Flourless Brownies

Need something tasty, but not too bad on the calories? These scrumptious and flourless brownies are a simple, easy-to-bake recipe that take a classic dessert and make it a little better for you. Not to mention, these are brownies you can share with your gluten-free friends! This dessert is perfect for a sweet snack after dinner, or just to serve when friends and family are over! While great anytime, a warm brownie goes perfect with a cool fall or winter day.

INGREDIENTS

6 TBSP COCONUT OIL OR BUTTER, MELTED • 1 CUP GHIRIDELLI DARK CHOCOLATE CHIPS • 1/4 - 1/2 CUP SUGAR OR MADHAVA SIMPLA • 2 LARGE EGGS • 2 TBSP COCOA POWDER • 3 TBSP ARROWROOT POWDER (CAN SUBSTITUTE FOR CORN STARCH) TAPIOCA STARCH

INSTRUCTIONS

1. Preheat the oven to 180C/350F. Line an 8 x 8 pan with parchment paper or tin foil, with some overlay for easy removal. Grease it lightly and set aside.

2. In a microwave safe bowl or stovetop, combine your chocolate chips with coconut oil or butter and melt together. Once just combined, remove from the heat.

3. Add the sugar of choice and whisk into the chocolate mixture. Then, add the eggs one at a time, and whisk in. Add your cocoa powder and arrowroot powder and whisk VERY well, until the batter is no longer grainy and smooth.

4. Transfer the brownie batter to the lined baking tray. Bake the brownies for 20-25 minutes, or until the center just comes out clean. Do not over bake.

5. Remove from the oven and allow to cool in the pan completely. Once cool, slice into 9 pieces.
