KNEAD | From the editor
Welcome Well so much has happened since the last issue of our pub magazine it is hard to know where to begin… We have relaunched, rebranded and acquired a hotel all since we last met!! I am sure you are all aware by now but we have recently purchased The Crown Hotel in Stamford and added this to our KNEAD portfolio. Together with this we have designed new logos for each of the pubs, created a new website and called ourselves something entirely different.
Because we have had such a huge amount of change in the last 6 months we thought we should rebrand the magazine to fall in line with KNEAD pubs and so have decided to call ourselves “KNEAD to Know”. Probably a bit easier to say and understand than Dionysus or Dinosaur as many of our staff used to call it!!
We are going to publish 4 issues a year (seasonally) and run a very similar format to our previous editions but with some extra added quirky features such as “Dog of the issue” and “KNEAD a break?”. Combined with Nick’s delicious recipe of the issue and loads of info telling you what to expect from the pubs in the coming few weeks. Not forgetting old favourites like “Meet the neighbour”, Stories from our farm and “Meet the Landlord”. So why not grab a drink, sit down in front of the fire and have a catch up with us here at KNEAD.

Now we’re KNEAD Pubs: what will happen to The Thurlby Group? As our new name has popped up a few times we’ve had a couple of questions about why we’re changing, and if it means our popular and much-loved pubs will be changing too. In short, our regulars needn’t fret because our pubs are going to be staying exactly as they are, but with a new family - KNEAD Pubs - behind them. We’re so excited about the transformation of the Thurlby Group in to KNEAD Pubs, and we hope you will be too. To start at the beginning…
Really we need to go right back to when Michael established the Thurlby Group. From the word ‘go’ the group built it’s foundation on character, unique spaces, locally sourced produce, real ale and fine wine. With Michael’s background in farming, it was inevitable that his passion for delicious, home cooked food was going to play a big part in the new pub group.
But in combination with Michael’s attention to detail unique style, the Thurlby Group quickly became one of a kind. Doing things our way means our pubs reflect us, not interior designers and we’ll never have a bog standard menu in sight.
The group founded itself upon principles of heritage and history, of doing things right, good and wholesome qualities. The group has always been authentic, and that’s just the way we think it should be!
Fast-forwarding to today and the Thurlby Group is simply ready to take the next step in its journey.

Each of the pubs has it’s own story to tell. Whether that’s Smith’s of Bourne which remains at the heart of Bourne having been a
family-run grocer’s in the 19th century, or The Tobie Norris which gets its name from the bell-maker who used to live there in 1617.
However, it became clear that The Tobie Norris, Smith’s of Bourne, The Lord Nelson and The Prince Rupert all had something in common: a welcoming atmosphere, delicious food and real ales – all of which make them stand out from the crowd.
That’s why KNEAD Pubs has now been launched. It’s a way for us to distinguish that these pubs offer a reassuringly familiar experience. If you’re in Rutland, visiting from Newark you can feel safe in the knowledge that The Lord Nelson will offer the same fantastic atmosphere and quality that you’ve come to love at The Prince Rupert.
Not only that but we simply thought it was about time the Thurlby Group got a new look! It’s something we’ve been thinking about for a while – we wanted a brand that really ‘fitted’ with our pubs. A brand that got what we’re all about and told other people about it too.
There isn’t a lot of reasoning behind why we opted for the KNEAD Pubs name. Really, we just liked it! It’s a bit quirky, like our venues, and it has a bit of a tie to our very popular (and yummy) stone baked pizzas. We know that KNEAD Pubs won’t have much resonance at the moment, but as you get to know the brand you’ll see that KNEAD and our venues reflect each other perfectly. KNEAD will come to mean our quintessential character, the signature enamel signs that deck our walls, the real ales that we expertly pick, the local ingredients we put into our dishes…
We’ve put together a new logo for KNEAD Pubs and each of our venues, to mimic the character that makes us so unique. Our website will hopefully do the same too, and this our new KNEAD to Know magazine!
The Crown Hotel, located in the centre of Stamford, has also very recently become Michael’s, so whilst we’re celebrating the launch of KNEAD Pubs, we’re also announcing that the hotel is to be a part of the group too. The Crown is already busy transforming into one of the KNEAD Pubs – with signs decking the walls and quirky details popping up here and there (there’s even a moose’s head!).
What can you expect from KNEAD? One of the biggest bits of our rebrand is a renewed effort to stay in touch with you – our lovely customers – a lot better. You can join KNEAD Pubs on Facebook, Twitter and Instagram now! Plus, we’ll have some brand new emails with the latest KNEAD deals and events, because we really don’t want any one missing out.

Not to mention our transformation of the restaurant at The Crown – it is now a fantastic, informal pub called the ‘Red Cow’ @ The Crown. It looks brilliant and it’s got a lovely atmosphere, with it being open to everyone – not just residents at the hotel.
We’re really excited about what we have planned for the hotel and it’s already becoming a marvellous addition to the family.

Here at KNEAD Pubs we like dogs equally as much as we like Real Ale – which is why all of our sites are dog friendly and we have free dog treats behind the bars. Over Christmas we even had Stamford dog walking societies Christmas get together at The Tobie Norris including all 20 of their dogs!!

Well, hello from The Crown – the newest addition to the KNEAD Pubs brand. We have definitely seen a few changes in the last couple of months and we hope you will all agree for the better. Christmas was brilliant and we all had great fun with our customers, Particularly Staff Christmas Jumper Day and our Crown Christmas Selfie competition – we had some adorable photos posted on our social media sites and it really helped us all get into the spirit of things.
We also held our Warner Edwards Gin Evening on Thursday 22nd January which was brilliant. We had just over 40 people in our Red Cow Restaurant and Sion Edwards paired the gin’s perfectly with our menus. it really was a fabulous night as you can see from the photos.

Book a table with us for Mother’s Day! The perfect way to say ‘Thank You Mum’ The new menu seems to have gone down a storm at Smiths and we are doing more food than ever before. It is really great to see how the pub has evolved and keeps changing. Our chefs Sonny and Jimmy are looking at just making a slight few alterations to the menu including adding a delicious fish pie dish so look out for this and more in the next few weeks.
The pantry is going to be moving back into the kitchen in the coming weeks and in its place we are thinking of putting fridges that will contain a different range of ciders each week. A bit like we have with the Real Ale on the bars. There is so much interest in ciders now and so we wanted to get in on the action by offering our customers the chance to try some of the amazing new products out there… watch this space!!
Mothering Sunday
Ashley is starting to plan a local beer fortnight where all four guest pumps will be devoted to a local brewery and showcasing their range of beers in February.
And lastly, This year we have decided that we will take bookings for Mother’s Day to ensure that everyone who wants to come along can be rest assured of getting a table. The menus look fantastic for both events so why not treat your loved ones and come and celebrate with us, we would love to see you.

Beer Festivals, 6 Nations Rugby and Live Music throughout February at the Norris!
After a fabulous Christmas here at The Tobie Norris we were all fairly worn out by the time January came around. However we managed to dust ourselves off, catch up on some sleep and get prepared for 2015. Normally things start to slow down in January but we have been as busy as ever which is all thanks to our lovely loyal customers.
Will has been planning some great things for the coming months not to mention the East Anglia Beer festival which started Monday 12th January and has been going on for 3 weeks, featuring over 30 beers from the Eastern counties.
Also throughout February all our guest beers will be from local breweries no more than 40 miles away. Including, Digfield, Star, Hopshackle, Oakham, Grainstore, Tydd, Nobbys, Brewsters and Oldershaw.
Will says: “I am constantly looking for new and exciting products to put on the bar but often we overlook the amazing beers we have right here on our doorstep!! I think it is so important to support our local breweries especially when they tend to brew such great beer!!”

Up here at The Rupert we know our customers love three things and if possible all together - great beer, fantastic food and cutting edge music. Well fear not as we have so much in store over the next few months incorporating all three to the max!
We have just taken part in the Beermuda Triangle Festival 22nd-25th Jan for which we supported Nottinghamshire breweries. With Cauld Reekie by Stewart Brewery, a 6.2% Scottish Stout which won Europe's Best Stout in the World Beer Awards in 2014 all up and ready for Burns Night on the 25th.
Burns Night always seems to be a firm favourite up here at The Prince Rupert and we were really pleased to have The Richardson Duo playing acoustics. The atmosphere was brilliant and every one was up and dancing away!!

Fancy a Sunday Roast?
We cant believe we are sailing into the 2015 here at The Nelson but we have lots of things planned for you this year including decor, kitchen, food & drink and events. so where to begin… We are transforming our drawing room facing the garden into a comfy lounge area – toning down the red and introducing lots of comfy chairs and sofas for those cold winter days when you just want to sit back with a friend, a coffee and a snack!
We will also be making some changes to our upstairs rooms just sprucing them up a bit for you so they feel more warm and inviting than ever.
We have a few plans for the kitchen and are trying to look at extending our cook line so we can start to expand on our offering. So many customers have asked us why we don’t offer a Sunday Lunch and thinking about it we realised that we really should. So Nick is busy planning to ensure this happens.
Charlotte Ward and Ian Stokes have been so popular at The Tobie Norris that we thought we would invite them over to The Lord Nelson so our customers don’t miss out on their amazing talent. They will play their first performance on Thursday 19th February from 7.45pm-10pm. Make sure you come on down as they really are great to hear live!!
Also we know how our regulars just can’t get enough of our pizza and wine deal and so we have extended it right until 9pm throughout the whole of February. Make sure you pop in and take advantage.

Nearly every week we are asked, “Where did Mick get that from?� and on a weekly basis you see him walking into the pubs with some new treasure under his arm to place somewhere in one of the pubs. So we thought we would take an item each issue and tell you exactly where we did get it from and what the inspiration, thinking and ideas behind it are. 12

This issue we have picked the famous juke box that now sits proudly in The Crown’s Red Cow restaurant. It has has a varied and mixed opinion since making its debut here but in general everyone has loved it - especially the children…..apologies for the “I’m a barbie girl” on repeat if you happened to be having your Sunday lunch there about 3 weeks ago!!
Today they are one of only a few traditional jukebox manufacturers in the world, however where their competitors have moved towards mass production, plastic adornments and money saving manufacturing processes, they insist on sticking to the very best techniques and components for their hand built Classic Jukebox range.
When we began the refurbishment of The Crown, Michael was adamant he wanted the Juke box reinstated as a main feature to just add a bit of fun to the room for all our guests and customers. However we needed to get it refurbished and brought back to tip top condition and so contacted the supplier Sound Leisure.

Michael first brought the juke box over 15 years ago and it has served us well ever since - it was first installed in The Black Bull and many still remember the play list and fun it created back then. It then moved across to The Periwig and enjoyed the 90’s indie scene with you all. However for the last 6 years it has sat proudly in our lounge but sadly not being played and feeling a little bit sorry for itself.

Farming | On the KNEAD Farm
On the KNEAD
At this time of year it can seem fairly quiet and monotonous on the farm – we are feeding the cows and sheep daily, padding down the hay and generally making sure everything is looking well fed and well maintained. However with not much happening with the livestock it does gives us a chance to concentrate on the farm area itself and that is exactly what we are doing right now. We are having a new cattle pen built so we can get them in more easily and safely, we have had all new fencing laid around many of the fields to ensure the animals are kept safe, dug new drinking holes for them and generally tidied up the place before we head into lambing in march. We have designed a walkway between the shed and the field for the cows so they can graze outside in the day but come inside for shelter and warmth if they feel. This has worked really well as normally we bring the cattle into the shed for the winter months but they are restricted in how far they can move and the little ones do still like to jump around and play all day!! So now they can be outside all day and inside at night.
We have had our first winter calf born 3 days before christmas to our oldest cow on the farm and have decided to call him Henry - he is very lively and as always very cute as you can see from the picture.
This year we will begin lambing on March 1st so soon will have to transform the shed into lambing pens and sheep pens to ensure it runs as smoothly as possible. We have just 200 sheep expected to lamb so we estimate it should all be done in about a month. So our next issue will be full of lots of photos of cute spring lambs jumping around the fields.

The Thorpe Hall Christmas Tree Andy had a great year selling Christmas trees and we brought all of our fresh trees from him for the pubs and they looked great and lasted right up until the 5th January. When we heard the Sue Ryder Thorpe Hall Hospice Appeal was looking for a 12ft tree we were certain Andy would be keen to help.
We wanted to support a cause that we know means an awful lot to our locals. Not only that, the project also ties in

with our dedication to locally-sourced goods and our ethos of doing things a little differently from others! Jo Marriott, Thorpe Hall Hospice fundraiser, explains the importance of the Christmas tree for their festivities: “Every year we hold a Lights of Love carol concert, which attracts several hundred local well-wishers.
“The Thorpe Hall Christmas tree will be a focal point of the celebrations and will be decked out in hundreds of personal messages, including from those who had a loved one cared for at the hospice. “We're really grateful to KNEAD Pubs and Tallington Farm for donating this year's tree. It's not always easy to find one to fill such a large space or hold such a large number of decorations but they've found the perfect one!”
It really is a fantastic charity and we were so pleased we could help.

Now when a restaurant claims to be the best steak restaurant in England you do feel it could be a load of hype – a bit like the coffee shops in America that claim to serve the best cup of coffee in the whole wide world!! However Hawksmoor is on the top of the list for meat lovers – It is a local restaurant chain in London, noted especially for its steaks and its cocktails. The original establishment is in Spitalfields, near to where the architect Nicholas Hawksmoor built Christ Church. There are now three other branches in Seven Dials, Soho and the Guildhall district of the City.
After hearing such wondrous things about the amazing meat we decided to give the original Hawksmoor a try on a Sunday Lunchtime – it is in a fantastic location right near Spitalfields market so we spent the morning wondering around all the quirky stalls and trying on various ridiculous items before making our way over to the restaurant. The front door is almost hidden away with little signage, blink and you quite possibly would miss it but on entering we were warmly greeted and shown to our table. The bar was busy and lively with people eating, drinking or doing both and every table was full. The great thing about this restaurant is it feels like a local – The decor is very warm and welcoming with leather seating, exposed brick walls and heavy velvet curtains at the windows – nothing is too polished or perfect creating a great relaxed atmosphere. People were eating at the bar, the staff were energetic and chatty but not too pushy and every table was full of people just wanting a good feed on a Sunday!! The menu revolves around the very best British meat simply cooked on a real charcoal grill with favourite wines from obscure small producers and big name vineyards alike. The cocktail menu is one of the most intriguing things I have ever read – it is like hunting through a library of long out of print cocktail books – we all had to try one to start, all of which I had never heard of but all tasted fantastic!!
We decided to skip starters and try and save room for an indulgent pudding – I had already eyed up the sticky toffee pudding. With it being a Sunday and me being a bit of a traditional farming girl I always go for the roast and I have to say the beef was perfectly cooked – pink, juicy and tender and the huge duck fat roast potatoes and vegetables were delicious. The more adventurous tried the steaks and burgers and were blown away by the flavour of the meat. The sticky toffee pudding was exactly as it should be moist and very rich. The others opted for the cheese board and a few glasses of port to help wash it all down with. Which was served with various different jellies and fruits – and by the appreciative groans was delicious too!!

Hawksmoor is the type of place where you can get lost in time – have a great meal with friends while chatting and laughing without feeling the intense pressure that you have had your time slot like so many restaurants in London these days. We had a fantastic afternoon and whilst this isn't fine dining or a culinary master piece – it is good hearty food with fantastic flavours and the price isn’t too bad either!!

THE OLD HOUSE GALLERY
Our next door neighbour at The Lord Nelson is The Old House Gallery, the oldest established Gallery in Rutland, which first opened in 1977. Potter and proprietor Dick Clarke a born and bred Rutlander is the third generation to be trading in Oakham, his enthusiasm for his business comes from a passion for original work in both art and craft.
His painters are mainly local professional artists who include Alan Oliver, Barbara Rae Norridge, Jill Barthorpe, and Michael Gibbison who all have there own particular style which knit and fit into the particular flavour pot of the gallery. Craft is represented by local wood turner Paul Proctor; Potter’s / Sculptor’s Jan Burridge, Tishy Budden, Julie Wilson and of course Dick himself!
The net is also cast wider to include Shropshire Painter Penny Timmis (who painted the Cockeral that can be seen here in the pub) and even wider to include some of Dublins top artists Marrie Carroll, Des Murrie and Deborah Donnally.
Other Irish talent includes weavers, felt / silk scarfe artists, print makers, and hedge layer Neil Faulkes who carves amazing wooden spoons from wood he gathers during the laying of a hedge. It goes without saying that Dick enjoys the odd pint of Guiness!!
He feels it’s important that his gallery reflects the tactile environment of the countryside that he and his artists are inspired by.
Dick also makes the four pint ale jugs that we use here in The Lord Nelson.

Millionaire shortbread chocolate torte with vanilla ice cream and shortbread crumb
This issue we have embraced the Valentines theme with our recipe and given you something that you can make as a sweet treat for your loved one. Its always difficult trying to choose a present - not too tacky, not too extravagant, not too stingy…. well why not make your loved one something that you can both share and indulge in. This issue we have gone for millionaire shortbread - as they say the key to a man’s heart is through his stomach and as for the women… chocolate & caramel… is there a better combination!!
Ingredients: Serves 10
Pastry - 1 cup all purpose flour - 3 tablespoons sugar - 1/2 teaspoon salt - 1 block of chilled unsalted butter,cut into 1/2-inch cubes - 2 large egg yolks - 3 tablespoons cocoa nibs
Caramel Filling - 1 cup sugar - 1/4 cup heavy whipping cream - 1/4 cup (1/2 stick) unsalted butter, cut into 4 pieces - 1/4 cup water - 1/2 vanilla bean, split - 1/4 teaspoon fine sea salt
Chocolate Ganache - 1 cup heavy whipping cream
Method:
Pastry - Preheat oven to 375°F or 190C. - Butter a 9-inch tart tin with removable bottom. Blend the flour, sugar, and salt in a food processor. - Add the butter & process again until mixture resembles coarse breadcrumbs. - Add the egg yolks & process until it becomes a moist crumb. - Add the cocoa nibs and blend in. - Take the dough out of the mixer and press it onto the bottom and up the sides of the buttered pan. - Bake until crust is golden brown, about 20 minutes. - Cool in pan on rack in a cool part of the kitchen .
Caramel Filling - Combine the sugar and 1/4 cup water in a heavy medium sized saucepan. Stir over medium-low heat until sugar dissolves. - Turn heat to high and boil without stirring until mixture is deep this will take about 7 minutes brush cold water around the side of the pan to stop burning . - Remove from the heat; add the cream (mixture will bubble vigorously), butter and stir over low heat until caramel is completely smooth. - Scrape in seeds from the vanilla bean & stir in the salt. - Cool for around 12 minutes. - Pour warm caramel into crust. - Let the whole mixture stand at room temperature until cold , this will take around 1 hour.
Chocolate Ganache - Pour the cream into a small saucepan and let it simmer gently. - Remove from heat & add chocolate. Whisk until smooth. - Let stand until slightly cooled but still pourable, about 10 minutes. - Pour ganache evenly over caramel filling. - Refrigerate tart uncovered until chocolate is firm.
To Serve - Crush a shortbread biscuit & sprinkle a thick line of the crushed biscuit on the a plate, place raspberries on the shortbread

Times are a changing over at Smith’s of Bourne – our beloved landlord and landlady Pat & Jane of 10 years are retiring in April – it has taken us nearly a year to come to terms with the prospect of losing them and we will definitely be throwing a big leaving party for them so make sure you come and join us in wishing them well and thanking them for all their hard work, dedication and above all else friendship over the last decade!!
Luckily, we did have a fair bit of notice from them and have been lucky enough to find replacements for them both. Chris who is currently travelling around Australia will be returning at the end of April and Ashley has been training under them both for around 6 months now so will be ready to take over when they leave. So this issue we thought we would introduce you to Ashley, although we are sure you will already have seen him around the pub on many occasions. Ashley was born and bred in Bourne and attended Abbey Primary School & Bourne Grammar Secondary School. His family have owned a business in Bourne since the 1920’s.
After leaving school Ashley began working at Next in Queensgate as a Christmas temp and enjoyed it so much he decided that he would go for full time work, eventually working up to Store Management. Ashley was offered the opportunity to manage larger stores such as Watford, Slough & Fenchurch Street in London. He even lived in Windsor for two years which was his favourite place.
Ashley came back to Bourne in January 2014 looking for a change of direction and a fresh start. He popped into the Jubilee Garage and saw our old landlady Sam working - they had been friends for years and so he asked her if she had any shifts going – Sam replied that she could do better than that as they had the Assistant Manager’s post up for grabs. From his first shift Ashley loved working behind the bar but admits he had a lot of learning to do having never pulled a pint before!! When

Ashley has just celebrated his 30th birthday by heading over to Las Vegas with four of his friends - I asked if it resembled the film The Hangover to which he replied “We Tried!” He loved Las Vegas but summed it up simply with “what happens in Vegas stays in Vegas.”

he heard that Chris was going to be going off travelling for a year he applied for his job at Smiths and we thought that both Ashley and Chris would make great replacements for when Pat & Jane were ready to leave. Since then Ashley has been on a steep learning curve both with the ordering systems, discovering a passion for Real Ale and the many other aspects of running a pub.
In his down time Ashley is a big snowboarding fan and likes to get out as much as he can – his favourite places being France, Austria and Whistler in Canada. He is also a bit of a shoe addict, probably brought on by his days working in retail!! He loves to cook especially with fish but prefers to create his own recipe rather than follow any set rules. Ashley also loves his football supporting Leeds United and if he misses anything from The Jubilee it would be the Live sports where the crowds would come in and the atmosphere would be highly charged.
I asked where he saw himself in 5 years time to which he replied, “Hopefully working in the same industry and within the same group. Learning more as he goes with the ultimate dream of one day owning his own pub. He would also like to be a bit more settled with his own house and to have seen more of Europe and America. Ashley’s Pro’s of working in this industry: Social side / meeting new people. Learning all about the craft beers and ales and improving on his knowledge. Ashley’s Cons: His instant reaction was the hours but upon reflection he thought this wasn't too bad as he enjoyed the atmosphere at the pub, both the staff and customers and felt you tend to forget your working when you are really enjoying what you do.

Not very often but just sometimes we get to go and visit some of the places where our products are produced and recently we were lucky enough to have a couple of days in Porto, Portugal. Porto is famous as the birthplace and only place Port can be produced! It really is a beautiful city full of charm and lots of opportunity to get to know your tawnies from your rubies. So we decided to put together a fool proof guide to a weekend break in Porto so you to can go and soak up the atmosphere and beauty of this wonderful city.
Why go?
For a sun break in a relaxed, artful city that, unlike other supposed capitals of cool, prefers not to show off. With its dramatically hilly location on the Atlantic coast, Portugal's second largest city – best known as the historic home of port wine – has plenty it could shout about, not least an unrelentingly pretty old town with characterful winding streets, tiled churches and World Heritage-protected status. The Ribeira neighbourhood, with its down-at-heel quayside and authentic street-life vibe, acts as the city's main magnet. While there are no major, mustsee landmarks, Porto is still a great place to burn shoe leather: the mighty Douro river offers long, peaceful walks to miles of sandy beaches, while its steep banks, dotted with shady parks and panoramic viewing posts, will appeal to the urban rambler.
Getting there…
By air. The cheapest budget carrier is Ryanair (0871 246 0000; ryanair.com), which is currently offering flights from Birmingham, Bristol, Liverpool and London Stansted from about £30 return. The airport, little more than 10 miles from town, is on the Metro network, and connects directly to the centre via Line E (1.45 euro single, or 1.90 euro with a rechargeable Andante card; www.metrodoporto.pt/en) Alternatively, the 20-minute taxi ride will cost upwards of 25 euros.
Stay at…
The recently-opened Yeatman (Rua do Choupelo, 00351 22 013 4200, www.the-yeatman-hotel.com), a gastro and vino resort on the slopes of a hillside port lodge, which offers seclusion and a peerless panorama of the Porto skyline. Rooms have a country retreat feel, but with the occasional hare-brained touch. The four-poster bed in one suite is carved from a giant oak barrel; doubles from 154 euros (£129).
Spend the morning…
Ticking off the sights in the old town, whose buildings ¬date from the middle
ages, many of which are decorated with azulejos, typical blue and white tiling. To get your bearings, climb the Torre dos Clérigos, an 18th-century bell tower with 225 steps. Take a tour of the austere Sé Cathedral, where long-standing AngloPortuguese relations were forged in 1386, when João I of Portugal married Philippa of Lancaster. With a gothic apse and rose window, the hillside church of St Francis (igreja de São Francisco) is also worth the schlep.
More secular delights include the vibrant Bolhão market, and the São Bento train station, whose vestibule is decorated with 20,000 painted tiles depicting scenes from Portuguese history.
Have lunch at…
Pimms (Rua Infante Dom Henrique 95. 00351 222 015 172, www.pimms.com.pt), a cheap but chic café-restaurant artfully decorated white with mirrors, plus a menu that's heavy on steak and bacalhau, the local dried-cod speciality. Mains from about 10 euros.
For a tranquil spot on the waterfront, head along the esplanade to Portugalia (Rua S Caetano 4, 00351 225 321 271), a sedate beach bar with a lengthy list of draught beers. Prepare for a magnificent catch of the day with garlicky clams in white wine, served in a mini antique saucapan. Mains from 14 euros.
Spend the afternoon…
Messing about on – or along – the river. Traditional barcos rabelos shuttle tourists along the Douro from the Ribeira quayside. Better still, head for the beaches in Foz and Matosinhos on foot along the sun-drenched esplanade, or hitch a ride on the rickety historic tram from outside the Museu do Carro Eléctrico (museu-carro-electrico.stcp.pt), which terminates at the start of the praias.

Or you can run riot in the funky streetwear outlets around Rua Miguel Bombarda, part of an unprepossessing artisan neighbourhood that's packed with workshop boutiques.
Dine out…
On top-notch sushi and peerless ocean views at Shis (Esplanada do Castelo 196, 00351 226 189 593, www.shisrestaurante.com), an upmarket, glass-box restaurant set amid the rocks on a craggy bit of Atlantic shoreline. Mixed sushi plate, 18 euros.
More central is Giroflée (Rua Nova da Alfândega, 1, 00351 220 120 752), a
sophisticated, three-floor European restaurant with a romantic street-dining terrace. Try the roast octopus (15 euros), or work through the menu of creative vegetarian options – unheard of elsewhere in this fish-loving town.
Spend the evening…
People-watching on the Ribeira quayside, where barflies are attracted to water's-edge café tables by the promise of picturesque sundowners. Sup an icecold Super Bock as the billboards of the ancient port lodges across the river flick into life.
For proper live entertainment, try the Casa de Música (Avenida da Boavista 604-610, 00351 220 120 220, www.casadamusica.com), a wonky concrete Rubik's Cube of a concert hall designed by Dutch "starchitect" Rem Koolhaas. Besides the roster of performances by visiting world orchestras, fado singers and rock stars – Lloyd Cole performs solo on October 14 – there's an impressive seventh-floor restaurant and roof terrace. By day, guided tours in English take place at 4pm
(3 euros), while the foyer is full of freeto-use sound machines, keyboards, recording equipment and, mercifully, headphones.
Spend the next day…
Drinking port after a tour of the barrels in an ancient lodge. Of the dozen nestled above the Vila Nova da Gaia quayside, Taylor's (Rua do Chopelo 250, 00351 223 742 800, www.taylor.pt), founded by a British family 300 years ago, is the oldest, offering free tours of its cellars, with tastings conducted in a charming library setting.
At all costs avoid…
Shopping on Rua de 31 de Janeiro, a pedestrianised commercial drag on a pedestrian-unfriendly 30-degree gradient – tough going even in the more bearable autumn heat.
You will come back feeling refreshed and rejuvenated if not a little jaded from too much port and delicious seafood!
