any great things happen in the pub – business ideas, friendships and new connections. This is where I first met Kev Colbear, local artisan metalworker from East Bergholt. Kev is highly skilled in his trade and produces unusual sculptural designs. Kev admits that he has always had arty bones in his body, and when we asked him how he found metalwork, he explained: ‘Metalwork found me! My work is produced from a background in art but is rarely purely sculptural. Foremost it serves a purpose and looks beautiful as well. ‘I’m a bit of a classic car nut. When I was 15 I bought an old Morris Minor. It was a total wreck. I bought it with no welding experience and was determined to get it on the road. I taught myself to weld and fixed the car up.’ From high school Kev went on to study art at Suffolk College before studying threedimensional design in metals at West Surrey College of Art and Design. ‘My style tends to lean in two rather different freeform directions depending on what I am making,’ he says. ‘Pieces can be angular, sharp and stylised or organic and asymmetrical forms, though it really depends on the first coffee of the day!’ Kev finds his inspiration in works of art, from the likes of Edward Hopper and Jack Massey. ‘Their use of colour is extraordinary. I like art to stir something inside me and both of these gifted artists have painted and created with their emotions; that’s true art. The things that really inspire me are big skies and Suffolk has some of the greatest skyscapes in the world.’ It’s not only the big things that influence Kev’s work, it’s all in the detail, too. Design features like metal furniture mechanisms or joints in a timber building are fascinating to Kev. ‘Don’t take me to Lavenham,’ he jokes, ‘I take an age walking around – there’s too much to take in!’ I was particularly interested in finding out what it’s like being a skilled maker in Suffolk. ‘It really is a privilege,’ says Kev. ‘We’re surrounded by such rich history in art and we have pockets of great makers in Aldeburgh, Snape, East Bergholt… I could name most Suffolk towns!’ Kev points out that the community spirit is a large part of what makes living and working in Suffolk such a rewarding experience. He works with an exciting pool of local artisans and makers and is never short of someone to call on should he need

either side and was not an easy arrangement to work with. ‘The cottage was located in the woods and it seemed only appropriate that the covering be a leaf. I made it from lead with a steel frame underneath. This was a great project, probably my favourite one. It’s important that a piece of work bears a strong relation with its surroundings. Many designers and makers fail to get this right but when its done well, it’s amazing to see.’

Rosie Hunter (interiors and soft furnishings), Tim Germain (cabinet maker) and Diana Majdalani (seamstress) are three who I’ve collaborated with on many occasions. I think it is important that we look to maintain friendships with each other. Great collaborative pieces have come from simply chatting over coffee. Simply “swapping notes” can help keep madness away as most of us work alone and don’t have the luxury of work colleagues.’

the client identifies a problem but says “do whatever you think”. That’s Christmas to me!’ An example Kev describes is the ‘Lead Leaf’, the first piece he ever made for a client from Aldeburgh. The brief was for a small covering over the front door to their home so that if it rained they wouldn’t get wet finding the key. He explains how the doorway had two huge buttresses

Kev loves a challenge and prefers making items where he’s been given a distinct problem that needs to be solved. ‘I like a brief where

So what is Kev working on at the moment? Two large organic form canopies are just two exciting commissions he’s getting stuck into right now. He is also in the middle of making some wild gates: ‘I want a formal frame with wild knotted vine-like down bars giving the illusion that they are alive and taking over.’ A self confessed fidgeter, when Kev needs to escape his work he’s still knee deep in metal of a different kind and at the moment is working on building a classic 50s style pick up truck out of a 1958 Rover P4. ‘It’s pretty wild. I’m sure my family think I’m mad!’ The future is looking very bright for Kev, with new commissions for canopies and bespoke pieces coming in all the time. Whilst much of his work goes to London, more and more is adorning homes in Suffolk which is really important to him. ‘Suffolk is a great place to live and work, and I’d hope that clients who buy my work would also see it as an investment into our county and the thriving micro industries we have operating here. s our Year Six children prepare for the exciting challenges posed during their final term at Littlegarth, all those involved in the school can look back on 2014/15 with great pride, knowing that Littlegarth continues to grow from strength to strength in a wide range of subjects. Our top year continues to achieve excellent academic results, this year gaining eleven grammar school places, with 21 children also receiving a record number of scholarships to independent schools – the fifth consecutive year that at least half the Littlegarth leavers have gained scholarship awards. These awards are not only for academic excellence but they also include recognition for extremely high levels of achievement in sport, music, art and drama. This is the fourth year running that the

Consisting of transitional pieces that see you through all seasons, a mini wardrobe, if you must, at the heart of a well-stocked wardrobe. A great wardrobe should be like a happy relationship – all your items mixing, matching and mingling with each other in harmony!

Choose a neutral colour scheme of beige, navy, black, white or grey that is going to work well with the rest of your wardrobe. Invest well and invest wisely. Buy quality items that will repay you with years of wearability. If they ever snag or stain, hand your clothes over to the professionals to mend and clean – they will soon look like new again. Ensure that your clothes fit you perfectly; this will make all

Simple sweater: A thin, close fitting sweater is always handy to pull out of the wardrobe, it pairs with almost everything from pencil skirts to a pair of jeans. Sundress: Choose a few different style dresses, for comfortable daywear or casual evening wear. Flat sandals, pumps or wedges create understated chic. High heels: Every woman deserves a pair of striking heels that make her feel utterly fabulous! A single pair of shoes can do wonders for your confidence in the split second it takes to slip them on. Brown leather belt: You’ll need a good leather belt to complement your loafers. Shade wise go for black and brown to add to any outfit. Coat: To improve on your style, you will need a smart coat to top off the look. It’s the first thing that people see in the colder months. Pea coats work well as an overcoat and duffles will just work well. Pick the colour to suit your wardrobe – normally grey, black, navy or brown.

F

ounded in 2010 by brother and sister team Hugo Lesser and Maria Orchard, Estados produce premium quality leather goods ranging from wallets and belts to bags. These products are designed in Britain before being manufactured in the foothills of the Argentinian Andes using fine leather from a third generation, familyowned tannery in Buenos Aires. Passion and artistry goes into designing and manufacturing each individual piece. Most of the leather is dyed in vibrant colours; this is achieved through a tried and tested tanning process, as described by Hugo: ‘the hides are first cleaned then combined with dyes and placed in large, rotating drums where they go round and round for up to several days. Hides are then washed again to remove any loose dye’. Using both vegetable and mineral tanning processes on their top grade, full-grain calf hides, Estados is able to achieve a soft and supple material which, if well looked after, will last a lifetime; the evidence lies in the century-old leather chaps, riding boots and

holster worn by the owners’ grandfather in Argentina in the early 20th century, which are still in usable condition today. When asked about trends in the fashion and accessories industry, Hugo replies, ‘we’re a small, new brand with a relatively small range, so we tend to focus on developing just one or two new designs a year’. Estados wallets are based on classic designs that are able to stand the test of time, while their purses, handbags and belts are slightly more influenced by trends. In tandem with the resurgence of the practical, but bookishly stylish, satchel bag, Estados has designed their own range of high quality, luxury leather satchels in black and brown colourways together with vibrantly coloured linings. The collection features both large and mini versions with removable straps and gold hardware for ultimate in sophistication and functionality. Excitingly, this year the brand is planning to release a new range of handbags to sit alongside their range of satchels and, further down the line, they intend to develop and innovate their designs within the areas

of fashion accessories and luxury gifts. However, they are perfectly happy to progress slowly and steadily, stating, ‘Rome wasn’t built in a day!’ Most gifts can be personalised with the recipient’s initials, and Estados offers the option to emboss up to three letters in gold or silver, or, using a technique called blind embossing, imprint the initials without colour. Clients are also given the choice to include a personalised message, handwritten on card and slipped into the luxury, bespoke presentation box. The final product is then gift-wrapped, and delivered direct to your door. They renewed their wedding vows in Cyprus, the perfect backdrop for the start of a new chapter in their lives, and had an epiphany moment when they both decided that it was time to launch their own brand.

health & beauty As Liz explains, ‘although Temple Spa is a totally British business, it was conceived and inspired by the Med.’ The vast majority of their products are manufactured in Suffolk, and elsewhere in the UK. Liz’s family still lives in Suffolk, as do some of Temple Spa’s manufacturers, so she and Mark often visit the county. When asked how Suffolk life compares to a Mediterranean lifestyle, Liz replies, ‘life in the Med is, of course, a fantasy, since we’re only ever there on vacations. The climate and outdoor living is hugely appealing to our psyches, but when you’ve got Suffolk in your roots, you don’t ever forget it.’ She recommends a stay at The Swan for its outstanding restaurant but also loves Long Melford, where she was born and brought up, and adores Aldeburgh and Southwold as ‘they haven’t really changed in 50 years, and make me feel nostalgic.’ Liz maintains that ‘Suffolk is the country’s best kept secret,’ and tells all her foreign friends and contacts to visit the county! Liz’s life is now a contrasted mix of busy and relaxed days. When she and Mark launched Temple Spa, they did everything themselves, working almost 24/7 to push their brand to

Liz describes this product as a ‘skin rejuvenation moisturiser to use every day or on special occasions.’ Skin Truffle is one of Liz’s favourite products, however she also enjoys using Repose, ‘an exquisite aromatherapy resting cream that gives you a good night’s sleep in a jar,’ and In The Beginning, which she says is ‘the mother of all cleansers.’ Having recently entered into an exciting collaboration with The Swan at Lavenham’s latest addition to the spa industry, Weavers’ House Spa, Liz opens up about her connection with the Suffolk county: ‘I’m a Suffolk girl, and I’ve wanted to open a spa here ever since we launched. Everyone from the county knows of The Swan; I’ve been coming to the hotel ever since I was a little girl! When we heard about Weavers’ House, we said that we just had to be in that spa, so we pitched for it. We won the opportunity not just to supply our products and treatments, but also to be retained spa consultants.’

We try our best to have a good work-life balance.’ Liz is best described as a go-getter, and one of her greatest challenges is to switch off: ‘I’m always thinking and scheming. But I do love to play the piano, entertain friends and work on projects for our very old house. Mark and I love to cook, and we go to a fab church in Brighton, where we’re part of a wonderful friendship group. My faith and my amazing relationship with my business and life partner keep me grounded.’ So, what can we expect from Temple Spa in the near future? FEET With the weather warming up it’s time to get flip-flop ready. Rhianna Prentice from The Beauty Rooms explains how

aking care of your feet is so important; with all the hard work they go through every day it is essential to give them a treat once in a while – they’ll be sure to thank you later in life. Beauty products and treatments are always changing but one treatment that remains consistent are pedicures. Having a regular pedicure is not only cosmetic it is also very relaxing too. Perfect for both men and women, you will be giving your feet the treatment they deserve. During a pedicure you’ll have callus removal, exfoliation, cuticle work, nails clipped and a foot massage then finish with creams to help soften and leave your feet feeling super smooth. If you are in need of a quick fix and have limited time there’s a fantastic new treatment available called The Callus Peel. This treatment uses a safe AHA acid which helps to soften and break down hard, stubborn skin. It is left on the feet for around 5-10 minutes then removed using a flat tool. The results are amazing, you won’t believe how soft your feet are afterwards! The perfect final touch when having a foot treatment is nail colour for the ladies. I love the summer months when you can choose from all those bright, beautiful corals, pinks and blues – it makes your toes look fresh

and fabulous. I am a big fan of having gel nails, they’re brilliant if you are one to always smudge polish like me! Gels dry instantly with the use of an LED lamp, giving them a high gloss shine and smooth finish – there is nothing not to like. They are safe yet natural, allowing products to still penetrate through to the nail plate to keep them hydrated. We have recently just introduced a new product in the salon from Jessica Nails called Phenom. It’s a nail polish that dries completely in five minutes from natural UV light, perfect for ladies who don’t want to commit to having gels regularly but also don’t want to wait for ordinary polish to dry. I recommend that you treat yourself to regular foot treatments around every 6-8 weeks, but advise that you look after them at home too. Here are my top tips on how to keep your feet flip-flop ready at home; • Use a foot file after a bath or shower • Invest in a good quality heel cream and use morning and night • Use a really good exfoliation product once a week • Clip toe nails regularly (after a bath or shower is always easier) • Apply a base coat when using nail polish at home to prevent staining the nail plate

Not only will this allow your face to breathe and stay cooler, but it will actually help the thickness of your beard come regrowth. Remember to keep your neck cleanshaven if you are keeping the beard in order to stay cool. Post shave? Opt for a high quality

Choose your aftershave wisely. Choose something that you want everybody to smell when you get hot, not something that makes people leave the room. it is this that makes the farm a great place to be in the summer as we have lots of people around bringing in the crop we’ve been looking after for the last 12 months.

DO YOU HAVE ANY TRADE SECRETS FOR CONSISTENTLY GROWING SUCH HIGH QUALITY FRUIT?

Shortly after starting they found that selling directly on site was the only way to achieve a realistic price for the produce and that was that – Alder Carr Farm and Farm shop was born.

Growing good fruit starts straight after you have picked the fruit! It’s really important to look after the new growth on plants and then prune them well so that they can get a great start to the new growing season.

Ever since the beginning there has been a definite passion for the environment and a make do and mend mentality – farm machinery was bought second-hand and anything new had the best energy ratings. To this very day, with every purchase, Barry considers the effect it could have on the environment.

HOW IMPORTANT TO YOU IS THE FAMILY ASPECT OF FARM LIFE?

WHAT’S A TYPICAL DAY LIKE FOR YOU?

HOW DO YOU COMBAT THE UNPREDICTABLE BRITISH WEATHER?

I don’t really have a typical day; this is one of the best things about farming – every day is different and you never know what is coming up! Every day starts with checking the animals and feeding but after that it’s always different.

HOW IMPORTANT IS BEING ENVIRONMENTALLY FRIENDLY TO YOU? Very important – it is something that is always on our minds. On the farm we try to look after our soils and crops without using artificial inputs unnecessarily. We have just installed a wood pellet boiler for our heat requirements in the buildings so we no longer need to burn oil.

HOW DO YOU FIND BEING BASED IN SUFFOLK? It’s great growing fruit in Suffolk. We certainly have the sunshine for it in this part of the country. I think we’re well known for our PYO and, of course, delicious ice cream made with our fruit!

WHAT’S THE ATMOSPHERE LIKE AT THE HEIGHT OF THE RASPBERRY-PICKING SEASON? We get really busy at this time of year. Picking all the fruit by hand requires extra labour but

It’s really nice to be working with family. My children love to get involved on the farm; Alice, who is five years old, is an expert on looking after chickens and likes to tell me what to do most mornings!

You can’t really combat the weather, you just need to take what you’re given. Farming is a 24/7 job and that means you need to do the job whenever the weather lets you. This Saturday I was out at 22:00 because that was when the wind dropped and let me do the job that needed doing.

WHAT ARE SOME OF YOUR MOST POPULAR FRUITS? Strawberries have always been a firm favorite and I don’t think this will ever change. Besides, what can be better than freshly picked strawberries eaten on a summer afternoon?

WHAT IS YOUR FAVOURITE USE FOR RASPBERRIES? I don’t think you need to do much with raspberries; it’s nice to let them speak for themselves. I do like a Victoria sponge with fresh cream and fresh raspberries in the middle with a nice cup of tea.

uzzing and intimate, The Townhouse restaurant on Orwell Place in Ipswich has recently reopened after a fire last year. When we arrived on a Thursday evening it was very busy – the spring art evening with local artists was well underway on the top floor.

Scanning the menu, we struggled to choose from the varied menu. British cuisine with a twist; there were plenty of exciting flavour combinations to choose from. We chose our starters – Warm Pigeon Breast & Woodland Salad and Pan Seared Scallops – and were brought crispy French bread with a trio of butters infused with chive and paprika while we waited. These were really flavoursome.

I enjoyed the Deconstructed Beef Wellington that I chose for my main. Presentation was fantastic – and was obviously something that had been well considered. A crispy potato scone sat on a layer of rich madeira jus with bacon lardons. Piled on top was a healthy portion of buttered spinach followed by a thick, plump, pink fillet of steak. To finish it off, a light, buttery pastry pie sat right on top filled with more bacon jus. Maddi chose the Pan Fried Hake with Coriander and Vanilla Sauce which came with Lyonaisse Potatoes, Carrot and Butternut Squash Brunoises. The fish was moist inside and crispy on the outside, the shredded leek on top crispy and strong in flavour which really complemented the hake and had a great texture when paired with the softer fish and vegetables. The sauce was very sweet and combined with all the flavours in the dish it was even more delicious. Portion sizes were reasonable, leaving us feeling full but not stuffed – with just enough space for a cheeky dessert!

The scallops arrived on a bed of black pudding and crème fraiche, topped with crispy bacon and a peppery salad. The smell hit my senses as soon as the plate was placed on the table. The combination of flavours was unexpected but truly wonderful. The scallops were pan seared to perfection – juicy, plump and fresh – which was a nice contrast to the moist, firm black pudding. The Pigeon Breast & Woodland Salad was chosen for it’s unusualness. We expected the meat to have a really gamey flavour but were pleasantly surprised to find it very mild. There was a generous amount of meat which was rare and incredibly tender. The flavour worked really well with the blackberries and

With the Hendricks & Tonic Granita with chilled cucumber on the menu, choosing a single dessert was difficult! In the end I chose the Apple Crumble Cheesecake which came with a delicious pecan crumble and caramel iced cream. The cheesecake was filled with moist apple chunks and was soft and creamy. The crumble was crisp, crunchy and nutty, the caramel iced cream had chunks of caramel throughout and a handmade apple crisp on top. The Chocolate and Raspberry Torte with mascarpone cream was wonderfully rich without being sickly and overpowering. The texture was light and the mascarpone really fresh and a great addition to the other flavours in the dish.

I’m a Sauvignon Blanc fan but we chose to share a bottle of Picpoul de Pinet, a French wine which our waitress assured me was gaining popularity. This fresh, fruity white wine was light and very morish. I really thought it was a lovely touch that we were brought a bottle of cold tap water without having to ask.

We were disappointed when it became time to leave and we’d finished all our food! Our experience at The Townhouse was fabulous. Wonderful food, attentive staff and a fantastic intimate atmosphere makes for a great dining experience. Whether you are dining as a duo or as part of a larger group, The Townhouse should be next on your list.

Andy Stannard, Suffolk Food Hall’s fishmonger explains why a visit to his counter is a completely different kettle of fish

N

othing hits the spot more than fresh, locally sourced fish on a warm, summer’s day. Cooked with minimal fuss under the grill or on the BBQ with a handful of crisp vegetables, fish makes the ideal main ingredient for a midsummer meal. We spoke to Andy Stannard, head fishmonger at the brimming fish counter at Suffolk Food Hall, to find out about seasonal favourites, fresh produce, and the best ways to cook fish at home. Having joined the team at the bustling Suffolk Food Hall over two years ago, Andy worked his way from apprentice butcher to head fishmonger after finding that the skills he learnt whilst handling meat were transferable to working with fish. Since then, he has learnt both on the job and whilst visiting the UK’s largest inland fish market, located at Canary Wharf, which has culminated in his acquisition of the City & Guilds Seafood Retail Level 1 and 2 qualifications. These courses have helped him develop knowledge about types of fish, cooking methods, and what to look for when assessing the quality of the produce. However, even with the gourmet cookery know-how and experience working with elaborate flavours, Andy loves to take fish preparation back to basics: ‘I like the idea of a camp fire on the beachside. Simply wrap the fish in tin foil, stuff it with the flavours you enjoy – then it’s straight onto the fire’. As a county surrounded by beaches to our east, it’s a wonder why we don’t make more use of our facilities; however, perhaps the convenience of our own homes gets the better of us. Therefore, Andy explains that the same delicious results can be delivered in an oven or BBQ: ‘If you can look past the bones, you will really benefit from the extra flavour that comes from cooking a fish whole’.

The team take pride in the fact that the fish at the Food Hall is sourced locally, and emphasise the importance of their collaboration with the county’s fishermen, stating that deliveries often arrive having been sourced from the likes of Felixstowe and Lowestoft. Taste is a crucial aspect of quality seafood, but aesthetics are also very important to both Andy and the team. When asked how he keeps the fish counter looking so impressive, Andy replies: ‘we are most busy at the weekends, so it’s a challenge during the early week to have a full, bountiful counter, however, fresh fish looks beautiful – and sometimes less is more!’ Busier periods, such as Easter and Christmas, provide the opportunity to experiment with a centrepiece; in the past this has included whole large monkfish, Atlantic wolfish, huge halibut and a 12-kilo cod. Nonetheless, Andy emphasises that there is a limit to just how experimental he can be, reiterating Suffolk Food Hall’s aim to supply customers with local fish.

When it comes to deciding between buying from a local fishmonger, and buying from a supermarket, Andy explains with confidence that quality and service are key. He states that the benefits of dealing with a fishmonger ensure shorter supply chains, fresher fish and the chance to support local businesses. Fishmongers also tend to stock a wider variety of fish, and customers have the option to make special requests, too. Customer service is an integral part of the retail industry, and this does not exempt fish counters; Andy and his team will prepare the fish in any way the customer requests, and they’ll even suggest the best methods of cooking that particular fish so that the customer gets the most out of their purchase. Andy maintains, ‘this is one of the most enjoyable parts of the job, and the difference in service that we want to be known for’. We caught up with John in Southwold to find out what a typical day is like for the head distiller WHAT DOES A TYPICAL DAY INVOLVE? It’s my responsibility to ensure that adequate stock of our spirits is maintained, to decide what is distilled and when. To arrange the purchasing of packaging and ingredients and generally make sure the right stuff is in the right place at the right time. I monitor distillations and ensure product quality. Product development is the fun bit and something I do around the day-to-day stuff.

HOW DID YOU BECOME A DISTILLER AT ADNAMS? I started with Adnams in 2001 as part of the engineering team. I was given the project to install a distillery on site in 2010. When operational I began running the stills. As production increased I moved away from engineering and over to being the distiller.

HOW DO YOU COME UP WITH NEW CONCEPTS? The world of cocktails has been around for a couple of centuries now, so most things have already been done. I like to make the classics and then do variations on those. Some are just trial and error. Who would think drinking vinegar would be good? It is a historical drink, which has just fallen out of favour.

WHAT IS THE PERFECT SUMMER DRINK? The summer is a time for ice-cold long drinks. The gin and tonic is easy to make, relatively low in alcohol and can be easily prepared minimal fuss. A little care can make this great drink even better.

DO YOU HAVE ANY UPCOMING PROJECTS? The distillery is at capacity already so we are now expanding. By the end of the year we will have an additional two stills allowing greater production volumes.

Mix and seal for a few days, the juice will come out of the fruit and the sugar will dissolve Add 500ml white wine vinegar Leave for another few days, stirring occasionally. Strain with double muslin into a clean bottle and seal.

SALAD OF GOAT’S CURD

BEETROOT & STICKY WALNUTS • • • • • • • • • • • •

2 Cooked beetroots, large Small bunch mixed baby beets 75g Goats curd 20-25 Walnuts 100ml Water 100g Caster sugar Aged balsamic vinegar Selection of salad, such as curly endive and ruby chard Beetroot puree 150g Cooked beetroot, cut evenly into 2cm chunks 30g Demerara sugar 30ml Red wine vinegar 100ml Cream

To make puree preheat a heavy based saucepan to a medium heat, add a splash of oil then the beetroot. Keep a close eye on it, you want any liquid to evaporate and the beetroot to start to lightly roast without colouring. When the beet is dry and begins to stick to the pan, add the sugar. Toss and coat the beetroot in the sugar, it will start to caramelise and ‘glue’ to the beetroot. Don’t let it burn! After a minute, add the vinegar. The vinegar will deglaze the pan where any of the sugar may have started to catch and quickly reduce, mixing with the sugar to glaze and coat the beetroot. Now add the cream, reduce until it starts to thicken and again it will ‘glue’ to the beetroot. Transfer to a blender and blitz for 2-3mins until you have a pink glossy puree. Allow to cool to room temperature and then transfer to a squeezy bottle or if you don’t have one a disposable piping bag. Now prepare the beetroots. Use a small paring knife to scrape the skin off, paying particular attention to the root where dirt can build up. Cook in a simmering pot of boiling salted water for 5mins or until there is little resistance from the tip of a small knife. Once cooked, refresh under cold running water for a few minutes before cutting into 6 wedges. Dice the larger beets into even 1cm cubes. For the walnuts, boil the sugar and water together so that they combine to form a stock syrup. Add the walnuts and keep simmering the pan until the syrup completely reduces and glazes the walnuts in a sticky caramel. Pour out onto a tray lined with parchment paper, using a wet spoon to separate the walnuts so they don’t set as one big mess. Be careful, the caramel burns! To compose the salad, start by dressing the plate with the puree. Pipe or squeeze dots or perhaps use a pastry brush to create an artistic swipe on the plate. Now dress the beetroots with a splash of olive oil and a pinch of sea salt before scattering a selection on the plate. Wash your hands if you’ve managed to stain them. Crumble the goats curd generously onto the plate. Follow with the walnuts, leaving a couple whole and crumbling a few. Scatter around a bit of salad and finish with the aged balsamic.

GRILLED FLAT IRON OF BEEF WITH WILD GARLIC AND MUSHROOM RISOTTO

Serves four Flat iron is a beautiful cut of steak that is really flavoursome. It is a hard working joint, so as part of its nature isn’t quite as tender. This means that it really needs to be cooked rare or it can get quite tough. If you insist on cooking your meat beyond pink you will need to substitute for a different cut. A good butcher will be able to provide it for you. • • • • • • • • • •

4 Flat iron steaks, approx 8oz each 350-400g Risotto rice (preferably carnaroli) 1.2l Chicken stock 1 Block butter, diced 2 Medium onions, diced Small glass of white wine 150g Wild garlic 125g Morels or 250g chestnut mushrooms 125g Grated parmesan Juice of 1 small lemon

Remove steaks from fridge an hour before cooking. Preheat a cast iron griddle so it’s really hot. At The Unruly Pig we have our Inka grill which is charcoal fired and cooks at over 450°C delivering a unique and beautiful smoky char to our meats. You won’t be able to replicate this at home unfortunately but you need to cook your steaks at as hot a temperature as you can to seal in all the goodness. Prepare the mushrooms. If you have morels you only need to cut them in half and make sure they’re clean. If using chestnuts slice them 1.5mm thick and quickly fry off before transferring to a plate for later. Make sure the stock is hot and gently preheat a large heavy based saucepan. Gently sweat the onions in 75g of the butter until they are soft but without colour (about 3mins). Add the rice. Stir constantly (using a wooden spoon or spatula). The butter will absorb into the rice and then the grains will start to ‘toast’. Make sure you toast the grains for a good minute or so but look after them or they’ll burn very easily. Add the wine. It will bubble and reduce quickly and you can then start adding your stock. Add a ladle at a time and stir often. As the stock reduces and absorbs into the rice add another ladle. Keep the temperature high and keep stirring. This will result in a beautiful creamy risotto, technique is everything! Now time for a bit of multitasking! Once you start adding the stock into the risotto, it’s time to cook your steaks. Season with salt and pepper and drizzle with a touch of oil. Grill in the hot pan for 2mins each side before transferring to a warm plate to rest for at least 5mins. After 10mins your risotto should be nearly cooked. Taste a grain – it should still have bite but not be too crunchy. The last 2mins are really important. Add a spoon of salt, then your mushrooms. Keep stirring constantly. Tear the wild garlic and drop into the risotto, along with the rest of the butter, parmesan and lemon juice. Really beat in those ingredients. You may need to add a touch more stock if it gets too thick, but you want it to have an oozy consistency. Finally, pour the risotto onto the plates and slice the steaks as thinly as you can. Season with a touch of sea salt and lay on top of the risotto.

RHUBARB MOUSSE WITH

WHITE CHOCOLATE

GANACHE AND BASIL JELLY Rhubarb mousse • 300g Rhubarb • 8tbsp Sugar • 2tbsp Water • ½ tsp Lemon juice • 3 Gelatine leaves • 200ml Whipping cream • 2 Egg whites • Pinch salt White chocolate ganache • 100g White chocolate • 65g Cream • 50g Greek yoghurt Basil jelly • 10 Basil leaves • 125g Water • 125g Caster sugar • 2 Gelatine leaves

For the mousse, peel and chop the rhubarb and cook in the water with lemon juice and 3tbsp sugar until soft and falling apart. Soak the gelatine in cold water for 5mins then dissolve into the warm rhubarb before leaving to cool. Whisk the egg whites with the salt until soft peaks begin to form, then add the remaining sugar one spoon at a time. You should have a smooth glossy mousse. In a clean bowl whip the cream until just stiff, then use a spatula to fold in the egg whites followed by the rhubarb, doing so as gently as possible to combine ingredients but retaining a light texture. Spoon into glasses or bowls and allow to set in the fridge for an hour or so. To make the ganache bring the cream to the boil, pour over the white chocolate and whisk together. Once slightly cooled, fold in the yoghurt and then chill. Now the basil jelly. Bring the water and the sugar to the boil together to form a stock syrup. Blanch the basil leaves in the syrup for 5secs before transferring immediately to ice water to refresh. Soak the gelatine leaves in cold water for 5mins then whisk into the warm stock syrup, then leave to cool. Once cold blend together with the basil and chill in a fridge to set. To compose dice up the jelly and arrange on top of the mousse before using a hot spoon to put a spoonful of ganache on top.

Enjoy the British coast away from the crowds this summer

W

e all know the delights of Southwold and Aldeburgh – the beach huts, the boutiques and the fantastic fish and chips! In the height of summer, these wonderful British seaside towns can get very crowded and the hustle and bustle just isn’t quite as relaxing as it could be. Suffolk is a county full of wonderful places to explore and sometimes some of the lesser known spots are forgotten about. If you’re looking for somewhere that is bit more relaxed than the popular main beaches in the region we’d suggest a trip just north of Southwold to the golden sandy beach of Covehithe. Tucked just away from the hustle and bustle of Southwold, tree trunks extrude from the cliffs right along this stretch of beach. Though tricky to get to as you need to park in the town and take a stroll down a footpath, you’re guaranteed of a quiet hideaway away from the crowds. Although suffering from the highest rate of erosion in the UK, it’s a picturesque location certainly worth a visit before it erodes into the sea! If visiting, please ensure you stay safe – erosion can happen at any time and the cliff is very crumbly, so it is recommended that people walk inland via the official Suffolk

Coast Path (signed) or along the beach but remember to check the tide timetable as you can’t walk along the beach at high tide. Again, near Southwold you’ll find The Denes Beach which is a combination of sand and shingle and popular with windsurfers. On one side is the mouth of the River Blyth and Southwold on the other. Although close to the popular town, The Denes is much quieter, yet still charming and during the summer months you can hop on a ferry which will take you from Southwold to Walberswick for crabbing. Not just a spot for those with a penchant for binoculars and bird watching, the secluded beach of National Trust Dunwich Heath is a peaceful spot just outside of those main seaside areas. It is ideal for families and friends seeking a quiet spot to enjoy during the height of summer. Obviously, you can bring your binoculars and dogs are allowed off the lead on the beach all year round however, there is one small family area where dogs are requested not to be taken. In addition to the beach you have 200 acres of heathland to explore which, during the summer, is a sea of purple heath and yellow gorse. There is plenty of parking – free to National Trust members

– toilets, a gift shop and a lovely café selling homemade cakes, hot and cold drinks and ice creams. The unspoilt surroundings mean this hidden gem is well worth exploring. It may not have sand but it’s no less beautiful; Shingle street faces the North Sea and sits between Bawdsey and Orford in a hamlet on the Suffolk coast. Whilst not ideal for sandcastles, it is an ideal spot for a bit of solitude. In fact, there are few places as quiet, hauntingly wild and beautiful. The shingle comes alive with flowering plants during the summer months. With just a few cottages and a Martello tower for company, this is the perfect place for a spot of kite surfing and a gourmet picnic. Take a thick blanket to protect yourself from the shingle. Great place to see the sunrise. Along the shoreline of the River Stour there is a quiet and isolated stretch of beach near Ewarton – Johnny all alone Creek. To one side there are saltings and behind you there are fields surrounding you on one side. You can access Johnny all alone creek along the river path from both Holbrook and Shotley. This little known spot on the Suffolk coast could soon be your favourite.

Whilst in Capri there are many places to visit, much culture to explore and many shops in which to indulge yourself. One of the main attractions that appeal to both tourists and locals is that of Tiberius’ Sacred Sanctuary also known as Capri’s Blue Grotto. To visit this phenomenal sight all you have to do is hop aboard a wooden rowboat, lay back and let yourself be carried through a tiny stone portal to another world by your able skipper, who navigates seamlessly under the metre-high cave mouth. Inside, pass from complete darkness into a sparkling cavern, lit by azure blue light, while the sounds of ancient Neapolitan song echo along the stone walls. Once inside the Grotto you will experience the beauty of the crystalline blue sea with silver reflections. Forget floating on water, you will feel as if you are suspended in the heavens. The Blue Grotto is a once in a lifetime natural experience that is a must see at least once in your lifetime.

The Piazzetta has always been the centre of life on the island. In the past, it served as market square, where fish, vegetables and occasionally meat (until recent times meat was a rare commodity) were sold. In 1938, the young islander, Raffaele Vuotto, placed a few tables outside his bar in the Piazzetta and from that moment on, the square became a fashionable meeting place for both locals and visitors who, until that time, had socialised either at home or in the island’s hotels. Today, Capri’s celebritypacked Piazzetta provides the perfect hunting ground for camera-clicking paparazzi, eager to capture images of the rich and famous and holidaymakers hoping to brush shoulders with their favourite Hollywood star. Another location that shouldn’t be missed whilst visiting Capri is Marina Piccola. To the locals this bay beholds the myth of where they say Ulysses was seduced by the sirens. So, if you like the idea of spending a day on a beach with a view of the Faraglioni, you’ll love the pretty little bay of Marina Piccola (which lies directly opposite Capri’s giant sea stacks). On the sunny South side of the island, sheltered from the wind by a steep wall of rock, the bay is almost always warm. In fact, even in mid-

winter you might easily spot the locals bathing in the sun. Boat tours are available around Capri that will allow you to experience the sunset, a sight considered one of most enchanting moments of a day in the Mediterranean. You’ll be free to admire the natural beauty of the island – from the Faraglioni rocks to innumerous grottoes and the Punta Carena lighthouse – with a glass of Champagne in hand, whilst accompanied by your own personal sailor. Although the majority of holidaymakers staying on Capri wouldn’t dream of leaving this paradisiacal island, not even for a minute, those lucky enough to be here for more than a week or two might well be tempted to make the most of its location in the Bay of Naples and to use it as luxurious base from which to visit neighboring islands and the mainland. Throughout the year, regular ferry and hydrofoil crossings transport passengers boarding at Capri to the nearby ports of Naples and Sorrento. creation right in front of you. Just a few steps from the Colliseum enjoy a stroll through Pallatine Hill, one of the oldest parts of the city, and bask in the history. Soak up some artistic talent with a visit to the Borghese Gallery to enjoy one of the world’s greatest art collections.

Chanel, Dior and Valentino around this famous shopping area. Or for more local (but no less fabulous) designers, visit Via del Governo Vecchio. Don’t come away without an authentic Italian leather handbag! For fresh food and flower markets head to Campo dei Fiori.

Savour every mouthful indoors or on a bistro table just outside. What’s a visit to Rome without having tasted an authentic Italian pizza or having sampled a cold, crisp glass of Frascati?

On your travels you’re sure to pass one of the most influential and best preserved buildings in Rome – The Pantheon; but this merits a special visit in itself. Head across the square to enjoy some of Rome’s finest coffee in La Casa Del Caffe Tazza d’Oro.

Jennifer Meredith talks to Michelle Lusby, talented designer of Rolls-Royce’s third addition to the Wraith family, about crafting a coveted luxury aesthetic

T

he Rolls-Royce brand, founded by Charles Stewart Rolls and Sir Frederick Henry Royce in 1906, is synonymous with the world of fashion and, more specifically, haute couture. Designers of the highest quality one-off garments share the same philosophy as the designers of the marque: to craft an exquisite luxury product that exudes style and substance to stand the test of time. At the height of its success, Rolls-Royce had British blood running through its veins, producing cars for the wealthiest and most stylish members of society. Today, its models are produced by BMW, but its design headquarters are based in West Sussex, allowing the designs to retain the quintessential British aesthetic that makes them so covetable in the first place. The Wraith is no exception. In-keeping with the theme of silent-but-deadly apparition-like creatures, ‘wraith’ comes from the Scottish Gaelic meaning ‘spirit’. Its chassis is based on its predecessor, the Ghost, but its intricate details transform it into a completely separate entity. Split into three categories of inspiration – music, film and fashion – the Wraith encompasses generations of popular culture from a high-end perspective, utilising lavish materials to create a vehicle that is timelessly stylish. An Arctic White and Black colour scheme lines the interior of the Wraith ‘Inspired by Fashion’, complemented by a fusion of fine silks, lacquered wood and buttery soft leather. Michelle Lusby, designer at the Rolls-Royce Bespoke Design Studio, states that the use of silk as a focal point stemmed from the inclusion of the material in a previous model: ‘we used silk in the Phantom Serenity, so we wanted to continue that aesthetic in the Wraith.’ Michelle explained that creating patterns for the silk to be used in the car was akin to ‘putting together a suit at a tailor’s shop,’ reinstating the theme of couture and one-off creations. Having studied textiles at Somerset College, Michelle practised working with unique materials. This led her onto a career in London working in designer fashion and furniture, before Rolls-Royce snapped her up as part of their design team. Michelle states, ‘I had never considered working in automotive design, but it turns out it’s a perfect match for me. It’s fastpaced and there are always exciting projects

and opportunities arising – it really is a dream job.’ Working in the Home of Rolls Royce, Michelle is able to see her design through from the drawing board to the finished product – an exciting prospect for any designer, but especially so if the end product is one of the most desirable luxury cars in the world. Michelle discusses the Wraith with the enthusiasm of a couturier revealing their debut collection: ‘I love the whole car – the colours, the fabrics, the shape – it really is an amazing vehicle.’ Her favourite elements of the design revolve around the smaller details, such as the silk lining of the front and rear door pockets, the seamless two-tone steering wheel and the placement of the idiosyncratic Spirit of Ecstasy emblem at 55 degrees to complement the lines of the door, ‘Rolls-Royce is all about attention to detail and that’s reflected in the Wraith.’ The design process involved continuously consulting the manufacturing department, specifically the leather shop. Michelle explains, ‘the hurdles we encountered were mainly to do with ensuring that the design could be achieved when it came down to the manufacturing process. We were in constant communication with the onsite leather shop, working to achieve the right aesthetic in the finished product’. The Wraith ‘Inspired by Fashion’ was launched at New York’s Pratt Institute in May 2015. According to Michelle, the car had a particularly good response in the creative environment of the launch: ‘we’ve had so much positive feedback. I’m really pleased to see that the Wraith has been well received.’ To mark the occasion of the creation of the Wraith, the brand devised a landmark shoot on the production line at the Home of RollsRoyce in the South of England. The luxurious materials and distinctive features presented in the motor car were accentuated by fashion models, set against a backdrop of hand-made motor cars in the signature spotless white of the Wraith ‘Inspire by Fashion’. In Michelle’s words, the Wraith is ‘dynamic, powerful and beautiful’; not only is it visually stunning, but it is also the highest powered car in the Rolls-Royce portfolio. Befitting sartorialists and luxury motoring enthusiasts alike, the car proves to be Rolls-Royce’s multi-faceted gem amongst a series of highly successful and widely coveted vehicles.

Jennifer Meredith pushes premium tyres to the limit at Bridgestone’s European Proving Ground in Italy

I

t’s around two o’clock in the afternoon and I’m sitting in a Volkswagen Golf TDI 2.0, one of Europe’s most popular cars, waiting for the drivers in front of me to pull away so that I can begin my lap. Rain had all but flooded the track that morning but, luckily, I have caught the weather at just the right moment; the tarmac is dry, the sun is shining, and I am raring to go. As soon as Stefano (Modena, former F1 driver) gives me the signal, I step on the accelerator and zoom into the first corner: a sharp right, almost U-turn, leading into the rest of the track. Next is a straight run between sets of cones into a zig-zag of three corners, before I finally slalom my way to an exhilarating victory and pull in

at the finish line. I had Bridgestone’s Turanza T001 tyres fitted to my car, and not once did they falter, even at cornering speeds of 50mph. I was impressed. Next one the list: wet braking. This is where I felt a tad uneasy to begin with (back in the UK, I always take extra care when driving in wet weather), but I felt reassured following a lap with one of the professional test drivers in my car. I was asked to build up speed on a roundabout before entering into a straight, 60mph run between a set of cones where I would then brake as hard as possible. Finally, I was a passenger during a test of wet track handling, in which a professional driver controlled the Golf at high speed. The track featured patented, state of the art technology which allowed complete regulation of the water flow across the road using various pumps and sensors; that afternoon, the water level was at 0.5mm, and the surface of the road felt extremely slippery. although I was being all but thrown around in my seat, I felt perfectly safe in the knowledge that the driver was confident in the tyres’ performance. Sadly, after that test, the heavens opened – and stayed open for another hour. The ground was covered in a good inch of water, and so I was driven to a pavilion under which I could watch a demonstration showing the differences between the performance of a car with RunFlat tyres and a car without, and how they both functioned in a puncture scenario. Bridgestone were the first tyre manufacturer to offer Run Flat tyres to the mass market, highlighting their keen interest in the safety of their customers, as well as their ability to produce innovative technology to meet demand. Run-Flat tyres allow you to drive up to 50 miles at 50mph after a puncture due to the utilisation of reinforced sidewall rubber, saving you getting

caught in the stressful situation of changing a tyre in an inconvenient location – simply drive to your nearest Run-Flat tyre dealer to have the tyre replaced, and be on your way. Needless to say, the Run-Flat tyre-equipped car performed much better, dealing with the puncture as if it had not even happened. Bridgestone spend over €700 million on research and development worldwide, and have made it a recent goal to educate consumers on the safety of premium tyres. At their Technical Centre, scientists investigate compounds and raw materials in a continuous process of technology enhancement, before engineers test out the tyres on a number of machines to examine their safety and performance. Walking around the facility, the air is thick with the smell of rubber and petrol, and you can barely hear yourself over the noise of the machines, but the engineers

seem enthusiastic, regardless. As Riccardo Ugolini, training and communications senior manager states, these employees are ‘110% engineer’, constantly working to achieve better results for the company. Currently, Bridgestone laboratories are striving to find more sustainable materials in order to use less fossil fuel in the manufacture of their tyres, which could have a global impact on the amount of crude oil used to create tyres. A worthy cause – one which they are proud to be a part of. My experience at Bridgestone was truly enlightening; I had entered the facility with limited knowledge on the performance and safety aspects of premium tyres, and left compelled to purchase a set for my own car. Although I will always be extra careful when driving in wet weather, at least I can rest assured that I will be safe on Bridgestone tyres if I ever get caught out!

poised and elegant vehicle, the Range Rover Autobiography reveals a 4.4litre SDV8 Diesel engine to impress even the most passionate petrol head. A combination of parking sensors with the Surround Camera System, which uses four discreetly placed cameras around the vehicle gave almost a 360 degree view, made parking a dream.

Although it looks big on the outside, has enviable boot space and feels roomy on the inside, it doesn’t feel huge to drive. Infact, we were pleasantly surprised at the light and responsive handling for such a large car.

The premium plush interior is an elegant combination of cream leather and polished wood. Every seat in the car was comfy and felt like it supported the body well. The model we drove had personal climate control, intuitive drive and massage seats which were truly a dream and got a big thumbs up fro the EAUX team. We also loved the panoramic roof which is ideal for hot, sunny days.

T

he use of glass in homes is changing. Advances in glass technology and glazing design mean we can answer the needs of daylighting, energy, view, security and acoustics in modern buildings and produce much larger areas of glazing than was previously economical or possible. Windows in our homes are traditionally small and functional to let a little light in and provide ventilation when needed. Historically as glass was expensive, leaked heat and was difficult to produce in large sizes we were limited to what we could do with windows. Windows in the mass market housing in the UK have actually been getting smaller in recent years. However, some university research has shown a lack of daylight and sunlight can affect our mental health and wellbeing. This fails to make the most of the opportunities available. In contemporary architecture we can do so much more! We can use glass in roofs and walls to enhance our homes in a number of ways. If you are lucky enough to have panoramic views of the countryside or coast from your home then you can make the most of this with floor to ceiling glass. You can frame a view on more inward looking sites using smaller windows. Designers have created vertical thin glass openings that frame a distant tree for example, in one of our recent barn conversions a window looked down a garden path to a pergola. A series of small windows can be used to enhance a spiral staircase showing glimpses of different views and vistas. Large areas of glass reduce the need for electric lighting and can improve our health. Studies have shown that good daylighting can improve our mental health, can reduce illnesses such as Seasonal Adjustment Disorder (SAD) as well as saving on our electricity bills. Triple glazing with gases such as argon used to insulate between layers mean that heat losses are much reduced and homes can remain comfortable despite the large windows.

We can even use areas of glass to heat our homes. Window size, orientation and shading can be specified to minimise or maximise solar gain and clever roof overhangs to provide summer shading can help heat the building as well as providing dramatic views. South facing glass walls provide light, views and free energy. There is an increasing trend towards passive solar architecture as glass technology has improved and we become more energy conscious. It is not just the walls that are benefiting from changes in glazing design and technology. Roofs can now be designed with sliding glass sections, standard rooflights and walk-on glazing. Roof glazing maintains privacy but also floods a space with daylight and sunlight. You can lie back in a bath or bed and stare at the sky or watch the wind in the trees. An increasing trend in contemporary homes is for bi-folding and sliding doors to connect gardens and outdoor living with indoor family spaces, kitchens and dining areas. This means that our rooms are no longer confined to the fixed walls. We can spread outwards when the weather allows. This type of glass use enables us to blur the boundary between inside and outside for that year round connection and increased feeling of space. Glass does not only have to be used externally. Modern homes are designed with glass in floors and internal walls. This provides light into internal hallways and corridors, views from an upper floor downwards for example, or even views from a kitchen to a living room. Contemporary houses have even featured glass stairs or internal bridges. Just because you live on a busy road or have neighbours does not mean you cannot exploit the opportunities of this fantastic material. You can now choose a glass that turns from transparent to opaque simply by passing an electric current through it to obtain total privacy when required. Think of this as having integrated curtains. If privacy is a constant issue then think about roof glazing or lowlevel glazing. Finally you can also add a garden room or draught lobby that is made entirely of glass. Glass structural fins support the main glazing. This can give a lightweight contemporary look that is used increasingly when extending heritage homes. As technology continues to improve glass will become much more important in home design and we will live in homes much better connected to the world outside, with better light and views. Onward upwards We speak to Julia Nelson-Elgar of Nelson Design UK

015 is the end of an era and the beginning of an exciting new time for Julia Nelson-Elgar, who is making a bold new move by restructuring and transferring Nelson Design UK out of the showroom on St. Peter’s Street and into her own home in Ipswich. Our editor Victoria visited Julia in her home for a coffee and to find out more about the move. ‘We’ve been renovating our home for the past nine months and so many of our clients have been interested in what we’ve been doing and have said they’d enjoy seeing it,’ explains Julia. ‘That got my husband, James, and I thinking. What would it be like for our home to be our showcase? How wonderful to be able to see your interior designer in their own home? Clients can see first-hand the quality of products from the hand-built kitchens, the bespoke upholstered furniture and the handmade soft furnishings. I love my house. It is what we have worked so hard to achieve and I think that hard work will show clients how much dedication we have for our work and what we can do for them.’ Julia also notes that much of the time she goes out to visit clients in their homes so it’s easier to respond quicker to enquiries. The move will benefit Julia’s clients immensely and it also frees up her assistant Lisa to attend home visits and offer twice the expertise. The showroom won’t be empty for long, though. Lynn Turner of Cake & Catwalk will be taking the reins in order to grow and expand her business, too. ‘Although I am keeping my shop at DanceEast I

really want to stock some new lines and of course have more space and footfall,’ says Lynn. It’s great to see two local businesses expanding and flourishing. Julia comments: ‘I really feel fantastic handing over the premises to Lynn – she will use the building to her business’ best advantage and will be a true asset to St. Peter’s Street.’ The new Nelson Design UK HQ is a purpose built studio in Julia’s garden, which I was lucky enough to see in progress. Julia hopes that the move will allow her to see more clients more often and see new clients sooner, too. ‘While I normally can only see clients during the day on Mondays and Saturdays, I would be able to see them during the week or even in the evening as I can plan my day around an evening visit. Also when clients come to the studio I think they will appreciate seeing me more on a one-to-one basis without interruption.’ This will also free Julia up to spend more time in London sourcing exciting new collections and inspiration. Much of Julia’s new business is through recommendations or through the website. Without her showroom to draw people in, she plans to encourage new business through regular coffee mornings with a programme of speakers, design surgeries and furniture painting workshops. To celebrate the opening of the new studio Julia is planning an open weekend in September. io what I hear you say? Biohpilia literally means ‘love of life or living systems.’ It’s a growing trend in the interiors world as there are many – now proven – advantages to this design ethos.

EO Wilson of Harvard University is credited with much of the research in this field. Evidence of the psychological and emotional benefits of his approach to biophilic design is difficult to ignore – it reduces stress, increases wellbeing, aids recovery from illness, enhances academic performance and moderates the effects of bad behaviour, autism, ADHD and other conditions. A school study revealed an increase in children’s test scores, and office workers became more productive when green spaces were introduced. Biophilic design leads the way in enhancing our every day environments and we reap results in surprising ways. Within the home biophilic design delves deep into the fundamental need and emotional attachment humans have with nature in both colour and materials, thus creating a calm, nurturing and healthy environment. You don’t need a vast country estate to benefit from these design principles. If you have a flat with a small outside space, a pretty tree in a pot or a simple window box is a great start. Green leafy design glass splash backs in the kitchen and fresh herbs growing in pots on the windowsill all contribute. Following these tax reliefs through from start to finish and taking the above example of the net costs and taxes applying on exit to a £10,000 gross contribution:

lot has been said about the new pension rules and pensioners spending their retirement funds on a new car but very few people have looked at how the new rules can make pension investments very tax efficient. WHAT RELIEF CAN I CLAIM? Pension investments allow an individual to claim tax relief at their highest marginal rate of income tax. This may mean that tax relief could be claimed of 40%, 45% or even in some cases 60%. This could mean that, after tax relief, the net cost of getting £10,000 into your pension could be as low as £4,000, with the other £6,000 coming from tax relief. HOW CAN THIS HELP WITH THE NEW RULES? Whilst a tax deferral is great, it becomes of significant benefit when it enables you to make a permanent tax saving and this is what the new rules will allow you to do. Taking the above example of £10,000 being invested into a pension, if this can be drawn as income when in retirement (presently

Taking a long term view, the new rules could be used to make pension contributions of around £8,000 ■ For a 40% taxpayer the net cost is £6,000 which becomes £8,500 when drawn out of the pension (a more than 40% increase) ■ For a 60% taxpayer the net cost is £4,000 which becomes £8,500 when drawn out of the pension (in effect more than doubling the amount available through tax relief). THE FAMILY COMPANY A significant number of our clients will be family companies. The remuneration strategy selected will often be structured as low salary/high dividend as this limits the income tax and National Insurance on getting the income into the owner’s hands.

family business the difficulty is justifying a remuneration package of more than the level of the low salary, which will be set at around £8,000 for 2015/16, for the non working spouse. It is important that HM Revenue and Customs can be satisfied that the overall package of salary and pensions would be paid to a third party for the same level of work. The problem with personal contributions is that to make personal pension contributions an individual needs “Net Relevant Earnings” (which is a technical term that defines salary, but not dividends, from a company or a profit share from an unincorporated business) of at least the level of contribution to be made, unless it is less than £3,600. Taking a long term view, the new rules could be used to make pension contributions of around £8,000 and then taking more dividends, which may be a sensible strategy as a way of building up a pension pot so that a couple can both make full use of their Personal Allowances in retirement. ACTION REQUIRED For many owners of family businesses and Private Clients this radically alters how their income and benefits should be structured to maximise the tax relief available and this along with other income tax changes that have occurred on 6 April 2015 makes a review of your remuneration package and pension planning essential.
