What are diners looking for in the summer? People are often busier and more active from about May through September. Therefore, menu items that fill them up are great as well as lighter items that will allow them to keep moving. Salads and sandwiches are perfect. When they’re spending their busy summer with family and friends, then, appetizers can drive sales. And who could forget summer favorites like brats and ice cream?!?

ONE STOP & CUSTOMER SERVICE Christy Edwards, RD, CD, Martin Bros. Marketing Dietitian

ustomers want simple and effective foodservice solutions. Many customers I talk to believe Martin Bros. is the answer – especially with our wide range of products and supplies and “legendary customer service.” Morrow Home Community in Sparta, Wisconsin, for example, uses Martin Bros. as their prime vendor for groceries, beverages, supplements, cleaning and dishwashing supplies and chemicals as well as nursing supplies.
Martin Bros.’ Christy Edwards and Ryan Young assist Kathleen Snow and Renee Thurston of Morrow Home Community in Sparta, Wisconsin with their monthly pancake breakfast.
“By having basically a one-stop shop vendor,” says Kathleen Snow, CDM, CFPP, Culinary Services Director, “I spend a lot less time ordering and searching out what I need. I have never worked with a company that is as focused on their customers’ needs as Martin Bros. is.”
Each month, Morrow Home Community invites a “Celebrity Chef” to their facility to help with their pancake breakfast. Executive Director Michael Bonello makes homemade pancakes and Administrator Todd Ramlet makes eggs to order. Celebrity Chefs, like Martin Bros., help serve and talk to the residents. Overall, Morrow Home is striving towards dining enhancement, and we are helping them with this initiative. In addition to assisting with the pancake breakfast, we have helped create and implement concepts and strategies to add choices and improve recipe preparation methods.
Martin Bros. driver, Gale Klocke, puts product right where it needs to go.
“When I look for a food vendor to partner with, I look for a vendor with high-quality products, the knowledge to answer my questions for our facility, integrity and great customer service. I have found all that and more with Martin Bros. They go way above and beyond to help solve any problem. The products and services are the best I have worked with.” Kathleen Snow, CDM, CFPP; Culinary Services Director; Morrow Home Community; Sparta, Wisconsin
“We look for a quality product at a competitive price. We also look for speed and frequency of delivery, education services and effective customer service. There is a comfortable relationship with Martin Bros. as if they are a small company, but they provide the services of a larger corporation.” Jen Williams, RN, BSN; Director of Nursing; Morrow Home Community; Sparta, Wisconsin 12

DIABETES & FOOD:
2 Myths Christine Link, MBA, RD, LD, Martin Bros. Marketing Dietitian Chances are you serve many who are affected by Type 2 diabetes. Because there are always changes and advances in diabetes and what we know to be true, you likely have heard one of the following myths.
A Healthy, Well-Balanced Meal
Myth #1 Eating too much sugar causes diabetes.
Tilapia Option 1: South Stream Fillet
Type 2 diabetes is a complicated disease with many different factors to consider. Foods with carbohydrates will cause blood sugars to rise, and we now know that a baked potato will raise blood sugar as will a cookie. Eating sugar does not alone cause diabetes. There are also lifestyle factors and a genetic component to take into account.

Myth #2
Option 1: Captial City Yams – 120 ct (366300 – 1/40 lb)
Option 2: Lamb Weston Sweet Potato Roasted Tri-Cut Dices
People with diabetes need to eat differently than everyone else.

If you have diabetes, it doesn’t mean that you need to have a much more restrictive diet than the rest of the population. Carbohydrates may be monitored and balanced throughout the day. Following an overall healthy, well-balanced meal of whole grains, lean proteins and fruits and vegetables is recommended.

iabetes is a disease that affects a large portion of our population, and the majority requires medication therapy as a way to control blood sugars. While medications are important for treatment, many medications have adverse effects. Some effects can be serious enough to lead to hospitalizations. Therefore, it is important to understand the role of medications in order to manage them and get the best outcomes. It is also important to understand the role of blood glucose monitoring in keeping diabetes in control.

eople are busy in the middle of the day. How do you get them to consider lunch away from their desks and away from quick-serve counters? Kraft Foodservice tapped three chefs (Andrew Zimmerman, Sepia; Cliff Pleau, Seasons 52 and Jeffrey Tenner, Bertucci’s) for ideas on how to get people through the doors for lunch. Let’s expand on the three points they focused on: Many consumers prefer

1 ENGINEER A LUNCH MENU Having lunch options that differ at least slightly from your dinner options is optimal. Lunch is most often a lighter and quicker meal for diners. In fact, having a completely separate lunch menu can clearly identify your restaurant as offering lunch specials; and many people look to specials when deciding where to eat.
Get Inspired
Precooked Spaghetti – Trayed Nests (984280 – 36/8 oz)
2 TIGHTEN SERVICE STEPS Since people are often in a hurry at lunch, not only should menu items be geared towards fast prep but also your entire chain of service should be fast paced. From the time a customer comes in the door, think about anything that you could do to help speed their time along so they can get on with their day if they are in a rush.
3 ENGINEER A LUNCH MENU Offering a limited amount of options, reduced portion sizes, items that are quick to prepare and meals that are easy to eat on the go for takeout are perfect for lunch menus.

DISPOSABLES
Krystle Kettman Martin Bros. Vendor Marketing Coordinator
D
isposables are more hygienic than their wash-and-reuse-type counterparts. Or are they? Yes, disposables are meant for “one use and done,” which seems sanitary, but have you thought about the process that customers go through to get that disposable fork, knife, spoon or paper towel? Do they put their hands, which could be full of germs, into an open bin of disposable silverware to retrieve what they need? Do they use a hand to manually dispense paper towels? If so, there is a risk of crosscontamination that can thus spread germs.
enMotion Automated Touchless Towel Dispensers ®
• Improve hygiene
Touchless design complies with HACCP guidelines and ADA regulations. One-ata-time towel dispensing lowers cost and reduces waste.
• Minimize cross-contamination
To improve hygiene and minimize cross-contamination risks, choose dispensing options that:
11 2 3
Enclose products (silverware, paper towels, etc.)
2
Allow guests to only touch what they will use
3
Have outer compartments that are easily cleaned
These types of options also tend to have additional benefits, as well, such as lowering cost and improving sustainability, since customers only get what they’ll actually use and need.
SmartStock® Classic Cutlery Dispensers Enclosed design protects cutlery, and guests only touch what they use. Removable tray is dishwasher safe. Less consumption and waste versus open bins. Pre-counted and pre-assembled refill units cut re-stocking time, make inventory management easier and are space efficient. Fork (860778) Spoon (860768)

COLD HARD FACTS
Natalea Koehn Martin Bros. Equipment, Supply & Disposables Category Marketing Manager
Ice is food, so it needs to be treated that way. The careful treatment of ice is one of the most overlooked but one of the most critical details in providing smart, safe and sanitary food handling. Maintaining the quality of ice from the time it is made until the time it is served should be as much of a priority as maintaining proper handling practices for chicken, pork, beef, etc. However, ice is often one of the most overlooked areas in the kitchen. Dirt and germs from hands, traditional scoops and improper scooping methods can contaminate your entire ice supply. Even if the right scoop is used, there is still plenty of opportunity for contamination. Improperly storing the scoop, transporting ice in dirty buckets or storing items directly in the ice bin can all lead to ice contamination.

Good & Great
GREEN CLEANING PRODUCTS
Good
Thinking about implementing a green program? One of the first steps to green cleaning is switching to green products. There are several options to choose from – ready to use, concentrates and dilution control.
Roxanne Hassman Martin Bros. Janitorial Category Marketing Manager
READY TO USE
Good
Great for convenient green cleaning, these products are ready to go – no mixing required. However, purchasing these products means you’re also purchasing a lot of water (typically 95-99.99% of the product), the shipping costs/fossil fuels needed to transport it…and since they’re a “use once and done” product, you’re purchasing a lot of unneeded packaging, as well.
CONCENTRATES
Concentrates eliminate the unnecessary water, packaging and other associated monetary and environmental costs of ready-to-use products. However, what if you use more product than needed? People tend to have a “glug-glug mentality” and often think more is better. That’s not always the case with cleaners, and “glugging” is just pouring money down the drain.
Great
DILUTION CONTROL
Using highly-concentrated products through a dilution control system is the future of green cleaning. These systems also help consolidate purchases, standardize cleaning operations and reduce usage.
