utter has long had a bad rap due to its amounts of saturated fat and cholesterol. However, that is changing these days with the new clean label trend. Butter is a dairy product (milk or cream) with at least 80% butterfat. That’s clean label. Therefore, butter’s popularity is rising. Margarine was created as a butter alternative. It is a legally-defined product – made from vegetable oils and must contain 80% fat by weight (the fat is at least the same as butter). Flavor and color are typically artificial. In the past, the vegetable oils were partially or fully hydrogenated to add stability to the product, resulting in the creation of trans fats. The FDA recently ruled, however, that partially hydrogenated oils were not generally recognized as safe, resulting in the elimination of partially hydrogenated oils from food. Thus, margarine was reformulated to contain palm oil. Unless margarine is combined with butter, it is a cholesterolfree product with less saturated fat than butter. Margarine is a commodity item. Therefore, margarine costs less than butter.
So, here are a couple questions that we get asked quite a bit about the butter versus margarine debate:

1. Is there a product that will perform like butter but be cost effective? Yes! Butter blends are growing in popularity. European-style butter blend is a premium margarine with extra fat (82%-83%), so it will closely resemble butter in flavor, structure and mouthfeel. There are four forms available depending on application. • Firm: Comes in one-pound packs and can be used in many applications from baking to spreading. • Whipped: Firm margarine whipped with nitrogen for easier spreading. Mainly comes in portioncontrolled pack sizes used for spreading. • Soft: A portion of the firm fat is substituted with liquid oil. Used as a spread. • Liquid: All of the firm fat is replaced with vegetable oil for a pourable product. Used as an ingredient or for brush-on applications.

2. So, should we choose butter or margarine? Well, that depends on the goals of your operation. Factor in the following: • Food cost • Budget • Application – Are you using it as an ingredient or as a spread? • Consumer preferences • Marketability of your menu – Do you want to promote…that you use clean label ingredients? have heart healthy foods? have vegan options?
