The northfacing Piazza gardens, founded by Wendy nearly two decades ago, showcase an assortment of heirloom herbs, edible flowers, and vegetables, easily accessible to the Montalto chefs who harvest throughout the day.
The estate’s dedication to permaculture and organic principles is evident in every aspect of the gardens. No soil is ever turned over or disturbed, and old crops are either twisted out of the soil or cut off at soil height, allowing the earth to retain its natural structure and nutrients. Composting is an essential part of the gardening process, with all green and brown waste kept on-farm and used to enrich the soil.
Julie Bennett is a passionate advocate for rare and endangered heirloom vegetable varieties. “These are the vegetables our grandparents grew and saved seed from with the knowledge that every year, these seeds would grow ‘true to type’ just as their parent plants had,” she explains.
“They were grown for amazing flavour, colour, vigour, disease resistance and for abundance, unlike today’s varieties that are grown for uniformity, even-ripening and the ability to transport well over long distances and to last a long time on a supermarket shelf.”
Bennett’s commitment to seed saving is shared by Wendy and championed by the estate’s chefs, who take the time to create beautiful and respectful dishes that showcase these outstanding varieties. The Montalto kitchen gardens are not only a source of fresh, organic produce but also a vital repository of genetic diversity in an era where 93% of food seed varieties have been lost worldwide.
The gardens thrive under Bennett’s holistic approach, which incorporates organic pest management, companion planting, and crop rotations. The abundance of edible flowers encourages nectar-feeding pollinators and predator insects, helping to maintain a delicate balance within the garden ecosystem.
The estate’s bees and chickens also play a crucial role in the gardens’ success, with the bees pollinating the crops and the chickens providing rich manure for composting.

Founded by Lindsay McCall in 1984, this boutique winery has grown from humble beginnings to become one of the region's most respected producers of cool climate wines.
Lindsay McCall's journey into viticulture began with an epiphany. A geography teacher by profession, McCall's palate was awakened by a 1980 Seville Estate Shiraz, igniting a passion that would shape his future. This experience led him to purchase a derelict apple orchard in Red Hill South, which he meticulously transformed into a thriving vineyard.
The site itself is a sheltered, north-facing amphitheatre spanning ten acres of unirrigated red volcanic soil. This unique terroir provides the foundation for Paringa Estate's exceptional wines, particularly their renowned Pinot Noir, Chardonnay, and Shiraz.
Despite lacking formal training in oenology, McCall's intuitive approach and dedication to quality have yielded remarkable outcomes. His philosophy centres on the belief that great wine begins in the vineyard, emphasising meticulous vineyard management and attention to detail in the winery.
Paringa Estate's rise to prominence was not without challenges. The early years were fraught with experimentation and perseverance, as the Mornington Peninsula's viticultural potential was still being discovered. McCall's decision to plant Shiraz, against local advice, proved to be ahead of its time, with the variety now a standout in the estate's portfolio.
The winery's crowning achievement came in 2007 when it was awarded "Best Winery in Australia" by James Halliday, a clear validation of McCall's skill and vision. This recognition solidified Paringa Estate's position among Australia's viticultural elite.
In recent years, the estate has entered a new era with the involvement of Lindsay's son, Jamie McCall. Armed with a degree in Viticulture and Oenology from the University of Adelaide, Jamie joined the family business in 2012 and
assumed the role of Head Winemaker in 2017. This fatherson collaboration has ushered in a period of innovation while maintaining the estate's commitment to excellence.
The pinnacle of this partnership is embodied in their latest release, the LJM Pinot Noir 2022. This exceptional wine represents the culmination of decades of experience and the fusion of two generations of winemaking expertise. Sourced from the estate's oldest MV6 Pinot Noir block, planted in 1988, the LJM showcases the finest expression of Paringa's terroir.
The creation of LJM is a meticulous process involving handpicking, fermentation in French oak foudres, and ageing in a combination of new and old barrels. Lindsay and Jamie carefully select the final blend, merging Lindsay's knowledge with Jamie's technical prowess and innovative spirit.
As Paringa Estate approaches its fourth decade, it continues to push the boundaries of cool-climate winemaking. The LJM Pinot Noir symbolises the estate's journey of passion and perseverance.
