Welcome to the 2021

Wow, what a year/18 months it’s been. We are so thankful that we have managed to host the event for you this weekend. It’s been a very turbulent time for us during the pandemic and we’ve just about managed to stay afloat so we are very grateful that you have decided to come today. We’ve all had our own personal challenges to overcome and we very much hope you are all fighting fit and healthy as that’s the priority. Housekeeping - please adhere to social distancing as much as you can even though we are all outside. Please use the sanitisers available and please be conscious that some people may be quite nervous still when out and about, so let’s respect each other. Enough of the C word! We’re here to try and forget about all that for the time being. Once again, we will aim to entertain you throughout the day with fun filled entertainments and exposure to some of the UK’s finest food options. We try and design the event so that each member of the family has something to look forward to. The ethos behind the Festival is to create an event which is both affordable and entertaining so we hope you enjoy your stay. If Cheese is your thing, make sure that you sample plenty of the different cheeses on offer. If it’s chilli, take notice of the heat ranges as we have some of the

hottest chilli’s on the planet at the event. Special mentions to the vouchers within the programme. These vouchers will help you negate the cost of entry when you make purchases. Due to Covid, we are unable to offer the Taste Tent. We aren’t able to effectively manage the space and so we felt it right to give it a rest for 12 months but it’ll be back! If you’re up for a challenge, you can have a go at the V’s Chilli Challenge which is happening by the Cooking Theatre at lunchtime or the Chilli Eating Competition which happens around 3.45pm at the music stage. If you want to get involved please speak to a member of the team at the Information Point. Activities for the children (old and young) include; Crazy Golf, Punch & Judy, Karaoke, Circus skills (and shows), Story Telling, Giant Bubble Parties, Fun Fair, Treasure Hunt etc. If you’re interested in the cooking side of things, our resident chef Chilli Olly will be able to wow you with his knowledge of all things Cheese and Chilli in the Cooking

Theatre. Chilli Olly is a bit of a celebrity in the Chilli world as are many of our Chilli traders, so don’t be afraid to ask questions as all the answers are on site somewhere. The Cooking Theatre is a fun and interactive space and will showcase some of the products on site whether it be cooking, tasting, sampling, etc. The event is all about having some fun and sampling different tastes so enjoy and please receive the event with the goodwill it was offered.

Chilli eatinG compeTiTion

Are you up for the challenge? The chilli eating competition takes place at the end of each day and is not for the faint hearted. Contestants battle it out to see who can take the heat of some of the world's spiciest chillies.

Starting with chillies at the lower end of the scoville scale the rounds rapidly jump up in heat as they progress to find out the ultimate chilli eating champion. If you are interested in taking part in the challenge, entries are now being taken. Spaces are limited so make sure you get your name down early.

Extreme Heat

Thinking of performing an Extreme Heat Challenge? Come and meet Chilli Sid in the Cooking Theatre. Chilli Sid is famous for completing a number of Extreme Heat Challenges. The Extreme Heat Challenge sessions are designed to give you an insight into the world of extreme chilli challenges. Extreme heat challenges are becoming more popular and if you are interested in having a go one day, you need to understand the dangers involved.

Cooking Theatre

A number of cooking demonstrations and talks by professionals from the cheese and chilli industries will be taking place throughout the weekend. Join the famous Chilli Olly and guest speakers including Chilli Pepper Perrett, Komathys Kitchen and Chilli Sid in the cooking theatre. See the schedule on pages 7 & 8 for further details. The Cooking Theatre will also host the popular Hot Food Challenge, Ready Steady Cook interactive cooking session and much more.

RECIPE

Four Cheese Truffle Mac & Cheese Ingredients:

500g elbow macaroni 2 tablespoons of olive oil 50g breadcrumbs

For the béchamel sauce:

50g unsalted butter 50g plain flour 500ml milk 150g Godminster Vintage Organic Cheddar, grated 150g Godminster Black Truffle Vintage Organic Cheddar 75g Parmesan, grated 75g Gruyère, grated Salt and pepper to season

Method:

Bring a large pan of water to boil and add a splash of olive oil and a teaspoon of salt 2. Cook the macaroni for 7 minutes or until al dente 3. Preheat your grill to a medium heat 4. For the béchamel sauce: melt the butter in a saucepan, adding flour and stirring continuously for 1 minute 5. Pour the milk (whisking whilst you do so) and continue to whisk for 3 minutes or until the sauce begins to thicken 6. Remove from heat and add all cheeses, taking care to mix well. 7. Season to taste 8. Pour the macaroni into a mixing bowl and stir in your béchamel sauce 9. Transfer your mixture to a baking dish, taking care to spread evenly 10. Top with breadcrumbs and sprinkling of black pepper 11. Grill for 5-10 minutes or until golden brown
