SPEND MANAGEMENT SOLUTIONS Q: Looking for a better way to track monthly spend in your dining program? A: Martin Bros. has a no-charge solution to help manage your Per Patient Day expenses.
Mpower Spend Management has both a PPD Manager and a Budget Manager. The PPD Manager allows you to enter your monthly meal counts, census and other outside purchase information and provides reporting in a line graph for each month to show you where your monthly spend is compared to your budget. The graph also displays a history for the last twelve months so you have an easy way to look at a full year month to month. The Budget Manager allows you to enter your preset monthly budget and PPD goal and tracks your spend for the month in real time. This tool will even notify you via email if you are over 50% of your budget by the 15th of the month to assist you with achieving your goal. Mpower Spend Management tools automatically separate your purchases into eight different categories: • Food • Supplements • Non-Food • Warewash • Laundry • Janitorial/Sanitation • Kitchen Chemicals • Nursing For more information, contact Martin Bros. Director of Nutrition Services Julie Halfpop at jhalfpop@martinbros.com or 515-238-7295.
Food Code 2013 requires that the Person in Charge must be able to describe foods identified as MAJOR FOOD ALLERGENS and the symptoms that a major food allergen could cause in a sensitive individual who has an allergic reaction.
Now, you can download a video and test from Martin Bros. to help you meet this requirement! Check it out at MartinsMart.com > Tools > Dietary 101!

CAN SAFETY IS IT SAFE TO USE FOOD FROM DENTED CANS? If a can containing food has a small dent, but is otherwise in good shape, the food should be safe to eat. Discard deeply dented cans. A deep dent is one that you can lay your finger into. Deep dents often have sharp points. A sharp dent on either the top or side seam can damage the seam and allow bacteria to enter the can. Discard any can with a deep dent on any seam.*
TRUE OR FALSE?
Dented cans containing safe food are thrown away every day. Answer: TRUE – What a waste of food!
TRUE OR FALSE?
Some cans with dents cause food to be unsafe to eat. Answer: TRUE - However, there are simple evaluation techniques that can be used to determine if the food is safe or unsafe.
HOW DOES CANNED FOOD BECOME UNSAFE? When a can is dented near a seam or a junction, it makes it possible for air to enter the can. A sharp dent can cause a pinhole in the can, which could also allow air to enter. This air, combined with the moisture in the can, allows the growth of microorganisms. These microorganisms cannot be killed by cooking. Consumption of this food could potentially result in botulism. Cans that are bulging or have rust that will not wipe off are also deemed unsafe.
HOW CAN I TELL IF A DENTED CAN IS SAFE? Feel the can and visually inspect it.
SAFE CANS HAVE:
• Smooth dents • Dents that are not on the seam • Dents that do not compromise can junctures
DISCARD CANS WITH: • Dent on seam • Dent where side and end meet • Sharp dent • Swelling or bulging • Rust that does not wipe off * source: www.fsis.usda.gov

PORTION CONTROL
Delivering proper nutrition while controlling both food cost and waste demands accurate, repeatable portion sizing. ONE MULTIPLIED While a generous single serving may not seem like a big deal, it can be a big deal for school and healthcare establishments that need to follow nutritional requirements as well as for any dining establishment that needs to keep food costs under control. If you multiply just one generous portion a day by all of the food an operation serves on a weekly, monthly and yearly basis, you’re no longer simply talking about one generous portion.
TIPPING POINT Another case for portion control is the fact that there is a tipping point at any meal where eating any less would mean you were still hungry and eating any more would mean your palate starts to become desensitized and the food tastes less and less appealing. Operators and chefs must consider this tipping point as they try to create the perfect dining experience.
Over the years, operators have given in to the temptation to over-portion with the idea that they are adding value. But the truth is that too much food actually leaves the customer less satisfied. If the food is good, it doesn’t need a gimmick like over-portioning to get customers to come back. It may feel like a leap of faith to drop the overportioning crutch, but it can save an enormous amount of money, create more satisfied customers and do a much-needed service to the environment.
PRODUCTS Vollrath simplifies portion control with a complete system of serving utensils that are colorcoded for quick and easy size selection.
