luxury panel member, entrepreneur and restaurant owner amongst many things… Akis , tell us a little bit about your background and how you got into to the restaurant business? Actually it was a chance event. Many years ago my brother and I had a boat sales company. Every day our clients were gathering around the nearest marina, exchanging information about their boats and having a casual conversation between them. I noticed that there was a communication need to cover, so I decided to create a beautiful pavillion coffee shop, named ‘’Papagalo’’. From that moment on, everything started with great success. My next big step was the creation of the biggest pastry range in Greece. The ‘’Papagallino’’ pastry shops.
What are your biggest challenges you face when opening a new restaurant? For me the biggest challenge I face is to always see a smile of content and to know that I have indulge my clients. You must understand that a restaurant is not just a place where you can eat fine food but you go to have a good time as well. This is something I kept telling my employees. ‘’We are not selling food, we are selling joy, and our aim is for everything to be perfect’’.
How do you stay successful when running so many venues? Success is the outcome of the team. I maintain a close group of cooperators with high business consciousness. There is a triptych we believe in.... ‘’Customer’s satisfaction, Customer’s satisfaction, Customer’s satisfaction’’.
Do you cook much and if so what do you love to serve up your guest? I am an amateur cook. When I am having guests over, I love to serve them a special soup made of various fish and shellfish from the Aegean pelagus , fresh Greek clams, botargo over toasted whole grain bread and premium ouzo. Just perfect!
If you were hosting an intimate soiree, who would be your top three invitees, Past or present and why? I would love to invite Salvador Dali, Tom Robbins, and Klaus Nomi. Very important personalities, unique minds and surrealistic point of views. Imagine them together, discussing, and drinking over a most surreal dinner table.
Out of the tops chefs Worldwide, who for you is cooking up a storm these days? I am very impressed by Adria Ferran and his work, although I am not a big fan of molecular gastronomy and culinary foams. I believe that he is not just a top chef but a genius one, an artist. He is narrating the kitchen, not just cooking.
What do you think the next big thing in food is? I strongly believe that the next big thing in food will be something simple and yet difficult to capture. Honest homemade food. Traditional recipes under the signature of great chefs.
What’s your favourite restaurant? I really enjoy ‘’Nobu’’ in Milan. But I must say that I also consider every next restaurant I am about to open as one of the best. My mind is like a labyrinth with many caves within a cave there is a concept waiting to emerge and become reality.
What’s the one ingredient you can’t live without? It is hard to answer, because they are too many. But since I have to choose one, I would say that olive oil is the one. Pure virgin olive oil. It is an essential material. I remember when I was a little boy, my mother used to prepare a snack for me which was a slice of homemade wheat bread drizzled with a bit of olive oil and a pinch of sea salt. So original and delicious.
How does the dining scene in Athens compare to other cities around the world? I strongly believe that the dining scene in Athens is a strong one. You will find the quality of food and drinks that you experience in the western world. The quality is very high (and I don’t mean the touristic areas of course), the service is excellent and we also have the advantage of our rich culinary history and products. Greeks also spend a lot of money on decoration, so you will find exceptional places to eat. Another distinctive thing about us is the festive atmosphere and the joyful mood. So broadly speaking I would say that the level is very high in every aspect.
Tell us what you main business focusing is now, and why? I consider myself being at the most significant point of my career. Because what I take over and develop, is much more than a business. It is the promotion of Greek gastronomy. Greece is a blessed ground and probably the most beautiful place on earth, especially for vacations. There has been a huge effort- and still continues- from the part of Greek minister of tourism Mrs. Olga Kefalogiani , to put Greece in the spotlight. From our part we contribute with our knowledge around the Greek cuisine. I collaborate with the Greek chef’s club and its president Mr. Milto Karouba a well- known chef. In parallel we associate with many official committees. We have created a gastronomic platform named GR.EAT project, which is the modern suggestion of Greek gastronomy based on our roots. From ancient Greece up till now. Besides the great recipes and the fine presentation of the food the project includes the Greek culinary week. It can be applied everywhere. Additional it is a great business proposal for whoever is interested in opening a special restaurant under a new concept, the GR.eat concept. GR.eat is not just good food. It is the philosophy about gastronomia( greek word) , premium Greek products art of presentation, and the unique atmosphere of the Greek ritual of gathering and communication. We also certificate products and restaurants with special criteria. Later on we will issue a catalog with all the certificated restaurants, so the tourists will know where they can have exceptionaly good Greek food. We are to be hosts of the 2016 WACS international congress in Athens. We promote Greece ,and this great national project doesn’t compare to any of my previous business ventures no matter how successful they were.

Outside of the festival, Cannes is famed for its sunshine and enchanting surroundings, an animated seaside resort at the heart of the French riviera. Ferries to the islands Ile Ste-Marguérite and Ile St-Honorat are based on Quai Laubeuf, on the western side of the old port in Cannes. Ile Ste-Marguérite is the larger of the two islands and home to Fort Royal where the so-called Man in the Iron Mask was held in the 17th century. Across the water, the Cistercian monks living on St.-Honorat, operate a retreat and a shop selling the wine they make from their island’s vineyards and a chartreuse-like liqueur, Lerina.

Currency Euro Travel Nice Côte d’Azur airport is located 7km from the centre of Nice and is only a half hour drive from Cannes. Weather / When to go Spring and Autumn make for the best times to visit the Côte d’Azur. The weather is best in June, a good time to visit before the crowds descend in July and August. Unless you have a golden ticket, it’s also best to avoid Cannes in May when the film festival takes over the city in its entirety.

ice la Belle may be less flamboyant than Cannes and its Riviera sisters St Tropez and Monte Carlo but as the fifth most populous city in France it is one of the liveliest cities along the Mediterranean coast and the unofficial capital of the Cote d’Azur. Famous for its Belle Époque architecture, the magnificent buildings ubiquitous across Nice create an ambience of grandeur tinged with nostalgia. The Promenade des Anglais owes its name to the earliest visitors to Nice, its mild climate making it a popular holiday destination since the late eighteenth century. As well as enticing tourists, Nice has always attracted artists; the unique soft light on the coast captivating great painters in particular. Musée Marc Chagall and the Musée Matisse are both well worth a visit, the latter showcasing one of the world’s largest collections of the French painter’s works.Nice continues to live up to its artistic past with a host of galleries and artistic ventures scattered across the city. Take a wander from Place Massena down to the Port of Nice to browse the antiques stores and contemporary galleries Galerie Maud Barral and Galerie de la Marine. Tell us a little bit about yourself and how you got to where you are now with Kurotel? Since I was a child Kurotel was part of my life. My parents founded the Kurotel in 1982 when I was 7 years old. My three sisters and I always says that “Kur” is our little brother, since we are only girls. I always wanted to work there even thought my parents never imposed that to any of us. Therefore, I needed qualifications for that. I took Hotel Management in Salzburg Austria, Business Administration Canoas, Brazil and also a Marketing specialization in California.
How is kurotel different from other Medical spas? We make sure that each guest is cared for individually with the highest level of care. We have over 130 employees for an average of 40 clients. We invest in our team in many ways to make sure we give the best service. The Kur method is based on years of experience of its founders and a treatment aimed at concrete results. It is the foundation of everything. It is based on scientific evidence with herbalism, Kur Longevity Diet, physical therapy techniques, physical activities, emotional balance, no smoking or drugs, micronutrients, Kneipp Kur and of course respecting the genetics of each person.

We want to ensure that the best treatment is recommend for each individual client according to his or her needs. Most frequently, it is a combination between weight loss and stress control.

Tell us more about the Kurotel brand and if there are any new developments for the future. We are always paying attention to what is new on the fields of predictive and preventive medicine. We seek what is available in the market with scientifically proven evidence-based, and then we adapt it to our reality. Our vision is: to be the world leader in medical SPA. We want to be always up-to-date in order to offer our clients the best by producing positive health results. We have plans in developing “support units” for monitoring customers who have been with us and new clients who can get a taste of what is the Kurotel. We also have plans in expanding our cosmetics line of products.
Do you make your own skincare brand or is there any brands that you work with Since 1984 we produce our own cosmetics. We have a wide variety of products for face, body and hair. It was a way for our clients of taking home a little bit of what they have experienced during their stay and as mentioned we are expanding the line soon.
Where do you like to go on holiday and what’s your favourite hotel & restaurant I love to travel with my family. One of my favourite’s places to go is Portugal, Lisbon. My grandfather was Portuguese and every time I go there it reminds me from where I came from. I really enjoy the food, the people, the arts, and the history of that country. My kids love the zoo. I enjoy staying at the Hotel da Lapa and going to “Tasquinha da Adelaide” restaurant for dinner. I also like to combine business and leisure. Like my trip together with my husband to Malaysia when we received the seven star Global Luxury Award. We also took the opportunity to visit Thailand to see more spas. Last week we just came back from Washington where we presented the Kur Case at the 7Tth World Medical Tourism Congress. We also took the opportunity to spend 2 more days in New York to see what is new in our field and also to enjoy the city.

As a family they agreed that this was an unacceptable compromise. Mark, tried to source genuinely organic seaweed products but found none. Not willing to compromise their beliefs, Mark and Kira decided to go down the long and demanding voyage towards creating a new type of cosmetic: the first genuinely organic seaweed-based cosmetic products in the world. Over the course of six years of research and development and countless tests, we developed and perfected our complex method of preserving seaweed naturally: a method that replicates how seaweed is actually exposed and dries out during the ebbing of spring tides. By reducing the water content slowly, we found the seaweed merely entered a kind of stasis and its cell structures could be kept intact. Reintroducing water, by adding the dried seaweed to a bath, “reawakened” the cells and replicated the effects of our fresh seaweed baths. This was our first product – the Lazy Days seaweed bath. However, this was to be only the start. Mark then set about creating a full range of seaweed-based organic products alongside his graphic designer wife Kira who has helped VOYA win countless awards for packaging and design.

Things to do: n Shop till you drop: sales last from May till July and prices drop by 70%. Funan Digitalife Mall and Sim Lim Square are places to shop for electronics. Haggling is fine here and you can ask for an extra discount if you pay cash. Hip shops are found on a narrow Haji Lane in the Arabic Quarter.
n Travel to the future (or re-live Avatar): the perfect place for time and space travel is Gardens by the Bay. The stunning Supertrees are a group of structures between 25 and 50m high. Together with Cloud Forest and Flower Dome they form a cutting edge flora and fauna exhibition.
n Get high: watching the sun going down over Singapore River, Raffles Place, Empress Palace and the Padang during a 30-minute ride on a 165-meter high observation wheel (that’s the height of a 42-storey building) will make for a memorable experience.
n Go national: Singapore is home to many nations. Use this opportunity and soak up some culture in Little India, China town and Arab Quarter. Try some food: Turkish delights, satays, noodles and of course Hainanese chicken rice. Chinatown Heritage Centre gives you a chance to see authentic Singapore: entire street scenes from the 19th and 20th centuries were painstakingly recreated there. Put on your running shoes and join joggers, tai-chi and yoga practitioners, walk in the virgin rainforest and pay a visit to the National Orchid Garden, home to over 1000 orchid species. n Get wild: Singapore offers a fantastic Night Safari in the 40 hectare park. There nocturnal animals come out at night; over 30% of them are endangered species: see them while you can! n Play golf: Singaporeans inherited their love of golf from the Brits. The ultimate golf experience can be found at Marina Bay Golf course: here you can play an 18-hole course against the majestic backdrop of the three towers of Marina Bay Sands.

WHERE “This is not true ‘– I thought… The cinematic views over the towers of Marina Bay Sands and Singapore’s contemporary skyline were so breathtaking, the hotel could have got away with putting just a sleeping bag on the floor: I would have been happy regardless. The wall to ceiling window was the love trap I fell into right after making the first step into the room: having caught the look in the bellboy’s eyes, I understood he had seen it all before. WHAT The hotel stands at 73 floors tall: my room was well designed and spacious, with a nice desk and huge flatscreen TV, but it was the view where in my mind Stamford Swiss Hotel earned its stripes. There were fruit. There were chocolates. There was a welcome letter. The
management did make me feel welcomed right upon arrival. The best word to describe the room is practical. It is easy on the eye. The hotel has won several awards as the Best Business Hotel in the region: in the room you find a multipurpose office desk, LCD TV, well-stocked mini-bar. The bathroom comes with a tub and a shower in a cubicle. The hotel offers laundry service, but as a true business hotel, The Stamford provided me with an ironing board. High-speed Wi-Fi worked really well, however it wasn’t free: am I the only one to think that this day and age charging for Wi-Fi in hotels is like charging for toilets in restaurants and bars? The hotel’s modern sleek interior is well-matched by the bar, New Asia, home to some incredible parties. The spectacular view from the
70th floor makes it an ideal spot for watching sunsets and cheering during the F1 night city race. The hotel boasts 27 meeting rooms, 15 restaurants, a modern fitness center, fantastic leisure amenities at Willow Stream spa, six tennis courts and two swimming pools nested between skyscrapers. In brief It’s a business hotel attached to the Raffles City Shopping and convention center. The hotel is very well located on Stamford road in terms of shopping (there is an entrance to the mall right from the hotel), transport (the City Hall MRT station is RIGHT BELOW the hotel) and entertainment (just a short walk from Boat Quay –a pedestrian enclave with restaurants, pubs, bars and clubs).

road started attracting globe trotters arriving to the hotel in chauffer driven Bentleys - a nice option the hotel offers to its patrons. WHAT From the outside St Regis Singapore can be mistaken for a high-end office building, an all metal and glass highrise. The mentioned Bentleys and uniformed bellmen are the only hints to the building’s true function. There is a gregarious lady lying face down right at the hotel’s entrance– feel free to take a picture: this statue by a Columbian artist Fernando Botero is only the first out of many museum quality pieces, acquired by the hotel owner’s wife. She spent over six years, amassing the collection of museum quality pieces that are valuated at nearly $10 million. There are works by Picasso, Chen Ke Zhan dotted around the building and your butler can give you a tour. The cutting edge minimalism is over, as soon as you step inside a classically elegant lobby: opulence is a weapon used by the hotel’s decorators to impress guests right upon arrival. The welcome service was impeccable: check-in that allows you to sit down and relax after a journey, while the formalities are being sorted, always gets my vote. My room had a foyer and a small table with an assortment of teas and coffees: the butler (they are assigned to all rooms
and suites) informed me, that he was on call all day around to make hot beverages, if I wished so. The Art-Deco style room was opulent yet chic – one of those rooms where you feel comfortable rather than oppressed by its grandeur. The hand-painted chinoiserie wallpaper provided a luxurious backdrop to the king-size bed with St Regis signature linens and Jim Thompson silks. The sitting area had a sofa and a little table, with welcome fruits and wine from the manager. The room also featured a desk and a wallmounted flat-screen TV, mood lighting and sound control panel, wThe view from the hotel lacked the most memorable Singapore landmarks: Marina Bay Sands and Singapore’s famous skyline. Since I saw those before, the sight of lush greenery of the Singapore Botanical gardens was a welcomed change to concrete and glass. French-style marble bathroom and vanity amenities really speak of a five-star hotel quality: I am talking about double sinks, separate vanity table and stool, soaking tub, signature Remede toiletries, a standing shower with a rain shower and three jets shooting, and last but not least - an antimist TV screen to watch your favourite TV shows and movies while relaxing in a bath. Turndown service came with a small tiffany green box of Laurent Bernard chocolates
– sweet, indeed! Astor bar is a great place for a pre-dinner unwind – if Singapore Slings seem a bit banal, try tongue-twistingly hot Chilli Padi Mary. Throughout October St.Regis properties around the world are celebrating the 80th anniversary of Bloody Mary here is your excuse, if you were looking for one! Food choices are represented by Italian La Brezza, Cantonese Yang Tin and French Brasserie Les Saveurs. Don’t miss a truly epicurean Sunday champagne brunch at Les Saveurs (at S$195 per person), that comes with a mixture of charcuteries, cheeses, hors d’oeuvres, deserts, wines, beers and, of course, champagne. In Brief The first time, the reason to choose St Regis was work: the hotel kindly hosted guests of Singapore Fashion week and organized a private dinner for one of the worlds’ most forward thinking designers – Hussein Chalayan. The hotel’s service was impeccable but I kept wondering: am I being given a special treatment? During my year in SE Asia, I returned to the hotel twice and got treated with the same attention and welcome. The place is wonderful for those, who appreciate its quiet location, incredible food and wonderful pool area that make it a perfect place for a romantic getaway or stacation.
