Must-see ■ Painting biology Artist Klari Reis’ eye-catching work takes place where art intersects with science. Her studio is like a laboratory. She mixes paints, pigment and industrial dyes with a special epoxy polymer, so colours and textures can bleed into each other, showing biological processes seen under an electron microscope. Her work has been on show all over the world, with the next exhibition scheduled for this winter, at the Los Gatos Museum of Art in California.

For her PetriProjects series, Reis hand-painted Petri dishes, transforming each one into a mini work of art. Grouped together on steel rods, these installations, with as many as 150 Petripaintings, are a high-impact blast of colour to brighten any empty space. See klarireis.com

Multi-story hotel Pick ’n’ mix architecture With an estimated population density of 397 people per square kilometre, The Netherlands is rather crowded. Perhaps this latest piece of architecture is the solution. The new Inntel Hotel in Zaandam opened its doors this spring, and was designed by architect Wilfried van Winden. He defines his eclectic style as ‘fusion architecture’. His aim? To create ‘a home away from home’. Constantly engaged 94 vows The world’s most passionate couple may be Lauren and David Blair of Tennessee, USA. THE PASSION FILES # 01

This famous image from Life magazine was captured on August 14, 1945. It was thought to show a passionate embrace between a couple celebrating the end of the Second World War. But in truth, the sailor in this picture was kissing every woman in New York’s Times Square, and the nurse was married to another man. The woman in question, Edith Shain, can be seen below in 2005, aged 86, at the Times Square Kiss-In, an event held every August 14, where couples recreate the scene. Shain died in June this year, and the sailor has never been identified. TIMESSQUARENYC.ORG

This bedraggled competitor is taking part in a Tough Guy race in the UK’s West Midlands. It’s a chance for passionate athletes to race across eight miles of muddy fields, rope swings, uphill scrambles, water-filled tunnels and fire walks, then crawl under barbed wire (while machine-gun blanks are fired overhead), and plunge into icy water. It’s held in mid-winter, and claims to be the toughest race in the world. On average, around one third of starters fail to complete the course. Head case Swedish artist Michael Johansson (below) has an almost obsessive passion for neatness and filling spaces. His sculptures have included filling every square centimetre of a caravan with kitchen products, fitting a series of different-sized storage boxes in alcoves in people’s homes and, on a grander scale, creating a perfect rectangle from old cars, camper vans and storage containers. This piece is called Packa Pappas Kappsäck (Pack Daddy’s Suitcases), the name of a Swedish tounge-twister. He sourced the cases from flea markets, seeking out pieces that would fit perfectly within each other.

The planet is

awash with the passionate. Job applicants, teachers, sportswear companies and estate agents – wherever you look, people, firms, and teams bandy the word around with reckless abandon. It’s claimed as a positive attribute, as a sign of commitment, and something to be embraced. But is this necessarily true? When the P-word first entered the English language, in the Middle Ages, it had very different associations. Derived from the Latin verb pati, meaning to suffer, it referred to the crucifi xion of Christ. It quickly came to mean any emotion, positive or negative. In the 16th century, Shakespeare gave us its fi rst recorded use in an erotic sense, in Titus Andronicus. And by the 1800s, we were introduced to ‘crimes of passion’, as violent, jealous forms of emotional obsession. But today, having ‘a passion’ is considered vital. It’s claimed almost as the sole thing needed for success, an attitude exemplified by Gary Vaynerchuk, the brash, hugely successful entrepreneur who started the website Wine Library TV. His book,

Crush It! Why Now is the Time to Cash in on your Passion, insists that belief and desire are enough. If you’re passionate about something, he tells us, you’ll make it work. Yet far from being vital to success, passion can be dangerous and distracting. For thousands of years, philosophers from the Stoics onwards stressed the importance of using reason over raw emotion. Level-headedness in times of crisis is something we admire in athletes, statesmen, generals and business leaders. During Barack Obama’s candidacy for US president, a Time magazine article accused him of a ‘passion gap’. “One of the great strengths of the Obama candidacy has been the sense that this is a guy whose blood doesn’t boil,” runs the story.

Apple is the brand that Europeans are most passionate about, according to a survey by online research agency Panelteam. Sony came in second, followed by Coca-Cola, Samsung, and adidas. However, local brands made a strong showing. Douwe Egberts (coffee) gets Dutch consumers most excited, as does Bauli (cakes) in Italy. British brands such as Cadbury, Marmite and Sainsbury’s rate highly in the UK, while in German-speaking lands, Milka is the favourite. Source: Panelteam, European Passion Study 2010.

Modern psychology has established both the pitfalls and positives of passion. According to Robert Vallerand, of the University of Quebec in Montreal, passion is “a strong inclination toward a self-defining activity that one likes or even loves”. In Vallerand’s view, while many of us play the guitar or basketball, these activities can only be regarded as our passions if we think of ourselves as guitarists or basketball players. In his research, Vallerand found that 85% of us have at least one activity that we see as defi ning who we are – usually not work, but a hobby of some sort – and that typically we spend 8.5 hours per week on it. While our passions defi ne us, their effects on our lives can be good and bad. So an obsessive dancer with an injury avoids resting and recovering; while one with a healthy passion will do what is needed to preserve his or her fitness. Cal Newport holds a Ph.D. in computer science from MIT, and has written several books on how to achieve academic success. “Passion seems to be a common source of problems,” he says. “For some, they have too many passions and don’t know where to focus their energies. For others, it’s the lack of a passion, or maybe a belief that their particular passion won’t bring them somewhere worth going.” For him, the idea that we can all discover our passion and make use of it is “a dangerous fiction”. All too often, the P-word is a cop-out for those lacking inspiration or motivation. “Passion is the feeling generated by mastery. It doesn’t exist outside of serious hard work,” he says, “almost any superficial interest can be transformed into a passion with hard work.”

Fellow author and academic Natalia Ilyin works in a more creative field (design) but is equally suspicious. “To say that a bunch of software engineers or graphic designers are passionate about their work is to try to inject sex and confusion and addiction and desire into a kind of work that is essentially asexual, organised, left brain, and sober,” she says. For her, passion simply means ‘focus’. Perhaps fi nding your ‘passion’ is overrated. Maybe, we’d all be better off just working hard at something we quite like. As Dr Dinesh Sing, of Delhi University, said recently, pop psychology’s idea of passion is “looking for quick fi xes. Passion really requires deeper inner reflection – it’s a lifelong process”.

Some 37% of Italians see themselves as passionate, followed by 25% of Spaniards and 12% of French people. But this does not transfer to their professional lives. Peru is known for its Inca heritage, but today its capital is becoming a global culinary hotspot. Andy Round tucks in PHOTOGRAPHY: GABRIELA HENGEVELD

Gastón Acurio swaggers into his restaurant, La Mar, in Lima powered by rock-star shades, leather jacket and staggering international success. Taking a hearty swig from a foamy Pisco Sour, one of the greatest chefs in South America unleashes a food manifesto for a new Peruvian world order. “I want chefs from Peru to be as internationally celebrated as footballers are from Brazil,” says the 43-year-old. “When I started my career there were no culinary schools in Peru, now there are 6,000 Peruvian trainee chefs. That’s enough for an army. An army that can take over the world.” As a student, Acurio told his family he was studying law in Europe. Instead, he was secretly learning the culinary alchemy that would create a restaurant empire that today stretches across Europe and the Americas. His face illuminates books, posters, magazines and television shows. He’s a real Latin star. “There is a perception that Peru is a developing country,” he says, gesturing at the smart Miraflores diners and achingly cool interior design. “As you can see, that’s not always Holland Herald

We just need to capture our Peruvian essence and present it to the world in a sophisticated, compelling, international way.” Food and its consumption is a national obsession in Peru and visitors using Lima simply as a transit point to the Inca trail and Machu Picchu are missing a culinary trick. Time magazine recently described the capital as “a city of destination restaurants”. The American magazine is not wrong. Stop for a while, follow the food, and it will take you to some extraordinary places. First, go to where it all begins; places like Lima’s Chorillos Fish Market. Here the shrimp, squid, octopus and more than 700 varieties of fish fly out of the Pacific straight to waiting food stands to be transformed into ceviche (raw seafood, marinated in lime juice and chili until ‘cooked’) or jalea (chunks of fried seafood) served up with potatoes and chili sauce.

“Outside, past the wing-tip, is the monkey. You see it?” says co-pilot Gregory Pena in Spanish, then Japanese, then English, as our tiny Cessna tilts 90 degrees. “Now on your right, the astronaut. In the rock? Yes?” The plane lurches to the right, wing-tip pointing down. “Now the humming bird, the hands, now the tree.” These are the mysterious giant animals, birds, shapes and figures of the Nazca Lines that are carved into 500 square kilometres of stony UNESCO-protected desert plain 300km south of Paracas. Ranging in size between 30 and 300 metres, it’s best to take to the air to see them properly (even if the experience is a little stomach-churning). Asked what they represent, Pena gives a little shrug. “Agricultural symbols, astrological charts, astral flight paths. I don’t know,” he says. “And I don’t think anyone ever will.”

It’s all about the ingredients. At San Isidro Market, there are tomatoes the size of footballs, bananas big enough to be used as canoes and more than 3,000 types of potato. This is a land of supersized crops and bountiful supply. Peru may be troubled by the occasional tsunami or earthquake, but it has never done famines. “The weather in Peru has 90% of the world’s climates in one country – from deserts and mountains to glaciers and coast – and this creates an incredible diversity of ingredients,” says Michael Owens, the Lima Hilton Hotel’s food and beverage manager. “What’s more, the Humboldt Current off Peru provides probably the richest range of

marine life in the world. There’s a lot to eat here.” But ingredients are just the beginning. Some 500 years of immigration have also given Peruvian food a unique flavour, says Hilton chef Gustavo Valcárcel. As Europeans, Africans, Japanese and Chinese landed on Peruvian shores, each new wave was forced to rethink their traditional recipes and use local produce. You can see the results all over Lima. ‘Chifas’ across town sell Chinese food with Peruvian creole touches. At Huaca Pucllana, opposite the holy site that gave the restaurant its name, Peruvian dishes like chili-soaked strips of beef (lomo salta) or soup with shrimp and potatoes (chupe de camarones) sit next to Italian ravioli stuffed with goat’s cheese and Peruvian pumpkin. At La Mar, seafood can come presented ‘northern creole style’ on ‘black beer rice’ and with a mild, yellow chili cream.

At über-fashionable Malabar, diners can share a guinea pig. Eating this traditional dish, called cuy, was once a kind of backpackers’ culinary rite of passage, like chewing fried scorpions from street vendors in Bangkok. But at Malabar, it is a delicacy, the skin roasted into a crispy crackling that more closely resembles succulent Peking duck than a baked family pet. This is the work of owner Pedro Miguel Schiaffino, the ‘jungle chef’. He can typically be found haunting the markets of the Peruvian Amazon in search of inspirational ingredients such as alligator steak or river snail.

Lima’s culinary flair first claimed global attention with Nobu. The story of the restaurant brand beloved of footballers, foodies and fi lm stars begins in Lima, in 1973, with creator Nobuyuki Matsuhisa mixing Peruvian

claim Pisco Sour is their “Chileans invention. It’s not. It’s ours. The world should be clear about that” influences with Japanese ritual to create gourmet gold. “We knew each other in Japan and I helped him start his restaurant here,” says Toshiro Konishi, the owner of Lima’s most famous sushi bar, Toshiro’s. “We both wanted to maintain the purity of traditional Japanese food but we found the local produce and traditions irresistible,” he says, serving dishes of sushi, flavoured with chili and duck foie gras produced in the Andes. “Look at ceviche, for example, it is very close to sashimi.”

Ceviche is a Peruvian culinary cornerstone. At the restaurant Brujas de Cachiche (The Witches of Cachiche), guests are invited to mix their own. “Take four spoons of lime,” says the restaurant’s Maripili de Alcorta, adding flavours to a collection of octopus, flounder and squid. “Now two of fish stock with chili, coriander, celery, red onion, salt, pepper. Now mix.” Ceviche takes the clean, fresh flavour of sashimi, and adds a citrussy, gently spiced zing. It is spectacularly delicious.

Pisco Sour is ceviche’s liquid equivalent – a uniquely Peruvian flavour experience. “The secret is in the measures,” explains barman Jael Ramos. He pours out a couple of ounces of Pisco (Peru’s grape-based brandy), one of lime juice, an egg white, sugar syrup, five cubes of ice, and it all goes in the blender. It was a favourite drink of actor John Wayne when he haunted the Hotel Maury in Lima’s picturesque old town. Here, 68-year-old barman Eloy Cuadros has been serving drinks every day for 50 years. “We Peruvians are sleepy,” he admits. “We should do more to protect our Pisco Sour reputation. Chileans claim it’s their invention. It’s not. It’s ours. The world should be clear about that.” It’s also clear that it remains a drink of choice. In the fashionable Barranco area, it fuels many late nights, whether at contemporary, arty bar/restaurant Ayahuasca, the rugged, drink-splashed floor of legendary dive bar Juanito’s, the nearby bar of Picas, where girls are self-consciously fashionable in copycat black, or the more relaxed Santos,

with its pool tables, sofas and balconies overlooking Lima’s illuminated but simple wooden ‘Bridge of Sighs’.

“I love this city because it is so underground, so unexpected,” says Dutch expatriate and theatre producer Jeroen van der Zalm. “This is a place where the warmth of networks is very important, and you feel that anything could be possible.” Lima fashion designer Lalo Salini Gambini, meanwhile, talks about Lima’s ‘implosion parties’ where Facebook networks convert into cheap, spontaneous club nights in condemned buildings complete with DJs and bands. Mari Solari, a Welsh expat and owner of the Las Pallas artisan store, says she has seen her Barranco neighbourhood change from an unfashionable village into an international fusion of bohemian cultures, while Victor Delfin, the selfstyled 83-year-old Picasso of Peru, is more poetic. His sculptures crowd out his gardens and just about every public park in the city. “Lima? It’s like a relationship with your

across dunes, rocks and vertigo-inducing cliffs. Or head inland, over those dunes, past abandoned cottages and geometric squares of irrigated green, to the reed-fringed Morón oasis. “There is a legend that Morón – Peru’s Robin Hood – would hide here using reeds as a snorkel after robbing the rich,” says Raphael Rodriguez, of Buggy Adventures. The water’s lovely, but the oasis is also a great place to enjoy a bit of sand-boarding, aptly demonstrated by Josue, the young son of one of Rodriguez’s employees. Simply strap on a smooth wooden plank, then hurtle down the 50-metre slope into the water. It may be even more refreshing than a Pisco Sour.

The battered bikes by a little canal house do not suggest a top creative agency. Particularly when smaller ad firms have been hit hard by shrinking budgets worldwide. And Amsterdam (pop. 750,000) does not suggest a hub of advertising to rival London (pop. 7.5 million) or New York (pop. 8.5 million). But with firms like 180 Amsterdam, StrawberryFrog, and the local arm of Wieden+Kennedy, the city has been surprising adland for a decade. “It just works,” explains ex-New

Yorker Chris Mendola, who founded 180 Amsterdam in the Dutch capital with two partners in 1998. He mentions practicalities, like its location near major markets, but then quickly cuts to the real reason: “I love it here. We put in long hours, but getting on your bike late at night after a long day and riding home along the canals is an absolute joy. I’ve lived in busy cities, and I’ve lived and worked out in the country; this is a very unique place. You have some of the most cosmopolitan,

ambitious people in the world here, but also this great appreciation for quality of life. That combination is a precious commodity.”

While big agencies may have offices spread across every corner of the globe, that says little about how international they are, believes Mendola. “We have a saying in the agency, ‘creativity without frontiers’. That’s about coming up with ideas that can travel across media and cultural boundaries. There is something about Amsterdam that attracts a much more international mindset,” he says. The firm has 32 different nationalities among its (coincidentally) 180 staff. Together, they muster up global campaigns for the likes of adidas, one of 180’s biggest clients. In the reception area, the latest adidas artwork covers an entire wall. It’s football meets Sin City, in a massive floor-toceiling, graphic novel-style illustration. The accompanying film features

football heroes Lionel Messi, David Villa and Zinedine Zidane. “Pretty much everyone here has been working on the adidas World Cup campaign at some point,” Mendola says. The company also helped to create the logo on the football for the recent World Cup. It features 11 different-coloured threads, representing the 11 members of each team, as well as South Africa’s 11 official languages. So, how does a young, relatively small company like 180 win such big accounts? Mendola breaks down his formula: “It’s really, really simple. There’s tons and tons of clutter out there, so great work that gets the world talking is going to be what stands out. If people on the street are talking, tweeting, or blogging about our work, everything else follows.” But in advertising, the rules of the game are always changing. “The industry’s gone from being a one-way broadcast, where you are shouting to people about yourself or your products, to a two-way conversation. The consumer also might be helping to develop the product, or the brand,” Mendola says. And the digital world means the boundaries are shifting even further. “The industry used to be about paid media – like buying media on TV,” says Mendola. “Now it’s also about earned media, like social networks. But it’s also about own media. Because so many clients have their own media, like websites, it’s really now about creating an

eco-system where the client can have a relationship with the consumer,” he adds. And the industry will continue to evolve (“every three months,” Mendola jokes), but his mantra remains the same. Again, it all revolves around “brilliant, famous work”, which is what he expects to see on the résumé of any young hopeful who comes knocking on his door. While he stresses that this can only be achieved by daring to take risks, he has noticed that clients have become more conservative, and blames the recent recession. “It feels like we’ve been making more compromises than we’ve wanted to make, and we don’t want to make compromises,” he says resolutely.

A fondness for fearlessness is reflected in the firm’s name. “We found a quote by Francis Ford Coppola about making Apocalypse Now: ‘Whenever you get in trouble, do a 180-degree turn, turn the situation halfway around, don’t look for the secure solution, don’t pull back from the passion, turn it on full-force.’ It’s still relevant to what we do today,” Mendola says. So how does such a noncompromising attitude gel with the Dutch, known world-wide for their culture of consensus? “I very much enjoy the Dutch. There’s no nonsense, which is a very refreshing quality. They’re ambitious people, but with such a straightforward nature. I love that. After all, who has time to waste?”

says Erich Kapfenberger, an Austrian pilot who’s lived in Tarifa for more than 30 years. “It’s called the Costa de la Luz [coast of light] because in the afternoon you have the sun reflecting onto the coast across 5,000 kilometres of water, and it gives a very special glow. Every three hours, the plants grow another millimetre and the sun moves in the sky, so the landscape and the colours are always changing. When you fly 350 or 500 metres high, it’s like a tapestry. You’ll go bananas.” The Costa de la Luz runs along the Atlantic coast of Spain, from Huelva down to Tarifa. Perched with a view over the Strait of Gibraltar, Tarifa is where the Mediterranean meets the Atlantic Ocean, and where Europe’s southern-most point is separated from Africa by only 18 kilometres of water.

Flying high “Until we reach the top of the runway, you can always change your mind,” says Erich Kapfenberger. “After that, we’re in the air and it’s too late.” He starts the engine, scanning the sky to the west and muttering that we’re going to miss the sunset, as he makes a last round of checks to the microlight plane (below). He climbs in, dons his leather aviator helmet, and asks if I can hear him through the headphones. We taxi to the end of the gravel road, turning left toward some windmills. Erich pauses just long enough to pat my ankle reassuringly before revving the engine and launching the little dragonfly of an aircraft into the sky. As we climb, we gaze at the setting sun. Its last rays glint off the arms of the windmills, drawing long shadows to the east and dancing across the wildflower-covered hills. Scanning the campo from this height, the last of the Poniente wind blowing in our faces, the daily grind seems a million miles away.

Every summer, this town of 16,000 doubles in size, its growth fuelled by a burgeoning windsurf scene in the 1980s and the explosion of kiteboarding over the last ten years. Today, Tarifa attracts sports enthusiasts and hippies, and is a chilled-out haven along Spain’s southern coast. Erich first came for the wind as much as the light. Now known locally as Erich de Loco (for his bossy manner as much as his infamous windsurfing adventures), he arrived in Tarifa in 1979 and stayed because he sensed potential. A pioneer of the town’s windsurfing scene, he carved and sold his own compact yellow boards, which were designed purely for speed. Between 1983 and 1990, he rode the

strong Levante wind across the Strait of Gibraltar to Morocco (and back) more than 500 times. These days, he’s most often seen buzzing the beaches in his microlight, or teaching hang-gliding lessons, in his calm, guru-like way from on top of the dunes at Punta Paloma. “Everyone is responsible for their own luck, and I’m very happy my luck has brought me here,” he says. “The 50 kilometres from Tarifa to Vejer de la Frontera is the most beautiful part of the country.”

“Every day, the conditions are a surprise,” says Nacho Yuste, owner of the Kite Obsession school and Spain’s first kiteboarding champion in 2001-2002. “We have two kinds of wind here. The westerly Poniente wind is a very nice,

steady wind that’s not too strong. The kite does what you want, but then you have waves because it comes from the Atlantic. And the easterly Levante wind is a gusty, off-shore wind that’s more challenging with the kite, but the water is flat. Here, we can have everything: flat water, waves, 12-knot wind or 40 knots.” On the water, the former freestyle champ makes the sport look easy. Certainly much easier than it feels the first time you raise your kite, lose your connection with terra firma, and the wind drags you across the sand. These days, Nacho prefers wave riding to freestyle’s jumps and tricks, and it’s a sheer delight to watch his elegant turns as he carves the face of the wave, dancing the board between sea and sky. “Before, kiteboarding was quite a radical sport, only for daredevils,” he says

from beneath his tatty baseball cap and mop of black hair bleached reddish by the sun. “With the new bow kites, you have a lot more control, and it’s very easy to de-power. It’s made kiting safer, opening it up to everyone, from kids aged 8 to 60- or 70-year-olds.” Kiting newbies must learn to control the kite on shore before venturing into the water, but Nacho reckons that “as soon as you start to ride a few metres, it’s like a drug. You become obsessed.” The beaches are filled with colourful kites from March to October, coasting high as a freestyler jumps in a graceful arc, or crashing into the frothy waves as a novice loses momentum. The wind here means Tarifa may not be ideal for dedicated sun worshippers. But it’s free from the high-rise hotels that dominate other parts of the coast.

Instead, the unspoiled white-sand beaches that run west from town are backed by dunes that lead into fields of grasses and wildflowers stretching all the way to the sierra.

beautiful. The Roman ruins in Bolonia, the wildlife... There’s much more to enjoy.” And across the sea, Africa lies just 35 minutes away by ferry. From good vantage points in Tarifa, there are breathtaking views of Morocco. A day trip to Tangier, reckons Ouwehand-Reid, always leaves visitors “exhausted, but richer for the experience”. Further up the Spanish coast, Cádiz is thought to be the oldest, continuously-inhabited city in the Iberian peninsula. It’s from the neighbouring Palos de la Frontera port that the New World was discovered. Or, as Ouwehand-Reid has it, “in fourteen hundred and ninety-two, Columbus sailed the ocean blue”. She sounds for a moment like a high-school history teacher, which seems appropriate for a place that feels like a living, 3,000-year-old museum. The relaxed attitude of Cádiz is an enticing counterpoint to Tarifa’s busy and windwhipped summer beaches.

Great Dane René Redzepi’s inventive approach is evident in his baby veg ‘planted’ in edible malt soil, seen here. Critics dubbed his restaurant Noma, in Copenhagen, the ‘stinking whale’ for its ‘sea and soil’ ingredients, so it made quite a ripple when it landed at the top of Restaurant Magazine’s 2010 World’s 50 Best Restaurants list. The 32-year-old chef is a staunch proponent of Nordic cuisine and exclusively uses ingredients available in the region. He’s quite literally saying “eat dirt” to his critics.

Beef covered in charcoal may sound like the result of a botched barbecue, but at Les Créations de Narisawa it is one of the signature dishes. The gastronomic artist at this French-inspired Japanese restaurant in Tokyo is Yoshihiro Narisawa. His beef is cooked to tender perfection using the laborious arosser technique of basting in hot oil before dusting with sumi charcoal made from charred vegetables. This attention to detail is part of what he calls “putting nature on a plate”. He adds, “Guests should not only be eating a meal, they should absorb life itself ”.

“It’s only polite, when you’ve hit it on the head, to use all of the animal,” says Fergus Henderson, in considerate British fashion. The chef at St John in London has spearheaded nose-to-tail eating, and his menu is liberally sprinkled with tripe, heart, intestines and other tidbits that most chefs discard. His roast bone marrow has several sections of beef bone, which are roasted until the marrow is soft and gelatinous, accompanied by toast and a simple flat-leaf parsley salad.

Marine biology Anyone who thought algae were just a slimy nuisance to be removed periodically from their goldfish bowl should think again. Sergio Herman, the chef at Oud Sluis in Zeeland, The Netherlands, certainly has. Taking his inspiration from the nearby North Sea, the rock-star lookalike flirts with elements of molecular gastronomy in his pursuit of originality. His inventiveness has been recognised with three Michelin stars. For one of his fish dishes, he turns algae into gravy. “The turbot combined with asparagus and algae is beautifully balanced, with the fine structure and sweet flavour of the asparagus and the briny flavour of the plants,” he says lovingly. Who knew ‘scum’ could have such positive connotations?

“Ongoing fleet renewal and delicious cuisine”

Boeing ahead KLM took delivery of its newest Boeing 737-700 in June, marking the seventh of a total of 18 737-700s ordered by the airline. The new aircraft form part of KLM’s ongoing fleet-renewal programme. Two more B737s are expected in September (737-700) and December (737-800) 2010. A total of 11 more aircraft will be delivered in 2011, including a Boeing 737-800. The new Boeing 737s will gradually replace the current Boeing 737-300s and 737-400s in KLM’s fleet. A Boeing 737 sporting the SkyTeam

livery was also unveiled in June, the same month as the alliance’s tenth anniversary. It is the second aircraft in KLM’s fleet displaying the new livery: last year a Boeing 777-300ER was delivered with the distinctive SkyTeam colours. Members of the SkyTeam alliance – which provides unparalleled connectivity to 898 destinations in 169 countries – have agreed to decorate at least 1% of their fleets in SkyTeam livery. Top post for KLM’s CEO KLM’s President and CEO, Peter Hartman, will become the new Chairman of the Board of Governors of the International Air Transport Association (IATA) from June 2011. Speaking after the announcement of his appointment, he said, “It’s an extraordinary honour to play such a role in the world’s most important air transport organisation. I’m looking forward to taking over the reins next year.” IATA’s Board of Governors formulates policy guidelines for the association’s member airlines. Peter Hartman will combine his new position with his responsibilities at KLM.

The Dutch World Cup football squad arrived back in The Netherlands on July 12. Following the final match the previous evening at the Soccer City Stadium, Johannesburg, which The Netherlands lost 1-0 to Spain, the team touched down in a KLM Boeing 777 at Amsterdam Airport Schiphol after the flight from South Africa. The following day, the Dutch national squad was given a rapturous reception by thousands of orange-clad supporters who gathered in the centre of Amsterdam and lined the city’s canals to greet them.

The prestigious golf tournament takes place from September 9-12 and annually attracts a healthy number of Dutch golfing stars as well as international names. KLM has always had a firm affinity with golf as a sport, and has committed itself as sponsor of the Open until 2012, at least. A dream occupation Wishes really do come true for some people. Take Wim de Groot, for example, a KLM Captain whose boyhood experiences were enough to kindle a passion which has remained with him to this day. Wim recalls very clearly the first time he was ‘bitten’ by the flying bug: “I was born in The Netherlands but raised in France near the Swiss border, and remember as a small boy being mesmerised by the birds gliding through the mountains there. I thought: ‘I want to do that!’ ” His wish was soon granted: “My father and some of his friends had bought a Piper light aircraft and they took me up in it. I think I was about eight or ten years old at the time, and my nose barely came over the dashboard – but I was hooked. I wanted to be a KLM pilot!”

Feel the force The infectious enthusiasm that Wim has for his job is something which he is keen to share: “My children are at the stage now where they are deciding what to study. I tell them, it doesn’t matter what you decide, as long as you take daily pleasure in what you do. “If anything, the passion I have for flying has increased over the years. I still get a tremendous kick out of easing forward the throttle in a beautiful Boeing 777 and feeling the force of 300 tons rising off the ground. There’s nothing like it!”

The sky’s the limit Air travel is something most of us tend to take for granted. We choose our destinations, book our flights and away we go, on holiday or business. But the aviation industry can also be a great force in providing charitable aid and help. The Dutch organisation Luchtvaart Zonder Grenzen (Aviation Without Borders) is an association of enthusiastic volunteers employed within the aviation sector, who offer their collective knowledge, contacts and facilities for humanitarian purposes around the world. LZG PROVIDES AID TO DEVELOPING COUNTRIES

Into action It was formed in 1988, taking its initiative from Aviation Sans Frontières in France, and immediately went into action, supplying light aircraft for the United Nations to distribute aid during the famine in Sudan. Operation Lifeline Sudan quickly attracted other pilots to the organisation and other (retired) aviation employees as volunteers. People outside the sector also offered to lend a helping hand. Currently, Luchtvaart Zonder Grenzen (LZG) has approximately 60 volunteers. LZG lends its expertise and contacts

within the sector to facilitate small-scale projects both for itself and other help organisations. It mediates in the provision of pilots and light aircraft to developing countries, arranges freight transport of all sorts of aid and medical equipment, and provides escorts for unaccompanied children on long journeys by air, to undergo an operation for example. Within The Netherlands, LZG organises an annual ‘I Can Fly Day’ for sick and handicapped children, who get to fly as passengers in a

light aircraft, among other activities. Luchtvaart Zonder Grenzen operates wholly irrespective of race, religion, ideology or political persuasion.

APU – OK! While KLM has made great strides in minimising fuel usage and emissions, Its subsidiary airlines have also been busy with their own corporate social responsibilties. Take KLM Cityhopper, for example. Aircraft normally rely on an onboard, fuel-powered Auxiliary Power Unit (APU) to generate electricity for air conditioning and temperature control while waiting for push-back from the gate. By prudent use of mobile and stationary Ground Power Units (GPUs) and Pre-Conditioned Air (PCA) units at the pier and platform at Amsterdam Airport Schiphol where KLM Cityhopper aircraft arrive and depart, APU

usage has been substantially reduced over the past year. GPUs are also now standard at all outstations where KLM Cityhopper flies to. Not using the APU saves fuel, maintenance, and causes less noise and emissions, benefiting ground crew, passengers and, of course, the environment. KLM Cityhopper made a considerable cost-saving in 2009, through less APU usage. In addition a C02 emission reduction was achieved of almost 2.8 million kilograms! Reduced APU usage is just one of many fuel- and C02-saving projects initiated by KLM Cityhopper. Holland Herald
