Characteristics

White Varieties WHITE CRETAN VARIETIES

Vidiano - One of the most characteristic Cretan varieties which deservedly

claims a place in the pantheon of world wines. It is distinguished by perfumes white fleshy fruit with emphasis on apricot and with a richly complex, creamy taste. Due to the complexity and the possibility of experimentation and aging in oak barrels, many compare it to the top French variety, Viognier.

Vilana – classic Cretan variety that emerged through modern vinification meth-

ods. Appropriate cultivation of the variety gives excellent wines with strong acidity, delicate aroma and a refreshing lemonade flavour. Typical samples are Protected Designation Wines originating from Peza and Sitia, as well as interesting uses of the variety in blends or single selection bottles.

Thrapsathiri – variety that gives wine with a soft, yellowish- green colour, fruity aromas, mainly melon and peach, and is mildly acidic. Despite its generally mild character, the palate is quite intense and rich.

Malvazia di Candia – a famous variety around the world with its

roots in the area of Malevizi although her Italian “fathers” also claim paternity. With a long wine history and identity, Malvazia di Candia is characterised by strong acidity and dynamic aromatic notes that make it stand out. In Crete, it claims an important position among the intense aromatic dry, as well as the sweet wines.

Muscat of Spinas – legends over the centuries wanted the Muscat of Spinas variety to be the official white wine of the Minoan Palace. Its name comes from the Spina area of Chania.

Plyto - A rare variety that survived in Eastern Crete in particular and can give unique wines. Although Plyto generally “dislikes” the high temperatures, in the microclimate of Crete it gives great results with an intense lemon character full of freshness and flavour. The uniqueness and the special characteristics its features guarantee a variety that can offer top vinifications. .


Characteristics

White Varieties WHITE GREEK VARIETIES

Malagouzia – it is grown almost all over Greece, but mainly in Halkidiki,

Thessaloniki, Sterea and the Peloponnese. Malagouzia gives a strong aromatic wine. Its body is moderate, lightly acidic while in the mouth and gives a strong greasiness. Its aromas are dominated by white flowers, herbs, as well as aromas of white- squeezed fruit and citrus.

Roditis – cultivated from end - to - end of the mainland. It is a variety that

emerged through modern winemaking techniques. Roditis gives wines rich in acidity and mineral notes, with fresh fragrances, crystal clearness and light body.

Assyrtiko – dominant place of origin of the variety is Santorini, where it is

cultivated with the special method of “koulouras”. It is also cultivated all over Greece with very interesting results. It gives wine with intense primary fruit aromas such as peach, mango, melon and banana, with a complex character and intensity in the taste. They rank among the more special and distinct wines of the world vineyard.

Debina - A genuine, Greek variety with place of origin in Zitsa, Ioannina. Its

name is derived from the village “Dabeni”. Cultivated on hills and slopes, it gives unique wines with exquisite scents from apple, pear and peach and with a crisp taste.

Robola - This is a Product of Designation of Origin from Kefalonia. It is cul-

tivated in gravelly soils and mainly in semi - mountainous and mountainous areas. The wine gives aromas of citrus flowers, peach, citrus and apples while being characterized by solid intensity and an aromatic span. The body is light with characteristic acidity.

Savatiano - Although a native variety of Attica, it is cultivated in almost all of Greece. The wine gives distinctive aromas of fruits such as pear and green apple, and often has a strong botanical character. These aromas are properly structured in the mouth, with good balance and aftertaste.

Aidani - The Aidani is a variety of the Aegean and especially of the Cyclades.

It gives wines with a distinctive aroma of white fleshy fruit and flowers. It is moderate in the mouth with mild acidity.

Lagorthi - It is mainly found in northern Peloponnese. Gives wines of moder-

ate intensity, with floral elements in the fragrance. The palate is soft with high acidity and exquisite elegance.

Muscat of Alexandria – it belongs to the Protected Name of Origin

of Lemnos and has a relatively strong acidity and characteristic taste with complex fragrances. It is used for ageing, while the sweet wines give a strong taste of nuts, honey and exotic fruits.

Prekniariko - It takes its name from “preknes”, the freckles that it has on

its skin. It is a native variety of Protected Name of Origin of Naoussa. The wine is characterized by aromas of white fruit which are strengthened in the mouth by a balanced acidity. Its aftertaste is pleasant and sweet.

Goustolidi - We can also find it like Goustoulidi or Vostylidi. Its fragrances have notes of fruits and flowers and its mouth shows excellent and balanced levels of acidity and alcohol.


Characteristics

Red Varieties RED CRETAN VARIETIES

Kotsifali – It is a predominantly Cretan variety with a soft character and intense

aromas of red fruit jam and plums. Usually found in blends, it is increasingly being bottled as a single variety product. One of the most famous blends is considered to be that of Kotsifali – Mandilari varieties with Peza and Archanes giving very compelling results. It has hence come to be characterised as the Merlot of Crete.

Liatiko – The Liatiko took its name from its early maturity (in July). It is one of the

oldest varieties in the Mediterranean with a muted red colour. It is grown both in Heraklion and Lassithi, especially in Sitia, and the variety produces both dry and sweet wines. It generally has an intense nose with rich aromas of red fruits and sweet spices. In the sweet version of the grapes, the variety is “naturally” polished, giving extremely sweet wines without the addition of alcohol. The sweet wines are full bodied but with soft tannins. Its fragrances are intense and dominated by sweet fruits.

Mandilari – It is considered the king of local varieties because of its intensity

and wealth of tannins. The variety gives a rich volume to the body of the wine, but it is difficult to tame its boldness and tannins. This is it, the main reason it is usually blended with Kotsifali. There are on Crete, some experimental attempts for single- variety wines, which would however require long ageing periods.

RED GREEK VARIETIES

Xinomavro – Xinomavro is mainly grown in Naoussa, but is already being cul-

tivated outside of Greece. It is a special variety that gives wines with a characteristic aroma and flavour, which are considered by many, similar to the Nebbiolo or Pinot Noir varieties respectively. It has an intense plant taste and high acidity. In a modern version of winemaking, the fragrances are fruity and the tannins less aggressive, while in its rustic vinification, it gives flavours of tomato, olive and dried fruit with high acidity and intense tannins.

Negoska - The cultivation area is Naoussa. The Negoska variety gives wines of

high quality, with good red colour, moderate acidity and a soft taste. With these characteristics, it diminishes the acidity and tenacity of Xinomavro, increasing the alcoholic strength.

Agiorgitiko - The young wines of Agiorgitiko, which we mainly come across

in the Naoussa area, have moderately deep red colour, intense aromas, fresh red fruit flavours, moderate acidity and soft tannins. The wines they give mature in a barrel and come in a deep colour while their nose reveals the concentrated and complex aromas of red fruit.

Limnio - From Limnio are produced mainly red table wines, with thin, light aroma

of fruits and spices, and a rich, complex bouquet when the wine is aged in a barrel. Its taste is full, with moderate acidity, soft tannins and high alcohol content. Limnio is a red variety of Northeastern Greece, particularly Halkidiki. It is also grown on Sporades, as well as in Lemnos, from where it has its origin and took its name.

Kalavrytino Black – the Kalavrytino Black is an indigenous red grape

variety of the Kalavrita area and the Aegean Sea in general. It is a variety that gives moderate-coloured wines, mild tannins, moderate to full body and aromas reminiscent of red and black fruits, flowers and spices. Wines from this variety seem to be able to evolve over a few years in the bottle. We find it in single - variety wines but also in blends of native and international varieties.

Mouchtaro - It is cultivated almost exclusively in the region of Boeotia, and

more specifically around Thebes. Relatively recent wine samples show how she can offer wines with distinct temperament and refinement, and with quite good ageing potential. Their feature is dense sophisticated aromas of red fruits and spices herbs, as well as their sharp acidity and good quality their tannins.


Characteristics

Red Varieties Lemniona – it is a rare red variety with a deep and dark red colour. It comes from

Thessaly and should not be confused with Limnio to which it is not related. It comes from the valley of Tirnavos, but it is also often and experimentally cultivated in various regions of Greece. The palate is broad, has strong but non aggressive tannins and intense acidity. It offers fragrances of strawberry, cherry and sweet spices when it has not gone through a barrel, and becomes even more enjoyable after a short time in a barrel.

Vlachiko - The Vlachiko variety is Greek red a variety of grapes, giving red dry wines which usually mature in a barrel. It is grown in the vineyards of Zitsa, Ioannina. The main characteristics of Vlachiko are the strong and clear aromas of red fruits of the forest, the bright but not intense ruby colour, the distinctive tannins, the high but good acidity and the velvety taste with long aftertaste. More generally, it is considered a “rare” variety because it is not usually vinified as a one - color wine, and the grapes require constant care, so planting it in Greek vineyards is limited.

Bekari - The second most characteristic and of course remarkable native red

grape variety in Epirus is Bekari. It is a red grape with fine peel, making it suitable for production of light red and rosé wines. Compared to the Vlachiko, it has a more profound colour and higher tannin and alcohol content, and it mainly for this reason that we use them together so as to get a more complex wine in terms of aromas and flavours.

Mavrodafni

- The classic and unmistakable expression of the mavrodafni is the homonymous sweet wine that enjoys, indeed, a controlled designation of origin, on the outskirts of Patras. Aromatic, it moves to levels of nuts (currant, plum, fig), at an early age, and later displays chocolate, coffee, cocoa and noble spice (carnation, anise) notes. There is always one pleasant fruit background at various stages of development (fresh, compote, in alcohol, dry ...). Mavrodafni can also give dry red wines, which, however we will never meet in their neat form since they are mostly used to give some fragrance and structure to blends with Agiorgitiko and Cabernet.

Mavrotragano - Mavrotragano is a variety of Santorini and takes its name

from its black and crisp berries. It is a very rich variety in both colour and aromatic potential. Its scent has longevity. The taste is balanced, full and with a lingering aftertaste. Its red colour is bold and intense. It carries fragrances of blackcurrant, sour cherry and cherry. It is soft on the mouth with round tannins.

Stavroto - The cross (or Ambelakiotiko) is a red variety which is cultivated in the

prefecture of Larissa and sporadically in the prefectures of Kozani and Magnesia as well as in Trikomo (Zalovo) of Grevena. The cross grape is a variety lively, robust and productive. The grapes are of medium size, fringed, conical and very dense. The stripes are medium-sized, with a medium-thickness peel, reddish colouring with juicy flesh, moderate sweetness and slightly acidic aftertaste. The cross variety yields wines of moderate alcoholic strength, mild acidity, medium colour and with enough tannins that are long lasting.

Krassato – A red variety from Thessaly, cultivated mainly in the area of Rapsani. Krasato can yield wines with a deep ruby color and a nose with a strong character, with notes of leather and black sweet fruits. In the mouth the wines are rich, high in extract, with a dense structure, moderate tannins and relatively high alcohol content.


Characteristics

International Varieties Grown In Greece

Greek wines through the vinification of exclusively native varieties already create marked demand on the international markets. In addition however, local producers are experimenting with blending local varieties with international ones being grown in Greece, with a lot positive results. The distinct soil characteristics in the country as well as the art of mixing local varieties with international ones, presents some interesting notions which spark the interest of oenophiles and others. Among the most famous international varieties used in Greece offering excellent wines combined with local varieties are: Cabernet Sauvignon, Syrah, Grenache Rouge, Merlot, Sauvignon Blanc and Chardonnay

INTERNATIONAL WHITE VARIETIES

Chardonnay

With delicate, refined flavour, it is one of the most famous white wines. With high quality but also adaptability, it is distinguished for its delicious richness and fruity complexity. The varieties abound, with some of the finest pure tastes, but also the more rich and complex flavours. Most of the time, expect a mild body of flavours including apple, pear, vanilla or even butter.

Sauvignon Blanc

It is the lightest of white wines. Main characteristic of this variety is the crisp acidity and intense aroma of herbs or citrus fruits. A stylish white wine, distinguished not only by sharp acidity, but also dryness in taste.

INTERNATIONAL RED VARIETIES

Merlot - Gentle and generous, coupled with an extroverted temperament, fruity features and clearly softer tannins. All of these features, along with the wellknown plum flavours, fruit cake and mint, mushrooms and hunting (for ageing wines), make the wines of this variety so appealing.

Cabernet Sauvignon - Famous for its intense flavour and aroma, Cab-

ernet Sauvignon is a plush and rich in flavours and aromas. The flavour of cherries, raisins and aromatic herbs is distinguished. If you leave the wine for a moment to roll on your palate, you will feel the aftertaste of blackberries, black raisins, raspberries and beech (from the oak barrel) coming through. The imprint of its dryness is due to the high tannin content.

Syrah - Syrah wine comes from the specific grape variety, which has a deep dark colour in its flesh. This wine has a colour that is almost opaque; it is intense and full of flavour, with lots of tannins and great acidity, with aromas of chocolate and raspberry.

Pinot Noir - Delicate and delicious in taste, Pinot Noir comes from the

legendary grape variety thriving in French Burgundy. The colour of Pinot Noir varies from intense ruby to light red. It delivers fruity flavors, from sour cherries, cherries and berries. Often it has an aftertaste of more earthy components, such as mushrooms. The trial shows characteristics of a moderate body with mild tannins and acidity.

Refosco - One of the oldest and most typical red varieties of Italy, focusing on the cultivation in the Friuli region. It produces tannic, masculine wines with a deep violet colour, with good acidity and vivid aromas of raisins, berries and plums.


Special

Greek preparations RETSINA Retsina is a wine with a history of at least 4,000 years. It was discovered accidentally in Ancient Greece when a pine resin used to seal amphorae, passed through a mixture of white wine, giving a special taste. The glamour of retsina is great, with many winemakers showing their quality and flavours. For its preparation, mainly white varieties of Roditis or Savatiano, as well as Assyrtiko are used, which are strengthened with natural pine resin. The peculiarity of the taste, as well as the characteristics of mixing wine with resin offer a very interesting result.

OINOMELO

The history of sweet wines has its roots in Ancient Greece, where honey, which was abundant, was mixed with wine to give a delicious and energy-rich drink. The first recorded reference is in texts of antiquity, which attribute its consumption to the philosopher Demokritos. The art of making sweet wine was passed from Greece to the Roman Empire and then to the rest of Europe, where instead of honey, was used brown sugar. Consumption of wine in the Nordic countries with the use of wine, spices and sweeteners is mainly associated with the Christmas season

Bottles Large

Why ΜAGNUM

About two decades ago, wine bottling in bottles larger than 750 ml was measured in Greece. The logic of the large 1.5-liter (magnum) bottles has led to many discussions and skepticism. In the case of wine, however, the size of the bottle also affects the quality. This is because the maturing of the wine within the bottle results from the minimum amount of oxygen entering through the cork. In a larger than 750 ml bottle, the oxygen: wine ratio is shorter, so the maturing process is slower, offering more complexity and lastingness. Due to the greater ageing potential, the producers are bottling their most quality wines in magnum bottles, offering up their greater complexity over longer periods of time. The evolution of a wine in a magnum bottle is impressive, as is the endurance.

PDO & PGI

What do they mean? PDO WINES Wines of Protected Designation of Origin (PDO) are wines from the region whose name they bear. As PDO products these wines have natural characteristics that are relevant to the ecosystem of the region and are produced with a defined production process. The production of Protected Designation of Origin wines is adapted to the soil and climatic conditions of the region, aiming at the creation of high quality wines. In the vineyards from which the grapes come, the yield per grape is reduced, with the aim of increasing the quality characteristics. The production, maturation and ageing of Protected Designation of Origin wines are adapted to the wine-making technique of the region, under conditions that highlight the characteristics of each wine

PGI WINES Protected Geographical Indication (PGI) wines are wines identified by their origin from a specific place, region or country. Specific characteristics, the reputation of the wines in question or other dominant feature may be attributed, as a general rule, to their geographical origin. One of the stages of production of at least the wine must take place within the boundaries of the area referred to as Protected Geographical Indication. Protected Geographical Indication wines comply with certain production conditions, which relate to the vine varieties from which they are produced, the vinification methods for the grapes, the minimum alcoholic strength and the organoleptic characteristics of the wines.
