The blossom is out, every where wild flowers are covering the sides of the roads in yellows, pinks, purples and whites. So quick to arrive and so quick to leave - replaced by muted browns of summer. We may still be in the grips of a credit crunch and there may still be cold winds bringing snow in the more northern reaches of Europe but holiday makers are still booking their holidays with us. It won’t be long until the challenge of finding a parking place will be with us again and the towns and beaches will be filled to capacity. Spring has to be my favourite time of year, wherever I have lived in the world. Its a more quieter and somehow gentler time of year. .. so lets welcome back the warm weather. Also please welcome our new advertisers and please let them know that you saw their advert in the Sunshine Magazine.

Autonomous Communities of Spain

We continue our series with a look at Madrid Spain is divided in 17 parts called autonomous communities. Spain has fifty smaller parts called provinces.

Madrid

La Comunidad de Madrid is a triangle situated in the center of the Iberian Peninsula bordering Castile-La Mancha and Castile and Leon. The uniprovincial region contains the capital of Spain and was created after the arrival of democracy, separating it from the two Castile regions that surround it. Geographically, the mountainous central range occupies the west strip of the region, the rest of the community is plain lands crossed by several rivers including the Lozoya, the Guadalix and the Henares. All the region´s territory is located on an enormous plateau that occupies the entire peninsular center and therefore it has a climate with hot summers and cold winters. The newest of the great Spanish cities, it lacks the traditions of the ancient Castilian and Andalusian towns. However since its inauguration Madrid has played a heroic role. In the Spanish civil war, it resisted 29 months

of siege suffering several bombardments and air attacks and it is this spirit that contributes to the atmosphere found in Madrid today. The life in this one-province region revolves around the city of Madrid. Madrid is synonymous with art galleries, bullfights, bar culture and alfresco dining. Visitors can choose from a range of activities; watching Real Madrid in their famous Santiago Bernabeu stadium, see live flamenco dancing, experience a bullfight, visit one of the capital’s stunning monuments or simply take a stroll in one of its beautiful parks. It has more than 50,000 hotel rooms, which is the reason why its tourist industry is booming. It is an important business city as well, the majority of the State Public Administration buildings are located in Madrid, and it is the habitual residence of Spain´s royal family.

Places of Interest

The most famous museums in Madrid are the Museo del Prado on the city’s ‘Museum Mile’; it houses important works by Spanish and European masters from the Renaissance onwards and is one of the world’s greatest art galleries, the Museo Thyssen-Bornemiza houses one of the most extensive private collections in the world and The Museo Nacional Centro de Arte Reina Sofia is devoted to 20th century Spanish art, with

The Royal Palace works by Miro, Dali and Picasso. Collectively they form what is commonly referred to as the ‘ Golden Triangle’. The Royal palace of Madrid - An enormous construction, dominating the skyline over the western part of city. Inside are some 2800 rooms but fortunately the tours only include around 50. The most outstanding rooms are Alabarderos Hall, Columnas (Columns) Hall, Espejos (Mirrors) Hall and the King Charles III of Spain’s Room. There are even Velazquez, Goya, Rubens, El Greco and Caravaggio paintings decorating this immense establishment Huertas & Santa Ana - Today it is known as the theatre district but this used to be the stamping ground of Madrid’s Golden Age literary set. The author of Don Quixote, Miguel de Cervantes, lived around here and he was buried in the convent of the Trinitarias Descalzas, which is not too far away. So this capital deserves a visit for cultural reasons, but Madrid is also one exceptionally entertaining capital, with an exuberant night life. The pubs, bars and discotheques are open until early in the morning. Madrilenian nightlife is well-known world-wide. Santa Barbara, the Plaza de Bilbao, Alonso Martinez, Argüelles, Moncloa

and Malasaña are some of the zones to enjoy the Madrilenian ‘movida’. Another option is to visit El Rastro on a Sunday morning. El Rastro is a very colorful open market outside, on the streets, where antiques and second hand merchandise are sold. Familiar leisure theme parks like Warner Bros Park are located in the Metro Area. One of the top tourist attractions in the region is the magnificent El Escorial Monastery of San Lorenzo, 50 kilometres north west of the capital. It was built in the mid-16 th century on the orders of King Felipe II who wanted a monastic base from which to rule his Spanish empire. The empire’s greatest theologians, philosophers, architects and astrologers were called upon to advise on both the location and design of the palatial monastery in the Guadarrama mountains more than 1,000 metres above sea level. The king’s royal status and deep rooted religious beliefs led to an extraordinary blend of grandeur and austerity in this mighty granite building which was declared a World Heritage site by UNESCO in 1984.

Spoilt For Choice Nine kilometres north of El Escorial you’ll find Spain’s most dramatic tribute to those who died in the Spanish Civil War (1936-39). The Santa Cruz del Valle de los Caidos (the Holy Cross of the Valley of the Fallen Ones) is reputed to be the largest cross in the world. It towers above the tomb of 40,000 people who died in the war, including the nationalist dictator Francisco Franco. The site includes a Benedictine monastery and a huge cave church excavated from the mountain beneath the granite cross. The beautiful Guadarrama mountains are a magnet for hikers, nature lovers and bird watchers. Madrileños make a beeline for these mountains

because the bullfighters wear clothes in early XIXth century style, like they are seen in a lot of Goya paintings. May 15th dates the celebration of a local patron saint, San Isidro. In Madrid there is an ancient tradition for this saint, to whom the Madrilenos dedicate dances, ‘romerias’ and the best bullfighting in the world. It is a tradition to buy sweets on this day, like rolled wafers and local doughnuts. Another celebration is the one that lasts from the 6th to 15th of August: “Verbena de la paloma”, a famous ‘zarzuela’ play. It is a celebration of with a very local tradition that presents one of the most typical figures

in the summer, to escape the blistering heat of the capital, and weekend skiers head for the small ski resorts of Valdesqui, Cotos and Navecerrada during the winter months.

Fiestas

Different local and regional celebrations sprinkle Madrid throughout the year. May 2nd marks the official celebration of the Region. On that date, the resistance of the Spanish capital to the arrival of the French Napoleonic armies is commemorated. During these days an important bullfighting fair, named “goyesca”, takes place. It has this name

of Madrilenian folklore: chulapa. The men get dressed in gray trousers, vest and a local cap and the women shine with their steering wheel dresses, with a shawl over their head.

Food

Madrilenian gastronomy has gathered influences from all the immigrants from other Spanish zones that have arrived in this region. The dishes more commonly accepted as proper local Madrilenian are Spanish stew, a chick-peas mix, as well as Madrilenian Calluses. Madrid also stands out because of its quality of fish, because the best fish products arrive daily on its markets from all the Spanish coasts So this capital deserves a visit for cultural reasons and for shopping in Gran Via and Paseo de la Castellana - This where modern Madrid is located. Along Gran Via, is a nerve centre of shops, leisure establishments, and hotels and Paseo de La Castellana, is a magnificent avenue that crosses the city from north to south, houses more modern and avant-garde buildings. But Madrid is also one exceptionally entertaining capital, with an exuberant night life. The pubs, bars and discotheques are open until early in the morning. Visitors can be tempted by the finest Spanish and international cuisine or be enchanted by its bars and taverns and these are just some of Madrid’s leisure alternatives As you get to grips with this urban Mecca you soon realize that it’s the inhabitants - the madrilenos - are the capital’s key attraction. To truly appreciate what Madrid has to offer you must experience it, most visitors leave surprised and few leave disappointed. •

Edible Flowers

Flowers have been eaten for thousands of years. They have been used for many years in Chinese, Middle Eastern, and Indian cuisines and are known to have been cooked by the ancient Romans. In Europe early writings have included the account of a medieval feast where venison was cooked with marigolds and salads made with violets.

Borage and Burnet - Cucumber taste. Suitable for cold soups, sorbets and drinks such as punch, gin & tonic, iced teas. Calendula

- Also known as Marigolds. Flavour similar to saffron but more pungent and sometimes bitter or peppery. Suitable for many dishes including meats, poultry, eggs, pasta, rice and salads. Adds colour to liquids such as milk.

When used with care, they can add a new dimension to recipes both for flavour and aesthetically. However, although many flowers are edible, as some are poisonous, it’s best to stick to the one’s you know are ok and to that end, we have included a chart below listing the safe ones. In general, the flowers of vegetables and herbs are safe to eat.

Harvesting, preparing and storing flowers

Only pick flowers for culinary use which you know haven’t been sprayed with pesticides, fertilizers or other chemicals. It’s best to pick flowers just before you want to use them and when they are just opened, then wash carefully in cold water. Adding a little salt to the water will help get rid of any insects. Once well washed, carefully pat dry on kitchen paper or allow them dry naturally at room temperature. They can then be stored in the refrigerator in a plastic bag until ready to use but preferably not longer than 3 days. In general the petals are the edible part of flowers, not the centre of the flower so you should detach the petals and cut off the white ‘heel’ at their bases as this tends to be bitter. The pistil and stamen should also be removed, especially from larger flowers. Do not pull the petals off until you are ready to use them. Exceptions to this are large flowers which are going to be stuffed and smaller flowers such as violas which can be eaten whole.

Calendula Carnations/Dianthus -

Sweetish spice flavour. Suitable for desserts and salads.

Chrysanthemums - Slightly bitter, peppery flavour.

Suitable for salads and infusions. Blanch petals before use.

Citrus Flowers (orange,

lemon, lime, grapefruit) Use sparingly for a citrus flavour.

Coriander also known as Cilantro.

Similar flavour to the leaves. Suitable for salads, vegetables, pulses, grains.

Cornflower

- Slightly sweet clove-like flavour. Suitable as a garnish.

Gladiolus

- Very bland flavour. Suitable for sweet and savoury stuffings (remove the anthers) and individual petals in salads.

Once naturally dry, edible flowers can also be fully dried or frozen, although the texture will change, so they are best used for infusions or in cooked dishes.

Types of Edible Flowers

Angelica

- Celery/liquorice flavour. Suitable for salads and fish dishes.

Banana Blossoms - Also know as Banana Hearts. Banana blossoms can be cooked or eaten raw and are used in some Asian cuisines.

Bergamot - Milder than the leaves - savoury/fruity flavour. Suitable for salads, rice, pork and pasta dishes.

Hibiscus - Citrus flavour. Suitable for use in salads or as a garnish. Use sparingly.

Precautions • Never use non-edible flowers as a garnish as they may get eaten by accident. • People who suffer from allergies should be on alert for possible allergic reaction. Only eat a very small amount initially. • Use flowers sparingly in your recipes, as too much can lead to digestive problems.

Roses

- The flavours depends on type and colour, but generally fruity. All roses are edible. Suitable for garnishing desserts and salads and excellent in syrups and jellies.

Flowers have a milder flavour than the leaves. Suitable for use in salads, bean and vegetable dishes and as a garnish for pork dishes.

Sunflower

- Bitter-sweet flavour. Use like chrysanthemums. Can also be picked before the flower bud opens and steamed when they are reminiscent of artichokes.

Thyme - Milder

than the leaves. Use as you would the herb and in salads, rice and pasta dishes.
