“Travel brings power and love back into your life.” –RUMI

December is truly one of my favorite months of the year. Maybe it’s because I love holiday lights, hot chocolate, roasting marshmallows, school breaks, presents and, of course, wintertime travel. It’s also one of the busiest times of year, with Christmas shopping, festive parties and baking and cooking for family and friends. Luckily, travel around this time gives us the chance to decompress and rejuvenate while enjoying new experiences and beauty around the world. And, in this issue, we have something for everyone to try. You’ll find the best wintery spots in Colorado to partake in offbeat seasonal sports such as snowkiting, tubing, snow biking and ski-joring (these are just a few of the adventures my three kids and I are putting on our 2014 wish list!). If it’s a warmer getaway you desire, head to one of the friendliest, most peaceful private islands in the world— Peter Island in the BVIs, where you can immerse yourself in the beauty of crystal clear water, white sand on your choice of five beaches and an incredible spa. Or, learn how to live the good life in Cabo San Lucas at One&Only Resort, Palmilla. Not quite as temperate, but closer to home, Rosemary Beach in Northwest Florida

The Kitchen that Sings

MOST MODERN AMERICANS ARE over stimulated, incessantly plugged in, and allegorically out of breath. The edges of work and home life are relentlessly blurred. We’re addicted to the ping of our smart phones, even as we love and despise them at the same time. Social media has created a bizarre stage interlinked with business and the result is a nagging need of constant

performance. We move along like robots, often not pausing to think about the unhealthy situation we are feeding. I admit I am as guilty as anyone else. Deadlines for articles compete with deadlines for cookbooks. Power point presentations compete with fundraisers that compete with testing recipes. I’m writing this very article 30K feet above the earth on a plane bound for Atlanta.

As a chef, food writer and cookbook author, part of my work is also as a traveling culinary instructor. Undoubtedly, my favorite place to teach is La Cocina que Canta, “The Kitchen that Sings” at Rancho la Puerta. Rancho la Puerta is a legendary wellness center and destination spa. Deborah, now over 90, still lectures weekly and is hard at work on her many projects to spread the word about Americans’ need to live a healthier more-active lifestyle that is also supported by a protected, chemically-free environment. Every turn at the ranch there are sights, smells, and sounds that fill the senses, yet the gardens that really fill my soul are the organic vegetable and fruit gardens of La Cucina que Canta. Tres Estrellas, or Three Stars, is a six-acre organic garden that provides much of the produce in the main kitchen and nearly all of the produce used by the cooking school. And, these stars shine mightily. La Cucina que Canta feeds your body, your heart and your mind. Executive chef Denise Roa works closely with the energetic and gregarious head gardener Salvadore with planting and harvesting the fruits and vegetables in the garden. The two of them have developed a very tight system in that two to three weeks

before the chefs arrive she knows what will be ready for harvest. The visiting cooking teachers and chefs can then plan their menus accordingly. Frankly, I know of no other program like it. It’s amazing for the cooking teachers, and most definitely, for the guests. It’s incredibly enlightening to be in an organic garden and see real food, to learn how to cook real food and to push your body through physical exercise. The fruit and vegetables at Rancho la Puerta are certainly alive. The gentle, persistent hum of the bees in the herbs is the soundtrack of the garden. The garlic is sticky and fiercely hot; the carrots are crisp and sweet like candy. One row goes to seed as the adjacent row has fledgling seedlings pushing through the soil. It’s vibrant and moving and pulsing with life. The food is as real and nourishing as it can possibly be. It’s powerful. It’s strong. The entire experience makes you think. The philosophy of Rancho la Puerta is “siempre mejor,” which means “always better.” It refers to a life strengthened by good health and life-long learning, which unleashes the willingness to change—for the better.

When cutting ingredients, keep your eyes on the knife, not on the cutting board. The layers of paper on an onion indicate its age; the more paper, the older the onion. Remove all of the green part of a garlic clove—it is tough and bitter, and means the garlic is old. To roast a red pepper, hold it over an open flame with tongs, then place in a bowl and cover so it steams while it cools. The skin will slip off easily.

Often called a private Eden, the views—regardless of where you are on the island—are breathtaking. Think hammocks outside every room and along the beach. Romance is king here, with the peacefulness of the surroundings taking precedence over distractions like TVs in rooms. Ask and you shall receive is the motto on Peter Island, and the staff and service are both impeccable (they know you by

name). Prefer total solitude? Simply leave the provided shell hanging outside your door, and you shall not be disturbed. The only phone call you’ll receive here is the one making sure everything is up to par and asking if there’s anything the staff can do to make your stay better. This idyllic hideaway has been here for 30 years, yet it remains untouched and immaculate in every way.
