Art Soul Victoria Guthrie meets artist Lucy Grossman at her picturesque studio
e are very lucky here in Suffolk to be surrounded by, arguably, some of the most varied and incredible countryside in the UK. When you think of Suffolk countryside, you picture rolling fields, beautiful cottages, stunning woodland and frolicking wildlife. Lucy Grossman, a Surrey-born artist, captures the fairytale-esque beauty of our magical county on canvas and paper with a paintbrush from her garden studio. Lucy has lived all around the UK but decided to settle down finally in Suffolk. She was brought up in Farnham, then later on the west coast of Wales. Although drawing has interested Lucy since she was young, it was here that she began teaching herself art and illustration at the age of 18. She began selling pieces in the Aberystwyth Arts Centre and illustrating for books and local businesses, and things just grew from there. Having been offered a job running a gallery and teaching at a private art school, Lucy moved to Devon. Here she spent two years tutoring and also had a chance to work on and exhibit her own work. ‘I then moved to London after an art editor saw my work featured in Country Living magazine. I was offered a position as illustrator for a large greetings card design company where I stayed for nine years, progressing to editor and to assistant art director.’ This experience really allowed Lucy >>

to stretch her creative legs, make contacts, meet fellow artists and writers and gave her a good grounding in a business sense. It wasn’t until 2003 that Lucy decided living in the city wasn’t for her and made the move back to her country roots. She decided to settle down in Suffolk to become a full time freelance illustrator and artist: ‘all my family originally come from around the area, and I was about to have a baby. I wanted him to be brought up in beautiful countryside surroundings with fresh air. The city isn’t far away, so meetings in London were no trouble and I love the buzz of the city too.’ Lucy now lives in rural Suffolk, in the quintessential village of Glemsford. She lives in a beautiful 15th Century chocolate box pink thatched cottage – thought to be the oldest in the village – and doesn’t need to travel far to
‘Each day the light is different; the smallest thing like a hedge full of goldfinches I see on my walk could be the next painting I do when I return to my studio.’ Paintings by Lucy really display a new perspective and capture the charm of the Suffolk countryside, bringing it to life on the page. The great thing about being freelance? No two days are the same. Sometimes Lucy will be illustrating for a book or designing cards, then the next day she can be creating new work for a gallery or working on a private commission. ‘What I do is quite varied, there is never a dull moment! I usually try to walk in the mornings or drive to special locations to gather inspiration for paintings, and the fresh air helps me to feel invigorated and inspired! ‘Sometimes I will be visiting a private commission client to talk about ideas, take
surroundings really translates into her work and makes her work come alive. Lucy’s favourite painting to date? One that she finished just last week of a barn owl flying through a wintery wood, called Angel Owl. ‘I particularly love owls and this one was inspired by a huge barn owl flying right up in front of me and for a moment, it looked like an angel.’ Beautiful wintery scenes, bare branches and fading light are also favourites, but Lucy is careful to never get complacent about her work. She works hard at finding new ways of doing things, and introducing new techniques to really keep her work fresh, but still fitting within her soft, illustrative style. So what does the future hold for Lucy? She’ll be keeping Lion House Gallery stocked up with fresh new paintings throughout the year. ‘Around February time I am bringing out ten
6 visit her workshop. Lucy paints from her own studio at the bottom of her oasis-like garden. Lucy says that the move to Suffolk really pointed her work in the right direction – she loves being surrounded by nature and painting wildlife and the countryside. She set up her own website so she was still able to connect with people throughout the UK and started exhibiting her work with local galleries. It is the beauty of the surrounding rural landscapes that influences Lucy’s work: ‘I walk a huge amount which is where I collect a lot of my information – gathering sketches, getting the feel of a place, noting the changing seasons and weather conditions on everything.’ Lucy speaks of how she pays careful attention on her walks and makes a note of everything that catches her eye – from wildflowers blowing in the breeze to birds singing – and these become the ingredients for each painting.

reference and build up sketches for their painting.’ At the moment Lucy is working on a very detailed full colour picture book about all different types of gardens for children. ‘Jobs like this can take up quite a lot of time but I always like to carry on creating pieces to be exhibited at the gallery and I illustrate for cards too. I produce my own fine art prints which I sell on my website and in the gallery too, and I like to keep these fresh and topped up.’ She also produces private commissions for individual clients. Though she loves to paint birds, wild animals and old cottages, Lucy’s got many places in Suffolk that inspire her and her paintings: ‘the lanes, walks and fields directly from my door still remain some of my favourite places but I also love Ickworth park, Aldeburgh, and surrounding countryside and woodlands.’ Lucy’s acute sense of awareness of her
new prints for my website (Bluebell Wood, Angel Owl, Midnight Garden and Meadow Flowers are among them) and they will also be available in the gallery. At the moment, I’m busy illustrating my children’s book on gardens and this will take me well into 2016 and I plan to do more nature and wildlife illustration like this in the future.’ Lucy will also be working on a collection of snowy winter wildlife paintings to exhibit in autumn/winter 2016, so keep your eyes peeled for these. hey’ve been around for generations, but over time, our four-legged friends have slowly become a bigger part of the modern day family and are now regarded as just as important as any other member of the fam. There’s nothing quite like the companionship that a furry friend can offer. Not only do almost half of the UK population own pets, we are also treating them more and more with luxury accessories, grooming, specialist foods, training and even day care. It really is the golden age for pets. A 2015 survey from the Pet Food Manufacturer’s Association (PFMA) has estimated that 12m households have pets, the actual pet population standing at 58m. There is no doubt that the demand for luxury pet accessories has grown in the last few years. The amount people spend on their furry companions reflects the important place pets have in our lives. Our infatuation with our four-legged friends doesn’t stop there – according to Ancestry.co.uk one in 20 of us have commissioned a professional portrait of our animals. The demand for pet accessories is so strong that Claire Alexander made the move from Amsterdam back to the UK (and Suffolk) to start Maison Le Lou, a luxury dog collar and lead brand, in early 2015. ‘Although I have always thought of myself as a city girl at heart

I am noticing how the relaxed lifestyle on the Suffolk coast is influencing the direction of the lifestyle aspect of my brand in the new products I am developing.’ Claire believes that owners want to buy accessories for their dogs that match up to the quality and aesthetic of the products they buy for themselves. Inspired by her beloved French bulldogs Louie and Leonard, this cheeky duo are the essence of the brand. Claire has had a long career designing men’s accessories for big brands including Ted Baker, Zara and Tommy Hilfiger, but it was her dream to own her own business that offered luxury collections for pets that were gender specific in an understated way. The lead and collar designs are influenced by many factors including current trends, limitless luxury goods and beautiful materials, each and every product reflecting Claire’s handwriting as a designer and the aesthetic of the brand. The Pour Homme collection focuses on the style of a true gentlemen, with a masculine feel created through the colour palette and use of materials and texture. The focus for the Pour Femme collection is chic, feminine accessories in elegant colours and leathers with the added touch of luxury such as the 14k gold plated dog tags. The experience Claire gained in her 18 years in the fashion industry has been invaluable in starting her own business – not only has it given her the design and technical capability to bring her ideas to fruition, it has also provided her with the knowledge needed to make the right sourcing and manufacturing decisions to be able to produce such high quality products. ‘I’ve been able to really focus on the fit and comfort of my products for the dog through the materials, construction and sizing. The key element that makes up the I caught up with Sarah Mountford owner of REX by HOUSE of MUTT, who is based in Fakenham Magna outside Bury St Edmunds. She launched HOUSE of MUTT five years ago. Designed for dogs of distinction, HOUSE of MUTT is an exclusive dog hotel which has been recommended by Harrods. Sarah also developed her own range of accessories called REX which we find out more about below:
WHAT PROMPTED YOU TO START REX BY HOUSE OF MUTT? The hotel started five years ago and during the course of looking after dogs we found that many of the toys and products that the

style of all my products is the visible quality that my customers expect to see from a luxury accessories collection.’ It is important to Claire to be able to support British manufacturing and to this end each and every product is handmade in England by one of the last remaining small leather good manufacturers: ‘quality is the essential focus
on my products and having spent my entire career working with factories all over the world I have had the luxury of picking the best place to produce my products to the quality my customers expect.’ Claire is involved in every aspect of the business from the initial design, the branding, dog tags, swing tickets and the website: ‘when you are working as a designer for a large brand you are part of a team that works together creatively to produce a successful collection. As much as I miss my creative teams it has dogs were playing with were beautiful but not the best quality. And so we decided to set up a small line of products that were functional yet high quality as we felt we had a very good understanding of what both dogs and their owners need.
DO YOU THINK THERE IS A DEMAND FOR EXTRAVAGANT PET PRODUCTS? I think that people want to spoil their dogs at Christmas and on birthdays because they are such a big part of their family. I think the pet market is growing to meet the desire for luxury items. Not long ago there wasn’t much choice but now there is a growing range of products available.

WHAT IS IT THAT OWNERS ARE LOOKING FOR IN PET ACCESSORIES? Products that work for both dog and owner. It has to be effective, fit properly, have great design and exceptional quality of craftsmanship. Owners want to know that love and care have gone into the creation of their pet’s toys.

Sara Green catches up with author Sarah Foot
I
met Suffolk writer, Sarah Foot at a dinner party a couple of years ago and she told me about the book she was about to have published. Well, she didn’t exactly tell me about it, I had to tease every last morsel of information about it from her. Sarah isn’t one to sing and dance about what she does – she’s one of those private, reserved people and that made me want to read her book as soon as possible! After a lot of encouragement she did send me the proof to read – so a copy of Fragments arrived in my inbox and with it the sudden realisation that I would have to tell Sarah what I thought about it! Why hadn’t I just kept quiet until it was published? A few months later my husband and I went away for the weekend and I arrived at the hotel having forgotten to bring anything to read – I suddenly remembered Fragments and I started reading and I didn’t stop until we got home on the Sunday evening. What a relief – I loved it. Sarah writes beautifully – she crafts a delicate story around intricate characters that you really do come to know and I was absolutely bereft at the end.

Many of the themes have resonances with Sarah’s own life. When I first asked her about the novel she said it was about whose needs one puts first – your husband’s, your child’s, your family’s or your own? This is a problem she has had to face many times. When her son was two her husband was sick for a long period of time. When she was a teenager her mother developed multiple sclerosis. So Sarah really does know about the tensions of wanting to lead your own life but at the
same time having a desperate need to look after those she loves. Deep down she says she’s very trivial. ‘Sometimes when you are struggling with really basic issues of life and death it’s a relief to turn to the joy of a beautiful pair of shoes or discuss the perfect colour of a lipstick,’ she told me. Sarah found pure escapism through her work and her writing. She worked at Vogue for a few years and loved it, edited Irish Tatler, a women’s magazine and had a regular column in The Times. Fragments also explores how first appearances can be very deceiving. Sarah is fascinated by the way sometimes it is easy to make a quick judgement about somebody and then as you peel away the layers you realise their life is far from as wonderful as you think. Initially you make assumptions about the characters in the book but as the novel progresses you come to understand them. Sarah wants, by the end of the novel, the reader to feel immense compassion for all these flawed characters. The novel is set in London where Sarah has spent most of her life, but even as a child she wished she could live in the country and six years ago, realising that dream, she and her family moved to Suffolk. Sarah has told me that she ‘never wants to live in a town again. I am not even sure I want to live in a village,’ she says, ‘and what is wonderful about Suffolk is that you can still find those places of wonderful wildness and solitude’. The paperback version of Fragments is published by Quercus and is released on 25th February 2016, £7.99.

It’s a great privilege to be part of an institution that has promoted so many notable jazz and commercial musicians and I am amazed at how the technical and artistic standard seems to rise in the young players from year to year.
NYJO HAS MEMBERS FROM ALL AROUND THE COUNTRY. DOES THIS PROVE A CHALLENGE FOR REHEARSALS?
YOU’VE A PRETTY IMPRESSIVE BACKGROUND IN MUSIC, WHAT WOULD YOU SAY HAS BEEN YOUR GREATEST ACCOMPLISHMENT SO FAR? Although I am very proud of what we have achieved in NYJO (thinking especially of the two studio albums and the 2012 BBC Proms concert) my personal highlight so far was working with Stan Tracey and recording his final album The Flying Pig, backed up by the seven years I spent playing with his son Clark in his quintet.
WHEN DID YOU FIRST START PLAYING AND WHAT WAS IT THAT INSPIRED YOU TO START? I actually started on the piano and then the tenor horn (less glamorous than the trumpet) before my dad got me a hired Czech trumpet when I was around 10. I suppose I have always tried to understand and know music that catches my imagination and excites me.
HOW DO YOUNG MUSICIANS COME TO GET INVOLVED IN NYJO? NYJO, the main band, has a long-standing reputation for excellence amongst young jazz players and is the natural aspirational pinnacle for those with an interest in large ensemble jazz. We audition country-wide every year for players for the main band. Additionally on a Saturday we run the ‘NYJO Academy’ in London which provides younger players with
It can do, but fortunately Help Musicians provide us with a fund for travel which makes it easier for players based outside London. Even so, we sometimes cannot get all the players together at the same time and yet we have found that somehow the music gets rehearsed and ready for the concert, in a jazz version of ‘morphic resonance’!
2015 WAS THE YEAR THAT NYJO CELEBRATED ITS 50 YEAR ANNIVERSARY. HOW IS THE OCCASION BEING MARKED? By the release of our new album NYJO Fifty, and in the programme of our ongoing concert series which celebrates the legacy of the band as well as looking forward. We also held a party for the many band alumni back in September 2015, which was great fun.
WHAT HAVE BEEN SOME OF YOUR MOST MEMORABLE EXPERIENCES WITH NYJO? I mentioned the 2012 BBC Proms already, which was a very memorable experience. Additionally, I remember with great fondness how committed the players were for our joint tour in Germany with our German equivalents, the BuJazzO.
HOW DOES IT FEEL TO BE A KEY PART OF MANY DEVELOPING MUSICIANS’ CAREERS? It feels like a responsibility, but enjoyably so. If we can make people feel ready for the music business, in its widest sense, through our

activities then we have achieved an important part of our mission.
WHAT WORK IS NYJO DOING TO RAISE THE AWARENESS OF JAZZ AMONGST YOUNG PEOPLE? We try on every occasion that we perform to include some kind of educational activity, ranging from children’s concerts to full-band workshops with hundreds of young people at once. This year we’re working with students from Suffolk primary schools. We hope not only to inspire young musicians in their playing but also to build an audience for the music and hopefully recruit a few wealthy patrons too!
DOES NYJO COME TO SUFFOLK OFTEN? I believe we have played approximately every other year in Bury St Edmunds, so it’s great to be back in 2016.
DO YOU HAVE ANY MEMBERS FROM THE REGION? Our Suffolk trombone player Owen Dawson has just moved on from the band! However, since Suffolk has a vibrant musical education scene we are sure to be seeing more local musicians within our ranks before long.

the boot of our car – safe to say that things have moved on since then and after a lot of trial and error, we now have a much more professional setup!
WHY FOOTWEAR? Honestly, I don’t think either of us could say that we would end up making ladies boots for a living. That said, I don’t think either of us would look back. It is definitely something that we have grown to love. We both enjoyed working for Felix’s godfather previously, learning the ropes and gaining insight into the footwear market – particularly the luxury, handmade product. It is great to design something that you make from start to finish and to end up with such a beautiful product.
HOW DOES IT FEEL TO HAVE LAUNCHED YOUR OWN BUSINESS AT JUST 24? I think we would both agree that it is the most satisfying, fulfilling yet frustrating thing we have ever decided to do, with emphasis on the frustrating! There have been some huge highlights over the past couple of years – when you see something amazing growing out of all your hard work, you just can’t ask for a better

hildhood friends Marcus Fairfax Fountaine and Felix Favor Parker started their distinctive luxury footwear brand Fairfax & Favor in 2013 from Norfolk. The aim was to create a collection of beautiful, luxury shoes with a youthful ethos and drive to shake the marketplace up a bit. ‘The line between smart and casual is now completely blurred especially if, like us, you live with one foot in the country and one in the city. We really struggled to find shoes we liked and could wear everywhere, at a price we could afford,’ explained Marcus. I caught up with the duo over coffee to find out more.
WHAT INFLUENCED YOU TO MAKE THE DECISION TO START THE COMPANY? We have always said since being at school that we wanted to work, and hopefully own a business, together. Both of us ended up working for Felix’s godfather in the footwear industry. We eventually decided to take the plunge with Fairfax & Favor and enter into the
market ourselves; it will definitely go down as one of the scariest and most nervewracking moments waiting for our first order of shoes to arrive! We pooled our savings, flew out to Spain and made the decision to order as many shoes as we could from the factory that would become our sole producer for all of our beautiful boots.

HOW DOES FAIRFAX AND FAVOR DIFFER FROM OTHER LUXURY FOOTWEAR BRANDS? One of our main aims is to be both an attainable and versatile luxury – something which is well made and has that luxury finish. There are no limits and the classic, timeless styles mean they can be worn by all ages and just as easily worn out for a drink in your local country pub as a busy working day in the capital.
WHERE CAN WE BUY YOUR SHOES?
WHY WAS IT IMPORTANT TO HAVE THE SHOES HANDMADE? It is a huge part of the quality process. We personally know the lady that makes up each individual tassel for us; we know how long she spends and the amount of care she puts into creating each one. Nothing can compare to the time and care put into a handmade product. Nothing can reflect the finished quality either, and for us this is so important. We want our shoes to last and be something people cherish.
HOW INVOLVED DO YOU GET IN TERMS OF THE DESIGN AND MAKING PROCESS? We love to be as hands-on as possible and design everything ourselves, from the box to the dust cloth and sole of the shoe. Felix will frequently fly out to the factory abroad (and has even taught himself Spanish) to gain as much insight into the production process as possible and has even made a boot from start to finish by himself!
DO YOU HAVE ANY HIGH PROFILE CLIENTS? We are very lucky to work with so many

different people and have several high profile clients. It is both wonderful and flattering that they choose to wear our shoes, however in the interest of their privacy, unfortunately we are not at liberty to disclose any names.

Many of the most stylish shops in Suffolk are independents, run by local people who have a passion for what they offer. The county is full of little hidden gems, and I love stumbling across something unexpected when I am visiting different towns. Everyone has their favourite places to shop but there are some shops that are great to visit throughout all the seasons, where you’ll always find a treasure trove of pieces.
IPSWICH Whilst you are out and about shopping I highly recommend stopping for lunch on the vibrant St. Peters Street or St. Nicholas Street. Coes of Ipswich sits on Norwich Road and is one of my favourite shops: I’ve worked with the team here for many years as a model, stylist and event director. Déjà Vu Boutique, just down the road from Coes is a comprehensive boutique. Glamorous by reputation, Déjà Vu is a real find and provides a great shopping experience for all image conscious women. RSPB Birdwatch flocks to Care UK’s Suffolk care homes

esidents at Care UK’s care homes and day care centres across Suffolk have been enjoying the benefits of spending time outdoors and getting closer to nature. Over the past few months, each of Care UK’s homes have been busy making their gardens bird-friendly by putting up bird boxes and making their own fat balls. At the end of January, residents at each of the homes took part in the RSPB Big Garden Birdwatch, the world’s largest wildlife survey. Four Suffolk homes also welcomed special visitors from the Suffolk Owl Sanctuary.

Shell out for a Lava Shell massage with SK Clinic + Spa for the ultimate in relaxation
orget hot stones, Lava Shells are the world’s first self-heating massage tool. When I was invited to try the Lava Shell treatment at SK Clinic + Spa , I admit, I was more than a little excited. Offer me a chance to relieve the tension in my shoulders and I’m there with bells and whistles on. In my time I have experienced aromatic, Swedish and hot stone massages but I have to admit, I was slightly dubious as to how a pair of clam shells would leave me feeling relaxed. A new treatment for SK Clinic, Lava Shells are an old holistic therapy which originates from South East Asia. The deep tissue treatment has been around for thousands of years and is classed as a classic ritual in Asia and was originally passed down through generations. After a warm welcome, I was shown through to the waiting area, a dark, calming space to start the relaxing process before my treatment. My therapist, Bianca, invited me through to the treatment room, a clean and cosy sanctuary. My eyes lit up as soon as they set their sights on the extra wide massage bed covered in fluffy towels. No more arms falling off the table mid-massage! Bianca left me to make myself comfortable under the towels. When she returned to the room, she explained how the palm sized shells worked as an extension of the hands. The shells used are
actually Tiger Clam Shells which have been taken apart and polished by locals to make them smooth. A small hole is cut into one side to allow room for a teabag-like pouch of specially formulated powder which includes Magnesium, Iron and sea kelp. The ingredients within the pouch form a chemical reaction, which is known as dry exothermic heat reaction. The shells heat up when they are standing still and the more they are used, the more the heat disperses from the shells, so a combination of hand work is used as well throughout the treatment which allows the heat to really penetrate deep to allow for more manipulation of the muscles. The changing between hand and shell was really fluid and often so seamless I didn’t realise it was happening. Unlike a traditional massage where the therapist uses their hands to manipulate the knots, the heat generated from the shells increases blood circulation and drainage of the lymph nodes, effectively melting the knots away. The shells glide over the skin and the heat can be really effective for those with joint pain from arthritis; it is particularly great for the lower back and shoulders. As the focus was on my neck and shoulders, towards the end of the treatment, Bianca suggested I roll over onto my back to finish off with some targeted action to the front of my
shoulders and more of my neck. Bianca explained that the heat keeps working on the muscles for hours after the treatment. I feel the need to highlight something that, so far in my massage experiences, is unique to SK Clinic; at the end of the massage the residual oil was removed with a steamed towel. This is a very small part of the experience but was a brilliant addition that I think all salons should employ – there’s nothing worse than walking around covered in oil post massage. I had the hour-long treatment but SK Clinic also offer this as a half hour and 45 minute experience. Personally, I’d recommend the full hour! Lava Shells is a really decadent treatment. It offers quick relief to sore muscles and tricky knots and worked really well as a stressreliever, really reducing the amount of tight, tense muscles. I’d go so far as to say this was one of the most relaxing massages I’ve ever experienced.

When we’re young, melaninforming cells called melanocytes inject pigment into the keratin in the hair; however, when you get older, your body produces less melanocytes and therefore your hair loses its colour. I
met Sandy Ruddock seven years ago when she had just moved to Suffolk to be with her soon to be husband, Julian. The story of how they met, how they set up home together and how they created Scarlett & Mustard is a wonderful one. It’s marketing gold dust but it’s also a very special story because it’s true and it makes me smile every time I hear it. Sandy and Julian met via the Daily Telegraph dating website. They exchanged emails for a few months and eventually Julian plucked up the courage to call Sandy by phone. Sandy’s daughter Chloe answered the phone, ‘Is that Colonel Suffolk?’ she asked using the name Julian had used in his advert and he famously answered, ‘no, it’s Colonel Mustard in the study with the lead piping. Is that Miss Scarlett in the kitchen with the revolver?’ The rest is history and would not seem out of place in a Joanna Trollope novel! They were soon married and living together in rural Suffolk with their five children, three dogs, two cats and 15 chickens. The story of how Scarlett & Mustard was formed is equally heart warming – Sandy’s eldest son, Ollie, who was a fussy eater but great at selling, set up a stall one afternoon outside the house, sold a batch of his Granny’s salad dressings and walked back inside that afternoon having made an astonishing £76! Sandy made some more and sold them in the local shop and they sold so she thought up more dressing recipes and they sold too and so Scarlett & Mustard was born!
Thinking about food is something that takes up a lot of Sandy’s time – her desk in the funky Scarlett & Mustard offices is hidden under a pile of food magazines. She has recently started a food blog designed to help people with the dreaded ‘what shall we eat tonight?’ dilemma. I asked her ‘Why a Blog?’ and Sandy’s reply was ‘because so many people ask me for ideas for meals and so many people also share their wonderful recipes with me.’ There is something about the Scarlett

& Mustard brand that makes people want to get involved – their Facebook and Twitter pages are hotbeds of interaction, sharing, competitions and opinion. ‘I love being a part of people’s mealtimes,’ Sandy told me, ‘and the great thing about our products is that they mean mealtimes don’t need to involve huge amounts of inspiration – that’s what our sauces and oils provide! We set ourselves some blog rules – recipes must be easy, they must be quick and they must be healthy. They must also be fun and any age group should be able to make and or enjoy them. Food has always been a very big part of Sandy’s life. She lived in Venezuela for five years when she was growing up as her father worked for an oil company. ‘Living in Central America opened up a whole new culture of cuisine for us,’ Sandy told me, ‘my mother used a lot of chilli which at that point was almost unheard of.’ Sandy also spent a year in Belgium working as an au pair and it was here she learnt to cook and shop – having to think up quick and easy meals every night. Sandy had taken her mother’s handwritten recipe book which contained the original recipe for Scarlett & Mustard’s Granny’s Dressing.

Victoria Guthrie finds out what it was like, for author Kate Eddison, writing The Suffolk Cook Book
h, to be tasked with writing a book about the food in Suffolk. I think I could easily fill ten! Our fabulous foodie haven has been gaining recognition as a rich source of talented producers, artisnal food makers and cracking restaurants, delis and bars far and wide. The likes of Framlingham sauce producer Scarlett & Mustard are among many who ship their produce across the globe. Author Kate Eddison was tasked with condensing such a wide and varied range of culinary wonders into just 189 pages. With such incredible enthusiasm for food and cooking in the region, what better reason to focus a cook book on Suffolk? The Suffolk Cook Book is the latest in a series and is a collection of stories and recipes from the people and businesses that make the Suffolk food scene: producers, suppliers, delis and restaurants, explains Kate. She goes on to say: ‘the plethora of farm shops, independent makers and local producers is astounding. Plus there are just so many towns that have thriving restaurant scenes and regular markets.’ An abundance of fresh food is available right on
our doorsteps ready to be sliced, diced and enjoyed, whether that’s at home or in your local restaurant. Kate’s first port of call for writing the book? Oliver Paul, owner of the award-winning Suffolk Food Hall. As a fifth generation farmer with more than seven years under his belt running Suffolk Food Hall, Oliver was the ideal person to explain how the landscape of Suffolk had influenced the heritage of the county. One of the things that stood out for Kate about speaking to so many people involved in the book was how everyone was interlinked: ‘I would speak to a local cheese producer, for example, then I would speak to farm shops who stocked that cheese and restaurants who used it in their dishes. Everyone is keen to support each other and make the food scene as successful as possible – it felt like a real foodie family across the whole county. ‘Each and every business was so different and fascinating in its own way with really interesting stories behind their success and what makes them so passionate about their business.’
Kate was very surprised to find out just how many rare-breed animals are carefully reared in the region and at the amount of unusual crops being grown. The Suffolk Cook Book is the third in the series, so we wanted to know how Suffolk compares to other counties: ‘Suffolk is a shining success story in terms of artisan produce, and I think this relies on the dedication of the producers but also on the locals who go out and buy them. This book stands apart from the others in the series as it doesn’t just feel like a collection of individual businesses, it highlights the network of growers, farmers, producers, makers, suppliers, restaurants, delis and bars who all support each other. Together they have put Suffolk firmly on the culinary map!’

OF BEEF ROLL This tasty brisket sandwich is a constant on The Cookhouse menu and will be served at the Suffolk Show this May. If you can’t wait until then, you can make it a home with head chef Stevie’s recipe below. Dry rub • 1kg of red poll beef brisket • 200g Maldon sea salt • 70g soft brown sugar • 25g mustard powder • 25g hot smoked paprika • 25g ground black pepper • 25g garlic powder • 25g cayenne pepper big fan of supplying those weekly cupboard staples, the champion products scheme at Suffolk Food Hall aims to bring the focus back to the region and the wonderful producers just a few food miles from our doorstep. Starting with the sweet stuff, Percy Bruce supplies the Food Hall with the bulk of their top selling Suffolk Honey. Percy has been a beekeeper for over 40 years, initially in his spare time but more so in his retirement. He has around 60 hives in Suffolk and Essex and makes hundreds of jars of delicious honey every year. Percy extracts the honey from the hives at his home in Little Clacton; the process can take up to a week from comb to jar – set honey takes a little longer as honey naturally granulates over a few weeks, whereas clear honey is warmed to change the texture. To serve • A couple of good quality brioche rolls • Coleslaw • Large gherkins • Mayonnaise • Baby gem lettuce To make the brisket of beef sandwich you will need to prepare a dry rub. This can be made in advance and stored in the cupboard with all other spices and brought out when it is needed. You will also need to leave the beef for a minimum of 12 hours to absorb the rub.

Begin by mixing all of the spices, salt and sugar together in a bowl. There is no need to blend the mixture. You will need 25-50g of the rub for 1kg of beef. This is dependent on your taste and how spicy you like it. If you don’t like it too hot then 25g, if you prefer a good kick of heat then go for 50g. Rub the dry spice mix all over the brisket making sure that you get into all the cracks and crevices. Cover and leave in the fridge for 12 hours but preferably longer, perhaps overnight. When ready take the beef and seal all of the outside to lock in all the flavour and also toast the spices. Place into a roasting tray, cover with foil and place in the oven at 120ºc. Cook for 5-6 hours, then check. The brisket should be easy to pull apart if cooked. Mix the meat with any juices in the pan, you don’t want to waste all of the flavour. Serve in glazed brioche style roll with some mayonnaise, baby gem lettuce, a good spoonful of coleslaw and some thick sliced gherkins.

Fine The Unruly Pig
M
iles Davis once said: ‘it’s not the notes you play, it’s the notes you don’t play’ – advice as useful in the kitchen as it is in the jazz club and a strategy Brendan Padfield and his team have used to wonderful effect with the menu at The Unruly Pig. Sitting on the outskirts of Bromeswell just a few minutes drive north-east of Woodbridge, you feel welcomed by the venue as soon as you approach. The juxtaposition of the exposed wood beams and open fire places, with bold colour choices, modern fittings and prints of some of the biggest icons of the twentieth and twenty-first centuries works to create a unique atmosphere and identity all of its own. This is a restaurant that has no interest in playing it safe as another iteration of the prototypical gastro-pub. I started my meal with the Brisket and Bone Marrow on Toast, and a ‘Gunner’, one of three drivers’ drinks on the menu. The brisket was generously portioned and subtly seasoned, tender with a delicate flavour not usually associated with this cut. It was complemented brilliantly by the sweetness of the bone marrow and a lightly toasted slice of bread sourced from the local Pump Street Bakery. My partner chose the Smoked Duck Hash with Poached

Duck Egg and Broccoli with a Bad Piggy – the restaurant’s take on a Rhubarb Negroni. This dish didn’t disappoint with the kitchen managing to achieve a satisfying crispness to the hash without losing the moisture of the duck. The egg, expertly poached, worked well with the distinctive flavour of the yolk to create a dish that clearly had several fans on the surrounding tables. For the main I chose The Unruly Burger. It was minced on site from a mix of Aberdeen Angus and Herefordshire beef, and accompanied by hand-cut chips, gem lettuce, an onion ring and a deliciously moist, sweet brioche bun. This is the dish I envision when I remember Brendan’s goal for The Unruly Pig – ‘the antithesis of pretentiousness’. There is nothing unnecessary on the plate, the Roquefort mayonnaise isn’t overpowering, the hand-cut chips have kept their skins and are all the better for it. I wouldn’t have said no to a whole bowl of the onion rings; the batter was more reminiscent of a tempura than the thick oily fare I’m accustomed to accompanying most burgers, but in all honesty it would not have improved the dish. This is officially my new favourite burger. My partner chose the steak, medium rare – and ‘generous’ does not do this portion justice. The quality of the meat was such that the preparation was a blessing. The garlic
potatoes, shallot purée and watercress were the perfect accompaniment to the dish. For pudding – I choose the Salted Caramel Tart with Jersey Milk. The staff warned me that they’d received some feedback that this dish was a little too salty. I couldn’t disagree more. The sweetness and tartness of the caramel was offset by the salt and the frothed jersey. Yes it is a salty dish, but any less so and it wouldn’t warrant the name. My partner chose the Mint Chocolate Delice with Baileys Ice Cream. The consistency of the mousse was firm and satisfying to cut. The mint neither overbearing nor too subtle. This Unruly Pig is a wonderful addition to the Suffolk dining scene and worth a special trip. The kitchen has achieved something great with the menu, confidently mixing expertly sourced premium ingredients and creating terrific, beautifully presented dishes. Brendan has achieved his goal. It is a restaurant you instantly feel comfortable in, unafraid to laugh, smile and enjoy yourself. The staff all display a passion for what they are trying to achieve and are unafraid to honestly advise you on your food and drink choices. The Unruly Pig isn’t trying to be something else, it knows what it is and delivers it expertly and at an unbelievably reasonable price.

Seated in the eclectically decorated and laid back lounge, we sampled Kesgrave Hall’s three-tier afternoon tea. We began by selecting our choice of teas: Sapphire Earl Grey, a subtly sweet, fragrant blend; English Breakfast, a comforting and quintessential choice; and Wild Encounter, a beautifully pink mixed berry and citrus fruit tea (also known as ‘Tinkerbell Tea’ because it smells so magical) that was kindly recommended to us.

Following convention, we began by tucking into the sandwiches. The bread was fresh and springy, sliced into neat rectangles with the crusts removed. Four different fillings gave us a fantastic variety of flavours: creamy egg mayonnaise, buttery smoked salmon, cream cheese and cucumber, and peppery ham and mustard.

Having heard great things about the afternoon tea at The Swan, we were excited to sample it for ourselves. We were shown to our table in the Gallery Restaurant at The Swan, which was set up for a fine dining experience complete with gold-rimmed crockery and gleaming glassware. This was a grand space with exposed beams and elegant decor, yet a relaxed atmosphere. We chose a gluten free Traditional Afternoon Tea, as well as the High Tea which had a greater selection of savoury dishes to choose from. Whilst we waited, we enjoyed Columbian coffee and a fragrant, sweet mango and orange rooibos Newby tea, which was routinely topped up.
The Traditional Afternoon Tea sandwiches arrived, filled with a selection of fresh fillings that included cucumber, dill and pepper, smoked salmon and lemon crème fraiche, maple roast ham, and Manor Farm eggs with mustard mayonnaise.
Two teapots arrived, one filled with tea, the other a hot water top-up; a three-tier vintage cake stand soon followed. Our friendly and polite server talked us through the tiers, before asking us if we had everything we required to

with sultanas and as fresh as could be – the best gluten free scones we’ve ever tasted. They came with a dollop of clotted cream and a tart, yet sweet, raspberry jam. The remaining gluten free cakes comprised a rich Belgian chocolate tiffin and millionaire’s shortbread.
The High Tea savoury course arrived well presented. The Welsh rarebit sat on a bed of thick, crispy bread and a layer of flavoursome cheese on top. But let’s not dawdle; it’s really the cakes you want to hear about!
The High Tea included a Victoria sponge cake with a buttercream topping, a slice of rich marzipan fruit cake and a decadent lemon and poppy seed Battenburg. It came with two scones, one sultana, the other walnut and apple. Both afternoon teas also incorporated a twist on the Eton mess: a seasonal mixed fruit jelly topped with cream and meringue pieces.

HINTLESHAM HALL £18 Walking up to the majestic and immaculately kempt Hintlesham Hall provokes a feeling of grandeur – and the interior is equally as impressive. Seated at a round table in one of the lounges, we were away from the bustling restaurant: the ideal location to enjoy an afternoon tea in peace and quiet. Surrounded by historic framed portraits and curious antiques, we ordered our tea: English Breakfast, no less.
Finally, after a few more sips of tea, we tested the array of pretty finger cakes. The rosewater macarons were to die for: a lively pink colouring, these cakes were the perfect texture and flavour, finished with a sprinkle of nuts. The grapefruit drizzle cakes were mouthwateringly juicy, topped with a tangy tropical icing. Also included were coffee viennese éclairs, which consisted of coffee cream sandwiched between two Viennese fingers and topped with chocolate icing and chocolate coffee beans. Lastly, a dark chocolate and mint sandwich completed the afternoon tea, almost acting as a palate cleanser with its refreshing flavours.

The sandwiches, made with locally produced bread from Capel St Mary, were cut into small triangles and grouped into triplets; we had six sandwiches each, an ideal amount to satisfy our savoury cravings. Firstly, we tried the ham and caramelised onion sandwich, which consisted of thick Dingley Dell pork and sweet onion to create a delicious pairing. The next sandwich comprised Ardley egg mayonnaise with chives and fresh tomato, whilst the last sandwich featured a tangy and smooth combination of smoked salmon and cream cheese.
Contented, we moved onto the scones: fresh from the oven, these were soft and light with just the right amount of sultanas. Teamed with thick clotted cream and strawberry jam, the scones were a generous size, but small enough to leave room for the assortment of cakes. Made on the premises by the kitchen’s pastry department, the cake selection consisted of a chocolate éclair, which had a layer of thick chocolate atop a light pastry filled with sweet whipped cream; a tropical fresh fruit tartlet with mango, kiwi and Chantilly cream; a bitesize citrus-infused carrot cake topped with sweet cream and a single blueberry adornment; and a moist, wintery fruit cake. hat are food miles? They are the distance it takes for your food to travel from the producer to your plate, including the middlemen at each stop along the way. Living in a county comprised mostly of agricultural land, some of us have the ability to access farmer’s markets no more than a few miles away; however, for those who may not be able to source their food straight from the producers, the food miles begin to wrack up and, before

EAUX looks at how Suffolk-based butchers and meat producers minimise food miles to ensure freshness
we know it, we’re buying food that has been transported all the way from the other side of Britain or, increasingly, from other countries. This means sacrificing freshness, adding to CO2 emissions and taking money away from local producers. However, there are ways for us, as consumers, to ensure that the food we are buying is fresh, flavoursome, responsibly produced, and that we are supporting a sustainable food system. The main method is to buy
local: as stated earlier, farmers markets are one of the best places to purchase your food, as it is less likely to have travelled far and a higher percentage of your money goes to the producers themselves. If you prefer to buy all your groceries from the supermarket for convenience, a quick glance at the labels will tell you whether the food is local or not – this especially applies to perishables such as meat, fruit and vegetables. quality, fresh and flavoursome meat. Producers include Suffolk Food Hall, Dingley Dell and Riverside Beef. Suffolk Food Hall, based in Ipswich, champions local produce with their use of food from farms within Suffolk as well as from their own land; after just three years trading, they were voted the Best On Farm Butcher in Britain – a highly commendable award considering the amount of highly skilled butchers and producers within the UK borders. At the Food Hall, you can purchase and enjoy the farm’s own succulent pork, tender Red Poll beef, luscious venison and mouth-watering wild game, much of which the EAUX team has tried and tested as the focal point of home cooked meals. Also available is lamb from Spring Hill Farm in Capel St Mary, as well as hand-reared local chickens. The produce can purchased from the meat counter in the Food Hall itself, where knowledgeable butchers are on hand to recommend everything from type of meat, to cuts, to cooking techniques. However, if cooking isn’t your thing, you can always sample the meat in the award-winning Cookhouse restaurant, where a scrumptious seasonal menu is prepared and cooked to perfection and is sure to satisfy even the most avid carnivore. Russell, fresh food manager at Suffolk Food Hall, states, ‘whilst we produce some of our
own meat (beef, cattle and game) our ability to offer the quality we aspire to is dependent on our local producers. To maintain those standards, it is essential to nurture those relationships and set expectations so the producer knows what we are after, but also to be respectful of the producer and know what they expect from us. The constant communication is key to consistency; much as we like to hear from our customers if something is good or bad, as a customer of the producer it is no different for us – this honesty will only help going forwards. Ultimately, our counters and products are only as good as our relationships with our local producers allow.’ Dingley Dell, one of Suffolk’s most prolific meat producers, supplies to retail and catering butchers across Suffolk and the rest of England. Established in 1998 by brothers Mark and Paul Hayward on their farm in the Deben Valley, the company’s aim was to produce ‘superb tasting, welfare friendly port with impeccable provenance in an atmosphere that is calm and nurturing for pigs.’ ‘We firmly believe that breed type and rearing methods have a huge impact on taste and quality. Over the last three years we have involved meat scientists in every aspect of what
we do from farm through to abattoir, processing and chill chain,’ says Mark Hayward. Dingley Dell regularly call in a trained panel to taste its pork products under scientific protocols. Founded in 2009 by Jon Reeves and Rick Sanderson, Riverside Beef produces premium beef for discerning customers, focusing heavily on maintaining a healthy and natural environment for their cattle. Meat from Riverside Beef is matured on the bone for a minimum of 14 days to ensure high levels of flavour and natural tenderisation before being introduced to the consumer. Distributing throughout the East of England to butchers, farm shops and restaurants, as well as individual customers, the company takes into account food miles, freshness and flavour when providing their clientele with a quality product.

orking mostly alone, Pleurat Shabani harvests and distills the grains for Konik’s Tail; the process takes a whopping 10 weeks from harvest to shelf, culminating in a very carefully crafted product that outshines any mass produced spirit. He has no fleet of clones tapping away somewhere in an office and he doesn’t do social media. Konik’s Tail is so artisanal and non-commercial, that you’d almost wonder whether it’s all a very clever and complex advertising ruse, and that Pleurat is the frontman in charge of hundreds of marketing experts; but it isn’t, and he’s not. This is vodka how it should be. Jennifer Meredith catches up with the incredibly busy man behind the vodka bottle to talk about what makes Konik’s Tail the talk of the town.

WHAT WORKS BEST FOR YOU: TEAMWORK OR ROWING THE BOAT ALONE? I am not part of any corporation nor supported by a bank. I tried to work harder than anyone else, running around trying to get noticed. People reacted to that. As I move further into the unknown and write a new page in Konik’s Tail history, one thing that is very clear in my mind is my desire to preserve my brand’s story, identity and its artisanal heritage. I will have to seek help in the form of a mini-me or two, but I will never allow anybody to go out and do something which is commercial and which will impact the reputation of Konik’s Tail and myself. Instead they will be tasked to share my passion, determination, quality and my madness, as well as the commitment I have

to my customers. Hopefully bartenders and consumers will react to that and continue with their amazing support and will keep my motto of ‘the road not taken’ very much alive. I always say that two heads are better than one: one person’s knowledge and abilities are limited. It could be hard for us to deal with difficult problems without others’ help. Every individual is different and has unique qualities. Individuals with different experiences and backgrounds increase the creativity of team members and the group as a whole. When members apply different skills they are often able to come up with a more effective solution than one person working on the same problem. Also, the wrong people in your team might be slowing you down.

It has been a 20 year journey to create an iconic and small artisan craft brand. I dreamt once that I wanted to create something beautiful and very special, something different. Dreams are now being

KONIK’S TAIL Classic Dry Martini Serves 1 • 50ml Konik’s Tail Vodka (adjust ratio depending on how thirsty you are)

Place the martini glass in the freezer and chill for at least a couple of hours. Half fill a mixing glass with ice and add Konik’s Tail vodka. Stir for 30 seconds, touching the glass as little as possible to keep

HOME CURED BEETROOT SALMON
WITH BLOODY MARY SORBET

Serves 8-10 BEETROOT SALMON • 1 side of salmon (approx 1½ kilo) • 4 large beetroots • 200g of Maldon sea salt • 150g of caster sugar

Blanch beetroot until tender, transfer to ice cold water to refresh and peel. Lay salmon skin side down onto cling film. Combine sugar and salt together in a dish. Coat the salmon with the sugar and salt mix evenly making sure all the salmon is covered. Thinly slice the cold beetroot and lay over the salmon. Tightly wrap the salmon making sure it is completely covered and leave in the fridge for 48-60 hours. Once ready remove the cling film, the layer of beetroot and sugar/ salt mix.
Your salmon is now ready to use, thinly slice from tail end. To add more flavour to your salmon you can drizzle vodka over the salmon once you have placed the beetroot on the salmon.
BLOODY MARY SORBET • 75g caster sugar • 75ml water • 600ml tomato juice • 3tbsp vodka • dash of Tabasco sauce

Dissolve sugar in a pan with the water until bubbling and then simmer until you have a syrupy consistency. Leave to cool. When cool put the syrup in a jug with the tomato juice, vodka and Tabasco and mix. Ideally pour into ice cream maker until frozen. Alternatively, pour into a freezer proof container and place in freezer removing frequently to whisk until frozen.

TWO BONE LAMB CHOP WITH PANCETTA, THYME
ROSTI, SPRING GREENS AND REDCURRANT JUS Serves 1 • • • • • • • • •
2 bone lamb rack chop spring greens 3 or 4 large potatoes 4 sprigs fresh thyme 3 slices pancetta 1 pint lamb stock 2 teaspoons redcurrant jelly 150ml of red wine olive oil

First, wash your potatoes and grate into a dish. Fry the pancetta until it turns a golden colour. Once this is done add two slices of pancetta and thyme and mix with potato. Season to taste. Heat a small non-stick frying pan with a small amount of olive oil. When hot add the potato rosti mix making sure to press it down tightly. Fry for 3-4 mins each side. Remove and set aside for later. Next heat the redcurrant jelly, lamb stock and red wine together and heat slowly. Place a small amount of olive oil and butter in a pan and when hot place the lamb chop in and seal each side. You will then need to transfer the chops to an oven proof dish and cook for 10-12 minutes on 225ºc. Place the rosti in oven until your lamb chop is cooked, 8-10 minutes, depending on how you prefer your lamb. Cook your spring greens while your redcurrant jus is reducing. Arrange potato rosti and greens on the plate, place the lamb chops on top and serve with the redcurrant jus and the final pancetta slice.

FRUIT CURD MILLE FEUILLE Serves 8-10 • • • • • •
fresh mangoes passion fruit curd puff pastry whipping cream icing sugar passion fruit coulis (available to purchase at The Case Deli)
PASSION FRUIT COULIS • 5 passion fruits • 1 cup caster sugar

Scoop out the fruit flesh of five passion fruits into a saucepan. Mix with a cup of caster sugar and boil for approx. five to eight minutes. Allow to cool.
MILLE FEUILLE Start by rolling your pastry out to approx 12x4in. Cook pastry between two baking sheets to prevent rising until golden brown. Place on a cooling rack when cooked. When cool spread one piece of pastry with passion fruit curd. Lay your fresh sliced mango on top and place a second layer of the pastry on top. Spread with whipped cream and place another layer of the pastry on top. Sprinkle the top of the pastry with icing sugar, heat a metal skewer and place on top of the icing sugar until it leaves a mark (this is for decorative effect). For presentation decorate with passion fruit coulis around the edge of the plate.

fter thinking winter would never arrive, and that we were going to skip a season, it was something of a relief to wake up to a hoar frost. Late into December daisies were still smiling up at an unnervingly warm sun, daffodils were in bloom and at Suffolk Wildlife Trust we were receiving reports of hedgehogs still arriving for a nightly meal, confused out of hibernation by double-figured overnight temperatures.
However, despite the snappy winter, the landscape still seems to sigh in collective relief when spring arrives. What better way to welcome the return of the green season than soaking up its sights and sounds at a Suffolk Wildlife Trust nature reserve. Every one of the Trust’s reserves comes alive in spring – but arguably its effects can be seen and heard most wondrously in woodland. Stroll along a ride at Bradfield

At Lackford Lakes, near Bury St Edmunds, there is always something to see. Visit early in March as the geese gather before returning north to breed, or join a nightingale walk in April. You’re much more likely to hear this inconspicuous little bird than see one, all the better that they sound so sweet. For those that want a little more action with their wildlife, join a conservation work party or brush up your wildlife knowledge on a conservation course. This selection of forthcoming events, activities and courses should help put a spring in your step: on

Saturday 26th March we’ll be holding a bird identification and song guided walk at Lackford Lakes. Beginning at 11am, the walk will be led by local bird expert Paul Holness. Join us to celebrate the Sounds of Spring – also at Lackford – with spring themed activities taking place all weekend from 2nd May. By this time, the birds that live at Lackford all year round will be joined by other songsters from Africa. Guides will be on hand to help visitors identify what they can hear and young visitors can pick up a ‘sounds of spring’ spotter sheet. The Easter holidays are full of family springtime fun. Re-wild your child at Foxburrow Farm near Woodbridge, where we’ll be exploring meadows and hunting for minibeasts on 7th April. We are well and truly in the glorious depths of spring when the swifts return in May. Come along to find out more about our work to halt their worrying decline in Suffolk at the Save our Swifts illustrated talk on 26th April at

Finally, if all of this has whetted your appetite and you want to know more, come along to one of our conservation courses for adults such as Spring Birdsong for Beginners, held at Bradfield Woods near Stowmarket, on Sunday 1st May. Led by local ornithologist Edward Jackson, and with the beautiful ancient woodland as your classroom, a variety of techniques and technologies will be used to improve your skill in bird identification by sight and sound. Based in Debenham, Suffolk, is a travel company with a difference. Here’s what they had to say about Turkmenistan. ‘I stared out the window as vast landscapes of desert and steppe rolled by. The Dragoman truck bounced along a potholed highway in Turkmenistan, the curious nation shrouded in intrigue and mystery. I was travelling the most important trade route that has ever existed. In Uzbekistan, Samarkand still stood elegantly as the capital of Tamerlane’s empire, and Bukhara held onto its roots as the medieval centre of Islamic culture. Kyrgyzstan’s splendours were nuzzled between 7000m high peaks, with glaciers and forests fringing the edge of millennia-old petroglyphs. Kashgar in China held an eclectic mix of Uyghur and Han civilisations, and further beyond was the beginning of it all – Xi’an, home to the iconic Terracotta Warriors. Throughout the journey our group had spent evenings with nomadic families and discovered cultures that had remained unchanged for centuries. We studied ancient crafts handed down to artisans from generation to generation and explored the greatest cities ever constructed. Ahead was Iran and Turkey, the last collection of marvels to complete the adventure. fter a drab and dreary winter in the UK, it was a relief to soak up some vitamin D; the sun was shining in Nice and, although a jacket was recommended, the climate was far more tolerable than the fourbelow-freezing temperatures gripping Suffolk and Essex. The view from the monumental Château de Crémat was exquisite: the vineyard overlooked the rolling countryside below, which gave way to a distant sunset over the Mediterranean. Without sounding twee, I was just a little bit emotional; but my sentiments
were cut short when former F1 racing driver Stefano Modena called us over to discuss the activity which was to become one of the most intense and stressful (yet at the same time exhilarating and educational) experiences of my life so far. Earlier in the day, we were introduced to tyre manufacturer Bridgestone’s newest innovation, DriveGuard, which promised to keep you going for up to 50 miles at 50mph after a puncture. As many of us know, there is never a convenient time for a puncture, so owning
a car equipped with this kind of technology provides not only peace of mind from a safety perspective, but also in terms of saving money and timekeeping. The technology is simple to understand: flat tyres generate heat, which deforms the rubber and in turn damages the rims; however, Bridgestone have created a cooling fin in the sidewall of the tyre, which channels the heat towards the rim, thus preserving the rubber and allowing you to proceed to a garage of your choice within a 50 mile radius. However, the proof is in the pudding, and the only way that I could ensure that I felt safe using these tyres was to test them for myself. This was where Stefano handed me the keys to a car with a punctured DriveGuard tyre, and nothing more than a satnav to guide me around the country roads of Nice.

Watching the Bridgestone technicians hammer a nail into the front-left tyre of the Toyota that I would soon be driving, it dawned on me that I had never experienced European roads from behind the steering wheel. ‘Surely,’ I reassured myself, ‘this would be just like driving on British roads, but in reverse’. Of course, this is easier said than done – and with a flat tyre to make things worse, this was sure to be a bumpy ride. Sitting in the driver’s seat, I was already off to a bad start. I stalled the engine before I had even left the chateau. Luckily, Stefano came over to restart the engine and encourage me not to panic, and soon I was on my way. I took a right turn out of the chateau’s driveway and through the imposing black no vibration, and no pull – it was as if I were driving with four healthy tyres. Having found my way back to the chateau (following a brief, and rather terrifying, satnav malfunction and an incident at a roundabout that we shall never speak of), I cornered one of the Bridgestone representatives and interrogated him with all my burning questions. How much do they cost? Just 10% more than standard tyres. On which cars can they be fitted? Any car with a TPMS (tyre pressure monitoring system). What if I don’t have a TPMS? You can get one fitted for less than £200. When will they be available on the mass market? April 2016. Satisfied, I moved onto the next activity of the day which was, of course, changing a standard tyre – another first for me. After getting stuck in, the convenience of the DriveGuard tyre became even more evident; I would much rather drive safely on to a garage than get stuck at the side of a busy road in the dark (and, knowing English weather, rain) getting my hands dirty. As a young woman driving alone, safety is of utmost importance.

he larder is no longer a dirty little secret people want to hide. With more and more food lovers embracing traditional cooking, there has been a renaissance of this practical storage solution. Modern day food aficionados are in love with this classic status symbol. Imagine shelves crammed with preserves, chutneys, macaroons, chocolate and all manner of deliciously tempting goodies. John Lewis claims that half of their customers shopping for new kitchens want a larder included within the design. Is this resurgence due to a love of Downton Abbey? The Great British Bake Off? Kirsty Allsopp? There’s no doubt that larders evoke a feeling of wistful nostalgia and rightly so: the larder was originally used in Medieval times as a place for keeping messy salted foods like meat and fish, the word itself originating from lardier in Medieval France and referring to the preservation of meats in barrels. In the late 19th Century better access to shops meant the larder became more of a

Over time, domestic fridges were invented and larders were removed or transformed into utility rooms to make more space in the home. The latest trend in kitchens is for a walk-in larder or hidden pantry. ‘With the increased popularity of cooking at home and entertaining guests, which has been fuelled by the abundance of cooking programmess, clients like nothing more than to show off their culinary skills and aspire to be the chef in their own homes,’ explains Tony Nicholas, managing director of Nicholas Antony. ‘The practicalities are obvious too, with all clutter and cooking utensils hidden away ensuring that the kitchen remains pristine and organised.’ Richard Davonport, managing director of Davonport explains that with open-plan living becoming increasingly popular, larders provide effective storage which is ideal when you’re trying to create uninterrupted flow between spaces. ‘They are also very versatile; they

Richard goes on to say: ‘part of what has made the larder such a popular kitchen feature is the range of styles available.
We have seen an increase in requests for contemporary larders such as the curved corner pantry from our Linear collection. However, the majority of pantries and larders that we create are variants of the traditional Butler’s Pantry.’ Freestanding units are very popular but it’s not uncommon to find bespoke built-in larders to fit awkward spaces and unused rooms, and an alternative to a built in option is a larder cupboard.

John Sims-Hilditch, founder of Neptune says that although larders can seem greedy in space, they are like a tardis when it comes to storage. ‘Make full use of space with full height cabinets and look for extra storage and multi function benefits.’ In our space valuable day and age, the larder can be the ideal place to store all your food, pans and crockery – even appliances! Jonathan Turner, senior designer at Bryan Turner Kitchen Furniture, explains that larders are ideal for being installed into tricky spaces: ‘a larder or larder cupboard is probably one
of the most effective ways of putting an awkward space to good use. We’ve designed larders that have transformed alcoves, disused cupboards and other, otherwise redundant recesses. A larder cupboard, meanwhile, is a fantastic way to make the most of corner cabinetry or where you might have a tall, narrow space to fill.’ Whether you’re going for a homely rustic feel or a crisp contemporary look, there’s nothing more satisfying than opening the doors and seeing the larder stocked from floor to ceiling with enough food to feed a small army. ‘The key to getting a larder or pantry to stand out,’ explains Jonathan, ‘is to ensure their design and function is as visual as possible. The objective of a larder is to keep everything you need, on a daily basis, to hand and so that
it is easily accessible. So ensure your larder – whatever its size – has a really good variety of shelving and storage. For a walk-in style larder or pantry, upper level shelving that runs around the inside of the space works very well – you can group different provisions and see at a glance exactly what’s there. ‘Lower level storage for bulkier items is important, too. Think about using pull out drawers and baskets – but again, make sure everything is easy to get to. Don’t forget your larder’s doors – the inside of doors can be fitted with deep racking, which is ideal for storing smaller jars, spices, herbs and so on. ‘Traditional larders and pantries often used stone or marble surfaces, which kept perishable items such as bread, butter, eggs and cheese cool – and if you have the space, this is a practical and attractive feature to retain. Great lighting is an absolute must, too – it really helps to have every corner properly illuminated. Lastly, give some thought to your larder’s doors – sliding doors can work very well if space is at a premium, as can shutter or roll-down style doors. For larder cupboards, you might also like to consider fold-back, bi-fold doors, which look very attractive.’

ith more and more people wanting to extend their homes and with the rise in the popularity of blurring the indoor/outdoor living lines, an orangery is a great alternative to a traditional extension or conservatory. Originating from the Renaissance gardens of Italy, orangeries grew in popularity in the UK during the 17th-19th Century and were used to place orange trees in to offer protection from the harsh winters. Orangeries were built southfacing in order to get maximum exposure to sunlight. They also doubled up as a luxurious extension to properties and were somewhat of a status symbol. Today, they offer a great alternative to a traditional conservatory or extension and still promote an air of luxury. An orangery is a lightfilled space of substantial proportion and they are great for adding interest to dead space in the garden, increasing the living area or creating an eco escape. They are particularly favoured for providing the home with extra

entertaining space and as a way of enhancing the indoor/outdoor living concept. Often conservatories and orangeries are thought of as being the same but Liam, from GS Installations explains that there are considerable differences: ‘conservatories use minimal brickwork and are more about viewing the garden from a room that feels like a part the house, whereas orangeries have more brickwork and are larger – considered by some as private spaces with an emphasis on luxury.’ Other than the great extra living space, Liam highlights that orangeries have several advantages over conservatories: it’s easier to control the temperature – especially if you face south, which during the summer can make a conservatory a little too warm; the solid wall construction allows for cavity insulation, increasing the all year round comfort, whilst still providing plenty of light from the ‘open’ glass ceiling. There are so many designs and bespoke options available with orangeries that it’s possible to create
one to suit any style of home. Orangeries are also more economic than conservatories and can add value to your property. Although it’s uncommon for orangeries to require planning permission, this is something that GS Installations investigates before every project. Amazing Spaces
91 laser-cut steel panels make up the façade of this stunning building in the breath-taking landscape of Davos in the Swiss Alps. Layered with a golden metallic coating, the panels shimmer in the sunlight, fooling distant onlookers into believing that a golden egg has nestled into the surrounding conifers amongst the shelter of the snowcapped mountains. This is the InterContinental Davos, sitting at an incredible 1,600m above sea level with almost continuous snowfall throughout the year. Having opened in December 2013, the structure took almost three years to complete – though many believed that it was an impossible project due to its sheer complexity and the comparatively low budget set. The structure itself is inspired by the shape and texture of a pinecone found in the surrounding forest. Each of the 3mm thick individual panels that make up the surface of the building is unique, but each also features an identical, square rib construction for the purpose of economical manufacturing and reinforcement; these panels were manufactured in Plzeň, Czech Republic, before being transported over 350 miles to the development in Davos, each panel encased in its own protective container. The pattern begins several storeys above ground level, with V-shaped posts supporting the shell and a cage-like dome as a roof.
Munich-based Oikios Architects, a firm responsible for major projects including the Hilton Garden Inn and Villa Stefan, both located in Davos, conceived the design of the build; Stuttgard studio Designtoproduction bridged the gap between idea and production, digitally modelling the striking pattern and bringing it to life; Wilhelm + Partner contributed vital structural engineering services; and façade specialists Seele made the crucial decision of creating the panels using steel rather than the originally envisaged aluminium. In doing this, Seele reduced the cost of materials and made the building less susceptible to fluctuations in temperature; however, the primary advantage of switching materials was the ability to create the pattern with the precision specified in the design brief. Inside the building is a five star hotel, complete with 216 spacious and luxuriously decorated rooms, some boasting pictureperfect mountain and valley views. Visitors and guests can choose from three restaurants, each with its own distinct style: ‘Al Pino’ exudes the homely and dynamic atmosphere of an authentic Italian restaurant, ‘Capricorn’ takes the traditional Alpine cuisine and reinvents it with a modern twist, and ‘Studio Grigio’, on the 10th floor, oozes contemporary design meshed with an international menu. ‘A small part of the house goes back to the Domesday book. It was one of Sir Walter Raleigh’s hunting lodges apparently,’ explains John. Reducing the Tax Burden Faye Howard, private client tax director at Scrutton Bland provides some professional advice on current taxation issues Gang warfare ruled the streets of Chicago in the 1920s, and perhaps the most famous gangster of that time was Al ‘Scarface’ Capone. On 14th February 1929, four gangsters believed to be working for Capone, killed seven members of rival gangster George ‘Bugs’ Moran’s North Side Gang in an attack which became known as the St Valentine’s Day Massacre. So what has any of this got to do with tax? Well although the St Valentine’s Day Massacre was attributed to Capone, his involvement was never proven and he was left to continue to build his empire until being convicted of tax evasion in 1931. Coming back to the present day, tax evasion is still very much a ‘hot topic’, and whilst tax evasion is illegal and certainly not something to be considered, the line between tax evasion and tax avoidance seems to be becoming increasingly blurred. There is however a very important distinction between the two.
ith springtime fast approaching, it seemed only appropriate to write an article related to St Valentine’s Day, which is probably quite an unusual subject for someone working in tax to write about. For most, when mention of February 14th is made, images of love hearts, flowers and confectionary spring to mind, however call me unromantic (I am an accountant after all), but I can’t help but associate the 14th February with certain events of 1929.
On announcing independent taxation in the 1988 Finance Act, Norman Lamont said: ‘independent taxation is bound to mean some couples will transfer assets between them with the result that their total tax bill will be reduced. This is an inevitable and acceptable consequence of taxing husbands and wives separately. We expect income splitting.’
April 2016 brings with it changes to the way in which dividends are taxed, and from April 2017, we face major changes to the way in which tax relief is given on mortgage interest for buy to let landlords. utting a number on how much money someone needs to live on in retirement is difficult. Defining how much income in retirement “is enough” is tough, because it will change over time depending on earning capacity, health, wealth and personal circumstances. Establishing a minimum figure has to be the starting point for people weighing up their retirement options. For many it is a question of how to supplement pensions with other savings and assets and income streams when considering the move into retirement.

When deriving income from a variety of sources that may have different tax treatments, it is important to be sure that these are all considered. Retirement can feel complicated nowadays for many and with greater choice and flexibility comes complexity and the need to be able to make an informed decision is now arguably more important than ever. Increasingly it is likely retirement will be seen as a series of decisions rather than a ‘once and done’ transaction.
