he kids have gone back to school, the leaves are starting to change colour and knitwear returns to our wardrobes; September is a time for a new season and new beginnings and so it seems a perfect fit that this is my first edition as Editor of EAUX. I’ve been following EAUX’s journey since it’s first issue back in December 2014 and have always loved how it collated the very latest information about luxury lifestyle businesses in our county on its beautifully designed pages. A Suffolk girl born and bred, this county has a special place in my heart and being able to promote all the fantastic local businesses that reside here is such a joy. This issue we’ve focused on Education, with articles from Framlingham College and Suffolk One to read as a new term dawns. We also have a special section on Weddings for those who have recently become engaged during their summer getaways; turn to page 17 to find the venue of your dreams.
In our HEALTH & BEAUTY section our new beauty expert, Melissa Day, answers your reader questions in her column, Melissa’s Masterclass on page 41 and we meet the new owners of MR. Barbers that opened over the summer in Ipswich. GOURMET has an emphasis on delicious drinks this edition, with a Gin Review, a visit to The Angel in Woodbridge and a Brewery Tour of East Anglia all to be found in our pages. All For One Achieving above average results for A2, AS and vocational courses this year, One starts the Autumn Term on a high

Achieving their potential Framlingham College describes how they work with pupils and their parents to ensure each student achieves, and exceeds, their potential

sk anyone in East Anglia which school is leading the way in the area and it won’t be long before Framlingham College is mentioned. Recent years have seen this remarkable school emerge as one of the real quality independent schools in the East of England. Educating boys and girls from 2-18, first at the College’s prep school (2-13) and then at the original College site which is set in stunning surroundings in the market town of Framlingham, the school is absolutely thriving. RACHEL DE ROEPER LIVING ART WHEN DID YOU START TRANSFERRING YOUR ART TO TEXTILES AND FASHION? I was approached by a couturier friend back in 2011, and her client required a bespoke fabric as a Mother of the Bride outfit in a woven silk. Following this I had great interest from various big name fashion houses, which gave me the impetus to develop my own brand, ‘Rachel de Roeper Living Art.’ This year, my art brand was
WHEN DID YOU START MAKING HANDMADE JEWELLERY AND WHAT INSPIRED YOU TO BEGIN? I taught myself how to make a few pieces for personal use. After a while, mums at the school gate were asking me to make jewellery for them, and it just took off from there. I like to mix up textures and use a range of materials, using ribbon, leather and lace together, then add some crystals or gemstones, maybe with some spikes to give the design a risqué, edgy feel.

WHAT INSPIRED YOU TO START YOUR LUXURY BRITISH HANDBAG BRAND? My inspiration for my brand really came from my family. The Jardine’s are an entrepreneurial bunch who never stop thinking of new innovative business ideas. I have a serial entrepreneur for a husband and two hugely inspiring sons – one of which at the age of 24 started a company manufacturing charging points for electric cars. I myself had run my own modelling agency and dipped my toe into the world of fashion before raising my children. The designer streak was always there lying dormant for some time. Just before I reached my 50th birthday, I decided I no longer wished to be a spectator on business ideas but wanted to create one myself. I wanted a new challenge in my life.
WHAT MADE YOU DECIDE THAT YOU WANTED TO SUPPORT BRITISH MANUFACTURING? I felt very strongly about supporting British manufacturing. When I first started researching the idea of having my bags made in Britain, I was told by many people it would be so much cheaper to have them made abroad and I must be mad. This was a red rag to a bull and made me more determined to have my products British made. The benefits of having my bags produced here outweighed having them made abroad. The ease of being able to visit the factory during the sampling process, choosing the materials, keeping a close eye on production and most importantly building relationships with the amazing team who craft my bags.
HOW DID YOU MAKE IT FINANCIALLY VIABLE FOR A START-UP COMPANY? I looked into many fund-raising methods when I first started, but did not want the huge pressure and time limits of being answerable to outside people in the critical early days of starting my business. The easiest way was to self-fund it myself – I would only have myself to answer to if it went wrong! Of course the business had to be financially viable or there was no point in doing it – the numbers have to add up and my business model shows a positive result.
WHERE AND HOW DID YOU FIND YOUR MANUFACTURING COMPANY? It took hours and hours of research on the Internet, visiting trade shows, talking to anybody who would listen. After many ups and downs, I finally have found a wonderful,
highly skilled production team with a rich heritage who can produce the high quality that I require.
WHY DID YOU FEEL PASSIONATELY ABOUT NOT USING OVERT BRANDING ON YOUR BAGS? I have always admired designer handbags over the years, but just never wanted to own one with the sometimes, dare I say it, slightly ‘blingy’ branding – I wanted something discrete but still recognisable. I didn’t want to jump on the tube and see every other woman with the same mass produced branded handbag. Part of my passion was to create something that is recognisable as a brand but beautifully discrete.
WHERE DO YOU START WHEN BEGINNING TO DESIGN A NEW COLLECTION? Any designs have to be part of my own experiences and inspiration. I don’t believe in taking other people’s designs and just recycling their ideas. I had always loved handbags – right from the early age of owning a leather music case at the age of 7, pretending it was a smart handbag as I walked to my piano lessons. I often wondered what it would be like to take the essence of this design and turn it into a beautiful chic and stylish handbag. Well all these years later – this is what I hope I have done!
WHAT’S THE INSPIRATION BEHIND THE NAME JARDINE OF LONDON? When researching the name for my new handbag brand, I felt it was really important to have my name on the product. When I started looking into the name Jardine, I discovered the Jardine Star Brooch. This brooch is a lateVictorian diamond star – it was left to Queen Elizabeth II by Lady Jardine in 1981. The brooch is one of the Queen’s favourites – she wore it on her 90th Birthday as well as on her famous pageant river trip down the Thames for her Diamond Jubilee.
HOW DOES IT FEEL TO KNOW YOU’RE NOW STOCKED IN FENWICK’S IN COLCHESTER? When I started the business two years ago I could only ever have dreamt about being stocked in one of the Fenwick stores. It is incredibly exciting, especially as this store has just undergone a £30M refurbishment plan. he EAUX Team were kindly invited to an exclusive event for Niroshini Skincare, held at the fabulous Cake and Catwalk store in Ipswich. A beautiful evening, the bubbly was flowing as the guests enjoyed nibbles and dips in the garden. Set up to act as a focus group to gain insight into the prospective packaging for the brand’s new three step facial regime, this stage in the process was crucial as the formulas need to be tested over a 9-12 month period in the exact packaging to gain the correct testing and safety certificates. Asking guests a number of questions regarding the carefully thought-out packaging designs, Melissa Day, owner and founder of Niroshini Skincare was joined by Tim Maulden from Virtue Design, Helen Oldfield from Affinity PR and Gill Robinson from Page Creative who have been collaborating with her on this venture.
Her techniques help with a range of health and skin requirements including sagging skin, wrinkles, muscle toning, acne and other skin conditions, but now she will be taking her business one step further by developing her own specialist spa skincare range. Her own extraordinary spiritual and emotional journey has encouraged this new venture. Melissa’s story has already taken her halfway across the world to discover her birth mother, who through tragic circumstances gave her up for adoption in Sri Lanka 31 years ago. Brought to the UK and now residing in Suffolk, throughout her childhood Melissa only had one valued connection to Sri Lanka – a picture of a woman at a convent holding a baby in her arms. When a friend went on holiday to Sri Lanka and offered to visit the convent, it was through a miraculous set of unbelievable coincidences that her birth mother was able to be traced, and she also treasured her own copy of the very same picture.
Now seeking to bring the remedy to the West, Melissa is looking forward to being able to give something back to her family, and other working tea families, by creating sustainable farming and management jobs in Sri Lanka, growing the ingredients. The recipe is a closely guarded secret, but we’re looking forward to the launch of Niroshini Skincare and the first product range of a three step facial regime. hroughout the summer, residents at Care UK’s Cedrus House care home on Creeting Road East in Stowmarket have been enjoying all the benefits of spending time outdoors in their wonderful gardens. Residents and colleagues have been busy planting herbs and flowers in their new sensory garden. The textures, colours, sounds and smells of the garden help to promote relaxation and calm, particularly for residents living with dementia, and the accessible raised planters enable residents to keep active and continue with their love for gardening. Cedrus House has also welcomed four new residents – a brood of speckled chickens,

which are cared for by residents and colleagues in the gardens and have provided residents with a sense of purpose and responsibility. s best friends Darren and I had always planned to go into business together. We looked at many different business ideas but always seemed to return back to that of a barbershop. A barbershop may seem a strange move, but Darren was not new to the world of barbering, as his three brothers-in-law are all barbers and own their own shops, so it almost seemed a natural progression. It was around May 2015 when the project really began to move forwards. I stumbled across this incredible shop in my hometown of Bury St Edmunds and immediately fell in love with everything about it. It was so unique and like no barbers I had seen previously. I immediately got on the phone to Darren and told him he needed to see it, and I wondered if they licensed or franchised. This was where our ‘MR.’ story began. After much deliberation and discussion we knew we wanted to get started. The problem was, where? We both felt there was an obvious connection with Ipswich and Darren was desperate to do something there to enable him to give back to the town that had been so good to him. When we eventually discovered the site at 205 Duke Street we just fell in love with it. The shop had never been used by anyone before and it was literally a ‘concrete box’. It was perfect! It had this completely unfinished, rugged, manly feel about it. This vision was brought into being by Sam Prior at MR. Barbers, he just has this eye to see things that many don’t. We always felt that the hardest part of the project would be to turn the concept into reality, and we can’t thank Paul Hobbs and his team of shop fitters enough.
It was incredible to see this shop progress from a concrete box into what we believe to be one of the finest barbershops around. We eventually opened our doors on Saturday 6th August. We were just blown away by how busy we were. We couldn’t believe our eyes when we had a queue outside the shop at 7:45am. It was one of the most incredible days. This was backed up by Darren’s mantra of giving back to the town and we ran an opening day promotion that entitled all Ipswich Town FC season ticket holders to a free haircut. This again was a huge success and added to the fabulous opening day we had. We’ve been advised that this was the busiest opening day of any MR. branded shops, which was just a wonderful feeling after all the toil and hard work. The one thing the MR. brand has is a lovely family feel about it. All the shops support one another in any way they can which is a fantastic help, especially when starting out as a new business. You may see on promotional material #mrbarbersfamily and this is so very true, we can’t thank everyone enough for their support. The future for us is clear though, as a partnership we’d like to continue to push the MR. Barbers brand, and by this we mean to grow by more shops and on top to actively encourage people to take the plunge and join the brand by opening their own shop. It’s a fantastic brand and we can’t recommend it any more highly. The team at MR. with Karl Foster and Sam Prior are incredibly supportive and helpful. Everything about the brand just matches our own vision and we believe the future is very bright for us within the MR. Barbers brand. MR. Can you give me some advice?’ Megan, via Facebook Hi Megan, thanks for writing in. I have several simple tips you can try if you suffer with oily or spot prone skin. As with everything I do, I approach the concern in a holistic way. In your case Megan, I’m going to look at what’s going on inside your body that may be causing the issues, as well as how to keep your skin healthy from the outside. First off, if you find your skin is prone to breaking out, try upping your intake of water to
6 – 8 glasses a day. Water flushes out toxins from the body, clears the skin and encourages a healthy glow.
oil acting like a cleanser in your mouth and removing any nasty bacteria before it is able to enter the bloodstream.
Secondly, I’d advise taking a look at what you are eating. Is your diet balanced, full of nutrient rich foods and is the main component of each meal fruit and vegetables? Fatty foods and high sugar foods are a key player in causing breakouts.
I’d advise washing your face twice a day with a gentle cleanser, then applying a toner and a light moisturiser. Favourite active ingredients that I can recommend are witch hazel and tea tree. When choosing a moisturiser, try to find one designed for spot prone/oily skin or alternatively one that isn’t too heavy and creamy.
Another preventative measure is oil pulling using coconut oil. Oil pulling is the practice of putting a tablespoon of coconut oil in your mouth on an empty stomach and swishing it around for twenty minutes. This ancient ritual is said to remove toxins from the body; the

Bikram, Vinyasa, Prana Power and Hatha; with so many different types of classes to choose from, it’s time we decoded yoga

physical and spiritual practice from ancient India, there are many different forms of yoga. Known to help tone the body, increase flexibility, improve cardio and circulatory health and even promote mindfulness, yoga has becoming increasingly popular for those looking for a well-rounded workout schedule. But with popularity brings a number of new classes, such as Hot Yoga, Prana Power and PXT. With so many options it’s hard to know which one is right for you – here we hope to help you decode yoga.
ASHTANGA YOGA Also known as Raja Yoga, this is a traditional form of yoga. Following a specific sequence of moves, each of which links to taking a breath in or out.
BIKRAM YOGA Created about 30 years ago by Bikram Choudhury, participators, like in Ashtanga, will perform a sequence of postures. The room is heated to high temperatures whilst you go through the 26 moves.
HATHA YOGA This refers to any class that teaches yoga postures. Often for beginners, they are gentle to teach the moves.
HOT YOGA The classrooms are heated to up to 40˚c, so prepare for a sweat soaked workout. Ideal for those who don’t feel that they are training hard enough when taking a yoga class, they normally deviate slightly from Bikram.

PRANA POWER YOGA A combination of Hot Yoga and Vinyasa, this takes the workouts up a notch with an incredibly hot classroom moving through flowing postures.

Myles Davies visits Casablanca in Ipswich to delight in their fusion of Lebanese and Moroccan cuisine
S
ince we first stepped foot into Casablanca back in November 2015, we have had a continued love affair with their unique style and blend of Moroccan and Lebanese cuisine. I was delighted to be asked back to sample some of the new dishes on their menu and get up to date with such a wonderful variety of tastes and smells. The starters included such delicacies as Cheese Burak, a sumptuous pastry filled with halloumi cheese, that had been oven baked to perfection, and a dish called Arayes, a beautifully seasoned grilled Lebanese bread filled with minced lamb, onions and parsley that created a splendid starter. We also tried Hummus Shawarma; puréed chickpeas with a sesame paste, seasoned with lemon juice, and olive dressing that acted as a base for slices of lamb

shawarma on top. King Prawns in a light batter served with a lemon mayonnaise dip was another favourite. These crispy prawns were a delight and the dip that was served tasted like a cross between lemon mayonnaise and lemon infused tartar sauce; it really set off the flavour of the prawns. Whenever we go out for dinner, we like to choose a selection of starters to be eaten in a Tapas style buffet, allowing to try individual dishes and savour their tastes, while at the same time mix different dishes to create new flavours. Moving on to the main courses, we asked our hosts for a suggestion. We were delighted with their recommendations of flame cooked Lamb Ribs marinated with Moroccan spices and Minced Meat Balls served in a Tagine with couscous. These lean lamb balls filled with onion, garlic and spices simmered in tomato sauce and were topped with yoghurt. The lamb ribs really could not have been more perfectly cooked, with the right amount of flavour that really set off this fantastic meat.
We have never been disappointed with the quality of any of the dishes from Casablanca, but the Lamb Ribs really did stand out from the crowd. The Minced Meat Balls, which were served in a tagine, with a tomato based sauce and drizzled with a cooling yogurt on top. A total delight and fantastically presented, the minced meat balls were cooked on a slow heat and really marinated in the tomato sauce within the tagine. The couscous served alongside made the ideal companion to this main course, and when mixed with the sauce was the best way I found to ensure that you did not miss a drop of this wonderful main dish. unning from Thursday 29th September to Sunday 2nd October, the Woodbridge Shuck Shellfish Festival brings together an exciting programme of foodie offerings and events to celebrate local shellfish and other local produce this autumn. The festival’s organisers; Simpers Silver Harvest LLP, Somerleyton Estate, The Crown at Woodbridge, The Tea Hut, The Bridge, The Anchor and Bubble & Squid, will bring together local produce, chefs, musicians and more to create a special celebration of the River Deben and the delicious produce found in and around it. Supported by sponsors, East of England CoOp, Adnams, Gotelee and Infotex, this year’s event is set to be bigger and better than ever. The festival begins with a new event for 2016, ‘The Pub Trawl’ on Thursday 29th September. Pubs in the area will be serving up Shuck themed beer & bar food, as well as fizz & nibbles.
The popular ‘Shuck Shack’, a pop up restaurant at The Tide Mill, will take place on the evenings of Friday 30th September and Saturday 1st October. Catered by Stephen David and Rebecca Mackenzie of Somerleyton Estate, diners will enjoy a beautifully prepared locally inspired menu in this unique riverside landmark. For a more casual yet equally tasty foodie experience, ‘The Shuck Weekender’ takes place in and around The Tea Hut on Saturday 1st and Sunday 2nd October from 11am until 6pm with live music all weekend by the Deben Collective and other artists. Visitors can feast on de-constructed moules frites, fresh fish from the Deben, squid, pasta and paella while enjoying something cold from the bar. In a new twist, throughout the Shuck Weekender at The Tea Hut, there is the opportunity to buy freshly caught fish from Simpers and take it to The Crown’s adjoining stall to have it cooked to your liking right then and there.
The celebration of local seafood spills from the river right through the historic market town, with Shuck Specials on the menus at the town’s many restaurants, pubs and cafes. The Festival concludes with the highly anticipated annual ‘Safari Supper’ on Sunday 2nd October. Diners will meet at The Crown for drinks and canapés and then move between three restaurants, enjoying one course at each, including the closely situated Table and The Anchor. ‘It’s the fifth year of The Shuck and it will be the best yet,’ said Jonathan Simper, cofounder of the Woodbridge Shuck, ‘We have fabulous shellfish and other local produce prepared by top local chefs. pon meeting Mark and Tanya Hougham it instantly becomes apparent why they have had such success at The Castle Inn at Bungay. I received a warm welcome and as we took a seat in the dining area of the carefully restored pub, their enthusiasm for the local area and the incredible produce it provides was palpable. Since taking the helm of The Castle Inn nine years ago, the couple have been at the forefront of the development of pub dining. As Mark explained,

Pubs have really changed in the past ten years and we’ve seen things changing. We’ve either seen pubs go under, or changed to a different style. Since day one we were pushing the idea of using genuine local ingredients, and when we arrived here, no one was doing that, and I think the locals recognise that we were the first.’
The atmosphere of the restaurant also goes along with this ethos, the feel is that the owners have made it their own, whilst remaining true to the heritage of the 550 year old building– something they describe on their website as being ‘proud to be playing a small part in its history, whilst hopefully moving the tradition of inn-keeping forward.’ The wooden floorboards have been restored, the flint bar still standing and a patch of herringbone wall hints at a story of a bygone pub era. Showing me a portfolio of his suppliers since opening the pub in 2007, as Mark flicks through the pages of photographs that span

almost a decade, it is obvious that this not only documents the building of his business, but is also a trip down memory lane with suppliers who are now friends and who continue to trade veggies for beer or a trawl of fish for a pick from the specials menu. Amongst their friends are the makers of Baron Bigod Brie (the first batches of which were made in the pub’s cellars), Marybelle Ice-Cream and the Earl Soham Brewery. As a free house, Mark prefers to offer his patrons something not from Southwold and instead opts for different, and preferably local, beers, wines and ciders. Oak Hill Wines from Fressingfield has become a favourite, and Aspall and Calvors lager can also be found behind the bar. Changing the menu to suit the seasons, the specials board is always full of the freshest of ingredients. On the day I visited, a dish of pigeon breast was featuring after a man had come in during the Bungay Street Fair
and offered Mark 150 pigeon breasts; you can’t get fresher than that! Bunny and Bambi Burgers are a playful twist on pub food, but the classics remain. ‘For lunch we’ll do ham, egg and chips, pork belly ribs, fish and chips, and then we do pies and a top side of beef on a Sunday even during the summer. There are some favourites you just can’t take off the menu, such as ham, egg and chips, but because we honey roast the ham ourselves, people say they can’t buy ham like it. As a chef, if you can do a simple, classic dish, but as best as you possibly can, then you can still be proud of something that to the eye may look dull, but when you taste it…it speaks for itself.’ For the autumn, the menu will change in mid-September to focus on game season. Pheasant, partridge, quail, duck and goose will take centre stage and the mussels will be back by popular demand. The mussels at The Castle Inn sound delicious; a British take on Moules Marinière, with Aspall Cyder, Blythburgh
smoked lardons, garlic, shallots and cream, the likes of which can sell out 20 kilos of mussels in a weekend. After the rave review in the Sunday Times, The Castle Inn has seen a new wave of diners who hadn’t discovered the restaurant before, but with a host of awards already under their belt including two from The Observer Food Monthly and a loyal following of locals, the pub was already busy over the summer months and booked solid at weekends. Tour of East Anglia Ruth Cutts explores the wealth of local breweries offering real ale in our region of East Anglia
The Brewery opened in 2013 and is proud of its Norwich heritage, boasting on its website that the team work with the passion and aim to create ‘lagers and beers that re-ignite the city’s rich brewing heritage’. The Brewery also had the first ever Craft Beer Bar at the Radio 1 Big Weekender in Norwich in 2015 which proved hugely popular as festival-goers enjoyed buying local beer over the mass produced commercial brews that were also available. The Brewery’s best seller is the Steam Lager described by Director, Amy Hancock, as a ‘a fantastic beer, a true gate way into craft beer. It is a hybrid between an ale and a lager, brewed with lager yeast and lager malt but

fermented at ale temperature. It’s perfect for ale and lager lovers’.
ST PETER’S BREWERY, BUNGAY Heading south to the quaint market town of Bungay, we have St Peter’s Brewery housed in an attractive range of traditional former agricultural buildings adjacent to St. Peter’s Hall. The bread and butter of St Peter’s is the real ales, brewed using local East Anglian malts, British hops and water drawn on site from its own deep bore-hole. The range also extends to slightly more ‘exotic’ alternatives such as honey porter and fruit beers depending on the season. Brewery tours are available from Easter until December, usually on Saturdays and Sunday’s and leave every 90 minutes between 11:00-13:30.
THE OLD CANON BREWERY, BURY ST EDMUNDS The Old Cannon brewery in Bury St Edmunds combines a restaurant which uses locally sourced ingredients, a Real Ale pub, seven B&B rooms and a seven barrel brewery. The brewery itself is very impressive and tours are regularly available to ale enthusiasts. The Old Canon is also the only pub in Suffolk where you can see the beer being brewed right next to you while you drink – the big stainless steel vessels in the bar area are not just for show, and are generally used every Monday.

When asked for some advice for those aspiring home brewers who want to turn their hobby into a business, Brewer Tris gave the following advice; ‘Learn about the brewing process as much as you can. Concentrate on hygiene, keeping the equipment sterile cuts down lots of risks. On that note, buy the best equipment you can afford, you need a really good kettle with a powerful boil to help sterilise the liquid.’
CALVORS BREWERY, CODDENHAM A short drive from Bury St Edmunds is Calvors Brewery in Coddenham. Calvors takes its name from the original name of the farm ‘Calvers Farm’ but Alec Williamson, founder and brewer, changed the ‘e’ in Calvers to ‘o’ so that if someone googled Calvors, the brewery would be the only business to pop up – ingenious really. The brewery recently won awards in two categories of the SIBA (Society of Independent Brewers) beer awards – a Gold for the Amber Vienna-style lager in the standard lager category and a Silver for the Dark Dunkel-style lager in the Premium lager category. Calvors has recently had a makeover and 2016 looks to be an exciting year for the brewery. Pam Livesey, the Brewery’s Business Developer, explains; ‘Our exciting plans for 2016 centre around the rebranding we have done recently. Not only a new website and new ‘craft’ look for our beers, but new bottle labels, pump clips and marketing materials (e.g. beer mats, bar runners, posters). This has already injected new enthusiasm for our products, particularly the bottles, where stores have realised how much more appealing the bottles now look on their shelves.’
Bishop Nick is steeped in history with the name evolving from Nicholas Ridley, a bishop that found himself in a bit of trouble in 1555 for his religious beliefs. In 1842 the Ridley name first became synonymous with brewing when Thomas Ridley built his brewery on the banks of the River Chelmer. Over the next 163 years six generations of Ridleys honed their skills and now Nelion Ridley is at the helm and continues the legacy of bringing the best local brews to the people of Essex. Its most popular products are the no-nonsense traditional East Anglian bitters, particularly the Ridley’s Rite (3.8%) which co-founder, Libby Ridley, describes as ‘a session bitter which is reminiscent of old Ridley recipes but with a contemporary appeal.’
MERSEA ISLAND BREWERY, MERSEA ISLAND This little slice of Mersea Island in Essex is a hub of delights for the palette with Mersea Island Brewery producing a range of beers from their dark Oyster Stout to the light and refreshing Island Gold. The Mersea Island Vineyard is home to a number of white wines and Maria’s Vintage Tea Room has a range of great food and drink options for visitors. If wanting to try something a little different then grab a glass of the newly created ChampAle which combines Real Ale ingredients with the traditional Champagne method for the production of sparking wine. The Brewer and the Winemaker have definitely worked harmoniously together on this product.
Heading south into Essex you will come across Bishop Nick Brewery in Essex. This place is the first and only commercial brewery in Braintree with the view to extend its reach in 2016 to the boundaries of Essex, Cambridgeshire, Hertfordshire and Suffolk.

ith over 200 varieties of gin available, The Angel in Woodbridge has well deservedly won the title of ‘Spirits Pub of the Year’ for East Midlands & East Anglia in previous years. We caught up with Owner Sarah to find out more about the pub with the largest offering of gin in the county.
HOW DID YOUR LARGE COLLECTION OF GINS BEGIN? When we moved in seven years ago, the pub had been closed down and was in a horrible state. We completely renovated the place and when we opened we had 22 different spirits in total, but within a few months we had 22 varieties of gin too as we couldn’t decide which to make our house gin. People had started to say we were a gin pub when we only had five, so we kept buying different ones, and kept learning about them, and before we

knew it we had 22 and really were a gin pub! We kept seeing more and more varieties being brought out and the industry was developing all the time, so decided to get to 50 and then stop, and then we kind of lost count…and here we are!
WHY DO YOU THINK GIN HAS HAD SUCH A RESURGENCE IN RECENT YEARS? Well, I think it all came about because of the recession. All of the big whisky distilleries suddenly noticed that the big corporate organisations weren’t buying 30 year old whiskies for their clients at Christmas, instead reining it in and buying a 20 year old whisky to save a bit of money. However, they have made this investment in their distilleries, so they need to make a return and a quick turn around. They’ve already got all the equipment there, so they started making gin because it was quick and easy. It started, or seemed to start, in Scotland, and then it became a little more fashionable with new flavours being added in. Most people
use a London dry recipe as a basis, and from there you can add anything you like, the world is your oyster; you can take a twist on gin and make it interesting, which many distilleries have done.
WHAT WOULD YOU SAY MAKES A GREAT GIN? Anybody that creates their gin from scratch, and I mean, not buying in a base alcohol, but working through the process with the raw products to begin with.
WHAT’S YOUR DESERT ISLAND GIN? Even despite having tried many varieties over the past seven years, my desert island gin is still the same; it’s Plymouth Gin. CRAYFISH & SALMON CEVICHE WITH MARINATED
CUCUMBER
FOR THE CEVICHE: • ½ side of fresh salmon (ask the fishmonger to skin & pin bone for you) • ½ a red onion very finely sliced • Zest & juice of: ½ a lemon & 3 limes • 1 red chilli deseeded & thinly sliced • 1½ teaspoons sea salt • ½ level teaspoon black pepper • 2 tablespoons freshly chopped coriander

Slice the salmon as thinly as you can, the colder it is the easier this will be. You can also marinate it whole & keep basting – slicing later. If you marinade it whole you will need to marinate for at least a day.
FOR THE MARINATED CUCUMBER: • • • • • •
½ cucumber 125ml white wine vinegar 50g caster sugar ½ teaspoon salt Good grinding of coarse black pepper 2 tablespoons fresh dill – mostly chopped Using a peeler, shave ‘ribbons’ off a half cucumber avoiding the seeds. Make a pickling liquid of all the other ingredients, reserving a few dill leaves. Allow the fish & the cucumber to marinate for at least 2 hours. To finish the dish add Crayfish tails (or prawns), Baby gem or mixed leaves and wedges of lime (or lemon).

Nick Barrett from Scutchers Restaurant in Long Melford reveals its popular recipe of wild turbot
FILLET OF WILD TURBOT 5 © Scutchers Restaurant – The Suffolk Cook Book, Meze Publishing
Serves 4
• 2 large tomatoes • A bunch of asparagus • 4 x 180g turbot fillets, skinned, plus 8 small fingers of turbot • Plain flour, for coating • 1 egg, beaten • Panko breadcrumbs, for coating • 2 tbsp lemon juice • 8 tbsp olive oil • A pinch of sugar • 100g broad beans, blanched and skins removed • 4 rashers unsmoked streaky bacon, cooked and cut into strips (optional) • A few chives, snipped • Oil, for deep-frying • Salt and black pepper

Blanch the tomatoes in boiling water for 20 seconds, then plunge them into cold water. Remove the skins, which should now come away easily, and cut the tomatoes into quarters. Remove and discard the seeds and cut the flesh into a small dice. Set aside. Cook the asparagus in a pan of salted boiling water for 3-4 minutes, then refresh in cold water. Set aside. Preheat the grill to high. Place the turbot fillets on a buttered baking tray and season with salt and pepper. Grill the turbot under the preheated grill for 5-7 minutes, until cooked through (depending on the thickness of the fish).

Place a little flour in one bowl, the beaten egg in a second bowl and the breadcrumbs in a third bowl. Dip the four fingers of turbot first in the flour, then the egg and finally the breadcrumbs. Heat the oil in a heavybottomed pan or deep-fryer. Mix the lemon juice, olive oil and sugar together and season with salt and pepper to make a dressing. When the turbot is cooked, warm the dressing in a pan with the asparagus, broad beans, bacon, tomatoes and chives. Deep-fry the turbot fingers in the hot oil, until golden and cooked through. Drain on kitchen roll. Spoon the dressing mixture on to serving plates, place the turbot fillets on top and then add two turbot deepfried fingers on top of each portion.

FOR THE MERINGUE: • 1 egg white • 50g sugar • 1/3 of elderberry compote
FOR THE JELLY: • 450ml Nyetimber Classic cuvée • 150ml elderflower cordial • 5 leaves of gelatine
FOR THE BUTTERMILK SNOW: • 700ml buttermilk • 70g sugar • 15ml lemon juice

Using a fork, pull elderberries away from sprigs, bring the sugar and water to the boil with the elderberry sprigs. Pour mixture through a sieve (reserving the syrup) and coat the sprigs with sugar. Lay the elderberry sprig on baking parchment and dehydrate in an oven on its lowest setting for approx 30 mins, meanwhile return the syrup and elderberries to the pan and once again bring to the boil (this is important as elderberries contain toxins if eaten raw). Whisk the egg to stiff peaks, then add the sugar in thirds whisking well between each addition. This is made easier if you have a standalone mixer but otherwise expect to use some elbow-grease. Fold through your reserved elderberry compote once you have a stiff meringue and spread thinly over baking parchment. Place in the oven with your elderberry sprigs. Soak your gelatine leaves in cold water until soft; bring your cordial to a simmer and drop the gelatine leaves in. Whisk in your Nyetimber and set in ramekins or teacups. Combine your buttermilk, lemon juice and sugar for the snow and set in ice-cube trays. When they are set, blitz in a food processor and place in an air-tight container. For plating add Crystallised Elderberry Sprigs, Elderberry Compote, Nyetimber and Elderflower Jelly.

Bleue Georgia Watson dines at Maison Bleue in Bury St Edmunds
A
French restaurant in a quintessential British market town, Maison Bleue in Bury St Edmunds serves up authentic fine dining in an atmosphere of understated elegance and charm. Warmly welcomed by Owners Pascal and Karine Canevet, the couple have been creating modern French dishes for delighted diners in East Anglia for 18 years. Showing us to a table by the window, the dining area has several different spaces, all of which are decorated in relaxing neutrals, with comfortable seating, exposed beams and low lighting. Pascal and Karine have designed a restaurant with a sense of homeliness; Maison Bleue feels like a place where you can enjoy your dining experience for as long as you like, just as the French would. This makes for a refreshing change to the abundance of chain restaurants that have sprung up in Bury St Edmunds recently where you may feel that you need to eat up so they can turn over your table in a mere matter of moments. Not so at Maison Bleue, the diners who were sat around us all seemed settled in for a long leisurely lunch, with Karine speaking to every table in turn, many of which seemed to be regulars.

Offering us the menu, there was a choice at lunchtime between the A La Carte or a set menu of two courses for ÂŁ19.50 or three for ÂŁ25. Both sounded delicious with the set lunch tempting us with such dishes as raw marinated tartar of West Ross salmon, roasted breast and slow cooked leg of Norfolk quail, Lemon Sole and Breckland pigeon. However, the A La Carte set our taste buds watering with the option of a seared hand dived Orkney King Scallop to start served with seaweed powder, scallop panna cotta and mooli. My guest and I both opted for this scrumptious sounding dish and when it arrived at the table it was presented like a work of art. The scallop had a light flavour that was enhanced by the panna cotta, mooli and the slight crisp of the seaweed powder. A unique way of serving seaweed, it acted as not only a beautiful form of presentation, but a way of bringing out the salty-freshness of the scallop and gave the whole dish a real sense of being straight from the sea. For our main course, I continued with the theme of seafood and chose the fillet of Isle of Gigha halibut with polenta, Girolles mushrooms, red pepper butter sauce and Romaine lettuce. The halibut, plated into two towers, melted in the mouth, the fish flaking away. It was just as delectable on its own as it was with the sweet accompaniment of the polenta and the red pepper sauce. The Girolles mushrooms complemented the red pepper

sauce with a slight peppery tang that never overpowered the star of the show, the halibut. My guest picked the fillet of Aberdeen Angus beef, reared in Norfolk and served with garlic and horseradish velouté, morel sauce and leeks. She described the beef as cooked to perfection, and again the dish was presented beautifully with the glossy sauce and carefully decorated leeks and velouté. The smell of the dish was divine, and although I’m not a big meat eater, even I found the dish incredibly appealing. Already almost full to the brim, we couldn’t resist trying the desserts. Another thing to recognise about Maison Bleue is that here fine dining doesn’t mean small portions. The sizes are perfect, allowing you to enjoy all three fabulous courses. The marinated melon and watermelon dessert arrived to the table on top of a circle of lemon
spiced short crust biscuit with lemon curd and melon ice-cream. A refreshing end to the meal, the melon ice cream was a real favourite. My guest opted for the deliciously rich cream of pistachio with vanilla sable biscuit and raspberry ice-cream. After a meal of fabulous flavours served with French flair, it was time to say goodbye for now to Maison Bleue, a restaurant that continues to lead the way in fine dining in Suffolk by focusing on traditional hospitality and truly wonderful dishes. Located in an old warehouse on the waterfront in the Christianshavn neighbourhood, twoMichelin-star restaurant Noma is the epitome of fine dining. The restaurant, run by chef René Redzepi, is known for its reinvention of traditional Nordic cuisine, and due to its title of the ‘Best Restaurant in the World’ by Restaurant Magazine in 2010, 2011, 2012 and 2014, it is not uncommon to be faced with at least a three month wait to book a table.

ROYAL ATTRACTIONS
After a main course, must come dessert, and with Denmark being one of the best countries to enjoy traditional pastries, cakes and sweet treats, these are definitely something you should indulge in. Established in the 1800s, La Glace is one of the oldest pastry shops in Denmark. The extensive menu includes chocolate covered macaroons, potato cakes and truffles decorated with cream – all traditional Danish delicacies, as well as serving beautifully crafted baked marzipan and layer cakes.
Christian Anderson’s The Little Mermaid. Gifted to the city by Danish brewer Carl Jacobson in 1913, this bronze beauty is now over 100 years old and continuously entices visitors all year round. Nyhavn, originally a favourite with sailors docking from all corners of the world, has now been beautifully renovated to house restaurants, cafes and even the occasional jazz bar. Each brightly coloured building lining the harbour dates back to the late 1600s and is the ideal setting to end a long day. Enjoy dinner in one of the many cosy restaurants or do like the locals and buy a beer to enjoy whilst hanging your legs over the waters edge.
Amalienborg is considered one of the greatest works of Danish Rococo architecture and is made up of four almost identical buildings. Visit the palace at noon to witness the changing of the guard. Watch as the guards march from their barracks by Rosenborg Castle and through the streets of Copenhagen to end at Amalienborg.

Copenhagen’s food hotspots are however not limited to just fine dining. This beautiful city has also taken street food from across the world to a whole new level on Papirøen. Translating to Paper Island, the grey industrial halls that once served as paper storage for the Procurement Association of the Danish Press are now home to street food trucks from all corners of the globe. Indulge on delicious sustainable food either sitting indoors in the raw halls or out in the sun overlooking the city’s waterfront.
With one of the world’s oldest monarchies and a history that dates back as far as the early 1100s, the city is full of historic landmarks and significant buildings as well as prominent royal palaces, castles and statues. Christiansborg Palace, the original home of the Danish royals, is situated in the heart of Copenhagen and now contains the Danish Parliament and the Supreme Court. Parts of the palace however, are still used by the Royal Family for various functions and events. Take full advantage of The Christiansborg Palace and climb to the top of The Tower for an incredible view across the city.
MUST SEE SIGHTS Copenhagen has attractions to suit the interests of visitors of all ages, with the majority all being within walking distance of the city centre. Tivoli Gardens amusement park is perfect for those old or young; full of multiple theme park rides, historic buildings and beautiful green gardens, Tivoli is a must for thrill seekers as well as those who just want to relax. Tivoli at night is a truly magical experience too. The park’s oldest and most popular ride, the wooden Roller Coaster. Built in 1914, the Roller Coaster is one of only seven roller coasters worldwide which still have a brakeman on board every train. Located on Langelinie Pier, Copenhagen’s most famous attraction is the statue of Hans

Earlier that morning our flight from Gatwick had taken just over two hours. A thirty-minute transfer brought us to the Mercure City Centre hotel in Pest, perfectly placed for exploring the city. The hotel fronts Vaci Street, the main tourist pedestrian area full of bars and restaurants. The city is easily managed on foot, but there is also an old but excellent public transport network in the shape of aged trams and mainland Europe’s oldest underground railway.

Prices are certainly reasonable. At one end of Vaci Street we found Pointer, a large bar offering good pub grub which came in substantial portions. During Happy Hour, actually six hours, a half litre of excellent lager was £1.75 and the wines also come recommended. Tasty inexpensive food and drink is not a problem in Budapest.

The most famous of the bridges linking the two sides is the Chain Link Bridge, a larger version of the one crossing the Thames in Marlow and designed by the same architect, William Tierney Clark. Another link to the UK is the magnificent parliament building on the banks of the Danube, it was inspired by our own Palace of Westminster, and as almost everyone speaks English it’s easy to feel at home in this fascinating city. Russia dominated between 1947 and 1989, when the country became a parliamentary republic, and you still feel the sense of

Buda is the smaller but glossier of the two sides with the imposing Royal Palace dominating the skyline overlooking the river. A short distance away is the Matthias church and the famous Fisherman’s Bastion, a great place from which to photograph the city and watch the sunset. Full of tourists during the day, after dark it becomes a more sophisticated destination with enticing restaurants. We had dinner at the intimate Pierrot located in a 13th Century bakery house. The food was memorable, the sommelier knowledgeable, the service impeccable and the pianist excellent – fine dining at far less than you would pay in London. Next morning we set out to discover more. Andrassy Street is Budapest’s Bond Street. We walked a little way up then veered off to explore the local phenomenon of Ruin Bars. The city cannot afford to re-build all the ruined sites, so instead young entrepreneurs breathe new life into them by creating a series of bars on the sites. We visited the most well-known, Szimpla, just after mid-day. Most of the visitors were tourists having a look round, but later it becomes a lively and unique place to enjoy an evening drink.

Further along Andrassy Street is the Alexandra bookshop, originally the Paris Department Store, the first in Budapest. We sunk into the comfy leather sofas of the book cafe, a coffee house on the first floor, and admired the huge chandeliers and an impressive fresco painted ceiling by Károly Lotz. A short walk from there took us to Menza where we stopped for lunch. It describes itself as a canteen but that doesn’t really do it justice. You’ll find plenty of locals, always a good sign, many enjoying a bowl of goulash soup and a large pudding that looks more like a loaf of bread. Menza has something for everyone, no wonder they say that it attracts ‘a colourful clientele ranging from jovial pensioners and popular actors to distinguishing gentlewomen and exhausted tourists.’ Absolutely! Around 70 million litres of water a day flow from over 120 springs in Budapest, so a visit to one of the many spas is popular. The spring at the Széchenyi Spa delivers water at 76 centigrade. Originally built in 1913 it has been expanded several times to include public bathing and even a daytime outpatient hospital. Don’t be surprised to see bathers passing the time by playing chess in the healing waters. Hungary’s currency is the Forint, although most places accept Euros. However plastic is almost universally accepted and we didn’t use Forints or Euros during our stay. Budapest certainly makes for an easy, affordable and unique city break.

heavy backpack and guided me to my magical home for the next few days and I instantly felt the stress of travelling disappear.
his natural and secluded haven sits on a private cove just North of Costa Rica on the Emerald Coast, surround by lush, tropical greenery, built using sustainable materials and techniques by local people offering much work for the community. Being able to blend in to the forest that envelops the resort creates the perfect atmosphere for guests in search of meditation, yoga and massage therapy in an idyllic setting. After six hours travelling I made it to this oceanside paradise just in time for the afternoon Yin Yoga class and immediately felt so inspired about our future yoga and massage resort! The friendly staff helped me with my

ACCOMMODATION The whole resort is made up of tree-house-like structures and my Tree House Suite was like a dream forest cottage. Furnished in a very sustainable yet elegant style, I absolutely loved swimming alone in my private plunge pool and lazing in the hammock. I even had a whole fully fitted kitchen, although I didn’t use it and made the most of the delicious food in the restaurant instead. Other options of accommodation are a Tree House Studio (minus kitchen), plus Tree Houses with two or three bedrooms for larger groups. My Tree House Luxury Suite was 550 square feet with a king-sized bed, en-suite bathroom
with teak shower, private plunge pool, writing desk and living area. An essential for most modern travellers, the rooms also included Wi-Fi and air conditioning.
LOCAL AREA From lazing on the gorgeous white-sand beach to world-class surfing, this area provides so many options of activity. On your doorstop you will find amazing hikes, fishing and kayaking, and once you’re tired of watersports, make a day-trip to the colonial city of Granada to take in the sights and sounds of its colourful streets. Costa Rica’s much cheaper neighbour has so much to offer and Aqua Resort is the ideal spot to base yourself to make the most of it all. Although remote and peaceful, Nicaragua’s international airport is only a two-hour drive away (or 20 minutes for visitors arriving by helicopter!).

AMENITIES Set on the secluded beach of Redonda Bay, this place really is a must-visit! So far it’s my favorite beach in all the places I’ve ever been (we’ve visited many islands and beaches, including the Maldives) but this place is beyond amazing. My suggestion is to go now before it becomes really popular, which I think will probably happen in the next few years! The resort has some really special features as well as this white sand beach, including a spa with a single and double treatment room, yoga platform overlooking the sea, water sports equipment, beachside bar, hearth oven bakery and finally an impressive organic restaurant open for breakfast, lunch and dinner.
FOOD TIPS Make use of the awesome yoga platform with open sides overlooking the ocean for the dream serene yoga experience, I was practicing both morning and afternoon! Aqua offers all guests free use of eco-friendly mats, straps, blankets and wooden blocks to be used in individual practice or in group classes. And don’t worry if this is your first time trying yoga, all abilities are welcome. Also make sure you try out Aqua Spa’s signature treatment, the ‘Organic Cacao Body Polish’. This scrub uses organic yoghurt, honey and Nicaraguan, to leave your skin hydrated and silky-smooth. The resort supports a local pre-school with very limited facilities and materials by being a member of Pack for a Purpose. When packing your suitcase save a little room for anything you may like to donate like pens, pencils, notebooks etc.
I can’t imagine a better way to enjoy breakfast than gazing out over the pristine ocean following a morning yoga session; I wish I could start every day like this! Aqua’s Beachfront Restaurant is open-air and its dishes are entirely organic and hormone-free, sourced from local farmers and fishermen. They also offer a creative menu of freshlysqueezed smoothies and juices from tropical fruits and nuts (try the Funky Monkey), and coffee lovers will be treated to locally grown organic Nicaraguan coffee beans.

The TVR Revival The all-new Cosworth powered TVR will follow in its predecessors’ footsteps as a British supercar
W
hen the announcement came that iconic British sports car brand, TVR, would be reviving the once great name with four new models, there was a huge sense of excitement from industry professionals and enthusiasts. A year on and the interest mounts, with over 350 people already putting down deposits on the Launch Edition Model, due for release in 2017. TVR was founded in 1947 by Trevor Wilkinson and soon became a recognised fore-runner in the British low-volume sports car market. Known for its sophisticated and innovative design and high-performance, the new consortium that took over the brand in 2013 have been respectful of the ethos created 70 years ago by using the traditional TVR DNA fused with modern technology. Although having a turbulent history with numerous takeovers and the company filing for bankruptcy in the 60’s, TVR had remained largely dormant between 2006-2013 until entrepreneur Les Edgar embarked upon this new project.

The all-new Cosworth powered sports car will be one of four new TVRs created in the coming decade. The Launch Edition will follow in its predecessors’ footsteps as a two-seater with front engine, manual transmission and rear wheel drive, all developed by Cosworth. The car will be powered by a normally aspirated, dry-sumped V8 engine. The model will have a composite ground effect aero chassis and body package using Gordon Murray Design’s iStream® technology. Featuring carbon fibre panels bonded to a tubular steel frame, this innovative characteristic will add strength and save the weight needed to achieve the impressive high speeds calculated by TVR. This will be included on the Launch Edition and then become an additional option for future TVRs, the standard cars using glass-reinforced plastic panels with the iStream® technology.

There’s no magic wand to finding the right car. Do your homework, make sure the car is certified accident-free and you know its history. The classic car and supercar markets are niche arenas and you may well find that the knowledge and contacts of a professional broker will be invaluable in helping you spend your money wisely. But if you’re determined to go it alone there are some basic rules to follow.

lassic cars and supercars offer a potentially lucrative return for investors, and although you can view them as a tangible asset, what really fires the market here is passion. Cars have a very special way of getting under your skin, of making one person feel they need to pay more for a particular model than the next person; emotion is a powerful motivator for buyers accustomed to getting what they want. My view is that you should invest in a car because you like it. Combine pleasure with business. It takes away some of the sting of putting down the money in the first instance, then gives you enjoyment while you’re waiting for your investment to mature.
Always buy the best you can afford. But before signing on the dotted line, have the car professionally inspected to ensure you’re buying what you think you are. Stick to cars built in small production runs, nothing too mass-produced. For example, the Ferrari 456m. This car still has lots of legs left. It’s the last production Ferrari with pop-up lights, running with a fantastic V12. With 550s changing hands for up to £150,000, these cars are still great value at £60,000 £70,000. Check the Internet forums, read the specialist magazines, find out what makes the car desirable. How rare is it? How many were produced in that colour combination? What is its provenance? Has it been owned by anyone famous or used in a film? An Aston Martin DB5, produced between 1963 and 1965, sells for around £800,000, almost double the price of its successor, the DB6, because it featured in Goldfinger and has since become synonymous with the Bond franchise.

After its stellar performance over the last decade the classic car market is levelling off. Without a doubt it will bounce back, however, the market for supercars shows no sign of abating. Look out for the ultra-rare numbered models, such as the Ferrari LaFerrari or the McLaren P1, where production was very tightly limited. Rarity can double the price. The LaFerrari was Ferrari’s first hybrid sports car and benefitted from lessons learned from the company’s Formula One operations. It’s a phenomenal car with probably the most desirable badge in the business. he PARKROYAL on Pickering in Singapore, is on the shortlist for the first RIBA Award to be given to a global project. Until 2016, RIBA has focused upon awarding UK buildings for outstanding architecture, but this year will see a global design also commended through the RIBA International Prize.
The theme of flora and fauna runs throughout the hotel with clean lines and curved edges replicating the merging of nature and the urban environment that perfectly resonates with the building as a whole. Lush, vivid foliage seemingly cascades down the buildings along balconies and walkways, a range of plants, trees, creepers, shrubs and flowers encouraging a calm, tranquil atmosphere of the tropics. Mirrors line the walls and ceilings of the hotel and textures of concrete, wood and stone are prominent.

The East thrives as London’s market cools Nicholas Estates discusses how the property market is cooling in London, yet thriving in our beloved county

LONDON HAS FALLEN? Research by property company Knight Frank revealed that house prices in the capital increased by just 0.8% in the year to March, representing the lowest annual price rise since October 2009. However, figures for the 6 months to March showed a fall in house prices of 0.6%, suggesting London’s property bubble might have finally burst.
ith the increase in stamp duty rates on second properties this year, the number of people buying a house in the UK took a fall this summer. Forcing property investors to reassess their current investment strategies after a record month back in March when a rush to beat the 3% stamp duty hike led to 165,480 house sales, up from 116,930, the previous month and representing the highest monthly sales total since records began. At the time, an analysis of activity by the Council of Mortgage Lenders revealed that the property market was dominated by buy-to-let.

We speak to co-founders Faiza Seth and Radhika Seth about the successful merger and their plans for the future.
HOW DID THE MERGER BETWEEN CASA FORMA AND LUXURY INTERIORS LONDON COME ABOUT? Faiza: Radhika and I had a mutual friend who introduced us over coffee. When we met I

immediately thought that Radhika was really driven, and passionate about her work. She had also had a great amount of experience establishing her own procurement agency and growing it into a brand with excellent client relationships and longevity. Having spent the past nine years building the reputation and client base of Casa Forma myself on the back of our high quality in-house designers and ability to provide architectural and interior redesign services, Radhika’s complementary expertise seemed like a fantastic addition.
WHY ARE YOU A GOOD MATCH? Radhika: I think we work well together because we have very similar goals and belief in how to achieve those goals. In our industry, you have to be prepared to fully give your time and be thrilled by the prospect of creating the perfect property for every client you work with, and I think we both feel that strongly. We also have similar tastes and inspirations in that we’ve travelled extensively and are motivated by new cultures, and finding beauty in unexpected places.
HOW WOULD YOU DESCRIBE THE SERVICE YOU CAN NOW PROVIDE AT CASA FORMA? Radhika: While many designers do provide turnkey property development services, what sets Casa Forma apart is the fact that everything is done by a single agency and a single point of contact. HOW WOULD YOU SUMMARISE YOUR DESIGNS?
HOW DO YOU GO ABOUT CREATING BESPOKE DESIGNS FOR A CLIENT, AND HOW MUCH OF THE WORK CAN YOU CARRY OUT AS A COMPANY?
Faiza: It’s difficult to summarise our designs as we always work to the tastes of a specific client. We don’t want to have an ‘off the rack’ style, instead we take into account the lifestyle of the person who will actually live in the property; their requirements from the space and their aesthetic preferences, then use this to create a truly unique design.
Radhika: We have an incredibly talented in-house team that can carry out nearly every part of the process from sourcing the house to luxury goods procurement and final delivery of the property. Over the past nine years we have added people with a great breadth of expertise to our team, and now we have a truly diverse skill set in the company.
Radhika: A lot of the work we do is in a classically elegant style, but it’s the variety and breadth of styles that really makes Casa Forma so unique. We often specify bespoke materials, developed by artists that create an opulent aesthetic, with interesting effects that you rarely see in residential properties. Materials such as black mirrors, ingrained liquid metals, pearl onyx and Tahitian mother
When we begin a design, we usually sit down with the client initially to talk to them about what it is they’re looking for from the specific property: whether they entertain a lot, whether they have children, whether they often have family staying, all of these lifestyle differences change how we would design a property and the flow through a building.
WHAT’S THE MOST MEMORABLE PROPERTY THAT YOU’VE DESIGNED SO FAR? Faiza: One of the most memorable properties for me was the apartment we designed in One Hyde Park. We got the property in base-build condition and had to make extensive changes while still staying within the strict regulations of this exclusive location. It was a fantastic challenge in which we used unique materials and entirely new techniques to ensure that all designs were approved by the strict management of the building and to meet the requirements of a client who was extremely well versed in design and luxury. There were so many unique elements: the acid manipulated wallpaper, the precious stone lighting features and the Casa Forma London team even extended the original en-suite bathroom to allow for a dry Swedish sauna to be added in. www.casaforma.co.uk

Jonathan Turner from Bryan Turner Kitchens shares his knowledge on how to design the perfect kitchen for your home
W
hen it comes to designing a new kitchen or rebuilding your existing one, the endless options available and changing trends can make it difficult to know where to begin. For Jonathan Turner, Senior Designer at Bryan Turner Kitchens, ‘Planning the perfect kitchen is all about carefully choosing how you use the space.’ We ask his advice on how we can design our own dream kitchen. Bryan Turner Kitchens have over 30 years’ experience in producing high quality, sophisticated bespoke furniture for the home. The company’s origins lie in antique furniture restoration which has influenced the company’s reputation for architecturally sensitive design proportions and a keen eye for detail. Although their design studio and workshops are in Norfolk, Jonathan and

founder Bryan design kitchens, bathrooms and bedrooms for customers throughout the UK, including the home and hotel of Michelin Star celebrity chef Galton Blackiston of Morston Hall in North Norfolk. Jonathan explains that every project he undertakes is different. ‘My designs are totally dependent on the habits of the customer and I bring their vision into my design for the room.’ One of the crucial first steps is to get a feel for the space, especially when designing a room as central to the home as the kitchen. It’s important to take account of physical aspects such as windows, doors and what traffic will cross the room affecting the working area. There is no single answer to the way a kitchen can be planned into a room and a flexible approach is essential in order to achieve the best results. Working closely with builders and architects is sometimes key to initiate minor structural changes along the way in order to maximise the potential for the kitchen design and its eventual performance.
Once an understanding of the space is established, Jonathan would then look for a clear focal point to inspire the rest of the kitchen. ‘If you have an existing range cooker, it can work really well as a natural focus of the room.’ Over his time with Bryan Turner Kitchens, Jonathan has drawn inspiration from unexpected features. ‘Windows, elaborate light fittings, paintings or even shelves can draw the eye if accompanied with the right design.’ Over the past decade or so, kitchens have become key entertaining spaces rather than simply a place to prepare meals, and this has created lots of opportunities for variation in design. ‘People used to believe kitchen cabinetry had to be on three or four sides of the room, but changes in style have seen the island unit becoming the centre of attention. Cabinetry often now only lines one back wall in

a kitchen, with a long island unit in the centre fulfilling storage needs and giving the kitchen a more open feel.’ This in turn has helped to make kitchens much more social environments with the person cooking facing into the room, which makes entertaining a breeze. Jonathan believes choice of colour is crucial to giving a room its personality. ‘People are becoming braver and using contrasting colours to achieve a bold look, which can really bring a room to life, particularly if a kitchen has pale walls or cabinetry.’ Using mood boards can be a great way to check that the colours of your room match before jumping to a decision. Jonathan recommends picking out your worktop early and bearing it in mind, ‘certainly granites have a range of different tones to them so it’s important to match these to your paint colour choices.’
With all of these factors considered, Jonathan is able to design a truly bespoke kitchen for his customers, with furniture custom built to match the proportions of the room and in a style in keeping with the architecture of the property. ‘Balance is crucial,’ says Jonathan, ‘ideally the kitchens I design cater to every

SALLY ANN’S SHOPPING SECRETS • Shop first thing in the morning for a new bed or mattress, rather than after a long day at work – if the body feels tired then anything you lay on will feel good! When the body is more alert it will tell you what it doesn’t like. • If you keep replacing your pillows, it could be because you actually need to replace your mattress. • Rotate or flip your mattress once a month – this allows for an even weight distribution across the mattress and will extend its life. • It’s not a great idea to buy a mattress online, you have to try them to know they are the right comfort level for you, and for the investment to be a worthwhile one.
SUPPORT & COMFORT Many people still believe a firm mattress is best for their body, however these days we talk about comfort and support. I always assess people by their body size, as smaller customers won’t need a firm bed, pressure points will instead need to be supported and comforted. When a customer sits on a bed and sinks in, they may think the bed is too soft, however, when you’re lying on your back and your bum sinks in, then your spine is laying flat on the bed and is supported. If the bed is too firm and pushing the bottom upwards, there will be a gap between the bed and spine, which can cause further aches and pains. I’ll begin most customers with a medium feel mattress; if they fidget a lot, I know it’s not good for them because the body is not comfortable. If they lay still and look relaxed, we could be getting nearer and I can work out where to go from there. You do get couples when one half may prefer a firmer mattress to the other, and you can now buy mattresses when half is firm and half is medium. You can have a combi mattress that is firm with a medium, or a medium with
a soft – so you can actually buy a one-piece mattress but both partners will be comfortable.

Starting our buying guide with choosing a new mattress, I’ll always ask the customer what kind of base it will be going on. There are several types of bases; a firm base, sprung and slated base, and all mattresses will feel different on all three types. If they try a mattress on the shop floor that’s on a sprung base and love the feel of it, when they take it home and put it on their slated base, it will feel completely different.
MATTRESS CONSTRUCTION The construction of mattresses is very different to what they used to be. You still have springs and the natural fillings of wools, cashmere, cottons and silks, but now you can have a mattress with springs on the bottom and a memory foam top to give support. Memory foam works because it reacts to your body heat and moulds to the heaviest parts of your body, so once you’ve settled it supports you, and when it cools down the foam just comes back up.
SLEEPING EASY People with back, hip or joint pain often come in to find a new bed or mattress. I say to them that a bed will never cure you, however it certainly can help. Tempur mattresses are made from layers of support-based viscose elastic and are a very different type of sleeping experience, but if you do have injuries or issues, they are wonderful as they are gentle on the body. We also have adjustable beds that have a remote control to lift you up or lay you down, they are good if you are disabled but also if you just want a lazy modern day life.

Most people will choose a headboard and frame in the same colour and fabric, but we can offer many options of styles and materials. ith the recent cut in interest rates proving bad news for many savers, many people are now looking for alternative ideas for investment options. As Alex Prindiville, Founder of Prindiville Cars, mentioned on page 90, it is a little known fact that in recent years some classic cars have outperformed the traditional alternative investments. As with all big investments, insurance is an important consideration. Your insurance broker can help you with locating the kind of breakdown cover you will need, and explain the legal costs that are covered with your policy. Think carefully about the kind of driving you will be doing. There may also be extra cover that is required for when the car is off

the road, as classic cars are rarely used as an everyday drive. Your broker can advise on any discounts available for reduced mileage, and conversely any extra coverage that will be needed for special journeys such as driving holidays abroad. You should also bear in mind drivers who are outside the normal minimum and maximum age limits, as they will attract extra premiums. Another big consideration when insuring your car is the storage. Ideally classic cars should be kept in covered, secure conditions, preferably temperature controlled, and it is important to check your insurance policy wording as there may be restrictions which apply; your broker can tell you more. Your broker can also advise you if there are specialist policies available, for example those which cover both classic and modern vehicles, so that you can insure your everyday and classic car on the same policy.
Finally, think about whether you need extra options, such as key replacement cover and cover for authentic replacement parts – both are obviously major costs for rare vehicles. This is not an area where cheap generic spares will do the job. And if you don’t want to invest in a classic car? Well why not go for a classic motorcycle, tractor or a military vehicle – they regularly come up for sale, so keep your eyes open! How one unsuccessful shopping trip turned into a business idea…
hen Pandora StormonthDarling set out on her lunch break one afternoon to search for some new pyjamas, little did she know that she would return empty handed, but with a head full of ideas. Working in Central London, although full of bustling shops, Pandora couldn’t find anything that fitted her requirements, and when she mentioned it to friends and colleagues over the coming days, they were all in agreement that beautiful, wellfitting, well-made nightwear in quality fabrics had become hard to find. Taking the brave decision to drop a day at work to focus on the project, Pandora started her company, PJ Pan. Throwing herself into the unknown world of nightwear, she confirmed there was a gap in the market for her new products. Heading off to a fabric fair in Paris she found a Turkish company producing exactly the type of cottons she was looking for and they recommended a Turkish manufacturer who helped to give Pandora a true idea of costs and, to her relief, PJ Pan became a viable business venture. Very particular about the fabric quality she uses, Pandora spends a huge amount of time
sourcing, comparing and testing each cotton and silk. ‘Twice a year we head off to Paris to Premiere Vision which is an enormous fabric fair where all the world’s top fabric mills exhibit their latest collections,’ explained Pandora, ‘It’s a mind-blowing experience! We work with a handful of European mills who specialise in different areas, from beautiful fine two fold cottons to super soft brushed cottons.’ After manufacturing in Turkey for two years, Pandora realised just how much she valued British-made products – and how much her customers valued them too. ‘I knew logistically it would make things simpler to have everything here in the UK and that it would make it far easier for me to manage deliveries, keep a closer eye on quality control and be able to visit the factory more often,’ revealed Pandora, ‘I was repeatedly told it wouldn’t be possible due to the costs involved, but I thought it was worth at least exploring the option.’
Placing a huge amount of importance on her customer service offering, Pandora has seen the industry become more and more automated and ensures there’s a real person on the end of the phone to her customers. ‘I was fortunate to work for The Admirable Crichton for many years, one of London’s top events companies, and one of the founders, Johnny Roxburgh, used to regularly say ‘we don’t do fine’. Calling a list of UK factories one by one, her meticulous research paid off, ‘The challenging thing wasn’t finding someone to manufacture the products, it was finding a factory that could meet our demanding standards of finish, whilst matching that with our pricing objectives. After a few months of sampling and getting to know them, we took the plunge and moved everything over here – probably our biggest achievement so far!’
