas and stir. 4. Make a well in the dry mixture and pour in the egg mixture. Stir roughly with a fork so it remains thick and lumpy. 5. Fill the muffin cases with the mixture and place in the oven for 20-25 minutes until golden brown and firm on top. Leave to cool before transferring to a wire rack. 6. Once cool, mix together a little of the remaining Chocolush milkshake with some icing sugar to top the muffins. Add dried banana pieces to decorate. Living the dream of becoming an author

“That my book has been so well received is a dream come true,” Elizabeth Bourne was born in Essex and has lived in Norfolk. She left England as a young woman and now divides her time between Canada and California. Writing has always come easily to Elizabeth, an ability that was mandatory in her professional career working for presidents and CEOs for corporations around the world. Now retired she has decided to fulfil her lifelong ambition to be a published writer and thus, her debut novel A Fickle Wind was born.

HE book, is a compelling, interesting and inspiring rags to riches story set in historical war torn Britain and chronicled through the eyes of child.The main character is strong, courageous and determined to have a life that is meaningful and of high quality, refusing to accept that the lackluster life she knew is all she could possibly expect in the future. Emotions of joy, sorrow, laughter and tears are strewn together as her hopes and dreams are nourished. A Fickle Wind stands out due to Elizabeth’s nostalgic writing style and engaging plot line and could easily translate from page to screen. We spoke Elizabeth to find out more about it. What are your inspirations for the book? “I have lived in three countries, travelled extensively across five continents: America, Africa, Australia, Asia and Europe. I have raised children, experienced relationship challenges, break-ups, have had intimate friendships with people who have shared their stories. I also possess a rather active imagination. I wove these experiences and stories into A Fickle Wind. I have also been inspired by some of the more prominent world figures I’ve met throughout my life such as Margaret Thatcher and The Dali Lama. I have experienced some bizarre and wonderful moments in my lifetime and hope that this next chapter in my life will be equally as fascinating.” Why did you write this book? “I felt that I had a good/interesting story to tell. Some of my own experiences and those of my friends, could be beneficial and worthwile to many people, but particularly women of all ages. A chance encounter or just reading the right book can change one’s

path and life. A roadmap of how to survive and prevail through other life challenges may also help some who are on the fence, fearing, but yearning to take a leap to change their lives.” This is your first book, what made you want to become an author and what lessons in life helped you get to the stage when you felt comfortable with spending more time writing? “I could always write and had thought many times about a book. It was just a matter of comfortable, available time. I worked for many years and raised a family. Then extensive travel and a very active social life became possible and very enjoyable. But life takes many twists and turns and the right time and, for some reason, the right inspiration emerged when I started to share my life with a different partner after I was divorced. I just announced one day that I planned to write a book. He was very enthusiastic and supportive and this was very encouraging to me.” Where did you do most of the writing, what support did you get from friends and family? “I wrote the book on Vancouver Island, BC Canada. I was living at the time with a partner, Cameron who was enthusiastic and supportive. He was diagnosed with pancreatic cancer. He read every chapter as I produced it. I loved to hear him chuckle over

NGLAND’S largest indoor trampoline park has now opened in West Thurrock. Jump Giants located in Motherwell Way, Lakeside, is a fantastic attraction for both children and adults alike. It features foam pits, dodge ball courts, basketball hoops with slam dunk lanes and interconnected trampolines which fill the huge 28,000 square foot space enabling guests to literally bounce off the walls. There’s a one of a kind eight-lane foam zone with two launch pads, a 7,000 square foot main jump arena with tumble runs and junior zone for children aged under-10. It may be aimed at people having fun but safety is key. Visitors have to sign a waiver and are talked through a safety demonstration and instructions of what you can and can’t do on the trampolines. Ones to remember: always land with two feet and aim to stay in the middle of the trampoline, never jump onto the padding around the edge of the mat and one person per trampoline at a time. There is also a three strikes and you’re out policy so if people are intent on doing dangerous stunts that may injure other jumpers, even themselves beware!

Before the fun begins, jumpers are also given a valid wristband and luminous green grip socks which are to be worn at all times during the session. Audi winners united for first time

OR the very first time Audi has assembled together for a unique group photo shot all of its 13 winners of the Le Mans 24 hour race, which it first won in 2000 with the Audi R8. In 2001, FSI technology marked a major step forwards in the powertrain. Gasoline direct injection optimised consumption, had a favourable effect on the race car’s responsiveness and shortly afterwards was introduced in Audi’s production models. Between 2000 and 2005, the R8 won at Le Mans five times. In 2006, Audi sparked a technological revolution when the R10 TDI was the first Le Mans winning car with diesel power. The R10 TDI won at Le Mans three consecutive times. The next, the R15 TDI is linked with a feat that has continued to exist to this day. The race car with a V10 TDI engine and a lithium-ion battery for the onboard electrical system broke the 39-year-old distance

record at Le Mans in 2010. A year later, the Audi R18 TDI debuted. “This race car marked the beginning of a new era at Le Mans for Audi,” says Dr. Ullrich. “The regulations required us to reduce the cubic capacity of the engine from 5.5 to 3.7 litres.’’ Since then, all Audi LMP1 race cars have been designated as ‘R18’ even though they have included ever new model generations. The 2012 R18 e-tron quattro, the brand’s first hybrid sports car, marked the next major step. Audi, as the first winner with hybrid drive in 2013, won again with a significantly updated version of this model. A V6 TDI engine powered the rear axle, a hybrid system the front, and the entire control system was fully electronic. Audi developed a basically new, even more efficient R18 e-tron quattro. It won the race in 2014, was faster than its predecessor, but used 22% less fuel.

OLKSWAGEN are currently using the Polo as it World Rally Championship contender. This heavily modified (and I really mean heavily modified) barnstorming version uses a 1.6-litre turbocharged engine developing 320PS with a 0-60 time of 3.9 seconds, six-speed racing gearbox and fourwheel-drive. Closer to home and certainly more affordable at £18,850 is the Polo GTI, which is the latest in a line of highperformance compact cars from VW and is powered by a new 1.8-litre turbo petrol engine developing 192PS and sees this pocket-rocket reach 0 to 60 in 6.7 seconds. Following the Golf GTI theme, red detailing is used to denote this sport model inside and out with red line running across the grille and headlights, red brake callipers and twin exhaust pipes externally, while the interior has red stitching to steering wheel and gear lever plus seat upholstery with a red tartan striped pattern. Comprehensively equipped, safety features include Electronic Stability Control (ESC), which has a Sport mode. Like on the Golf GTI, this enables the ESC to be adapted for use on for track

CHRIS MANNING days. It works in two stages, firstly the traction control is switched off, then ESC Sport is activated which mutes its intervention giving the driver more control of his input. The XDS electronic differential lock has an additional plus mode which adds to the vehicles agility. Out on the road, the Polo GTI can really be hustled along, and safely too! The ride is on the firm side as you would expect, but never jarringly so and for more enthusiastic performance, a Sport performance pack at £250 can be added which changes the response of the steering, accelerator and adds engine noise generator inside the car and suspension setting. The only minus point I could find on a 30-mile crosscountry drive was that the six-speed manual gearbox could be a bit vague at times, particularly with gear changes from second to third, but that was really the only fly in a lot of ointment. The Polo has VW’s latest range of modular infotainment systems on board. A 6.5-inch touchscreen, which includes proximity sensors (which means it comes to life as your finger approaches the

screen) and reacts to wiping movements like a smartphone. It is used to control a whole host of functions from music source selection from phone, USB and AUX connections, DAB radio and can read, compose and send text messages plus driver tips and journey analysis. And, yes of course it is Bluetooth prepared. The front seats hug in all the right place and the instrument cluster has large, clear chromed-ringed dials with the dashboard highlighted with splashes of piano black and matt chrome. Boot space is good with 60/40 split seat and the carpet mats front and rear coming with GT red piping. Volkswagen’s BlueMotion technology includes Stop/ Start and battery recuperation, and as a first in this class is the option is the automatic distance control system, a high-tech cruise control device which uses a radar sensor integrated into the front grille and can automatically brake or accelerate the Polo to a predetermined speed in flowing traffic. All in all the Polo GTI is a thoroughly likeable car. It may not have the bulging body panels of its Word Rally car sibling, but it does satisfy the enthusiastic driver at far less cost.

Top three taste victory while fourths still search for first win

HE teams followed on with the same sort of performances of the first few weeks. The firsts had two comfortable wins in low scoring matches and the seconds made slightly hard work of another win. The weekend started with an Essex League T20 match on Friday night. A large crowd turned up to watch and the friends of James Clifford were not disappointed as he returned four for 11. Nick Bailey played sensibly after an early collapse for a six-wicket win. Saturday’s game saw Harold Wood bat rather carelessly and excellent bowling from Sam Cook, Ollie Devenish and Ben Clifford meant they were bowled out for 92. Both openers fell cheaply but Jack Sterland was in fine touch and in tandem with Nick Prowting achieved the target. Bradley Green guided Chelmsford to victory over Southend & Ecko Monarchs for the second successive day. Mark Drain and Stuart Everard did the donkey work as the home side

were restricted to 188. The fifth wicket partnership between Lee Cranmer and Green broke the back of the chase. It was Harry Green who played the hero for the thirds who struggled to a single wicket win over Upminster. James Arnold and Alistair Fergus took three wickets apiece as Upminster were bowled out for 125. Only Steve Pleasant (56) and Green (23) reached double figures but Green and Keith Goodman combined to achieve a dramatic win. The fourths continue to search for a first win and had the worst of a draw at Upminster. Good team bowling just stopped the home side reaching maximum batting points, Harry Arnold collected three wickets. Despite a half century from Steve Bond, Chelmsford never threatened to chase that down, Wright claiming three wickets for the home team. A good team performance gained the fifths a comfortable eight-wicket win. Priyantha Siriwardana (3-34) and Callum Rudd (2-35) picked up wickets

and James Burns bowled a good spell without much luck. Micky Burns (46) and Barry Clayden (53) helped to knock off the runs. The only defeat of the day was for a young sixth team. They had Great Baddow in desperate straits but their adult players, Lazarus (54) and Taylor (30) managed to get the score up to 167; the main wicket-takers were James Boyden (4-49) and Matt Cole (3-36). No one managed to make a major score for Chelmsford, Ed Cole’s 25 being the highest as they were bowled out for 142, Pannell taking three for 23. Sunday’s game was a memorial match for former Club stalwart John Newman. His two cricket clubs, Chelmsford and Abridge met under the captaincy of his cricket playing sons, Mark and David. Mark had the better of things as his Chelmsford team won although David scored more runs. Gary Chidley, Paul Jones, Stuart Everard, Dave Goddard and Matt Poole all passed 40 for Chelmsford.

Pointless weekend in Monaco ALEX LYNN had a disappointing Monaco weekend, coming away without any points in the GP2 series. It started to go wrong in qualifying on Friday morning. He backed off for two laps to find a clear space near the end of the session, and was just about to put in some quick laps but was greeted by the chequered flag, all due to miscommunication with his engineer and qualified a lowly 17th. There was chaos at the start of the first race with a few stalled cars in front of the Dunmow

driver, and the start was delayed twice. In a safety car stricken race due a number of incidents,things did not go his way and Alex finished the race in 13th place, which would be his grid spot for the second race. The tight street circuit of Monaco does not provide many overtaking opportunities and for most of the race Alex was stuck in 13th place until the two drivers in front of him clashed which promoted him to 11th place, but still out of a points scoring position.

First team’s T20 success at season opener 1ST TEAM

CHELMSFORD proved too strong for their visitors in their opening T20 game of the season. Ben Clifford (315) and James Clifford (4-11) did the bulk of the damage as Southend were bowled out for 78. Good opening spells from Robbins (2-20) and Druce (1-6) reduced Chelmsford to 20 for three. Nick Bailey (33) batted sensibly and with support from Lee Cranmer and Bradley Green completed victory with more than 5 overs to spare. Chelmsford 95-2 Harold Wood 92 all out

A STRONG performance made it three wins in a row against Harold Wood. A sustained period of drizzle led to a delayed start and the visitors started as if they wanted to make up for lost time with some big shots. Mahmood (29) got a few good hits away but Sam Cook made a breakthrough and then Ollie Devenish entered the attack to great effect with two early wickets. Cook (2-13) struck again and then Ben Clifford and Devenish shared two wickets apiece as the innings subsided. The ninth wicket pair had

some success with Kristen Ali (29) leading the resistance. The decision to replace Devenish (4-35) paid off immediately as James Clifford (1-1) with the help of a brilliant catch by Jack Sterland broke the partnership. Ben Clifford then rounded off the innings to finish with three for 20. Harold Wood’s opening bowlers took a wicket apiece and reduced Chelmsford to 10 for two. It was important for Chelmsford to demonstrate that the pitch was a decent one and Jack Sterland (55 certainly suggested that. A fluent half century at about a run a ball dismissed any nerves. Nick Prowting (31) appeared to have been reduced to the status of a spectator but finished the game off with three successive boundaries. 2ND TEAM Southend & Ecko Monarchs & Trojans 188-8 Chelmsford 189-5

THREE wins from three continued Chelmsford’s winning start to the season with a comfortable win away to Southend. Losing the toss and bowling first on a greenish looking strip, Mark Drain’s pace reduced the home side to 19 for two inside 11 overs, the first bowled and the second brilliantly caught by Lee Cranmer at second slip. Southend

looked to rebuild through opener S.Grant and D.Colwill (26) with a stand of 47 in 11 overs before the latter was bowled by Stuart Everard. Immediately after the drinks break, Neal Abhyankar removed opener Grant; stumped, for a watchful 33 to leave Southend on 81 for four. This brought together Southend’s most experienced pair, B. Wathen and skipper W. Spear and they attempted to consolidate the innings in a partnership of 40, aided by a number of woeful dropped catches. Everard removed Spear (18) with the score on 121, and again Wathen and new batsman S. Johnson (15) set about trying to reach 200 in the last 12 overs. Everard, who hitherto had a very miserly return of two for 25 from 15 overs came in for some brutal hitting from Wathen, with one huge six disappearing into the middle of the duckpond, never to return. Everard did break the sixth wicket partnership of 48, by claiming Johnson’s wicket to make 169 for six with four overs left. Drain returned to strike twice in his last two overs including the wicket of Wathen, going for another big hit, well caught by Tom Halsey for 67, and the innings petered out at 187 for eight at the declaration on 52 overs. Drain had figures of 21-2-77-4 and Everard 19-3-56-3. In reply, Chelmsford lost a wicket

in the second over, but thereafter progressed confidently to the target for the loss of five wickets in 36 overs with 17 overs to spare. Gary Chidley (30), Lee Cranmer (39) and Rob Hayto (23 no) all scored at better than a run a ball and Bradley Green held things together with a solid undefeated 59. 3RD TEAM Chelmsford 126-9 Upminster 125 all out

CHELMSFORD’S batting travails continued but they dug out an important and dramatic win. An excellent opening spell from James Arnold put Chelmsford on top and Alistair Fergus settled into a good rhythm to build up the pressure. Shortly after the drinks break, Fergus (3-7) struck for a third time and the innings was in real trouble at 51 for seven but Upminster’s lower order dug out a few runs. The last wicket pair came together at 95 and played sensibly although Chelmsford were guilty of spurning a few chances to close the innings. Chelmsford’s out of form top order failed to fire and the nerves were jangling at 17 for three. Steve Pleasant played very well and Chris Drain hung in with him to take the score to 70 but two wickets in an over for D’Cruz put the game back in the balance.

Occasional wickets meant the game remained on a knife-edge, especially when Pleasant was out for 56. D’Cruz (4-34) took his fourth wicket in a good spell to make it eight down and Berry (3-30) took the ninth at 118. By this point Harry Green was playing pretty well but no one was staying with him. The combination of the oldest player in the team, Keith Goodman and youngest, Green (23) did enough with an excellent cover drive completing a nail-biting win. 4TH TEAM

SOUTHEND’S DRAMATIC WIN Goalkeeper Bentley stars in 7-6 penalty shoot-out to gain League One status

OUTHEND gained promotion to the Sky Bet League One in dramatic fashion after a 7-6 penalty shootout win against Wycombe Wanderers in the League Two playoff final at Wembley last Saturday. Wycombe were seconds away from victory as they lead 1-0 in extra-time after Southend goalkeeper Daniel Bentley’s own goal. Southend looked down and out, and even a few hundred fans gave up the ghost, flocking out of Wembley as the fourth official added two minutes of added time However, those fans that left missed one of the most dramatic goals in play-off history as substitute Piggot latched onto a Corr knockdown and was coolness personified as he fired into the bottom corner from 15 yards. with a

120th minute equaliser. Bentley then became the hero in the shootout when he palmed a Sam Wood effort onto the post. Momentum was now with Southend in the shootout but Ben Coker handed the advantage back to Wycombe with a poor penalty straight down the throat of goalkeeper Alex Lynch. Wycombe again had League One in sight but Bloomfield was denied by a fantastic save Bentley to draw the teams level. Despite the sudden death nature of the shootout both sets of penalty takers kept their cool with some fantastically took spot-kicks and it was only a brilliant save from Bentley to divert Wood’s penalty off the post that separated the teams and give a dramatic victory to the Shrimpers.

Weakened Hammers suffer away defeat

A DEPLETED Vortex Lakeside Hammers were taken apart by the Wolverhampton Wolves last Monday at Monmore Green, who took a convincing 60-33 victory. With Kim Nilsson and Richard Lawson already riding in a GP Qualifier and for Premier League Glasgow respectively, a tough task was made even harder first with the sickness withdrawal of Andreas Jonsson and then when Edward Kennett was also ruled out with a suspected broken hand, following a crash in heat 15 during Rye House’s afternoon meeting. Skipper for the night Mikkel Bech did however provide some positives at the away fixture, showing a great return to form with 16 points. Reserve Steve Boxall, back in the side after a prolonged injury layoff, also showed what the Hammers have been missing at the second reserve berth, chipping in with 7 points. But tracking three guests and Rider Replacement against a solid Wolves outfit was always going to be a tall order. On a further positive note, Edward Kennett has declared himself fit for this Friday’s showdown (May 29) at The Raceway against the Belle Vue Aces, as further X-rays showed no break in his hand as first diagnosed. Norwich back in Premiership NORWICH City secured an instant return to the Premier League with victory over Middlesbrough in the Championship playoff final at Wembley last Monday. In a match worth a potential £120m to the victors, Cameron Jerome took advantage of a Daniel Ayala error to put the Canaries ahead. It was 2-0 after 15 minutes when Nathan Redmond arrowed a shot into the corner. Jelle Vossen came closest for Boro when he struck the bar, but their six-year absence from the top flight continues. Victory for the Canaries in front of more than 85,000 fans is the culmination of a remarkable run of results under new manager Alex Neil, appointed in January. The 33-year-old was unheralded in England, but presided over Hamilton’s promotion to the Scottish Premiership last season, and will now become the youngest manager in the Premier League.

Third for Jets in competition AN EARLY start for the Jets’ first outing for the new look squad with Nathan F and Myles, in a mini tournament football format in which they don’t have much experience. The Jets found themselves in Group Three against two Forest Glade teams, Braintree Town Lions, UBC and Orsett Park Royals. They played their first game with great enthusiasm. It was great happiness therefore when after losing 1-0 they found out that the wrong team had turned up to face us. So with the ‘practice’ game under our belt, the Jets then faced UBC drawing 0-0 and a point to the good. The game against eventual Group winners Forest Gate Blues proved to be a real learning game but despite the loss the Jets were confident that they could do some damage to the teams they were watching in front of them. Haydn scored the winner against Braintree Town (Lions) and Shaun opened the scoring with a cracker of a shot against Orsett Park Royals only to run out 3-1 losers. In the final game of the

group stage, both Jake B and Jake D found the net but Man of the Match for that particular game had to be Ben who saved a penalty ensuring the Jets’ third clean sheet. Some lovely passing was shown, Marcello’s right foot is coming on a treat with long range shots on target and Nathan W’s speed was certainly being put to good use. Daniel proved to be a nuisance to the opposition up front. So all in all a good

tournament with the Jets finishing third in the group stage. Walking footballers win tournament

Chelmsford Walking football team members entered the Walking Football United Tournament 2015, which took place in Maldon. Success in the tournament now sees them through to the next round and Essex Champions for the second year running.
