Corporate Chef & Operations Consultant Also known as pork ribeye, pork collar is an underutilized product in the U.S. but is starting to be recognized by more and more chefs. Pork collar is very popular in Europe. It is the part of the shoulder that runs from the base of the pig’s neck to the tip of the loin. Pork collar is inexpensive, versatile and well marbled…with great flavor…and it doesn’t dry out as quickly as other cuts. Being versatile, pork collar can be braised, grilled, cut into cubes for kabobs, stir fried, smoked and used in many recipes. For the folks that love to smoke meats, the collar can be brined and smoked to create a different style of bacon for the ultimate BLT or a great breakfast side. Or try cutting pork collar into steaks and serving as a pork ribeye topped with a great sauce or smothered with caramelized onions. The list goes on!

S

Sugar Substitutes hould we be using sugar substitutes to save on calories and carbohydrates, or are they bad for our health? And with so many options, which sugar substitute is best?

Many artificial sweeteners have been around for years now. They are regulated by the Food and Drug Administration (FDA) as food additives and are considered GRAS (generally recognized as safe). Some critics of sugar substitutes claim they can cause a variety of health problems, including cancer. But according to the National Cancer Institute and other health agencies, they are safe in limited quantities and there have been numerous studies supporting that conclusion. Although we can often become very focused on how much sugar is in a product, don’t loose sight of the total carbohydrates. Many products will claim to be reduced sugar, no sugar added or sugar free, but keep in mind that total carbohydrates are important, as well. Just because a product uses a sugar substitute doesn’t automatically mean that it will be lower in carbohydrates. Foods like ice cream, cookies and pies are still going to contain carbohydrates even if some or all of the sugar is replaced with a sugar substitute, and the calories may not be drastically different.

Here are some commonly used sugar substitutes: • Aspartame – Aspartame is a non-nutritive sweetener often found in diet sodas. • Saccharin – Saccharin is another non-nutritive sweetener often found in diet sodas. • Sucralose – Sucralose was originally touted as natural because it is a derivative of sugar (sucrose). It is noncaloric and is on average 600 times sweeter than sugar. • Stevia – Stevia is an extract. It is a non-caloric sweetener and is generally 200 times sweeter than sugar. • Sugar alcohols (polyols) – Polyols supply fewer calories than sugar but are not free of calories. They are generally slower to digest and absorb than sugar. But if consumed in large quantities, they may lead to gastrointestinal discomfort.

POP-UP RESTAURANTS Pop-up restaurants are one of the latest innovations in the food service business! The idea is for a restauranteur to rent a space and run his or her restaurant out of that space for a limited time. The goal is to create a very profitable frenzy by enticing customers with a creative concept and a limited-time offer. To make this work for you, transform little-used spaces in your community or vacant resident rooms into dining areas where you might showcase rotating cuisines and concepts.

FOOD TRUCKS Food trucks are very popular! Especially in larger cities, food trucks offer a lot of specialty, local options for diners. Host your hometown food truck or a food truck from a surrounding town or city at your community for a change of pace. Another option is to create your own “food truck” by transforming a food service cart into a rolling, revolving experience on wheels.
